Abstract Sugar is an ancient food and currently one of the most used ingredients in human nutrition and in the food industry. In tropical regions, sugar is produced mainly from sugarcane, while temperate countries produce sugar preferably from sugar beets. Due to its widespread use, the forthcoming adoption of genetically modified (GM) sugarcane varieties may raise questions about the quality and classification of the sugar produced. Here, we describe the several varieties of sugar and their specific uses and legal classifications. Regardless of whether they are produced from beet or from sugarcane and their final use, sugar consists of highly purified substances composed almost entirely from a disaccharide (sucrose) whose molecules consist of two monosaccharide residues: glucose and fructose. The differences between commercial sugar types are primarily in sucrose content (> 99.00 to 99.80 °Z), moisture content, ICUMSA color, conductivity ashes and reducing sugar. Neither DNA nor proteins can be detected at relevant levels in the different types of sugar. Therefore, sugar from genetically modified sugarcane varieties is virtually identical to sugar produced from conventional sugarcane, and the adoption of GM sugarcane varieties should not cause any change to the current use of sugar in human nutrition and in the food industry.

Abstract High postprandial glycemia in the non-diabetic population is one of the known universal mechanisms for the progression of noncommunicable diseases (NCDs), which have impacted the finances of both individuals and of health systems. In order to highlight the role of carbohydrates in glycemic control and its implications on health, the International Life Sciences Institute Brazil held an international workshop on “Carbohydrates, Glycemia and Health”. Carbohydrate digestion rate is related to glycemic response, which mainly depends on the quality and amount of carbohydrate ingested, and thus it may be modulated by intrinsic and extrinsic factors. These effects can be verified by using different methods which evidence how physiology adapts in the uptake of glucose. Consumers can be aided with the knowledge/awareness of the benefits of high postprandial glycemia control in non-diabetic subjects. Multisectorial actions can contribute to decrease the onset and worsening of NCDs. A strategy indicated to the public in general to expand the availability of products that do not result in a sudden increase of postprandial plasma glucose and/or insulin would be to use alternative ingredients and/or technology in addition to making the legally allowed communication of benefits, which are supported by scientific studies.

The article shows the evolution of the Brazilian Food Composition Database (TBCA-USP), since its creation until its next update. The article characterizes the TBCA-USP database like a public good and highlights the importance of the food composition data compilation as a high cost-effective activity. It reports the social relevance of the information about food composition and the importance of this database in the national context. It also indicates extension and update strategies of the TBCA-USP.

O artigo apresenta a evolução da Tabela Brasileira de Composição de Alimentos (TBCA-USP), desde sua criação até sua próxima atualização. Caracteriza a base de dados da TBCA-USP como um bem público e ressalta a importância da compilação de dados de composição de alimentos como atividade de elevada relação custo-benefício. Relata a relevância social das informações de composição de alimentos e a importância dessa base de dados no contexto nacional. Sinaliza estratégias de ampliação e atualização da TBCA-USP.

Jaboticaba is a Brazilian fruit, native to the Atlantic forest, which belongs to the Myrtaceae family. In this work we describe the effect of the thinning of "flower", "fruit" and "flower & fruit" compared to non-thinned fruit (control) and of edible coatings with respect on nutritional composition, overall acceptability and shelf-life of jaboticaba ‘Sabara’, grown in an irrigated commercial orchard. "Flower and fruit" thinning allows fruit with higher quality as diameter, volume and mass. Non-thinned fruit shows higher yield, however fruit have lower quality. As a result of the improving quality at harvest, the shelf life was twice (~8 days) for thinned fruit. The lack of change in concentration of soluble sugar and absence of formation of volatile compounds during storage indicate that there was no natural fermentation of the jaboticaba pulp after harvest. Treatments with wax and calcium did not improve the jaboticaba shelf life.

O objetivo deste trabalho foi avaliar condimentos e ingredientes industriais para o desenvolvimento de alimentos funcionais com alto conteúdo de compostos fenólicos e capacidade antioxidante. Manjericão, louro, cebolinha, cebola, orégano, salsa, alecrim, cúrcuma e ingredientes industriais em pó (β-caroteno, extrato de chá verde, luteína, licopeno e extrato de azeitona) tiveram sua capacidade antioxidante in vitro avaliada pelos métodos da capacidade redutora do Folin-Ciocalteu e capacidade sequestrante do DPPH. A identificação e a quantificação dos flavonoides foram realizadas por cromatografia líquida de alta eficiência (CLAE). Os resultados demonstram que os condimentos apresentaram uma ampla variação no conteúdo de flavonoides e capacidade antioxidante in vitro, conforme o tipo, marca e lotes. Orégano apresentou a maior capacidade antioxidante e salsa, o maior conteúdo de flavonoides. O ingrediente industrial com a maior capacidade antioxidante foi o extrato de chá verde, o qual apresentou um elevado teor de epigalocatequina galato. O extrato de azeitona também demonstrou uma alta capacidade antioxidante e mostrou-se boa fonte de ácido clorogênico. Este estudo sugere que orégano, salsa, extrato de azeitona e extrato de chá verde têm um excelente potencial para o desenvolvimento de alimentos funcionais ricos em flavonoides como antioxidantes, desde que a variabilidade entre lotes/marcas possa ser controlada.

The aim of this work was to evaluate spices and industrial ingredients for the development of functional foods with high phenolic contents and antioxidant capacity. Basil, bay, chives, onion, oregano, parsley, rosemary, turmeric and powdered industrial ingredients (β-carotene, green tea extract, lutein, lycopene and olive extract) had their in vitro antioxidant capacity evaluated by means of the Folin-Ciocalteu reducing capacity and DPPH scavenging ability. Flavonoids identification and quantification were performed by High Performance Liquid Chromatography (HPLC). The results showed that spices presented a large variation in flavonoids content and in vitro antioxidant capacity, according to kind, brand and batches. Oregano had the highest antioxidant capacity and parsley had the highest flavonoid content. The industrial ingredient with the highest antioxidant capacity was green tea extract, which presented a high content of epigalocatechin gallate. Olive extract also showed a high antioxidant activity and it was a good source of chlorogenic acid. This study suggests that oregano, parsley, olive and green tea extract have an excellent potential for the development of functional foods rich in flavonoids as antioxidant, as long as the variability between batches/brands is controlled.

Os benefícios de saúde atribuídos ao chá verde e suas catequinas têm levado a um grande aumento de produtos comerciais à base de chá verde no mercado. Os objetivos deste trabalho foram analisar e comparar estes produtos em relação ao conteúdo de fenólicos totais e capacidade antioxidante in vitro, incluindo produtos na forma de sachês, folhas desidratadas e bebidas prontas. O conteúdo de fenólicos totais em 200 mL (1 xícara) dos diferentes chás variou de 90 a 341 mg equivalentes de catequina, e o maior e o menor valor foram apresentados pelas bebidas prontas. As infusões preparadas a partir dos sachês tiveram conteúdos variando de 96 a 201 mg.200 mL-1, e não foram encontradas diferenças significativas entre os lotes. Nos ensaios de sequestro do radical DPPH e ORAC (Oxygen Radical Absorbing Capacity), houve ampla variação dos resultados entre as diferentes preparações de chás, de 23 a 131 mmoles equivalentes de Trolox (ET).200 mL-1 (DPPH), e de 1,2 a 5,1 mmoles ET.200 mL-1 (ORAC), e novamente não houve diferenças entre as infusões e/ou bebidas comerciais prontas. Entretanto, a capacidade antioxidante das bebidas prontas para consumo é parcialmente devido à presença de outros compostos não fenólicos como o ácido ascórbico

The potential health benefits attributed to green tea and its catechins such as antioxidant effects, cancer chemoprevention, and weight loss have led to a huge increase of green tea products in the food market. The objectives of this work were to analyze and compare these products in terms of phenolic contents and in vitro antioxidant capacity including tea bags, dehydrated leaves, and ready-to-drink preparations after standardization of the infusion preparation procedure. Total phenolics content in 1 cup of the different teas varied from 90 to 341 mg of catechin equivalents, and the highest and the lowest values were both those of the ready-to-drink products. Infusions prepared from tea bags had contents varying from 96 to 201 mg.200 mL-1, and there were no significant differences among batches. The DPPH radical scavenging and the Oxygen Radical Absorbing Capacities (ORAC) varied largely among the different tea preparations, from 23 to 131 mmoles of Trolox Equivalents (TE).200 mL-1 (DPPH), and from 1.2 to 5.1 mmoles of TE.200 mL-1 (ORAC), but again there were no differences among infusions or ready-to-drink commercial preparations. However, the antioxidant capacity of ready-to-drink products was partially due to the presence of other non-phenolic compounds such as ascorbic acid

A nêspera é uma fruta de alto valor de mercado cultivada no sudeste do Brasil. Apesar disso, há poucos detalhes sobre suas características de qualidade. Frutas de cinco cultivares de nêsperas, desenvolvidas por melhoramento genético, foram analisadas para avaliar sua composição química. As cultivares Centenária, Mizuho, Mizumo, Néctar de Cristal e Mizauto foram selecionadas com base em sua alta produtividade e resistência a doenças. Os açúcares solúveis, ácidos orgânicos e carotenoides foram quantificados por cromatografia líquida de alta eficiência. A cultivar com a maior concentração de açúcares totais foi a Mizumo e a com menor a cv. Centenária. O principal açúcar detectado foi a sacarose e o ácido málico, o principal ácido orgânico. O ácido ascórbico foi detectado apenas em pequenas quantidades. O conteúdo de fibra alimentar total foi praticamente o mesmo em todas as cultivares. Os carotenoides principais foram β-caroteno e β-criptoxantina, exceto na cv. Néctar de Cristal, uma nêspera de polpa branca. Estes resultados contribuem para o conhecimento da fisiologia das diferentes cultivares de nêspera e podem ajudar a direcionar seu uso mais apropriado, seja para o consumo in natura ou para o processamento industrial, visto ser uma matéria-prima interessante, devido às suas características nutricionais e sensoriais.

Loquat is a fruit with high market value cultivated in Southeast Brazil. Despite of this, there are little details about its quality characteristics. Fruits from five loquat cultivars, developed using genetic breeding, were analyzed to assess their compositional traits. The cultivars Centenária, Mizuho, Mizumo, Néctar de Cristal and Mizauto were selected based on their high productivity and resistance to diseases. Soluble sugars, organic acids, and carotenoids were quantified using liquid chromatography. The cultivar (cv.) with the highest total sugar concentration was Mizumo and the lowest concentration was found in Centenária. The main sugar detected was sucrose, and the malic acid was the major organic acid. Ascorbic acid was detected in small amounts. The total dietary fiber contents were almost the same in all cultivars. The major carotenoids detected were β-carotene and β-cryptoxanthin, except for the cultivar Nectar de Cristal, a white pulp loquat. These results contribute to the knowledge about de physiology of loquat fruit, an interesting raw material due to its nutritional and sensorial characteristics. Furthermore, the results obtained could help to identify the most appropriate use of the loquats with different attributes either for consumption in natura or for industrial processing.

O consumo frequente de nozes está associado a efeitos protetores contra doenças cardiovasculares. Além do alto teor de ácidos graxos insaturados, os compostos polifenólicos também parecem implicados nos efeitos promotores da saúde devido a suas propriedades antioxidantes. Desta forma, onze tipos de nozes/sementes, incluindo pinhão (Araucaria angustifolia) e castanha-do-pará (Bertholletia excelsa), típicos do Brasil, foram analisados em relação ao seu conteúdo de fenólicos, incluindo ácido elágico, tido como potente antimutagênico e anticancerígeno, e capacidade antioxidante dos extratos metanólicos. A capacidade antioxidante variou cem vezes entre as diferentes amostras, de 1,2 a 120 mg equivalentes de Trolox.100 g-1 (b.u.). O ácido elágico total, determinado após hidrólise ácida dos elagitaninos e glicosídeos de ácido elágico, foi detectado em apenas 3 amostras. Os conteúdos de ácido elágico livre e total variaram de 0,37 a 41 e de 149 (castanha portuguesa) a 823 (nozes) mg.100 g-1 (b.u.), respectivamente. As amostras com os maiores teores de ácido elágico (nozes e pecans) também apresentaram os conteúdos de fenólicos totais e a capacidade de sequestro do radical DPPH mais elevados. O pinhão e a castanha-do-pará não apresentaram quantidades significativas de fenólicos nem elevada capacidade antioxidante.

Frequent nut intake is associated with protective effects against cardiovascular diseases. In addition to the generally high contents of unsaturated fatty acids, polyphenol compounds seem to be also implicated in health promoting effects of nuts due to their antioxidant properties. In this way, eleven different kinds of nuts, including pinhao seeds (Araucaria angustifolia) and Brazil nuts (Bertholletia excelsa), typical of Brazil, were analyzed for the content of phenol compounds, including the potent anti-mutagenic and anti-cancer ellagic acid, and antioxidant capacity of methanolic extracts. The antioxidant capacity varied a hundred times among the different nuts, from 1.2 to 120 mg of Trolox equivalents.100 g-1 (FW). Total ellagic acid was determined after acid hydrolysis of ellagitannins and ellagic acid glycosides, and it was detected in only 3 of the 11 samples. The content of free and total ellagic acid in nuts varied from 0.37 to 41 and from 149 (chestnuts) to 823 (walnuts) mg.100 g-1 (FW), respectively. Among nuts, samples with the highest contents of ellagic acid (walnuts and pecans) also presented the highest total phenol contents and DPPH radical scavenging capacities. Pinhao seeds and Brazil nuts did not present significant amounts of phenols nor antioxidant capacity.

O Brasil é o terceiro maior produtor de abacaxi(Ananas comosus) e as principais cultivares encontradas no mercado são Havaí e Pérola. Neste trabalho, frutas da cultivar Pérola foram divididas em casca, cerne e polpa e analisadas. A umidade da polpa foi superior (entre 10 e 15%) à encontrada na casca e no cerne. A concentração de proteína foi maior no cerne (35%) que na polpa e na casca. Essa cultivar contém baixas concentrações de ácido ascórbico nas partes comestíveis, no entanto a casca apresentou maiores níveis. O ácido cítrico correspondeu a aproximadamente 60% do total de ácidos orgânicos. Entre os açúcares solúveis [~7-12% (BU)], a sacarose, frutose e glicose foram predominantes. O cerne continha quase o dobro dos açúcares totais (12%) em relação à polpa (6,8%). A concentração de fibra alimentar insolúvel foi em torno de 1%, enquanto a de fibra solúvel foi menor que 0,1%. A polpa apresentou maior concentração de polifenóis (0,49%) e maior atividade antioxidante (33 µmol.g-1) que as demais partes. O consumo da polpa e do cerne produziu alto índice glicêmico (~93%), mas considerando a quantidade usual consumida, o abacaxi apresenta baixa carga glicêmica.

Brazil is the third largest producer of pineapple (Ananas comosus) and the market for fresh pineapple is sustained by the Hawaii and Perola cultivars. In this work the Perola cultivar was divided into three main parts, shell, core and pulp, for characterization. Moisture in the pulp was higher (between 10 and 15%) than in the shell and core. The amount of protein was higher in the core (35%) than in the pulp and shell. Perola contained relatively low concentrations of total ascorbic acid in the edible parts, although higher levels of ascorbic acid in the shell. Citric acid corresponded to almost 60% of the total organic acids. The total soluble sugars [~7-12% (FW)] were predominantly sucrose, fructose and glucose. The core had almost twice as much total sugar (12%) than the pulp (6.8%). The amount of insoluble dietary fiber was around 1%, and the soluble fiber was less than 0.1%. The pulp showed the highest concentration of polyphenols (0.49%) and antioxidant activity (33 µmol.g-1) out of the parts. The consumption of the pineapple pulp or core produced a high glycemic index (~93%), but considering the glycemic load, this fruit can be considered as low dietary.

No Sul e Sudeste brasileiros, o excesso de chuvas durante o período de maturação afeta negativamente a qualidade dos vinhos tintos. Por outro lado, estas regiões possuem potencial para a elaboração de espumantes, uma vez que, para a elaboração desta bebida, a uva é colhida antes de completar o amadurecimento. No Estado de Minas Gerais, as condições de verão chuvoso estão presentes em todas as regiões de potencial vitícola, e a variação de altitude entre elas pode exercer influência na composição das uvas. Desta forma, este estudo buscou avaliar o potencial de maturação de uvas 'Chardonnay' e 'Pinot Noir' destinadas à elaboração de espumantes em dois locais de Minas Gerais: Cordislândia (873m) e Caldas (1.150m). As plantas foram enxertadas sobre 1.103 Paulsen e conduzidas em espaldeira. Foram avaliados os teores de sólidos solúveis totais, acidez total, ácidos málico e tartárico, e pH do mosto, tamanho e massa das bagas, compostos fenólicos nas cascas e sementes, antocianinas na casca e açúcares solúveis nas bagas, em duas safras consecutivas. As bagas apresentaram maior tamanho e massa quando cultivadas em Caldas. As uvas colhidas em Cordislândia apresentaram maior grau de maturação, sendo observados maior pH, maiores teores de glicose e frutose, e quantidade inferior de acidez e fenólicos totais nas sementes. Os maiores teores de ácido málico presentes nas uvas provenientes de Caldas sugerem que esta região pode ser mais indicada à produção de uvas para elaboração de vinhos espumantes.

In the southern and southeastern of Brazil, the excessive rainfall during the maturation period negatively affects the quality of red wines. On the other hand, these regions have great potential for the development of sparklings since that for the elaboration of this drink, the grape is harvested before complete its maturation. In the state of Minas Gerais, the conditions of rainy summer season are present in all regions of grape production potential, and the altitude variation between them influence on the grapes composition. Therefore, this study sought to evaluate the potential for maturing of the grapes 'Chardonnay' and 'Pinot Noir' which are designated for the preparation of sparklings in two locations of Minas Gerais: Cordislândia (873m) and Caldas (1150m). The plants were grafted on 1103 Paulsen and conducted in trellis. It was evaluated the contents of total soluble solids, total acidity, malic and tartaric acid, and pH of the wort, size and mass of the berries, phenolic compounds in the peels and in the seeds, anthocyanins in the peels and soluble sugars in the berries in two seasons in a row. The berries had higher size and mass when grown in Caldas. The grapes harvested in Cordislândia presented a higher maturity degree, and it was observed a higher pH, higher levels of glucose and fructose, and a lower amount of acidity and total phenolic content in the seeds. The highest levels of malic acid present in the grapes of Caldas suggest that this region may be more appropriate for the production of grapes which are used for making sparklings.

No presente ensaio clínico, o efeito de oligofrutose enriquecida com inulina foi estudado no metabolismo ósseo de meninas de 9 a 12 anos com baixa ingestão habitual de cálcio, matriculadas em escolas públicas. Duas formulações foram suplementadas ou não (bebida padrão) com oligofrutose enriquecida com inulina (bebida teste). Sessenta meninas pré-púberes foram aleatorizadas em estudo duplo cego crossover e divididas em três grupos e receberam uma porção diária da bebida padrão (grupo 1) ou teste (grupo 2) durante 11 semanas, seguidos por um período de intervalo de três semanas. O grupo controle não recebeu nenhuma suplementação. As avaliações bioquímicas de cálcio sérico, paratormônio intacto - PTHi e fosfatase alcalina fração óssea - FAO foram executadas ao início e após 4, 8 e 11 semanas de cada período de intervenção. No grupo 1, um aumento significante no cálcio sérico e FAO e uma redução no PTHi foram observadas após o consumo da bebida teste.

In the present clinical study, the effect of oligofructose-enriched inulin was studied on bone metabolism in girls from 9 to 12 years old, with low habitual calcium intakes, who attended public schools. Two calcium-enriched formulations, supplemented with oligofructose-enriched inulin (test drink) or without (standard drink) were made. Sixty pre-pubertal girls were randomized into a double-blind and crossover design, divided into three groups and received one daily portion of either the standard drink (group 1) or test drink (group 2) during 11 weeks, followed by a three-week washout period. Group control did not receive any supplementation. Biochemical evaluations of serum calcium, intact parathyroid hormone - iPTH - and bone alkaline phosphatase - BAP - were performed at baseline and after 4, 8 and 11 weeks of each intervention period. In group 1, a significant increase in serum calcium and BAP and a reduction of iPTH were observed after consumption of the test drink.

O controle da razão folhas:frutos pela prática da remoção de cachos inteiros após o estabelecimento das bagas tem sido utilizado nos vinhedos tradicionais, a fim de regular a produção e melhorar as características químicas das bagas. Embora essa prática esteja bem estabelecida em regiões temperadas, pouco se sabe a respeito do comportamento das videiras cultivadas em áreas tropicais. O objetivo deste trabalho foi avaliar as respostas agronômicas e bioquímicas de duas cultivares de Vitis vinifera (Merlot e Cabernet Sauvignon) cultivadas em Caldas, Minas Gerais, Brasil, nova região produtora de uvas finas. As videiras foram submetidas a tratamentos de desbaste de cachos (0%, 50% e 75% de cachos retirados) e desponte (com e sem desponte) realizados no estágio de ervilha. A alteração da fonte-dreno pela remoção dos frutos e desponte afetou a produção, o metabolismo de açúcares nas folhas e a composição das bagas. Embora tenha sido observado um aumento na intensidade de cor das bagas com a redução da carga de frutos, a prática do desbaste de cachos pode ser evitada nos vinhedos do sul de Minas Gerais, sem prejuízo à qualidade das uvas viníferas, enquanto a prática do desponte deve ser recomendada somente para Merlot, a fim de melhorar a concentração de açúcares nas uvas de videiras sem desbaste de cachos.

The control of leaf to fruit ratio by the practice of entire clusters removal from the vine upon berry set has been used in traditional vineyards in order to regulate yield and to improve chemical composition of the berries. Although this practice has been settled in temperate zones, little is known about grapevines behavior in tropical growing areas. The aim of this work was to evaluate the biochemical and agronomical responses of two Vitis vinifera cultivars (Merlot and Cabernet Sauvignon) grown in Caldas, Minas Gerais, Brazil, a new winegrape region. Grapevines were submitted to cluster thinning (0%, 50% and 75% of cluster removal) and trimming treatments (trimmed and untrimmed) imposed at pea size stage. The source-sink alteration by fruit removal and shoot trimming had impact on yield, leaf sugar metabolism and grape composition. Although there was an improvement in color intensity of the berries with reduction of fruit load, the cluster thinning practice should be avoided in vineyards grown in the south of Minas Gerais State without impairment of wine grape quality. On the other hand, shoot trimming practice should be recommended only for Merlot in order to improve sugar grapes from vines with no cluster removal.

Cinco cultivares de amora-preta (Rubus sp.) foram avaliadas quanto a sua capacidade antioxidante, perfil de compostos bioativos e composição físico-química. Os níveis de ácido ascórbico total, presentes na forma de ácido desidroascórbico, variaram entre 9,8 a 21,4 mg.100 g-1 (b.u.). Os principais flavonóides presentes nas cinco cultivares foram: a antocianina cianidina (66 a 80% do total de flavonóides); o flavan-3-ol epicatequina; e os flavonóis quercetina e traços de caenferol. As cinco cultivares apresentaram alta capacidade antioxidante quando avaliadas pelo sistema de co-oxidação β-caroteno/ácido linoléico, similar ao antioxidante sintético BHT, na concentração de 50 µM. A cultivar Guarani apresentou os maiores teores de flavonóides totais, antocianina total, cianidina e de capacidade antioxidante, enquanto que a cultivar Caigangue apresentou alto conteúdo de vitamina C e de fenólicos totais. Estas duas cultivares também apresentaram uma boa correlação TSS/TA. Assim, a amora-preta pode ser considerada uma boa fonte de compostos bioativos e assim contribuir com a manutenção do estado de saúde.

Five blackberry cultivars (Rubus sp.) were evaluated for antioxidant capacity, bioactive compounds and composition. Ascorbic acid levels, consisting of dehydro-ascorbic acid, ranged from 9.8 to 21.4 mg.100 g-1 fresh weight. Cyanidin (66 to 80% of total flavonoids), epicatechin, quercetin and traces of kaempferol were the main flavonoids found in all cultivars. The five cultivars presented high antioxidant capacity in the β-carotene/linoleic acid system, with inhibition similar to the synthetic antioxidant BHT, at a 50 µM concentration. Caingangue cultivar presented high vitamin C and total phenolics content, while Guarani had the highest cyanidin, total anthocyanin and total flavonoids levels and also the highest antioxidant capacity. These cultivars also presented good TSS/TA ratios. From the data, at a quantitative level, blackberry can be considered a good source of bioactive compounds, as well as potentially beneficial to human health.

O conteúdo de compostos fenólicos, incluindo resveratrol, antocianinas e outros flavonóides, e a capacidade antioxidante de cinco cultivares de uvas produzidas em Minas Gerais foram determinados. O conteúdo de fenólicos totais, determinado através do método de Folin-Ciocalteau variou significativamente, entre 65 ± 1 e 390 ± 30 mg equivalentes de ácido gálico.100 g -1 de amostra base úmida (b.u.). O conteúdo de antocianinas totais quantificado por CLAE variou entre 6,7 ± 0,2 e 154 ± 4 mg equivalentes de cianidina.100 g -1 (b.u.). Outros flavonóides encontrados foram catequina, epicatequina, quercetina, caempferol além dos ácidos hidroxicinâmicos. O resveratrol foi encontrado em três cultivares, variando entre 0,022 ± 0,001 e 0,60 ± 0,03 mg.100 g -1 (b.u.). A capacidade antioxidante foi analisada usando o método de seqüestro de radicais livres do DPPH (2,2-difenil-1-picrilhidrazila), que variou entre 2,7 ± 0,1 e 19 ± 2 µmoles equivalentes de Trolox.g -1 de amostra (b.u.), mostrando boa correlação com o conteúdo de fenólicos totais. As uvas tintas de coloração mais escura apresentaram maior conteúdo de antocianinas, e conseqüentemente maior teor de fenólicos totais e capacidade antioxidante.

Phenolic compounds including resveratrol, anthocyanins and other flavonoids and antioxidant capacity were evaluated for five grape cultivars cultivated in Minas Gerais (Brazil). The content of total phenolic determined by the Folin Ciocalteau method varied significantly, from 65 ± 1 to 390 ± 30 mg gallic acid equivalents.100 g -1 of FW (Fresh Weight). The content of total anthocyanins quantified by HPLC varied from 6.7 ± 0.2 to 154 ± 4 mg of cyanidin equivalents.100 g -1 FW. Resveratrol was found in three cultivars, in contents from 0.022 ± 0.001 to 0.60 ± 0.03 mg.100 g¹ of FW. In addition to hydroxicynnamic acids, other flavonoids such as catechin, epicatechin, quercetin and kaempferol were also present. The antioxidant capacity was analyzed using the DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging method and varied from 2.7 ± 0.1 to 19 ± 2 µmol trolox equivalents.g -1 FW, showing good correlation with the content of total phenolics. The darker red grapes presented higher anthocyanin contents and consequently higher total phenolic contents and antioxidant capacity.

O objetivo deste trabalho foi avaliar os efeitos da aplicação de cálcio pós-colheita nas características químicas, físico-químicas e nos teores de cálcio em pedúnculos de cajueiro-anão precoce CCP-76, submetidos a armazenamento refrigerado sob atmosfera modificada. Os cajus foram imersos em água e em soluções com diferentes concentrações de cloreto de cálcio (0,5, 1 e 2% p/v), por dois minutos. Os cajus foram acondicionados em bandejas de isopor, envolvidos em filme de PVC e armazenados a 5±1°C e 88±3% de umidade relativa, durante 25 dias. Os teores de sólidos solúveis e açúcares solúveis diminuíram durante o armazenamento. Os pedúnculos de caju, independentemente da dose de cálcio, apresentaram tendência à diminuição da acidez e da vitamina C com o armazenamento, enquanto o pH apresentou um pequeno e gradual crescimento. Não houve variação nas antocianinas, nos pseudofrutos de caju tratados com cálcio. Verificaram-se pequenas reduções nas frações fenólicas menos polimerizadas, durante o armazenamento. O cálcio aplicado nas doses de 0,5 e 2% aumentou os teores de cálcio nos pedúnculos até o 15º dia, com diminuição posterior até o final do experimento.

The objective of this work was to evaluate the effects of postharvest calcium applications on chemical and physico-chemical characteristics, quality atributes and calcium tissue concentration of early dwarf cashew pseudofruits (Anacardium occidentale L.), stored under refrigeration and modified atmosphere. The cashews were immersed in water and in different calcium chloride solution concentrations (0.5, 1 and 2% (w/v)) for two minutes. Cashews were put in polysterene trays, packed in polyvinyl chloride (PVC) and storaged at 5±1°C, 88±3% RH for 25 days. The total soluble solids (Brix) and soluble sugars decreased during storage. The pseudofruits, independent of the chloride calcium concentration, showed a tendency to decrease the total titratable acidity and vitamin C, and an increase of pH during storage. The anthocyanins content showed no variation in treated cashew pseudofruits. Small reductions in less polymerized polyphenolic fraction were observed during the storage period. The chloride calcium concentrations 0.5 and 2.0% slightly increased tissue calcium concentration until the 15º storage day, and decreased, afterwards, until the end of the experiment.
