Jaboticaba is a Brazilian fruit, native to the Atlantic forest, which belongs to the Myrtaceae family. In this work we describe the effect of the thinning of "flower", "fruit" and "flower & fruit" compared to non-thinned fruit (control) and of edible coatings with respect on nutritional composition, overall acceptability and shelf-life of jaboticaba ‘Sabara’, grown in an irrigated commercial orchard. "Flower and fruit" thinning allows fruit with higher quality as diameter, volume and mass. Non-thinned fruit shows higher yield, however fruit have lower quality. As a result of the improving quality at harvest, the shelf life was twice (~8 days) for thinned fruit. The lack of change in concentration of soluble sugar and absence of formation of volatile compounds during storage indicate that there was no natural fermentation of the jaboticaba pulp after harvest. Treatments with wax and calcium did not improve the jaboticaba shelf life.

A nêspera é uma fruta de alto valor de mercado cultivada no sudeste do Brasil. Apesar disso, há poucos detalhes sobre suas características de qualidade. Frutas de cinco cultivares de nêsperas, desenvolvidas por melhoramento genético, foram analisadas para avaliar sua composição química. As cultivares Centenária, Mizuho, Mizumo, Néctar de Cristal e Mizauto foram selecionadas com base em sua alta produtividade e resistência a doenças. Os açúcares solúveis, ácidos orgânicos e carotenoides foram quantificados por cromatografia líquida de alta eficiência. A cultivar com a maior concentração de açúcares totais foi a Mizumo e a com menor a cv. Centenária. O principal açúcar detectado foi a sacarose e o ácido málico, o principal ácido orgânico. O ácido ascórbico foi detectado apenas em pequenas quantidades. O conteúdo de fibra alimentar total foi praticamente o mesmo em todas as cultivares. Os carotenoides principais foram β-caroteno e β-criptoxantina, exceto na cv. Néctar de Cristal, uma nêspera de polpa branca. Estes resultados contribuem para o conhecimento da fisiologia das diferentes cultivares de nêspera e podem ajudar a direcionar seu uso mais apropriado, seja para o consumo in natura ou para o processamento industrial, visto ser uma matéria-prima interessante, devido às suas características nutricionais e sensoriais.

Loquat is a fruit with high market value cultivated in Southeast Brazil. Despite of this, there are little details about its quality characteristics. Fruits from five loquat cultivars, developed using genetic breeding, were analyzed to assess their compositional traits. The cultivars Centenária, Mizuho, Mizumo, Néctar de Cristal and Mizauto were selected based on their high productivity and resistance to diseases. Soluble sugars, organic acids, and carotenoids were quantified using liquid chromatography. The cultivar (cv.) with the highest total sugar concentration was Mizumo and the lowest concentration was found in Centenária. The main sugar detected was sucrose, and the malic acid was the major organic acid. Ascorbic acid was detected in small amounts. The total dietary fiber contents were almost the same in all cultivars. The major carotenoids detected were β-carotene and β-cryptoxanthin, except for the cultivar Nectar de Cristal, a white pulp loquat. These results contribute to the knowledge about de physiology of loquat fruit, an interesting raw material due to its nutritional and sensorial characteristics. Furthermore, the results obtained could help to identify the most appropriate use of the loquats with different attributes either for consumption in natura or for industrial processing.

O Brasil é o terceiro maior produtor de abacaxi(Ananas comosus) e as principais cultivares encontradas no mercado são Havaí e Pérola. Neste trabalho, frutas da cultivar Pérola foram divididas em casca, cerne e polpa e analisadas. A umidade da polpa foi superior (entre 10 e 15%) à encontrada na casca e no cerne. A concentração de proteína foi maior no cerne (35%) que na polpa e na casca. Essa cultivar contém baixas concentrações de ácido ascórbico nas partes comestíveis, no entanto a casca apresentou maiores níveis. O ácido cítrico correspondeu a aproximadamente 60% do total de ácidos orgânicos. Entre os açúcares solúveis [~7-12% (BU)], a sacarose, frutose e glicose foram predominantes. O cerne continha quase o dobro dos açúcares totais (12%) em relação à polpa (6,8%). A concentração de fibra alimentar insolúvel foi em torno de 1%, enquanto a de fibra solúvel foi menor que 0,1%. A polpa apresentou maior concentração de polifenóis (0,49%) e maior atividade antioxidante (33 µmol.g-1) que as demais partes. O consumo da polpa e do cerne produziu alto índice glicêmico (~93%), mas considerando a quantidade usual consumida, o abacaxi apresenta baixa carga glicêmica.

Brazil is the third largest producer of pineapple (Ananas comosus) and the market for fresh pineapple is sustained by the Hawaii and Perola cultivars. In this work the Perola cultivar was divided into three main parts, shell, core and pulp, for characterization. Moisture in the pulp was higher (between 10 and 15%) than in the shell and core. The amount of protein was higher in the core (35%) than in the pulp and shell. Perola contained relatively low concentrations of total ascorbic acid in the edible parts, although higher levels of ascorbic acid in the shell. Citric acid corresponded to almost 60% of the total organic acids. The total soluble sugars [~7-12% (FW)] were predominantly sucrose, fructose and glucose. The core had almost twice as much total sugar (12%) than the pulp (6.8%). The amount of insoluble dietary fiber was around 1%, and the soluble fiber was less than 0.1%. The pulp showed the highest concentration of polyphenols (0.49%) and antioxidant activity (33 µmol.g-1) out of the parts. The consumption of the pineapple pulp or core produced a high glycemic index (~93%), but considering the glycemic load, this fruit can be considered as low dietary.

During ripening many important physic-chemical changes contribute to fruit quality, and they are precisely determined by gene expression. Specific genes are essential to normal ripening; however, information on gene expression about the majority of tropical fruit, such as bananas and mangoes is limited. In this way, the present study was undertaken with the objective to provide preliminary access to the changes in expression of some genes potentially relevant to banana and mango ripening. To simultaneously evaluate the changes in gene expression, a small collection of genes related to ethylene biosynthesis, starch mobilization, cell wall disassembly, pigment synthesis and ascorbate metabolism was assembled in nylon membranes and probed with cDNA from unripe and ripe fruit. Some interesting differences were observed between gene expression in bananas and mangoes. In relation to starch metabolism, banana a-amylase was induced during ripening while phosphorylase was more induced in mangoes. Similarly, expression of cell wall-related genes for polygalacturonase and expansin were also different in those fruits. Fructanfructosyltransferase, chalcone synthase, and ascorbate oxidase genes were also induced in ripening mangoes, but not in bananas. Although the number of sequences involved was relatively small, this simple and feasible approach provided interesting preliminary data that can be starting points for more in depth studies.

Cinco cultivares de amora-preta (Rubus sp.) foram avaliadas quanto a sua capacidade antioxidante, perfil de compostos bioativos e composição físico-química. Os níveis de ácido ascórbico total, presentes na forma de ácido desidroascórbico, variaram entre 9,8 a 21,4 mg.100 g-1 (b.u.). Os principais flavonóides presentes nas cinco cultivares foram: a antocianina cianidina (66 a 80% do total de flavonóides); o flavan-3-ol epicatequina; e os flavonóis quercetina e traços de caenferol. As cinco cultivares apresentaram alta capacidade antioxidante quando avaliadas pelo sistema de co-oxidação β-caroteno/ácido linoléico, similar ao antioxidante sintético BHT, na concentração de 50 µM. A cultivar Guarani apresentou os maiores teores de flavonóides totais, antocianina total, cianidina e de capacidade antioxidante, enquanto que a cultivar Caigangue apresentou alto conteúdo de vitamina C e de fenólicos totais. Estas duas cultivares também apresentaram uma boa correlação TSS/TA. Assim, a amora-preta pode ser considerada uma boa fonte de compostos bioativos e assim contribuir com a manutenção do estado de saúde.

Five blackberry cultivars (Rubus sp.) were evaluated for antioxidant capacity, bioactive compounds and composition. Ascorbic acid levels, consisting of dehydro-ascorbic acid, ranged from 9.8 to 21.4 mg.100 g-1 fresh weight. Cyanidin (66 to 80% of total flavonoids), epicatechin, quercetin and traces of kaempferol were the main flavonoids found in all cultivars. The five cultivars presented high antioxidant capacity in the β-carotene/linoleic acid system, with inhibition similar to the synthetic antioxidant BHT, at a 50 µM concentration. Caingangue cultivar presented high vitamin C and total phenolics content, while Guarani had the highest cyanidin, total anthocyanin and total flavonoids levels and also the highest antioxidant capacity. These cultivars also presented good TSS/TA ratios. From the data, at a quantitative level, blackberry can be considered a good source of bioactive compounds, as well as potentially beneficial to human health.

A curta vida-de-prateleira da nêspera (Eryobotria japonica Lindl.) é um dos fatores que encarecem o preço final deste fruto constituindo um obstáculo para o aumento da sua produção e popularização de seu consumo. Neste contexto, o investimento em estratégias de armazenamento representa uma contribuição para a cadeia de produção da nêspera. Assim, o objetivo deste trabalho é apresentar uma alternativa de baixo custo para a extensão do tempo de armazenamento deste fruto. Nêsperas da cultivar Precoce de Itaquera, maduras, foram acondicionadas em bandejas de poliestireno teraftalato e embaladas com filme de polivinilcloreto de 14 µm de espessura. Os frutos foram armazenados em diferentes temperaturas (18 e 6 °C) na presença e ausência de sachês de permanganato de potássio para remoção do etileno. Durante o armazenamento, os frutos foram periodicamente analisados quanto à produção de etileno e à respiração. Os frutos amostrados para análises posteriores foram descascados e a polpa congelada. Os frutos foram também monitorados quanto à perda de massa fresca e analisados os teores de glicose, frutose, sacarose e sorbitol por HPAEC-PAD. Os teores de etileno nos grupos armazenados na presença dos sachês foram significativamente menores em comparação aos demais grupos, independente da temperatura de armazenamento. A respiração mostrou dependência da temperatura, sendo menor nos frutos armazenados a 6 °C, independente da presença dos sachês. Os teores de açúcares solúveis apresentaram flutuações durante o armazenamento a baixa temperatura, mas sem alterações significativas em relação aos teores iniciais, com exceção do sorbitol que aumentou. Os efeitos do armazenamento à baixa temperatura, combinados com a presença de sachês absorvedores de etileno, sobre a respiração e os teores de etileno podem ser apontados como relevantes para o aumento na vida-de-prateleira das nêsperas, sem alterações nos níveis de açúcares solúveis, fundamentais para o desenvolvimento do sabor do fruto. A combinação da embalagem com baixas temperaturas e a presença de sachês absorvedores de etileno pode constituir uma estratégia viável para o armazenamento da nêspera, estendendo significativamente a pós-colheita.

The short shelf-life of loquat (Eryobotria japonica Lindl.) fruit is one of the factors that results in the final price of this fruit hindering the increase of its production and popularization. The investment in storage strategies represents a contribution for the loquat market. The aim of this work is to present a low cost alternative to extend the storage time for this fruit. Mature loquat fruit (Eryobotria japonica Lindl.) cv Precoce de Itaquera were conditioned in trays of polystyrene terephthalate and wrapped with 14 µm polyvinyl chloride film. The fruits were stored at different temperatures (18 and 6 °C) in the presence or absence of potassium permanganate sachets for ethylene removal. During the storage time, the fruit was periodically analyzed for ethylene production and respiration. Afterwards, it was peeled and the endocarp frozen after removing the seeds. The fruit was monitored for loss of fresh weight and the glucose, fructose, sucrose and sorbitol content were analyzed by HPAEC-PAD during the storage period. The ethylene production in the groups stored in the presence of sachets was significantly smaller in comparison to the other groups, regardless of the storage temperature. Respiration showed dependence of the temperature, and was smaller in the fruit stored at 6 °C, regardless of the presence of sachets. The soluble sugar levels presented fluctuations during the storage period at a low temperature, but without significant alterations in relation to the initial content, except for the sorbitol that presented an increase. The effects of storage at a low temperature combined with the presence of ethylene absorbing sachets on respiration and ethylene levels can be pointed out as relevant in terms of increasing the shelf life of the loquat fruit, without alterations in the levels of soluble sugars, fundamental for the development of the flavor of the fruit. The combination of packing, low temperature and sachets for ethylene removal is a viable strategy to keep the loquat, significantly extending its short postharvest life.

O ácido giberélico (GA3) tem sido estudado com particular interesse na pós-colheita, pois melhora a qualidade e retarda a senescência dos frutos através de um complexo mecanismo de sinalização, interligado à atividade de enzimas responsáveis pelo processo do amadurecimento. Este hormônio vegetal, quando aplicado exogenamente, desempenha um papel importante no atraso da atividade de enzimas de parede celular, na síntese de carotenóides, degradação da clorofila e, em mangas, o GA3 diminuiu a atividade de amilases e peroxidases. A banana, fruto climatérico, tem como principal fonte de energia o amido. Este polissacarídeo é reduzido durante o climatério de teores que variam de 12 a 20%, dependendo da cultivar de banana, a menos de 1%, e o teor de sacarose pode aumentar até 12 vezes quando a fruta está amadurecida. No metabolismo de hidrólise do amido, as amilases parecem desempenhar um papel fundamental no início desta degradação, pois acredita-se que só endoamilases são capazes de atacar grânulos inteiros, fornecendo substrato para atuação de outras enzimas até a formação de açúcares. O objetivo deste trabalho foi avaliar o efeito da infiltração de giberelina A3 em fatias de banana no amadurecimento e degradação do amido. Observou-se que o fitohormônio não interferiu no climatério respiratório, porém atrasou a degradação do amido e o acúmulo de açúcares solúveis em pelo menos dois dias e o pico de atividade amilásica também foi atrasado.

The gibberellic acid (GA3) has been studied with particular interest in the posharvest, therefore it improves the quality and it delay the senescence of the fruits through a complex mechanism of signaling, linked to the activity of responsible enzymes for the process of the ripening. This phytohormone, when applied exogenous, it plays an important role in the delay of the activity of enzymes, especially of the cellular wall, in the synthesis of carotene, degradation of chlorophyll and in mangoes the GA3 was responsible for decrease the activity of amylases and peroxidases. The banana, climacteric fruit, have as main power plant the starch. The starch of banana, depending of the variety, is reduced during the climaterium of value that vary of 12 the 20% to less than 1%, when the fruit is ripened, and the sacharose can increase up to 12 fold, in this time. In hydrolysis of the starch, the amylases seems to play a basic role in the beginning of this degradation, therefore it is given credit that only endoamylases is capable to attack entire granules, supplying substratum performance of other enzymes until the formation of sugars. The aim of this employment was to evaluate the effect of the giberelin A3 in the ripening of the banana, focusing the degradation of the starch. It was observed that the infiltrated phytohormone did not be under influence of the respiratory climacteric, however delayed the degradation of the starch and the accumulation of soluble sugars in at least two days and the peak of total activity of amylases also it was been slow.

Em função dos poucos dados disponíveis na literatura sobre o adoçamento pré e pós-colheita da manga, quatro dos principais cultivares comerciais, "Tommy", "Haden", "Van Dyke" e "Palmer", foram analisados quanto ao teor de amido e de açúcares solúveis, no decorrer do seu desenvolvimento e amadurecimento pré e pós-colheita. O amido foi quantificado por método enzimático e os açúcares solúveis por cromatografia líquida (HPLC-PAD). Os resultados mostraram que, ao contrário do que a literatura relata, são acumuladas quantidades consideráveis de amido (entre 2,5 e 9%) durante a fase de formação do fruto. O padrão de degradação deste amido foi altamente dependente do cultivar. Os níveis de amido na manga madura foram quase indetectáveis nos cultivares "Van Dyke" e "Haden". A soma dos açúcares solúveis mostrou uma variação entre cultivares de 7,3% na "Van Dyke" a 12,7% na "Haden". A frutose, a hexose mais abundante, variou de 2,3 a 3,1%. A sacarose foi o principal açúcar chegando a 76% do total de açúcares no cultivar "Tommy". Os resultados permitem concluir que os teores de amido encontrados podem ser a fonte de carbono para a síntese pós-colheita da sacarose, apesar de, em alguns casos, haver uma defasagem muito grande de tempo entre a degradação do amido e o acúmulo da sacarose.

The information about sugar accumulation during mango ripening is very limited. Data presented in literature is contradictory concerning the starch and sugar content. In order to contribute to obtain reliable data, samples of four cultivars of mango were obtained during development and ripening. Soluble sugars, starch and fiber content were analyzed in these samples, by enzymatic and chromatographic (HPLC-PAD) methods. The results demonstrated that considerable amounts of starch (between 2.5 and 9%) were produced during fruit development. The pattern of degradation was highly dependent on the cultivar. The starch levels in ripen mango were almost undetectable in "Van Dyke" and "Haden". In respect to the sum of soluble sugars content, it varied between 7.3%, in "Van Dyke", and 12.7%, in "Haden". In the case of fructose, the most plentiful hexose, it varied between 2.3% and 3.1%. The sucrose represented 76% of the total amount of sugars in "Tommy", being the most abundant sugar analyzed in these cultivars. The results suggest that the starch content found during development phase of mango could be the source of carbon involved in sucrose synthesis, although, in some cases, the starch degradation and sucrose accumulation are not concomitant.

A hidrólise do amido e a síntese de açúcares durante o amadurecimento da banana são transformações bioquímicas importantes, havendo evidências de que ocorrem de forma homogênea no fruto. Para confirmar este fato, amostras de banana nanicão (Musa spp.) colhidas aos 110 dias pós-antese, foram coletadas no decorrer do amadurecimento e foram determinados os teores de amido, hexoses e sacarose e a atividade das enzimas sacarose-fosfato sintase (SPS) e sacarose sintase (SS) em diferentes partes do fruto. Observou-se que na banana verde, existe mais amido na porção periférica (18%) do que na central (13%). Porém, a sua velocidade de degradação durante o amadurecimento é a mesma, o que resulta em teores diferenciados de amido residual na banana madura. Também o aparecimento e acúmulo de sacarose foi simultâneo nas duas regiões e coincidente com os valores máximos de atividade da SPS. Utilizando-se de técnica de identificação por anticorpos específicos para SS e SPS em tecidos verde e maduro, observou-se uma distribuição homogênea das enzimas e aparente correlação entre a cor desenvolvida e a variação de atividade.

The starch breakdown and synthesis of sugars are important biochemical transformations during banana fruit ripening and seem to happen in an homogeneous way in the fruit. To confirm this fact, samples of banana cv. nanicão (Musa spp.) harvested with 110 days after anthesis were collected during ripening and amounts of starch, hexoses and sucrose, and the activity of the enzymes sucrose phosphate synthase (SPS) and sucrose synthase (SS) were estimated. It could be observed that there is a bigger concentration of starch in the peripheric portion of green banana (18%) than in the central part (13%). However, the speed of starch degradation during maturation is the same, which results in different concentrations of residual starch in the ripe banana. In addition, the sucrose appearing and accumula-tion happened at the same time in both regions and coincided with the maximum values of SPS activity. Using the "Tissue Print" technic, it was possible to observe that SPS and SS are uniformily distributted in the hole pulp of both green and ripe tissues, and that there is an apparent correlation between the developed color and the activity variation.
