The variety of vegetables available for plant-based beverage production is associated with a lack of specific regulatory aspects and difficult standardization. The aim of this study was to characterize the physicochemical properties of plant-based beverages (five different sources, three different market brands for each vegetable). The parameters studied were pH, moisture content, acidity, soluble ionic calcium at initial pH and pH 4.3, soluble solids, heat coagulation time (HCT), density, conductivity, surface zeta potential, morphology, polydispersity index, particle size. When comparing the mean values of the results found in the present work with model emulsions and/or plant based beverages produced on a laboratory scale, it can be found that the mean values for pH, moisture, soluble solids, calcium, surface zeta potential, particle size, and polydispersity index were similar to the reported values in the literature, however, acidity, HCT, density, and conductivity were lower than those reported in the literature. The coconut plant-based beverage exhibited the most significant statistical difference as compared to other plant-based beverages, especially in terms of pH, conductivity, particle size, and polydispersity index. This study is a promising aid to regulatory agencies and industries for standardization of nutritional value, production, stability, storage and chemical attributes of these beverages.

Besides increasing shelf life of fluid milk, milk powder has physical and functional properties that allow it to be used as ingredient. The rehydration process is complex and happens in four steps: wettability, sinkability, dispersibility and solubility. Works have been conducted aiming at the development of an easier, more convenient and reproducible method to evaluate the dissolution properties of dairy powders. Therefore, the aim of this work was to evaluate dispersibility and solubility through particle size distribution in order to establish a new rehydration index for whole milk powder. The particle size distribution and morphological characteristics of seven samples of milk powder (from A to G) were analyzed. Samples F and C differed from the others which formed a similar group. Principal component analysis divided the samples into three different groups, allowing the indication of an efficient rehydration index to determine the powders dispersability.

Resumo O primeiro alimento do bebê é o leite materno, que deve, entre outras funções, atender, principalmente, às necessidades nutricionais e fornecer proteção imunológica. Em alguns casos, mães impossibilitadas de amamentar necessitam de substitutos. Nos dias de hoje, os substitutos que melhor mimetizam o leite humano são as fórmulas infantis. Diferentes rotas tecnológicas podem ser projetadas para produzir fórmulas infantis apresentando o grande desafio: o compromisso entre alimentos seguros e os danos causados pelo tratamento térmico. Este artigo foi elaborado com o objetivo de revisar o conhecimento científico atual sobre como o tratamento térmico afeta os macro e micronutrientes do leite, extrapolando os efeitos esperados para as fórmulas infantis. Os tópicos abordados são: definição e composição das fórmulas infantis, métodos industriais para produção de fórmulas infantis, efeito do tratamento térmico sobre macronutrientes e micronutrientes do leite.

Abstract Breast milk as the children’s primary source of nutrition fulfills the babies’ needs and can also provide immune protection. In some cases, when mothers are not able to breastfeed, an equivalent substitute is required. Nowadays, the best substitutes of the human breast milk are infant formulas. Different technological routes may be designed to produce infant formulas according to the main challenges: the compromise between food safety and heat treatment damage. This article aimed to review the current scientific knowledge about how heat treatment affects the macro and micronutrients of milk, extrapolating the expected effects on infant formulas. The covered topics were: The definition and composition of infant formulas, industrial methods of infant formulas production, the effects of heat treatment on milk macro and micronutrients.

Sweetened condensed milk contains various dispersed particles, such as proteins, fats, and lactose, all of which make it highly viscous. During sweetened condensed milk production, microcrystalline lactose is added in order to control the product crystallization. The purpose of this study was to characterize the behavior of commercially sold sweetened condensed milks submitted to laser particle size analysis using two different dispersion media: water and a lactose solution. The lactose solution dispersion medium extended the length of time the sweeten condensed milk samples’ original characteristics were present during the laser diffraction particle sizing measurements that were carried out. Significant difference was observed (p < 0.05) between analysis times when water was used as a dispersing medium versus when a lactose solution was used (p > 0.05). Using a lactose solution as a dispersion medium when determining particle size in sweetened condensed milk prolongs the original characteristics of the sample substance during laser diffraction particle analysis.

RESUMO Produzido e comercializado na América Latina, o doce de leite é muito apreciado por seus consumidores, com grande importância para o mercado brasileiro. A padronização das características desse produto, assim como sua adequação ao que é preconizado pelo Regulamento Técnico de Identidade e Qualidade, é dificultada pela grande diversidade cultural e variações tecnológicas da sua produção. Por essa razão, o estudo das características físico-químicas e reológicas do doce de leite torna-se de grande importância para se alcançar uniformidade, principalmente pela escassez de literatura técnica e científica sobre este produto. Neste trabalho, objetivou-se avaliar e relacionar os atributos físico-químicos e de textura. Foram analisadas doze marcas de doce de leite quanto aos teores de umidade, atividade de água e análise de textura, com posterior análise estatística dos dados. A análise estatística descritiva para os atributos de textura mostrou elevada variação entre as amostras. Quanto ao teor de umidade, 51,11% das amostras tiveram resultados em desacordo com os padrões legais vigentes. As análises realizadas apresentaram resultados de HMF livre e total elevados. Pela Análise de Componentes Principais (PCA), verificou-se que a principal fonte de variação e de contribuição para agrupamento das marcas avaliadas está relacionada com os elementos que compõem as características reológicas do produto. Os resultados mostraram elevada correlação entre atividade de água, umidade e atributos reológicos. A combinação dos atributos físico-químicos e reológicos mostra-se útil para caracterização e avaliação da qualidade do doce de leite. Os resultados obtidos neste trabalho contribuem para ampliar os conhecimentos científicos e podem servir de subsídios para as indústrias de laticínios e a comunidade.

ABSTRACT The Dulce de Leche, a product which is marketed and produced in Latin America, is much appreciated by consumers, with great importance for the Brazilian market. The standardization of the characteristics of this product as well as the suitability for recommendations of the Technical Identity and Quality Regulation becomes difficult due to the large cultural diversity and technological changes. In this context, the study of physical-chemical and rheological characteristics the Dulce de Leche becomes of great importance to achieve such uniformity, mainly by the lack of technical and scientific literature about this product. This work aimed to evaluate and relate the physical-chemical and texture attributes. Twelve Dulce de Leche brands were analyzed to moisture, water activity and texture analysis with statistical analysis of the data. Descriptive statistical analysis for texture attributes showed high variability between samples. As for the moisture content, 51.11% of the samples were outside the statutory standards. The analysis had results of free HMF and elevated totals. Through the Principal Component Analysis (PCA) it was found that the main source of variation and contribution to group of the appraised brands is related to the elements that make up the rheological characteristics of the product. The results showed high correlation between water activity, moisture and rheological attributes. The combination of physical, chemical and rheological attributes were shown to be useful for characterization and evaluation of Dulce de Leche quality. These results expand scientific knowledge about Dulce de leche favoring the dairy industry and the scientific community.
