Abstract In the present work, the potential of native isolates of fungi strains to biodegrade vegetable tannins used in the tanning industry was evaluated. Penicillium citrinum showed to be more efficient for consumption of acacia tannin, reaching 94.85%. Aspergillus chevalieri needs a greater adaptation phase (48 h) in both acacia and chestnut medium, evidenced by the slow growth (0.022 h-1) and low biomass productivity (0.31 g.L-1. h-1). The acacia tannin presented a higher COD/BOD ratio (2.97) and lower total phenol content (68%) when compared to chestnut tannin. In addition, there was greater consumption of this tannin in the cultivations, which contradicts previous reports and corroborates the results obtained with FTIR analysis that suggests the biodegradation of acacia by Penicillium citrinum and aethiopicum. The expressive results obtained demonstrated that the biodegradation of condensed tannins may be a promising alternative, with the potential to minimize tannery waste.

A farinha de trigo é a matéria-prima mais importante para a elaboração de massas alimentícias. O processo de produção de massas consiste na mistura de água e farinha, amassamento, extrusão e secagem. Aveia e microalga Spirulina platensis desempenham um papel fisiológico no crescimento e manutenção do organismo humano devido ao seu elevado valor nutricional. Com base nisso, o objetivo deste trabalho foi estudar as propriedades nutricionais e tecnológicas de massa seca enriquecida com farinha de aveia e microalga Spirulina platensis. A farinha de trigo foi caracterizada e o efeito da substituição parcial por aveia e Spirulina platensis (Arthrospira platensis) foi avaliado utilizando-se metodologia de superfície de resposta (MSR). As misturas foram analisadas quanto a umidade, proteínas, cinzas, cor, tamanho de partícula, número de queda e alveografia. As massas formuladas foram secas e avaliadas quanto a teor de umidade, cor, cozimento, acidez, composição centesimal e perfil de aminoácidos. De maneira geral, a adição de Spirulina platensis influenciou o teor de sólidos solúveis e a cor da massa, enquanto que a farinha de aveia afetou os teores de acidez. A farinha de aveia aumentou os valores de proteína bruta e de fibra dietética total (13,06%), quando comparados com os da massa comercial (2,40%), e pode ser considerada como uma fonte de fibra.

Wheat flour is the most important raw material in the production of pasta. The production process consists of mixing water and flour, kneading, extrusion and drying. Oats and the microalga Spirulina platensis play a physiological role in the growth, development and maintenance of the human organism due to their high nutritional value. The aim of this study was to assess the technological and nutritional properties of dry pasta prepared with the addition of oatmeal and Spirulina platensis. The wheat flour was characterized and the effect of partial replacement by oatmeal and Spirulina platensis (Arthrospira platensis) was evaluated using response surface methodology (RSM). The mixtures were analysed for moisture, protein, ash, colour, particle size, falling number and alveography. The formulated pastas were dried and evaluated for moisture, colour, cooking test, acidity, proximate composition and amino acids. Generally, the addition of Spirulina platensis influenced the soluble solids content and colour of the pasta, while the oatmeal mainly affected the acid content. The oatmeal increased the values of crude protein and total dietary fibre (13.06%) when compared with the commercial pasta (2.40%) and may be considered as a source of fibre.

O trabalho objetivou estudar o efeito da umidade de colheita e do tempo de armazenamento em grãos de milho secos e armazenados em silos com ar natural forçado. Grãos de milho colhidos com 17,8; 18,9 e 20,5% de água foram acondicionados em silos tipo alambrado com fundo falso perfurado e com ventiladores ligados ininterruptamente até a secagem. Amostras de milho foram coletadas nos tempos zero, 4, 8, 22 e 112 dias, em seis alturas de camada de cada silo (10, 60, 110, 160, 210 e 260 cm). A composição química foi determinada pelo uso de Espectrofotômetro do Infravermelho Proximal (NIR) e os resultados expressos em porcentagem e em base seca. Os dados foram analisados estatisticamente (Anova) e nas interações significativas, elaborados os gráficos de regressão. Nas determinações de proteínas, lipídios, matéria seca e fibra em detergente neutro as interações foram significativas ao nível de 5% de probabilidade de erro, enquanto que em cinzas, umidade e carboidratos não foram verificadas diferenças significativas. A aeração natural forçada é capaz de reduzir a umidade do milho para 13%, sendo tecnicamente viável em propriedades familiares.

The aim of this work was to study the effects of moisture at harvest and time of storage upon grains of corn dried and stored in bins with forced natural air. Grains of corn harvested with 17.8; 18.9, and 20.5% of water were stored in drying bins with false floor with fans working full-time until drying. Samples of corn were collected at zero, 4, 8, 22, and 112 days from six different heights in each bin (10, 60, 110, 160, 210 and 260 cm). The chemical composition was determined through Near-Infrared Spectrophotometer (NIR) and the results were expressed in percentage at dry basis. The data were statistically analyzed (Anova) and for the significant interactions graphics of regression were provided. In the process of determination of protein, fat, dry matter, and neutral detergent fiber the interactions were significant at 5% error probability, whereas in ash, moisture and carbohydrates no significant difference was observed. Forced natural air is able to reduce corn moisture up to 13%, thus it is technically feasible in familiar properties.

O trabalho objetivou estudar a danificação do amido de farinha de trigo por moagem e o seu efeito na produção de biscoitos tipo semi-duros. Amostras de trigo dos cultivares BR 23, BRS Angico e Rubi, com características diferentes quanto à dureza foram moídas em moinho de rolos através de uma passagem pelo conjunto de quebra; quebra mais três reduções na umidade 16% e quebra mais três reduções na umidade 12%. Neste tratamento, a moagem foi complementada pelo emprego de moinho de bolas. Nas farinhas, foram realizadas análises físicas, químicas, reológicas e funcionais, utilizando delineamento casualizado em planejamento fatorial completo 3 x 3, totalizando nove tratamentos. Os resultados foram analisados estatisticamente e, nos modelos significativos, as médias comparadas entre si pelo teste de Tukey a 5% de probabilidade de erro. Os resultados rendimento de quebra, proteína bruta, amido danificado, força geral do glúten (W x 10-4J) e relação tenacidade/extensibilidade (P/L) indicam que a farinha do cultivar BRS Angico apresentou melhores características para a produção de biscoitos seguido de BR 23 e Rubi. O teor de amido danificado produzido durante a moagem dos trigos influencia nas propriedades funcionais dos biscoitos apresentando melhor resultado aqueles obtidos a partir de uma passagem pelo conjunto de quebra.

The objective of this research was to study the damage starch of wheat flour which occurred in the milling process and its effect in the production of sugar-snap cookie type. Samples of the wheat by cultivars BR 23, BRS Angico and Rubi, with different hardness were milled in a roller-mill through a passage for the break system; a break and three reductions in the 16% of moisture, a break and three reductions in the 12% of moisture. In this treatment, the milling was complemented using a ball-mill. The flours were analyzed with respect to physical, chemistry, rheology and functional characteristics, using a 3 x 3 factorial design totalizing nine treatments. The results were analyzed using an analysis of variance and the averages of the significant models were compared by the Tukey test at 5% of probability. The results of break yield, protein, damaged starch, work input (W x 10-4J) and relation extensibility/tenacity (P/L) indicate that the flour by cultivar BRS Angico presented better characteristics for the produce of cookies, followed by BR 23 and Ruby. The damaged starch produced during the milling of the wheat influenced the functional properties of cookies showing better results than those obtained using one passage by the break system.
