Abstract Thus, the objective of this work was to evaluate the performance of industrial drying and the quality of soybean grains using a direct-fire furnace automatically fed by wood chips. To represent the grains before drying, four samples were collected together with the sampling of the loads in the trucks carried out to classify the product in the storage unit. At drying, performance evaluations and specific energy consumption were carried out. The grains were evaluated for moisture content, germination, electrical conductivity, apparent specific mass, color, acidity index, and PAHs. Drying showed an average efficiency of 75.50%. The average chip consumption was 0.4403 kg of chip/kg of evaporated water. The specific energy consumption was 8,099.50 kJ/kg of evaporated water. The grains showed differences after drying in the characteristics of germination, electrical conductivity, and chroma. Six PAHs were detected in the samples before drying: (B(a)A, Chr, 5 MC, B(j)F, Dib(ai)P, and IcdP). After drying, in addition to the PAHs obtained before drying, five more were detected (B(b)F, B(k)F, B(a)P, Dib(al)P, and Dib(ah)A). Mean PAH concentrations were higher than the maximum values allowed by European Union legislation.

ABSTRACT. Drying is an important step in the post-harvest processes as a way of product conservation and quality preservation. In this context, this study aimed to evaluate the effect of continuous and intermittent drying of maize grains with different rest periods on the integrity of their micro- and macroscopic structures. Maize grains were harvested with a moisture content of 0.3399 ± 0.001 dry basis (db) and subjected to continuous and intermittent drying with 4, 8, 12, and 16 hours of rest period. An experimental fixed-bed dryer, with controlled drying air conditions at a temperature of 100 °C and air flow of 1.5 m3 min.−1 m−2 (12 m3 min.−1 m−3), was used. Continuous drying was completed with a moisture content of 0.1628 ± 0.0003 db, whereas intermittent drying was interrupted with 0.2195 ± 0.0002 db and resumed after rest. The drying rate, integrity through grain images, the conformation of particles through scanning electron microscopy, and cell membrane integrity were evaluated. The drying rate increased with an increase in the rest period, the increase in rest period reduced the intensity of cracks, and the reduction in rest period led to higher dispersion and reduction in the size of starch granules and lower integrity of cell membranes.

ABSTRACT Bugs are pest insects that, when not adequately controlled, may cause significant losses in the soybean crop. Their damage to grains compromises delivery in the storage unit and storage success. Thus, the objective of this study was to evaluate, during storage, the effect of temperature and moisture content on soybean grain quality with high damage caused by bugs in the crop. The experiment was set in a completely randomized design with a 2 x 4 x 5 factorial design, with two moisture contents (11.75 and 13.84% (w.b.)), four storage temperatures (20, 25, 30 and 35 °C), and five evaluation periods (0, 2, 4, 6 and 8 months). The percentage of damaged/fermented, damaged, fermented, broken grains, and electrical conductivity were analyzed. It can be inferred that bug-damaged soybean grains have reduced quality when stored at higher temperatures and for more extended periods. It is not recommended to store bug-damaged grains in moisture contents of 13.84% (w.b.) at temperatures above 30 °C for longer than four months. Grains stored at 35 °C when not damaged by bugs, ferment after six months of storage. Bug-damaged grains evolve to fermented grains during storage.

RESUMO O trigo mourisco tem se destacado na cadeia alimentícia por não possuir glúten em sua farinha. Por ser uma cultura relativamente nova no meio agrícola, faltam informações referentes ao seu processamento, dentre as etapas pós-colheita a secagem é uma das mais importantes. O objetivo do presente trabalho foi descrever o processo de secagem de grãos de trigo mourisco. Os grãos foram colhidos com teor de água de 0.41 ± 0.01 (b.s.) e submetidos a secagem em secador experimental nas temperaturas de 40, 50, 60, 70 e 80 °C, e velocidade do ar de 0.8 m s-1. Determinou-se a taxa de secagem e ajustou-se aos dados experimentais modelos matemáticos frequentemente utilizados para a descrição da secagem de diversos produtos agrícolas. A seleção dos modelos foi baseada no método de regressão não linear de Gauss-Newton e complementada pelo Critério de Informação de Akaike e Critério de Informação Bayesiano de Schwarz’s. Conclui-se que, a taxa de redução da água foi maior para maiores temperaturas e diminuiu com o aumento do tempo de secagem; o modelo de Midilli é recomendado para representar a cinética de secagem dos grãos nas temperaturas de 40, 60 e 70 ºC; para a temperaturas de 50 e 80 ºC recomenda-se o modelo de aproximação da difusão; os coeficientes de difusão efetivo apresentaram magnitude de 1.8990 a 17. 8831 × 10-11 m2 s-1 e; a energia de ativação requerida para iniciar o processo de secagem foi de 49.75 kJ mol-1.

ABSTRACT Buckwheat has become important in the food sector as its flour does not contain gluten. Since buckwheat is a relatively new crop in the agricultural environment, there is little information available regarding its processing. Drying is one of the most important post-harvest stages of buckwheat. The aim of the present study was to describe the drying process of buckwheat grains. Buckwheat grains with a moisture content of 0.41 ± 0.01 (dry basis, d.b.) were harvested, followed by drying in an experimental dryer at the temperatures of 40, 50, 60, 70, and 80 °C, at an air speed of 0.8 m s-1. The drying rate was determined, and the mathematical models generally employed to describe the drying process of several agricultural products were fitted to the experimentally obtained data. Model selection was based on the Gauss-Newton non-linear regression method and was complemented by Akaike Information Criterion and Schwarz’s Bayesian Information Criterion. It was concluded that the drying rate increased with an increase in temperature and decreased with an increase in drying time. It is recommended to use the Midilli model to represent the drying kinetics of buckwheat grains at the temperatures of 40, 60, and 70 °C, while the Approximation of diffusion model is recommended for the temperatures of 50 and 80 °C. The magnitudes of effective diffusion coefficients ranged from 1.8990 × 10-11 m2 s-1 to 17.8831 × 10-11 m2 s-1. The activation energy required to initiate the drying process was determined to be 49.75 kJ mol-1.

RESUMO As propriedades mecânicas de produtos agrícolas são fundamentais para o correto desenho de projetos ou dimensionamento de equipamentos de processamento e estabelecimento de parâmetros sobre a carga suportada. Para avaliar o efeito da secagem com intermitência, foi montado um experimento em delineamento inteiramente casualizado, com cinco tratamentos (secagem contínua e intermitente com 4; 8; 12 e 16 h de repouso) e quatro repetições. Os grãos de milho, cultivar Cargo TL, foram colhidos com teor de água de 25.37% b.u., submetidos a secagem em um secador experimental de camada fixa, ajustado à temperatura de 100 ºC e fluxo de ar de 1.5 m3 min-1 m-2. A secagem decorreu até que os grãos atingissem o teor de água de 14±0.3% b.u. Para a secagem intermitente o processo foi interrompido com 18±0.2% de teor de água b.u. e prosseguiu após o repouso, até atingir o teor de água final. Para a análise foram selecionados aleatoriamente 10 grãos por repetição e submetidos ao teste de compressão uniaxial depois de determinar as suas dimensões. Avaliou-se a força de ruptura, deformação máxima, energia consumida até o ponto de ruptura, módulo de tenacidade, dureza e taxa de redução da água durante a secagem. Concluiu-se que, o aumentou do tempo de repouso promoveu um aumento linear nos valores da força de ruptura e dureza; o módulo de tenacidade, energia e deformação não foram afetados pelo tempo de repouso; o aumento do tempo de repouso contribuiu para o aumento da taxa de redução da água.

ABSTRACT Mechanical properties of agricultural products are essential for a proper project design or processing equipment dimensioning, as well as for establishment of parameters on the supported load. An experiment was set up in a completely randomized design, with five treatments (continuous and intermittent drying under 4, 8, 12, and 16 h of rest period) and four replications, to evaluate the effect of intermittent drying. Corn kernels of the cultivar Cargo TL were harvested with a moisture content of 25.37% wb and submitted to drying in an experimental fixed bed dryer set to a temperature of 100 °C and an airflow of 1.5 m3 min-1 m-2. Drying was performed until the kernels reached a moisture content of 14±0.3% wb. The process was interrupted in the intermittent drying with a moisture content of 18±0.2% wb and continued after rest period until the final moisture content was reached. The analysis consisted of 10 kernels randomly selected per replication and submitted to the uniaxial compression test after determining their dimensions. Rupture force, maximum deformation, energy to rupture point, modulus of toughness, hardness, and drying rate during drying were evaluated. The increase in rest period promoted a linear increase in the rupture force and hardness. Modulus of toughness, energy to rupture point, and maximum deformation were not affected by the rest period. The increase in rest period contributed to increasing the drying rate.

ABSTRACT. With the depletion of fossil fuel resources accelerating the search for renewable energy sources, studies on agricultural products containing a significant amount of oil in their compositions have intensified. The objective of this work was to investigate the fatty acid profile and the physiological quality of the oil extracted from niger seeds dried at different temperatures. The seeds were dried at 40, 50, 60, and 70°C, until their moisture content reached 8.5 ± 1% (wet basis). The physiological properties of niger seeds were determined by assessing their germination, germination speed index, mean germination time, cold test, accelerated aging with a saturated solution, emergence percentage, and emergence speed index. The quality of the oil was evaluated using gas chromatography, based on the fatty acid profile. We concluded that drying air temperatures of 40 and 50°C did not compromise the physiological quality of niger seeds. However, the 70°C drying temperature seriously impaired seed quality. The drying temperatures that were used in this study did not substantially alter the fatty acid profile of niger oil.

RESUMO: Atualmente uma alternativa alimentar que atende às demandas do consumidor moderno é o processamento industrial do feijão. Foi avaliada a adaptabilidade de oito cultivares de feijão ao processamento industrial. Os grãos foram processados em uma indústria do setor, utilizando-se embalagens metálicas com capacidade de 420 g, nas quais as amostras foram acondicionadas sem o emprego de hidratação prévia. O processo de cozimento e esterilização foi realizado em autoclave rotativa. No feijão enlatado foram então avaliados os parâmetros de qualidade. Como resultado, verificou-se que, na classe Carioca, o cultivar BRS Estilo diferencia-se dos demais, devido ao baixo peso drenado que contribuiu para o aumento de sólidos totais no caldo, com baixos valores de dureza, não se adaptando ao tipo de processo utilizado neste experimento. Na classe Preto, observaram-se características de qualidade semelhantes entre BRS Esplendor e IPR Uirapuru, e entre BRS Esteio e BRS Campeiro, destacando-se esta última por apresentar menores índices de grãos danificados após o processamento. Por fim, com as informações presentes neste trabalho pretende-se contribuir com pesquisas futuras sobre o tema e dessa forma incrementar o consumo do feijão e sua exportação na forma de produto processado.

ABSTRACT: A current alternative for meeting the modern consumer’s beans food demands is the industrial processing. This study evaluated the adaptability of eight Brazilian beans cultivars to industrial canning from commercial class cultivars of Carioca and of Black beans. The grains were processed in an industry sector using metallic cans with a capacity of 420 g, where the samples were conditioned without previous hydration. The cooking and sterilization process took place in a rotating autoclave. Quality parameters were evaluated in the canned beans. As a result, it was verified that, for the Carioca class, the Estilo cultivar differs from the rest of the genetic materials in terms of its low drained weight, which contributes to the increase in the total solids in the sauce, which have low hardness values. Estilo cultivar is not suitable for the type of processing used in this experiment. For the Black class, similar quality characteristics were observed between Esplendor and Uirapuru and between Esteio and Campeiro cultivars, where the latter stands out due to its lower damaged bean indices after processing. Finally, with the information present in this paper we intend to contribute to future researches on this subject and thereby increase the consumption and exportation of beans as processed product.

RESUMO. Este trabalho foi realizado com o objetivo de avaliar a correlação entre um grupo de variáveis fisiológicas (condutividade elétrica, lixiviação de potássio e porcentagem de germinação) e um grupo de variáveis de cinética de secagem (tempo e taxa de secagem), bem como verificar a relação entre as variáveis de cinética de secagem e a qualidade sensorial do café, em função do tipo de processamento, da temperatura e do fluxo de ar de secagem. A secagem do café foi realizada em secador de leito fixo com duas temperaturas e dois fluxos de ar. Após a secagem, foi avaliada a qualidade fisiológica e sensorial. A partir dos resultados obtidos, conclui-se que: o café processado via seca é mais sensível à secagem mecânica com ar aquecido do que o processado via úmida, apresentando pior desempenho fisiológico; o fluxo de ar não interfere na qualidade fisiológica do café despolpado e natural; a elevação da temperatura de 40 para 45°C resultou em queda da qualidade fisiológica apenas para o café despolpado e a elevação da taxa de secagem, por meio da elevação do fluxo de ar de secagem, para a temperatura de 40°C teve efeito negativo na qualidade sensorial do café despolpado.

ABSTRACT. The objective of this study was to evaluate the correlation between a group of physiological variables (electrical conductivity, potassium leaching, and germination percentage) and a group of drying kinetics variables (drying time and drying rate) in addition to verifying the relation between drying kinetics variables and coffee quality as a function of processing type, temperature, and drying airflow. Coffee drying was conducted in a fixed-layer dryer at two temperatures and two airflows. After drying, an evaluation of the physiological and sensorial quality was conducted. Based on the results obtained, the following conclusions were drawn: coffee that is processed via a dry method is more sensitive to mechanical drying with heated air than coffee processed via a wet method, resulting in poor physiological performance; airflow does not interfere with the physiological quality of pulped and natural coffees; a temperature increase from 40 to 45°C resulted in a decrease in the physiological quality only for pulped coffee; and an increase in the drying rate as a result of an increase in the drying temperature to 40°C had a negative effect on the sensorial quality of pulped coffee.

RESUMO A secagem de produtos agrícolas reduz o teor de água a níveis adequados para o armazenamento, visando à manutenção da qualidade do produto. Porém, cuidados especiais com as temperaturas aplicadas no processo são importantes para a integridade e longevidade do material. Objetivou-se determinar o efeito imediato e latente de temperaturas do ar de secagem sobre a qualidade de soja produzida em segunda safra. Os grãos foram colhidos no estádio R8, próximo à maturidade fisiológica, com teor de água de, aproximadamente, 23 % (b.u.), e foram submetidos a temperaturas de secagem de 40 ºC, 50 ºC, 60 ºC, 70 ºC e 80 ºC, até o teor de água de 12,5 ± 0,7 % (b.u.), sendo, posteriormente, armazenados em ambiente com condições de temperatura e umidade não controladas, durante 180 dias. A cada 45 dias subsequentes, a qualidade foi avaliada por meio de determinação da perda de matéria seca, coloração e teores de proteína bruta e de lipídios e pelos índices de acidez e de peróxido do óleo bruto extraído. Com base nos resultados obtidos, conclui-se que o aumento da temperatura do ar de secagem influencia na qualidade da soja e do óleo bruto extraído, sendo esse efeito potencializado com o tempo de armazenamento; a qualidade da soja e do óleo bruto se reduzem conforme o incremento na temperatura do ar de secagem e no tempo de armazenamento; a temperatura do ar de 40 ºC é a que menos afeta a qualidade dos grãos de soja e do óleo bruto extraído.

ABSTRACT Drying agricultural products reduces the moisture content to suitable levels for storage, in order to maintain the product quality. However, special care with the temperatures applied in the process is important for the integrity and longevity of the material. The present study aimed at determining the immediate and latent effect of air-drying temperatures on the quality of soybean produced as a second season crop. The grains were collected at the R8 stage, close to the physiological maturity, with moisture content of approximately 23 % (w.b.), submitted to drying temperatures of 40 ºC, 50 ºC, 60 ºC, 70 ºC and 80 ºC, up to a moisture content of 12.5 ± 0.7 % (w.b.), and then stored under non-controlled humidity and temperature for 180 days. Thereafter, quality was assessed every 45 days by determining the dry matter loss, color and crude protein and lipid contents, as well as the acidity and peroxide indices of the crude oil extracted. Based on the results obtained, it was concluded that the increase in the air-drying temperature affects the soybean quality and crude oil extracted, being this effect enhanced with the storage time; the soybean and crude oil quality decline with an increase in the air-drying temperature and storage time; the air temperature of 40 ºC has the least effect on the quality of soybean grains and crude oil extracted.

Este trabalho teve por objetivo estudar as propriedades físicas dos de pinhão-manso durante a secagem em seis condições do ar, por meio de circularidade, esfericidade, volume, área superficial, área projetada e relação superfície-volume. Os grãos de pinhão-manso com teor de água em torno de 0,61 (decimal b.s.)foram submetidos à secagem em camada fina, em estufa com circulação forçada de ar em seis condições de temperatura (36, 45, 60, 75, 90 e 105 °C) e umidade relativa de 31,7; 19,6; 9,4; 4,8; 2,6; e 1,5%, respectivamente, até atingir o teor de água de 0,11 ± 0,006 (decimal b.s.). Concluiu-se que: os tempos necessários para os de pinhão-manso alcançarem o teor de água de 0,11 ± 0,006 (decimal b.s.) foram 1,5; 2,25; 3,0; 4,75; 6,75; e 12,0 h para as temperaturas de secagem de 105, 90, 75, 60, 45 e 36 °C, respectivamente. A redução do teor de água e as condições de secagem causaram alterações na forma e reduziram o tamanho dos grãos de pinhão.

This study was carried out to study the physical properties of the jatropha beans over the drying under six air conditions, based on measurements of roundness, sphericity, volume, superficial area, projected area and surface/volume ratio. Jatropha beans with moisture content around 0.61 (decimal d.b.) were subjected to thin-layer drying in oven with forced-air circulation under six temperature conditions (36, 45, 60, 75, 90 and 105 °C) and relative humidity of 31.7; 19.6; 9.4; 4.8; 2.6 and 1.5% respectively, until reaching the moisture content of 0.11 ± 0.006 (decimal d. b.). The results showed that the necessary time for jatropha beans to reach the moisture content of 0.11 ± 0.006 (decimal d.b.) were 1.5; 2.25; 3.0; 4.75; 6.75 and 12.0 h for the drying temperatures of 105, 90, 75, 60, 45 and 36 °C, respectively; and the reduction in the moisture content as well as the drying conditions promoted changes in the shape and reduced the size of the jatropha beans.

O pinhão-manso tem se destacado no cenário mundial como planta promissora para a produção de biodiesel. No entanto, esta cultura ainda carece do desenvolvimento de equipamentos específicos para o seu processamento, principalmente na fase pós-colheita. Sendo assim, objetivou-se com o presente trabalho ajustar diferentes modelos matemáticos aos dados experimentais obtidos na secagem dos frutos de pinhão-manso e recomendar aquele que melhor representa o fenômeno. Os frutos de pinhão-manso com o teor de água de 4,40 (kg de água kg-1 de matéria seca), foram submetidos à secagem em estufa com ventilação de ar forçada em cinco condições de temperatura: 45; 60; 75; 90 e 105 ºC e umidades relativas de 14,5; 7,4; 3,8; 2,2 e 1,4%, respectivamente, até atingirem o teor de água de 0,10 ± 0,005 (kg de água kg-1 de matéria seca) em três repetições. Aos dados experimentais da secagem foram ajustados dez modelos matemáticos utilizados para representação da secagem dos produtos agrícolas. Os modelos foram analisados por meio do coeficiente de determinação, do qui-quadrado, do erro médio relativo, do erro médio estimado e da distribuição de resíduos. Conclui-se que, o modelo de Page descreve satisfatoriamente a cinética de secagem dos frutos de pinhão-manso nas temperaturas de 60; 75; 90 e 105 ºC. No entanto, para a secagem na temperatura de 45 ºC ocorreu um comportamento diferenciado sendo necessário um ajuste de um novo modelo para a descrição do fenômeno.

The jatropha has emerged on the world scene as a promising plant for the production of biodiesel. However, this crop still lacks the development of specific equipment for its processing, particularly post-harvest. Therefore, the aim of this work was to fit different mathematical models to experimental data obtained while drying jatropha fruits, and to recommend the one that best represents the facts. Jatropha fruit with a moisture content of 4.4 (kg moisture kg-1 dry matter) were subjected to drying in a greenhouse with forced air-ventilation at five temperature conditions: 45; 60; 75; 90 and 10 ºC and relative humidities of 14.5; 7.4; 3.8; 2.2 and 1.4%, respectively, until reaching a moisture content of 0.10 ± 0.005 (kg moisture kg-1 dry matter),with three replications. Ten mathematical models, used to represent the drying of agricultural products, were adjusted to fit the experimental drying data. The models were analyzed using the coefficient of determination, chi-square, mean relative error, mean estimated error and residual distribution. It can be concluded that the Page model satisfactorily describes the kinetics of jatropha-fruit drying, at temperatures of 60; 75; 90 and 105 ºC. However, drying at a temperature of 45 ºC produced different behavior, making necessary the adjustment of a new model to describe the phenomenon.

Objetivou-se com o presente trabalho determinar o diâmetro geométrico e ajustar diferentes modelos matemáticos aos valores experimentais da contração volumétrica dos grãos de pinhão-manso submetidos à secagem em seis condições de ar. Os grãos com teor de água inicial de 0,61 kga kgms-1 (kg de água por kg de matéria seca), aproximadamente, foram submetidos à secagem em estufa com circulação de ar forçada nas temperaturas de 36, 45, 60, 75, 90 e 105°C, até atingirem o teor de água de 0,11 ± 0,006 kga kgms-1. Aos dados experimentais foram ajustados cinco modelos matemáticos utilizados para representação da contração volumétrica dos produtos agrícolas. Os modelos foram analisados por meio do coeficiente de determinação, teste de qui-quadrado, do erro médio relativo, do erro médio estimado, e da distribuição de resíduos. Os dados do diâmetro geométrico foram submetidos a análise de regressão adotando-se o nível de 1% de significância. Conclui-se que o teor de água e a temperatura de secagem influenciam na contração volumétrica dos grãos de pinhão-manso, sendo este fenômeno satisfatoriamente descrito pela equação Polinomial e, o diâmetro geométrico reduz linearmente com a redução do teor de água, independentemente da condição de secagem.

The objective of this study was to determine the geometric diameter of volumetric shrinkage in Jatropha seeds subjected to drying under six air conditions and to fit different mathematical models to the experimental values. Seeds with an approximate initial moisture content of 0.61 kgw kgdm-1 (kilogram of water per kilogram of dry matter) were dried in a convection oven at temperatures of 36, 45, 60, 75, 90, and 105°C until they reached a moisture content of 0.11 ± 0.006 kgw kgdm-1. The experimental data were fitted to five mathematical models used to represent volumetric shrinkage in agricultural products. The models were analyzed using the coefficient of determination, chi-square, mean relative error, mean estimated error, and residual distribution. Geometric diameter data were subjected to regression analysis by adopting a 1% level of significance. It was concluded that moisture content and drying temperature influence volumetric shrinkage in Jatropha seeds, a phenomenon satisfactorily described by the Polynomial equation, where the geometric diameter linearly decreased with a reduction of the moisture content, regardless of the drying conditions.

O parcelamento da secagem pode ser eficiente tanto no que diz respeito à qualidade final do café, quanto na redução do consumo específico de energia. Diante disso, objetivou-se, com o presente trabalho, avaliar o efeito do teor de água dos frutos no momento da interrupção da secagem e do período de repouso até a retomada da secagem na qualidade do café natural, por meio da análise sensorial e dos testes de condutividade elétrica e lixiviação de potássio. Frutos de café maduros foram colhidos manual e seletivamente e, em seguida, secados ao sol em terreiros de concreto por dois dias e, então, submetidos à secagem mecânica em secadores de camada fixa. Quando o café atingiu os teores de água de 20%, 17% e 14% (base úmida, bu), a secagem foi interrompida e o café permaneceu em repouso por cinco, quinze e trinta dias e, posteriormente, foi secado em secadores mecânicos até o teor de água de 11% (bu). O controle constituiu-se na secagem completa em terreiro. Observou-se que as combinações entre o menor teor de água e o maior período de repouso e entre o maior teor de água e o menor período de repouso, proporcionam menores valores de lixiviação de potássio. A qualidade da bebida melhora progressivamente com o aumento do período de repouso. A interrupção da secagem com teores de água de 17% e 20% (bu) não altera a qualidade do café natural, comparativamente à secagem completa em terreiro.

Rest periods during the coffee drying process may help improve the final coffee quality and reduce power consumption. The objective of the present study was to evaluate the effect of the moisture content of coffee fruit at the point when the drying process is temporarily interrupted on the quality of natural coffee using sensory analysis and electrical conductivity and potassium leaching tests. Ripe coffee fruits were manually and selectively harvested, sun-dried in a concrete yard for two days and subjected to mechanical drying in fixed-bed dryers. When the coffee reached moisture contents of 20%, 17% and 14% (wet basis, wb), the drying process was interrupted, and the coffee was allowed to remain at rest for 5, 15 or 30 days. Following this rest period, the coffee was dried in mechanical dryers until reaching a moisture content of 11% (wb). The control condition was complete drying in the yard. The combination of lowest moisture content with greatest period of rest and the combination of greatest moisture content and shortest period of rest resulted in the lowest values of potassium leaching. The beverage quality gradually improved as the duration of the rest period increased. Coffee subjected to a rest period at moisture contents of 17% and 20% (wb) did not alter the quality compared to that from drying in the yard.

Diante da necessidade de desenvolvimento de equipamentos para a cultura do pinhão-manso, objetivou-se com este trabalho ajustar diferentes modelos matemáticos aos dados experimentais da secagem dos grãos de pinhão-manso, submetidos a diferentes condições de secagem, e selecionar aquele que melhor representa o fenômeno. O experimento foi desenvolvido no Instituto Federal Goiano - Campus Rio Verde. Os grãos, com teor de água inicial de 0,50 (kg de água/kg de matéria seca), aproximadamente, foram submetidos à secagem em estufa, com circulação forçada de ar, nas temperaturas de 45, 60, 75, 90 e 105 °C, até atingirem o teor de água de 0,10 ± 0,005 (kg de água/kg de matéria seca). Aos dados experimentais, foram ajustados 11 modelos matemáticos utilizados para representação da secagem de produtos agrícolas. Os modelos foram analisados por meio do coeficiente de determinação, do qui-quadrado, do erro médio relativo, do erro médio estimado e da distribuição de resíduos. Conclui-se que o aumento da temperatura do ar promove redução no tempo de secagem dos grãos e que os modelos de Midilli e Dois Termos são adequados para a representação do fenômeno da secagem dos grãos de pinhão-manso, e que, dentre estes, recomenda-se o modelo de Midilli para a descrição do fenômeno, por sua maior simplicidade.

Given the necessity of developing jatropha cultivation equipment, this work adjusted different mathematical models to experimental data obtained from the drying of jatropha seeds submitted to different drying conditions and selected the best model to describe the drying process. The experiment was carried out at the Federal Institute of Goiás - Rio Verde Campus. Seeds with initial moisture content of approximately 0.50 (kg water/kg dry matter) were dried in a forced air-ventilated oven, at temperatures of 45, 60, 75, 90 and 105°C to moisture content of 0.10 ± 0.005 (kg water/kg dry matter). The experimental data were adjusted to 11 mathematical models to represent the drying process of agricultural products. The models were compared using the coefficient of determination, chi-square test, relative mean error, estimated mean error and residual distribution. It was found that the increase in the air temperature caused a reduction in the drying time of seeds. The models Midilli and Two Terms were suitable to represent the drying process of Jatropha seeds and between them the use of the Midili model is recommended due to its greater simplicity.

Avaliar a qualidade do café conilon (Coffea Canephora Pierre) depois da secagem em terreiro híbrido e de concreto, processado por via seca para as condições climáticas do Estado de Rondônia, foi o principal objetivo deste trabalho. O café foi colhido, manualmente, pelo sistema de derriça no pano, com teor de água de aproximadamente 50% (b.u.), separado por diferença de massa específica em três grupos: cerejas, boia e café mistura. Posteriormente, cada um dos grupos foi dividido em dois lotes e submetidos à secagem em terreiro híbrido e terreiro de concreto. A análise sensorial foi realizada pela degustação por especialista e a qualidade química do produto foi avaliada por meio das análises da acidez titulável, sólidos solúveis totais e condutividade elétrica. Conclui-se que o tempo necessário para que os cafés boia, mistura e cereja atingissem o teor de água de 9,5 ± 0,5 (%b.u.) foi de 168 horas no terreiro de concreto e no terreiro híbrido foi de 48, 54 e 60 horas, respectivamente. O café submetido à secagem em terreiro de concreto obteve melhor qualidade em comparação ao café secado em terreiro híbrido, decorrente da taxa de remoção de água mais lenta, em média 3,1 vezes menor que no terreiro híbrido, e em função das condições climáticas favoráveis à secagem em terreiro de concreto.

The main objective of this work was to analyze the conilon (Coffea Canephora Pierre) coffee berry quality after drying in hybrid terrace and concrete yard processed by dry and drying under the climatic conditions of the state of Rondônia. The coffee berries were manually harvested on the cloth, at moisture content of approximately 50% (w.b.), separated by differences of bulk density in three types: cherries, float and coffee mixture. Thereafter, each group was divided into two lots and subjected to drying in hybrid terrace and concrete yard. The sensory analysis was carried out by specialist tasting and the chemical quality was assessed by analysis of acidity, soluble solids and electrical conductivity. The results showed that the drying time needed for all the types to reach the moisture content of 9.5 ± 0.5 (% w.b.) was 168 hours in the concrete yard, and for hybrid terrace was 48, 54 e 60 hours respectively. The coffee berry drying in concrete yard obtained better quality compared to the hybrid terrace, mainly due to smaller rate of removal of water in drying system, on average three times lower than in the concrete yard and according to the fortunate climatic conditions in the drying concrete yard.
