RESUMO: Este estudo objetivou realizar uma análise bibliométrica e revisão de literatura acerca da produção de filmes à base de gelatina para aplicação como embalagens alimentícias, abordando os principais avanços e limitações. A busca de artigos foi realizada na base de dados da Scopus e os dados bibliométricos obtidos pela ferramenta Bibliometrix (RStudio software). Verificou-se uma grande variedade de compostos que podem ser incorporados nos filmes de gelatina, a fim de superar suas limitações relacionadas à alta solubilidade e baixas propriedades mecânicas, bem como para obtenção de funções ativas ou inteligentes. Dentre os compostos mais reportados, têm-se: óleos essenciais, pigmentos extraídos de vegetais e outros agentes antimicrobianos. Os alimentos mais reportados como matriz de aplicação foram: carnes (peixe, frango e camarão), leite, queijo e frutas, minimamente processadas. Mesmo com tendências promissoras, o maior desafio no âmbito das aplicações reais em larga escala é a obtenção de biopolímeros facilmente degradáveis, com estabilidade estrutural e funcional similar aos polímeros sintéticos. Dessa forma, o maior enfoque dessa temática em pesquisas poderá favorecer avanços significativos para o uso dessas embalagens, impactando positivamente diversos dos Objetivos para o Desenvolvimento Sustentável, preconizados pela Organização das Nações Unidas.

ABSTRACT: This research carried out a bibliometric analysis and literature review on the production of gelatin-based films for application as food packaging, addressing the main advances and limitations. The search for articles was performed in the Scopus database, and bibliometric data were obtained using the Bibliometrix tool (RStudio software). It was observed that a wide variety of compounds can be incorporated into gelatin films to overcome the limitations related to their high solubility and low mechanical properties, as well as to obtain active or smart functions. Among the most reported compounds were essential oils, pigments extracted from vegetables, and other antimicrobial agents. The most reported foods as an application matrix were meat (fish, chicken, and shrimp), milk, cheese, and minimally processed fruits. Even with promising trends, the biggest challenge for large-scale applications is to obtain easily degradable biopolymers with structural and functional stability similar to synthetic polymers. Thus, a greater focus on this theme in research may favor significant advances in the use of these packages and positively impact several of the Sustainable Development Goals, as recommended by the United Nations.

ABSTRACT Tuber floridanum is the first truffle species reported in Brazil and little is known about its nutritional properties and ecology. Therefore, this study aimed to (1) determine T. floridanum aroma and nutritional properties and (2) analyze cultivation and fruiting conditions, including potential crop pests and market value. Fruiting bodies of T. floridanum showed a slightly ellipsoid shape and smooth to shallow groovy surface. The mass of ascocarps ranged from 0.13 g to 15.95 g, and the truffle was composed of 71 % carbohydrates, 19 % protein, 5 % ash, and 5 % of fat. Octan-3-one, 1-methoxy-3-methyl-butane, and 1-methoxy-2-methyl-butane determined T. floridanum characteristic aroma. Soil properties were also specific for this truffle, differing from optimal soils where commercial truffles are produced. In addition, the occurrence of earwigs (Anisolabididae, Anisolabidinae) feeding on truffles (26 % of all ascocarps) in pecan orchards may reduce truffle quality and cause financial losses. T. floridanum aroma has a unique composition, completely different from any commercial and non-commercial truffle species analyzed so far. Soil conditions in pecan orchards were also specific for truffle fruiting. Further studies should elucidate other ecological conditions for the co-production of T. floridanum with pecan .

Resumo O consumo e, consequentemente, a produção de manteiga têm aumentado consideravelmente nos últimos anos. Para conhecer as manteigas comercializadas no Brasil, o estudo teve como objetivo analisar manteigas de origem brasileira, francesa, italiana e argentina. As amostras foram analisadas quanto ao teor de gordura, à umidade, ao extrato seco desengordurado e à acidez total, para comparação com a legislação brasileira. Também foram determinados os teores de cloretos, proteínas, cinzas, extrato seco total, atividade de água, cor e perfil lipídico. Em todas as análises, houve diferença significativa entre as amostras. Algumas amostras apresentaram desacordo com os requisitos de qualidade recomendados pela legislação brasileira para comercialização. Dez amostras não apresentaram o teor mínimo de gordura exigido, variando de 68,53% a 77,31% nas manteigas com sal e de 71,64% a 81,72% nas manteigas sem sal. Oito amostras estavam acima do permitido para umidade, variando de 17,05% a 20,28%, e todas estavam de acordo em relação à acidez. Os ácidos graxos predominantes em todas as amostras foram ácido mirístico (C14:0), ácido palmítico (C16:0), ácido esteárico (C18:0) e ácido oleico (C18:1n9). A influência regional, a raça do animal, o manejo dos animais e a época do ano em que o leite foi obtido para a produção das manteigas são considerados os principais motivos das diferenças físico-químicas encontradas entre as amostras.

Abstract The consumption and consequent production of butter has increased considerably in recent years. In order to know the butters sold in Brazil, the study aimed to analyze butters of Brazilian, French, Italian and Argentine origin. The samples were analyzed for fat content, moisture, Defatted Dry Extract (DDE), and total acidity for comparison with Brazilian legislation. The levels of chlorides, protein, ash, total dry extract, water activity, color and determination of the lipid profile were also determined. In all analyses, there was a statistically significant difference between the samples. Some samples showed disagreement with the quality requirements recommended in Brazilian legislation for commercialization. Indeed, 10 samples did not present the minimum fat content required, varying from 68.53% to 77.31% in butters with salt and from 71.64% to 81.72% in those without salt. Eight samples presented humidity levels above the legal recommendations, varying from 17.05% to 20.28%. All products were in agreement with acidity levels. The predominant fatty acids in all samples were myristic acid (C14: 0), palmitic acid (C16: 0), stearic acid (C18: 0) and oleic acid (C18: 1n9). The regional influence, breed and handling of the animals and season of the year in which the milk was obtained for butter production, were suggested to be the main reason for the physical-chemical difference found between the samples.

Resumo Estima-se que o número global de pessoas afetadas pela deficiência de micronutrientes, também conhecida mundialmente como fome oculta, seja superior a dois bilhões, sendo assim considerada um problema de saúde pública. O objetivo deste estudo foi avaliar cultivares biofortificadas de mandioca quanto a composição físico-química e teor de carotenoides totais, além de verificar sua aceitação sensorial por escolares. O estudo foi realizado em Santa Maria-RS, Brasil, com quatro cultivares de mandioca, sendo duas variedades biofortificadas com polpa amarela (BRS 399 e BRS 396) e duas variedades não biofortificadas: uma com polpa amarela (“Gema de ovo”) e outra com polpa branca (“Vassourinha”). Após o cozimento das raízes, a composição nutricional (umidade, proteína, lipídio, cinzas e amido total), o teor de carotenoides totais e a aceitação sensorial das raízes pelas crianças, nos municípios sul-rio-grandenses de em Júlio de Castilhos e Dilermando de Aguiar, foram determinados. Os teores de umidade, proteína, lipídios, cinzas e amido apresentaram variações significativas entre as cultivares analisadas. Os maiores níveis de carotenoides totais foram encontrados nas cultivares biofortificadas (12,85 µg g-1). Nas cultivares não biofortificadas, “Gema de ovo” e “Vassourinha”, os níveis foram de 12,01 µg g-1 e 3,30 µg g-1, respectivamente. A aceitação sensorial foi de 78,7%, demonstrando potencial para inserção de raízes biofortificadas na alimentação escolar.

Abstract It is estimated that the global number of people affected by micronutrient deficiency, known worldwide as hidden hunger, is over two billion and also considered a public health problem. Therefore, this study aimed to evaluate biofortified cassava cultivars in relation to their physical-chemical composition, total carotenoids and to verify their sensory acceptance by schoolchildren. The study was conducted in Santa Maria, in the state of Rio Grande do Sul (RS), Brazil, with four cassava cultivars, two biofortified with yellow pulp (BRS 399 and BRS 396); two non-biofortified varieties: one with yellow pulp (“Gema de ovo”) and another with white pulp (“Vassourinha”). After cooking the roots, the nutritional composition (moisture, protein, lipid, ash, and total starch), the total carotenoid content, and the sensory acceptance of the roots by the children at school, in the countryside of Julio de Castilhos and Dilermando de Aguiar, was determined. The contents of moisture, protein, lipids, ash, and starch showed significant variations between the cultivars analyzed. The highest levels of total carotenoids were found in biofortified cultivars (12.85 µg g-1). In the non-biofortified cultivars, “Gema de ovo” and “Vassourinha”, the levels were 12.01 µg g-1 and 3.30 µg g-1, respectively. Sensory acceptance was 78.7%, demonstrating the potential for the insertion of biofortified roots in school meals.

RESUMO Objetivou-se avaliar o efeito dos níveis de caroço de algodão (0; 100; 200; 300 e 400 g Kg-1) na terminação de cordeiros sobre os parâmetros físicos e químicos da carne. Utilizou-se 45 cordeiros, machos, não castrados, distribuídos ao acaso em delineamento inteiramente casualizado com cinco tratamentos e nove repetições cada. Os valores de pH, não foram influenciados pelos níveis de caroço de algodão. Os teores de lipídios e cinzas apresentaram diferença significativa, mas não foram ajustados pelas equações lineares ou quadráticas. As variáveis perdas por descongelamento e coesividade aumentaram, e a atividade de água e capacidade de retenção de água diminuíram com o incremento de caroço de algodão na dieta. Já os tocoferóis, perdas por cocção, dureza e mastigabilidade foram ajustados através de equações quadráticas. Na avaliação instrumental de cor o L*, b* e h° demonstraram comportamento linear crescente. Logo a inclusão de até 400 g de caroço de algodão na dieta influencia a composição físico-química e na cor da carne produzida.

ABSTRACT The aim of this study was to evaluate the effect of different levels of cottonseed (0, 100, 200, 300 and 400 g Kg-1) on the physical and chemical parameters of the meat of finishing lambs. Forty-five uncastrated male lambs were distributed in a completely randomised design with five treatments of nine replications. The pH values were not influenced by the levels of cottonseed. The lipid and ash content showed significant differences, but were not adjusted by the linear or quadratic equations. Losses during thawing increased, as did cohesiveness, and water activity and water retention capacity decreased as the levels of cottonseed in the diet rose. Tocopherols, cooking loss, toughness and chewiness were adjusted using quadratic equations. In the instrumental colour evaluation, L*, b* and h° showed increasing linear behaviour. The inclusion of up to 400 g of cottonseed in the diet affects the physical-chemical composition and the colour of the produced meat.

Abstract Functional foods are those that bring benefits to human health beyond nutrition such as the prevention of cardiovascular diseases, allergies and intestinal problems. Among the functional foods highly consumed worldwide, yogurt is highlighted, especially in the probiotic and symbiotic versions. The aim of this study was to use the Jerusalem artichoke tuber flour ( Helianthus tuberosus L.) as a new prebiotic source for the development of functional yogurt. The identification and quantification of the fructans of the Jerusalem artichoke flour was performed and later yoghurt formulations were elaborated. These yogurts were submitted to analyses of centesimal composition, shelf life and sensorial evaluation. For the biological evaluation, a symbiotic yogurt formulation was chosen (the best accepted in sensorial evaluation) and included in the feed of New Zealand white rabbits, in the growth and final phase. The in vivo experiment had three distinct groups (control group, probiotic group and symbiotic group). At the end of 50 days of experiment, the animals were euthanized and submitted to the serological and cecal microbiota evaluation. Through this study, the prebiotic/bifidogenic capacity of Jerusalem artichoke flour was evidenced.

RESUMO: Estima-se que em 2050 a população mundial contará com cerca de 9 bilhões de pessoas, e, portanto, a necessidade de fontes alternativas de proteína é inevitável, uma vez que as fontes convencionais, como carne de gado, suínos e aves, não serão suficientes para suprir a demanda do crescimento populacional. A alimentação que inclui fontes alternativas de proteína, como os insetos, é uma realidade em países da América Latina, Ásia, Austrália, Europa e África. Esta pesquisa apresenta os resultados de um estudo exploratório que analisou o perfil alimentar de 1.619 consumidores das cinco regiões brasileiras (Norte, Nordeste, Centro-Oeste, Sudeste e Sul) quanto sua percepção, motivação e forma preferencial aos insetos comestíveis. Os dados foram analisados através de frequências cruzadas e expressos em porcentagem. Nossos resultados mostram que mulheres apresentam maior aversão ao consumo de insetos do que homens. Em geral, há preferência em consumir os insetos na forma de farinha, e inteiro para aqueles com mais familiaridade ao consumo de insetos. Majoritariamente, os consumidores brasileiros não tem opinião sobre a segurança em consumir insetos, contudo, em maiores níveis de escolaridade e a familiaridade os consumidores posicionam-se quanto à sua segurança.

ABSTRACT: It is estimated that by 2050 the world population will be 9 billion people; and therefore, the need for alternative sources of protein is inevitable, since conventional sources, such as beef, pork and poultry, will not be sufficient to meet the demand of population growth. Food that includes alternative sources of protein, such as insects, is a reality in countries of Latin America, Asia, Australia, Europe and Africa. This research presents the results of an exploratory study that analysed the food profile of 1,619 consumers in the five Brazilian regions (North, Northeast, Midwest, Southeast and South) as well as their perception, motivation and preferred form of edible insects. The data were analysed by cross-tabulation and expressed as frequencies. Our results show that women are more reluctant than men to consume insects. In general, there is a preference for consumption of insects in the form of flour. However, those with more familiarity with this type of consumption prefer the whole insect. Most Brazilian consumers have no opinion about the safety of consuming insects; however, consumers with higher levels of education and familiarity consider it safe.

Na produção de pães integrais de trigo no Brasil, são utilizadas mesclas de farinha integral (FI) com farinha refinada (FR), as quais diferem em sua composição. Assim, o objetivo deste estudo foi investigar as propriedades de pasta de mesclas de FI com FR. Foram analisadas amostras com 100% de FI, 100% de FR (controles) e mesclas de FI com FR nas proporções de 20, 40, 60 e 80%, em equipamento RVA (Rapid Visco Analyzer). A temperatura de pasta das amostras foi semelhante. A viscosidade máxima diminuiu proporcionalmente com o aumento de FI na mescla. Maiores valores de quebra e de viscosidade mínima à temperatura constante foram encontrados em farinhas com pico de viscosidade elevado. Os valores de viscosidade final e de tendência à retrogradação diminuíram à medida que aumentou o teor de FI na mescla. As propriedades de pasta das mesclas de FI com FR devem ser vistas de forma conjunta, pois afetam a produção de pão e o armazenamento. Os resultados mostraram também que o RVA pode ser usado para ajudar a formular mesclas de FI/FR com certas propriedades de pasta.

In whole wheat bread production in Brazil blends of whole flour (WF) with refined flour (RF) are used, which differ in their composition. Thus, the objective of this study was to investigate the pasting properties of WF with RF blends. Samples with 100% of WF, 100% of RF (controls) and blends of WF with RF in the proportions of 20, 40, 60 and 80% were analyzed, in a RVA (Rapid Visco Analyzer) equipment. The samples pasting temperatures were similar. The peak viscosity decreased proportionally with the increase of WF in blends. Higher values of breakdown and holding strength were found in flour with high viscosity peak. Final viscosity and setback values decreased as the content of WF in blends increased. The pasting properties of WF with RF blends must be seen in a combined way, because they affect bread production and storage. The results also showed that RVA can be used to help in formulating WF/RF blends with certain pasting properties.

Esta pesquisa foi conduzida com o objetivo de avaliar o efeito in vitro e in vivo do óleo de eucalipto (Corymbia citriodora) sobre o carrapato bovino (Rhipicephalus (Boophilus) microplus). Na experimentação in vitro, foi utilizado o grupo controle negativo e oito concentrações de óleo de eucalipto (0,5; 1; 2; 5; 10; 20; 50; 100%), em fêmeas ingurgitadas de carrapato. A eficácia de controle foi de 0; 30,5; 75,5; 91; 100; 100; 100; 100 e 100%, respectivamente. Para a experimentação in vivo, foram constituídos três grupos (controle negativo; óleo de eucalipto a 3,5% - nível estimado mediante análise de regressão, correspondendo a 95% de eficácia de controle do carrapato da pesquisa in vitro e amitraz a 0,025%), com dezoito vacas da raça Holandesa. Antes (média dos dias -3, -2,-1) e após a aplicação do produto (1, 2, 3, 5, 7, 10, 14, 21dias), foram contadas fêmeas ingurgitadas de carrapato. A eficácia de controle foi de 0; 96,4 e 69%, respectivamente, 21 dias após o tratamento. Na 1ª e na 2ª ordenha após a aplicação dos tratamentos, foram avaliadas variáveis fisiológicas e coletadas amostras de leite para avaliar as propriedades organolépticas no leite e no iogurte (controle negativo x tratamento fitoterápico). O teste de aceitação sensorial do leite e das variáveis fisiológicas avaliadas foram similares entre os tratamentos.

This research was aimed at evaluating in vitro and in vivo effects of eucalyptus (Corymbia citriodora) oil on cattle ticks (Rhipicephalus (Boophilus) microplus). Negative control group and eight concentrations of eucalyptus oil (0.5; 1; 2; 5; 10; 20; 50; 100%), were used on in vitro trials with engorged female ticks. The efficacy of control ticks was 0; 30.5; 75.5; 91; 100; 100; 100; 100 and 100%, respectively. At the in vivo trial eighteen Holstein cows were allocated to three groups (negative control, eucalyptus oil at 3.5% - level estimated by regression analysis, accounting for 95% efficacy of control ticks on in vitro trial and amitraz at 0.025%). Engorged female ticks were counted before (mean of days -3, -2, -1) and after treatment (1, 2, 3, 5, 7, 10, 14, 21 days). The efficacy control tick was 0; 96.4 and 69%, respectively, at 21 days after treatment. On the 1st and 2nd milked after treatments, physiologic variables were evaluate and milk samples were collected to evaluate organoleptic properties in milk and yoghurt (negative control x phytotherapic treatment). Similar results were found with sensorial acceptance test of milk and physiologic variables.

O leite de cabra é recomendado para pessoas intolerantes ao leite de vaca e/ou portadoras de desordens gastrintestinais. frozen yogurt elaborado a partir de iogurte de leite de cabra foi acrescido de 1% de prebiótico (inulina), 0,25% de cultura starter (Streptococcus thermophilus e Lactobacillus bulgaricus) e 0,25% de cultura probiótica (Bifidobacterium animalis e Lactobacillus acidophilus) para verificar seu potencial probiótico (após sete e 120 dias de armazenamento), sua qualidade físico-química e sua aceitação sensorial. Durante a estocagem, houve redução de células viáveis da flora microbiana, principalmente dos probióticos. Ainda assim, o produto apresenta potencialidade probiótica pela soma de B. animalis e L. acidophilus atingir o mínimo desejável até o fim do armazenamento. Os valores de extrato seco total (26,6±0,2%), proteína (3,0±0,2), gordura (2,6±0,1%), pH (5,5±0,01) e ácido láctico (0,2±0,01%) encontram-se semelhantes aos relatados em outros trabalhos para o mesmo produto. A avaliação sensorial foi realizada por 50 provadores não treinados em teste com escala hedônica de sete níveis e intenção de compra. O produto recebeu bons escores para aparência global, cor, aroma e sabor; já textura e sabor residual obtiveram menores índices de aceitação. Na intenção de compra, 61% dos avaliadores declararam que comprariam o produto, contra 39% que não comprariam. Nessas condições, demonstra-se a viabilidade de elaboração de frozen yogurt de leite caprino acrescido de pre- e probióticos.

Goat's milk is recommended for people afflicted with cow milk intolerance and gastro-intestinal disorders. frozen yogurt was elaborated with 1% prebiotic (inulin), 0.25% starter culture (Streptococcus thermophilus and Lactobacillus bulgaricus) and 0.25% probiotic culture (Bifidobacterium animalis and Lactobacillus acidophilus) to verify probiotic potential (after 7 and 120 days of storage), physical-chemical quality and sensorial acceptance. During storage viable cells were reduced, mainly probiotic bacteria. Nevertheless, the product showed probiotic potential because of B. animalis and L. acidophilus sum, which reached the minimum desirable until the end of storage. Values of total dry matter (26.6±0.2%), protein (3.0±0.3%), fat (2.6±0.1%), pH (5.5±0.01) and acid lactic (0.2±0.01%) were similar to those descript by other researches for the same product. Sensorial evaluation was realized by 50 untrained panelists, with a 7- point hedonic scale and intention to purchase. The product received good scores for global appearance, color, aroma and taste. Texture and residual taste had lower acceptance rates. The intent to purchase showed that 61% of panelists asserted to buy the product against 39%, who would not buy it. Accordingly, this research showed the feasibility of elaborating the goat's milk frozen yogurt with addition of pre- and probiotics.

No presente experimento, o objetivo foi verificar a possibilidade de incorporar soro de leite líquido em mortadela. A água empregada na elaboração da mortadela foi substituída nas proporções de 50, 75 e 100% por soro de leite líquido. Foram avaliadas as características sensoriais (cor, odor, sabor e textura), pH, coloração, estabilidade da emulsão da mortadela, assim como a percentagem de gordura e líquido, liberados após o tratamento térmico da emulsão da mortadela. A adição de soro de leite líquido não exerceu influência significativa nas características sensoriais, pH, coloração, estabilidade da emulsão e líquido liberado após o tratamento térmico das mortadelas. A substituição de 75 e 100% da água por soro de leite líquido, na elaboração da mortadela proporcionou menor percentual de gordura liberada após o tratamento térmico. Com base nos resultados obtidos, pode-se dizer que o soro líquido pode ser usado para substituir 100% do gelo usado na elaboração da mortadela, evitando que o soro excedente seja liberado no meio ambiente.

The objective of this paper was to verify the possibility of incorporating fluid whey in mortadela. The water employed in the elaboration of mortadela was replaced in the proportions of 50, 75 and 100% by fluid whey. Sensorial characteristics (color, odor, flavor and texture), pH, color, emulsion stability of mortadela were evaluated, as well as the percentage of fat and liquid released after thermal treatment of mortadela emulsion. The addition of fluid whey did not exert significant influence on the sensorial characteristics, pH, color, emulsion stability and liquid released after the thermal treatments in mortadela. Water substitutions of 75 and 100% by fluid whey in the elaboration of mortadela promoted a lower percentage of fat released after thermal treatment. Based on the obtained results it is clear that fluid whey can be used to substitute 100% of ice used in the elaboration of mortadela, thus avoiding that exceeding fluid whey be released in the environment.
