Abstract Food processing allows a wide variation in the final quality of the product, which directly depends on the quality of the raw material used, the processing conditions, storage and commercialization. Salting, for example, is one of the oldest methods used to preserve meat. In the meat industry, the incorporation of salts into products is commonly used to improve dietary functionality and ensure food safety. Thus, the objective of this review was to understand that the discarded matrix meat can be used to make jerky meat, adding value to the final product. The processing of jerked beef is based on the osmotic dehydration process in counter flow, promoted by the penetration of salt with consequent exit of water from the inter and extra fibrillar compartments to the surface, with subsequent drying. At the same time, myosin denaturation occurs as a result of high temperatures, as well as myoglobin oxidation, promoted by salt, increasing the susceptibility to protein oxidation. The use of discarded animal meat to make jerky adds value to the by-product, improving sensory quality.

Abstract Objective: To evaluate inactivated CoronaVac prime vaccination, antibody decay, booster dose, and safety in ANCA-Associated Vasculitis (AAV) patients. Methods: Fifty-three AAV patients and 106 Controls (CG) received CoronaVac on days: D0 (first dose), D28(second dose), and D210 (booster dose, 32 AAV: 32 CG). The primary outcome was immunogenicity after the second vaccine dose (day 69) assessed by Seroconversion Rates (SC) of anti-SARS-CoV-2 S1/S2 IgG and Neutralizing Antibodies (NAb). Secondary outcomes were safety, immunogenicity (D28/D240), 6-months antibody decay (D210) and the booster dose response (D240). Results: At D69 SC (65.1% vs. 96.8%, p = 0.0001), GMT (21.3 UA/mL vs. 67.7 UA/mL, p < 0.001) and NAb- positivity (53.7% vs. 80.6%, p = 0.001) were moderate but lower in naïve-AAV patients than CG. Patients without SC used more often IS (93.3% vs. 53.3%, p = 0.015), mycophenolate mofetil (20% vs. 0%, p = 0.037) and prednisone (60.0% vs. 28.6%, p = 0.057) than seroconverted. NAb negativity in AAV patients was associated with prednisone treatment (57.9% vs. 18.2%, p = 0.015) and IS (84.2% vs. 55.0%, p = 0.046). Logistic regression analysis models showed that only prednisone was associated with lower seroconversion (OR = 0.2, 0,95% CI 0.05–0.86, p = 0.030) and with lower NAb positivity (OR = 0.2, 0,95% CI 0.05–0.88, p = 0.034). After six months (D69–D210) a decrease in IgG positivity occurred in 32 AAV patients (15.7%, p = 0.074) and 32 CG (18.7%, p = 0.041). For the NAb positivity, the 6-month decrease was not significant (p = 0.114) whereas a major reduction occurred for CG (p < 0.001). A booster dose (D240) resulted in an increment in IgG-positivity (21.9%, p = 0.023) and NAb-positivity (34.4%, p = 0.006) in AAV patients. No moderate/severe adverse events attributable to the vaccine were observed. Conclusion: This study provides novel data on the excellent safety and moderate immunogenicity of CoronaVac in AAV patients. A six-month mild antibody waning was observed with a good response to the booster dose, although levels remained lower than CG (CoronavRheum-NCT04754698).

ABSTRACT People living with HIV (PLH), who use antiretroviral therapy (ART), are more susceptible to changes in the inflammatory profile and oxidative stress, and women have greater access to ART. Although physical exercise is a complementary strategy to treatment due to its antioxidant and anti-inflammatory effects, it is not clear whether acute responses to exercise can be harmful to PLH. The aim of the study was to investigate the acute effect of resistance exercise (RE) on inflammatory and oxidative stress markers in PLH. Ten women, using ART, performed RE session consisting of seven exercises for the whole body. For biochemical evaluation, blood samples were collected before (pre), 1 hour (1h) and 2 hours (2h) after the RE session. One-way ANOVA followed by Bonferroni's post hoc test was used to compare results between time points. There was an increase only in markers, GSSG of 160% (pre: 0.40 ± 0.11; 1h: 1.18 ± 0.36; 2h: 1.04 ± 0.25 mmol/g), TNF-α of 98 % (pre: 4.60 ± 0.55; 1h: 6.95 ± 0.77; 2h: 9.10 ± 1.03 pg/ml) and 52% IL-6 (pre: 2.47 ± 0 .67; 1h: 3.63 ± 1.26; 2h: 5.38 ± 2.15 pg/ml). The other variables remained unchanged (P > 0.05). It is concluded that a RE session increased the levels of inflammatory markers and oxidative stress in PLH in a non-exacerbated way.

RESUMO Pessoas vivendo com HIV (PVH), que utilizam a terapia antirretroviral (TARV), são mais suscetíveis a alterações no perfil inflamatório e estresse oxidativo, sendo que as mulheres possuem maior acesso à TARV. Embora o exercício físico seja uma estratégia complementar ao tratamento devido aos seus efeitos antioxidantes e anti-inflamatórios, não está claro se as respostas agudas ao exercício podem ser prejudiciais às PVH. O objetivo do estudo foi investigar o efeito agudo de exercícios com pesos (EP) sobre marcadores inflamatórios e de estresse oxidativo em PVH. Dez mulheres, em uso da TARV, realizaram uma sessão de EP constituída por sete exercícios para o corpo todo. Para avaliação bioquímica, amostras de sangue foram coletadas antes (pré), 1 hora (1h) e 2 horas (2h) após a sessão de EP. A ANOVA one-way seguida do teste post hoc de Bonferroni foi utilizada para comparação dos resultados entre os momentos. Houve aumento apenas nos marcadores, GSSG de 160% (pré: 0,40 ± 0,11; 1h: 1,18 ± 0,36; 2h:1,04 ± 0,25 mmol/g), TNF-α de 98% (pré: 4,60 ± 0,55; 1h: 6,95 ± 0,77; 2h: 9,10 ± 1,03 pg/ml) e IL-6 de 52% (pré: 2,47 ± 0,67; 1h: 3,63 ± 1,26; 2h: 5,38 ± 2,15 pg/ml). As demais variáveis permaneceram sem alterações (P > 0,05). Conclui-se que uma sessão de EP aumentou os níveis de marcadores inflamatórios e estresse oxidativo em PVH de forma não exacerbada.

RESUMO Objetivos: analisar a atuação de enfermeiros na assistência a pacientes em cuidados paliativos, com destaque para a dimensão espiritual, à luz da Teoria do Cuidado Humano. Métodos: estudo exploratório, qualitativo, realizado em um hospital localizado em João Pessoa, Paraíba, entre agosto e dezembro de 2019, com 10 enfermeiros. Para coleta de dados, utilizou-se a entrevista semiestruturada. Para análise, optou-se pela técnica de análise de conteúdo. Resultados: a dimensão espiritual do cuidado é contemplada por diversas práticas religiosas e espirituais. Essas são respeitadas e incentivadas pelos enfermeiros, embora exista dificuldade para realizar o atendimento da dimensão espiritual. Considerações Finais: os enfermeiros possuem atitudes congruentes com a Teoria de Jean Watson e aplicam os elementos do Processo Caritas durante a assistência à dimensão espiritual do paciente em cuidados paliativos.

ABSTRACT Objectives: to analyze nurses’ role in assisting patients in palliative care, with emphasis on the spiritual dimension, in the light of Theory of Human Caring. Methods: this is an exploratory, qualitative study, carried out in a hospital in João Pessoa, Paraíba, between August and December 2019, with 10 nurses. For data collection, semi-structured interviews were used. For analysis, we opted for content analysis. Results: the spiritual dimension of care is contemplated by several religious and spiritual practices. These are respected and encouraged by nurses, although there is difficulty in providing care for the spiritual dimension. Final Considerations: nurses have attitudes consistent with Jean Watson’s Theory and apply the Caritas Process elements during assistance to patients’ spiritual dimension in palliative care.

RESUMEN Objetivos: analizar el papel del enfermero en la asistencia a los pacientes en cuidados paliativos, con énfasis en la dimensión espiritual, a la luz de la Teoría del Cuidado Humano. Métodos: estudio exploratorio, cualitativo, realizado en un hospital ubicado en João Pessoa, Paraíba, entre agosto y diciembre de 2019, con 10 enfermeras. Para la recolección de datos se utilizaron entrevistas semiestructuradas. Para el análisis, optamos por la técnica de análisis de contenido. Resultados la dimensión espiritual del cuidado es contemplada por diversas prácticas religiosas y espirituales. Estos son respetados y alentados por las enfermeras, aunque existe dificultad para atender la dimensión espiritual. Consideraciones Finales: las enfermeras tienen actitudes congruentes con la Teoría de Jean Watson y aplican los elementos del Proceso Caritas durante la asistencia a la dimensión espiritual del paciente en cuidados paliativos.

Método reflexão analítica utilizando-se a análise conceitual de Walker e Avant: seleção do conceito; definição do objetivo, identificação do uso do conceito (busca na literatura e dicionários entre setembro-dezembro/2019 nas bases de dados: PubMed, Biblioteca Virtual em Saúde e SCOPUS. Consideraram-se 77 artigos que contemplaram conceito e outros termos que corroboraram o estudo; para fins metodológicos, 12 estudos possibilitaram a análise); definição dos atributos; descrição de caso modelo; descrição de casos adicionais; definição de antecedentes e consequentes; definição de indicadores empíricos. Resultados os antecedentes cuidados fragmentados e reinternação são comuns ao conceito. Identificaram-se atributos cuidado integrado, colaboração profissional, coordenação, planejamento da alta, comunicação, integração profissional e gerenciamento de casos. Conclusão e implicações para a prática foi oportuno analisar o conceito em conjunto com termos relacionados ao contexto da alta hospitalar. Cuidados de Transição são práticas coordenadas e eficazes para a Continuidade dos Cuidados na transferência do usuário na alta hospitalar; nesse contexto, as Enfermeiras de Ligação são potenciais protagonistas para estar à frente nesse processo de Integração. As especificidades do conceito poderão favorecer a sua compreensão e a construção de conhecimentos que repercutam no cuidado coordenado e contínuo.

ABSTRACT Objective to analyze the concept of Transitional Care in the context of hospital discharge management. Method analytical reflection using the Walker and Avant's conceptual analysis: concept selection; definition of the objective, identification of the use of the concept (literature search and dictionaries between September-December/2019 in the databases: PubMed, Virtual Health Library and SCOPUS. A total of 77 articles that contemplated the concept and other terms that corroborated the study were considered; for methodological purposes, 12 studies enabled the analysis); definition of attributes; description of model case; description of additional cases; definition of antecedents and consequents; definition of empirical indicators. Results the fragmented care and readmission antecedents are common to the concept. The attributes integrated care, professional collaboration, coordination, discharge planning, communication, professional integration, and case management were identified. Conclusion and Implications for practice it was opportune to analyze the concept together with terms related to the context of hospital discharge. Transitional Care is coordinated and effective practices for the Continuity of Care in the transference of the user at hospital discharge; in this context, Liaison Nurses are potential protagonists to be ahead in this Integration process. The specificities of the concept may favor its understanding and the construction of knowledge that has repercussions on coordinated and continuous care.

RESUMEN Objetivo analizar el concepto de Atención Transicional en el contexto de la gestión del alta hospitalaria. Método reflexión analítica utilizando el análisis conceptual de Walker y Avant: selección de conceptos; definición del objetivo, identificación del uso del concepto (búsqueda en la literatura y diccionarios entre septiembre-diciembre / 2019 en las bases de datos: PubMed, Virtual Health Library y SCOPUS. Se consideraron 77 artículos que contemplaban el concepto y otros términos que corroboraban el estudio; a efectos metodológicos, 12 estudios permitieron el análisis); definición de atributos; descripción del caso modelo; descripción de casos adicionales; definición de antecedentes y consecuencias; definición de indicadores empíricos. Resultados la atención fragmentada y los antecedentes de readmisión son comunes al concepto. Se identificaron los atributos atención integral, colaboración profesional, coordinación, planificación del alta, comunicación, integración profesional y manejo de casos. Conclusión e implicaciones para la práctica fue apropiado analizar el concepto junto con términos relacionados con el contexto del alta hospitalaria. Transition Care son prácticas coordinadas y efectivas para la Continuidad de la Atención en el traslado del usuario al alta hospitalaria; en este contexto, las Enfermeras de Enlace son potenciales protagonistas para estar a la vanguardia de este proceso de integración. La especificidad del concepto puede favorecer su comprensión y la construcción de conocimientos que inciden en la atención coordinada y continuada.

Abstract The objective of this study was carried out to evaluating the productive performance, the physical-chemical quality of the milk, the physical-chemical and sensorial quality of rennet cheeses obtained from the milk of goats submitted to diets with diferente levels of guava agroindustrial waste (GAW). The goats were randomly distributed in a Latin square (4x4) according to the substitution levels (0, 14, 28, and 42%) of inclusion GAW in the diet. The consumption of natural and dry matter increased with the increase in hay substitution. However, the physical-chemical requirements of milk and cheese were not altered.

Abstract The study aimed to evaluate the influence of Crotonblanchetianus Baill essential oil on the sensory parameters of fermented milk drinks with yellow mombin pulp. The milk drinks analyzed contained milk and whey from goat origin, water-soluble soy extract, yellow mombin pulp, and Crotonblanchetianus Baill essential oil (CBEO) in the following proportions: 0.0, 0.0035; 0.0070, and 0.0105 g/L according to the Artemia salina toxicity test. The extraction of essential oil from the Crotonblanchetianus Baill leaves was carried out using hydrodistillation by steam. The sensory profile of the fermented milk drink was obtained through Quantitative Descriptive Analysis. The CBEO influenced the color of yellow mombin, brightness, viscosity, woody flavor, appearance, and flavor attributes. The samples were also approved in the acceptance test, with no statistical difference between treatments. Therefore, it was concluded that the addition of CBEO promoted changes in the sensory characteristics of the fermented milk drink with yellow mombin pulp for the appearance and flavor attributes. However, it did not negatively influence the acceptance of the analyzed product.

Abstract The objective of this study was to evaluate the production, fat and fatty acids of milk as well as the diameter, classification and quantity of the milk fat globules (MFG) of goats consuming a diet with 15% of crude glycerin. Twelve multiparous Saanen goats weighing 40 ± 6 kg and 90 ± 5 days of lactation were used. The experimental design was completely randomized with two treatments (0 and 15% inclusion of glycerin). In this way, each milk sample is classified according to the percentage of milk fat globules that were included in these three size categories. For the variables milk production, fat, diameter, medium and large fat globules and amount of globules showed a significant effect of the inclusion of glycerin in the diet (p < 0.05). Fifteen fatty acids were found, mostly saturated. For caprylic, palmitic, and linoleic fatty acids, there was no significant influence of the inclusion of glycerin (p > 0.05). Can recommend the use of 15% double-distilled glycerin in the feeding of lactating goats increased milk production, the amount of fat, increased the size of the milk fat globule. Regarding the saturated and polyunsaturated fatty acids, they kept the level of 15% of glycerin.

Abstract The objective of this research was to evaluate the physicochemical quality of milk and cheese from goats-fed diets containing different concentrations of flaxseed oil in replacement of corn. Eight multiparous Saanen goats weighing 51.0 ± 8.0 kg and 67.0 ± 18.0 days of lactation were used. According to the concentrations of linseed oil inclusion in the diet, the goats were randomly distributed in a latin square (4 x 4), according to the concentrations of linseed oil inclusion in the diet (0, 1, 2, and 3%). Milk samples from each animal were collected twice a day, at regular times, during the three days of data collection in each period, for subsequent physicochemical and fatty acid profile analysis employing gas chromatography. The non-fat solids (P = 0.0302) and density (P = 0.0327) variables sgnificantly affected linseed oil in the goats' feed. Regressive effects (linear and quadratic) were not observed for other variables studied, except for lactose and density. Thus, 20 fatty acids have been identified in goat milk, which gives us an essential source of information about animal diet and milk quality concerning human health benefits. Furthermore, there were changes in the lipid profile of milk, decreasing saturated fatty acids and increasing unsaturated fatty acids, resulting in health-promoting effects.

Abstract The objective of this research was to evaluate the production, milk quality, consumption and financial analysis of milk from goats consuming diets with different levels of double-distilled glycerin. Twelve multiparous Saanen goats, weighing 40 ± 6 kg and 30 ± 5 days of lactation, kept in a confinement system for 60 days were used. The goats were randomly distributed in a Latin square (4 x 4), according to the levels of double-distilled glycerin. The ingredients used were tifton hay, ground corn grain, soybean meal, vitamin/mineral supplement, urea, and double-distilled glycerin levels (0, 6, 12 and 18%) to replace corn in the diets. The milk fat of goats fed with double-distilled glycerin in the diet showed a decreasing linear regressive effect (P = 0.001). Dry matter intake showed a quadratic regressive effect (P = 0.033). Evaluating the total cost of each diet, it was observed that the level containing 0% glycerin was the diet with the lowest cost per kilogram. The use of double-distilled glycerin in the feeding of dairy goats can be recommended up to the level of 18% of corn replacement without harming milk production, however, it is necessary to verify the economic viability, considering that there will be losses in the quality of the milk produced.

Abstract This study's objective was to evaluate the physical-chemical, microbiological, and sensory aspects of pork meat with different levels of salting. Pork from the Duroc and Landrace breeds, with an average live weight of 281 ± 15.72 kg, were used. The physicochemical data were analyzed following a completely randomized design with four salt addition levels (30, 50, 70, and 90%). Sensory analysis was performed through a completely randomized design, observing the influence of salt levels in meat. The physical-chemical and sensory variables did not significantly affect (P>0.05) salt addition, except for cooking loss and water retention capacity. It was concluded that the salt introduction levels of 30 and 50% are the most appreciated by consumers. The addition of salt levels in the pork meat does not modify the physical-chemical characteristics and the meat's sensory analysis.

Abstract The objective of this study was to evaluate the effects of replacing corn by double-distilled glycerin, a co-product of the biodiesel industry, on goat curd cheese in terms of physical-chemical, microbiological and sensory aspects. Twelve multiparas Saanen goats weighing 47.07 ± 2.41 kg and at 90 ± 5 days of lactation. The experimental design was completely randomized with two treatments (0 and 15% inclusion of glycerin). The physicochemical parameters analyzed were: fat (%), non-fat solids (%), protein (%), lactose (%), salts (%), relative density at 15/15 °C (gmL-1), index cryoscopic (°C), electrical conductivity (mScm-1), pH and acidity. The milk from each treatment was used to make the rennet cheese. The fat had a significant effect (P < 0.05) with inclusion of glycerin in the diet. The physicochemical characteristics of the cheese were influenced (P < 0.05) by feeding up to 15% of glycerin. Regarding sensory attributes, only firmness was influenced (P < 0.05) by the inclusion of glycerin in the diet of dairy goats. Bidistilled glycerin, when inserted in the diet of dairy goats at a level of 15%, causes a reduction in the lipid content of milk and cheese, consequently affecting the cheese yield, and the parameter of firmness in the sensory of the evaluated cheeses.

RESUMO O objetivo deste estudo foi relatar a experiência dos alunos do mestrado profissional em gestão de serviços de saúde acerca da utilização de conceitos da Análise Institucional, para analisar as resistências ao trabalho interprofissional e interdisciplinar na saúde, localizando-as como um analisador do processo e das relações de trabalho. O estudo foi elaborado a partir da vivência e da análise dos diários institucionais, escritos pelos alunos e analisados com base no referencial teórico da Análise Institucional. Observou-se que a resistência ao trabalho interprofissional e interdisciplinar, principalmente por parte dos médicos, atravessa as organizações de saúde, as relações de trabalho e a assistência aos usuários. Entretanto, essa resistência também é exercida por outros profissionais e pelos usuários, o que limita a interdisciplinaridade e a integralidade da assistência à saúde. Todavia, se, por um lado, ainda, há certa predominância do modelo biomédico, por outro, também se observam resistências a esse modelo nas organizações de saúde, necessitando ampliar os espaços de análise coletiva capazes de enunciar o reducionismo desse paradigma. Conclui-se que analisar coletivamente essas resistências possibilita aos profissionais da saúde ampliar as condições de sair de seus lugares instituídos e perceber os movimentos instituintes nos serviços em que atuam.

ABSTRACT This study aimed to report the experience of the students of the professional master’s degree in health services management, regarding the use of concepts of Institutional Analysis, to analyze the resistances to interprofessional and interdisciplinary work in health, locating them as an analyzer of the process and of work relationships. The study was prepared from the experience and analysis of institutional journals, written by students, and analyzed based on the theoretical framework of Institutional Analysis. It was observed that resistance to interprofessional and interdisciplinary work, especially on the part of physicians, crosses health organizations, work relationships, and assistance to users. However, this resistance is also exercised by other professionals and users, which limits the interdisciplinarity and comprehensiveness of health care. But if, on the one hand, there is still a certain predominance of the biomedical model, on the other hand, resistance to this model is also observed in health organizations, needing to expand the spaces of collective analysis capable of enunciating the reductionism of this paradigm. It can be concluded that collectively analyzing these resistances allows health professionals to expand the conditions to leave their established places and perceive the instituting movements in the services in which they work.

Resumo No presente estudo é apresentada uma análise específica e abrangente da flora arbórea da Ilha Grande, localizada no município de Angra dos Reis, litoral Sul do estado do Rio de Janeiro, Brasil. Informações inéditas e contribuições dos estudos já conduzidos no local que investigaram questões relacionadas à composição e riqueza de espécies arbóreas, grau de ameaça, endemismos e histórico de ocupação e/ou alterações de uso da terra foram reunidas e analisadas. Este estudo é parte do Programa de Pesquisa em Biodiversidade (PPBio) Mata Atlântica que, através de inventários fitossociológicos do componente arbóreo, vêm contribuindo, desde 2010, para o incremento do conhecimento florístico da Ilha Grande. O inventário identificou 509 espécies arbóreas, pertencentes a 220 gêneros e 74 famílias. Dessas, 34 espécies foram categorizadas como ameaçadas de extinção, sendo duas criticamente em perigo, 18 em perigo e 14 vulneráveis. Foram indicadas 53 espécies arbóreas exóticas. Os resultados aqui apresentados reforçam a importância desses inventários como ferramentas indispensáveis para a construção de estratégias e ações de conservação, restauração e manejo da diversidade no contexto da Mata Atlântica.

Abstract In the present study a specific and comprehensive analysis of the arboreal flora of Ilha Grande, located in the municipality of Angra dos Reis, on the southern coast of the state of Rio de Janeiro, Brazil, is presented. Unpublished data and contributions from studies already carried out at the site that investigated issues related to the composition and richness of tree species, the degree of threat, endemism and the history of occupation and/or changes in land use were gathered and analyzed. This study is part of the PPBio Mata Atlântica – Programa de Pesquisa em Biodiversidade (Biodiversity Research Program) which, through phytosociological inventories of the tree component, has been contributing, since 2010, to the increase in the floristic knowledge of Ilha Grande. The inventory identified 509 tree species, belonging to 220 genera and 74 families. Of these, 34 species were categorized as threatened, two of which are critically endangered, 18 are endangered and 14 are vulnerable. 53 exotic tree species were indicated. The results presented here reinforce the importance of these inventories as indispensable tools for the construction of strategies and actions for conservation, restoration and management of diversity in the context of the Atlantic Forest.

ABSTRACT This study aimed to report the experience of the students of the professional master’s degree in health services management, regarding the use of concepts of Institutional Analysis, to analyze the resistances to interprofessional and interdisciplinary work in health, locating them as an analyzer of the process and of work relationships. The study was prepared from the experience and analysis of institutional journals, written by students, and analyzed based on the theoretical framework of Institutional Analysis. It was observed that resistance to interprofessional and interdisciplinary work, especially on the part of physicians, crosses health organizations, work relationships, and assistance to users. However, this resistance is also exercised by other professionals and users, which limits the interdisciplinarity and comprehensiveness of health care. But if, on the one hand, there is still a certain predominance of the biomedical model, on the other hand, resistance to this model is also observed in health organizations, needing to expand the spaces of collective analysis capable of enunciating the reductionism of this paradigm.
