RESUMO: Este estudo objetivou desenvolver suco misto funcional, palatável e aceitável de abacaxi (Ananas comosus var. Comosus), maracujá (Passiflora edulis flavicarpa degenerer) e yacon (Smallanthus sonchifolius), enriquecido com compostos bioativos e prebióticos. A proporção ideal entre as frutas e o yacon foi resultado de planejamento de mistura com seis formulações e avaliação de perfil de compostos bioativos e ácidos orgânicos. A melhor formulação foi avaliada sensorialmente pelo teste Just About Right (JAR) e por aceitação global. O suco misto escolhido (M6 - 30% de abacaxi, 45% de maracujá e 30% de yacon) apresentou altos valores para atividade antioxidante (82,5% de inibição de DPPH *), carotenoides (0,97 mg/100g) polifenóis totais (70,28 mg/100g). Também foram detectados flavonóis totais (23,95 mg/100g), antocianinas totais (1,37 mg/100g), ácido gálico (3,13 μg/mL), quercetina (2,25 μg/mL), ácido siríngico (1,01 μg/mL), ácido cítrico (949,30 mg/100g), ácido málico (140,35 mg/100g) e 0,58% de fibra alimentar. Sensorialmente, os consumidores perceberam alta acidez, sabor forte e textura fibrosa, o que pode ter afetado a aceitação global (6,0). Os resultados indicam a possibilidade de obtenção de um suco misto funcional e palatável com yacon.

ABSTRACT: This study developed a palatable, acceptable, and functional mixed juice of pineapple (Ananas comosus var. Comosus), passion fruit (Passiflora edulis flavicarpa degener), and yacon (Smallanthus sonchifolius), with enhanced bioactive and prebiotic compounds. The ideal proportion of fruit and yacon was derived after planning a mixture with six formulations and by evaluating their bioactive compounds and organic acid profile. The best formulation sensory evaluation was performed by the Just-About-Right test (JAR) and global acceptance. The chosen mixed juice (M6 - 30% pineapple, 45% passion fruit, and 30% yacon) presented results that showed elevated levels of antioxidant activity (82.5% DPPH* inhibition), carotenoids (0.97 mg.100g-1), and total polyphenols (70.28 mg.100g-1). Total flavonols (23.95 mg.100g-1), total anthocyanins (1.37 mg.100g-1), gallic acid (3.13 μg.mL-1), quercetin (2.25 μg.mL-1), syringic acid (1.01 μg.mL-1), citric acid (949.30 mg.100g-1), malic acid (140.35 mg.100g-1), and 0.58% of dietary fiber were also reported. Sensorially, consumers perceived high acidity, strong flavor, and a fibrous texture, which might have affected the global acceptance of the juice (6.0). Results indicated the feasibility of obtaining a functional and palatable mixed juice using yacon.

Resumo Objetivo deste artigo é avaliar o Programa de Alimentação do Trabalhador sob a ótica de gestores, nutricionistas e a alimentação oferecida em indústrias da Região Metropolitana do Recife. Trata-se de um estudo transversal. Foi aplicado questionário estruturado com 40 gestores e 40 nutricionistas acerca dos seus conhecimentos sobre o programa e o cumprimento das atribuições exigidas por ele. Também foi avaliada a qualidade nutricional dos cardápios. Entre os gestores e os nutricionistas, 22,5% e 72,5% não sabiam do cadastro no programa e das suas exigências nutricionais, respectivamente. Grande parte dos nutricionistas e gestores relacionou o programa a uma exigência da legislação trabalhista. Nenhum respondente conhecia a obrigatoriedade de ações de educação alimentar e nutricional, mesmo assim, 55% dos serviços realizavam ações educativas e 25% realiza avaliação nutricional dos trabalhadores. Observou-se que apesar da oferta de bebidas naturais, frutas e folhosos diariamente, também há oferta diária de diversos produtos ultraprocessados, principalmente doces e bebidas artificiais. O estudo evidenciou o pouco conhecimento dos gestores e dos nutricionistas sobre os objetivos do programa bem como a sua insipiente execução.

Abstract The scope of this article is to evaluate the Worker Food Program from the viewpoint of managers, nutritionists and the food offered in industries of the Metropolitan Region of Recife. It consisted of a cross-sectional study. A structured questionnaire was filled out by 40 managers and 40 nutritionists regarding their knowledge about the program and compliance with the tasks required by it. The nutritional quality of the menus was also evaluated. Among the managers and nutritionists, 22.5% and 72.5%, respectively, did not know about the enrolment in the program and the nutritional requirements involved. Most nutritionists and managers related the program to a labor law requirement. None of the respondents knew about the mandatory food and nutritional education actions, even though 55% of the services involved educational actions and 25% performed nutritional assessment of the workers. It was found that, despite the daily supply of natural beverages, fruit and leafy vegetables, there is also a daily supply of various ultra-processed products, especially sweet foods and artificial beverages. The study revealed the lack of knowledge of managers and nutritionists about the objectives of the program as well as its incipient execution.

Abstract The aim of this study was check the effects of sugar, yacon pulp and skimmed milk powder in the aroma, flavour, texture, appearance, overall impression and intent to purchase on synbiotic yogurts to optimize the formulation using Response Surface Methodology. The most accepted formulations were subjected to viability tests during 21 days by counting traditional and probiotic bacteria. Were constructed a complete 23 factorial design, totalling 17 experiments, and considered independent variables (percentage of ingredients) and dependent variables (sensory attributes). All attributes were graded using an acceptability assessment, for this balanced incomplete block was applied. The number of viable cells was determined using specific culture medium for each species. The percentage of yacon pulp had a pronounced negative influence on flavour, texture, appearance, overall impression and intent to purchase. Model predictions adjusted to the variables aroma, flavour, texture, appearance, overall impression and intent to purchase exhibited good predictive ability and hence could be used as tools for process control. Traditional bacterial strains and probiotic remained viable throughout the storage period. The counts of probiotic bacterial in the formulations were above 6 log CFU/g. The addition of Lactobacillus paracasei ssp. paracasei LBC 81 and yacon pulp to yogurt increased product acceptability.

A pesquisa teve como objetivo elaborar pães com diferentes níveis de farinha de yacon (6% e 11%) e analisá-los quanto à sua composição centesimal, índice glicêmico e potencial prebiótico "in vitro". O pão com 11% de farinha de yacon mostrou baixo índice glicêmico e com 6%, índice glicêmico moderado. Quanto ao potencial prebiótico foi evidente a presença de bactérias probióticas, em especial o gênero Lactobacillus. Os resultados mostraram que a adição de farinha de yacon em pães propiciou produtos de baixo a moderado IG, com potencial prebiótico, light em gorduras e teor de fibras elevado, segundo a legislação de vigente.

The purpose of this study was to elaborate bread with yacon flour at two different levels (6% and 11%) and to analyze their proximate composition, their glycemic indices and their prebiotic potentials in vitro. Bread with 6% and 11% of yacon flour presented, simultaneously, low and moderate glycemic index. As for the prebiotic potentials, it was evident the presence of probiotic bacteria, particularly Lactobacillus. The results showed that, the addition of yacon flour on bread rendered products from low to moderate GI, with prebiotic potential, low fat and high fiber contents, according to the Brazilian food legislation.

Neste trabalho foi avaliado o uso de farinha de yacon na formulação de bolos de chocolate para se verificar a influência deste constituinte sobre a qualidade sensorial e cromaticidade do produto. Foram analisadas amostras de bolos, formulados com farinha de yacon, denominadas: amostra P (bolo padrão, sem farinha de yacon), amostra A (bolo com 20% de farinha de yacon) e amostra B (bolo com 40% de farinha de yacon). Para a avaliação sensorial, foi realizada a Análise Descritiva Quantitativa (ADQ), utilizando 15 provadores treinados, os quais definiram 9 atributos sensoriais (cor, estrutura do miolo, aroma, gosto doce, sabor de chocolate, sabor residual, umectância, maciez e qualidade global). A análise física dos bolos foi realizada através da caracterização cromática. Os dados sensoriais foram submetidos à análise de variância ANOVA, sendo realizado o teste de Duncan para comparação entre as médias de Duncan, ao nível de 5% de significância. Para verificar as correlações entre as amostras e os atributos, foi realizada a Análise de Componentes Principais (ACP). Na ACP, a soma de componentes principais 1 e 2 foi de 83,3%, ou seja, a variabilidade entre as amostras foi explicada por estes dois componentes. Os resultados obtidos demonstraram que a adição de 40% de farinha de yacon resultou em maiores notas para o aroma (10,16), gosto doce (7,60), sabor de chocolate (10,52), maciez (11,44) e qualidade global (11,64). Com relação ao atributo estrutura não houve diferença significativa entre as notas dos bolos P, A e B. Independente da quantidade de farinha de yacon adicionada, o perfil sensorial dos bolos de chocolate foi influenciado e, em particular, o bolo com maior teor de farinha de yacon apresentou as melhores notas.

This study evaluated the use of yacon flour in the formulation of chocolate cakes by investigating its influence on the sensory quality and chromaticity of the product. The following samples were prepared and analyzed: sample P (standard cake without yacon flour), sample A (20% of yacon flour), and sample B (40% of yacon flour). The Quantitative Descriptive Analysis (QDA) was used for the sensory analysis with 15 trained panelists who evaluated 9 sensory attributes (color, crumb structure, aroma, sweet taste, chocolate flavor, residual taste, humectancy, tenderness, and overall quality). The physical analysis of the cake was made by color characterization. The data were subjected to sensory analysis of variance ANOVA and the Duncan's test for comparison between the averages, at 5% level of significance. To verify the correlations between the samples and attributes, the Principal Components Analysis (PCA) was performed. In the PCA, the sum of the principal components 1 and 2 was 83.3%, i.e., the variability between the samples was explained by these two components. The results showed that the addition of 40% of yacon flour resulted in higher scores for aroma (10.16), sweet taste (7.60), chocolate flavor (10.52), tenderness (11.44), and overall quality (11.64). With regard to the attribute crumb structure, there was no significant difference between the scores of cakes P, A, and B. Regardless of the amount of yacon flour added, the sensory profile of the chocolate cakes was influenced. Particularly, the cake with the highest content of yacon flour was attributed the highest scores.

O yacon, tubérculo de origem andina, vem sendo cada vez mais aplicado na tecnologia de alimentos, em virtude de suas propriedades funcionais, por ser fonte de inulina e fruto-oligossacarídeos, considerados prebióticos. Foram preparadas três formulações de pães, sendo uma padrão e duas testes contendo farinha de yacon, denominadas de amostra P (pão padrão, sem farinha de yacon), amostra A (pão com 6% de farinha de yacon e 3% de gordura) e amostra B (pão com 11% de farinha de yacon sem adição de gordura). Para a avaliação sensorial foi realizada a Análise Descritiva Quantitativa (ADQ), utilizando-se 11 provadores treinados, os quais definiram 10 atributos sensoriais (aroma, cor, porosidade e uniformidade do miolo, sabor, textura, umectância, untuosidade, adesividade e qualidade global). Também foi realizada análise física dos pães, por meio da caracterização cromática. Os resultados da ADQ foram analisados por análise de variância e testes de médias de Duncan, a 5% de significância. Os resultados da ADQ foram representados graficamente por análise multivariada de análise de componentes principais (ACP). Nao houve diferença entre as amostras A e B em relação aos atributos porosidade, textura, sabor e qualidade global. A amostra A obteve média maior em atributos sensoriais indesejáveis como aderência, enquanto a amostra B apresentou maior média para o atributo umectância, devido ao maior teor de yacon. Na ACP, a soma de componentes principais 1 e 2 foi de 97,59%, ou seja, a variabilidade entre as amostras foi quase totalmente explicada por estes dois componentes. Os resultados obtidos demonstram o grande potencial para o desenvolvimento de novos produtos utilizando alimentos fontes de prebióticos, como os frutanos do yacon.

The yacon, tuber vegetable crop of Andean origin, is increasingly being used in food technology because of its functional properties, as a source of inulin and fructooligosaccharides, which are considered prebiotics. Samples of bread made out of yacon were analyzed. Sample P (Standard bread, without yacon flour), sample A (6% yacon flour and 3% fat) and sample B (11% yacon flour, without fat). Quantitative Descriptive Analysis (QDA) was carried out for sensory evaluation; 11 experienced tasters participated and defined 10 sensory attributes (smell, color, crumb porosity and uniformity, flavor, texture, humectancy, unctuousness, adhesiveness and overall quality). Bread physical analysis was also carried out by chromatic characterization. QDA results were analyzed by analysis of variance and Duncan's test of means, at 5% significance level. QDA results were graphically represented by multivariate principal component analysis (PCA). No difference was found between samples A and B for porosity, texture, flavor, and overall quality. Sample A showed the highest means for undesirable sensory attributes such as adherence, whereas sample B showed the highest mean for humectancy due to the highest content of yacon, which is a highly hygroscopic product. In PCA, the sum of the main components 1 and 2 was 97.59%, that is, the variability between the samples is almost totally explained by these two components. The results demonstrate the great potential for the development of new products using prebiotic food source such as the fructans from yacon.

Evidências científicas reconhecem o yacon (Smallanthus sonchifolius) como fonte promissora de frutanos, tais como inulina e frutooligossacarídeos (FOS). No entanto, a presença de compostos fenólicos torna-o suscetível à reação de escurecimento enzimático. Este trabalho teve como objetivo avaliar o emprego de agentes químicos no processamento de yacon, para obtenção de farinha, a fim de inibir o escurecimento enzimático do produto e favorecer o tempo de secagem. Amostras de yacon sem inibição química, de yacon submetido à solução de cloreto de cálcio 1,0g 100g-1 por 30 minutos e de yacon submetido à solução de metabissulfito de potássio 0,5g 100g-1 por 5 minutos foram secas a 55°C, em estufa ventilada, e o teor de água e curvas de secagem foram determinados. As atividades das enzimas peroxidase (POD) e polifenoloxidase (PPO) foram determinadas antes e após a secagem como um possível marcador bioquímico do escurecimento enzimático desse tubérculo. No parâmetro umidade, os três tratamentos apresentaram-se semelhantes; porém, o tratamento 2 (cloreto de cálcio) reduziu a umidade no menor tempo. Antes e após o tratamento térmico, a atividade enzimática foi maior no tratamento 3 (metabissulfito de potássio). As atividades enzimáticas não foram inativadas completamente pela ação térmica. Para a obtenção da farinha de yacon, o tratamento com cloreto de cálcio 1,0g 100g-1 por 30 minutos foi o que apresentou melhor resultado. Apesar de não inibir totalmente a atividade das enzimas POD e PPO foi o melhor tratamento de inativação, propiciando menor tempo de secagem e melhor firmeza da matéria-prima e facilitando o processamento para obtenção da farinha.

Scientific evidences acknowledged the yacon (Smallanthus sonchifolius) like a promise source of fructans, as inulin and fructooligosaccharides - FOS, meanwhile, the presence of phenolic coumpounds became this susceptible to enzimatic browning reaction. This project aimed to evaluate the use of chemical agents in yacon processing to obtain flour in a way that inhibits enzymatic darkening of the product besides determining the enzymatic activity in these treatments. Samples of yacon without chemical inhibitions, yacon treated with 1.0g 100g-1 calcium chloride for 30 seconds and yacon treated with 0.5g 100g-1 potassium metabisulfite for 5 minutes were dried at 55oC in a ventilated greenhouse and the proportions of humidity and drying curves were determined. The peroxidase activities and polyphenol oxidase enzymes were checked before and after being dried with an enzymatic darkening possible biochemist marker of this tubercle. Regarding humidity Parameter all the three treatment were equivalent, but treatment 2 (calcium chloride) reduced the humidity in lower time. Before and after the thermal treatment the enzymatic activity was higher in treatment 3 (potassium metabisulfite). The thermal action did not inhibit completely polyphenol oxidase and peroxidase. The treatment with calcium chloride at 1.0g 100g-1 for 30 minutes to obtain yacon flour was the one with better result despite the fact that it did not inhibit completely peroxidase and polyphenol oxidase enzymes activity, offering a better drying time better material of row firmness , facilitating the process for obtaining the meal.
