Algaroba (Prosopis juliflora (Sw.) D.C.) é uma leguminosa arbórea tropical comum no semi-árido brasileiro e desenvolve-se em lugares secos, onde dificilmente outras plantas poderiam sobreviver. Suas vagens produzem uma farinha que pode ser usada na alimentação humana, além de vários outros produtos como o mel, licor e um produto similar ao café. Este trabalho teve por objetivo caracterizar quanto à composição físico-química e microbiológica a farinha de algaroba potencialmente passível de introdução como matéria-prima de interesse comercial. A farinha de algaroba foi analisada quanto ao teor de umidade, cinzas, proteína, lipídios, açúcares totais, açúcares redutores, fibra alimentar total e tanino. Os minerais analisados foram cálcio, fósforo, magnésio, ferro, zinco, sódio, potássio, manganês, silício, alumínio e cobre. As análises microbiológicas foram: coliformes a 45 °C.g -1, Bacillus cereus.g -1, Salmonella sp..25 g -1, e bolores e leveduras.g -1. Verificou-se que a farinha de algaroba apresenta elevados níveis de açúcares (56,5 g.100 g -1), razoável teor de proteínas (9,0 g.100 g -1) e baixo teor em lipídios (2,1 g.100 g -1). Quanto aos minerais observou-se a predominância do fósforo (749 mg.100 g -1) e do cálcio (390 mg.100 g -1). As análises microbiológicas apresentaram resultados inferiores ao limite estabelecido pela legislação, sendo considerada apropriada quanto à qualidade higiênico-sanitária. Portanto, conclui-se que esta possui uma elevada concentração de açúcares além de outros nutrientes, como minerais, importantes para o desenvolvimento humano e animal.

Mesquite (Prosopis juliflora (Sw.) D.C.) is a tropical tree legume fairly common in the semi-arid region of Brazil, which thrives in dry environments where other plants would hardly survive. Its seedpods can be made into flour, which is used in human food and other products such as honey, liqueur and a product similar to coffee. The major aim of this study was to characterize the physicochemical and microbiological composition of mesquite flour with a view to introducing it as a commercial raw material. The mesquite flour was analyzed to determine its water, ash, protein, lipids, total sugar, reducing sugar, total food fiber and tannin content. The minerals analyzed were calcium, phosphorous, magnesium, iron, zinc, sodium, potassium, manganese, silicon, aluminum and copper. The microbiological analysis focused on coliforms at 45 °C.g-1, Bacillus cereus.g -1, Salmonella sp..25 g-1 and molds and yeasts.g -1. The mesquite flour presented high levels of sugars (56.5 g.100 g -1), a moderate level of proteins (9.0 g.100 g -1) and low levels of lipids (2.1 g.100 g -1). As for mineral content, the results showed a prevalence of phosphorous (749 mg.100 g -1) and calcium (390 mg.100 g -1). The microbiological analysis showed results below the legal limits, allowing the product to be considered appropriate from a sanitary standpoint. It was therefore concluded that mesquite flour contains a high concentration of sugars as well as other nutrients such as minerals, which are important for human and animal development.

Considerando a importância das propriedades funcionais do amido resistente para a saúde, o elevado consumo de feijão macassar no Nordeste brasileiro e os efeitos do processo térmico e da estocagem sobre a estrutura do amido, foi realizado este trabalho com o objetivo de avaliar a influência de diferentes tratamentos hidrotérmicos (cocção sob pressão e sem pressão) e do armazenamento a 20ºC por 15 e 30 dias, sobre a formação de amido resistente do feijão macassar em dois estádios de maturação (verde e seco). Para analisar os fatores combinados foi realizado um planejamento fatorial do tipo 2³ com três variáveis independentes (fatores) e uma variável dependente (resposta). Todas as variáveis exerceram efeitos significativos na produção de AR e a maior formação foi registrada para o feijão seco devido à hidratação prévia a cocção sem pressão, além do tempo de armazenamento congelado de 30 dias. No que diz respeito às analises físicas, após os tratamentos hidrotérmicos, ocorreram transformações nos padrões de cristalinidade e no aspecto morfológico dos feijões.

Considering the importance of the functional properties of resistant starch for health, the high consumption of the macassar bean in the northeast of Brazil and the effects of the thermal process and storage on the structure of the starch, this work was implemented to evaluate the influence of different hydrothermal treatments (cooking under pressure and whithout pressure) and of storage at 20ºC for 15 and 30 days, on the formation of resistant starch in the macassar bean, in two stages of maturation (green and dryed). To analyse the combined factors, a factorial design type 2³ was realized with three independent variables (factors) and one dependent variable (response). All the variables exercised significant effects on the production of the resistant starch and the highest formation was registered for the dried bean due to the previous hydration before cooking without pressure, as well as the 30 day frozen storage. Concerning the physics analysis after the hydrothermic treatments there are transformations in the cristalinity patterns and in the morphologic aspect of the beans.

Os sais de nitrato e nitrito em excesso prejudicam a saúde. Com o objetivo de avaliar a qualidade de salsichas comercializadas em Recife-PE, os níveis de nitrito residual e nitrato foram determinados em 54 amostras de salsichas, coletadas segundo região de origem e marca, de acordo com 3 grupos e 9 sub-grupos: A) Sul (A1, A2, A3); B) Nordeste (B1, B2, B3), coletadas em supermercados; e, C) indústrias locais e sem marcas (C1, C2, C3), em feiras livres. Aplicou-se testes ANOVA e Tukey. Constatou-se que no grupo (C) 67% das amostras apresentavam-se com nitrito residual >150mg/kg (18% do total); e os níveis de nitrato >300mg/kg em 17(A), 67(B) e 83%(C) das amostras (p<0,05), acima do nível máximo permitido. Os resultados permitiram indicar que os níveis de nitrato e nitrito em salsichas representam um risco potencial à saúde do consumidor devido ao não cumprimento da legislação na produção e comercialização desse produto.

The nitrite and nitrate salts in excess are harmfull to the health. With the objective to evaluate the quality of sausages commercialized in the Metropolitan Region of Recife, PE, the residual levels of nitrite and nitrate were measured in a 54 samples of hot-dog type sausage, that had constituted, as region of origin and mark, 3 groups and 9 sub-groups: (A) the south one (A1, A2, A3); B) northeast (B1, B2, B3), both, collected in supermarkets; and, C) local industries, without marks (C1, C2, C3), in free fairs. ANOVA and Tukey tests were applied. The results showed that in 67% of the sausages from free fairs (C), (18% of total), the residual nitrite average were >150mg/kg above of the allowed maximum limit; and for nitrate value average, in 17(A), 67(B) and 83 %(C) of sausages, were >300mg/kg (max. allowed) (p< 0.05). The results had allowed to conclude that the nitrite residual and nitrate levels in sausages, represent a risk to the health of the consumers due not following to the legislation in the production and commercialization of this product.

Avaliou-se os efeitos do processo utilizado na obtenção de polpa de frutas congelada sobre o teor de fibras alimentares, empregando-se acerola, caju, goiaba, graviola, manga, pinha, pitanga, sapoti e uva no estágio maduro. Demonstrou-se que o processo tecnológico empregado reduziu significativamente o percentual de fibras alimentares das frutas, determinadas por método gravimétrico não enzimático, principalmente da goiaba, seguida da uva, graviola, sapoti, caju, pinha e acerola; com exceção da manga e pitanga, as demais polpas congeladas não substituem, em termos quantitativos, a fibra alimentar dos frutos in natura na dieta de indivíduos sadios. Considerando que essas perdas são variáveis face às características dos frutos processados, a inclusão de polpas congeladas na dieta em substituição às frutas dependerá de estudos qualitativos que permitam esclarecer os constituintes da referida fração.

The effects of the process utilized to obtain frozen fruit pulp on the quality of dietary fibers were evaluated, using ripe samples of acerola, cashew, guava, soursop, mango, sweetsop, pitanga, sapoti and grapes. The results obtained showed that the technological process used reduced significantly the fiber percentual of the fruit, determined by gravimetric non-ensymatic method particularly the guava, followed by the grapes, soursop, saoti, cashew, sweetsop and acerola. With the exception of mango and pitanga, all the frozen pulps tested do not seem to substitute, in terms of quantity of dietary fiber, the in natura fruit in the diet of healthy individuals. Considering the fact that these losses are variable, depending on the characteristics of the fruit which was processed, the inclusion of frozen pulps in the human diet in substitution to fruits will depend on quality control studies which may lead to a classification of the components of the mentioned fraction.
