Abstract Tucupi is a product obtained from the fermentation and cooking of cassava root wastewater which is widely used in the popular cuisine of the North region of Brazil. This study employed an experimental design to select tucupi processing (fermentation and cooking times) as a function of residual cyanidric acid content and assess the stability of the product obtained. Although the design did not generate a predictive mathematical model, the trend plots and physicochemical and sensory tests indicated 24 h of fermentation and 40 min of cooking as process parameters. The tucupi prepared had pH 3.71, titratable acidity of 0.7 g lactic acid/100 mL, 93.91% moisture, 0.5% ashes, 0.52% proteins, 0.24% lipids, 4.83% carbohydrates, total and free cyanide of 6.97 and 1.31 mg HCN/L, respectively. No Salmonella spp., coagulase-positive Staphylococcus, Bacillus cereus , or thermotolerant coliforms were observed, whereas counts of mesophilic aerobic bacteria (1.3x102 CFU/g) and molds and yeasts (1.3x102 CFU/g) were low. Over 50 days of follow-up (stored at 10°C), the microbial load remained stable and no significant difference was found in physicochemical characteristics, however, the sensory analysis indicated a decrease in quality at 49 days of storage.

Resumo O objetivo do trabalho foi avaliar a qualidade microbiológica e físico-química do mel in natura (np) e pasteurizado (p) de abelhas africanizadas (Apis mellifera) e de duas espécies de abelhas sem ferrão (Melipona fasciculata e Melipona flavolineata) nativas da região Nordeste do Estado do Pará. As análises físico-químicas foram realizadas de acordo com o recomendado pela legislação brasileira para Apis mellifera e as análises microbiológicas seguiram os métodos oficiais da American Public Health Association. Os méis de Apis mellifera apresentaram-se dentro dos padrões físico-químicos estabelecidos, exceto para os parâmetros açúcares redutores (np: 57,43%±1,28 e p: 58,53%±1,91), acidez (np: 62,25 cmol/Kg±4,15 e p: 62,67 cmol/Kg±5,75) e umidade (np: 21,02%±0,17 e p: 20,12%±0,07). Os méis de meliponíneos apresentaram-se dentro da faixa observada na literatura para esse tipo de mel. Em quase todas as análises físico-químicas realizadas, os méis estudados mostraram-se diferentes entre si, sendo que os méis de meliponíneos apresentam umidade e atividade de água mais elevada, o que os torna mais suscetíveis a deteriorações. Foi observada diferença significativa entre os méis in natura de A. mellifera e de meliponíneos quando comparado com seus respectivos méis pasteurizados para as análises de umidade (A. melífera, np: 21,02%±0,17 e p: 20,12%±0,07; M. fasciculata, np: 24,33%±0,03 e p: 23,68%±0,16; M. flavolineata, np: 28,53%±0,02 e p: 27,40%±0,04), sacarose aparente (A. melífera, np: 5,75%±0,18 e p: 3,19%±0,23; M. fasciculata, np: 3,89%±0,04 e p: 1,59%±0,03; M. flavolineata, np: 2,12%±0,22 e p: 1,62%±0,02) e HMF (A. melífera, np: 20,99mg/Kg±0,13 e p: 64,36mg/Kg±0,07; M. fasciculata, np: 6,54mg/Kg±0,14 e p: 9,46mg/Kg±0,09; M. flavolineata, np: 3,59mg/Kg±0,14 e p: 43,19mg/Kg±0,14). Todas as amostras submetidas ao processo de pasteurização encontravam-se dentro dos limites microbiológicos estabelecidos pela legislação vigente.

Abstract The objective of this study was to evaluate the microbiological and physicochemical quality of fresh (np) and pasteurized (p) honey from Africanized bees (Apis mellifera) and two species of stingless bees (Melipona fasciculata and Melipona flavolineata), native to the northeastern region of the State of Pará. Physicochemical analyzes were performed according to the Brazilian legislation recommended for Apis mellifera and the microbiological analysis followed the official methods by the American Public Health Association. The honey from Apis mellifera were within the established physicochemical standards, except for the parameters reducing sugars (np: 57.43%±1.28 and p: 58.53%±1.91), acidity (np: 62.25 cmol/Kg±4.15 and p: 62.67 cmol/Kg±5.75) and humidity (np: 21.02%±0.17 and p: 20.12%±0.07). Meliponine honey was within the values observed in literature for this type of honey. In most of the physicochemical analysis performed, the types of honey were found to be different from each other, with meliponine honey having higher moisture and water activity, which makes it more susceptible to deterioration. A significant difference was observed between fresh honey from Apis mellifera and meliponine when compared to their respective pasteurized honey for moisture analysis (A. melífera, np: 21.02%±0.17 and p: 20.12%±0.07; M. fasciculata, np: 24.33%±0.03 and p: 23.68%±0.16; M. flavolineata, np: 28.53%±0.02 and p: 27.40%±0.04), apparent sucrose (A. melífera, np: 5.75%±0.18 and p: 3.19%±0.23; M. fasciculata, np: 3.89%±0.04 and p: 1.59%±0.03; M. flavolineata, np: 2.12%±0.22 and p: 1.62%±0.02) and HMF (A. melífera, np: 20.99 mg/Kg±0.13 and p: 64.36 mg/Kg±0,07; M. fasciculata, np: 6.54 mg/Kg±0.14 and p: 9.46 mg/Kg±0.09; M. flavolineata, np: 3.59mg/Kg±0.14 and p: 43.19 mg/Kg±0.14). All the samples submitted to the pasteurization process were within the microbiological limits established by current legislation.

Resumo O objetivo deste trabalho foi avaliar a estabilidade de duas polpas de frutas tropicais mistas, armazenadas sob congelamento (–18 °C), durante 365 dias, a partir de sucos tropicais mistos: F1 - suco tropical misto de acerola (10%), abacaxi (20%), açaí (5%), caju (5%), cajá (5%), camu-camu (5%), água (43,1%) e açúcar (6,9%) e F2 - suco tropical misto de acerola (10%), abacaxi (20%), açaí (10%), cajá (10%), água (43,4%) e açúcar (6,6%). Análises físicas, químicas e de capacidade antioxidante foram realizadas a cada 45 dias. Os sucos tropicais mistos mostraram-se adequados em termos da legislação vigente no que se refere à acidez e aos sólidos solúveis. Quanto à presença de constituintes bioativos, o suco tropical misto com maior concentração de açaí e cajá apresentou os maiores teores de antocianinas totais e carotenoides totais. Depois de 365 dias de armazenamento congelado, as perdas observadas para o teor de carotenoides foram 2,80% para a formulação F1 e 10,07% para a formulação F2. Já para antocianinas totais, as perdas foram maiores, 44,35% e 73,48%, para as formulações F1 e F2, respectivamente. De maneira geral, observou-se que o armazenamento sob congelamento foi eficaz na manutenção das características químicas e de atividade antioxidante das polpas de frutas mistas estudadas, resultando, após o descongelamento e adição de água e sacarose, em sucos tropicais mistos com boa qualidade nutricional e funcional.

Abstract The aim of this study was evaluate two formulations of mixed tropical fruit pulps stored frozen (–18 °C) for 365 days as from the mixed tropical juices obtained from them: F1 - mixed tropical juice of acerola (10%), pineapple (20%), acai (5%), cashew (5%), yellow mombin (5%), camu-camu (5%), water (43.1%) and sucrose (6.9%); and F2 - mixed tropical juice of acerola (10%), pineapple (20%), acai (10%), yellow mombin (10%), water (43.4%) and sucrose (6.6%). Physical and chemical analyses and the antioxidant capacity were determined every 45 days. The tropical juices obtained were suitable in terms of current legislation referring to acidity and soluble solids. With respect to the presence of bioactive constituents, the mixed tropical juice with the highest concentrations of acai and yellow mombin showed the highest levels of total anthocyanins and total carotenoids. After 365 days of frozen storage, the losses of carotenoid contents were 2.80% for formulation F1 and 10.07% for formulation F2. As for the total anthocyanins, the losses were higher, 44.35% and 73.48% for formulations F1 and F2, respectively. In general, it was observed that frozen storage was effective in maintaining the chemical characteristics and antioxidant activity of the mixed fruit pulps studied, resulting, after defrosting and the addition of water and sucrose, in mixed tropical juices with good nutritional and functional quality.

A Embrapa Amazônia Oriental possui um Banco Ativo de Pimenteira com diferentes genótipos do gênero Capsicum, os quais ainda não foram analisados, quanto às suas características funcionais e capacidade antioxidante. Este estudo objetivou determinar os teores de ácido ascórbico, compostos fenólicos, carotenoides totais e a atividade antioxidante total, em frutos imaturos e maduros de genótipos de pimentas Capsicum spp. As concentrações de vitamina C (100,76-361,65 mg 100 g-1 nos frutos imaturos e 36,70-157,76 mg 100 g-1 nos maduros) decresceram com a maturação dos frutos. Carotenoides totais não foram detectados nos frutos imaturos, porém, nos frutos maduros, observaram-se valores de 73,80-1349,97 µg g-1, em função do genótipo. Os teores de compostos fenólicos aumentaram nos frutos maduros (147,40-718,64 mg GAE 100 g-1), para oito dos nove genótipos avaliados. Os frutos de pimenteira apresentaram significativa atividade antioxidante (55,02-92,03 µM trolox g-1 nos frutos imaturos e 39,60-113,08 µM trolox g- 1 nos maduros). Concluiu-se que o grau de maturação dos frutos influenciou nos teores de compostos bioativos dos genótipos estudados. Destacaram-se, como genótipos promissores com potencial para serem utilizados em programas de melhoramento genético, IAN186301 e IAN-186324, pelos altos teores de carotenoides totais; IAN-186301, IAN-186311, IAN-186312 e IAN-186313, com relação às altas concentrações de ácido ascórbico; IAN-186304 e IAN-186311, pelos altos teores de compostos fenólicos; e IAN-186311, para atividade antioxidante.

Embrapa Amazônia Oriental owns and active bank of peppers with different genotypes of the genus Capsicum, which have not been analyzed for their functional characteristics and antioxidant capacity yet. This study aimed to determine the contents of ascorbic acid, phenolic compounds, total carotenoids and total antioxidant activity in iµMature and mature fruits of Capsicum peppers genotypes. The levels of vitamin C (100.76-361.65 mg 100 g-1 in iµMature fruits and 36.70-157.76 mg 100 g-1 in mature fruits) decreased with fruit maturity. Total carotenoids were not detected in iµMature fruits, however, values of 73.801349.97 mg g-1 were observed for mature fruits, according to the genotype. The contents of phenolic compounds increased in mature fruits (147.40-718.64 mg GAE 100 g-1) for eight out of nine genotypes evaluated. The pepper fruits showed significant antioxidant activity (55.02-92.03 µM trolox g-1 in iµMature fruits and 39.60-113.08 µM trolox g-1 in mature fruits). It was concluded that the degree of fruit maturation affected the contents of bioactive compounds of the genotypes evaluated. IAN-186301 and IAN-186324, for total carotenoids; IAN-186301, IAN-186311, IAN-186312 and IAN-186313, for ascorbic acid; IAN-186304 and IAN-186311, for phenolic compounds; and IAN-186311, for antioxidant activity, were considered the most promising genotypes, with potential to be used in breeding programs.

O extrato do amapazeiro (Brosimum parinarioides Ducke), conhecido como leite-do-amapá, é utilizado pelas populações amazônicas como fonte alimentar e medicinal. A rápida alteração de cor do látex após extração representa a presença de enzimas como polifenoloxidase (PPO) e peroxidase (POD), escurecendo o produto in natura e desqualificando-o para comercialização. Desse modo, este trabalho objetivou a avaliação da atividade das enzimas PPO e POD em três amostras de leite-do-amapá resfriadas a 8°C, coletadas em amapazeiros em Moju (PA), e onze amostras de leite-do-amapá após o processo de pasteurização em diversos binômios tempo/temperatura e posteriormente resfriadas a 8°C, visando à otimização da conservação do produto in natura. Após resfriamento a 8°C, as amostras de leite-do-amapá in natura apresentaram diferença significativa entre os valores de atividade da enzima POD e, posteriormente observou-se elevação dessa atividade durante os períodos de tempo analisados. Como também se observou atividade da enzima PPO nas mesmas amostras, constata-se que esse tipo de conservação não foi eficiente para as enzimas POD e PPO para leite-do-amapá. As amostras pasteurizadas de leite-do-amapá, e posteriormente resfriadas, apresentaram atividades das enzimas POD e PPO significativamente diferenciadas da respectiva amostra controle (sem pasteurização), concluindo que a pasteurização nos binômios estudados, aliada ao resfriamento, foi eficaz na diminuição da atividade das enzimas peroxidase e polifenoloxidase, alcançando-se a inativação destas, podendo ser um processo potencial para conservação desse produto.

The extract of amapazeiro (Brosimum parinarioides Ducke), known as milk-of-amapá, is used by Amazonian populations as food and medicinal sources. The rapid change in color of the latex after extraction indicates the presence of enzymes such as polyphenoloxidase (PPO) and peroxidase (POD), darkening the fresh product and disqualifying it for trading. Thus, this study aimed at evaluating the activity of enzymes PPO and POD from three milk-of-amapá samples collected in amapazeiros in Moju (PA) cooled to 8°C and eleven samples of milk-of-amapá after the pasteurization process in different binomials time / temperature and then cooled to 8°C in order to optimize the storage of the fresh product. After cooling to 8°C, samples from the fresh milk-of-amapá showed significant difference between the values of PER enzyme activity POD, and later there was an increase of activity during the periods analyzed. As it was also observed PPO enzyme activity in the same samples, it appears that this type of conservation was not effective for the POD and PPO enzymes from milk-of-amapá. The samples of pasteurized milk-of-Amapá, and then cooled, showed enzyme activities of PPO and POD significantly different from respective control sample (without pasteurization), what leads to a conclusion that pasteurization in binomials studied, together with the cooling, was effective in reducing the activity of peroxidase and polyphenoloxidase enzymes, reaching to the inactivation of them, being a potencial process for conservation of this product.

Neste trabalho, foi determinado o comportamento reológico do suco misto obtido a partir de uma mistura de frutas tropicais, mediante um viscosímetro de cilindros concêntricos, no intervalo de temperatura de 10 ºC a 60 ºC. Os modelos Lei da Potência e Mizrahi-Berk foram ajustados aos dados experimentais. Os modelos mostraram-se adequados para descrever o comportamento reológico do suco misto, de acordo com os parâmetros estatísticos de ajuste. O produto apresentou índice de comportamento menor do que 1 (um), caracterizando a pseudoplasticidade do suco. Os índices de comportamento de consistência decresceram com o aumento da temperatura. O efeito da temperatura no comportamento reológico do suco foi descrito por uma equação análoga à de Arrhenius e discutida em termos de energia de ativação (Ea). Os valores de Ea variaram de 4,27 a 4, 66 kcal.gmol-1, com o aumento da taxa de deformação.

The rheological properties of a juice blend obtained from a tropical fruit mix were determined in this work using a rotational viscosimeter at temperatures from 10 ºC to 60 ºC. The Power law and Mizrahi-Berk models were fitted to the experimental data. All the models were considered adequate to describe the rheological properties of the juice blend according to the fitted statistical parameters. The behaviour index of the product was below 1.0, indicating the pseudoplasticity of the juice. The behaviour indexes for consistency were found to decrease with increase in temperature. The effect of temperature on the rheological behaviour of the juice was described by an Arrhenius type equation and discussed in terms of the activation energy (Ea). The values for Ea varied from 4.27 to 4.66 kcal.gmol-1 with increases in shear rate.

Neste trabalho, foi estudado o comportamento reológico da polpa de pitanga na faixa de temperatura de pasteurização de 83 a 97 °C. Os resultados indicaram que a polpa apresentou comportamento pseudoplástico e o modelo de Herschel-Bulkley foi considerado o mais adequado para representar o comportamento reológico do produto nas temperaturas estudadas. Os índices de comportamento de fluido (n) variaram na faixa de 0,448 a 0,627. O efeito da temperatura sobre a viscosidade aparente pôde ser descrito pela equação análoga à de Arrenhius, observando-se a diminuição da viscosidade aparente da polpa de pitanga com o aumento da temperatura.

The rheological behavior of Brazilian Cherry (Eugenia uniflora L.) pulp in the range of temperatures used for pasteurization (83 to 97 °C) was studied. The results indicated that Brazilian Cherry pulp presented pseudoplastic behavior, and the Herschel-Bulkley model was considered more adequate to represent the rheological behavior of this pulp in the range of temperatures studied. The fluid behavior index (n) varied in the range from 0.448 to 0.627. The effect of temperature on the apparent viscosity was described by an equation analogous to Arrhenius equation, and a decrease in apparent viscosity with an increase in temperature was observed.

Sucos de frutas "prontos para beber" representam grande fatia do mercado e importante alvo do desenvolvimento de produtos. A mistura de frutas pode trazer melhorias no aspecto sensorial e nutricional destas bebidas e aproveitar a diversidade de frutos exóticos da região Amazônica. Torna-se necessário, então, selecionar misturas de frutas e sua doçura ideal segundo a aceitação dos consumidores. Consumidores da cidade de Belém (Brasil) avaliaram cinco concentrações de açúcar usando escala do ideal de dois blends selecionados em teste de ordenação preferência. Para o blend cupuaçu-acerola-açaí, a concentração ótima de açúcar foi 9,5 g/100 mL; para blend graviola-camucamu-taperabé a concentração ótima foi 10,7 g/ 100 mL.

Ready-to-drink fruit juices represent a large share of the market and are an important target for product development. The mixture of fruits can bring about improvements to nutritional and sensory aspects of these beverages while making used of the wide variety of exotic fruits from the Amazon region. Therefore, it is necessary to select mixed fruits and determine their ideal sweetness according to consumer acceptance. Consumers in the city of Belém (Brazil) evaluated five different concentrations of sugar using the just-about-right scale in two blends selected by preference ranking. For the cupuassu-acerola-açai blend, the optimum concentration of sugar was 9.5 g/100 mL, and for the soursop-camucamu-yellow mombin blend, it was 10.7 g/100 mL.

O objetivo deste trabalho foi elaborar um produto matinal extrusado de quirera de arroz e bandinha de feijão, além de verificar a influência do processo de extrusão nas suas características físico-químicas, nutricionais, tecnológicas e sensoriais. O produto final apresentou teor considerável de proteínas (9,9 g.100 g-1), podendo ser considerado uma boa fonte desse nutriente para crianças e adolescentes. Para a fibra alimentar, observou-se teor de 3,71 g.100 g-1 do produto pronto para o consumo. Dessa forma, o floco matinal de arroz e feijão pode receber a alegação de alimento fonte de fibras, de acordo com a legislação brasileira. Com relação às propriedades tecnológicas, o extrusado estudado apresentou índice de expansão de 8,89 e densidade aparente de 0,25 g.cm-3. Quanto à análise sensorial, o floco matinal avaliado obteve notas médias de aceitação, situadas no intervalo de 6,8 a 7,7, que corresponde às categorias "gostei ligeiramente" e "gostei muito". Para a intenção de compra, 79% dos provadores opinaram que certamente ou possivelmente comprariam o produto. O emprego de quirera de arroz e bandinha de feijão é uma interessante alternativa para a elaboração de produto matinal extrusado, apresentando boas qualidades de ordem nutricional, tecnológica e sensorial.

The objective of this work was to develop an extruded breakfast product containing broken rice and split old beans and to verify the influence of the extrusion process on their physicochemical, technological, and sensory characteristic. The final product had a protein content of 9.9 g.100 g-1, and therefore it can be considered a good source of proteins for children and teenagers. The dietary fiber content of the final edible product was 3.71 g.100 g-1. Therefore, the breakfast meal may be considered as a source of dietary fiber according to Brazilian law . As for the technological properties, the extruded product presented an expansion index of 8.89 and apparent density of 0.25 g.cm-3. With regard to the sensory analysis, the acceptance average was ranked between 6.8 and 7.7, corresponding to the categories "liked slightly" and "liked very much". With regard to purchase intention, 79% of the panelists said they would certainly or possibly purchase the product. Broken rice and split old beans are interesting alternatives for the elaboration of extruded breakfast products presenting good nutritional, technological, and sensory qualities.

Este trabalho teve por objetivo desenvolver nova formulação de snack por extrusão termoplástica a partir de mistura de farinhas de quirera de arroz e de bandinha de feijão, bem como avaliar o potencial nutricional, tecnológico e sensorial do novo produto. A farinha de bandinha de feijão carioca foi incorporada à farinha de quirera de arroz na proporção de 30%. O snack foi produzido em extrusora monorrosca, escala piloto. Os parâmetros de extrusão foram fixos, utilizando-se três zonas de extrusão com temperaturas de 40, 60 e 85 °C; velocidade do parafuso de 177 rpm; taxa de alimentação de 292 g.min-1, e matriz circular de 3,85 mm de diâmetro. A amostra de snack foi submetida a caracterizações fisicoquímica, tecnológica e sensorial. Observou-se efeito significativo da farinha de bandinha de feijão no aumento dos teores proteico e de fibras no snack obtido, quando comparada à farinha de quirera de arroz. Em relação às características tecnológicas do produto, obteve-se 0,17 g.cm-3 para densidade aparente, 7,75 para o índice de expansão e 435, g.f para a dureza instrumental. A formulação estudada foi aceita sensorialmente, com índice de aceitação para impressão global de 76%. Conclui-se que é possível produzir snacks por extrusão a partir da incorporação de 30% de farinha de bandinha de feijão à farinha de quirera de arroz, resultando em produto aceito sensorialmente e com adequado valor nutricional.

The objective of this work was to develop a new formulation for a snack made by thermoplastic extrusion from a mixture of broken rice flour and broken common bean flour, and assess the nutritional, sensory and technological potential of the new product. The broken common bean flour was added to the broken rice flour at a rate of 30%, and the snack was produced in a pilot scale single screw extruder. The extrusion parameters were fixed using three extrusion zones (at 40, 60 and 85 °C); screw speed of 177 rpm; feed rate of 292 g.min-1; and a circular matrix with a diameter of 3.85 mm. The snack sample was submitted to physicochemical, technological and sensory analyses. A significant effect of adding the broken common bean flour was observed in increasing the levels of protein and fiber in the snack, when compared with only broken rice flour. With respect to the technological characteristics, a bulk density of 0.17 g.cm-3 was obtained, expansion rate of 7.75 and instrumental hardness of 435.98 g.f. The formulation was well accepted, with an acceptance rate of 76% for overall impression. It was concluded that it was possible to produce extruded snacks by incorporating 30% of broken common bean flour into broken rice flour, resulting in gluten free products with good sensory acceptance and adequate nutritional value.

Este trabalho teve por objetivo estabelecer procedimento tecnológico para produção de fruta estruturada a partir de "mix" de polpa de cajá e mamão, procurando unir as propriedades sensoriais de cada uma das frutas e potencializar as características funcionais do produto final. Avaliou-se o efeito da combinação de pectina, gelatina e alginato de sódio, via metodologia de superfície de resposta, nas características do gel de fruta. As polpas de mamão e cajá e os estruturados obtidos foram caracterizados com relação aos compostos funcionais, avaliando-se o teor de taninos e carotenóides totais, além das análises de composição centesimal, pH, acidez titulável, sólidos solúveis, açúcares, atividade de água, carboidratos e valor energético total. Os resultados obtidos através do planejamento experimental indicam que para o estruturado misto de cajá e mamão, somente o aumento da concentração de gelatina afeta a firmeza do produto final. Os estruturados de frutas desenvolvidos apresentaram boa aceitação sensorial para todos os atributos avaliados. Com relação à intenção de compra, 70% dos provadores responderam que provavelmente ou certamente, comprariam o estruturado misto de cajá e mamão se o encontrassem à venda.

The objective of this work was to establish a technological procedure for producing a structured fruit product from yellow mobin and papaya purees, as an attempt to combine the sensory properties of both fruits and potentialize the functional properties of the final product. The effect of different combinations of pectin, gelatin and sodium alginate on the fruit gel properties was evaluated by response surface methodology. Papaya and yellow mobin purees and the structured products were characterized in terms of functional compounds (total tannin and carotenoid contents), as well as centesimal composition, pH, titratable acidity, soluble solids, sugars, water activity, carbohydrates and total energetic value. The results obtained from the experimental design indicated that only the gelatin concentration affected the product firmness. The developed fruit structured products presented good acceptance for all evaluated attributes. The data concerning purchase intent indicated that 70% of the panelists would probably or certainly purchase the mixed yellow mobin and papaya structured product if they found it for sale.

Avaliaram-se as características físicas do fruto e físico-químicas da casca do mangostão colhido em diferentes períodos da safra (início, meio e fim). As características físicas dos frutos variam significativamente (p<0,05) do início ao fim da safra, e observou-se que a média de peso dos frutos variou de 91,33 a 50,82 gramas, e a casca representa, em média, de 61,39 a 76,86% do peso total do fruto. A caracterização físico-química mostrou que a casca possui elevado teor de umidade (64,5 a 66%), fibras totais (24,9 a 29,1%), alta atividade de água (0,96 - 0,98), baixo valor energético (24,8 a 34,7 Kcal/100 g) e expressivo teor de antocianinas totais (25,9 a 63,9 mg/100 g), principalmente no período intermediário da safra.

In this work, it was evaluated the physical characteristics of fruit and physiochemical of the mangosteen peel, harvested in different periods (beginning, middle and end). The physical characteristics of fruits range significantly (p<0.05) from the beginning to the end, and it was observed that the fruits average weight, ranged from 91.33 to 50.82 g and the peel consists of an average from 72.12 to 76.86% of the total fruit weight. The physiochemical characterization shows that the peel possesses high moisture content (64.5 to 66%), total fibers (24.9 to 29.1%), high water activity (0.96 - 0.98), low energy value (24.8 to 34.7 Kcal/ 100g) and expressive content of total anthocyanins (25.9 to 63.9 mg/100g), mainly in the intermediate harvest period.

As tendências do setor alimentício são ditadas pelo mercado consumidor e seu comportamento social. Atualmente, a busca por produtos saudáveis tem crescido e frutos exóticos estão sendo cada vez mais utilizados visando o fator inovação. O cajá e umbu são frutos bastante comercializados no Norte e Nordeste do Brasil e o desenvolvimento de produtos à base destes frutos mostra ser uma opção interessante, pelo sabor e pelas características de funcionalidade. Elaborou-se um néctar misto que foi submetido à pasteurização térmica (90 °C/60 s). O produto foi caracterizado físico-quimicamente e ao longo de três meses avaliou-se a estabilidade segundo análises microbiológicas, sensoriais e de pH, acidez total titulável, açúcares totais e redutores, taninos, carotenóides totais e cor. Os resultados indicaram uma boa aceitação em relação à impressão global (84,76%) e intenção de compra (90,62%). O produto apresentou um valor energético de 68,16 kcal.100 g-1, sendo rico em taninos e boa fonte de vitamina C. O tratamento térmico empregado se mostrou eficiente até 60 dias de estocagem, após esse período, o néctar apresentou modificações nos açúcares, escurecimento e crescimento de fungos. Sensorialmente, isso refletiu na queda da aceitação e intenção de compra, com valores de 65,66 e 68,4%, respectivamente.

The trends of the food industry are dictated by the consumer market and by its social behavior. Today, there is a growing demand for healthful food products, and exotic fruits are being used increasingly, aiming at the innovation. Cajá and umbu are tropical fruits widely commercialized in Brazil’s northern and northeastern regions and the development of products based on these fruits has proved an interesting option thanks to their flavor and functional characteristics. A mixed nectar of cajú and umbu was prepared and pasteurised at 90 °C/60 sec. The product was characterized physicochemically and its stability was evaluated over a period of 3 months, during which its pH, total acidity, tannins, total carotenoids, total and reducing sugars, color were analyzed microbiologically and sensorially. The results indicated good overall sensory acceptance (84.76%) and intent to buy (90.62%). The product presented an energetic value of 68.16 kcal.100 g-1, proving to be rich in tannins and vitamin C. The heat treatment employed proved effective for a storage period of up to 60 days, after which the sugars in the nectar began to display modifications and the product showed browning and fungal growth. These changes were reflected in the sensory scores obtained at 60 days, with the acceptance rate dropping to 65.66% and the intent to buy to 68.4%.
