ABSTRACT Ensilage of refused fruit with forage is a viable approach to increase resource use in ruminant feed. The use of refused melon (Cucumis melo L. subsp. melo var. inodorus H. Jacq.) fruit (RMF), ensiled at 0%, 2%, 4%, 6%, or 8% of natural matter with sorghum (Sorghum bicolor (L.) Moench), was assessed in terms of chemical- bromatological composition and fermentative profile. Experimental silos filled with mixtures and hermetically sealed were used. After 34 d of fermentation, the silos were opened, and samples were analyzed. Dry matter concentration shows a quadratic increase (P < 0.05) with RMF inclusion in sorghum silage rising from 30.83% to 32.08% at 4% of RMF inclusion, followed by a reduction in the subsequent levels. There was a linear increase (P < 0.05) in ether extract, total digestible nutrients, digestible energy, metabolizable energy, and in vitro digestibility of DM and organic matter, increasing respectively 3.96%, 5.32%, 0.25 Mcal kg-1, 0.19 Mcal kg-1, 1.89% and 0.74% from 0% to 8% of RMF inclusion. There was a linear reduction (P < 0.05) of neutral detergent fiber, cellulose, hemicellulose, and lignin with RMF inclusion. We also observed a linear increase (P < 0.05) in ammoniacal N, acetic acid, propionic acid, butyric acid, and lactic acid concentrations in silage with the addition of RMF. The inclusion of RMF improved the chemical-bromatological composition and fermentative profile of sorghum silage, and an inclusion level of 8% is recommended.

ABSTRACT The use of agroindustrial byproducts in cattle diets, such as castor-bean (Ricinus communis L.) meal, is a more sustainable practice because it does not compete with human food and reduces the volume of organic waste deposited in the environment. The aim of this study was to examine the effect of replacing soybean (Glycine max (L.) Merr.) meal with castor-bean meal on the intake, digestibility, feeding behavior and performance of crossbred steers supplemented while on Urochloa brizantha (Hochst. ex A. Rich.) R.D. Webster ‘Marandu’ pasture. The experiment was laid out in a randomized complete design with 40 animals, which started the experiment weighing 227.1 kg, at 10 mo of age, and were divided into four treatment groups. Castor-bean meal was added to replace soybean meal at the levels of 0, 90, 180, and 280 g kg-1 in the supplement, which was supplied at the rate of 0.4% of body weight. Total DM, pasture DM and neutral detergent fiber intakes did not change (P > 0.05) with the castor-bean levels added to the supplement. Ether extract intake and digestibility decreased linearly (P < 0.05). The animals showed no differences (P > 0.05) in production performance (average daily gain), which averaged 0.65 kg d-1. Grazing, idle, and rumination times were not influenced (P > 0.05) by the treatments. Castor-bean meal can be included up to 280 g kg-1 in the total diet without changing the performance of crossbred steers finished on tropical pasture.

ABSTRACT. The objective of this study was to evaluate the effect of replacement of corn with pre-dried cassava root silage (CRS) on intake, ingestive behavior, production and composition of goat milk. Five lactating Saanen goats were used, with 42.5 ± 4.2 kg body weight and production of 2 kg milk day-1, distributed in a 5 x 5 Latin square with five treatments: 0, 28.6, 58.0, 81.6 and 100% replacement of corn with CRS in the diet dry matter. Goats were monitored for five periods of 15 days each. The intake of dry matter, crude protein and neutral detergent fiber decreased linearly (p <0.05) with the replacement of corn with CRS. Feeding (348.5 ± 62.1 min.) and rumination (468.8 ± 83.8 min.) times were not influenced (p >0.05) by the replacement of corn with CRS, but the ingestion and rumination efficiencies had a linear increase (p > 0.05). Milk production (2.17 ± 0.45 kg day-1), fat (3.49 ± 0.42%), protein (3.11 ± 0.13%) and lactose (4.47 ± 0,11%) of goat milk were not influenced (p >0.05) by the replacement of corn with CRS. Therefore, it is recommended the total replacement of corn with pre-dried cassava root silage in the diet for dairy goats with an average production of 2 kg day-1.

Abstract Cheese production such as mozzarella is affected by several factors including the processing technology (e.g., cuts, fermentation, curd stretching), as well as quantity and quality of raw materials and other ingredients. The aim of this study was to investigate the relationship between mozzarella cheese yield and buffalo milk composition, processing factors, and losses of whey constituents using polynomial regression and adjusted R2. All regression coefficients associated with each explanatory variable were significantly different from zero. The models explained an average of 99% of the variation in the dataset. The regression models showed that the concentration of milk components (e.g., fat, protein, casein, lactose, total solids), somatic cell score, age and acidity of the starter culture, time between curd cuts, and percentage of lost whey constituents highly influenced the mozzarella cheese yield. The buffalo dairy industry should focus on rigorous control of milk quality and processing factors to standardize and optimize mozzarella cheese yield efficiency.

Abstract The aims were to evaluate the effect of breed on the genetic polymorphism kappa-casein, physicochemical composition of milk and Coalho cheese, and on cheese yield; and to evaluate the effect of different periods of storage on sensorial acceptance of the Coalho cheese obtained from milk of Guzerat, Gyr and Sindi cows. Twenty (20) cows of Zebu breeds were selected, from which it was obtained the frequency values of the genetic polymorphism kappa-casein. Milk were submitted to fat, protein, lactose, non-fat solids and total solids, electrical conductivity analysis and somatic cell count. Cheeses were submitted to fat, protein, total solids, pH, moisture and yield (g TS/L) analysis. Attributes appearance, aroma, texture and flavor were judged at the 1st, 25th and 46th day of storage. There was a total frequency of 0.70 for genotype AA, 0.30 for genotype AB. There was no significant difference in milk composition among the studied breeds. However, there were differences in the physicochemical composition (with the exception of the protein) and the yield of the cheeses, but all the breeds showed a similar real yield. It was found effect of the storage period on the cheeses sensory attributes in the different breeds, with the exception of the appearance. The milk of the Guzerat, Gyr and Sindi breeds constitute an excellent raw material for the production of curd cheese and ensures a satisfactory sensorial acceptance of the product at the 1st, 25th and 46th days of storage.

Resumen Los objetivos fueron evaluar el efecto de la raza sobre el polimorfismo genético de la kappa-caseína, la composición fisicoquímica de la leche y del queso Coalho, y el rendimiento del queso, así como evaluar el efecto de diferentes periodos de almacenamiento sobre la aceptación sensorial del queso Coalho obtenido a partir de leche de vacas Guzerat, Gyr y Sindi. Se seleccionaron veinte (20) vacas de razas cebú y se obtuvieron sus valores de frecuencia del polimorfismo genético de la kappa-caseína. La leche se sometió a un análisis de grasa, proteína, lactosa, sólidos no grasos y sólidos totales, conductividad eléctrica y cuenta de células somáticas. Los quesos se sometieron a análisis de grasa, proteína, sólidos totales, pH, humedad y rendimiento (g ST/L). Se evaluaron los atributos apariencia, aroma, textura y sabor en los días 1, 25 y 46 de almacenamiento. La frecuencia total fue de 0.70 para el genotipo AA y 0.30 para el genotipo AB. No hubo diferencias significativas en la composición de la leche entre las razas estudiadas. Sin embargo, hubo diferencias en la composición fisicoquímica (exceptuando la proteína) y el rendimiento de los quesos; pero todas las razas mostraron un rendimiento real similar. El periodo de almacenamiento tuvo efectos observables sobre los atributos sensoriales de los quesos en las diferentes razas, con la excepción de su apariencia. La leche de las razas Guzerat, Gyr y Sindi constituye una excelente materia prima para la producción de cuajada y garantiza una aceptación sensorial satisfactoria del producto a los días 1, 25 y 46 de almacenamiento.

RESUMO O objetivo deste estudo foi avaliar o efeito da substituição do feno de Tifton 85 pelo feno de maniçoba em dietas à base de palma forrageira sobre a ingestão e digestibilidade de nutrientes, comportamento ingestivo e parâmetros ruminais de ovinos confinados. Foram utilizados oito ovinos machos com cânula ruminal, distribuídos em quatro níveis (0, 333, 666 e 1.000 g kg-1 de matéria seca) de substituição do feno de Tifton 85 por feno de maniçoba em delineamento quadrado latino. Os animais permaneceram confinados por 60 dias divididos em quatro períodos de 15 dias. A substituição do feno de Tifton 85 por feno de maniçoba não influenciou no consumo ou digestibilidade de matéria seca. No entanto, influenciou de forma linear negativa na digestibilidade da fibra insolúvel em detergente neutro e proteína bruta. O nitrogênio amoniacal e proteína bruta ruminal diminuiu linearmente com a substituição do feno de Tifton 85 por feno de maniçoba. Não houve efeito da substituição do feno na produção de ácidos graxos voláteis ou no biofilme microbiano. A substituição total de Tifton 85 por feno de maniçoba em rações de palma forrageira para ovinos não influenciou o consumo de nutrientes digestíveis totais, a produção de ácidos graxos voláteis ou biofilme, mas afetou a digestibilidade da proteína bruta, nitrogênio amoniacal e teor de proteína bruta no rúmen. Portanto, o feno de maniçoba pode substituir até 300 g kg-1 de feno de capim em dietas de palma forrageira para ovinos, sem comprometer o consumo e os parâmetros ruminais.

ABSTRACT The objective of this study was to evaluate the effect of replacing Tifton 85 hay with maniçoba hay in diets based on spineless cactus on the nutrient intake and digestibility, ingestive behaviour and ruminal parameters of confined sheep. In order to do this, eight male sheep with ruminal cannulae were used, distributed across four levels (0, 333, 666 and 1.000 g kg-1 of dry matter) of replacement of Tifton 85 hay with maniçoba hay in a double Latin square experimental design. The animals were confined for 60 days divided into four periods of 15 days. The replacement of Tifton 85 hay with maniçoba hay did not influence the dry matter intake or digestibility. However, it influenced in a positive linear fashion the intake of non-fibrous carbohydrates and in a linear negative fashion the digestibility of insoluble fibre in neutral detergent and crude protein. The ruminal ammonia-nitrogen and the crude protein ruminal content decreased linearly with the replacement of Tifton 85 hay with maniçoba hay. There was no effect of hay replacement on the production of volatile fatty acids or the microbial biofilm. The total replacement Tifton 85 by maniçoba hay in spineless cactus diets for sheep did not influence total digestible nutrient intake, volatile fatty acid production or biofilm, but did affect crude protein digestibility, ammonia-nitrogen and crude protein content in the rumen. Therefore, maniçoba hay can replace 300 g kg-1 grass hay in spineless cactus diets for sheep without compromising intake and ruminal parameters.

ABSTRACT. The aim of this study was to evaluate the inclusion of 50% broken rice (BR) in diets for meat quail from 1 to 35 days old, starting at different ages. A total of 875 mixed quail were allocated to five treatments in a completely randomized design with five replicates of 35 birds. The treatments consisted of a maize- and soybean meal-based control diet and four other similar diets in which the inclusion of 50% BR was started at different ages, namely, 1st, 8th, 15th and 22nd days. Feed intake, weight gain, feed conversion and mortality rate were evaluated weekly. At 35 days, 10 quail per plot were weighed and selected to be slaughtered for evaluations of live weight, carcass yield and gizzard yield. Lastly, a study of economic viability was carried out. No significant difference (p > 0.05) was detected for the performance parameters, live weight or carcass yield, but a higher gizzard yield was found (p < 0.05) in the treatment without BR. The inclusion of BR from the first day of life provided better economic viability. Diets with a maximum inclusion of 50% BR can be formulated for meat quail at any age.

Abstract Our aim was to evaluate the sensorial acceptance and consumption intent of pasteurized milks and coalho cheeses produced with milk with low (80,000 cells/mL) and high (480,000 cells/mL) somatic cell count (SCC) level. Low SCC pasteurized milk (LCC) obtained statistically higher scores on the aroma, consistency, flavor and overall liking attributes in comparison with high SCC pasteurized milk. LCC mean scores for all attributes were statistically higher than high SCC Coalho Cheese. High SCC in raw milk has a detrimental effect on the quality of pasteurized milk and coalho cheeses as it presented lower sensory acceptance, failing to meet the consumer’s desired expectations.

Abstract The objective of this study was to correlate the gender and behavior of consumers of organic foods enriched with functional properties. The study was carried out by investigating the profile of organic and functional food consumers through the application of a questionnaire. A total of 1230 responses (of the questionnaire) were collected from people from all Brazilian states through social networks and e-mails following the snowball technique during the months of February and March 2017. The results showed that women expressed greater interest in consuming organic foods enriched with functional properties compared to men. Men and women agree that organic food are produced in a sustainable. Their high price, difficult access, irregular supply and availability in few establishments were highlighted as the main limiting factors for not consuming organic food, while an increased motivation (of consumption) was related to the awareness that organic foods are healthier and can improve quality of life. Fruits and vegetables are the most consumed organic foods among men and women, however women consume more functional foods than men. Thus, there are few differences in behavior and eating habits of organic foods between men and women.

ABSTRACT. This study evaluated the effect of replacing corn silage with spineless cactus, in combination with Tifton 85 hay or sugarcane bagasse, on the carcass measurements and sensory properties of the meat of lambs finished in feedlot. Twenty-one, intact, Santa Inês males, with an initial body weight of 22.86 ± 2.87 kg and an average age of 150 days, were individually confined for 74 days and fed at will three treatments diets: Corn silage (CS); Spineless cactus + Tifton 85 hay (CT) and Spineless cactus + sugarcane bagasse (CB). Lambs fed CT had a wider croup (p < 0.05) compared to animals fed CS. The replacement of corn silage with CT or CB did not influence (p > 0.05) the body length, withers height or chest circumference of the lambs. Values of carcass length and compactness index were similar (p > 0.05) between treatments. There was a high and positive correlation (p < 0.05) between chest width (0.82) and chest circumference (0.81) of animals with cold carcass weight. The odor and taste of sheep meat fed CT or CB was more accepted when compared to the meat of animals fed corn silage. The replacement of corn silage with spineless cactus in combination with Tifton 85 hay or sugarcane bagasse improves the sensory quality of sheep meat, but does not interfere with carcass measurements.

ABSTRACT. The aim of this study was to evaluate the feeding behavior of sheep fed sugarcane silage enriched with increasing levels of detoxified castor bean meal. Twenty-four non-castrated male Santa Inês sheep with an average body weight of 25.34 kg and four months of age, were distributed in four treatments - 0, 7, 14 and 21% of the natural matter of detoxified castor bean meal in sugarcane silage. There was a linear increase (p < 0.05) in time spent eating and feeding and rumination efficiency (g MS and NDF/h) with the inclusion of castor bean meal in silage. However, there was a linear decreasing response for time spent resting (p < 0.05). Time spent ruminating, number of boluses per day and numbers of chews per day per bolus were not affected (p > 0.05) by the inclusion of castor bean meal. The addition of detoxified castor bean meal to sugarcane silage reduces time spent eating and increases feed and rumination efficiency in sheep.

ABSTRACT. The aim of this study was to evaluate the replacement of Tifton 85 hay (Cynodon spp.) by maniçoba hay or silage (Manihot glaziovii Muell. Arg) on sheep intake and performance. Twenty-four male Santa Ines animals were used, with initial body weight of 19.77 ± 1.95 kg and average age of 160 days. The animals were distributed in three treatments (Tifton 85 hay-TH, Maniçoba hay-MH and Maniçoba silage-MS), arranged in a randomized blocks design, with 8 replicates per treatment. The feedlot period lasted for 71 days. The means of the variables were tested by Tukey’s test at 5% probability. Sheep fed MH presented higher dry matter intake (p > 0.05) than those fed TH (1.17 kg day-1 vs 1.06 kg day-1). Neutral detergent fiber intake was higher (p > 0.05) for MH-fed sheep (0.394 kg day-1) when compared to MS (0.340 kg day-1). The digestibility of total carbohydrates was higher (p > 0.05) for MH diet (0.71 g kg-1) than TH (0.67 g kg-1). The average daily gain and body weight at slaughter did not differ (p > 0.05) among treatments. Maniçoba hay or silage can replace Tifton 85 hay in sheep diets.

ABSTRACT. The aim of this study was to evaluate the effect of increasing levels of supplementation on body weight components of Nellore cattle grazing in Urochloa brizantha. Twenty-four steers with initial body weight (BW) of 371 ± 14 kg and average age of 26 months were used. Four animals were slaughtered at the beginning of the experiment as a reference and the others were distributed in 4 treatments [0.0% (mineral salt), 0.3%, 0.6% and 0.9% supplement BW]. The slaughter of the experimental group was performed when the animals reached 450 kg and the body weight components were weighed. Data were submitted to analysis of variance and regression. The increase in supplementation level reduced (p < 0.05) pasture dry matter intake, but did not influence (p > 0.05) on empty body weight (EBW) (380.3 kg) and cold carcass weight (CCW) (247.5 kg). The weights of skin, liver, rumen and fat were not influenced (p > 0.05) by supplementation level. The animals gained, on average, 75.3 kg EBW and 50.7 kg CCW, but the treatments did not influence (p > 0.05) the gains of body weight components. The increasing of energetic-protein supplement level for Nellore steers in Urochloa brizantha pasture does not affect carcass and non-carcass components.

RESUMO. A produção de leite tem elevada importância econômica em sistemas de produção de bovinos leiteiros, sendo, portanto, justificada a sua inclusão em programas de melhoramento genético. Objetivou-se avaliar as tendências genética e fenotípica de características leiteiras em animais das raças Gir (167 lactações) e Guzerá (148 lactações) no Estado do Rio Grande do Norte (RN). As características avaliadas foram produção de leite, gordura e proteína, obtida a partir de controles leiteiros mensais. As diferenças esperadas na progênie (DEPs) para estas características foram preditas utilizando-se um modelo animal. Pelas médias dos valores fenotípicos e das DEP’s foram estimadas as tendências fenotípicas e genéticas em regressões lineares, em função dos anos de nascimento dos animais. Foram observadas tendências genéticas e fenotípicas positivas para a produção de leite da raça Gir (26,8 e 88,7 kg ano-1) e Guzerá (8,44 e 37,68 kg ano-1). A raça Gir apresentou tendências genéticas positivas para a produção de gordura (1,08 kg ano-1) e proteína (0,45 kg ano-1) e a raça Guzerá apresentou tendências genéticas positivas para produção de gordura (0,36 kg ano-1) e proteína (0,25 kg ano-1). A seleção aplicada nos rebanhos avaliados tem produzido progressos genéticos e fenotípicos satisfatórios para as características leiteiras produção de leite, gordura e proteína.

ABSTRACT. Milk production has high economic importance in dairy cattle production systems, which justifies its inclusion in genetic breeding programs. The objective of this study was to evaluate the genetic and phenotypic trends of dairy traits in Gyr (167 lactations) and Guzerá (148 lactations) breeds in the State of Rio Grande do Norte (RN). Milk, fat and protein production obtained from monthly dairy controls were the traits evaluated. The expected differences in progeny (DEPs) for these traits were estimated using an animal model. From the means of phenotypic values and DEPs, we estimated the genetic and phenotypic trends in linear regressions as a function of the year of calving of the animal. Positive genetic and phenotypic trends were observed for Gyr (26.8 and 88.7 kg year-1) and Guzerá (8.44 and 37.68 kg year-1). Gyr breed presented positive genetic trends for fat (1.08 kg year-1) and protein (0.45 kg year-1) production and the Guzerá breed showed positive genetic trends for fat (0.36 kg year-1) and protein (0.25 kg year-1) production. The selection applied in the evaluated herds has produced satisfactory genetic and phenotypic progress for milk, fat and protein production.

RESUMO O experimento foi desenvolvido para avaliar os efeitos do emurchecimento e da inclusão de níveis de farelo de mandioca sobre o valor nutritivo, as características fermentativas e as perdas por gases e efluente da silagem de capim-elefante. Foi adotado o esquema fatorial 4 x 2, com quatro repetições, no delineamento inteiramente casualizado. Os fatores avaliados foram níveis de farelo de mandioca (0; 7,5; 15 e 22,5 % da matéria natural, MN) e emurchecimento (com e sem). Foram usados silos de PVC, com 50 cm de altura e 10 cm de diâmetro para a produção das silagens, que foram abertos após 60 dias. O emurchecimento e a adição do farelo de mandioca tiveram efeito linear crescente sobre o teor de matéria seca (MS). As silagens com farelo de mandioca apresentaram redução dos teores de nitrogênio total, extrato etéreo, nitrogênio insolúvel em detergente ácido, fibra em detergente neutro isenta de cinzas e proteína, fibra em detergente ácido, celulose, hemicelulose e lignina e elevação do teor de matéria orgânica, da digestibilidade in vitro da MS e dos nutrientes digestíveis totais. No que concerne às características fermentativas das silagens, o pH apresentou comportamento quadrático. Quanto ao nitrogênio amoniacal, observou-se comportamento quadrático e linear decrescente para as silagens sem e com emurchecimento, respectivamente. O emurchecimento e a inclusão do farelo de mandioca propiciaram menores perdas por efluente. O emurchecimento e a adição de farelo de mandioca melhora o valor nutritivo e as características fermentativas das silagens estudadas.

SUMMARY The experiment was developed to evaluate the effects of wilting and inclusion of cassava meal level on nutritive value, fermentative characteristics and losses of elephant grass silage. The 4 x 2 factorial scheme was adopted, with four repetitions, in a completely randomized design. The factors evaluated were wilting (without and with) and cassava meal level (0; 7.5; 15 and 22.5% of natural matter, DN). PVC silos with 50 cm height and 10 cm diameter were used for silages production, which were opened after 60 days. The wilting and cassava meal addition had increasing linear effect on DM content. Silages with cassava meal showed reduction of total nitrogen, ether extract, acid detergent insoluble nitrogen, neutral detergent fiber ash and protein free, acid detergent fiber, celluloses, hemicelluloses and lignin contents and increase of organic matter content, DM in vitro digestibility and total digestible nutrients. Relative to variables inherent to silages’ fermentative characteristics, pH presented quadratic behavior. Concerning to ammonia nitrogen, it was observed quadratic and decreasing linear behavior for silages without and with wilting, respectively. Wilting and cassava meal inclusion provided smaller effluent losses.
