Resumo As embalagens ativas podem liberar substâncias para inibir a microbiota e as reações na superfície dos alimentos. Dentre essas substâncias a curcumina pode ser usada pois apresenta atividade antimicrobiana e antioxidante. A difusão de compostos ativos em filmes de acetato de celulose pode ser estendida por longos períodos a taxa controlada. Sua adição pode afetar as propriedades mecânicas e de barreira dos filmes, tornando-se necessário mensurar estas alterações. Assim, objetivou-se preparar filmes ativos de acetato de celulose e tween 80 incorporados com mistura simples de curcumina e nanosuspensão de curcumina e avaliar cor, propriedades mecânicas, permeabilidade ao CO2 e migração do componente ativo. A curcumina influenciou as características mecânicas, ópticas e não afetou a permeabilidade dos filmes. O tween 80 favoreceu a migração da curcumina e a redução do tamanho das partículas não aumentou a migração de curcumina.

Abstract Active packaging can release substances to inhibit microbiota and reactions on the surface of foods; among these substances, curcumin can be applied for its antimicrobial and antioxidant activity. The diffusion of active compounds in cellulose acetate films can be extended for long periods at controlled rate. The addition may affect the mechanical and barrier properties of films, requiring the measurement of the alterations. The purpose of this study was to prepare active films of cellulose acetate and tween 80 incorporated with a simple mixture of curcumin and curcumin nanosuspension as well as assess color, mechanical properties, permeability to CO2 and migration of the active component. Curcumin influenced the mechanical and optical characteristics of the films but had no effect on the permeability to CO2. Tween 80 favored the migration, and the reduction in particles size did not increase the migration of curcumin.

Curcumin is a powerful bioactive agent and natural antioxidant, but it is practically water-insoluble and has low bioavailability; a possible solution to this obstacle would be formulations of curcumin nanoparticles. Surfactants such as tween 80 can be used to stabilize low-solubility molecules preventing particle aggregation. The objectives of this study were the preparation of a suspension with curcumin nanoparticles in tween 80, the testing of pure curcumin solubility and of a simple mixture of curcumin with tween 80 and nanosuspension in water and ethanol as solvents, and finally the assessment of the antioxidant activity. We prepared the nanosuspension by injecting a curcumin solution in dichloromethane at low flow in water with tween 80 under heating and ultrasound. The analysis of particles size was conducted through dynamic light scattering; the non-degradation of curcumin was verified through thin-layer chromatography. The analyses of antioxidant activity were carried out according to the DPPH method. The method applied to reduce the particles size was efficient. Both the curcumin suspension and nanosuspension in tween 80 increased its solubility. Curcumin and the formulations presented antioxidant activity.

O azeite de pequi possui coloração vermelho-alaranjada devido à presença de carotenoides. Possíveis alterações químicas nesses compostos durante o processamento podem influenciar em modificações físicas do produto que ocorrem quando este é submetido ao aquecimento. Este estudo teve como objetivo utilizar parâmetros cinéticos para avaliar a degradação de carotenoides e a alteração de cor do azeite de pequi submetido ao aquecimento em temperatura de fritura. Para avaliar o efeito do aquecimento, o azeite de pequi foi tratado termicamente a 180°C em intervalo crescente de 10 minutos até uma hora de aquecimento. Realizaram-se as análises de carotenoides totais e cor e com esses resultados determinaram-se os parâmetros cinéticos. Ao longo do aquecimento, o teor de carotenoides foi praticamente todo degradado e consequentemente a cor foi bastante alterada. A cinética de degradação dos carotenoides foi de primeira ordem e da alteração de cor foi de ordem zero. Essas cinéticas refletiram as observações visuais das amostras do azeite de pequi obtidas depois de cada tratamento.

The pequi oil has red-orange color due to carotenoids content. Possible chemical modifications on these compounds during processing may influence physical modifications to the product when this oil is submitted to heating. This study aimed to use kinetic parameters to evaluate carotenoids degradation and color change of the pequi oil submitted to heating at frying temperature. To evaluate the effect of heating, pequi oil was heated at 180°C in 10 minutes increasing intervals until one hour. Analyses were performed for total carotenoids and color and these results were used to determine kinetic parameters. Along the heating the carotenoids content was almost completed degraded and consequently, the color changed significantly. Kinetics of carotenoids degradation was of first order and the color change was of zero order. These kinetics reflected the visual observations of pequi oil samples obtained after each treatment.

Antimicrobial active packaging delays or inhibits microorganism growth in packed products, and it can be used in a variety of food systems. The objective of the present research was to develop packaging incorporated with natural antimicrobial agents (active film). The effects of the active film on the spoilage, pathogenic microorganism counts, pH and color of the refrigerated chicken breast cuts were analyzed. Cellulose acetate-based active films incorporating two concentrations (20% and 50%, v/w) of rosemary (Rosmarinus officinalis L.) essential oil were manufactured and placed in contact with the chicken breast cuts for six days. An analysis of variance and mean comparison tests (Tukey's test, p<0.05) were performed on the results. The films that contained 20% essential oil and were intercalated with chicken breast samples did not demonstrate significant effects on the control of psychrotrophic or total coliform microorganisms during the storage period; however, the films incorporated with 50% essential oil demonstrated efficacy toward the control of coliforms during the storage of the samples (6 days, 2 ± 2ºC). The pH was related to the psychrotrophic microorganism count and was not influenced by the treatment. The color was not influenced by the time of storage or the treatment. The results demonstrate that active films incorporating 50% rosemary essential oil are effective at controlling certain microorganisms in chicken breast cuts.

O Brasil ocupa a quarta posição no ranking dos países produtores de banana. Contudo, maior que sua importância econômica, é sua função social. Neste estudo, foram avaliadas as características produtivas de genótipos de bananeira, sob diferentes lâminas de irrigação, e a característica sensorial de sabor de frutos maduros. O experimento foi conduzido de janeiro de 2004 a julho de 2005, com os genótipos falsa FHIA 18, Grande Naine, Prata e Thap Maeo. Após dois dias de descanso em câmara fria, os frutos foram avaliados no terceiro, quarto e quinto dias, para determinação da amostra preferida. Os quatro genótipos apresentaram respostas significativas à irrigação. O efeito das lâminas foi verificado na massa do cacho, da ráquis e das pencas, e no número total de frutos, comprimento do cacho e número de pencas. A massa do cacho e das pencas e o número total de frutos, nos genótipos falsa FHIA 18, Grande Naine e Thap Maeo, apresentaram resposta semelhante, exceto para a massa do cacho e das pencas, em Thap Maeo. O efeito das lâminas dentro de genótipos ocorreu para as demais variáveis, exceto para a massa e o número de frutos da segunda penca e diâmetro do fruto central. Falsa FHIA 18 teve mais variáveis influenciadas pelas lâminas de irrigação, enquanto, para Prata, somente ocorreu influência na variável número de pencas. A irrigação influenciou positivamente as características produtivas das bananeiras falsa FHIA 18, Grande Naine e Thap Maeo, que se mostraram promissoras para a região do Cerrado. Os genótipos Prata e Grande Naine são os preferidos pelos consumidores.

Brazil is the fourth biggest banana producer. However, its social function is more important than the economic one. In this study, the productive features of banana tree genotypes, under different irrigation levels, and the sensorial characteristic for taste of ripe fruits were evaluated. The experiment was carried out from January 2004 to July 2005, with the following genotypes: false FHIA 18, Grand Naine, Prata, and Thap Maeo. After resting for two days in a cold chamber, the fruits were evaluated in the third, fourth and fifth days, for determining the preferred sample. The four genotypes presented significant results to irrigation. The water levels effect was verified in the weight of the bunch, rachis, and hands, and in the total number of fruits, bunch length and number of hands. The weight of the bunch and hands, and the total number of fruits, in the false FHIA 18, Grand Naine, and Thap Maeo genotypes, presented similar responses, except for the weight of bunch and hands, in Thap Maeo. The effect of the water levels among the genotypes occurred on most variables, except for the weight and the number of fruits of the second hand and diameter of the central fruit. False FHIA 18 presented more variables influenced by the irrigation levels and, for Prata, the only influence occurred in the number of hands. The irrigation positively influenced the productive characteristics of the false FHIA 18, Grand Naine, and Thap Maeo banana trees, which showed to be promising for the Brazilian savannah region. Consumers prefer the Prata and Grand Naine genotypes.

O pequi (Caryocar brasiliense Camb.) possui em seu interior amêndoa comestível pouco explorada. Objetivou-se avaliar o processo de extração, secagem e torrefação da amêndoa do pequi. Foram utilizadas sementes de pequi fornecidas pela Associação de Beneficiamento de Frutos do Cerrado, localizada na cidade de Damianópolis-GO. Para a extração da amêndoa, foi adaptado equipamento tipo guilhotina, com a finalidade de cortar a semente ao meio. O equipamento é composto por uma lâmina fixa em um suporte de madeira, recoberto com placa de Policloreto de Vinila (PVC) e apresentou desempenho satisfatório. Para a secagem das amêndoas, sugeriu-se o binômio tempo/temperatura de 70 °C por 60 minutos, pois conferiu ao produto atividade de água em torno de 0,60 em menor tempo secagem. As amêndoas torradas a 130 °C durante 15 e 30 minutos apresentaram melhores características sensoriais, não diferindo significativamente entre si (p > 0,05) pelo Teste de Friedman. No tempo de 30 minutos, observaram-se tendências de melhores características sensoriais, como cor e crocância, no produto final.

The Pequi (caryocar brasiliense Camb.) edible almond seed is little used. The aim of this study is to evaluate almond seeds of pequi supplied by the "Associação de Beneficiamento de Frutos do Cerrado" (Cerrado fruit supply association), located in the city of Damianópolis-GO. For the extration of the almond, a guillotine like equipment was used with the purpose of cutting the seed in half. The equipment was composed of a fixed blade placed in a wooden support, recovered with Polyvinyl chloride (PVC), and it presented satisfactory performance. For the almonds drying, the temperature of 70 ºC for 60 minutes was suggested since it allowed water activity of around 0,60 in shorter drying time. The almonds roasted at 130 °C for 15 and 30 minutes presented better sensorial characteristics, and proved not significantly different among themselves (P > 0,05) in the Friedman Test. In the time of 30 minutes, trends of better sensorial characteristics such as color and crunchiness of the final product were observed

O uso de absorvedores de oxigênio em embalagens de produtos alimentícios acondicionados tem apresentado uma demanda crescente. Assim, o conhecimento da eficiência desses absorvedores em diferentes condições de umidade relativa e temperaturas definidas, são de fundamental importância. Portanto, foram determinadas equações para predizer o volume absorvido de oxigênio para as temperaturas de 10±2 ºC e 25±2 ºC, dependendo da umidade relativa na faixa de 75% a 85% e da taxa de permeabilidade a oxigênio da embalagem. Para a temperatura de 25±2ºC a equação é: V = -32,770+10,440*UR-104,385*ln(TPO2), com um R² = 0,9151. Para a temperatura de 10±2ºC a equação é: V=107,321+6,221*UR-105,166 ln(TPO2) com um R² = 0,8729. Dessa forma, o tempo de atividade do sachê pode ser determinado pela equação T = (V-Vi) / (TPO2*A). Utilizando essas equações e, considerando uma embalagem de área 0,05m² por face, com uma permeabilidade de 8,63 cm3.m-2.dia-1, uma umidade relativa de 80% e o volume de oxigênio inicial dentro da embalagem de 2,5 mL, após o envase, o tempo de atividade do sachê quando armazenado a 10±2ºC foi de 435 dias e a 25±2ºC de 666 dias.

Oxygen absorbers have been presenting a growing demand for application in food packaging. Thus, it is important to know the efficiency of those absorbers in different relative humidity and temperatures. Therefore, equations were developed to predict the volume of absorbed oxygen at 10±2 ºC and 25±2 ºC, according as the relative humidity ranging from 75% to 85% and the oxygen transmission rate through the package. At 25±2ºC the equation was V = -32,770+10,440*RH-104,385*ln(O2 TR), with R² = 0,9151. At 10±2ºC, V=107,321+6,221*RH-105,166 ln(O2 TR) with R² = 0,8729. As a consequence, activity time for the oxygen absorbers can be calculated with the following equation: T = (V-Vi) / (ln(O2 TR*A). Using these equations and considering a packaging area of 0,05m² for each face, oxygen transmission rate of 8,63 cm³.m-².dia-1, relative humidity of 80% and an initial oxygen volume inside the package of 2,5 mL, absorber activity times when stored at 10±2ºC and 25±2ºC were 435 and 666 days, respectively.

Alho minimamente processado apresenta uma curta vida de prateleira devido, principalmente, a crescimento de fungos. A retirada da casca que protege o produto das influências externas é um dos fatores que contribui para a deterioração do produto. Neste estudo, foram avaliados os efeitos de revestimentos comestíveis antimicrobianos a base de amido de mandioca, quitosana e glicerol no recobrimento de alho minimamente processado. O produto final foi submetido a avaliações de perda de peso, alterações na cor e contagem de psicrotróficos e bolores e leveduras. Os resultados mostraram não haver diferença significativa (p < 0,05) entre os tratamentos para perda de massa e saturação e tonalidade da cor. O uso do revestimento antimicrobiano com quitosana nos bulbos mostrou que, em até 15 dias de estocagem a 10 °C, a contagem de fungos não ultrapassou 10(5) UFC.g -1. Dentro do conceito da tecnologia de barreiras de proteção, o uso dos revestimentos antimicrobianos é uma tecnologia de grande potencialidade para aumentar a segurança do alho minimamente processado e prolongar sua vida útil.

Minimally processed bulb garlic has a short shelf-life, mainly due to fungi growth. Peeling away the outer layers of the garlic makes it more susceptible to the external factors that deteriorate the product. This study evaluated the effect of antimicrobial edible coatings produced from cassava starch, glycerol and chitosan on bulb garlic conservation. The coated product was analyzed for mass loss, color alterations and psychrotrophic, fungi and yeast counting. Coating treatments showed no significant differences (p < 0.05) for mass loss and color alterations. Garlic bulbs coated with edible coating containing chitosan showed fungi and yeast counting lower than 105 CFU.g -1, during 15 days of storage at 10 °C. Among hurdle technologies, antimicrobial edible coating is a potential technology to improve food safety for bulb garlic and extend its shelf-life.
