ABSTRACT. The objective of this study was to estimate genetic parameters for body weight at 60 (P60), 90 (P90), and 120 (P120) days of age in escargots of the subspecies Cornu aspersum maximum, evaluating the influence of fixed and covariable effects on these traits. The data used were collected from escargots kept in a total confinement system. The significant fixed effects and covariates for these traits were tested in a general linear model by the F-test, considering a level of significance of 5%. Both the fixed effects of box and birth year and the quadratic effect of age of weighing as a covariate were significant (p < 0.05) for P60, P90, and P120. The Restricted Maximum Likelihood (REML) methodology was used to estimate (co)variance components and genetic parameters. High heritability for P60, P90, and P120 (0.38, 0.55 and 0.78, respectively) and high genetic correlations (0.58 to 0.77) among the traits were observed. The genetic parameters can be used as a basis for studies and practical applications to increase zootechnical indexes in this population.

RESUMO Objetivou-se com este trabalho avaliar a composição visceral, o rendimento de cortes e a qualidade de carne de duas linhagens de frangos tipo caipira alimentados com dietas contendo cana-de-açúcar triturada. Foram utilizados 448 frangos distribuídos, aos 35 dias de idade, em dois blocos casualizados, em esquema fatorial 4x2, sendo quatro níveis de substituição da ração (0; 15; 30 e 45%) por de cana-de-açúcar e duas linhagens (Pesadão e Label Rouge), em duas repetições por bloco de quatorze aves unidade experimental. Em 30 minutos após o abate, o parâmetro a* foi maior para os animais da linhagem Pesadão em relação à linhagem Label Rouge. Observou-se efeito quadrático com o aumento dos níveis cana-de-açúcar sobre o parâmetro L* da carne do peito; e efeito linear sobre o parâmetro b* da pele do peito. Em 24 horas após o abate, observou-se efeito quadrático dos níveis de cana-de-açúcar sobre o parâmetro b* da carne do peito. O aumento dos níveis de cana-de-açúcar reduziu linearmente o peso do coração, fígado, peito, coxa mais sobrecoxa, asa, rendimento de carcaça e peso relativo do coração dos animais. Observou-se efeito quadrático com o aumento dos níveis de cana-de-açúcar sobre o peso relativo da gordura abdominal, sendo que o menor teor de gordura foi observado nos animais que consumiram até 30% de cana-de-açúcar. O uso da cana-de-açúcar como alimento alternativo em até 45% na dieta, possibilita manter a qualidade de carne e reduz o teor de gordura abdominal, porém, diminui o rendimento de carcaça.

ABSTRACT The aim of this study was to evaluate the visceral composition, cuts, and meat quality of two strains of free-range chickens fed diets containing crushed sugar cane. 448 chickens were distributed at 35 days of age, in two randomized blocks design, in 4x2 factorial, with four levels of replacement in the feed (0; 15; 30 and 45%) by sugarcane and two strains (Pesadão and Label Rouge), in two repetitions per block of fourteen birds per experimental unit. In 30 minutes after slaughter, the parameter a* was higher for animals of the Pesadão strain relation to the Label Rouge lineage. A quadratic effect was observed with increasing levels of sugarcane on the L* parameter of breast meat; and linear effect on parameter b* of the breast skin. Within 24 hours after slaughter, a quadratic effect of sugarcane levels was observed on the b* parameter of the breast meat. The increase in sugarcane levels linearly reduced the weight of heart, liver, chest, thigh plus drumstick, wing, carcass yield and relative heart weight of the animals. A quadratic effect was observed with increase in sugarcane levels over the relative weight of abdominal fat, the lowest fat content was observed in animals that consumed up to 30% of sugarcane in the feed. The use of sugarcane as an alternative feedstuff in up to 45% in the diet maintains the quality of meat and reduces the abdominal fat content, however, decreases the carcass yield.

ABSTRACT: The intense selection process for economic traits conducted by the poultry breeding programs has been caused several changes in broiler meat quality. A database belonging to a selection program of a broiler male line was used to estimate heritability and genetic correlations for feed conversion ratio and meat quality traits, which were: initial and final pH, lightness, drip loss, thawing loss and shear force. Two-trait analyses were performed and the components of co(variance) and genetic parameters were determined using the Bayesian approach and the GIBBS3F90 software. The heritability estimate found for feed conversion ratio (0.52) showed high influence of direct additive genetic effects on the expression of this trait; therefore, this trait is able to respond to selection. The genetic correlation estimates obtained (-0.50 to 0.33) were indicative of important associations between feed conversion ratio and meat quality traits. The selection to improve feed conversion ratio may cause injury in greater or lesser degree for L*, drip loss (DL), thawing loss (TL) and shear force (SF) in broilers. It is recommended the monitoring of consequences of feed conversion ratio used as selection criteria or meat quality traits in broilers, due to its unfavorable indirect selection for these variables in this population. Breeding methods for efficiency improvements in broilers feed are suggested, which also benefit sensorial and functional properties of the meat.

A taxa de crescimento de frangos de corte foi triplicada nas últimas décadas. O peso corporal é utilizado como um dos principais critérios de seleção, enquanto que as características de carcaça são essenciais para o mercado. Assim, a indústria avícola busca animais com pesos altos ao abate e excelentes características de carcaça. Contudo, a associação genética entre as características de carcaça e desempenho é desconhecida. Deste modo, foram estabelecidas associações genéticas entre estas características, além das estimativas do progresso genético e as tendências genéticas para uma linhagem comercial de frango de corte. Avaliou-se a idade ideal para a seleção indireta, visando a melhoraria das características de carcaça. Foram utilizadas informações de pesos em diferentes idades e características de carcaça de 128.459 frangos em diferentes idades ao passo que o pedigree dispunha de 132.442 aves. As análises genéticas foram realizadas por meio do software ASReml®, utilizando o método da máxima verossimilhança restrita, sob o modelo animal. As estimativas de herdabilidade variaram de moderadas a altas, sendo indicativo de que estas características podem ter alta resposta à seleção. As correlações genéticas entre as características de desempenho e carcaça variaram de moderadas a altas, indicando a presença de associação genética, ao passo que as tendências genéticas sugerem que a seleção direta está ocorrendo para o peso corporal em diferentes idades. A seleção nas idades 30 e 38 dias deve ser considerada em vez do peso ao abate, uma vez que antecipa a seleção em um período aproximado de 12 dias.

The growth rate of broilers has triplicated in the last decades. The body weight is used as one of the selection criteria whereas the carcass traits are valuable market requirements. Thus, the meat industry like animals with high weights at slaughter and better carcass traits. However, the genetic relation of carcass traits with several body weights is unknown. Therefore, we established genetic associations among performance and carcass traits in a broiler chicken line and estimated genetic gain and trends. We also evaluated what age of selection would lead to a more efficient indirect selection of carcass traits. The data set with information of weights in different ages and carcass traits of 128,459 chickens was used. The pedigree data used contained 132,442 chickens. Genetic analysis were realized using ASREML® software applied a restricted maximum likelihood method. Heritability estimates ranged from moderate to high, which indicates that these traits can have high selection response. Genetic correlations between performance and carcass traits varied from moderate to high, which indicates the presence of a genetic association whereas genetic trends indicated that direct selection is occurring for body weight at different ages. Theselection at 30 and 38 days should be considered instead of the slaughter weight, as it anticipates selection in around 12 days.

As raças de bovinos de leite Holandesa e Jersey estão entre as mais prevalentes no Brasil. Para avaliar as diferenças entre as PTAs (habilidades de transmissão preditas) destas raças e suas linhagens, foram coletadas informações de 385 touros Holandês e 82 touros Jersey disponibilizados por nove empresas comercializadoras de sêmen no Brasil. Três diferentes linhagens de cada raça foram encontradas. O método dos modelos lineares generalizados foi utilizado para a comparação entre linhagens e entre raças. As duas linhagens da raça Holandesa mais prevalentes apresentaram as maiores PTAs médias para produção de leite (1.061,04 libras e 975,32 libras) e as menores PTAs para a porcentagem de sólidos no leite (de -0,05% a -0,0003%) (P<0.05). Estes resultados sugerem a oferta de touros no mercado nacional que são capazes principalmente de aumentar a produção de leite. A raça Jersey apresentou um coeficiente de endogamia mais elevado (6,62%) que o da raça Holandesa (5,14%) (P<0.05). Embora a raça Holandesa tenha apresentado maiores PTAs para produção de leite e as menores PTAs para a porcentagem de sólidos no leite, a vida produtiva da raça Jersey apresentou-se mais longa (1,17 meses) (P<0.05) que a da raça Holandesa (0,40 meses). Houve uma importante variabilidade do material genético disponível, permitindo a escolha do sêmen mais adequado para cada sistema de produção. Faz-se necessário conhecer o perfil genético dos touros disponibilizados para inseminação artificial no Brasil, com vistas ao conhecimento e direcionamento do padrão genético dos bovinos leiteiros no país.

The Holstein and Jersey dairy cattle breeds are among the most prevalent in Brazil. To evaluate differences among the PTAs (predicted transmitting abilities) of these breeds and their lines, data were collected on 385 Holstein bulls and 82 Jersey sires with semen commercially available from nine Brazilian companies. Three different sire lines for each breed were found. The general linear models method was used for the comparison among lines and between breeds. The two most prevalent lines of Holstein breed presented higher average PTAs for milk yield (1,061.04 pounds and 975.32 pounds) and lower PTAs for percentage of milk solids (from -0.05% to -0.0003%) (P<0.05). These results indicate the supply of sires that mostly increase the milk yield in the Brazilian market. The Jersey breed presented a higher inbreeding coefficient (6.62%) than the Holstein breed (5.14%) (P<0.05). Although the Holstein breed presented higher PTAs for milk yield and lower PTAs for percentage of milk solids (P<0.05), the productive life of the Jersey breed (1.17 months) was longer than it was in the Holstein breed (0.40 months) (P<0.05). We identified the existence of an important variability of the available genetic profiles, what allows the Brazilian producers to choose the most adequate semen for their production system. It is necessary to consider the genetic profiles of sires' lines offered for artificial insemination in Brazil to understand and direct the genetic pattern of Brazilian dairy cattle.

Broiler meat quality is one of the primary factors considered by the poultry industry. This study was conducted to estimate heritability and genetic correlation coefficients for meat quality traits in a single male broiler line. The meat ultimate pH (24 h after slaughter) and lightness presented the highest heritability estimates. Given the estimated genetic correlations, the pH measured at 15 min and 24 h after slaughtering, as well as lightness, were characterized by a close and negative genetic relationship with water holding capacity traits. In contrast, meat quality traits exhibited only non-significant genetic correlations with performance and carcass traits. Noticed exceptions were breast weight, which was genetically and favorably associated with the initial pH and thawing-cooking losses, and ultrasound record of pectoral muscle depth, which was genetically and unfavourably associated with the shear force of meat. Meat pH values at 24 h after slaughtering or lightness may be a favorable selection criterion for the poultry industry for improving meat quality, since these traits are associated with the water holding capacity of the meat. Out of the traits studied, lightness is most easily assessed on the industrial slaughtering line. The direct selection for breast weight could improve the initial pH and thawing-cooking losses of meat, even as selection for ultrasound records of Pectoralis major may affect the meat tenderness in this line

O objetivo desta pesquisa foi estimar as correlações fenotípicas entre as características de qualidade de carne de uma linhagem macho de frangos de corte. Para tanto, foram determinadas as correlações fenotípicas entre essas características, isolando-se os efeitos de data de abate, idade da mãe e sexo. As características avaliadas foram: medidas de pH inicial, em 6 e em 24 horas após o abate, parâmetros de cor, perdas por exsudação, descongelamento e cozimento da carne e força de cisalhamento. A maioria das associações obtidas foi de intensidade fraca a moderada, porém significativa, com magnitude variando entre -0,35 e 0,28. O pH inicial da carne não esteve associado de modo importante com as outras características de qualidade de carne (P>0,05), enquanto o pH em 24 horas após o abate interferiu diretamente nos atributos da carne (P<0,01), estando inversamente relacionado com o teor de luminosidade e as perdas de água da carne, indicando um efeito da queda do pH ao longo das 24 horas após o abate na desnaturação protéica. Comprovou-se a existência da relação entre as variáveis de qualidade de carne em aves, havendo associação fenotípica entre o teor de luminosidade e as perdas por cozimento e as demais características avaliadas. Dessa forma, o pH em 24 horas após o abate, o teor de luminosidade e as perdas por cozimento da carne podem ser indicadores eficientes da qualidade da carne na linhagem estudada.

The goals of this research were to estimate the phenotypic correlations among various meat quality traits from a male broiler line and to describe the relation among these variables. Phenotypical correlations were determined among quality traits, isolating the effects of slaughter date, the age of the mother and sex. The evaluated traits were pH measurements taken at time 0 and at 6 and 24 hours after slaughtering, color parameters, water loss due to exudation, thawing and cooking of the meat, and shear force. Important associations (P<0.01) were found to be significant and, in most cases, weak or moderate, varying from -0.35 to 0.28. The initial pH of the meat was not associated (P>0.05) to the other traits of the meat, whereas the pH at 24 hours after slaughter was able of directly interfering with the attributes of the meat, since this trait was inversely related with lightness and water losses, which indicates an effect of pH fall along 24h after slaughtering on protein denaturation. This study demonstrates that the variables of poultry meat quality are related and that there is a phenotypical association between lightness and cooking losses and the other attributes of the meat. The pH at 24 hours after slaughtering, lightness and cooking losses could be efficient meat quality indicators in this broiler line.

O peso do peito possui grande importância econômica na indústria de frangos, podendo estar associado a outras variáveis passíveis de seleção. Estimaram-se correlações fenotípicas entre características de desempenho (peso vivo aos 7, 28 dias e ao abate e profundidade de músculo peitoral por ultra-sonografia), carcaça (peso eviscerado e de pernas) e composição corporal (peso do coração, do fígado e da gordura abdominal), em uma linhagem de frangos, e quantificou-se a influência direta e indireta destas variáveis sobre o peso do peito. Para tanto, utilizou-se a análise de trilha, desdobrando-se a matriz de correlações parciais em coeficientes que forneceram a influência direta de uma variável sobre a outra, independentemente das demais. A manutenção das variáveis peso vivo ao abate e peso eviscerado na matriz de correlações pode ser prejudicial à análise estatística que envolve os sistemas de equações normais, como a análise de trilha, devido à multicolinearidade observada. O peso vivo ao abate e a profundidade do músculo peitoral por ultra-sonografia apresentaram efeitos diretos importantes sobre o peso de peito e foram identificadas como as principais responsáveis pela magnitude dos coeficientes de correlação obtidos. Assim, uma pré-seleção individual para estas características pode favorecer um aumento no peso de peito nesta linhagem, se mantidas as condições ambientais de criação dos frangos, uma vez que o peso vivo ao abate e a profundidade de músculo peitoral por ultra-sonografia afetam fenotipicamente e diretamente o peso de peito.

Breast weight has great economic importance in poultry industry, and may be associated with other variables. This work aimed to estimate phenotypic correlations between performance (live body weight at 7 and 28 days, and at slaughter, and depth of the breast muscle measured by ultrasonography), carcass (eviscerated body weight and leg weight) and body composition (heart, liver and abdominal fat weight) traits in a broiler line, and quantify the direct and indirect influence of these traits on breast weight. Path analysis was used by expanding the matrix of partial correlation in coefficients which give the direct influence of one trait on another, regardless the effect of the other traits. The simultaneous maintenance of live body weight at slaughter and eviscerated body weight in the matrix of correlations might be harmful for statistical analysis involving systems of normal equations, like path analysis, due to the observed multicollinearity. The live body weight at slaughter and the depth of the breast muscle as measured by ultrasonography directly affected breast weight and were identified as the most responsible factors for the magnitude of the correlation coefficients obtained between the studied traits and breast weight. Individual pre-selection for these traits could favor an increased breast weight in the future reproducer candidates of this line if the broilers' environmental conditions and housing are maintained, since the live body weight at slaughter and the depth of breast muscle measured by ultrasonography were directly related to breast weight.

Os parâmetros genéticos são ferramentas importantes para se conhecer melhor as características utilizadas nos programas de melhoramento genético e para a avaliação do plano de seleção empregado, permitindo o direcionamento das estratégias a serem aplicadas. As características de desempenho e de carcaça vêm sendo utilizadas como critério durante a seleção genética dos frangos, a exemplo do peso vivo, do peso de peito e da conversão alimentar. Entretanto, algumas características de composição corporal vêm trazendo entraves para a produção e a indústria avícolas, especialmente o peso da gordura e o peso do coração. Assim, nesta revisão, são abordados os principais aspectos relacionados aos parâmetros genéticos das características de desempenho, de carcaça e de composição corporal em frangos com o objetivo de proporcionar um melhor entendimento das conseqüências trazidas pelos esquemas de seleção empregados e suas implicações na cadeia produtiva destes animais.

Genetic parameters are important tools to know better the traits used in animal breeding programs and for assessment of the employed selection plan. Then, these parameters allow the establishment of strategies to be used in these programs. The performance and carcass traits are being used as criteria during broiler genetic selection, as body weight, breast weight and feeding conversion ratio. However, some of the body composition traits represent obstacles for avian production and processing, especially fat content and heart weight. Thus, in this review, the main aspects related to genetic parameters of these traits in broiler are addressed to provide a better understanding of the consequences brought from selection schemes employed and its involvement on the avian production.

O estudo dos parâmetros genéticos das características de qualidade de carne de aves permite à industria avícola se adequar às exigências da indústria processadora, aumentando sua eficiência, e melhorando a aceitação da carne de frango pelo mercado consumidor. Além disso, por meio do estudo destes parâmetros, valiosas informações sobre a caracterização do fenômeno denominado PSE, que representa a carne pálida, flácida e exsudativa, podem ser obtidas, uma vez que são escassos os estudos a esse respeito em frangos. O conhecimento do comportamento genético e da relação entre os atributos da carne e outras características de interesse em frangos de corte pode favorecer o estabelecimento mais preciso e adequado das estratégias utilizadas nos programas de seleção.

The study of genetic parameters of broiler meat quality traits allows the poultry industry to adjust itself to processing industry exigencies, increasing its efficiency, and to the consumers’ demands, improving the acceptance of broiler meat. Moreover, through the study of these parameters, valuable information about the characterization of PSE phenomenon in broiler can be obtained, since studies about this topic are scarce. The knowledge about the genetic behavior and the relation among quality attributes and other interesting traits in broiler can support an accurate and an adequate establishment of the strategies used in breeding programs.
