RESUMO A produção artesanal de queijos envolve uma tradição secular no estado de Minas Gerais, no Brasil, exercendo importante papel histórico e social. Objetivou-se, com este estudo, avaliar as características de queijos minas artesanal de sete regiões certificadas para sua produção em relação à sua composição físico-química e centesimal, a fim de se identificarem parâmetros que sejam úteis para diferenciá-los. A composição físico-química e centesimal revelou diferença entre os queijos das diferentes regiões para as variáveis nitrogênio solúvel, índices de extensão e profundidade de maturação, cinzas, oxidação, gordura e pH. Os maiores valores para os índices de extensão e profundidade de maturação foram observados na região do Cerrado. Os queijos da região da Canastra se mostraram diferentes daqueles das demais regiões em razão do maior teor de umidade, assim como os queijos de Campo das Vertentes, que apresentaram maiores valores de pH e compostos nitrogenados. Apesar das semelhanças entre os queijos em cada região, esses apresentaram posicionamentos dispersos na análise de componentes principais. Existem diferenças na composição físico-química e centesimal entre os queijos minas artesanais oriundos das distintas regiões em Minas Gerais, e os parâmetros analisados podem ser utilizados para diferenciá-los. Os teores de cinzas, gordura, índice de oxidação, teores de nitrogênio solúvel e pH foram os parâmetros que estiveram associados a maiores diferenças dos queijos conforme sua região de origem. ABSTRACT Artisanal cheese production involves a centuries-old tradition in the state of Minas Gerais in Brazil, playing an important historical and social role. The aim of this study was to evaluate the characteristics of artisanal Minas cheeses from seven regions certified for their production in relation to their physical-chemical and centesimal composition to identify parameters that are useful to differentiate them. There were differences among the cheeses from different regions for the soluble nitrogen variables, extension and depth of ripening indexes, ash, oxidation, fat and pH. The highest values for the ripening length and depth index were observed in the Cerrado region. The cheeses from the Canastra region were different due to the higher moisture content, and the cheeses from Campo das Vertentes presented higher pH and nitrogen compound values. Despite the similarities among cheeses in each region, they had dispersed positions in the principal components analysis. RESUMO Objetivou-se avaliar a influência da suplementação com minerais biocomplexados sobre a qualidade da carne de frangos da linhagem Label Rouge, de ambos os sexos, criados em sistema alternativo. O delineamento experimental foi inteiramente ao acaso (DIC), disposto em esquema fatorial (3x2), sendo três dietas (controle; 0,50ppm de selênio; 0,40ppm de cromo) e dois sexos. Para a estabilidade lipídica, foi utilizado o DIC, disposto em esquema fatorial (3x2x2), sendo três dietas, dois sexos e dois tempos de armazenamento (zero e 12 meses). Os parâmetros avaliados no peito e na coxa foram: pH final, cor (L* - luminosidade, a* - índice de vermelho, b* - índice de amarelo, C* - índice de saturação e h* - ângulo de tonalidade), perda de peso por cozimento (PPC), força de cisalhamento (FC) e estabilidade lipídica. Além disso, foram avaliadas a proporção das formas químicas da mioglobina da coxa e a quantificação do conteúdo de selênio no peito. Não houve efeito isolado da dieta sobre os parâmetros físicos e químicos do peito e da coxa e sobre a concentração de selênio no peito. As fêmeas apresentaram médias superiores de L* (57,57), b* (10,55) e C* (10,60) do peito; e os machos de L* (55,09) da coxa. Entre os machos, as aves alimentadas com a dieta controle e com cromo expressaram valores superiores de FC da coxa em relação às suplementadas com selênio; para o tratamento com cromo, os machos apresentaram média superior de FC da coxa e, em contrapartida, para o tratamento com selênio, as fêmeas manifestaram a maior média. As amostras submetidas ao período de 12 meses de armazenamento mostraram maiores valores de substâncias reativas ao ácido tiobarbitúrico (TBARS) em ambos os cortes. A suplementação com cromo e selênio biocomplexados não provocou alterações na qualidade da carne; as fêmeas demonstraram melhores atributos de qualidade da carne.

ABSTRACT The objective of the present study was to evaluate the influence of the supplementation with biocomplexed minerals on the quality of the meat of label Rouge lineage chicken, of both genders, reared in an alternative system. The experimental design was completely randomized (CRD) in a factorial scheme (3x2), with three diets (control; 0.50ppm of selenium; 0.40ppm of chromium) and two genders. For lipid stability, the CRD arranged in a factorial scheme (3x2x2) was used, being three diets, two genders and two storage times (0 and 12 months). The parameters evaluated in the breast and in the thigh were: final pH, color (L* - luminosity, a* - red index, b* - yellow index, C* - saturation index and h* - tonality angle), weight loss per cooking (WLC), shear force (SF) and lipid stability. In addition, we evaluated the proportion of chemical forms of myoglobin of the thigh and the quantification of selenium content in the breast. There was no isolated effect of diet on the physical and chemical parameters of the breast and thigh and selenium concentration in the breast. Females had higher mean values of L* (57.57), b* (10.55) and C* (10.60) of the breast; and males of L* (55.09) of the thigh. Among males, poultry fed with the control diet and chromium showed higher SF values of the thigh than those supplemented with selenium; for the treatment with chromium, the males presented superior average of SF of the thigh and, in contrast, for the treatment with selenium, the females had the highest average. Samples submitted to the period of 12-month of storage showed higher values of substances reactive to thiobarbituric acid (TBARS) in both cuts. Supplementation with biocomplexed chromium and selenium did not cause changes in meat quality; females presented better attributes of meat quality.

RESUMO Objetivou-se, com este estudo, verificar a influência da suplementação com diferentes associações entre minerais orgânicos sobre o desempenho e as características de carcaça, bem como avaliar sua viabilidade econômica, para suínos em terminação. Foram utilizados 88 machos castrados, divididos entre quatro tratamentos: controle com dieta basal e suplementação com CrFe, MgSe e CrFeMgSe, durante os 28 dias que antecederam o abate. O delineamento experimental foi em blocos ao acaso, com parcela experimental representada por dois animais. Os animais suplementados com CrFeMgSe apresentaram piores índices de peso final, ganho de peso diário e consumo durante todo o período, com consequente redução no peso de carcaça, menor profundidade de lombo, área de olho-de-lombo e menor quantidade de carne magra na carcaça. Houve um aumento no custo da dieta para os grupos CrFe, MgSe e CrFeMgSe, respectivamente. O uso de cromo mais ferro e magnésio mais selênio, associados dois a dois, não altera os parâmetros de desempenho e as características de carcaça. A associação dos quatro minerais, no entanto, promove piora nessas características e aumenta o custo da dieta.

ABSTRACT This study aimed to verify the influence of supplementation with different associations between organic minerals on performance, carcass characteristics and economic viability for finishing swine. 88 castrated males were divided in four treatments: control with basal diet and supplementation with CrFe, MgSe and CrFeMgSe during the 28 days prior to slaughter. The experimental design was randomized blocks with an experimental plot represented by two animals. The animals supplemented with CrFeMgSe had worse final weight, daily weight gain and consumption throughout the period, with consequent reduction in carcass weight, lower loin depth, loin eye area and amount of lean meat. There was an increase in the effective operational cost of diet with CrFe, MgSe and CrFeMgSe groups, respectively. The use of chromium plus iron and magnesium plus selenium, associated two by two, did not alter the performance parameters and carcass. However, the four minerals association promote a worsening in these characteristics and increase the cost of production.

RESUMO Objetivou-se avaliar o perfil lipídico da carne de frangos de diferentes genótipos. O delineamento foi inteiramente ao acaso (DIC), disposto em esquema fatorial (5x2), sendo cinco genótipos (New Hampshire ˗ NHS; Gigante Negra de Jersey ˗ GNJ; Índio Gigante ˗ IG; cruzamento entre as raças IG e NHS ˗ IG x NHS; e entre as raças IG e GNJ ˗ IG x GNJ) e dois sexos, com cinco repetições, sendo cada uma representada por três aves, totalizando 150 aves, abatidas aos 105 dias. As análises de perfil lipídico foram realizadas no peito e na coxa. Foram calculadas as estimativas das atividades enzimáticas, os índices de aterogenicidade e de trombogenicidade. Os genótipos IG e IG x NHS apresentaram maiores teores de ácido araquidônico e DHA. Foram observados maiores teores de ácidos graxos saturados e monoinsaturados no peito para os genótipos IG x NHS e NHS, respectivamente. Maiores médias de ácidos graxos poli-insaturados e ômega 3 foram observadas para os genótipos IG e IG x NHS. O genótipo IG x NHS e as fêmeas apresentaram melhores características de qualidade de carne, por oferecerem uma maior fonte de ômega 3.

ABSTRACT The objective was to evaluate the lipid profile of chickens from different genotypes. The design was completely randomized arranged in factorial scheme (5x2), being 5 genotypes (New Hampshire - NHS, Gigante Negra de Jersey - GNJ, Índio Gigante - IG; poultry from the cross between IG and NHS breeds - IG x NHS and between IG and GNJ breeds - IG x GNJ) and two genders, with five replicates and three poultry per replicate, totaling 150 birds, slaughtered at 105 days. Lipid profile analyzes were performed on the breast and thigh. Estimates of the enzymatic activities related to lipid metabolism were calculated, in addition to the atherogenicity and thrombogenicity indexes. The IG and IG x NHS genotypes showed higher levels of arachidonic acid and DHA. Higher levels of saturated and monounsaturated fatty acids were observed in the breast for IG x NHS and NHS genotypes, respectively. Higher averages of polyunsaturated fatty acids and omega 3 were observed for the IG and IG x NHS genotypes. The genotype IG x NHS and the females presented better characteristics of meat quality, for offering a greater source of omega 3.

RESUMO O presente estudo teve o objetivo de avaliar a ocorrência de polimorfismos nos genes Diacilglicerol aciltransferase (DGTA1 e 2), Ácido graxo sintase (FASN), Estearoil-CoA dessaturase (SCD) e o Domínio da tioesterase do gene FASN (TE-FASN), que possam estar relacionados ao perfil lipídico. No experimento, foram utilizados um total de 84 ovinos de diferentes grupos genéticos. Para avaliação do polimorfismo dos genes, foi utilizada a técnica de polimorfismo de conformação de cadeia simples (PCR-SSCP) e posterior sequenciamento. No gene DGAT-2, foram identificados quatro genótipos com a presença de seis polimorfismos, com dois (c.229T>C; c.255T>C) que resultaram na troca da fenilalanina por leucina. No gene FASN, foram identificados dois genótipos. No gene TE-FASN, foram identificados três genótipos e 17 polimorfismos. Os genes DGAT-1 e SCD não revelaram a ocorrência de polimorfismo. Houve diferença em relação aos ácidos graxos C14:0, C18:0 e ∆9-desaturaseC18 para o gene DGAT-2 e de C18:2ω6t para TE-FASN. Houve diferença entre os grupos genéticos para C10:0, C12:0, C17:0, C18:2ω6t, C18:3ω3, C20:2, total de ω3, ω3/ω6 e índice de aterogenicidade. Há ocorrência de polimorfismo dos genes DGAT-2 e TE-FASN, e estes devem ser mais estudados em ovinos, pois revelaram influência dos genótipos sobre o perfil de ácidos graxos.

ABSTRACT The present study aimed to evaluate the occurrence of polymorphisms in Diacylglycerol acyltransferase (DGTA-1 and 2), Fatty acid synthase (FASN), Stearoyl-CoA desaturase (SCD) genes and the Thioesterase domain of FASN (TE-FASN) gene that may be related to the lipid profile. In the experiment, a total of 84 sheep from different genetic groups were used. For the evaluation of the polymorphism of the genes, PCR-Single Strand Conformation Polymorphism (SSCP) technique and subsequent sequencing were used. In DGAT-2 gene, four genotypes were identified with the presence of 6 polymorphisms, with two (c.229T> C; c.255T> C) that resulted into the exchange of phenylalanine by leucine. In FASN gene, two genotypes were identified. In TE-FASN gene, three genotypes and 17 polymorphisms were identified. DGAT-1 and SCD genes did not reveal the occurrence of polymorphism. There was difference in relation to C14: 0, C18: 0 fatty acids and Δ9-desaturase C18 for DGAT-2 gene and of C18: 2ω6t for TE-FASN. There were differences among the genetic groups for C10: 0, C12: 0, C17: 0, C18: 2ω6t, C18: 3ω3, C20: 2, total of ω3, ω3/ω6 and atherogenicity index. There is occurrence of polymorphism of DGAT-2 and TE-FASN genes and these should be further studied in sheep since they revealed influence of the genotypes on the fatty acid profile.

RESUMO Objetivou-se avaliar os efeitos de sexo e de diferentes genótipos de frangos sobre os parâmetros físico-químicos e a composição centesimal, relacionados à qualidade da carne. O delineamento foi inteiramente ao acaso, disposto em esquema fatorial (5x2), sendo cinco genótipos (Índio Gigante - IG; New Hampshire - NHS; Gigante Negra de Jersey - GNJ; aves oriundas do cruzamento entre as raças IG e NHS - IG x NHS; e entre as raças IG e GNJ - IG x GNJ) e dois sexos, com cinco repetições, sendo cada uma representada por três aves, totalizando 150 animais, abatidos aos 105 dias. Os parâmetros avaliados no peito e na coxa foram: composição centesimal (umidade, extrato etéreo - EE, proteína e cinzas), pH final, cor (L*- luminosidade, a*- teor de vermelho, b*- teor de amarelo, C*- índice de croma e h*- ângulo de tonalidade), perda de peso por cozimento (PPC) e força de cisalhamento (FC). O genótipo IG apresentou a maior média de pH final do peito (6,03). Os genótipos NHS e IG x NHS apresentaram, respectivamente, médias elevadas de L* (58,93) e a* (1,92) do peito. Os IG, IG x NHS e IG x GNJ apresentaram os maiores valores de b* do peito (12,53, 13,37 e 12,69, respectivamente). As aves IG apresentaram médias elevadas de FC do peito e da coxa (4,79 e 5,01Kgf, respectivamente). Os genótipos IG x NHS e IG x GNJ apresentaram os menores valores de pH final da coxa (6,13 e 6,02, respectivamente). O genótipo IG x GNJ apresentou média elevada de b* da coxa (14,94), e o NHS média elevada de PPC (24,65%). As fêmeas apresentaram maiores médias de EE no peito e de cinzas na coxa (1,03 e 1,11%, respectivamente). As aves IG x NHS e IG x GNJ apresentaram maiores médias de EE do peito (1,21 e 1,38%, respectivamente). As aves da raça IG e as oriundas de seu cruzamento com NHS e GNJ apresentaram características de qualidade de carne mais desejáveis pelo consumidor em relação aos parâmetros físico-químicos e de composição centesimal, enquanto o sexo não revelou influência sobre esses aspectos.

ABSTRACT The purpose was to evaluate the effects of gender and of different genotypes of chickens on the physicochemical parameters and centesimal composition, related to the quality of meat. The design was completely randomized arranged in 5x2 factorial scheme, five genotypes (Índio Gigante - IG; New Hampshire - NHS; Gigante Negra de Jersey - GNJ; poultry from the crossing between the IG and NHS breeds - IG x NHS; and between the IG and GNJ breeds - IG x GNJ) and two genders, with five repetitions and each one represented by three poultry, totaling 150 animals, slaughtered at 105 days. The parameters evaluated on the breast and thigh were: centesimal composition (moisture, ether extract - EE, protein and ash), ultimate pH, color (L*- luminosity, a*- redness, b* -yellowness, C* - chroma index and h* - hue angle), weight loss by cooking (WLC) and shear force (SF). The IG genotype had the highest average of ultimate pH of the breast (6.03). The NHS and IG x NHS genotypes showed, respectively, higher average of L * (58.93) and a* (1.92) of the breast. The IG, IG x NHS and IG x GNJ showed the highest values of b* of the breast (12.53, 13.37 and 12.69, respectively). The IG poultry showed high average of SF of the breast and thigh (4.79 and 5.01kgf, respectively). The IG x NHS and IG x GNJ genotypes showed the lowest ultimate pH values of the thigh (6.13 and 6.02, respectively). The IG x GNJ genotype showed a high average of b* of the thigh (14.94) and the NHS had a high average of WCL (24.65%). The females showed higher averages of EE on the breast and ash on the thigh (1.03 and 1.11%, respectively). The IG x NHS and IG x GNJ poultry showed higher averages of EE of the breast (1.21 and 1.38 %, respectively). The poultry of IG breed and those from the crossing with NHS and GNJ presented meat quality characteristics more desirable by the consumer in relation to physicochemical parameters and centesimal composition, while genders showed no influence on these aspects.

O objetivo deste trabalho foi avaliar os efeitos do fornecimento de diferentes níveis de glicerina na alimentação sobre o perfil lipídico e colesterol da carne de suínos em terminação. O delineamento experimental foi organizado inteiramente ao acaso (DIC), com fatorial 5x2, sendo: cinco níveis de glicerina na dieta e dois sexos. Foram utilizados 60 suínos da genética Topigs (30 machos castrados e 30 fêmeas), apresentando peso médio inicial de 79,3+4,0kg, e foram terminados com peso de 106,2+4,5kg. Os níveis de glicerina utilizados foram de 0, 50, 100, 150 e 200g/kg na matéria natural. As análises de perfil lipídico e de colesterol foram realizadas nos músculos longissimus dorsi (lombo) e semimembranosus (pernil) do lado esquerdo das carcaças. Ocorreu interação entre os níveis de glicerina bruta na dieta e a categoria sexual para o perfil de ácidos graxos e colesterol. A carne dos machos castrados apresentou no lombo maiores médias de C16:0, C16:1, C20:3ω3, C18:1ω9c, Total de ácidos graxos Saturados (SFA) e Monoinsaturados (MUFA). No pernil, maiores médias foram verificadas para os ácidos graxos C18:1ω9c, MUFA, atividade da ∆9-desaturaseC18 e ElongaseC16-C18 em machos castrados. A carne das fêmeas suínas apresentou maiores proporções de ácidos graxos poli-insaturados e da série ω6 para ambos os cortes. A quantidade de colesterol na carne das fêmeas suínas apresentou aumento em função do nível de glicerina na dieta. A carne dos machos castrados apresentou maiores índices de aterogenicidade que das fêmeas. Os níveis de glicerina alteraram o perfil lipídico e teor de colesterol em função da categoria sexual, promovendo efeito diferenciado no lombo e pernil.

The aim of this work was to evaluate the effects of adding different levels of glycerin in the feeding on the lipid profile and cholesterol of the meat of finishing pigs. The experiment was arranged in a completely randomized design (CRD) with factorial 5x2, being five levels of glycerin in the diet and two genders. Sixty (60) swine of the Topigs genetics (30 barrows and 30 gilts) were used; they presented initial average weight of 79.3+4.0kg and were finished with the weight of 106.2+4.5kg. The levels of glycerin utilized were 0, 50, 100, 150 and 200g/kg in the natural matter. The analyses of lipid and cholesterol profile were conducted in the muscles longissimus dorsi(loin) andsemimembranosus (ham) on the left side of the carcasses. Interaction occurred between the levels of crude glycerin in the diet and the sexual category for the profile of fatty acids and cholesterol. On the loin the meat of the barrows presented higher means of C16:0, C16:1, C20:3ω3, C18:1ω9c, Total of saturated (SFA) and monounsaturated (MUFA) fatty acids. On the ham, increased means were found for the fatty acids C18:1ω9c, MUFA, activity of ∆9-desaturaseC18 and ElongaseC16-18in barrows. The sows' meat presented higher proportions of polyunsaturated fatty acids and of the series ω6 for both the cuts. The amount of cholesterol in the sows' meat presented increase according to the level of glycerin in the meat. The barrows' meat presented indices of atherogenicity greater than the gilts. The levels of glycerin altered the lipid profile and cholesterol content according to the sexual category, promoting a distinct effect on the loin and ham.

Este trabalho objetivou identificar os atributos que influenciam a tomada de decisão para a compra de carne bovina, além do conhecimento e atitude dos consumidores em adquirir carne com certificação de origem, assim como os principais benefícios e dificuldades para a comercialização desse produto. Foram entrevistados 197 consumidores e nove gerentes de supermercados no Distrito Federal, em maio de 2011. Foi realizada a descrição das variáveis e aplicados o teste do qui-quadrado e o Exacto de Fischer, utilizando o pacote estatístico SPSS 17.0. A aparência visual da carne é o atributo que mais influencia a decisão de compra dos consumidores. A maioria dos entrevistados está disposta a pagar mais pela carne com certificação de origem. Esta pesquisa sugere que a escolaridade é o fator que mais influencia a disposição para compra de carne com certificação de origem. Os gerentes de supermercados salientam a fidelização de clientes mais exigentes como o maior benefício, e a falta de divulgação da rastreabilidade bovina para a população como a principal dificuldade para a comercialização.

This work evaluated different forms of processing of cassava peel for use in sheep feeding and its effects upon composition, meat quality, lipid profile and rumen morphometrics. A total of 20 weaned Santa Ines male sheeps, with initial weight 19.02±0.21 kg, were used. The factorial scheme utilized was a completely randomized design, with 4 treatments (A: supplement with dehydrated cassava peel ground, using a 12 mm sieve; B: supplement with dehydrated cassava peel ground using a 5 mm sieve; C: supplement with ensiled cassava peel; D: supplement with hydrolyzed cassava peel). Each animal was considered a replication, with 5 replications per treatment. The animals were reared in semiextensive system, on Brachiaria decumbens pasture. Treatments were supplied as supplement at proportion of 1.5 % of live weight (ratio roughage: concentrate of 62.5:37.5 %), amounts of food were adjusted, every week, according to the animals' weight. The experiment lasted 84 days, including 14 days for adaptation to the diets. Animals were slaughtered at 30.72±1.46 kg final weight; after slaughter and cooling (24 hours at ±2 ºC), samples of Longissimus lumborum muscle were collected to carry out the physicochemical analyses, and establish lipid profile. There were no significant differences for ashes, moisture and protein. The animals fed supplement with hydrolyzed cassava peel, presented higher values for ether extract. The fatty acid profile was not affected by processing type of cassava peels. The histological evaluation revealed alteration in the rumen epithelium and area of the omasal lamina, with higher values for coarsely ground cassava peel supplement. No influence of the supplements was found for physicochemical composition. The different supplements were not enough to alter the meat quality parameters, however, hydrolyzed cassava peel brought about increased accumulation of lipids in the muscle.

Objetivou-se com este trabalho, avaliar diferentes formas de processamento da casca de mandioca para uso na alimentação de ovinos e seus efeitos sobre a composição centesimal, qualidade de carne, perfil lipídico e morfometria ruminal. Para o experimento foram utilizados um total de 20 ovinos machos da raça Santa Inês desmamados com peso inicial 19,02±0,21 kg. O esquema fatorial utilizado foi um DIC (delineamento inteiramente casualizado), sendo 4 tratamentos (tratamento A: suplemento com casca de mandioca desidratada triturada em moinho com peneira de 12 mm; tratamento B: suplemento com casca de mandioca desidratada triturada em moinho com peneira de 5 mm; tratamento C: suplemento com casca de mandioca ensilada; tratamento D: suplemento com casca de mandioca hidrolisada), cada animal foi considerado uma repetição, totalizando 5 repetições por tratamento. Os animais foram criados em sistema semiextensivo, em pastagem de Brachiaria decumbens e o fornecimento dos tratamentos na forma de suplemento na proporção de 1,5 % do peso vivo (relação volumoso:concen-trado de 62,5:37,5 %), sendo a quantidade corrigida semanalmente em função do peso dos animais. O experimento teve duração de 84 dias, incluindo o período de 14 dias de adaptação às dietas e os animais foram abatidos com peso final de 30,72±1,46 kg, sendo coletado após abate e resfriamiento (24 horas a ±2 ºC), amostras do músculo Longissimus lumborum para realizacao das análises físico-químicas e do perfil lipídico. Os resultados mostraram que não houve diferenca significativa para as cinzas, umidade e proteína. Os animais que receberam suplemento com casca de mandioca hidrolisada apresentaram maiores valores de extrato etéreo. Não foi verificado modificacao do perfil de ácidos graxos em virtude do processamento da casca de mandioca. A avaliacao histológica revelou alteracao no epitélio do rúmen e área da lamina do omaso, com maiores valores no suplemento com uso da casca de mandioca moída grosseiramente. Para as variáveis da composicao físico-químicas não foram verificadas influéncia dos suplementos. Os diferentes suplementos não foram suficientes para alterar os parametros de qualidade de carne, entretanto, a casca de mandioca hidrolisada ocasionou maior acúmulo de lipídeos no músculo.

O objetivo deste trabalho foi avaliar os efeitos do fornecimento de diferentes níveis de glicerina na alimentação sobre a qualidade da carne de suínos em terminação. Foram utilizados 30 machos castrados e 30 fêmeas que apresentaram peso inicial de 79,3±4,0kg. Utilizou-se delineamento em blocos casualizados (peso inicial) em esquema fatorial 2 × 4 + 2, sendo duas categorias sexuais (macho castrado e fêmea), quatro níveis de glicerina bruta (50, 100, 150 e 200g/kg) e dois grupos controle (macho castrado e fêmea alimentados com dieta sem glicerina), totalizando dez tratamentos com seis repetições e a unidade experimental representada por um animal. Após o abate, foram realizadas as análises físico-químicas e centesimais dos músculos Longissimus dorsi (lombo) e Semimembranosus (pernil) do lado esquerdo das carcaças. Os resultados mostraram interação entre os níveis de glicerina e sexo para a intensidade de vermelho e cinzas no pernil. Observou-se que, nos corte do lombo, o pH final dos machos castrados foi maior do que o das fêmeas suínas. Os resultados indicaram que suínos machos castrados apresentaram maior teor de extrato etéreo no pernil e no lombo quando comparados às fêmeas. No pernil, o teor de cinzas das fêmeas suínas foi superior ao dos machos castrados. Entretanto, no lombo, não se verificou influência dos níveis de glicerina sobre a composição centesimal. Contudo, apesar de o uso da glicerina ter ocasionado modificação na cor vermelha e teor de cinzas no pernil de machos castrados, de forma geral não provocou mudanças relevantes sobre as características físico-químicas e centesimais da carne de suínos, podendo ser utilizada até o nível de 200g/kg na alimentação desses animais.

The objective of this study was to evaluate the effects of providing different levels of glycerin in the diet on meat quality of finishing pigs. 30 barrow and 30 female pigs were used, with initial weight of 79.3±4.0kg. A randomized block design was used (initial weight) in a factorial 2 x 4 + 2, being two sex categories (barrow and female), four levels of crude glycerin (50, 100, 150 and 200g/kg) and two control groups (barrow and female fed diet without glycerin), in a total of ten treatments with six replications and the experimental unit represented by an animal. After slaughter were carried out the physico-chemical and centesimal analysis of Longissimus dorsi (loin) and Semimembranosus (ham) on the left side of the carcasses. The results showed interaction between barrows and levels of glycerin to the redness and ash of the ham. It was observed that in the loin cut the final pH of the barrows was higher than the female pigs. The results indicate that barrows had higher ether extract content in the ham and loin compared to females. In the shank, the ash content of sows was higher than that of barrows. However, in the loin, there was no influence of the levels of glycerin on chemical composition. Nevertheless, despite the use of glycerin having caused changes in the red color and ash content in the leg of castrated males, in general it did not cause significant changes on the physico-chemical and centesimal characteristics of pork and can be used up to the level of 200g/kg in the feed of these animals.

Neste trabalho, foram avaliadas as características físico-químicas e de composição centesimal da carne de frangos machos de três linhagens utilizadas para criação semi-intensiva: Redbro Cou Nu - Vermelho de Pescoço Pelado (Pescoço Pelado); Redbro Plumé - Vermelho de Pescoço Emplumado (Pesadão) e Gris Barre Plumé (Carijó). Foram analisadas diferenças em relação à linhagem e à idade de abate (70, 85 e 110 dias). Na carne do peito, não foi verificado efeito de linhagem sobre os parâmetros de cor (L*, a* e b*) e pH final. Houve comportamento diferenciado para as aves em relação a qualidade da carne do peito, com menores valores de maciez para linhagem Pesadão e de Perda de Peso por Cozimento para linhagem Carijó. A linhagem Carijó apresentou, para a carne de peito aos 110 dias, os menores valores de umidade e as maiores médias de proteína. Os valores de proteina reduziram para linhagem Pescoço Pelado a partir de 85 dias. Na coxa, a partir de 110 dias, foi verificada redução dos valores de L* (luminosidade) e aumento das médias de a* (vermelho). Os valores de força de cisalhamento e extrato etéreo aumentaram para peito e coxa a partir dos 110 dias. As linhagens Pesadão e Pescoço Pelado apresentaram de forma geral, melhores aspectos físico-quimicos, que são os atributos de maior preferência pelo consumidor em função deste tipo de produto.

The objective of this work was to evaluate the physical and chemical characteristics and composition of meat from male broilers from three strains used for the semi-intensive development: Redbro cou nu - Red naked neck (Label Rouge); Redbro plume - Red neck feathered (Pesadão) and Gris Barre plume (Carijó). We analyzed differences in relation to genetic and slaughter age (70, 85 and 110 days). There was no effect of strain on the color parameters (L * a * b *) and final pH of breast meat. There was different behavior for broilers to quality of breast meat with lower tenderness values for strain Pesadão and Cooking Loss for a strain Carijó. The Carijó line presented the lowest humidity and the highest average protein values for breast meat at 110 days. The protein values reduced in the Label Rouge strain from 85 days forward. In the thigh, decreased levels of L* (brightness) and increase in the average a* (redness) was found from 110 days forward. The Shear Force and ethereal extract for breast and thigh increased from 110 days forward. Pesadão and Label Rouge strains generally presented better physical-chemical attributes, which are preferred by consumers due to this type of product.

O trabalho teve como objetivo analisar o efeito do uso alimentos alternativos como substitutos parciais na formulação das rações, avaliando as alterações características físico-químicas e de composição centesimal de frango caipira. No experimento foi utilizado um total de 192 (cento e noventa e duas) aves da linhagem Pescoço Pelado (Label Rouge), sendo organizado através de um Delineamento Inteiramente ao acaso (DIC) formado por 4 tratamentos (Tratamento1 (Controle), Tratamento 2 (10% de inclusão de Farelo de Arroz), Tratamento 3 (10% de inclusão da Folha da Mandioca Triturada) e Tratamento 4 (10% da inclusão de Feno de Leucena Triturado) com 8 repetições por tratamento. Os resultados revelaram maiores valores de b* (amarelo), Índice de Saturação (C*) e pH para carne de frango com inclusão da Folha de Mandioca e Leucena triturada, enquanto as demais variáveis de composição físico-química não foram verificado influência dos tratamentos. Para composição centesimal os tratamentos apresentaram maiores valores de umidade em relação ao tratamento controle. Para sexo, somente foi verificada diferença para o teor de b* e C*, com maiores valores para fêmea. O uso dos ingredientes alternativos não revelaram influências marcantes sobre a composição química e parâmetros de qualidade das carnes de frango caipira com o uso de substituição até 10% nas rações.

The work had the intention of investigating the effect of the use of alternative feeds as part replacers in diet-formulating, evaluating the characteristic physicochemical alterations and centesimal composition of the free-range chicken. In the experiment a total of 192 (one hundred and ninety-two) birds of the Pescoço Pelado (Label Rouge) strain arranged in a completely randomized design (CRD) formed by 4 treatments (Treatment 1 (Control), Treatment 2 (10% of the inclusion of rice bran), Treatment 3 (10% of the inclusion of ground cassava leaf) and Treatment 4 (10% of the inclusion of ground leucaena hay) with 8 replicates per treatment were used. The results revealed greater values of b* (yellow), Saturation (C*) and pH for broiler meat with inclusion of ground cassava leaf and leucaena, while for the other variables of physicochemical composition, no influences of the treatments were not found. For centesimal composition the treatments showed greater values of moisture in relation to the control treatment. For sex, only a difference for the content of b* and C* was found, with higher values for female. The use of the alternative feedstuffs has not revealed marked influences on the chemical composition and quality parameters of free-ranging chicken’s meat with the use of replacement up to 10% in the diets.

This survey was carried out in slaughter plants in the southern of the Espírito Santo State in order to study the causes and the percentages of liver condemnation during post mortem examination from 2008 to 2010. The main reasons for the condemnation of cattle livers in routine meat inspection of the State Inspection Service were fasciolosis (62.2%), telangiectatic (12.2%), bleeding (5.9%), abscess (5.2%), cysticercosis (4.0%), adherence (3.7%), infection (1.9%) and tuberculosis (1.1%). The hepatic fascioliasis was responsible for most of the lover condemnations, constituting a major challenge to livestock health in the south of the Espírito Santo.
