Objetivou-se avaliar o uso de óleo de aroeira-vermelha (OAV) e da suplementação de vitamina E (VitE) sobre a microbiota intestinal de frangos de corte. Utilizou-se 400 pintos de corte distribuídos em um delineamento inteiramente casualizado, em grupos de cinco tratamentos e cinco repetições: dieta sem antimicrobiano; dieta com antimicrobiano; dieta com 0,4% OAV; dieta com 200mg de VitE kg-1; dieta com 0,4% OAV e 200mg de VitE kg-1. A adição de OAV reduziu o peso relativo dos intestinos (P<0,05). Verificou-se que o controle negativo teve a menor contagem de bactérias do gênero Lactobacillus spp. em contraste com os demais grupos (P<0,05). Observou-se que o uso de OAV com ou sem adição de VitE reduziu significativamente a contagem de bactérias do gênero Staphylococcus spp e E. coli, quando comparado com o grupo não tratado com o promotor de crescimento (P<0,05). Para os Staphylococcus spp coagulase-positivos, verificou-se que a concentração inibitória mínima foi de 14,72-117,75mg mL-1 para amostras isoladas de frangos de corte tratados com OAV + VitE, enquanto que para tratados com ou sem promotor de crescimento foi de 117,75 e de 29,44-235,5mg mL-1. Concluiu-se que a inclusão de OAV resultou em modulação da microbiota intestinal.

The aim was to evaluate the supplementation of pink pepper oil (PPO) and vitamin E on the intestinal microbiota of broiler chickens. A total of 400 day-old male chicks distributed in a randomized design in groups of five treatments and five replicates: diet without antimicrobial; diet with antimicrobial; diet with 0.4% PPO; diet with 200mg vitamin E kg-1; diet with 0.4% PPO and 200mg vitamin E kg-1 The supply of PPO in the diet reduced the relative weight of the intestines (P<0.05). It was verified that the negative control group had the lowest bacteria count of Lactobacillus in contrast to the other groups (P<0.05). It was also observed that the use of PPO with or without vitamin E supplementation significantly reduced the bacterial count of Staphylococcus spp and E. coli when compared with the untreated group with the growth promoter (P<0.05). For Staphylococcus spp. coagulase-positive, it was found that the minimum inhibitory concentration was 14,72-117,75mg mL-1 for isolates from broilers treated with PPO + vitamin E, while for treated with or without growth promoter was 117.75 and 29,44-235,5mg mL-1. It was concluded that the inclusion of PPO resulted in modulation of intestinal microbiota.

A microbiota contaminante de repolho minimamente processado foi avaliada durante as etapas de sanitização e estocagem sob atmosfera modificada passiva em embalagens com diferentes taxas de permeabilidade a O2 e CO2 e a 1ºC, 5ºC e 12ºC. A sanitização do repolho por 10min., à temperatura ambiente, em soluções sanitizantes de hipoclorito de sódio a 200mgL-1, de composto orgânico clorado a 200mgL-1 ou ácido acético a 1% reduziu em, no máximo, 1,8log10 UFCg-1 a população de microrganismos aeróbios mesófilos. A concentração de CO2 no interior das embalagens variou significativamente (P<0,05) ao longo de 15 dias de estocagem do repolho minimamente processado mantido tanto a 1ºC como a 5ºC. Nessas mesmas condições, não foi constatada variação na população de aeróbios e anaeróbios mesófilos e de psicrotróficos. Em avaliação subjetiva, o repolho minimamente processado apresentou-se em condições adequadas de consumo aos 20 dias de estocagem, a 1ºC e 5ºC, nas embalagens de filmes de alta permeabilidade ao O2. Quando acondicionado em bandejas plásticas transparentes, seladas com filme de PVC termoencolhível, o produto apresentou, no vigésimo dia, a 5ºC, características sensoriais indesejáveis. O repolho minimamente processado mantido a 12ºC apresentou sinais evidentes de deterioração após cinco dias, manifestados pelo aparecimento de manchas escuras, limosidade e odor desagradável, e teve um aumento de até 3log10 UFCg-1 na população inicial de aeróbios e anaeróbios mesófilos e de psicrotróficos.

The microbial populations associated with minimally processed cabbage after sanitation and storage at 1ºC, 5ºC and 12ºC under modified atmosphere was analyzed. Sanitation of cabbage for ten minutes at room temperature in 200mgL-1 sodium hypochlorite and chlorinated organic compound or 1% acetic acid resulted in the reduction of up to 1.8log10CFUg-1 in the aerobic mesophilic bacteria population (P<0,05). At 1ºC and 5ºC significant (P>0.05) differences in concentrations of CO2 were found in the interior of the packages during fifteen days of storage. No variation was found in the mesophilic aerobic or anaerobic counts, and psycrotrophic microorganisms during storage at 1ºC and 5ºC for the three packaging materials used. The minimally processed cabbage was in good sensorial conditions for up to 20 days of storage at 1ºC and 5ºC in the packaging materials of high O2 permeability. The samples packed in transparent plastic trays sealed with thermal-shrinking PVC presented undesirable sensorial characteristics on the twentieth day of storage at 5ºC. After five days of storage at 12ºC the fresh-cut cabbage presented evident signs of deterioration, as dark spots, slime and off odor. There was a 3log10 CFUg-1 increase in the aerobic and anaerobic mesophiles and psycrotrophic populations in these samples.
