Abstract Consumers are more demanding in relation to meat quality, developing new demands, such as increased shelf life and good sensory quality. The tenderness of the meat is one of the most important elements in the choice of the product, the modification in the intrinsic structure of the meat, for example, increase of the proteolysis and fragmentation of the myofibrils contribute to the improvement of the tenderness. However, it is necessary to develop technological strategies so that this ultrasound technology can be added to improve meat tenderness. Thus, the objective of this review was to know the main aspects of the use of ultrasound and acerola residue in meat tenderness. Overall, existing research demonstrates excellent prospects for this new redesign approach.

ABSTRACT The aim of this study was to estimate inequality in physical activity and sports facilities at Brazilian public elementary schools, according to percent of self-reported black students. Our results showed that schools from urban or rural areas with a higher percentage of enrollments of self-reported black students (≥60%) presented fewer outdoor courtyards, sport court indoor and outdoor, playgrounds, dance studios, and materials for sports and recreation. These inequalities are a feature of racism, which is structural in Brazilian society and institutionalized in unfavorable conditions for engaging in physical activity and sports at public elementary schools where there is a higher number of black students.

RESUMEN Este estudio ecológico tuvo como objetivo estimar las desigualdades en las instalaciones para actividades físicas y deportivas (AF) en las escuelas públicas brasileñas de Educación Básica (n=70.276), según la proporción de matrículas de alumnos que se declararon negros. Los resultados mostraron que las escuelas urbanas y rurales con mayor proporción de matrículas de estudiantes negros (≥60%) tenían menos patio al aire libre, canchas interiores y exteriores, parques infantiles, estudios de danza y materiales para deportes y recreación. Esas desigualdades son rasgos del racismo, que es estructural en la sociedad brasileña y está institucionalizado al ofrecer condiciones desfavorables para la práctica de AF en las escuelas públicas que atienden a un mayor número de alumnos negros y pardos.

RESUMO O objetivo deste estudo ecológico foi estimar desigualdades nas instalações para atividades físicas e esportes (AF) nas escolas públicas de Educação Básica brasileiras (n=70.276), conforme a proporção de matrículas de estudantes autodeclarados negros. Os resultados mostraram que escolas urbanas e rurais com maior proporção de matrículas de estudantes negros (≥60%) apresentaram menos pátio descoberto, quadra coberta e descoberta, parque infantil, estúdio de dança e materiais para a prática desportiva e recreação. Essas desigualdades são traços do racismo, que é estruturante na sociedade brasileira e é institucionalizado na oferta de condições desfavoráveis ao engajamento em AF nas escolas públicas que atendem um maior número de alunos pretos e pardos.

Abstract This study's objective was to evaluate the effect of storage time (-18 ± 1 °C/60 days) under colorimetric, physicochemical, and lipid oxidation parameters in sheep meat sausages with oil pre-emulsified linseed to replace animal fat. Five formulations have been developed; the control sausage (0%) and four fat replacement levels with pre-emulsified linseed oil: 10, 20, 30, and 40%. Color analysis s (L *, a * and b *), determination of the total colorimetric difference (CD), water activity (Aw), pH, moisture, water retention capacity (WRC), and lipid oxidation through the number of substances reactive to thiobarbituric acid (TBARS), where all analysis were determined at intervals of 0, 20, 40 and 60 days of storage. The treatment, the storage time, and the interaction between these factors significantly affected (P < .0001) most of the studied parameters. The TBARS values were affected by the treatment (P < .0001) and by the storage days (P < .0001), with an interaction between these factors (P < .0001). However, it is suggested that the replacement of animal fat with pre-emulsified linseed oil was a viable strategy without causing detrimental effects on the product's quality during the storage period.

Abstract The change in the lifestyle of modern consumers has increased the demand for meat products considered healthier, due tothe addition of animal fat in emulsified meat products, ingredient directly associated with the emergence of chronic diseases such as obesity and hypertension. In this sense, lipid reformulation processes aimed at replacing animal fat with other sources that are considered healthier, such as vegetable oils, appear as an innovative option for the production of meat products. However, it is necessary to develop technological strategies so that these oils can be added without causing undesirable technological and sensory effects to the final product. Thus, this study aimed to review the main aspects of the use of vegetable oils to replace animal fat in emulsified meat products. In general, existing research demonstrates excellent prospects for this new approach to redesign.

Abstract Litter decomposition restores part of the elements absorbed by the plant back into the soil, acting as a regulator of the biogeochemical cycling of nutrients. This study aimed to evaluate the litter quantity and quality of Eucalyptus grandis in Northern Fluminense region, RJ. Three rotational sequences were studied, the first after 8 years (FR8), the second after 1.5 years (SR2), and a 5year old regrowth (R5). Leaf litter was divided into whole leaves (WL), fragmented pieces (FP), twigs/branches (TB), reproductive structures (RS) and bark (B). The total litter in FR8 was 9.56 Mg ha-1, in SR2, 13.85, and in R5, 22.97 Mg ha-1, corresponding to 83, 163 and 75 kg ha-1 of N, respectively. FP represented 38%, 48% and 55% of N, respectively, in SR2, R5 and FR8. The WL and FP fractions have high recycling potential of organic matter and nutrients due to their lower C/N and Lig/N quality index values.

Resumo Considerando a indústria de painéis aglomerados, a maior parte utiliza adesivos sintéticos, especialmente, à base de ureia-formaldeído, e nesse sentido, estudos que englobam as características de materiais alternativas para a indústria de painéis tornam-se importantes, especialmente quando se considera o custo final dos produtos gerados. O presente trabalho teve como objetivo geral avaliar as alterações na estrutura química do adesivo que pudessem provocar possíveis modificações nas suas propriedades ligantes em função da substituição do adesivo ureia-formaldeído pelo lignossulfonato. Para tanto, foi determinada a composição química elementar do lignossulfonato e suas ligações químicas por meio da espectroscopia de infravermelho (IV) e ressonância magnética nuclear (RMN), puro e em composição com diferentes catalisadores; as propriedades da ureia-formaldeído e suas modificações como pH, viscosidade, tempo de formação de gel e viscosidade. A análise de RMN mostrou, para o lignossulfonato, o mesmo padrão geralmente obtido para derivados de lignina em suas ligações químicas. A análise química elementar mostrou altos teores de Mg, Ca e Na. A adição de lignossulfonato sobre a ureia-formaldeído causou acidificação no adesivo e redução dos valores de viscosidade. O efeito sobre o tempo de formação de gel também foi afetado, entretanto, verificou-se que a metodologia para esse tipo de polímero, deve ser readequada em relação ao método tradicional, submetendo o mesmo à temperatura superior a 90°C. Os resultados permitiram concluir que é possível a utilização do lignossulfonato em substituição ao adesivo ureia-formaldeído considerando o painel de madeira aglomerada.

Abstract Considering the agglomerated panel industries, most of them use synthetic adhesives, especially urea-formaldehyde, and to this end, studies covering the characteristics of alternative materials for the panel industry become important, especially when considering the final cost of the products generated. The present work had as general objective to evaluate the alterations in the chemical structure of the adhesive that could cause possible modifications in its binder properties as a function of the substitution of the adhesive urea-formaldehyde by the lignosulfonate. Therefore, it was determined the basic chemical composition of the lignosulfonate and its chemical bonds by infrared spectroscopy (IR) and the nuclear magnetic resonance (NMR), pure and in composition with different catalysts; the properties of urea-formaldehyde and its modifications such as pH, viscosity, gel time and viscosity. NMR analysis showed the lignosulfonate to the same pattern usually obtained for lignin derivatives in their chemical bonds. The elementary chemical analysis showed high Mg, Ca and Na. The addition of lignosulfonate on urea-formaldehyde caused the adhesive acidification and reduction of viscosity values. The effect on gel time was also affected. However, it was found that the methodology for this type of polymer should be adequate compared to the traditional method, submitting the same to temperatures above 90°C. The results showed that it is possible to use lignosulfonate to replace the urea-formaldehyde adhesive.

Foi estabelecido um sistema de cultivo em aléias de gliricídia em um pomar orgânico de mangueira e de gravioleira de um ano, no município de Campos dos Goytacazes-RJ-Brasil. Os objetivos do trabalho foram avaliar a sobrevivência e o desempenho da gliricídia no cultivo em aléias, quanto à produção de fitomassa seca e ao fornecimento de nutrientes ao sistema. A gliricídia apresentou elevada sobrevivência (93%). A média anual de produção de fitomassa seca e de adição de nutrientes ao sistema foi maior no segundo ano de avaliação (2007) do que no primeiro ano (2006), ambos com de três podas anuais que se adequaram às épocas recomendadas para a adubação das frutíferas, especialmente a gravioleira. A quantidade de N adicionada ao pomar com as podas da gliricídia foi maior que a adubação recomendada para mangueira e gravioleira. Por outro lado, a quantidade de P e K adicionada ao pomar não foi suficiente para suprir a adubação demandada para ambas as culturas.A gliricídia apresentou bom desempenho nas condições do experimento, com potencial de uso contínuo no sistema e possibilidade de aproveitamento dos nutrientes disponibilizados no sistema pelas frutíferas. Contudo, mais avaliações são necessárias ao longo do tempo para verificar a sustentabilidade do consórcio.

An alley cropping system with gliricidia was established in an organic orchard of mango and soursop trees at one year after the planting of the fruit trees, in Campos dos Goytacazes-RJ-Brazil. The objective of this work was to evaluate the survival and performance of the gliricidia in the alley cropping in relation to the production of dry fitomass and the nutrient supply to the system. Gliricidia showed high survival rates (93%). The annual average of dry fitomass yield and the addition of nutrients to the system were greater in the second year of evaluation (2007) than in the first year (2006), both with three annual prunings that adjusted with the recommended periods of fruit trees fertilization, in special the soursop tree. The quantity of N added to the orchard with gliricidia prunes was higher than the recommended fertilization for mango and soursop tree plots. On the other hand, quantities of P and K added to the orchard were not enough to supply the fertilization demanded for both cultures. Gliricidia presented good performance under the experiment conditions, with potential for continuous use in the system and possibility of using nutrients supplied by the fruit trees into the system. However, further long term evaluations are necessary to verify the sustainability of the intercropping.

Os solos tropicais muito intemperizados possuem, de modo geral, baixa disponibilidade de P para as plantas e elevada capacidade de adsorção de P inorgânico (Pi). Dessa forma, a manutenção de fontes orgânicas, capazes de suprir P por mineralização, é de grande importância para o crescimento de plantas em condições de acentuado intemperismo. A reciclagem de resíduos orgânicos e a habilidade da comunidade vegetal em conviver com baixas concentrações de P no solo garantem a sustentabilidade em ecossistemas naturais. O objetivo deste trabalho foi estimar o conteúdo de P orgânico (Po) total e as frações lábeis de P no solo, em duas florestas naturais (sítio 1 a 900 m de altitude e sítio 2 a 600 m), em um povoamento de Corymbia citriodora (sítio 3 a 250 m de altitude) e em pastagens adjacentes a cada cobertura florestal, em cada sítio. A taxa de recuperação de Pi + Po em relação à extração nitro-perclórica do P total variou de 50 a 82 %. O teor médio de Po total nos solos florestais foi de 160 mg kg-1 e, nos solos sob pastagem, de 69,8 mg kg-1. A maior diferença de Po total, entre floresta e pastagem, ocorreu no sítio 1 (-74 %), seguido do sítio 3 (-53 %) e sítio 2 (-25 %). O Po representou de 14,6 a 36,9 % do P total extraído. Em relação ao P lábil, o Po representou mais de 80 % nos solos sob florestas naturais e 65 % no solo sob eucalipto. O Po (total e lábil) correlacionou-se positivamente com o C orgânico, e o Po lábil com o P disponível.

Highly weathered tropical soils have low P plant availability and very high inorganic phosphorus (Pi) adsorption capacity. Therefore, maintenance of organic sources able to supply P by mineralization is essential for P availability under highly weathered conditions. Organic matter cycling and tolerance to low P soil concentration of the plant community may guarantee sustainability in natural ecosystems. The aim of this study was to evaluate organic phosphorus (Po) content and labile P fractions in the soils of three sites. The first site was a natural forest at 900 m asl, the second natural forest at 600 m asl and the third a Corymbia citriodora stand at 250 m asl. The same P fractions were evaluated in pasture areas adjacent to each site. The recovery rate of Pi + Po ranged from 50 to 82 % of the nitric-perchloric extraction. Mean total Po in the forest was 160 mg kg-1 and in pasture soil 69.8 mg kg-1. The greatest difference between forest and pasture was observed at site one (-74 %), followed by site three (-53 %) and site two (-25 %). Organic P accounted for 14.6 to 36.9 % of the total extracted P. Labile Po accounted for over 80 % of the total labile P in the natural forests and 65 % in the Corymbia citriodora plantation. Total and labile Po were positively correlated with organic C, and the labile Po was positively related to available P.

Embolia cerebral de fonte cardíaca é frequentemente relacionada a acidente vascular cerebral (AVC) em jovem. OBJETIVO: Descrever achados ecocardiográficos em jovens e não jovens com AVC isquêmico, sem suspeita de fonte cardíaca. MÉTODO: Estudo transversal; 523 pacientes (267 homens e 256 mulheres) com AVC isquêmico sem evidência de fonte cardíaca submeteram-se ao ecocardiograma transesofágico (ECOTE). RESULTADOS: 10% dos pacientes tinha 45 anos; ou menos. Hipertrofia do ventrículo esquerdo, aumento do átrio esquerdo, contraste espontâneo na aorta, aneurisma do septo interatrial, calcificação da válvula mitral e aórtica, insuficiência aórtica e placas de ateroma na aorta foram significantemente mais frequentes nos pacientes com mais que 45 anos; 2.8% dos não-jovens apresentaram trombo nas câmaras esquerdas. CONCLUSÃO: ECOTE é amplamente sugerido na investigação de embolia em pacientes jovens, porém parece ser tão importante também no grupo de pacientes mais velhos, nos quais o risco de embolia cerebral é subestimado; etiologia cardioembólica e aterosclerótica coexistem, e ambas devem ser identificadas e tratadas para melhor prognóstico.

Cerebral embolism from cardiac source is an important cause of stroke, specially in patients younger than 45 years old. OBJECTIVE: To describe the transesophageal echocardiography (TEE) findings in young and non-young stroke patients without any prior evidence of cardiac source for cerebral embolism. METHOD: Transversal study: 523 patients (267 men and 256 women) with ischemic stroke, without any evidence of cardiac abnormality, underwent to TEE. RESULTS: Ten percent were aged 45 years; or less. Left ventricle hypertrophy, left atrial enlargement, spontaneous contrast in aorta, interatrial septum aneurysm, mitral and aortic valve calcification, aortic valve regurgitation, and atherosclerotic plaques in aorta were significantly more frequent in patients aged more than 45 years; 2.8% of non-young patients had thrombus in left heart. CONCLUSION: TEE is widely used to diagnose cardiac source of cerebral embolism in young patients, but it seems to be as useful for older ones, in whom cerebral embolism risk is underestimated; atherogenic and cardioembolic causes may actually coexist, and both should be treated.

O objetivo deste trabalho foi avaliar a decomposição e liberação de nutrientes da serapilheira foliar em um plantio de Eucalyptus grandis de primeira rotação, com 8 anos, e em rebrotas com 2 e 5 anos de idade, por meio da técnica de sacos de serapilheira. A temperatura média anual foi de 19,5 ºC e a precipitação pluvial anual, de 850 mm, com 54% das chuvas concentradas no período de outubro a dezembro. Os resultados indicaram que foi similar o porcentual de perda de massa, bem como a liberação de frações orgânicas (lignina, celulose e polifenol) e de nutrientes (N, P, K, Ca e Mg) da serapilheira foliar para o plantio de primeira rotação e as rebrotas. O porcentual de perda de massa, média dos três povoamentos, ajustou-se a um modelo quadrático (y = 99,443 + 0,0348x - 0,0003x²; R²=0,92; p=0,0225). Somente no período de maiores precipitações observou-se a efetiva perda de massa (29 - 33%), assim como a liberação de celulose (40 - 51%), de polifenóis (54 - 70%) e, em pequena quantidade, de lignina (3 - 14%). Entre os nutrientes avaliados, houve liberação de N (6 - 19%), K (49 - 60%), Ca (18 - 20%) e Mg (27 - 39%), enquanto o P foi acumulado (-20 e -40%). Na região norte fluminense, a dinâmica da decomposição e liberação de nutrientes da serapilheira foliar de eucalipto, durante 382 dias, evidenciou a liberação de K > Mg > Ca > N e a imobilização de P, sendo marcadamente influenciada pela precipitação pluvial.

This work aimed to evaluate the decomposition and nutrient release of leaf litter in 8-year old Eucalyptus grandis first rotation and 2 and 5-year old regrowth systems through litter bag technique. The annual average temperature was 19.5 ºC and annual rainfall was 848 mm, with 54% of rains concentrated in the period from October to December. The results showed that the dry weight loss, nutrient release (N, K, Ca and Mg) and organic fraction release (lignin, cellulose and polyphenols) were similar for the first rotation and regrowth systems. The mass loss percentage, mean of three sites, fitted a quadratic model (y = 99.443 + 0.0348x - 0.0003x²; R²=0.92; p=0.0225). Only in the rainfall period, effective mass loss (29 - 33%), cellulose release (40 - 51%), polyphenols (54 - 74%) and low lignin release (3 - 14%) was observed. Among the nutrients, release of N (6 - 19%), K (49 -60%), Ca (18 - 20%), Mg (39 - 27 %) and immobilization of P (-20 and -40%) was observed. In northern Rio de Janeiro State, the eucalypt leaf litter decomposition dynamics showed release of K > Mg > Ca > N , over 382 days, and immobilization of P, markedly influenced by rainfall.

A ciclagem de nutrientes em povoamentos de eucalipto permite avaliar possíveis alterações decorrentes de técnicas de manejo aplicadas e possibilita inferir sobre a sustentabilidade das plantações. O objetivo deste trabalho foi estudar a ciclagem de nutrientes e o balanço nutricional em povoamentos de Eucalyptus grandis em primeira rotação (8 anos de idade) e em sistema de rebrota (1,5 e 5 anos) na região Norte Fluminense, no período de janeiro a dezembro de 2001. Determinaram-se a biomassa e o conteúdo de nutrientes da parte aérea (folha, galho, casca e lenho) e da serapilheira depositada e acumulada. Efetuou-se o balanço de nutrientes no sistema solo-serapilheira-parte aérea. O talhão de 8 anos apresentou maior diâmetro, área basal e volume de tronco. Por conseguinte, a biomassa e o conteúdo de nutrientes nesse componente foram superiores aos de outros talhões. A produção total de serapilheira e o fluxo anual de nutrientes no sistema planta-solo foram maiores no talhão em primeira rotação. O folhedo representou a maior contribuição para a deposição de nutrientes ao solo, e o balanço de nutrientes foi positivo em todos os talhões avaliados. Entretanto, houve baixa produção de biomassa, especialmente no talhão em primeira rotação, apesar de as reservas de nutrientes do solo permitirem maior produtividade.

Nutrient cycling in eucalypt stands allows the evaluation of changes due to management and to make inferences about plantation sustainability. The objective of this study was to evaluate the nutrient cycling in eucalypt (Eucalyptus grandis) in Northern Rio de Janeiro State, Brazil. The evaluation was carried out from January to December 2001, in 8-year-old stands and 1,5 and 5 year old coppicing (second rotation). The biomass and nutrient contents of the aerial part (leaf, branch, bark and bolewood), the litterfall and litter were determined. The nutrient balance in the soil-litter-aboveground system was measured. The 8-year-old stand presented the highest DHB (diameter at breast height), section area and tree trunk volume. Consequently the biomass and the nutrient content in this component were higher than in the other stands. Litterfall production was larger in the 8-year-old stand. The nutrient annual flow in the plant-soil system was larger in the 8-year-old stand. Leaf litterfall was the component that contributed the most to nutrient deposition on the soil. Nutrient balance was positive in all stands evaluated. Despite the fact that the soil nutrient resources allows for larger productivity, a low biomass production was found, particularly in the 8-year-old stand.
