RESUMO: O objetivo deste trabalho foi elaborar e caracterizar mortadelas a partir de aparas da filetagem (corte em “V” do filé) de tilápia do Nilo, de forma a possibilitar a agregação de valor a este subproduto do processo de filetagem. Foram elaboradas três mortadelas, sendo uma com 100% de aparas da filetagem de tilápia, outra contendo 100% de carne de frango e a terceira com 100% de carne suína. As mortadelas foram caracterizadas quanto à microbiologia, composição química, cálcio, colágeno, pH, Aw, cor, textura e custo de formulação. As mortadelas estavam dentro dos padrões microbiológicos recomendados. A mortadela de tilápia apresentou maiores teores de umidade, cinzas, cálcio e colágeno, maior pH e menor atividade de água quando comparada às demais espécies. A mortadela de tilápia apresentou menor luminosidade, maior croma a* e croma b* intermediário às demais. A textura foi melhor para as mortadelas de tilápia, quanto a dureza, gomosidade e mastigabilidade, cujos valores foram menores. A mortadela de frango teve maior índice de aceitação, porém, a de tilápia também foi elevado, enquanto de suíno todos os atributos avaliados receberam as piores notas. A mortadela de tilápia do Nilo é uma inovação tecnológica que pode ser introduzida no setor alimentício com bom valor nutricional e bom índice de aceitação.

ABSTRACT: The objective of this research was to elaborate and characterize mortadella using fillet residues (‘V’-cut fillet trim) of Nile tilapia, in order to add value to this by-product of the filleting process. Three mortadellas were made, one with 100% tilapia fillet trimmings, another containing 100% chicken meat and the third with 100% pork meat. Mortadellae were characterized in terms of microbiology, chemical composition, calcium, collagen, pH, Aw, colour, texture and formulation cost. Mortadella was within the recommended microbiological standards. Tilapia mortadella had higher levels of moisture, ash, calcium and collagen, higher pH and lower water activity when compared to other species. The tilapia mortadella had lower brightness, higher chroma a * and intermediate chroma b *, compared with the others. The texture of tilapia mortadella was better in terms of hardness, gumminess and chewability, the values of which were lower. The chicken mortadella had a higher acceptance rate; however, that of tilapia was also high, while all evaluated attributes of pork received the worst grades. Nile tilapia mortadella is a technological innovation that can be introduced into the food sector with good nutritional value and a good acceptance index.

Abstract The objective of this study was to evaluate the nutritional, sensorial and microbiological characteristics of pizzas with the inclusion of dehydrated mix of salmon and tilapia in the dough. Tilapia and salmon carcasses were cooked, pressed, ground, dehydrated and crushed, and a mixture of salmon (20%) and tilapia (80%) was made. This mix was included in the pizza dough at different levels (0%, 5%, 10%, 15% and 20%) and afterwards the toppings were added.In the dough composition, protein, ash and phosphorus levels rose linearly, while lipids, carbohydrates and caloric value of the dough samples decreased linearly as the mix levels increased. In pizzas, the moisture, lipids and carbohydrates contents were not different. Protein and ash contents presented a linear behavior. The inclusion of the mix was effective in reducing the saturated fatty acids and raising the content of polyunsaturated fatty acids. There was no difference between the pizzas for the sensorial attributes analysed. Therefore, the inclusion of up to 20% of dehydrated mix of tilapia and salmon added protein, minerals, and polyunsaturated fatty acids and maintained the acceptance of the pizza dough samples, which makes possible the preparation of a food product with health claims and good sensorial quality.

Resumo Diante da demanda do setor florestal em fornecer mudas de Eucalyptus sp. e devido à dificuldade de enraizamento a partir de estacas, o presente trabalho objetivou avaliar se doses de um fertilizante mineral à base de sulfato de cálcio incrementa a atividade de peroxidase e o desenvolvimento radicular de dois clones de eucalipto. O estudo foi conduzido utilizando os clones de eucalipto IPB22 e IBP26 (Eucalyptus grandis x Eucalyptus urophylla), nos quais foram realizadas aplicações quinzenais do fertilizante, por 120 dias na parte aérea das plantas, nas dosagens de 0, 40, 80, 160 e 320 g L-1 em casa de vegetação. As variáveis analisadas foram altura da parte aérea, diâmetro do colo, porcentagem de enraizamento e atividade da enzima peroxidase. A aplicação do fertilizante à base de sulfato de cálcio, principalmente em 160 e 320 g L-1, resultou em maior altura, diâmetro de colo, enraizamento das miniestacas e atividade de peroxidase para os dois clones estudados. Dessa forma, conclui-se que esse fertilizante induz a atividade de peroxidase, contribuindo para melhor desenvolvimento de miniestacas de clones de eucalipto.

Abstract Due to the demand of the forest-based sector and the difficulty for providing seedlings of Eucalyptus spp. produced by cutting rooting, the objective of this study was to evaluate if doses of a calcium sulphate-based fertilizer increase the peroxidase activity and the rooting of two eucalyptus clones. The study was conducted using cuttings of the eucalyptus clones IPB22 and IBP26 (Eucalyptus grandis x Eucalyptus urophylla), in which bi-weekly applications of the fertilizer were carried out in the aerial part of the plants for 120 days at dosages of 0, 40, 80, 160 and 320 g L-1 in indoor experimental nursery. The analyzed variables were shoot height and diameter, rooting percentage and peroxidase activity. We observed that the use of doses of calcium sulphate based fertilizer, mainly 160 and 320 g L-1, increased the height, diameter, rooting and peroxidase of the mini-cuttings for both clones. Thus, this fertilizer induces the peroxidase activity, contributing to a better development of eucalyptus mini-cuttings.

Objetivou-se com este trabalho avaliar o uso oral de probióticosLactobacillus spp viáveis e inativadas ("pool" deLactobacillus spp.), sobre o desempenho, a microbiota intestinal, e parâmetros sanguíneos de leitões do nascimento aos 35 dias de idade. Foram utilizados na fase de aleitamento 108 leitões com peso médio inicial de 1,41kg e, na creche, 72 leitões com peso médio inicial de 5,47kg, distribuídos em um delineamento experimental de blocos ao acaso. Os tratamentos foram: Controle: 1 mL de caldo MRS + 1 mL de solução salina estéril; Ativo: 1 mL de probiótico ("pool" de Lactobacillus spp. e Lactobacillus plantarum) ativados no caldo MRS + 1 mL de solução salina; Inativo: 1mL de probiótico contendo células inativadas no caldo MRS + 1 mL de solução salina. Os tratamentos não influenciaram o ganho de peso total e diário dos leitões no aleitamento. Dos 21 aos 35 dias de idade, observou-se diferença entre os tratamentos para consumo de ração, consumo de ração diário, ganho de peso total e diário. As contagens de bactérias ácido-láticas e coliformes não foram influenciadas pelos tratamentos e idades. Com exceção da globulina, os demais parâmetros sanguíneos analisados não são influenciados. Na fase de creche o tratamento probiótico com células inativadas significa uma alternativa viável para uso principalmente pelo desempenho obtido para ganho de peso; no entanto os tratamentos probióticos não influenciam as contagens microbiológicas e os parâmetros sanguíneos.

The objective of the current work was to evaluate the use of oral probiotics comprised of viable and inactivated Lactobacillus spp. (referred to herein as "pool" of Lactobacillus spp.) on the performance, intestinal microbiota and blood parameters of piglets from birth to 35 days of age. Lactation piglets (n=108), with an average initial weight of 1.41kg, and nursery piglets (n=72), with an average initial weight of 5.47kg, were included in the study and distributed in a randomized complete block design. The treatments were as follows: Control: 1mL MRS broth + 1mL sterile saline; Active: 1 mL probiotics ("pool" of Lactobacillus spp. and Lactobacillus plantarum) activated in MRS broth + 1 ml saline; Inactive: 1 mL inactivated probiotics containing MRS broth + 1mL saline. Treatments were not observed to affect total and daily weight gain of piglets during lactation. Differences were observed between treatments for feed intake, daily feed intake as well as total and daily weight gain from 21 to 35 days of age. Counts of lactic acid bacteria and coliforms were not affected by treatment or age. With the exception of globulin, blood parameters are also not affected. In the nursery phase the probiotic treatment with inactivated cells means a viable alternative for use primarily by the performance obtained for weight gain; however probiotics supplementation did not influence the microbiological counts and blood parameters.

This study aims to evaluate the bioaccumulation of macronutrients and heavy metals in the golden mussel according to its collection site and seasonality in the aquaculture area of the reservoir from April/2009 to March/2010. There is no difference (p > 0.05) in the concentration of metals with respect to the point of collection. The concentrations of Cu, Fe, Mn, Zn, Cd and Pb were higher (p < 0.05) in spring and summer than in fall and winter. Values of the heavy-metal pollution index (MPI) for collection point and seasonality indicate environmental contamination in the aquaculture area.
