ABSTRACT. The aim of this study was to evaluate the phenotypic variation and diversity of cassava for breeding purposes based on the pasting properties of starch, for food applications. The viscosities of the starches, extracted from 1031 accessions, were obtained using a Rapid Visco Analyzer. The best linear unbiased predictors were calculated for five critical points of the viscograms, which were then used to cluster the accessions based on the discriminant analysis of principal components. The wide phenotypic variation identified from the viscograms reveals the high potential for selection gains, especially for pasting temperature and setback. Certain strong correlations indicate that selection based on a specific viscogram trait can be used for indirect selection (e.g., the correlation between peak viscosity and breakdown [0.85]). The lowest Bayesian information criterion identified five different groups. Groups 3 and 4 exhibited high pasting temperatures, while Groups 3 and 5 exhibited low setbacks. Group 3 also exhibited low viscosity and breakdown. However, we focused on selecting cassava accessions with a high pasting temperature and low setback, as these are the most important traits for industrial applications. The predicted genetic gains from the selection of the top 15 cassava accessions for increasing pasting temperature and decreasing setback were 4.40% and 53.17%, respectively. The increased pasting temperature (~72.89°C) and high amplitude of setback (~600 cP) due to selection can guide the utilization of the cassava germplasm for breeding and provide a basis for further studies to develop varieties with added value, especially in the food industry.

Abstract Cowpea is grown mainly in regions with a hot semi-arid climate, where other pulses do not develop satisfactorily. It is the 4th most produced pulse in the world, thus supplying the domestic and export markets. Following the trends of the food products market, a study was carried out to identify the best condition of the extrusion process, to transform these nutritious grains into quality expanded products and ready for consumption. The grains were decorticated and transformed into cotyledon flour. This flour was conditioned and the Evolum HT25 twin screw extruder feeder was adjusted to a rate of 7 kg h-1. A Box-Behnken 23 design was used, considering the following variables and levels: extrusion temperature from 100 °C to 140 °C (in the 7th to 10th zone), screw speed (300 to 700 rpm) and conditioning moisture from 12% to 16%. The temperature affected linearly and negatively (p ≤ 0.05) the sectional expansion index (2.65 to 7.64). The screw speed interfered linearly and positively (p ≤ 0.05) in the longitudinal (1.12 to 9.32) and volumetric (4.91 to 24.15) expansion index, and negatively with the water absorption index (3.05 to 3.86 g g-1). The screw speed (positive linear and negative quadratic), the moisture content (negative quadratic) and the interaction (positive) between the two interfered (p ≤ 0.05) in the water solubility index (25.89% to 33.85%). The hardness value (1.24 to 2.83 N) was affected (p ≤ 0.05) by screw speed (negative linear and positive quadratic), temperature (negative quadratic), moisture (positive quadratic), and interactions of moisture with temperature and screw speed. To obtain a hardness value close to that of commercial extrudates and high-water solubility, the maximum global desirability obtained was 0.81 for extrusion at 135.6 °C, 700 rpm and 12% moisture.

Resumo O feijão-caupi é cultivado principalmente em regiões de clima semiárido quente, onde outras pulses não se desenvolvem satisfatoriamente. É a quarta pulse mais produzida no mundo, abastecendo o mercado interno e de exportação. Seguindo as tendências do mercado de produtos alimentícios, realizou-se o estudo para identificar a melhor condição do processo de extrusão, para transformar esses grãos nutritivos em produtos expandidos de qualidade e prontos para o consumo. Os grãos foram descorticados e transformados em farinha de cotilédones. Essa farinha foi condicionada e o alimentador da extrusora de dupla rosca Evolum HT25 foi ajustado para uma taxa de 7 kg h-1. Um delineamento Box-Behnken 23 foi utilizado, contemplando as seguintes variáveis e níveis: umidade de condicionamento de 12% a 16%, temperatura de extrusão de 100 °C a 140 °C (da 7ª a 10ª zona) e velocidade das roscas de 300 a 700 rpm. A temperatura afetou linear e negativamente (p ≤ 0,05) o índice de expansão seccional (2,65 a 7,64). A velocidade das roscas interferiu linear e positivamente (p ≤ 0,05) nos índices de expansão longitudinal (1,12 a 9,32) e volumétrica (4,91 a 24,15), e negativamente no índice de absorção de água (3,05 a 3,86 g g-1). A velocidade das roscas (linear positiva e quadrática negativa), o teor de umidade (quadrática negativa) e a interação (positiva) entre essas duas variáveis interferiram (p ≤ 0,05) no índice de solubilidade em água (25,89% a 33,85%). O valor da dureza (1,24 a 2,83 N) foi afetado (p ≤ 0,05) pela velocidade das roscas (linear negativo e quadrático positivo), pela temperatura (quadrático negativo) e pela umidade (quadrático positivo), e pelas interações negativas da umidade com a temperatura e a velocidade das roscas. Para obtenção de valor de dureza próximo aos de extrusados comerciais e alta solubilidade em água, a desejabilidade global máxima obtida foi de 0,81 para extrusão a 135,6 °C, 700 rpm e 12% de umidade.

Abstract High-intensity ultrasound irradiation proved to be an effective method for modifying tara gum by generating low molecular weight products and better water solubility. The objectives of this research were to optimize the parameters for the high-intensity ultrasonic treatment with response surface methodology and improve the tara gum solubility. The results demonstrated that after the ultrasound treatment, the solubility of the tara gum had increased (17.7%) as a result of the reduced intrinsic viscosity (70%). The molecular weight of the untreated tara gum was 1.89 x 106 Da, and after ultrasound treatment, it was reduced to 0.47 x 106 Da. Rheological analyses confirmed the reduction in molecular weight for the modified and optimized tara gum and the resulting increase in solubility. This knowledge provides a better understanding of ultrasound treatment technology and increases the scope for use of tara gum in the food industry.

Resumo: O objetivo deste trabalho foi selecionar genótipos de mandioca (Manihot esculenta) do banco de germoplasma brasileiro com funcionalidade semelhante à do amido ceroso. Um total de 881 genótipos foi pré-selecionado por análise de componentes principais e agrupamento hierárquico, e seu potencial industrial foi comparado ao dos clones 7745-5WX de mandioca cerosa e WX-Maize de milho ceroso, ambos usados como referência. Dois genótipos se destacaram: BGM0036 e BGM0083. Amostras desses quatro genótipos foram caracterizadas por meio de teor de amilose, microscopia eletrônica de varredura, difração de raios-X, calorimetria diferencial de varredura, viscosidade de pasta e distribuição da cadeia de amilopectina. As amostras apresentaram cristalinidade tipo A e nenhuma diferença estatística (p> 0,05) quanto ao grau de cristalinidade (25,3 a 30,0), o que mostra proporções similares das frações de amilose/amilopectina. Não foram observadas diferenças na microestrutura dos amidos de mandioca. A temperatura inicial de gelatinização e as cadeias curtas de amilopectina apresentaram correlação negativa muito forte, o que indica que uma menor proporção de cadeias curtas de amilopectina resulta em uma maior temperatura inicial de gelatinização. BGM0036 e BGM0083 apresentam baixa viscosidade final, próxima às dos amidos de milho e mandioca cerosos, sendo uma alternativa para a utilização em diferentes alimentos que necessitam de estabilidade durante o congelamento.

Abstract: The objective of this work was to select cassava (Manihot esculenta) genotypes from the Brazilian germplasm bank with a functionality similar to that of waxy starch. A total of 881 genotypes were pre-selected using principal component analysis and hierarchical clustering, and their industrial potential was compared with that of the 7745-5WX waxy cassava and the WX-Maize waxy maize clones, both used as references. Two genotypes stood out: BGM0036 and BGM0083. Samples from these four genotypes were characterized by means of amylose content, scanning electron microscopy, X-ray diffraction, differential scanning calorimetry, paste viscosity, and chain-length distribution of amylopectin. The samples presented A-type crystallinity and no statistical differences (p > 0.05) regarding crystallinity degree (25.3 to 30.0), which shows similar proportions of the amylose/amylopectin fractions. No differences were observed in the microstructure of the cassava starches. Initial gelatinization temperature and amylopectin short chains presented a very strong negative correlation, indicating that a lower proportion of short chains of amylopectin results in a higher initial temperature of gelatinization. BGM0036 and BGM0083 show a low final viscosity, close to that of the waxy maize and cassava starches, being an alternative for use in different foods that require stability during freezing.

ABSTRACT Edible films are an alternative to synthetic materials used for packaging foods. The aim of this study was to develop and characterize films made from cassava starch, freeze-dried acai and glycerol. The films were characterized for thickness, water vapor permeability, water solubility, anthocyanins, antioxidant capacity and mechanical properties. The results indicated a rich edible film in anthocyanins with considerable antioxidant capacity (150.70 micromol Trolox), which can extend the commercial validity of the packaged food and meets the growing demand for biodegradable packaging that tends to reduce the environmental impact. The addition results in a significant effect on the polymer matrix reducing the water solubility and water activity. The elongation test at rupture reported to be 17.738%, indicating that addition of pulp increased film flexibility.

Resumo O método de solução saturada tem sido um método padrão por muitos anos, mas existem várias desvantagens, incluindo longos períodos de equilíbrio, trabalho extensivo e crescimento de fungo em valores altos de atividade de água (aw). Foi investigada a validade do método dinâmico (instrumento de sorção automatizado), comparando-o às isotermas de equilíbrio solução saturada de dois alimentos (farinha crua e processada por extrusão de sorgo inteiro), bem como seus coeficientes de difusão. As isotermas de sorção variaram entre 11,3% e 84,3%. O tempo de equilíbrio para a maior atividade de água (0,843) foi de cerca de 30 dias para o método de solução saturada, consideravelmente mais longo que o método dinâmico (300 min). Para a farinha de sorgo crua, os valores do método dinâmico foram consistentes com os dados obtidos a partir do método tradicional, que podem ser confirmados pelas curvas e pelos valores monocamadas semelhantes (0,038 e 0,040 g de sólidos de água/g, para suspensão de sal e métodos dinâmicos, respectivamente). Para a farinha de extrudados de sorgo, os valores de umidade de equilíbrio foram maiores usando o método dinâmico, o que pode estar relacionado ao baixo coeficiente de difusão do material (ordem para 10-10). Sugere-se o uso de um método dinâmico como uma melhor alternativa ao método da solução saturada, a fim de determinar as isotermas de sorção de materiais alimentares à base de sorgo integral.

Abstract The saturated salt slurry method has been a standard method for many years, but there are several drawbacks, including long equilibration times, extensive labour and mould growth at high water activity (aw) values. The validity of the dynamic method (automated sorption instrument) was investigated by comparing it with the equilibrium isotherms obtained using the saturated salt slurry method for two food materials (whole sorghum raw flour and whole grain sorghum extrudates), as well as their diffusion coefficients. The sorption isotherms ranged between 11.3% and 84.3%. The equilibration time for the highest water activity (0.843) was about 30 days using the saturated salts method, considerably longer than using the dynamic method (300 min). For raw sorghum flour, the dynamic method values were consistent with the data obtained using the traditional method, which can be confirmed by the similar curves and monolayer values obtained (0.038 and 0.040 g water / g solids for the salt slurry and dynamic methods, respectively). For the sorghum extrudates, the equilibrium moisture values were higher using the dynamic method, which could be related to the low diffusion coefficient of the material (order of 10 -10). The authors suggest the use of the dynamic method as a better alternative to the saturated salt method in order to determine the sorption isotherms of whole grain sorghum-based food materials.

RESUMO: O pinhão trata-se de uma semente sem glúten, produzida pelo pinheiro da espécie Araucaria angustifolia. Neste estudo, foram desenvolvidas misturas de bolo sem glúten, compostas por farinha de pinhão e farinha de arroz. As misturas de bolo foram produzidas conforme o modelo experimental Simplex Centroid, que definiu as proporções entre a farinha de arroz e a farinha de pinhão na variação de 50 a 100% e 0 a 50%, respectivamente. As misturas foram analisadas quanto à composição química, viscosidade aparente da pasta e distribuição de tamanho de partícula. Os bolos resultantes foram submetidos às análises de aceitação sensorial, textura volume específico e composição química. A farinha de pinhão demostrou ocorrência do pico de viscosidade ao aquecimento no valor de 1,761Pa.s contra 4,747Pa.s da amostra composta por 100% de farinha de arroz. A variação da firmeza dos bolos diminuiu com o aumento da porcentagem de farinha de pinhão. Em termos sensoriais, os bolos contendo entre 25 a 37,5% de farinha de pinhão apresentaram maior aceitação geral.

ABSTRACT: Brazilian pine seeds (pinhão) are gluten-free seeds produced by the native pine species named Araucaria angustifolia. In this study, gluten-free cake mixes composed of Brazilian pine seed flour and rice flour were developed. The cake mixes were produced following a Simplex Centroid experimental design, with rice flour and Brazilian pine seed flour contents ranging from 50 to 100% and from 0 to 50%, respectively. Mixes were analyzed for chemical composition, apparent paste viscosity, and particle size distribution. The resulting cakes were analyzed for sensory acceptance, texture, specific volume and chemical composition. The Brazilian pine seed flour showed a peak viscosity on heating of 1.761Pa.s against 4.747Pa.s for the 100% rice flour sample. The variation of firmness of cakes decreased with increasing percentage of Brazilian pine seed flour. Cakes containing Brazilian pine seed flour at 25-37.5% of the formulation presented highest overall acceptance.

Resumo O processamento ao qual um material é submetido pode afetar sua estrutura física ou química, resultando em produtos com diferentes comportamentos higroscópicos. No presente trabalho, objetivou-se estudar as propriedades de adsorção de água do sorgo em diferentes formas de processamento: farinha crua (produzida pela moagem de grãos inteiros), extrusados (produzidos em extrusora de duplo parafuso) e farinha extrusada (obtida pela moagem dos extrudados). As isotermas foram obtidas usando o método instrumental automatizado. Os testes foram realizados em duplicata, a 25 °C, com valores de umidade relativa variando entre 11 e 84%. Os dados de adsorção de água foram bem ajustados ao modelo de GAB, mostrando altos coeficientes de determinação. O teor estimado de água da monocamada variou de 5,3 a 6,9 g de água por 100 g de material seco. As isotermas de sorção foram afetadas pelo tipo de processamento, sendo que o cozimento por extrusão resultou em produtos com menor valor de monocamada (menos higroscópico). O processo de moagem produziu valores de monocamada elevados, provavelmente devidos à degradação de algumas interações polímero-polímero, que expuseram sítios de ligação. Para garantir a estabilidade microbiológica, o teor de água nos materiais não deve ser superior a 6,9 g de água por 100 g de material seco para a farinha crua de sorgo; 5,3 g de água por 100 g para os extrusados de sorgo, e 6,7 g de água por 100 g para a farinha extrusada.

Abstract The processing to which a material is subjected can affect its physical or chemical structures, resulting in products with different hygroscopic behaviours. The present work studied the water adsorption properties of sorghum subjected to different types of processing: raw flour (produced by milling whole grain), extrudates (obtained using a double screw extruder) and extruded flour (obtained by milling the extrudates). The isotherms were obtained using an automated instrumental method. The tests were run in duplicate at 25 °C with relative humidity values ranging between 11 and 84%. The water adsorption data fitted the GAB model well, showing high coefficients of determination. The estimated water contents of the adsorption monolayer ranged from 5.3 to 6.9 g of water per 100 g of dry material. The sorption isotherms were affected by the type of processing, extrusion cooking resulting in products with less water in the monolayer (less hygroscopic). The milling process yielded high water contents in the monolayer, probably due to the breakdown of some polymer-polymer interactions, which exposed the binding sites. To ensure microbiological stability, the water contents in the materials should not exceed 6.9 g of water per 100 g of dry material for raw sorghum flour, 5.3 g of water per 100 g for sorghum extrudates and 6.7 g of water per 100 g for extruded sorghum flour.

RESUMO: O ultrassom é considerado uma tecnologia limpa, por possibilitar menor gasto de energia, de substâncias químicas e menor geração de efluentes. Além disso, proporciona menor tempo de processamento e reduz a necessidade de aplicação de calor em vários processos. Por isso, tem sido alvo de pesquisa e desenvolvimento na indústria de alimentos, tanto para substituir, quanto para aperfeiçoar ou acelerar técnicas convencionais de processamento. Dentre as diferentes possibilidades de utilização na indústria de alimentos, o ultrassom pode ser considerado uma alternativa para substituir ou reduzir a utilização de substâncias químicas em processos de extração ou modificação de amidos. Quando utilizado na extração, possibilita maior pureza do amido obtido. Já na modificação, algumas alterações nos grânulos de amido podem ser provocadas pelo ultrassom, mas dependem da origem botânica, da composição do amido, dos parâmetros do equipamento e das condições de processamento.

ABSTRACT: Ultrasound is considered a clean technology, because it allows lower energy and chemicals compounds consumption as well as lower generation of waste. Furthermore, it provides shorter processing time and reduces the need for heat application in various processes. Therefore, this technology has been studied in the food industry to replace, improve or accelerate conventional processing techniques. Among the different possibilities of use in the food industry, ultrasound might be considered as an alternative to replace or reduce the use of chemicals during the extraction processes or modification of starches. When used in the starch extraction allows a greater purity of the final product. Towards the modification some changes in the starch granules can be caused by ultrasound, but it depends on the botanical source and starch composition, equipment's parameters and processing conditions.

RESUMO O soro lácteo possui proteínas de alto valor biológico, e que vem sendo utilizado como ingrediente na elaboração de iogurtes, bebidas lácteas e na forma de concentrados proteicos. A extrusão de alimentos, destaca-se entre as mais eficientes técnicas de cozimento, proporcionando inúmeros tipos de produtos, desde farinhas solúveis a produtos de conveniência como snacks, apresentando alta aceitabilidade pelos consumidores. Produtos processados por extrusão, como os expandidos por fritura (pellets) apresentam teor elevado de carboidratos, e seu enriquecimento com proteína, pode favorecer o aspecto nutricional do mesmo. Neste trabalho, objetivou-se utilizar o concentrado proteico de soro lácteo (WPC) em combinação com o gritz de milho na elaboração de pellets. Foram determinadas a densidade absoluta, densidade dos pellets expandidos, diferença de cor, índice de crocância, além da aceitação sensorial dos pellets. Para a densidade absoluta, teores de 5 a 17% de WPC deixaram os pellets não- expandidos mais densos. Quanto maior foi o teor de WPC e a temperatura do extrusor, maior foi a densidade dos pellets expandidos. O índice de crocância não foi alterado pelo teor de proteína e temperatura do extrusor. Na análise sensorial, as amostras mais preferidas foram as com menores teores de WPC (5%). Concluímos que maiores valores de WPC nas formulações dos pellets aumentaram a densidade dos mesmos, mas não alteraram a cor e a textura, assim como pequenos teores de WPC não alteraram a aceitação dos snacks.

ABSTRACT Whey has proteins of high biological value, which has been used as an ingredient in the elaboration of yogurt, milk beverages and as protein concentrates. Food extrusion stands out as one of the most efficient cooking techniques, allowing a number of product types, from soluble flour to convenience products, such as snacks, which have high acceptability by the consumers. Products processed by extrusion, such as those expanded by frying (pellets), have high carbohydrate content, and its enrichment with protein can favor its nutritional aspect. This study aimed to use the whey protein concentrate (WPC) in combination with corn grits in the preparation of pellets. Absolute density, density of expanded pellets, color, crispness index, and pellet sensory acceptance were determined. For the absolute density, contents from 5% to 17% produced denser non-expanded pellets. The higher the WPC content and the temperature of the extruder, the higher the density of the expanded pellets. The crispness index was not altered by the protein content and by the extruder temperature. In the sensory analysis, the preferred samples were the ones with lower WPC levels (5%). We concluded that higher WPC values in the pellets formulation increased their density, but did not alter color and texture, as well as small WPC levels did not affect the acceptance of snacks.

<p>Para alcançar melhor rentabilidade, o produtor necessita de cultivares de trigo de alta produtividade. Porém, só isso não é suficiente, pois, para atender aos moinhos, à indústria de alimentos e, mais especificamente, aos panificadores, as cultivares de trigo devem apresentar requisitos mínimos de qualidade, para resultar em produtos finais também de qualidade superior. Este trabalho foi conduzido com o objetivo de realizar a caracterização tecnológica da farinha de trigo de cinco linhagens de trigo desenvolvidas para o plantio no Cerrado Mineiro; comparar as farinhas dessas linhagens com a farinha de trigo de duas cultivares de trigo comerciais e a classificar as linhagens de trigo conforme a legislação brasileira vigente. Um delineamento, inteiramente casualizado, foi conduzido com sete tratamentos e três repetições. Foram determinados: a umidade, o conteúdo proteico e de cinzas e as características reológicas das farinhas. A linhagem EP066066 foi classificada como trigo básico. As linhagens EP066055, EP064021, EP062043 e EP063065 foram classificadas como trigo pão. Dentre as linhagens estudadas, a farinha de trigo da EP062043 se destacou das demais, apresentando consideráveis conteúdos de glúten, bom índice de tolerância à mistura, boa estabilidade e boa força de glúten.</p>

<p>Farmers need highly productive wheat cultivars in order to reach better profitability. However, this alone is not enough, because, in order to serve the mills, the food industry, and more specifically, the bakers, wheat cultivars must present minimum quality requirements that result in final products of superior quality. This study was conducted with the goals of performing the technological characterization of wheat flour five lineages developed for cultivation in the Cerrado Mineiro; compare the flours of these lineages with the wheat flour of two commercial wheat cultivars, and classify the wheat lineages according to current Brazilian legislation. A completely randomized design was conducted with seven treatments and three replicates. Moisture, protein and ashes content, and the rheological characteristics of the flours were determined. The EP066066 lineage as rated was basic wheat. The EP066055, EP064021, EP062043 and EP063065 were rated as bread wheat. Among the studied lineages, the wheat flour from the EP062043 stood from the others, presenting considerable gluten contents, good level of mixing tolerance, good stability and good gluten strength.</p>

Filmes provenientes de biopolímeros (polissacarídeos e proteínas) apresentam-se como alternativa ao uso de derivados petroquímicos, possibilitando a formação de matrizes contínuas, e a otimização de parâmetros como pH e tipo de plastificante pode resultar em materiais com propriedades melhoradas. Neste estudo, filmes de amido de mandioca produzidos por casting foram avaliados quanto a adição de extrato proteico de soja (EPS), glicerol e pH do meio. O aumento da concentração de EPS levou ao escurecimento dos filmes, ao aumento da solubilidade e aumentou o pH. O maior teor de plastificante e o menor pH elevaram a permeabilidade ao vapor de água (PVA). A menor PVA (0,057 g mm h-1 m-2 kPa-1) foi obtida com máximo teor de EPS (47%) e 13% de glicerol em pH 12. A força de perfuração variou de 0,08 a 2,78 N, sendo os maiores valores com adição de EPS e glicerol em nível intermediário (30%) em pH neutro. A maior deformação na perfuração (31,9%) ocorreu no teor de EPS mais baixo (13%) e de glicerol mais alto (47%). Considerando-se os fatores desejáveis: baixa PVA, baixa solubilidade e boa resistência mecânica, os filmes produzidos com 15,2% de EPS, 29,2% de glicerol em pH 6,1 foram os que mais bem atenderam a estas características.

Films from biopolymers (polysaccharides, proteins) are an alternative to the use of petrochemical derivatives, with possible formation of continuous matrices. Upon optimizing parameters such as pH and type of plasticizer, one may obtain materials with improved properties. In this study, cassava starch films produced by casting were evaluated concerning soybean protein extract (SPE) content, glycerol and varied pH conditions. Upon increasing the concentration of SPE, the films became darker, more soluble and the pH increased. The higher plasticizer content and the lower pH increased the water vapor permeability (WVP). The lowest WVP (0.057 mm g mm h-1 m-2 kPa-1) was obtained at the maximum content of SPE (47%) and 13% glycerol at pH 12. The puncture force ranged from 0.08 to 2.78 N and the highest values were obtained with intermediate level of SPE and glycerol (30%) at neutral pH. The highest puncture deformation value (31.9%) occurred at the lowest SPW content (13%) and highest glycerol content (47%). Considering as the desirable factors: low WVP, low solubility and good mechanical strength, one concludes that the films produced from cassava starch with 15.2% of EPS, 29.2% of glycerol at pH 6.1 exhibited the best performance.

O bagaço de cevada cervejeira é comumente utilizado na alimentação animal, porém, por meio de um processamento adequado pode servir em formulação alternativa de produtos alimentares ricos em fibras e proteínas. A combinação de bagaço de cevada e arroz (82:18) foi processada por extrusão para obter-se a farinha mista extrudada de bagaço e arroz, da qual se determinaram as propriedades reológicas e de absorção de água, cujos valores foram comparados com os da farinha de arroz crua. Os modelos matemáticos de Oswin, Smith, Peleg (1988) e Peleg (1993) foram utilizados para explicar as propriedades de absorção em diferentes temperaturas (25, 30, 35 e 45 ºC) e atividades de água (0,11-0,97). Peleg (1993) foi o modelo que melhor descreveu as curvas de absorção de água. O perfil de viscosidade aparente da farinha extrudada é semelhante ao da farinha de arroz crua; não apresenta viscosidade inicial, caracteriza-se, porém, por ter menor temperatura de pasta, quebra de viscosidade e tendência à retrogradação.

El bagazo de cebada procedente de la industria cervecera se utiliza comúnmente en la alimentación animal, pero por medio de un proceso adecuado puede servir como alternativa en las formulaciones de productos alimentares ricos en fibra y proteína. La combinación de bagazo de cebada y arroz (82:18) fue procesada por extrusión para obtener la harina mixta extrudida de bagazo y arroz, de la cual se determinaron las propiedades reológicas y de adsorción de agua, cuyos valores fueron comparados con la harina de arroz cruda. Los modelos matemáticos de Oswin, Smith, Peleg (1988) y Peleg (1993) fueron utilizados para explicar las propiedades de absorción en diferentes temperatura (25, 30, 35 y 45 ºC) y actividades de agua (0.11 a 0.97). An internal mixer connected to a torque rheometer was used to investigate the effect of moisture content (13.2 to 46.8 g.100g- 1), rotation speed (13.2 to 46.8 rpm) and processing temperature (53.2 to 86.8 °C), applying a factorial central composite design, on the specific mechanical energy (SME), pasting viscosity and crystallinity of cassava starch. Torque values were highly significant for the three variables, showing decrease with increasing moisture, temperature and rpm. The highest cold viscosity (CV) was obtained at 13.18 g.100g- 1 moisture, 86.87 °C and 30 rpm due to increased rupture of starch granules caused by processing at lower moisture condition. Peak viscosity (PV) values were higher than CV values which indicated that the processing was not able to destroy completely the molecular integrity of the starch granules. Smaller setback (SB) at high temperature and rpm and low moisture showed possible starch depolymerization causing loss of recrystallization capacity. Processing under low moisture content resulted in reduction of crystallinity. The results showed that the effect of moisture was more pronounced than rotation speed and processing temperature of cassava starch.

Edibles films are an alternative to synthetic materials used for packing food products. Barbados cherry is rich in vitamin C and carotenoids. The aim of this study was to characterize and develop films by casting from cassava starch, lyophilized Barbados cherry pulp and glycerol. The films were characterized with respect to thickness, water vapor permeability (WVP), water solubility, vitamin C, carotene and mechanical properties. The interaction of pulp and glycerol reduced film thickness. An increase in pulp concentration up to 60% increased WVP but beyond this concentration reduced both WVP and solubility leading to an increased level of vitamin C and β carotene in the films.
