ABSTRACT: This research evaluated different rice genotypes regarding physicochemical and instrumental parameters of grain quality and associated the data with sensory analysis to support the creation of rules for classification of the culinary quality of rice (texture), based on isolated or combined parameters. The combination of amylose content and gelatinization temperature was able to predict the rice quality. According to the sensorial panel, the instrumental stickiness was able to segregate rice with very low amylose content or waxy to the other ones. Regarding pasting properties, rice that presented high final viscosity (310-480 RVU), setback (165-245 RVU), and pasting temperature (78 - 88 °C), and low values for breakdown (15-120 RVU), associated with a high stickiness (>-5N) was desirable by the Brazilian consumers. The classification rules created through the relationship between the physicochemical parameters and the texture profile evaluated by the sensory panel will help to verify the culinary profile of the rice samples (through free software), which makes it easier to predict the probability of rice meeting the desired quality standards.

RESUMO: Este trabalho avaliou diferentes genótipos de arroz quanto a parâmetros físico-químicos e instrumentais de qualidade do grão e associou os dados à análise sensorial para subsidiar a criação de regras de classificação da qualidade culinária do arroz (textura), com base em parâmetros isolados ou combinados. A combinação do teor de amilose e temperatura de gelatinização foi capaz de predizer a qualidade do arroz. De acordo com o painel sensorial, a pegajosidade instrumental foi capaz de segregar arroz com baixo teor de amilose ou ceroso dos demais. Em relação às propriedades de pasta, o arroz que apresentou alta viscosidade final (310-480RVU), retrogradação (165-245RVU) e temperatura de pasta (78-88 °C) e baixos valores de quebra pasta (15-120RVU), associados a uma alta pegajosidade (> -5N) será desejável pelos consumidores brasileiros. As regras de classificação criadas por meio da relação entre os parâmetros físico-químicos e o perfil de textura avaliado pelo painel sensorial ajudarão a verificar o perfil culinário das amostras de arroz (por meio de um software livre), o que torna mais fácil prever a probabilidade de o arroz atender aos padrões de qualidade desejados.

ABSTRACT: This study evaluated the changes caused by cooking presoaked aged carioca beans in the autoclave steam, focusing on its bioactive components, antioxidant activity, and nutritional compounds. Additionally, to identify which carioca bean cultivar could preserve the most quantity of bioactive compounds in cooked flour. The cooked flours from Imperador had the highest antioxidant activity (DDPH: 10.58 µmolTrolox·g-1, ABTS: 18.71 µmolTrolox·g-1), anthocyanins (8.08 µg·g-1), and total phenolic content (TPC) (36.69 mg·g-1). The cultivar Gol also retained part of these compounds after cooking. The phenolic and saponin profiles of cooked flours revealed a reduction in phenolic compounds such as catechin, epicatechin, and kaempferol and an increase in soyasaponin-Ba and Bb. The samples Notavel, Dama, and Madreperola, presented the highest amount of soyasaponin-A0. Thus, the cooked flours from Imperador and Gol stood out due to their retention of part of their bioactive compounds, such as polyphenols and group B saponins.

RESUMO: Este estudo avalia as alterações causadas pelo cozimento do feijão carioca, envelhecido e pré-embebido, no vapor da autoclave, com foco em seus componentes bioativos, atividade antioxidante e compostos nutricionais. Além disso, identifica qual cultivar de feijão carioca preserva a maior quantidade de compostos bioativos na farinha de feijão cozida. As farinhas cozidas do Imperador apresentaram a maior atividade antioxidante (DDPH: 10.58 µmolTrolox·g-1, ABTS: 18.71 µmolTrolox·g-1), antocianinas (8.08 µg·g-1) e fenólicos totais (TPC) (36.69 mg·g-1). A cultivar Gol também reteve parte desses compostos após o cozimento. Os perfis fenólicos e saponínicos das farinhas cozidas revelaram redução de compostos fenólicos, como a catequina, epi-catequina e kaempferol e aumento de soyasaponin-Ba e Bb. As amostras Notável, Dama e Madrepérola, apresentaram a maior quantidade de sojasaponina-A0. Assim, as farinhas cozidas do Imperador e Gol se destacaram pela retenção de parte de seus compostos bioativos, como polifenóis e saponinas do grupo B.

RESUMO: Atualmente uma alternativa alimentar que atende às demandas do consumidor moderno é o processamento industrial do feijão. Foi avaliada a adaptabilidade de oito cultivares de feijão ao processamento industrial. Os grãos foram processados em uma indústria do setor, utilizando-se embalagens metálicas com capacidade de 420 g, nas quais as amostras foram acondicionadas sem o emprego de hidratação prévia. O processo de cozimento e esterilização foi realizado em autoclave rotativa. No feijão enlatado foram então avaliados os parâmetros de qualidade. Como resultado, verificou-se que, na classe Carioca, o cultivar BRS Estilo diferencia-se dos demais, devido ao baixo peso drenado que contribuiu para o aumento de sólidos totais no caldo, com baixos valores de dureza, não se adaptando ao tipo de processo utilizado neste experimento. Na classe Preto, observaram-se características de qualidade semelhantes entre BRS Esplendor e IPR Uirapuru, e entre BRS Esteio e BRS Campeiro, destacando-se esta última por apresentar menores índices de grãos danificados após o processamento. Por fim, com as informações presentes neste trabalho pretende-se contribuir com pesquisas futuras sobre o tema e dessa forma incrementar o consumo do feijão e sua exportação na forma de produto processado.

ABSTRACT: A current alternative for meeting the modern consumer’s beans food demands is the industrial processing. This study evaluated the adaptability of eight Brazilian beans cultivars to industrial canning from commercial class cultivars of Carioca and of Black beans. The grains were processed in an industry sector using metallic cans with a capacity of 420 g, where the samples were conditioned without previous hydration. The cooking and sterilization process took place in a rotating autoclave. Quality parameters were evaluated in the canned beans. As a result, it was verified that, for the Carioca class, the Estilo cultivar differs from the rest of the genetic materials in terms of its low drained weight, which contributes to the increase in the total solids in the sauce, which have low hardness values. Estilo cultivar is not suitable for the type of processing used in this experiment. For the Black class, similar quality characteristics were observed between Esplendor and Uirapuru and between Esteio and Campeiro cultivars, where the latter stands out due to its lower damaged bean indices after processing. Finally, with the information present in this paper we intend to contribute to future researches on this subject and thereby increase the consumption and exportation of beans as processed product.

RESUMO: Os alimentos sem glúten são uma tendência crescente no mercado doméstico e internacional, contribuindo para a saúde e o bem-estar, principalmente do público celíaco. O objetivo deste estudo foi desenvolver novas opções de alimentos sem glúten, substituindo a farinha de trigo por farinha de arroz, amido de milho e farinha de feijão extrusada, agregando assim valor a subprodutos industriais de baixo custo. Um novo produto alimentar foi desenvolvido e seus componentes analisados quanto às suas características nutricionais e alterações durante o cozimento. Os bolos assados podem ser fontes de proteínas, possuem boa digestibilidade de amido e proteínas e baixos fatores antinutricionais, principalmente taninos. A incorporação da farinha de feijão extrusada na mistura para bolos sem glúten melhorou a digestibilidade das proteínas, a fibra alimentar total e aumentou o teor de cinzas, ferro e zinco.

ABSTRACT: Gluten-free foods are a growing trend in the domestic and international markets, contributing to health and wellness, especially the celiac public. The objective of this study was to create a new option of gluten-free food by replacing wheat flour by rice grit flour, cornstarch, and extruded split bean flour, and to aggregate value to low cost industrial byproducts. A new food product was developed and its components analyzed for their nutritional characteristics and changes during baking. The baked cakes can be a source of protein, had a good starch and protein digestibility, and low antinutritional factors, notably tannins. Incorporation of an extruded bean flour in a gluten-free cake mix improves protein digestibility, total dietary fiber, and raises ash, iron, and zinc contents.

Abstract The lowland rice breeding program, developed in Minas Gerais state, has as basic objective to release new commercial cultivars. In this way, this program is making available a new cultivar named BRSMG Alterosa, which has as main characteristics: high grain yield, high tillering, medium cicle, diseases tolerance and high grain quality. It was recommended in 2017.

Abstract BRS 901 and BRS 902 are red pericarp rice cultivars developed by Embrapa for irrigated and rainfed lowland production systems in Brazil. These cultivars have medium and early maturation cycles, respectively, and both have high grain yield potential, good lodging tolerance and short to medium length grains.

Abstract An RNA extraction method with high integrity and purity as well as the selection of adequate reference genes are prerequisites for gene expression analysis. For common bean seeds, there is no well-defined protocol that can be used in a laboratory routine for gene expression analysis. In this study, an extraction protocol for RNA from common bean seeds, which produced material with good integrity for qPCR (RIN ≥ 6.5), was optimized. In addition, 10 reference genes were evaluated under qPCR standard conditions using different tissue samples of common beans. Gene stabilities were analyzed using the delta-CT method, Bestkeeper, NormFinder and geNorm approaches. The genes β-tubulin and T197 were ranked as the most stable among the sample sets evaluated with different tissue samples, while PvAct and Pv18S were the least stable. To our knowledge, this is the first study evaluating RNA isolation methods and reference gene selection for seeds of Phaseolus vulgaris.

RESUMO: O feijão destaca-se no cenário mundial como uma leguminosa rica em proteínas e com alto valor nutricional, sendo estando entre uma das espécies mais cultivadas em todo o mundo. Porém, observa-se diminuição do consumo deste alimento devido à demanda de tempo no seu preparo doméstico, sendo então substituído na dieta. Uma alternativa que atende as demandas do consumidor moderno é o processamento industrial. O objetivo deste trabalho é fornecer uma revisão de literatura abordando informações sobre o processamento tipo enlatado em feijão. Atualmente, no Brasil, são realizados poucos trabalhos dentro desta linha de pesquisa, visto que o maior enfoque é para a qualidade tecnológica dos grãos para o consumo tradicional, na forma seca. Neste material são apresentadas informações sobre alguns conceitos e detalhes do processamento industrial, das operações unitárias na produção e dos parâmetros de qualidade avaliados no feijão enlatado. Espera-se, contribuir com a cadeia produtiva do feijão brasileiro, aumentando o consumo e as demandas do processamento industrial, tanto em mercado interno quanto para futuras exportações do produto.

ABSTRACT: Beans are popular as a protein-filled legume of high nutritional value, being one of the most planted species in the world. However, recent years have seen a decrease in the consumption of beans, owing to the time necessary to cook it domestically. Thus, it is being replaced in people’s diets by other foods. An alternative preparation that supplies modern consumers’ demands is industrially processed beans. This article aimed to provide a literature review on the processing of canned beans. Few recent studies have been performed in Brazil on this subject, as most studies have focused instead on the technological quality of dry bean grains processing. In this article industrial processing concepts and features, production unit operations, and canned beans quality standards will be discussed. These efforts are expected to contribute to the Brazilian beans production chain, and consequently to increase consumption of canned beans and the demand for industrial processing of beans in both the domestic market and future product exports.

Resumo As propriedades físicas, químicas e de pasta da farinha e do amido isolado de seis diferentes cultivares de feijão (Phaseolus vulgaris L.) foram investigadas a fim de obter informações para aplicações em novos produtos. Os teores de proteína e de amido da farinha de feijão variaram de 17,72 a 20,27% e de 39,68 a 43,78%, respectivamente. Os amidos de feijão possuem pequenas quantidades de proteínas, lipídeos e material mineral. O teor de amilose variou entre 45,32 e 51,11% e a densidade absoluta, de 1,55 a 1,78 g.cm–3. Os amidos de feijão apresentaram formato arredondado a ovoide, com superfície lisa. Resultados do perfil viscoamilográfico dos amidos e das farinhas mostraram a possibilidade de selecionar cultivares para aplicações específicas, segundo estas características.

Summary The physical, chemical and pasting properties of the flour and isolated starches from six different bean cultivars (Phaseolus vulgaris L.) were investigated in order to obtain information for application in new products. The protein and total starch contents of the bean flours ranged from 17.72 to 20.27% and from 39.68 to 43.78%, respectively. The bean starches had low amounts of proteins, lipids and ash and showed an amylose content ranging between 45.32 and 51.11% and absolute density values between 1.55 and 1.78 g.cm–3. The bean starch granules were round to oval with a smooth surface. Results viscoamylographic profiles of the starches and flours showed the possibility of selecting cultivars for specific applications according to these characteristics.

Resumo:O objetivo deste trabalho foi caracterizar química, física e sensorialmente três genótipos de arroz polido de cultivo irrigado e cinco de terras altas. Determinaram-se: a composição centesimal, o amido, a amilose, a temperatura de gelatinização (Tg), a absorção de água ao cozimento, a cor, a textura instrumental, o perfil sensorial e a aceitação de atributos. A composição centesimal e o teor de amido variaram entre os genótipos. O 'Moti' e a linhagem N2583 foram classificados como cerosos, 'Douradão' apresentou amilose muito baixa, e os demais genótipos, amilose baixa. 'Irga 417', 'Moti' e AB101002 apresentaram Tg baixa; 'Douradão', alta; e os demais, intermediária. O 'Moti' e a linhagem N2583 crus apresentaram os maiores valores de L*; no entanto, após o cozimento, esses valores diminuíram e foram idênticos em todos os genótipos. 'Arroz-da-terra' apresentou maior a*, 'BRS Primavera' e N2583 apresentaram maior b*; e após o cozimento, houve redução desses valores. Na análise sensorial, destacaram-se 'AN Cambará', por pontos escuros e formato alongado; AB101002, 'Irga 417' e 'BRS Primavera', pela firmeza, cor branca e grãos soltos, que foram bem aceitos; e o 'Moti', por ser pegajoso, macio e com brilho, foi o menos aceito. Os atributos sensoriais do arroz são mais associados a características químicas, intrínsecas ao genótipo, do que à atribuição de plantio a terras altas ou irrigadas.

Abstract:The objective of this work was to evaluate the chemical, physical, and sensory properties of three polished rice genotypes of irrigated and five of upland cropping systems. The proximate composition, starch, amylose, gelatinization temperature (GT), water absorption during cooking, color, instrumental texture, sensory profile, and acceptance of attributes were determined. The proximate composition and starch content varied among genotypes. 'Mochi' rice and the lineage N2583 were classified as waxy; 'Douradão' showed very low amylose, and the other genotypes showed intermediate amylose. 'Irga 417', 'Mochi' rice, and AB101002 showed a low GT; 'Douradão', a high GT; and the others, an intermediate GT. Raw 'Mochi' rice and the lineage N2583 showed the highest L* values; however, after cooking, these values reduced and were identical for all genotypes. 'Arroz-da-terra' had the highest a* value, and 'BRS Primavera' and N2583, the highest b*; after cooking, there was a reduction of these values. In sensory analysis, 'AN Cambará' stood out by dark spots and long format; AB101002, 'Irga 417' and 'BRS Primavera', by firmness, white color, and loose grains, which had good acceptance; and 'Mochi' rice, by its stickness, softness and brightness, was the less appreciated. The rice sensory attributes are most associated with chemical characteristics, intrinsic to the genotype, than with the grain attribution to upland or irrigated cropping system.

The aim of this study was to determine the physical and microbiological characteristics of extruded broken beans flour, in addition to developing mixtures for gluten-free cake with these flours, evaluating their technological and sensory quality. Gluten-free formulations were prepared with 45%, 60% and 75% of extruded broken beans. All analyzes of the flours and mixtures for cakes were performed according to standard techniques found in the literature. Sensory analyzes of cakes applied the 9-point structured hedonic scale. Results were submitted to variance analysis and comparison of means test (Tukey, p<0.05). The use of extruded broken beans improved the water absorbed and water solubility index of the mixtures for gluten-free cake, and for the lower viscosity and retrogradation when compared to the standard formulation. All cakes were accepted (rate ≥ 7) for all the analyzed attributes. From the technological and sensory standpoints, the development of gluten-free cake mixtures is feasible with up to 75% of extruded broken beans.

O objetivo deste trabalho foi avaliar a estabilidade microbiológica e físico-química de misturas para bolo sem glúten armazenadas por 240 dias, bem como a qualidade dos respectivos bolos prontos. As formulações sem glúten continham farinha de quirera de arroz crua (FAC) e farinha de bandinha de feijão extrusada (FFE) em substituição total à farinha de trigo, preparadas com 45% e 75% de FFE. As farinhas e as misturas para bolo (MB) foram analisadas quanto ao teor de umidade, atividade de água, pH, acidez total titulável, cor e qualidade microbiológica, conforme técnicas padronizadas. Para os bolos assados avaliou-se a aceitabilidade sensorial, o volume específico, a textura, além da cor e qualidade microbiológica. Os resultados foram submetidos à análise de variância e de componentes da variância, ao teste múltiplo de comparação de médias (Duncan, 5% de probabilidade), ao teste de correlação de Pearson e, quando possível, foi determinada a equação de regressão. As MB sem glúten apresentaram boa estabilidade ao longo do armazenamento, sendo que não houve variação significativa do teor de umidade (variação máxima de 0,7%) e a atividade de água permaneceu sempre abaixo de 0,6, valor ideal para impedir desenvolvimento microbiano. A cor das misturas para bolo sem glúten não sofreu influência significativa do tempo, refletindo na prática em estabilidade mais prolongada da cor dos produtos finais para consumo. Quanto aos bolos prontos para o consumo, aquele com 75% de FFE se destacou pelo aumento percentual significativo de até 25,75% do volume específico. Contudo, todos os bolos foram aceitos (escores > 6) em todos os atributos analisados durante todo o período de armazenamento das misturas. As farinhas e misturas para bolo com FFE podem ser armazenadas até oito meses à temperatura ambiente sem sofrer alterações microbiológicas e físico-químicas que afetem a qualidade dos produtos, inclusive as características tecnológicas e sensoriais dos bolos.

The aim of this study was to evaluate the microbiological and physicochemical stability of mixtures for gluten-free cake, stored for 240 days, as well as, the quality of their baked cakes. The gluten-free formulations contain flour of broken rice (FAC) and extruded broken beans (FFE) in total replacement of wheat flour, which were prepared with 45% and 75% of FFE. The flours and mixtures for cakes (MB) were analyzed for the levels of moisture, water activity, pH, acidity, color and microbiological quality, according to standard techniques. The baked cakes were evaluated for the sensory analyzes, specific volume, texture, beyond the color and microbiological quality. The results were submitted to the analysis of variance and variance components, Duncan’s multiple test for means comparison (probability of 5%), Pearson’s correlation and when possible, analysis of regression. The gluten-free MB showed good stability during storage, without significant variation in moisture content (maximum variation of 0.7%) and water activity always remained below 0.6, optimal value for preventing microbial growth. The color of the mixtures for gluten-free cake had no influence of time, reflecting on practice in longer color stability of the final products. As for baked cakes, the one with 75% of FFE is highlighted by the mean percentage increase of up to 25.75% of the specific volume. However, all cakes were accepted (scores > 6) for all attributes analyzed during the storage period of the mixtures. The flours and cake mixtures can be stored for up to eight months at room temperature without undergoing microbiological and physicochemical changes that affect the quality of the products, including technological and sensory characteristics of the cakes.

The objective of this study was to develop a pre-gelatinized flour using a mixture of broken rice and split beans by thermoplastic extrusion, and to evaluate the physicochemical, nutritional, and technological quality of the final product. The extrusion parameters were maintained using three heating zones with temperatures of 30 ºC, 40 ºC, and 70 ºC; screw speed of 177 rpm; feed rate of 257 g/m, and circular matrix of 3.85 mm. The following characterization analyses were performed: physicochemical, nutritional, water absorption index (WAI), water solubility index (WSI), and paste viscosity. The pre-gelatinized rice and bean flour had an intermediate value of WAI, 7.51 g/g, and high WSI value, 24.61%. Regarding proteins, it was verified an average content of 12.9% in the final product. The amino acid contents found in the pre-gelatinized flour indicate that the mixture has the essential amino acids. It was also found that the pre-gelatinized flour supplies more than 60% of the essential amino acids recommended for children aged one to three years old. The gelatinized flour composed of broken rice and split beans is an alternative to the use of these by-products of the manufacture process of rice and beans to obtain a product with viable technological characteristics and high nutritional value.

The main problem related to rice bran use is that it goes rancid right after its production. The objective of the present study was to apply a mathematical model to evaluate the kinetics of the lipase activity and hydrolytic rancidity of the raw rice bran (RRB), extruded rice bran (ERB), and parboiled rice bran (PRB) stored in low density polyethylene bags at room temperature for 180 days. Extrusion and parboiling were efficient in preventing free fatty acid formationin ERB and PRB.Extrusion reduced the velocity constant of lipase activity as compared to that of RRB while parboiling increased it, and both decreased the lipase activity after equilibrium from 150 days. The extrusion and parboiling treatments increased the velocity constants for the liberation of free fatty acids although the equilibrium was reached with reduced production of free fatty acids in relation to the production of raw rice bran after 150 days ofstorage. Extrusion proved the best treatment under the storage temperature conditions of rice bran from cultivar BRS Primavera.

O objetivo deste estudo foi comparar métodos de melhoramento quanto à variabilidade genética e à eficiência na obtenção de progênies superiores para teor de fibra bruta e produtividade de grãos em feijoeiro comum. As progênies foram obtidas do cruzamento, em 2003, entre as linhagens carioca CNFC 7812 e CNFC 7829. A população segregante foi conduzida por bulk, bulk dentro de F2 e SSD até geração F7. Em 2008 foram amostradas aleatoriamente 64 progênies de cada método para avaliação em Goiás e Paraná. Foram obtidas as estimativas dos componentes de variância, parâmetros genéticos e fenotípicos, média e índices de geração de progênies superiores. As progênies obtidas pelos métodos de bulk e SSD apresentaram diferenças significativas para produtividade e teor de fibra bruta e maior variância genética. O bulk dentro de F2 apresentou os maiores índices de geração de progênies superiores e maiores médias para os dois caracteres, sendo recomendado para os programas de melhoramento de feijoeiro comum.

The objective was to compare breeding methods referring to genetic variability and the efficiency in obtaining superior progenies for crude fiber content and grain yield in common bean plants. The progenies were obtained by crossing Carioca in bredlines CNFC 7812 and CNFC 7829 in 2003. The segregating population was conducted by bulk, bulk within F2 and SSD until the F7 generation. In 2008, 64 progenies were chosen randomly according to each breeding method for evaluation in Goiás and Paraná States. The estimates of variance component, genetic and phenotypic parameters, means and indexes of superior progenie generations were obtained during this study. The progenies obtained by bulk and SSD methods presented significant differences for grain yield and crude fiber content along with larger genetic variance. The bulk within F2 presented higher indexes of superior progenies generation and larger averages for both characters as compared to the other methods, being recommended for breeding programs of common beans.
