Abstract Smoothies are drinks composed of a mixture of vegetables (fruits, vegetables), which can be added or not by milk or yogurt, being a high creamy, healthy beverage and a good source of energy, vitamins, and minerals. Samples of three commercial smoothies: Yellow Fruits (YF), Red Fruits (RF), and Green Vegetables (GV) stored in a glass packaging (260 mL) were characterized for pH, soluble solids (°Brix), water activity (aw), density, rheology and thermal properties, and stored at controlled temperatures of 10 °C and 25 °C in the absence of light. During the period of 180 days, the samples were evaluated for color, polyphenol and anthocyanin contents, and sensorially monitored by odor, taste, overall quality and color characteristics. The smoothies showed similar physicochemical and thermophysical properties to pulp fruit and juice concentrates. The rheological behavior of the samples followed the power law model and was adjusted to the Arrhenius model. All the samples showed a reduction in bioactive compounds, change in color, taste and odor, with these being more significant at the room temperature.

Abstract A study correlating the physical and sensory texture measurements of hearts of palm in conserve was carried out with a view to establishing an instrumental texture standard for this product. One hundred hearts of palm sticks in conserve from different brands, 50 of Açaí and 50 of Pupunha, were cut in half cross wise. One of the halves was used for the sensory evaluation and the other for the instrumental evaluation. Fifty consumers were instructed to bite each half-stick received in the crosswise direction and evaluate the hardness on a linear 10 cm scale and the acceptability of the hardness on a nine-point hedonic scale. The instrumental hardness was analyzed using the TA-XT2 texturometer. The Pearson correlation between the force required to cut the hearts of palm sticks and the acceptability of the hardness was negative and significant at p < 0.05, that is, the greater the force required to cut the stick, the less the consumer liked it. Considering that the maximum acceptable sensory hardness is 5.0 on the 10 cm scale, the maximum acceptable values for the physical measurements are: maximum force/area: 20.4 N/cm2 and mean force/area: 5.6 N/cm2.

Este estudo objetivou avaliar o efeito de coberturas comestíveis como barreira à incorporação de óleo durante o processo de fritura em produtos estruturados pré-fritos congelados, produzidos com raiz de mandioca. Foram utilizados três diferentes hidrocoloides em seis formulações de coberturas, sendo três coberturas compostas por pectina e proteína de soro de leite, e outras três compostas por hidroxipropil-metil celulose e proteína de soro de leite nas proporções de 1:4, 1:1 e 4:1, respectivamente. Foram também produzidos filmes nas mesmas relações utilizadas para as coberturas e, nestes filmes, foram avaliadas a permeabilidade ao vapor de água, a solubilidade em água e a espessura, além das propriedades mecânicas (resistência à tração e elongação). Nos produtos de mandioca, foram avaliados os teores de umidade e lipídios, cor e textura instrumental, e atributos sensoriais. A concentração de proteína de soro de leite influenciou as propriedades dos filmes, provocando diminuição da solubilidade, aumento da espessura, aumento no valor da permeabilidade para os filmes compostos de pectina e redução significativa para os filmes compostos de hidroxopropil-metil celulose e proteína de soro de leite. As coberturas à base de hidroxipropil-metil celulose proporcionaram maiores teores de umidade e menores teores de lipídios nos produtos de mandioca, sendo que a combinação de 1:4 proporcionou uma redução de 32,3% no teor de absorção de lipídios. A cobertura de hidroxipropil-metil celulose na combinação de 1:4 proporcionou ao produto maior crocância, além de coloração dourada, desejável neste tipo de produto. Sensorialmente, os produtos apresentaram diferenças estatísticas somente em relação aos atributos textura e crocância. A partir destes resultados, pode-se concluir então que esta interação, hidroxipropil-metil celulose e proteína de soro de leite na proporção 1:4, quando aplicada em produtos estruturados de mandioca pré-fritos congelados, proporciona menor retenção de lipídios, além de crocância e textura interna adequadas.

The objective of this study was to evaluate the effect of edible coatings as a barrier to oil incorporation during the process of frying frozen pre-fried structured products made from cassava roots. Three different hydrocolloids were used in six coating formulations, three being composed of pectin and milk whey protein, and the other three of hydroxypropyl methyl cellulose and milk whey protein in the proportions of 1:4, 1:1 and 4:1, respectively. Films made with the same formulations were evaluated for their characteristics of water vapor permeability, water solubility and thickness, as well as their mechanical properties (tensile strength and stretching). The cassava products were evaluated for their moisture and lipid contents, color, instrumental texture and sensory attributes. The milk whey protein concentration influenced the characteristics of the bio-films, causing a decrease in solubility, increase in thickness and increase in the permeability value of the bio-films containing pectin, and a significant reduction of the same parameters in the bio-films composed of hydroxypropyl methyl cellulose and milk whey protein. The hydroxypropyl methyl cellulose based coatings resulted in higher moisture contents and lower lipid contents in the cassava products, the 1:4 combination giving a 32.30% reduction in the amount of lipid absorption. The hydroxypropyl methyl cellulose coating in the 1:4 proportion resulted in crispier products with a golden color, desirable attributes in this type of product. The products only presented statistically significant sensory differences for the attributes of texture and crispiness. As from these results it was concluded that the interaction of hydroxypropyl methyl cellulose with milk whey protein in the 1:4 proportion, when applied to frozen pre-fried structured cassava products, resulted in reduced lipid retention and adequate crispiness and internal texture.

Este trabalho investigou a influência da temperatura e da concentração do xarope de sacarose na pré-secagem osmótica de pêssegos. Investigaram-se as variações físicas (cor e textura) e químicas (teores de sólidos solúveis; teores de açúcares totais, redutores, e não redutores; acidez titulável), assim como parâmetros da desidratação osmótica (perda de peso e de água; incorporação de sólidos). Empregou-se o delineamento central composto rotacional variando-se a temperatura (30 a 50 ºC) e a concentração (45 a 65 ºBrix), fixando-se a razão mássica xarope:fruta (4:1), tempo de processo (4 horas), e o formato (fatias). Na análise sensorial, empregou-se o método de aceitação, avaliando-se os atributos aparência, sabor, textura, cor e qualidade geral através de escala hedônica. Modelaram-se os resultados com o programa Statistica (v. 6.0), empregando-se a Metodologia de Superfície de Resposta. Os seguintes modelos matemáticos das variações adimensionais resultaram significativos (p < 0,05) e preditivos: teores de sólidos solúveis, teores de açúcares totais e não redutores, acidez titulável, parâmetro L* e parâmetro perda de água. Os modelos dos atributos cor e aparência resultaram significativos (p < 0,10), mas não preditivos. A temperatura é o efeito preponderante nos modelos. As condições de processo de 50 a 54,1 ºC e 45 a 65 ºBrix implicam maiores perdas de água e melhores desempenhos sensoriais.

This paper evaluated the influence of temperature and concentration of the sucrose syrup on the pre-osmotic dehydration of peaches. Physical (colour and texture) and chemical variables (soluble solid content; total sugar, reducing and non-reducing sugar contents; and titratable acidity) were investigated, as well as the osmotic dehydration parameters (loss of weight and water; solids incorporation). An experimental central composite design was employed varying the temperature (from 30 to 50 ºC) and concentration (from 45 to 65 ºBrix) and maintaining the syrup to fruit ratio (4:1), process time (4 hours), and format (slices). The degree of acceptance was used in the sensory analysis evaluating the following characteristics: appearance, taste, texture, colour, and overall quality using a hedonic scale. The results were modelled using the Statistica program (v. 6.0) and the Response Surface Methodology. The mathematical models of the following dimensionless variations yielded significant (p < 0.05) and predictive results: soluble solids content, total and non-reducing sugar contents, titratable acidity, colour parameter L*, and water loss. The models of the attributes colour and appearance yielded significant (p < 0.10) but not predictive results. Temperature was the prevalent effect in the models. The process conditions in the range from 50 to 54.1 ºC and from 45 to 65 ºBrix led to greater water losses and better sensory performances.

A pesquisa teve como objetivo avaliar o aproveitamento industrial e a qualidade do palmito da palmeira Real Australiana (Archontophoenix alexandrae e A. cunninghamiana) em comparação aos palmitos das palmeiras Açaí (Euterpe oleracea) e Pupunha (Bactris gasipaes). O palmito foi processado como conserva acidificada e pasteurizada e submetido às análises de comprimento e diâmetro dos toletes, peso bruto, líquido e drenado, espaço livre, vácuo, pH, avaliação microbiológica, cor e textura objetivas e avaliação sensorial quanto à cor, aparência, textura, sabor e preferência geral. Os resultados da pesquisa mostraram que o palmito da palmeira Real é adequado para processamento em forma de conserva acidificada e pasteurizada, apresentando características sensoriais semelhantes às das outras variedades. Do ponto de vista da estabilidade ao armazenamento, as análises físico-químicas e microbiológicas mostraram que o palmito da palmeira Real em conserva se apresentou estável durante o período de doze meses de armazenamento. Pode-se afirmar então, que a palmeira Real Australiana apresenta boa qualidade em termos de industrialização na forma de palmito em conserva acidificada e pasteurizada.

The objective of this research was to evaluate the industrial adaptability of the heart of palm from Archontophoenix alexandrae e A. cunninghamiana in comparison with "Açaí" (Euterpe oleracea) and "Pupunha" (Bactris gasipaes) hearts. The heart of palm was canned acidified and pasteurized and analyzed in terms of stems length and diameter, the gross, net and drained weight, headspace; pH; vacuum; microbiological evaluation, objective color and texture and sensorial evaluation of color, appearance, texture, taste and general preference. The results showed that Australian royal palm is adequate for the process of acidified canning and pasteurization since it presented sensorial characteristics similar to other varieties. During 12 months of storage, the physicochemical analysis showed that the Australian royal palm remained stable. It can be said that the Australian royal palm is adequate for industrialization as a canned acidified and pasteurized product.

A fruta estruturada contendo polpa concentrada de mamão (700 g/kg), sacarose (340 g/kg), alginato de sódio (7 g/kg), pectina de baixa metoxilação (7 g/kg) e glicerol (50 g/kg), cortada no formato cilindro sólido (vol. aprox. 2 cm³), desidratada (12% umidade), com cobertura de açúcar impalpável, foi utilizada no estudo de vida-de-prateleira. Foram realizadas análises físicas, químicas, sensoriais e microbiológicas no produto devidamente acondicionado em sacos de filme multilaminado, para acompanhar a evolução da perda de qualidade do produto armazenado a 0, 25 e 35 °C, durante 120 dias. Os resultados mostraram que a firmeza objetiva e as avaliações subjetivas da textura e qualidade global, foram as que melhor identificaram a queda na qualidade da fruta estruturada durante a estocagem. Na condição acelerada (35 °C), o produto foi considerado próprio para consumo até 56 dias de armazenamento, quando atingiu a nota 4,5 (não gostei/nem desgostei) da escala de qualidade global do teste sensorial. Os dados cinéticos, Ea = 19,89 kcal/mol e Q10 = 3, estabelecidos no teste acelerado, permitiram estimar o limite da vida útil em 168 dias para o produto armazenado a 25 °C. Em condições normais de armazenamento, estimam-se 154 dias de vida útil com base na equação da qualidade global dos resultados sensoriais.

The restructured fruit made with concentrated papaya pulp (700 g/kg), sugar (340 g/kg), sodium alginate (7 g/kg), low methoxy pectin (7 g/kg) and glycerol (50 g/kg), cut in a solid cylindrical form (volume approx. 2 cm³), dehydrated (12% humidity) and covered with icing sugar, was chosen for the shelf life studies. The physical, chemical, sensory and microbiological analyses were made on the product packaged in a multi layer film and stored at 0, 25 and 35 °C, for 120 days to check for quality loss. The results showed that the firmness (TA.XT2 Texturometer) and the subjective evaluations of texture and overall quality were the evaluation that best explained the quality loss of the restructured fruit during storage. Under accelerated conditions (35 °C) the product was considered adequate for consumption for up to 56 days, when it reached 4.5 (neither liked nor disliked) from the overall quality scale of the sensorial test. The kinetic values, Ea= 19,89 kcal/mol and Q10= 3, established using accelerated shelf life testing, allowed for the estimation of a shelf life of 168 days for the product at 25 °C. Under normal storage conditions, the shelf life of the product being estimated as 154 days based on the overall quality using the sensory results.

Este trabalho de pesquisa teve por objetivo avaliar o comportamento da pasta de alho sem adição de sal, por um período de três meses. A principal perda de qualidade da pasta de alho é causada pelo escurecimento do produto que ocorre devido à ação de enzimas polifenoloxidases. Para controlar este escurecimento foi utilizado o ácido cítrico. O processamento da pasta de alho compreendeu as etapas: tratamento de imersão, descascamento, obtenção da pasta em "cutter", adição de ácido cítrico e sorbato de potássio para evitar o desenvolvimento de microrganismos deterioradores, acondicionamento em potes de plástico e de vidro, desaeração parcial em câmara de vácuo e armazenamento a temperatura ambiente. O produto final foi submetido a análises microbiológicas, físicas, para avaliação da cor e sensoriais, para avaliação da cor e do aroma. Os resultados da curva de acidificação mostraram que para abaixar o pH inicial da matéria-prima para 4,0 foram necessários 2,1g de ácido cítrico/100g de alho. Do ponto de vista microbiológico, a pasta de alho manteve-se estável durante o período de armazenamento, apresentando contagens < 10UFC/g para bactérias lácticas e <10²UFC/g para bolores e leveduras. As determinações físicas e sensoriais de cor apresentaram resultados coincidentes e embora tenha ocorrido escurecimento, o produto se manteve em condições adequadas por três meses. Quanto ao aroma do produto, houve perda do odor característico, porém não foi detectada diferença significativa entre os dois tipos de embalagens utilizadas.

The objective of this study was to evaluate the behavior of unsalted garlic paste during a three months period. The main cause of quality loss in garlic paste is a darkening of the product due to the action of poliphenolases enzymes. Citric acid was used to control this darkening. Processing of the garlic paste comprised the following steps: immersion treatment, peeling, reduction to paste in a cutter, addition of citric acid and potassium sorbate to avoid the development of deteriorative microorganisms, packing into plastic pots and glass jars, partial de-aeration in a vacuum chamber and storage at room temperature. The final product was submitted to microbiological analyses, physical evaluation of the color and sensory evaluation of color and aroma. The acidification curve showed that it was necessary to add 2.1g of citric acid per 100g of garlic to lower the initial pH value to 4.0. The garlic paste remained microbiologically stable during the storage period. The physical and sensory analyses of color matched, and although darkening occurred, the product remained adequate for three months. There was a loss of the characteristic odor, but no differences were detected between the two types of package.

Este trabalho de pesquisa foi desenvolvido com o objetivo de verificar a eficácia de diferentes concentrações de cloro utilizadas como agente sanitizante na água de lavagem de alface(Lactuca sativa L.), do tipo americana, minimamente processada. Na matéria-prima foram realizadas contagens de bolores, leveduras e coliformes totais. No produto final foram realizadas contagens de bolores e leveduras, coliformes totais e avaliação sensorial. O processamento mínimo da alface compreendeu as seguintes etapas: corte do talo, desfolhamento da cabeça, primeira seleção, primeira lavagem, segunda seleção, corte em tiras, segunda lavagem, tratamento de imersão em soluções contendo 70, 100 e 130mg/L de cloro, centrifugação, acondicionamento em sacos plásticos e armazenamento a 2°C e a 20°C. Os resultados mostraram que a imersão em solução contendo 70mg/L de cloro confere a alface minimamente processada uma vida-útil de seis dias e em solução contendo 100 e 130mg/L, nove dias e que o seu aroma, textura e gosto não foram afetados por estes tratamentos.

This research was carried out aiming at evaluating the efficacy of different concentrations of chlorine used as a sanitizer in the washing water of minimally processed lettuce (Lactuca sativa L.). Total coliform and mould and yeast counts were performed on the raw material. The same microbiological exams plus a sensory evaluation were performed on the final product. The minimal processing of the lettuce consisted of cutting, shredding, first selection of leaves, first washing, second selection, manual slicing, second washing, dipping in solutions of 70,100 and 130mg/L of chlorine, spin drying, packaging in polyethylene bags and storage at 2(0)C and at 20(0)C.The results showed that the chlorine solution containing 70mg/L promoted a shelf-life of 6 days under refrigeration, and the 100 and 130mg/L solutions, 9 days. The sensory characteristics such as texture and flavor were not affected by the treatments studied.

A adequabilidade da variedade de morango Chandler ao processo de congelamento e a influência da utilização de tratamentos pré-congelamento foram avaliadas. Tanto na matéria-prima como no produto final foram realizadas medidas objetivas de textura, pH, acidez total titulável, teor de sólidos solúveis, teor de ácido ascórbico e perda de líquido por exsudação. Subjetivamente foram avaliados o sabor, a textura e a cor do produto final. O preparo dos frutos para congelamento compreendeu os procedimentos normais de limpeza, corte em metades e os tratamentos de pré-congelamento, que utilizaram: sacarose, cloreto de cálcio, pectina e aplicação de calor. Os produtos foram acondicionados em latas com capacidade para 450g (74,6 x 95,2mm), revestidas internamente com verniz epóxi fenólico, que foram recravadas e em seguida congeladas a -25°C. O produto final foi armazenado por 45 dias a -18°C e avaliado após 12h de descongelamento em temperatura de 5°C. Os resultados mostraram que a variedade Chandler apresenta características adequadas ao congelamento e que a adição de cálcio e pectina é útil a este tipo de processamento, colaborando para a diminuição da perda de líquido por exsudação, assim como redução de perdas de ácido ascórbico e não interferindo no sabor e na cor do produto.

The suitability of the strawberry variety Chandler to the freezing process and the influence of pre-freezing treatments were evaluated. Objective measurements of texture, pH, total tritable acidity, soluble solids, ascorbic acid and drip loss were taken in the raw material as well as in the final product. The flavor, texture and color of the final product were subjectively evaluated. The preparation of the fruits for freezing consisted of normal cleaning procedures, cutting in halves and pre-freezing treatments involving the use of sacarose, calcium salt, pectin and heat treatment. The samples were packed in 450 grams(74,6 X 95,2mm) cans, with epoxi internal coat, which were seammed and frozen at -25°C. The final product was stored for 45 days and evaluated after thawing at 5°C during 12 hours. The results pointed out the strawberry variety Chandler as having suitable characteristics to the freezing process; the addition of calcium salt and pectin proved to be effective for reducing the drip loss and the ascorbic acid loss with no changes in the flavor and color of the product.
