ABSTRACT Microbial contamination of the wort during the fermentation process causes significant losses in ethanol production worldwide and creates a dependence of the industry on chemicals and antibiotics to control contamination. Therefore, this study used electron beam (e-beam) to disinfect wort from sugarcane (Saccharum officinarum L.) molasses and investigate the bioethanol fermentation. Four treatments (T0 – T3) were carried out using ionizing doses of radiation through the electron accelerator: 0 (control), 10, 20, and 40 kGy. Total mesophiles, total bacteria, sucrose, glucose, fructose, phenolics, flavonoids, hydroxymethylfurfural (5-HMF), and Furfural were measured. An alcoholic fermentation assay was performed after the irradiation process. The irradiated treatments showed no inversion of sugars and formation of the inhibitory by-products flavonoids, furfural and 5-HMF, except for the phenolic compounds. The lower dose tested (10 kGy) reduced more than 99.9 % of the total mesophiles and more than 99.99 % of the total bacteria in the substrate. In the fermentation, the irradiated worts presented similar (p > 0.05) yields (92, 93, and 94 %) and ethanol productivity levels (0.89, 0.88, and 0.87 g L–1 h–1, for T1, T2, and T3 respectively). However, all treatments presented higher yields and productivity (p < 0.05) when compared to the control (88 % and 0.85 g L–1 h–1), highlighting the possible use of e-beam in wort fermentation at a lower dose (10 kGy). This allows reduction in losses caused by microbial contamination, besides increasing fermentation yield and productivity with lower energy consumption.

ABSTRACT Mutation induction is used to improve existing or generate new varieties. The objective of this study was to evaluate the effect of gamma radiation doses under successive generations of cultivation on seed quality of two soybean lines (VX04-6828 and VX04-5692). Different gamma-ray doses (60Co) were evaluated (0; 50; 150 and 250 Gray) in the M0 (first sowing) generation, and analyzed for water content, germination, vigor, abnormal seedlings, dead seeds, and hilum color. Then, sowing (M0) was carried out to obtain plants and seeds of the first production cycle (M1 generation), and then those of the subsequent cycle (M2 generation). The same analyses of M0 were performed for M2 and M3 generations, with the addition of germination rate and emergence speed index in the field. The data were submitted to analysis of variance in a factorial arrangement. The generations were compared using Tukey’s test, while doses were evaluated by regression analysis. Seeds of the two soybean lines showed significant interaction for the different generations and gamma-ray doses in all the variables analyzed, except for water content. The application of gamma rays in soybean seeds showed effects on successive generations of cultivation, with better physiological quality up to the dose of 150 Gy (Gray) and greater sensitivity to gamma radiation for the VX04-5692 line.

Abstract Cyclodextrin glycosyltransferase (CGTase) catalyzes the conversion of starch into non-reducing cyclic sugars, cyclodextrins, which have several industrial applications. This study aimed to establish optimal culture conditions for β-CGTase production by Bacillus sp. SM-02, isolated from soil of cassava industries waste water lake. The optimization was performed by Central Composite Design (CCD) 2, using cassava flour and corn steep liquor as substrates. The maximum production of 1087.9 U mL−1 was obtained with 25.0 g L−1 of cassava flour and 3.5 g L−1 of corn steep after 72 h by submerged fermentation. The enzyme showed optimum activity at pH 5.0 and temperature 55 °C, and maintained thermal stability at 55 °C for 3 h. The enzymatic activity was stimulated in the presence of Mg+2, Ca+2, EDTA, K+, Ba+2 and Na+ and inhibited in the presence of Hg+2, Cu+2, Fe+2 and Zn+2. The results showed that Bacillus sp. SM-02 have good potential for β-CGTase production.

RESUMO O presente trabalho objetivou avaliar a qualidade pós-colheita de frutos de lima ácida ‘Tahiti’ irradiados. Frutos colhidos de pomares comerciais com casca rugosa, de cor verde oliva brilhante e diâmetro equatorial médio de 56 mm foram beneficiados em casa de embalagem comercial. Em ensaio preliminar foram irradiados frutos colhidos em abril de 2011 com doses de irradiação entre 0 e 750 Gy. As doses de 250 a 750 Gy afetaram negativamente a qualidade interna e externa dos frutos. Consequentemente foram realizadas novas avaliações com doses menores de radiação para frutos colhidos em julho de 2011 (entressafra) e janeiro de 2012 (safra). Em ambas as datas, os frutos foram selecionados e submetidos às doses de 0, 50, 100, 150 e 200 Gy. Em todas as datas, foi usada taxa de irradiação de 0,46 Gy/hora. Após a irradiação, os frutos foram submetidos a análises físicas e químicas durante 20 dias de armazenamento em temperatura ambiente (24±1ºC e 80±5% UR). Para os frutos colhidos em julho de 2011 e janeiro de 2012 a irradiação em dosagens de até 200 Gy não afetou o teor de ácido ascórbico, porém exposição a doses > 100 Gy causou amarelecimento da casca nos frutos de ambas as colheitas. A irradiação em dose = 50 Gy reduziu o teor de sólidos solúveis dos frutos colhidos na entressafra. Nos frutos da safra, a exposição a doses = 150 Gy aumentou a perda de massa. A irradiação de frutos de lima ácida ‘Tahiti’ com doses de 50 a 750 Gy não conservou os atributos de qualidade durante o armazenamento em temperatura ambiente.

ABSTRACT This study aimed to evaluate the postharvest quality evolution of gamma-irradiated ‘Tahiti’ limes. Shiny, olivegreen fruits with coarse skin (56 cm equatorial diameter) harvested in commercial orchars and processed in commercial packing house line were used. In a preliminary assay, fruits harvested in April 2011 were exposed to a gamma radiation range from 0 to 750 Gy. The 250 and 750 Gy doses negatively affected skin quality and pulp of exposed fruits. For this reason, new assays were carried out using lower doses to irradiate fruits harvested in July 2011 (off-season) and January 2012 (regular harvest period). Fruit harvested in both periods were selected and exposed to radiation doses of 0, 50, 100, 150, and 200 Gy. All irradiations occurred at a rate of 0.46 Gy/h. After fruit irradiation, physical and chemical analyses were performed along a 20-day storage period at room temperature (24 ± 1ºC and 80 ± 5% RH). Irradiation of fruits harvested in July 2011 and January 2012 and treated with doses of up to 200 Gy did not affect the ascorbic acid content, but doses > 100 Gy caused skin yellowing of fruits harvested on both periods. Gamma radiation at doses = 50 Gy reduced the total soluble solids content in off-season fruits. Exposure of fruits harvested in the main harvest period to radiation doses = 150 Gy increased weight loss. Irradiation of ‘Tahiti’ limes at doses between 50 Gy and 700 Gy did not preserve postharvest quality during storage at room temperature.

Uma das grandes preocupações para a indústria alimentícia é a gestão dos resíduos gerados em seus processos produtivos. Assim, diversos trabalhos vêm sendo desenvolvidos, buscando usos alternativos para estes resíduos, como forma de minimização dos impactos ambientais e agregação de valor a produtos antes descartados. Aliando esta ideia à busca cada vez maior, por parte dos consumidores, por produtos saudáveis e práticos, objetivou-se, neste trabalho, a caracterização de barras de cereais irradiadas nas doses de 0 kGy, 1 kGy e 2 kGy, incorporadas com casca de abacaxi desidratada. Foram realizadas as seguintes análises: umidade, proteínas, lipídeos, cinzas, carboidratos, valor energético, potencial antioxidante, teor de fenólicos, ácidos orgânicos e perfil de ácidos graxos. Os resultados encontrados para a composição centesimal não variaram em função das doses de radiação utilizadas, reduzindo apenas os teores de antioxidantes, fenólicos e ácidos orgânicos. O produto desenvolvido mostrou potencial para se tornar uma forma eficaz de reaproveitamento de um resíduo da indústria alimentícia e a irradiação interferiu nas características nutricionais do produto final.

One of the major current concerns to the food industry is the management of residues generated in its production processes. Thus, several studies have been developed, seeking alternative uses for these residues, in order to minimize environmental impacts and add value to products previously discarded. Combining this idea with the increasingly search for healthy and practical products, by consumers, this study aimed the characterization of cereal bars irradiated with doses of 0 kGy, 1 kGy, and 2 kGy, incorporated with dried pineapple skin. The following analyses were carried out: moisture, proteins, lipids, ashes, carbohydrates, energetic value, antioxidant potential, phenolic content, organic acids, and fatty acids profile. The results observed for the centesimal composition did not vary as a function of the radiation doses used, reducing only the levels of antioxidants, phenolic compounds, and organic acids. The product showed potential for becoming an effective way of reusing a food industry residue and the irradiation interfered on the nutritional characteristics of the final product.

O leite bovino é um alimento de grande importância com fonte de cálcio e proteínas. O objetivo deste trabalho foi o de avaliar os efeitos da radiação gama proveniente do 60Co sobre a disponibilidade de cálcio e o aspecto sensorial. O leite utilizado foi embalado em sacos para leite conforme o encontrado no comércio. As amostras foram submetidas à radiação gama nas doses 0,1, 0,5, 1,0, 2,0 e 3,0 kGy e ficaram armazenadas a 4 °C, e suas avaliações ocorreram nos 1º, 4º, 7º e 10º dias de armazenamento. Foi avaliado o teor de cálcio e a composição centesimal do leite logo após sua obtenção. A diálise de cálcio in vitro foi realizada nos diferentes tempos de armazenamento. Nas duas doses, com pH mais estável na menor dose de radiação e uma dose abaixo, 0,5 e 1,0 kGy, foi realizada análise sensorial. A análise dos dados foi feita empregando teste de Tukey (5%). Quanto à análise físico-química, as amostras irradiadas melhoraram a disponibilidade do cálcio sendo a dose mais adequada a de 1 kGy devido a sua maior estabilidade do pH no período de 10 dias, porém sensorialmente as amostras não foram bem aceitas.

Milk is an important food because it is rich in calcium and proteins. The objective of this research was to evaluate the effect of gamma radiation from 60Co on the calcium availability and sensorial aspects. The milk samples were packed in bags similar to those used for commercial products. The samples were submitted to gamma radiation at doses of 0.1, 0.5, 1.0, 2.0 and 3.0 kGy and stored at 4 °C with evaluations on the 1st, 4th, 7th, and 10th days of storage. The calcium amount and centesimal composition were evaluated at the beginning of the study. Calcium dialyzis in vitro was performed at different times of storage. Sensorial analysis was conducted on two doses with amore stable pH under the lowest radiation dose and the second lowest radiation dose, 0.5 and 1.0 kGy, respectively. Data analysis was conducted using the Tukey test (5%). Physicochemical analysis showed an increase in calcium availability, and the most adequate dose found was 1 kGy due to its highest pH stability in the period of 10 days, but the sensorial analysis showed that the samples were not well accepted by the testers.

A irradiação gama é eficiente para eliminar a contaminação fúngica em grãos de amendoim. Este apresenta proteínas de alto valor biológico, minerais, vitaminas E, complexo B e alta concentração de lipídios. Este trabalho teve como objetivo avaliar o efeito da aplicação de radiações gama na cor, fenólicos totais, atividade antioxidante e perfil de ácidos graxos em amendoim (Arachis hypogaea L.). Os cultivares IAC-Tatu ST e IAC-Runner 886 foram submetidos a radiações gama com doses de 5,0; 7,5; 10,0; e 15,0 kGy e armazenados em temperatura ambiente. Não foram verificadas diferenças significativas na cor dos amendoins IAC-Tatu ST. Diferenças significativas foram detectadas para a luminosidade e o Croma do IAC-Runner 886. Os fenólicos totais diferiram significativamente entre o controle com 33,27 mg.g-1 e o tratamento com 10,0 kGy com 58,60 mg.g-1 no IAC-Tatu ST, neste parâmetro não foram observadas diferenças significativas no IAC-Runner 886, cujo controle foi 51,59 mg.g-1. Para atividade antioxidante não foi verificada diferença significativa com a dose de 10,0 kGy, recomendada para eliminação fúngica de amendoim. Na dose de 10,0 kGy, verificou-se a diminuição de ácidos graxos saturados, o aumento dos insaturados e o aumento de ácido linoleico. A relação oleico/linoleico diminuiu, justificando novos estudos correlacionando armazenamento e estabilidade oxidativa.

Irradiation is efficient at extincting fungi contamination in peanuts. Peanuts have high biologic value protein, minerals, vitamin E, complex B, and high concentration of lipids. The objective of this research is to evaluate the gamma irradiation effect on color, total phenolic, antioxidant activity, and fatty acid profile in peanuts (Arachis hypogaea L.). Cultivars IAC-Tatu ST and IAC-Runner 886 were submitted to gamma radiation with doses of 5.0; 7.5; 10.0, and 15.0 kGy and storage at room temperature. There was no significant difference in the color of IAC-Tatu ST. However, significant difference was found in the luminosity and Chroma in IAC-Runner 886. Total fenolics differed from the control with 33.27 mg.g-1 and treatment dose of 10.0 kGy with 58.60 mg.g-1 in IAC-Tatu ST. This parameter not had significant difference in IAC-Runner 886 and the control with 51.59 mg.g-1. The antioxidant activity did not present significant difference with a dose of 10.0 kGy, recommended for the elimination of fungi in peanuts. The dose of 10.0 kGy showed a decrease in saturated fatty acids, increase in unsaturated fatty acids, and an increase in linolleic acid. The oleic/linoleic relation decreased justifying further research correlating storage and oxidative stability.

O processamento térmico adequado contribui para aumentar a digestibilidade e eliminar fatores antinutricionais presentes em grãos. Porém, esse processo pode ser prejudicial, causando a perda de nutrientes. A irradiação de grãos pode facilitar sua cocção, reduzindo o tempo de amolecimento. O objetivo do presente trabalho foi avaliar possíveis alterações causadas pela irradiação no tempo de cocção e embebição de grãos de soja convencionais e sem lipoxigenase. As duas cultivares analisadas ('BRS 232' - com lipoxigenase e 'BRS 257' - sem lipoxigenase) diferiram entre si na quantidade de água absorvida, no tempo de embebição e no tempo de cocção dos grãos. A irradiação dos grãos, nas doses de 4kGy e 8kGy, diminuiu a absorção de água e o tempo de cocção.

The appropriate heat processing helps to improve the digestibility and eliminate antinutritional factors present in grain. However, this process can be harmful, causing nutrient losses. The irradiation on grain can facilitate their cooking, and reduces the time for its softening. The objective of this study was to evaluate possible changes caused by irradiation in the time of hydration and cooking in conventional soybean and soybeans without lipoxygenase. The two cultivars ('BRS 232' - with lipoxygenase and 'BRS 257' - without lipoxygenase) differ in the amount of water absorbed, in time of hydration and time of cooking. Irradiation caused lower water absorption, but less time for cooking.

O crescimento nacional da produção de carne de coelhos necessita de maior conhecimento sobre características da carne, bem como o efeito de um processo que permita sua maior conservação. Os cortes congelados da carne de coelho: coxa, pernil e lombo, tratados com dois tipos de antibióticos, norfloxacina e ciprofloxacina, foram irradiados nas doses de 0, 3 e 6 kGy e determinados os teores de ferro heme e não heme dos cortes. As doses de irradiação empregadas foram influentes nos teores de ferro heme e não heme, sendo que a dose de 3 kGy foi a que apresentou os maiores valores, independente do tipo de antibiótico utilizado. Para o ferro heme o antibiótico norfloxacina apresentou os maiores valores e para o ferro não heme os maiores valores foram notados para o antibiótico ciprofloxacina.

The growth in national production of rabbit meat demands greater knowledge of the characteristics of the meat, as well as the effects of a process that allows greater conservation of the meat. Frozen cuts of rabbit meat: thigh, ham and loin, treated with two types of antibiotics (norfloxacyn and ciprofloxacin), were irradiated in doses of 0, 3 and 6 kGy, and the levels of heme and nonheme iron in the cuts were determined. The irradiation doses employed were influential on the levels of heme and nonheme iron, and the dose of 3 kGy was the one that presented the largest values, independent of the type of antibiotic used. For heme iron, the antibiotic norfloxacyn presented the largest values and for nonheme iron the largest values were noted for the antibiotic ciprofloxacyn.

Avaliaram-se os efeitos da substituição de metade do total de proteína da dieta na forma sólida (farelo de soja) por proteína na forma líquida (leite de soja), com relações sólidos:líquidos de 100,0:0%; 87,5:12,5%; e 75,0:25,0%. Utilizaram-se 24 bezerros machos da raça Holandesa com 60 dias de idade, distribuídos em delineamento em blocos ao acaso, com três dietas à base de concentrado (80%) e feno de capim coast-cross (Cynodon dactylon) (20%), balanceadas para nitrogênio e energia. Nas dietas com partes líquidas, o intuito foi manter o reflexo de formação da goteira esofagiana no período experimental de 10 meses, no qual os animais foram mantidos em confinamento, sendo abatidos ao atingirem pesos corporais superiores a 400 kg. Em alguns dos animais, dotados de cânulas de rúmen, foi possível detectar neste órgão apenas pequenas quantidades do leite de soja ingerido, confirmando sucesso na formação da goteira esofagiana. Os ganhos de peso diários apresentaram redução linear (1,399; 1,341; e 1,191 kg) à medida que foram fornecidas maiores quantidades de leite de soja. As conversões de matéria seca e proteína bruta em ganhos de peso, durante os últimos 60 dias experimentais, pioraram conforme aumentaram as quantidades de proteína na forma líquida. O fornecimento de proteína na forma líquida na dieta não altera os rendimentos de carcaça em bezerros holandeses.

The effects were assessed of substituting half the total diet protein in solid form (soybean meal) with liquid form (soybean milk) at solid:liquid ratios of: 100.0:0% L; 87.5:12.5% L; 75.0:25.0% L. Twenty-four Holstein breed 60-d male calf steers were assigned to a randomized block design, with three concentrate (80%) diets and 20% coast-cross (Cynodon dactylon) hay, balanced for nitrogen and energy. In the diets with liquid parts, the intention was to keep the functional reflex of the esophageal groove throughout the 10 months of the experimental period, in which the animals were kept in a feedlot until slaughter at body weights higher than 400 kg. In some of the animals, with rumen canulas, only small quantities of ingested soybean milk were detected in the rumen contents, indicating success in esophageal groove formation. Daily weight gains were linearly reduced (1.399, 1.341 and 1.191 kg) as the treatments supplied larger quantities of soybean milk. Dry matter and crude protein conversions in weight gains, in the last 60 days of the experimental period, declined as the proportions of liquid feed increased. Supplying protein in liquid form in the diet did not alter carcass yield in Holstein steer.

O processo de irradiação é um método eficiente de conservação de alimentos, pois reduz o número de microrganismos patogênicos e deteriorantes. Com doses baixas, as características organolépticas e nutricionais do alimento não são alteradas significativamente, principalmente quando são controlados outros fatores como, por exemplo, a embalagem. Os objetivos deste trabalho foram avaliar a cor, capacidade de retenção de água (CRA) e formação de bases voláteis na carne de cordeiros Santa Inês tratados com diferentes dietas e doses de radiação. Amostras de carne de cordeiro tratados com diferentes dietas - controle, TAC1, TAC2 (taninos altamente condensados) e sorgo - foram embaladas a vácuo e, excetuando-se a controle (sem irradiação), irradiadas nas doses 2 e 4 kGy e armazenadas por 15 dias à temperatura de 4 °C. As medidas de a* (redness) e b* (yelowness) não sofreram influência das diferentes dietas e doses empregadas no experimento. Os valores de L* (lightness) se mostraram diferentes para dietas no controle (sem irradiação) e na dose 2 kGy, mas, quando comparados os efeitos das doses em cada dieta, estas não apresentaram diferenças. Os valores de H e C calculados não mostraram diferenças estatísticas. O tempo de armazenamento influenciou as medidas de a*, b* , L, H e C. A irradiação diminuiu os teores de bases voláteis e CRA, porém o tempo de estocagem aumentou-os.

The irradiation process is an effective method for food preservation because it reduces the pathogenic and/or the number of deteriorating microorganisms. The use of low doses did not alter the organoleptic and sensorial food characteristics significantly, especially when other factors such as packaging are considered. The objective of this work is to evaluate the color, water holding capacity (WHC), and formation of volatile bases in the meat of Santa Ines lambs treated with different diets and radiation doses. Lamb samples treated with different diets: control, TAC1, TAC2 (tannins highly condensed), and sorghum were vacuum wrapped, irradiated in the doses 2 and 4 kGy and control (without irradiation), and stored under 4 °C for 15 days. The values of a* (redness) and b * (yellowness) were not influenced by the different diets and doses used in the experiment. The values of L* (lightness) differed statistically for the control diets (without irradiation) and for 2 kGy dose diet. However, the effects of the doses in each diet were not different. The values of H and C values obtained did not show statistical differences. The storage time influenced the measures of a*, b*, L, H, and C. The irradiation reduced the levels of the volatile bases and water holding capacity (WHC) although these parameters were increased due to the storage time.

Devido a altas perdas de pedúnculos de caju, métodos de conservação são necessários para um maior aproveitamento dos mesmos. Com esse objetivo, pedúnculos de caju vermelho, maduros, obtidos de cajueiro anão precoce, foram irradiados com doses de 0, 0,5 e 1,0 kGy e armazenados por 9 dias, refrigerados 4 ºC para verificação da estabilidade da qualidade durante o período de armazenamento. Para isso foram realizadas análises químicas, verificando mudanças nos teores de açúcares redutores, Brix, vitamina C e pH. Alterações na firmeza e cor também foram observadas. Os teores de vitamina C diminuíram tanto em função do tempo de estocagem como em função das doses de radiação empregadas. A firmeza dos frutos foi influenciada tanto pelas diferentes doses de radiação quanto pelo armazenamento, aumentando durante o armazenamento e diminuindo quanto maiores as doses de irradiação. O método de conservação por irradiação mostrou-se eficiente para o prolongamento da vida de prateleira dos pedúnculos de caju e manutenção de sua qualidade pós-colheita.

The non-efficiency or absence of techniques for adequate handling, transport, and storage of cashew stalks associated with a high level of perishability, generates high economic loss in the commercialization of these fruits, hence the development of conservation methods becomes a necessity in order to enhance the profitability. Cashew apples from precocious dwarf cashew tree were irradiated with doses of 0, 0.5, and 1.0 kGy and stored during nine days under refrigeration at 4 ºC for evaluation of the quality stability during storage. Chemical analyses were performed to verify changes in reducing sugars, Brix, vitamin C, and pH. Alterations in the firmness and color were also observed. The levels of vitamin C decreased as a function of storage as well as a function of the radiation doses employed. The firmness of the fruits was influenced by both the radiation doses and storage time, increasing during storage and decreasing as the radiation doses increased. Irradiation was shown to be efficient in the prolongation of the shelf-life of cashew stalks.

A pesquisa teve como objetivo verificar a viabilidade da radiação gama como método de conservação do arroz polido (Oryza sativa L.). As amostras foram irradiadas com doses 0,5; 1,0; 3,0; e 5,0 kGy. Foram realizadas análises da quebra do grão no beneficiamento, da longevidade e reprodução do Sitophilus oryzae L., a composição centesimal, o conteúdo de amilose aparente e propriedades de pasta dos amidos, e análises para cor (instrumental) e análise sensorial do arroz cru e cozido. Foi utilizado teste de Tukey (p < 0,05) para verificar a diferença estatística entre os tratamentos. A irradiação não alterou a porcentagem de quebra dos grãos durante o beneficiamento e causou efeito negativo no desenvolvimento dos insetos. A irradiação não alterou de maneira significativa a composição centesimal e o conteúdo de amilose aparente. Os resultados da propriedade de pasta foram alterados, ocorrendo redução da temperatura de pasta, diminuição do tempo para ocorrência do pico viscosidade, redução nos valores de viscosidade máxima e viscosidade final e a tendência de retrogradação se tornou menos acentuada com o incremento das doses de irradiação. Foram detectadas diferenças no aspecto sensorial entre as amostras, sendo que a amostra irradiada com a dose de 1,0 kGy obteve maiores médias. Para os resultados da cor instrumental, foi observada diferença nos valores b*, indicando que o arroz sofreu mudanças de branco para amarelado com o aumento da dose de irradiação. O tratamento com dose de 1,0 kGy foi a melhor dose para atingir o objetivo do trabalho.

The objective of this research was to verify the viability of the gamma radiation as polished rice (Oryza sativa L.) conservation method. The samples were irradiated with doses of 0.5; 1.0; 3.0; and 5.0 kGy. Analysis of the grain breakage during the enriching process, longevity and reproduction of the Sitophilus oryzae L., centesimal composition, apparent amylose content, starch paste properties, color (instrumental), and the sensorial evaluation of raw and cooked rice were performed. It was verified that the irradiation did not change the percentage of grain breakage during the enrichment process, and it caused a negative effect on the development of insects. The irradiation did not change significantly the centesimal composition and the apparent amylase content. The Tukey test (p < 0.05) was conducted to verify the differences between the treatments. Gamma irradiation affected the pasting properties of the rice flour. Pasting parameters as temperature, peak, final viscosity, and setback values showed decreasing values with irradiation doses. Differences were detected in the sensorial aspect among the samples, and the sample irradiated with the dose of 1.0 kGy presented greater averages. Regarding the instrumental color parameter, it was observed the difference in the values b* indicating that the rice changed the white color for yellowish with the increase in the irradiation dose. The irradiation dose of 1.0 kGy proved the best to meet the objectives of this study.

A irradiação é um método eficiente para aumentar a segurança microbiológica e preservar os nutrientes contidos nas carnes, entre eles o ferro. A forma de melhor absorção, ferro heme, deve ser preservada, havendo melhora na qualidade nutricional da carne armazenada. A dieta também pode influenciar nos teores e formas em que são encontrados os nutrientes na carne. O ferro é fornecido pela dieta, sendo essencial para os processos metabólicos como transporte de oxigênio, metabolismo oxidativo e crescimento celular. Amostras de carne de cordeiro tratado com diferentes dietas (controle, TAC1, TAC2 e sorgo), foram embaladas a vácuo, e irradiadas nas doses 0, 2 e 4 kGy, usando-se Irradiador Multipropósito com fonte de cobalto-60 (60Co) e armazenadas a 4 °C por 15 dias. Os valores de ferro total e ferro heme foram medidos aos 0 e 15 dias de armazenamento. O armazenamento diminuiu os teores de ferro total (de 18,36 para 14,28 mg.100 g-1) e de ferro heme (de 13,78 para 10,52 mg.100 g-1). As dietas afetaram os níveis de ferro total e heme da carne, sendo que a dieta com sorgo foi a que apresentou maiores teores. A dose de 2 kGy foi a dose que mais afetou os valores de ferro, independentemente dos tempos de armazenamento. Foi constatado que os teores de ferro total e heme variaram em função do tempo de armazenamento, das doses de irradiação e das dietas fornecidas aos cordeiros.

Irradiation is an efficient method to increase the microbiological safety and to maintain the nutrients such as iron in the meat. The best absorption form, heme iron, should be preserved in order to increase the nutritional quality of stored meat. The diet can alter the nutrients contents and form in the meat. The iron is provided from the diet and it is an essential element for the metabolic processes such as oxygen transport, oxidative metabolism, and cellular growth. Meat lamb samples treated with different diets (it controls, TAC1, TAC2 and sorghum) were wrapped to vacuous, and irradiated in the doses 0, 2 and 4 kGy and stored at 4 °C during 15 days. The values of total iron and heme iron were measured at 0 and 15 days of storage. The storage reduced the content of total iron (18.36 for 14.28 mg.100 g-1) and heme iron (13.78 for 10.52 mg.100 g-1). The diets affected the levels of total and heme iron of the meat, and the sorghum diet was the one that presented the larger content. The dose of 2 kGy was the one that affected the iron the most independently of the storage time. It was verified that the amounts of total and heme iron varied according to the storage time, irradiation doses, and lamb diets.
