A suplementação da dieta com fibras solúveis pode ser considerada uma importante medida terapêutica no tratamento de pacientes diabéticos e obesos. Para avaliar o efeito da farinha da casca de maracujá amarelo rica em pectina, foi realizado um ensaio clínico fase II com 43 pacientes portadores de Diabetes Mellitus tipo 2. Estes receberam diariamente 30 g do produto testado durante 60 dias. Observou-se diferença estatística significante na glicemia de jejum (p = 0,000) acompanhada pela redução nos valores médios da hemoglobina glicada (p = 0,032). Em relação ao perfil lipídico, não foi verificado redução dos níveis de colesterol total e colesterol LDL nos pacientes ao longo deste estudo; entretanto, houve redução nos níveis de Triglicerídeos e aumento do colesterol HDL nos mesmos. Os níveis glicêmicos apresentados pelos pacientes antes e após o uso da farinha da casca do maracujá são compatíveis com uma ação positiva no controle da glicemia como adjuvante das terapias convencionais.

The supplementation of diet with soluble dietary fiber can be considered an important therapy measure in the treatment of diabetic and obese patients. In order to evaluate the effect of the flour of the yellow passion fruit peel which is rich in pectin, a phase II clinical trial with 43 patients with type 2 Diabetes Mellitus was performed. They received daily 30 g of the tested product for 60 days. Statistically significant difference was observed in fasting plasma glucose (p = 0.000) accompanied by a reduction in the average values of glycated hemoglobin (p = 0.032). In relation to the lipid profile, there were no reduced levels of total cholesterol and LDL-cholesterol in patients during this study; however, there were reduction in the levels of Triglycerides and increase in HDL cholesterol in them. The glycemic levels presented by the patients before and after the use of the passion fruit peel flour are compatible to a positive action to control blood glucose as an adjunct of conventional therapies.

A farinha da casca de maracujá é rica em uma fibra solúvel chamada pectina. Para avaliar o efeito dessa farinha na redução do colesterol foi realizado um estudo clínico piloto com dezenove mulheres, com idade entre 30 e 60 anos e apresentando hipercolesterolemia (colesterol > 200 mg/dL). Elas foram tratadas diariamente com 30 g da farinha da casca de maracujá por 60 dias. Após esse tempo foi observada uma redução estatisticamente significante (p < 0,05) nos níveis colesterol total (p = 0,00000) e colesterol LDL (p = 0,01193). Os resultados sugerem que a farinha da casca de maracujá seja utilizada na alimentação humana, juntamente com os alimentos, ou como matéria prima na produção de outros produtos, com o objetivo de reduzir o colesterol.

The flour of the passion fruit peel is rich in a soluble fiber called pectin. In order to evaluate the effect of this flour on cholesterol reduction, a pilot clinical study, was carried out with nineteen women, aged between 30 and 60 years, all of whom presented high cholesterol level (cholesterol > 200 mg/dL). The treatment consisted of daily doses of 30 g of the flour during 60 days. At the end of the 60 days it was observed a statistical reduction (p < 0.05) of the total cholesterol (p = 0,00000) and LDL-cholesterol (p = 0,01193) levels. The results suggested that the passion fruit peel flour, rich in pectin, can be used in human diet, with a large variety of foods, or as a raw material for other products intending to reduce cholesterol levels.

Alfaces (Lactuca sativa) cv. lisa, após seleção e pré-lavagem, foram lavadas com água clorada a 5ºC contendo 150ppm de cloro residual livre e pH ajustado para 6.0, enxagüadas e centrifugadas por 8 minutos a 2200rpm. Em seguida, foram acondicionadas em embalagens plásticas de nylon poli 5 camadas, sem e com atmosfera modificada (N2 contendo 20ppm de O2 e no máximo 20ppm umidade) e estocadas a 4ºC. Durante 5 dias foram realizadas mensurações de pH, concentração de sólidos solúveis (graus Brix) e análises de acidez (mL NaOH 0,1M/100g folhas de alface). Os produtos sofreram acidificação detectável pela diminuição do pH em ambas as atmosferas. O incremento da acidez foi mostrado, sendo os registros maiores para as amostras controle (sem atmosfera modificada), e não ocorreram variações de graus Brix. Os resultados fizeram concluir que avanços tecnológicos vêm sendo alcançados visando melhorar a qualidade e vida-de-prateleira do vegetal.

Lettuce (Lactuca sativa) cv. smooth, after being selected and washed, was cleaned with chlorine water at 5ºC, with 150ppm of free chlorine and pH adjusted to 6.0, rinsed and centrifuged for 8 minutes at 2200rpm. Right after, the lettuce leaves were packaged in plastic bags made of nylon poli 5 layers, with and without modified atmosphere (N2 having 20ppm of O2 and 20ppm of maximum moisture) and stored at 4ºC. During 5 days there were pH, soluble solids concentration measurements and acid analysis (mL NaOH 0,1M/100g lettuce leaves). The products became acid, detectable by a pH decrease in both atmospheres. A raise in acidity was shown, being the highest marks for the control samples (without modified atmosphere) and there was no soluble solids variation. Results have shown that technological progress is being reached aiming to improve the vegetable's quality and shelf life.

As cenouras são as principais fontes de origem vegetal em carotenóides provitamínicos A (a e o b-caroteno) e podem ser transformados em vitamina A dentro do organismo animal. Segundo a Pesquisa de Orçamento Familiar realizada na região Sudeste do Brasil, no grupo de raízes e tubérculos, a cenoura é amplamente consumida. As cenouras minimamente processadas foram acondicionadas em embalagens com atmosferas modificadas de 5% O2/10% CO2 e 21% O2 (ar sintético), e tratadas com radiação ionizante gama, fonte de césio, nas doses de 0,25, 0,50, 0,75 e 1,00kGy. Os produtos após o emprego da radiação foram armazenados em refrigeração de 5°C durante 24 dias. Os diferentes tratamentos da cenoura e o grupo controle foram avaliados através das análises de pH, sólidos solúveis totais (SST), acidez total titulável (ATT) e microbiologia. Os resultados de microbiologia evidenciaram que os produtos tratados com as doses de 0,50, 0,75 e 1,0kGy apresentaram redução de 3 a 4 ciclos logarítmicos na contagem total de mesófilos (CTM) logo após a irradiação e uma vida-útil de 20 dias. Não foram detectados coliformes totais e E. coli até o 24º dia. Os patógenos B. cereus, Salmonella e Estafilococos coagulase positivos em 0,1g do produto, também não foram detectados. As contagens de bactérias láticas mantiveram-se menores que 100UFC/g. O processo de irradiação em baixas doses mostra-se promissor na manutenção da qualidade e apresenta-se como uma medida alternativa na redução de perdas pós-colheita.

Carrots are the mains vegetable sources of carotenoids provitamin A (a and b-carotene) which might be transformed into vitamin A in animal organism. According to the Family Budget Survey (FBS, 1991) carried out in the Brazilian Southeast, within the roots and tubers group, carrots are widely consumed. The minimally processed carrots were packaging with 5% O2/10% CO2 and 21% O2 (sintetic air), and g ionizing radiation treatments was carried out with a 137Cs source, of 0.25, 0.50, 0.75 and 1.0kGy doses. After radiation treatments, the products were stored at 5°C for 24 days. The different treatments and the control group were evaluated by analysing for pH, total soluble solids (TSS), total titratable acidity (TTA) and microbiologycal. It was made clear by the microbiologycal analysis results that the products treated with 0.5, 0.75 and 1.0kGy presented a decrease of 3 to 4 logaritmic cicles in aerobic mesophilic microflora just after irradiation and shelf life of 20 days. Total coliforms and E. coli were not detected until the 24th day. The B. cereus, Salmonella and Stafilococos coagulase positive were also not detected in 0.1g of product. The latic microflora were always below detection 100CFU/g level. The results show that the low dose irradiation process is very promising to maintain the quality of the product, being a good alternative to avoid post harvest losses.

O trabalho foi desenvolvido com o objetivo de avaliar o efeito da irradiação gamasobre as características físicas e químicas pós-colheita da cenoura da cultivar Nantes. Segundo a Pesquisa de Orçamento Familiar (POF, 1991) realizada na região Sudeste do Brasil, no grupo de raízes e tubérculos, a cenoura é amplamente consumida. Sabe-se, ainda que, a cenoura representa uma das melhores fontes de carotenóides provitamínicos A (alfa e beta caroteno) na dieta. As cenouras foram tratadas com a irradiação ionizante gama, fonte de Césio, nas doses de 0.25, 0.50, 0.75 e 1.0kgy, atendendo a dose máxima permitida pela FDA (1995). Os diferentes tratamentos da cenoura e o grupo-controle foram avaliados através das análises de pH, sólidos solúveis totais (SST), acidez total titulável (ATT), relação SST/ATT, perda de peso, firmeza, cor, carotenóides totais, ácido ascórbico (vitamina C) e voláteis. A análise de variância (tratamento estatístico F de Fisher) dos resultados obtidos mostrou que não houve diferença significativa ao nível de 5% entre os tratamentos e o grupo controle nas diversas análises realizadas, exceto na diferença total de cor, onde houve uma diminuição da mesma com o aumento da dose de irradiação; na acidez total titulável e na relação SST/ATT devido ao decréscimo dos ácidos orgânicos que geralmente ocorrem após a colheita. O processo de irradiação em baixas doses mostra-se promissor na manutenção da qualidade e apresenta-se como uma medida alternativa na redução de perdas pós-colheita.

The goal of this work was to evaluate the effect of gamma irradiation on the post harvest physical and chemical characteristics of cv. Nantes carrots. According to the Family Budget Survey (FBS, 1991) carried out in the Brazilian Southeast, within the roots and tubers group, carrots are widely consumed. It is also well known that the carrot is one of the best sources of provitamin A (alpha and beta-carotene). Doses of 0.25, 0.50, 0.75 and 1.0kgy of gamma ionizing irradiation, from a cesium source, in accordance with the maximum dose allowed by the FDA (1995), were used on the carrots. The different treatments and the control group were evaluated by analysing for pH, total soluble solids (TSS), total titratable acidity (TTA), TSS/TTA ratio, weight loss, hardness, colour, total carotenoid content, ascorbic acid concentration and volatiles. The variance analysis (F of the Fisher treatment) of the results showed no significant difference at the 5% level between the irradiated samples and the control group for most of the tests, except for the colour intensity, which faded with increase in the irradiation dose, total acidity and TSS/TTA ratio, which decreased due to the decrease in the organic acid concentration after harvest. The results show that the low dose irradiation process is very promising to maintain the quality of the product, being a good alternative to avoid post harvest losses.

Na produção de concentrado protéico de aguapé (C. P. A.), utilizou-se para extração da fração protéica solução de hidróxido de sódio (50mM) na proporção (3:1) sendo três volumes de solução de hidróxido de sódio para um volume de planta desintegrada. A precipitação da proteína foi realizada utilizando solução de ácido clorídrico (100mM) à temperatura de 80° C, o pH foi sendo corrigido até atingir o ponto isoelétrico da proteína, que ocorreu em pH 3,5. O teor de proteína encontrado no C. P. A. foi superior ao encontrado em outros vegetais e produtos de origem vegetal tais como alfafa e farinha de soja por exemplo. A presença de todos aminoácidos essenciais no C. P. A. mostra que sua utilização é viável na produção não só de ração animal, mas também, como suplementação alimentar na dieta humana.

In the producion of protein concentrate was utilized for protein extration solution of hidroxi of sodio (50mM), in proporcion the (3 v. NaOH (50mM) : 1 v. desintegrated plant). In protein precipitation was realized with solution of cloridric acid (100mM) in temperature of 80oC, in pH was until corrigid atinged the isoeletric point of protein, was occured in pH = 3,5. The ratio encontred of protein with C. P. A. was of better quality to the vegetables another and products with vegetable origin with alfalfa and soybean flour for example. The presence of all essencial aminoacids in C. P. A., show your utilization is possible in production of animal ration and how food suplementation in human diet.

Estudos mostram que as fibras solúveis no organismo desempenham melhor controle glicêmico, redução do colesterol sérico, retardam o esvaziamento gástrico, podendo, também, ser metabolizadas no intestino, gerando energia. Empregou-se doce cremoso de goiaba com 1,89% de goma guar, como fonte de fibra solúvel, em indivíduos sadios e diabéticos. Os resultados do Teste Oral de Tolerância à Glicose (TOTG), em 50% dos indivíduos sadios, mostraram que a ingestão simultânea do produto com 4,34g de fibra solúvel ao TOTG promoveu uma significativa redução a nível de 5% (P > 0,05) na glicose plasmática aos 60, 90 e 120 minutos. Houve uma redução significativa (P > 0,05) na glicose plasmática nos indivíduos diabéticos, que receberam o produto com 4,34g de fibra solúvel no TOTG, aos 60 e 120 minutos. O doce cremoso de goiaba por conter 2,89% de fibra solúvel, apresentar baixo valor calórico, ser pronto para o consumo, pode servir como opção para indivíduos sadios e diabéticos.

Reports confirmming the increase on concentration of soluble fibers that perform glycemic control in the organism, reduces serum cholesterol levels, delays gastric emptying and it can also be digested in the intestine, making energy. Was utilized guava cream sweetmeat with 1,89% of guar gum as source of fibers in both healthy and diabetics subjects. The results of Glucose Oral Tolerance Test (GOTT) in 50% of healthy subjects showed that the simultaneous ingestion of the sweet with 4,34g of soluble fibres during GOTT caused a significant reduction (P > 0,05) of plasmatic glucose after 60, 90 and 120 minutes. There was a significant reduction (P > 0,05) of plasmatic glucose in diabetic subjects who were submitted to the GOTT with the sweet containing 4,34g of soluble fibers, after 60 and 120 minutes. For containing 2,89% of soluble fibers, presenting low calories, and being ready for use, the guava cream sweetmeat can be an option for both healthy and diabetics subjects.
