O estudo do perfil dos consumidores e dos fatores envolvidos no processo de compra do iogurte é uma ferramenta importante na identificação dos diferentes segmentos desse mercado e de suas potencialidades. Assim, neste trabalho entrevistaram-se 387 consumidores de iogurte, residentes em Belo Horizonte - MG, que responderam os questionários estruturados. Os resultados foram analisados de forma descritiva, e para verificar a correlação entre características sociodemográficas com o perfil de consumo aplicou-se a análise de correlação de Pearson. Os resultados indicaram que o iogurte sabor morango apresenta maior aceitação pelos consumidores, que a categoria light/diet possui grande parte do seu público consumidor (54%). Segundo a pesquisa, 39,9% dos respondentes que não consomem iogurte light/diet disseram não consumi-lo por não gostar desse produto. Isto revela a importância de pesquisas para desenvolvimento de iogurte light/diet visando à melhoria da qualidade sensorial. O fato de não ver necessidade de consumir o produto foi apontado como um dos principais motivos por não consumir iogurte da categoria light/diet. A qualidade, a marca e o preço apresentaram grande importância na conquista de mercado, sendo os três principais atributos observados no momento da compra de iogurte na cidade estudada. Analisando a correlação entre consumo e fator sociodemográfico, observou-se que a renda e a idade influenciam tanto na frequência de consumo de iogurte quanto no consumo do produto na versão light/diet.

The study of consumers´ profile and the factors involved in the moment of purchasing yogurt is an important tool for identifying different market segments and their potentialities. Therefore, the aim of this study was to interview 387 yogurt consumers residing in the city of Belo Horizonte MG, Brazil, using structured questionnaires. The results were analyzed in a descriptive way. Pearson´s correlation was applied in order to verify the correlation between sociodemographic characteristics and the consumers´ profile. The results indicated that strawberry flavored yogurt shows the greatest acceptance among consumers and the category of light/diet represents a great part of the consumers' preferences (54%). According to the survey, 39,9% of the respondents that do not consume light/diet yogurts stated that they do not appreciate these products. These results shows the importance of carrying out research to develop light/diet yogurt with improved sensorial quality. One of the main reasons pointed out for consumers not to eat light/ diet yogurt is that they do not see the need for consuming it. In the city the research took place, quality, brand and price had the greatest importance in the act of purchasing, since these were the three main attributes reported to have been observed in the moment of the purchase.The analysis of the correlation between consumption and socio-demographic factors showed that income and age influence both the frequency of yogurt consumption and the consumption of the light/diet version of the product.

A água tônica é um refrigerante caracterizado pelo gosto amargo atribuído à presença de quinina. O presente trabalho teve como objetivo avaliar a aceitação e a percepção do gosto amargo de três marcas comerciais de água tônica. Para o teste de aceitação foi utilizada escala hedônica de nove pontos com noventa e seis consumidores. Este estímulo também foi analisado utilizando-se a técnica tempo-intensidade. Nove provadores selecionados e treinados avaliaram as amostras da água tônica utilizando o programa "Sistema de Coleta de Dados Tempo-Intensidade-SCDTI" para Windows. Os resultados obtidos foram analisados por análise de variância (ANOVA) e teste de Duncan para comparação de médias. As marcas de água tônica apresentaram curvas de tempo-intensidade distintas para o gosto amargo. As amostras não apresentaram diferença quanto à intensidade do gosto amargo pela análise tempo-intensidade. Em relação à aceitação, as amostras M-1 e M-2 diferiram da amostra M-3 (p < 0,05), sendo M-3 a menos aceita.

Tonic water is a soda characterized by a bitter taste attributed to quinine. The objective of this work was to evaluate the acceptance and the perception of the bitter taste of three commercial brands of tonic water. For the acceptance test, a hedonic scale of nine points and ninety six consumers were used. This attribute was also analyzed using the Time-intensity technique. Nine individuals, selected as panelists, evaluated the samples of tonic water using the program "System of Collection of Data Time-intensity-SCDTI" for Windows. The obtained results were analyzed by the Analysis of Variance (ANOVA) and Duncan's test. The brands of tonic water showed differences in Time-intensity curves for the bitter taste. The samples showed no difference regarding the intensity of the bitter taste in the Time-intensity's analysis. The M-1 and M-2 samples were better graded than M-3.

Foram estudadas nove marcas de cervejas comerciais brasileiras tipo Pilsen, com o objetivo de avaliar a influência da embalagem na aceitação das mesmas. As amostras foram separadas em três grupos e baseadas na pesquisa Top of Mind/2005. As marcas 1, 2, 3 e 4 (grupo a) foram as mais citadas pelos consumidores nacionais; as 5 e 6 (grupo b) tiveram citação intermediária; e as 7, 8 e 9 (grupo c) são consideradas regionais. O trabalho foi dividido em 3 etapas: teste cego, teste com embalagem e teste com informação. Os testes foram aplicados a 54 julgadores, em condições laboratoriais, usando escala hedônica de 9 categorias. Os resultados foram analisados por ANOVA e teste de Tukey (p < 0,05). No teste cego, a marca 1 diferiu significativamente das marcas 4, 7 e 8, sendo a menos aceita. No teste com embalagem, a situação se inverteu, sendo a marca 1 a mais aceita, juntamente com as marcas 3, 4 e 9, e a marca 7 foi a menos aceita. Já no teste com informação, as cervejas do grupo a e a marca 8 (regional) foram as mais aceitas. Os resultados indicam que muitas vezes a embalagem influencia e pode modificar a aceitação de algumas cervejas.

Nine Brazilian commercial brands of Pilsen beer were studied to evaluate the influence of packaging on their acceptability. The brands were separated into three groups, based on the Top of Mind/2005 research. Brands number 1, 2, 3 and 4 (group a) are the most recognized by national consumers; brands number 5 and 6 (group b) have intermediate recognition and brands number 7, 8 and 9 (group c) are considered regional. This study was separated in 3 stages: blind test, test with labels and test with information. The tests were applied to 54 consumers under laboratory conditions, using a nine-point hedonic scale. The results were analyzed using ANOVA and the Tukey test (p < 0,05). In the blind test, brand 1 was significantly different from brands 4, 7 and 8, being the less accepted. In the test with labels, the situation was inverted, since brand 1 was the most accepted, along with brands 3, 4 and 9; and brand 7 was the less accepted. On the other hand, in the test with information, Group A beers and brand 8, which is regional, were the most accepted. The results indicate that the labels can often influence and modify the acceptability of some beers.

Produtos orgânicos são polêmicos quanto a sua qualidade sensorial. Neste estudo foi realizado um teste de aceitação em relação a um conjunto de atributos: cor, aroma, sabor e impressão global, no qual sessenta e seis consumidores avaliaram quatro amostras de café orgânico e uma amostra de café convencional de quatro diferentes marcas comerciais. Para a realização desse teste utilizou-se uma escala hedônica de nove pontos e os resultados obtidos foram avaliados por meio de Mapa de Preferência Interno (MDPREF). O MDPREF demonstrou que a amostra de café orgânico ORG-4 obteve maior aceitação pelos consumidores em relação aos quatro atributos avaliados, mostrando que nessa marca de café os atributos em conjunto torna-a bem mais apreciada. A marca de café orgânico ORG-1 foi menos preferida quanto aos atributos cor, sabor e impressão global. A amostra de café CON foi menos aceita quanto ao atributo aroma.

Organic products are controversial in relation to sensory quality. In that study an acceptance test was accomplished in relation to a group of attributes: color, aroma, flavor and overall impression, where sixty six consumers evaluated four samples of organic coffee and a sample of conventional coffee of four different commercial marks. For the accomplishment of that test a hedonic scale of nine points was used and the obtained results were analyzed by Internal Preference Map (PREFMD). PREFMD demonstrated that the sample of organic coffee ORG-4 obtained larger acceptance for the consumers in relation to the four attributes, showing that in that mark of coffee the attributes together turn it well appreciated. The mark of organic coffee ORG-1 was less accepted by the consumers in relation to the attributes color, flavor and overall impression. For the attribute aroma, the coffee CON was the one of smaller preference.

Os consumidores estão preocupados em adquirir produtos que atendam as questões ambientais, sociais e conseqüentemente sejam saudáveis, contribuindo para o crescimento da comercialização de produtos orgânicos em todo mundo. O café, produto tradicionalmente cultivado no Brasil e de grande aceitação (70% da população brasileira consome café diariamente), é um dos produtos cultivados sob manejo orgânico. Este trabalho teve por objetivo avaliar as características temporais do gosto amargo na bebida de café orgânico. Foram avaliadas quatro marcas de café orgânico (ORG-1, ORG-2, ORG-3 e ORG-4) e uma marca de café convencional (CON) por meio da Análise Tempo-Intensidade. Sete provadores selecionados e treinados avaliaram as amostras de café utilizando o programa "Sistema de Coleta de Dados Tempo-Intensidade-SCDTI" para Windows. Os resultados obtidos foram estatisticamente analisados por Análise de Variância (ANOVA), teste de Duncan e Análise de Componente Principal (ACP). A marca ORG-3 apresentou maior intensidade máxima (Imax), apresentando diferença estatística significativa (p<0,05) em relação as demais amostras para a percepção desse atributo. Entre as amostras ORG-1, ORG-2, ORG-4 e CON não houve diferença estatística significativa (p>0,05) em relação aos seis parâmetros avaliados.

Nowadays consumers are concerned with purchasing products which are environmentally - friendly and socially - oriented and, consequently, healthy. Thus, the commercialization of organic products has expanded worldwide. Coffee is traditionally cultivated in Brazil and widely accepted (70% of the population drink coffee daily). It is also organically cultivated. This work aimed to evaluate the temporal characteristics of the bitter taste in organic coffee drink. Four organic coffee brands (ORG-1, ORG-2, ORG-3 and ORG-4) and one conventional (CON) brand were evaluated by Time-Intensity Analysis. Seven selected and trained tasters evaluated the coffee samples using the program "Sistema de Coleta de Dados Tempo-Intensidade-SCDTI" (TIME-INTENSITY DATA COLLECTION SYSTEM-TIDCS) for Windows. The results were statistically analyzed by Analysis of Variance (ANOVA), Duncan's tests and Principal Component Analysis (PCA). The ORG-3 brand showed higher maximum intensity (Imax), presenting a significant difference (p<0.05), compared to the other samples. No significant differences were found for ORG-1, ORG-2, ORG-4 and CON (p>0.05) regarding the six appraised parameters.
