Abstract This paper evaluated the drying kinetics at different temperatures and the effect of the drying temperature on the physical-chemical properties and active compounds of the residue from the industrial processing of camu-camu. The drying temperatures of 40, 50, and 60 °C were evaluated. The residues dried at different temperatures were characterized in terms of their pH, water activity, anthocyanins, flavonoids, carotenoids, phenolic compounds and Fourier transform infrared spectroscopy. The parameters of the Page model showed the best adjustments to the experimental data. Drying affected the concentration of active compounds in the camu-camu residue. At 60 °C, the degradation of flavonoids, anthocyanins, and phenolic compounds was lower than in the dry residue, possibly because less time was required to achieve equilibrium in moisture content. Thus, in order to maintain higher concentrations of active compounds in the residue, drying at higher temperatures is recommended.

Resumo Ora-pro-nobis (OPN) (Pereskia aculeata Miller) é uma planta alimentícia não convencional rica em proteínas, fibras e minerais. A inovação deste trabalho é baseada na produção sustentável de um extrato aquoso contendo ferro e compostos bioativos utilizando uma planta nativa brasileira. Uma triagem dos componentes fitoquímicos e a determinação dos compostos fenólicos, flavonoides e taninos foram realizadas usando extrato de OPN. A atividade antioxidante do extrato aquoso de OPN foi investigada empregando-se três diferentes métodos: DPPH•, FRAP e ORAC. Folhas secas de OPN apresentaram elevados conteúdos de proteínas e minerais. A análise de FTIR realizada no extrato aquoso de OPN confirmou a presença de grupos funcionais representativos de compostos bioativos. Os resultados sugerem que é possível usar um solvente aquoso simples para produzir um extrato de OPN rico em ferro, compostos bioativos e com atividade antioxidante, o qual poderia ser potencialmente utilizado como ingrediente alimentar funcional.

Abstract Ora-pro-nobis (OPN) (Pereskia aculeata Miller) is a non-conventional edible plant rich in protein, fibres and minerals. The innovation of this work is based on the sustainability production of the aqueous extract (green solvent) containing iron and bioactive compounds as well as employing a native plant from Brazil. A screening of phytochemicals components, phenolic compounds, flavonoids and tannins contents were performed using OPN extract. The antioxidant activity of the OPN aqueous extract was determined by three different assays as following: 2,2-diphenyl-1-picrylhydrazyl (DPPH•); Ferric Reducing Antioxidant Power (FRAP); and Oxygen Radical Absorbance Capacity (ORAC). The OPN dried leaves presented high protein and minerals contents. Indeed, the Fourier-Transform Infrared Spectroscopy (FTIR Spectroscopy) analysis performed in OPN aqueous extract confirmed the appearance of representative functional groups of the bioactive compounds. Overall the results suggested that it is possible to use simple aqueous solvent to produce OPN extract rich in iron, bioactive compounds and within antioxidant activity that could be potentially used as functional food ingredient.

Abstract The objective of this study was to evaluate the behavior of active compounds concentration present in the industrial by-product of acerola during drying using convective dehydration at 40, 50 and 60 °C. For this, flavones and flavonols, total proanthocyanidins, vitamin C, total phenolic content and antioxidant capacity as function of drying time were determined. The drying data were adjusted using the models of Page, Lewis, Henderson & Pabis, Modified Page and Logarithmic. In relation to the applied models, Page model presented the best fit. Acerola by-products dried at 40 °C showed higher concentrations of active compounds and higher antioxidant capacity. Although the drying process provoked changes in concentration of the active compounds, in the studied temperature range, significant concentrations of those bioactive compounds were observed. Thus, acerola by-product may present potential for application in different foods.

Resumo Frutos de acerola e camu-camu possuem alto teor de vitamina C que, no entanto, pode ser oxidada, dependendo das formas de armazenamento e normalmente os frutos são pouco consumidos na sua forma in natura. Desta forma, o presente estudo teve como objetivo produzir pó de acerola e camu-camu por secagem em spray dryer para manter a estabilidade da vitamina C durante o armazenamento. Os pós de acerola e camu-camu foram caracterizados em relação às suas características fisicoquímicas, atividade antioxidante, concentração de vitamina C e estabilidade, em diferentes condições de armazenamento (30 °C e 40 °C, 75% de umidade relativa). Em geral, os pós foram considerados estáveis, com baixa atividade de água (< 0,40) e umidade (< 4,0 g / 100 g de pó), além de alta concentração de vitamina C (1593,2 e 6690,4 mg / 100 g de pó para acerola e camu-camu, respectivamente). Além disso, uma alta atividade antioxidante foi observada pelos ensaios ABTS●+, DPPH• e FRAP. Os pós armazenados em menor temperatura (30 °C) apresentaram maior estabilidade em relação à vitamina C. Assim, pode-se concluir que os pós de acerola e camu-camu produzidos pela secagem por spray dryer são fontes potenciais de vitamina C e compostos ativos, podendo ser utilizados para diferentes aplicações na indústria de alimentos.

Abstract Acerola and camu-camu fruits possess high vitamin C content. However, since these fruits are little consumed in their fresh form, it is important to consider that vitamin C can be oxidized depending on storage conditions. Thus, this study aimed to produce acerola and camu-camu powders by spray drying to maintain the stability of their vitamin C content during storage. Acerola and camu-camu powders were characterized in relation to their physicochemical characteristics, antioxidant activity, and vitamin C concentration and stability under different storage conditions (30 °C and 40 °C, 75% relative humidity). In general, the powders were proven to be stable, with low water activity (< 0.40) and humidity (< 4.0 g/100 g powder), as well as high vitamin C concentrations (1593.2 and 6690.4 mg/100 g of powder for acerola and camu-camu, respectively). Furthermore, we observed a high antioxidant activity by ABTS●+, DPPH• and FRAP assays. The powders stored at lower temperature (30 °C) showed higher vitamin C stability. In conclusion, acerola and camu-camu powders produced by spray drying are potential sources of vitamin C and active compounds and are therefore suitable for several food industry applications.

Abstract Orally disintegrating films (ODF) produced with a hydrophilic polymers are a thin and flexible material, wich disintegrate in contact with saliva and can vehicule bioactive materials. The aim of this study was to develop and characterize ODF formulation with potential to act as a carrier for different bioactives compounds prepared with low cost polymers. Gelatin (G), starch (S), carboxymethyl cellulose (CMC) and their blends (G:S, CMC:S, CMC:G, and CMC:S:G) were prepared by casting technique with sorbitol as a plasticizer. The formulations were characterized in terms of visual aspects, FTIR, SEM, mechanical characteristics, hygroscopicity, dissolution (in vitro and in vivo) and swelling index. FTIR analysis revealed that no interaction between polymers in ODF was observed. By SEM, it was possible to observe differences on surfaces by different polymers. ODF made with CMC and CMC:G presented higher water absorption (P<0.05) and higher swelling index probably due to the higher water affinity by CMC. Formulations with G, CMC:G and CMC:S:G presented the highest values of tensile strength (P<0.05). ODF prepared with S alone presented the highest disintegration time, the others formulations showed in vitro dissolution ranging from 5.22 to 8.50 min, while in vivo dissolution time ranged from 2.15 to 3.38 min. By the formulations made with G and blend of G:S and CMC:S:G it is possible to develop a ODF of low cost with desired characteristics being an alternative vehicle to deliver functional compounds for continuous use.

Este trabalho teve como objetivo avaliar o efeito de diferentes concentrações de colágeno hidrolisado nas propriedades de filmes de desintegração oral contendo extrato etanólico de própolis como componente ativo. Os filmes foram avaliados em relação aos fenóis totais, propriedade mecânica, solubilidade, ângulo de contato, tempo de desintegração e microestrutura. Os filmes foram produzidos por "casting" com concentrações de 2 g de massa proteica (gelatina e colágeno hidrolisado), 30 g de sorbitol/100 g de massa proteica e 100 g de extrato fenólico de própolis/100 g de massa proteica. Colágeno hidrolisado foi incorporado nas concentrações de 0, 10, 20 e 30 g/100 g de massa proteica. Verificou-se que o aumento da concentração de colágeno hidrolisado provocou redução na tensão de ruptura e aumento da elongação, entretanto todos os filmes apresentaram comportamento plástico. Observou-se também aumento da solubilidade à 25 ºC e redução do ângulo de contato, bem como do tempo de desintegração. Observou-se ainda, que os todos filmes apresentaram concentração considerável de fenóis e estrutura interna porosa. Desta forma, maiores concentrações de colágeno apresentaram matrizes poliméricas mais hidrofílicas, mais solúveis e com menor tempo de dissolução o que favorece a utilização destes materiais como carreadores de componentes ativos para liberação na cavidade oral.

This study aimed at evaluating the effect of different concentrations of hydrolyzed collagen (HC) on the properties of an orally disintegrating film containing propolis ethanol extract (PEE) as an active component. The films were evaluated in terms of total phenols, mechanical properties, solubility, contact angle, disintegration time, and microstructure. The films were prepared by casting with 2 g of protein mass (gelatin and HC), 30 g of sorbitol/100 g of protein mass, and 100 g of PEE/100 g of protein mass. HC was incorporated at concentrations of 0, 10, 20, and 30 g/100 g of protein mass. It was found that increased concentrations of HC reduced tensile strength and increased elongation; however, all films showed plastic behavior. An increase in solubility at 25 ºC, a reduction in the contact angle, and disintegration time were also observed. Thus, higher concentrations of collagen led to more hydrophilic and more soluble polymeric matrices that showed shorter dissolution time, favoring the use of these materials as carriers for active compounds to be delivered in the oral cavity.

O objetivo deste trabalho foi estudar o efeito do grau da hidrólise (HD) e da concentração (C PVA) de dois tipos de poli (vinil álcool) (PVA) e do tipo e da concentração de plastificantes nas propriedades de fases de filmes biodegradáveis à base de misturas de gelatina e PVA, usando-se metodologia de superfície de resposta. Os filmes foram feitos por casting e as propriedades estudadas foram a temperatura de transição vítrea (Tg) e a fusão (Tm), determinadas por calorimetria diferencial de varredura (DSC). Para os dados obtidos na primeira varredura, o ajuste do modelo linear foi estatisticamente significativo e preditivo somente para a segunda temperatura de fusão. Neste caso, o efeito mais importante foi devido ao HD do PVA. Com relação à segunda varredura, o modelo linear pôde ser ajustado aos dados de Tg com somente dois parâmetros significativos. As concentrações de PVA e de plastificante tiveram um efeito importante em Tg. Em relação à segunda temperatura de fusão da segunda varredura, o modelo linear foi ajustado aos dados, com dois parâmetros significativos, o HD e a concentração de plastificante. Mas, o efeito mais importante foi provocado pelo HD do PVA.

The aim of this work was to study the effect of the hydrolysis degree (HD) and the concentration (C PVA) of two types of poly (vinyl alcohol) (PVA) and the effect of the type and the concentration of plasticizers on the phase properties of biodegradable films based on blends of gelatin and PVA, using a response-surface methodology. The films were made by casting and the studied properties were their glass (Tg) and melting (Tm) transition temperatures, which were determined by diferential scanning calorimetry (DSC). For the data obtained on the first scan, the fitting of the linear model was statistically significant and predictive only for the second melting temperature. In this case, the most important effect on the second Tm of the first scan was due to the HD of the PVA. In relation to the second scan, the linear model could be fit to Tg data with only two statistically significant parameters. Both the PVA and plasticizer concentrations had an important effect on Tg. Concerning the second Tm of the second scan, the linear model was fit to data with two statistically significant parameters, namely the HD and the plasticizer concentration. But, the most important effect was provoked by the HD of the PVA.

O objetivo deste trabalho foi o estudo do efeito do Grau de Hidrólise (GH) do poli(vinil álcool) (PVA) nas propriedades dos filmes à base de blendas de gelatina suína e PVA com dois GH. Os filmes foram produzidos com soluções com 2 g de macromoléculas/100 g de solução, contendo 23,1 g de PVA.100 g-1 de macromoléculas e 25 g de glicerol/100 g de macromoléculas. As propriedades mecânicas e térmicas, cor, opacidade, umidade e solubilidade, além de espectros de infravermelho com transformada de Fourier (FTIR) dos filmes, foram estudadas. As soluções foram analisadas por reometria dinâmica. Os filmes produzidos com o PVA de menor GH foram mais higroscópicos e mais solúveis. Mas o tipo de PVA não afetou a cor, afetando a opacidade e o brilho dos filmes. O PVA com maior GH proporcionou filmes mais resistentes, e o PVA de menor GH produziu filmes mais resistentes à tração, embora menos deformáveis na perfuração. O GH do PVA não afetou a temperatura de transição vítrea dos filmes, determinada na primeira varredura, mas a afetou na segunda varredura. Os resultados das análises de FTIR corroborraram com esses resultados. As propriedades viscoelásticas das soluções não foram afetadas pelo GH do PVA, muito possivelmente por se tratar de soluções diluídas.

The aim of this work was to study the effect of the Degree of Hydrolysis (DH) of poly(vinyl alcohol) (PVA) on the properties of films based on blends of pigskin gelatin and PVA with two DH. The films were made with solutions with 2 g macromolecules/100 g solution, containing 23.1 g PVA.100 g-1 macromolecules and 25 g glycerol/100 g macromolecules. The mechanical and thermal properties, color, opacity, moisture and solubility of the films were studied, as well as Fourier Transform Infrared (FTIR) spectra. The solutions were analyzed by dynamic rheometry. The films containing PVA with lower DH were more hygroscopic and more soluble. However, the type of PVA did not affect color, but affected the opacity and the gloss of the films. The PVA of higher DH produced films which were more resistant to puncture and stress, and the PVA of lower DH produced films which were more deformable upon stress, although less deformable upon puncture. The DH of PVA did not affect the first scan glass transition temperature of the films, but did affect this property in the second scan. The results from the FTIR analysis were in conformity with the results of the thermal analysis. The viscoelastic properties of the solutions determined by rheometry were not affected by the DH of PVA, possibly because the solutions studied were diluted.

Dentre os fatores que afetam a atividade da enzima transglutaminase, a temperatura de reação ou incubação é um fator determinante no grau de reticulação. Por outro lado, para a gelatina, tipicamente a rede estrutural polimérica é estabilizada por forças secundárias, sendo que a formação da matriz polimérica envolve um delicado balanço entre interações polímero-polímero e polímero-solvente, e este balanço é fortemente dependente do histórico térmico da solução. Desta forma, o objetivo deste trabalho foi avaliar o efeito da temperatura na reação de modificação enzimática em relação às propriedades funcionais dos filmes modificados à base de gelatina (propriedades mecânicas, de barreira ao vapor de água, solubilidade em água e parâmetros de cor dos filmes). Viscosidade aparente das soluções filmogênicas foram também avaliadas. Foram produzidos filmes denominados nativo (FN), modificado enzimaticamente (FME) e termicamente tratado (FC). De acordo com os resultados obtidos, observou-se que a temperatura de reação não afetou as propriedades mecânicas e a solubilidade dos diferentes filmes estudados. Por outro lado, filmes modificados enzimaticamente (FME) na temperatura de 50 °C apresentaram permeabilidade ao vapor de água significantemente inferior aos produzidos nas demais temperaturas e tratamentos (FN e FC). O tratamento térmico também provocou redução da permeabilidade ao vapor de água.

The activity of transglutaminase (one crosslinking enzyme) can be affected by the temperature of reaction. Gelatin matrix gel formation depends on the balance between polymer-polymer interactions and a polymer-solvent solution. This balance also depends on the amount and type of thermal treatment to the gelatin solution. The aim of this work is to evaluate the effect of the temperature on the crosslinking reaction using transglutaminase. Mechanical properties, water vapor permeability, water solubility and color/opacity of the films were evaluated. Viscosity of the solutions was also evaluated. Native film (FN), enzymatically modified film (FME) and thermal treated film (FC) were produced. According to the results, the temperature which was used did not significantly change the mechanical properties and the solubility of the films produced using different treatments. Enzymatically modified films at 50 °C showed the lowest water vapor permeability compared to the other temperatures and treatments (FN e FC). Thermal treatment also caused a reduction in the water vapor permeability.
