O estudo do perfil dos consumidores e dos fatores envolvidos no processo de compra do iogurte é uma ferramenta importante na identificação dos diferentes segmentos desse mercado e de suas potencialidades. Assim, neste trabalho entrevistaram-se 387 consumidores de iogurte, residentes em Belo Horizonte - MG, que responderam os questionários estruturados. Os resultados foram analisados de forma descritiva, e para verificar a correlação entre características sociodemográficas com o perfil de consumo aplicou-se a análise de correlação de Pearson. Os resultados indicaram que o iogurte sabor morango apresenta maior aceitação pelos consumidores, que a categoria light/diet possui grande parte do seu público consumidor (54%). Segundo a pesquisa, 39,9% dos respondentes que não consomem iogurte light/diet disseram não consumi-lo por não gostar desse produto. Isto revela a importância de pesquisas para desenvolvimento de iogurte light/diet visando à melhoria da qualidade sensorial. O fato de não ver necessidade de consumir o produto foi apontado como um dos principais motivos por não consumir iogurte da categoria light/diet. A qualidade, a marca e o preço apresentaram grande importância na conquista de mercado, sendo os três principais atributos observados no momento da compra de iogurte na cidade estudada. Analisando a correlação entre consumo e fator sociodemográfico, observou-se que a renda e a idade influenciam tanto na frequência de consumo de iogurte quanto no consumo do produto na versão light/diet.

The study of consumers´ profile and the factors involved in the moment of purchasing yogurt is an important tool for identifying different market segments and their potentialities. Therefore, the aim of this study was to interview 387 yogurt consumers residing in the city of Belo Horizonte MG, Brazil, using structured questionnaires. The results were analyzed in a descriptive way. Pearson´s correlation was applied in order to verify the correlation between sociodemographic characteristics and the consumers´ profile. The results indicated that strawberry flavored yogurt shows the greatest acceptance among consumers and the category of light/diet represents a great part of the consumers' preferences (54%). According to the survey, 39,9% of the respondents that do not consume light/diet yogurts stated that they do not appreciate these products. These results shows the importance of carrying out research to develop light/diet yogurt with improved sensorial quality. One of the main reasons pointed out for consumers not to eat light/ diet yogurt is that they do not see the need for consuming it. In the city the research took place, quality, brand and price had the greatest importance in the act of purchasing, since these were the three main attributes reported to have been observed in the moment of the purchase.The analysis of the correlation between consumption and socio-demographic factors showed that income and age influence both the frequency of yogurt consumption and the consumption of the light/diet version of the product.

O estudo do perfil dos consumidores e dos fatores envolvidos no processo de compra do café é uma ferramenta importante na identificação dos diferentes segmentos deste mercado e de suas potencialidades. Por outro lado, também é importante compreender porque alguns consumidores recusam a bebida. Portanto, objetivou-se neste trabalho entrevistar os moradores da cidade de Belo Horizonte - MG, a fim de identificar consumidores e não consumidores de café, para traçar o perfil de ambos, descrever suas características, fatores motivacionais e justificativas para consumo ou não do café. Para isto, 250 consumidores foram entrevistados e os resultados avaliados de forma descritiva. Os resultados revelaram que a bebida é consumida por uma parcela heterogênea e que corresponde à maioria da população. Em geral, os consumidores associam o consumo do café ao hábito, prazer, família, amizade e trabalho. Isso indica as motivações para o seu consumo reflete o significado social da bebida quer no âmbito doméstico, trabalho ou no círculo de amizade e que este significado está fortemente associado aos hábitos e costumes da sociedade brasileira. Observou-se a necessidade de expansão deste mercado entre os jovens.

The study of consumer's profile and the factors involved in the process of coffee purchase is an important tool in the identification of the different segments of this market and its potentialities. On the other hand, it is also important to understand the reasons why some consumers refuse the drink. Therefore, the aim of this study was to interview the residents of the city of Belo Horizonte - MG - Brazil in order to identify consumers and non consumers of coffee to trace the profile of both, to describe their characteristics, motivational factors and justifications to consume coffee, or not. For that reason, 250 consumers were interviewed and the results were evaluated in a descriptive way. The results revealed that the drink is consumed by a heterogeneous portion of consumers which corresponds to most of the population. In general, consumers associate the consumption of coffee to habit, pleasure, family, friendship, and work. This indicates the motivations for the consumption of coffee, and it reflects the social meaning of the drink in the domestic environment, work or in friendship circles. This meaning is strongly associated with habits of the Brazilian society. The need of expansion of this market among youths was observed.

O produto preparado líquido aromatizado, comercialmente conhecido como "água aromatizada" e recém-lançado no mercado brasileiro, é vendido com o apelo de saúde e inovação. No entanto, por se tratar de um produto pouco familiar aos hábitos de consumo da população brasileira, as motivações para o seu consumo ainda são desconhecidas. Diante deste contexto, o presente estudo teve por objetivo avaliar o perfil dos consumidores da cidade mineira de Juiz de Fora quanto ao produto, por meio de uma pesquisa de mercado realizada em junho de 2007. Para o levantamento dos dados, utilizou-se uma pesquisa descritiva direta e estruturada (survey) com 303 consumidores, por meio da aplicação de questionários estruturados. A faixa etária predominante (40,3%) situou-se entre 20 e 30 anos, sendo a maioria do sexo feminino (65%), com elevada escolaridade e renda familiar entre 1 e 6 salários mínimos (52,8%). Dos indivíduos entrevistados, 37% disseram que consumiram o produto motivados principalmente pelo fator novidade. Destes, 20,5% confundiram o produto com refrigerantes de baixa gaseificação. A maioria dos respondentes demonstrou desconhecer o produto, fato que pode estar relacionado a falta de divulgação nos estabelecimentos comerciais e pelas empresas através da mídia local.

The flavored drink commercially known as "flavored water" and recently launched in the Brazilian market is sold with health and innovation appeal. However, since it is not very familiar product to the habits of consumption of the Brazilian population, the motivation for its consumption is still unknown. The present study evaluated the behavior patterns of 303 consumers of the city of Juiz de Fora (MG), Brazil, towards the product through a market survey conducted in June 2007. A direct, descriptive, and structured survey was carried out using a structured questionnaire. The majority of the respondents (40.3%) were within the age group between 20 and 30 years old and were high educated females (65.0%) with family income between 1 and 6 minimum wages (52.8%). The results indicate that 37% of the interviewees stated product stated that the novelty aspect of the product motivated its consumption. Among the interviewers, 20.5% mistook the studied product with soft drinks with low gasification rate. Most of the interviewees did not know the product, which can be a result of a lack of popularity of the product in commercial establishments and in companies due to poor marketing.
