Abstract One physical modification (autoclaving) and five chemical modifications (lintnerization, crosslinking, acetylation, hydroxypropylation, and oxidation) were performed on the native oat starch. The starches were mixed with chitosan (Ch) and plasticizer (glycerol) to make films. The film-forming solutions (FFS) were characterized rheologically and evaluated for physical properties (color, thickness, humidity and solubility), water vapor and oxygen permeability (10 and 25 °C), and mechanical properties. Antibacterial activity was evaluated against Escherichia coli, Staphylococcus aureus and Listeria monocytogenes by the agar diffusion. The functionality of the films as packaging in ground pork was evaluated by counting fecal coliforms and total aerobes for 21 days at 4°C. All the FFS presented a pseudoplastic-type behavior. The addition of Ch increased the stress at fracture (TF) and decreased the percentage elongation (% E) in all the films; being the Oxidized-Ch formulation the one that presented the greatest increase (≈ 200 %) in TF and the smallest decrease (38 %) in % E. All formulations with Ch presented antibacterial activity, which was higher in the Oxidized-Ch film and decreased with the evaluation time. The results generally indicated that the Oxidized-Ch film may represent a suitable formulation as antibacterial packaging with adequate physical, mechanical, and barrier properties.

Resumen Se realizó una modificación física (autoclaveado) y cinco modificaciones químicas (lintnerización, entrecruzamiento, acetilación, hidroxipropilación y oxidación) al almidón nativo de avena. Los almidones se mezclaron con quitosano (Q) y plastificante (glicerol) para elaborar películas. Las soluciones formadoras de película (SFP) se caracterizaron reológicamente. En las películas se evaluaron las propiedades físicas (color, grosor, humedad y solubilidad), la permeabilidad al vapor de agua y al oxígeno (10 y 25 °C) y las propiedades mecánicas. Se evaluó la actividad antibacteriana frente a Eschericia coli, Staphylococcus aureus y Listeria monocytogenes mediante el método de difusión en agar. La funcionalidad de las películas como envase de carne picada de cerdo se evaluó mediante el recuento de coliformes fecales y aerobios totales durante 21 días a 4°C. Todas las SFP presentaron comportamiento pseudoplástico. La adición de Q aumentó la tensión a la fractura (TF) y disminuyó el porcentaje de elongación (% E) en todas las películas; siendo la formulación Oxidado-Q la que presentó el mayor incremento (≈ 200 %) en TF y la menor disminución (38 %) en %E. Todas formulaciones con Q presentaron actividad antibacterial, la cual fue mayor en la película Oxidado-Q y disminuyó con el tiempo de evaluación. En general, los resultados indicaron que la película Oxidado-Q puede representar una formulación conveniente como envase antibacteriano con adecuadas propiedades físicas, mecánicas y de barrera.

ABSTRACT The objective of this study was to evaluate the productive performance, apparent digestibility, and carcass and longissimus dorsi muscle characteristics of lambs fed diets supplemented with four levels of Saccharomyces cerevisiae. Thirty-two male Hampshire lambs (25.82±1.95 kg body weight) were distributed in four treatments: basal diet (20:80, forage:concentrate), and the inclusion of 0, 3, 5, and 10 g animal−1 d−1Saccharomyces cerevisiae. The variables evaluated were dry matter intake, daily weight gain, feed conversion, apparent digestibility, dorsal fat thickness, longissimus dorsi muscle area, and physicochemical characteristics of carcass and muscle. We used a completely randomized design and orthogonal polynomials to test the linear and quadratic effects of the inclusion levels of the yeast. Saccharomyces cerevisiae showed a quadratic effect on lamb performance. Dry matter intake decreased with yeast in response to a better feed conversion and body weight gain; however, at the highest Saccharomyces cerevisiae dose, daily weight gain and final weight were lower than with the basal diet treatment. Saccharomyces cerevisiae did not affect apparent digestibility or carcass and muscle physicochemical characteristics. Supplementation with 3 and 5 g d−1 Saccharomyces cerevisiae improves productive performance of lambs fed high concentrate diets without affecting the physicochemical characteristics of the carcass or muscle.

Abstract The objective of this research was to determine the effect of mycorrhizae, chemical fertilization and its combination on foliar area, morphological composition, production and seed quality of pearl millet (Pennisetum glaucum Br.). The evaluation was carried out in spring-summer 2013 in the San Luis Experimental Field of INIFAP, INIFAP and Azo-Fer mycorrhizae were used, as well as 120-60-00 and combination of mycorrhizae with 60-30-00 and a control (without any fertilizer). The variables evaluated were plant height, leaf area index, morphological composition, seed production, weight of one thousand seeds, hectoliter weight, purity, moisture content, number of seeds per kg and efficiency in water use. A completely randomized experimental design was used (Tukey, 0.05). No differences were observed (p> 0.05) in the index of plant height, leaf area, purity, humidity, hectoliter weight and weight of a thousand seeds. Seed production was similar (p> 0.05, kg ha-1) with the use of biofertilizers and fertilizers (mycorrhiza INIFAP= 2 221, mycorrhiza INIFAP + 60-30-00= 1 811, mycorrhiza Azo-Fer= 1 783, mycorrhiza Azo-Fer + 60-30-00= 1 754) and mineral nutrition (2 685); however, different from the control (p≤ 0.05; 1 631). In morphological composition in both anthesis and milk grain state, there was no difference in stem biomass between the sources of nutrition (p≤ 0.05) and they were different from the control.

Resumen El objetivo de esta investigación fue determinar el efecto de las micorrizas, fertilización química y su combinación en área foliar, composición morfológica, producción y calidad de semilla de mijo perla (Pennisetum glaucum Br.). La evaluación se realizó en primavera-verano 2013 en el Campo Experimental San Luis del INIFAP, se utilizaron micorrizas INIFAP y Azo-Fer, así como 120-60-00 y combinación de micorrizas con 60-30-00 y un testigo (sin ningún fertilizante). Las variables evaluadas fueron altura de planta, índice de área foliar, composición morfológica, producción de semilla, peso de mil semillas, peso hectolítrico, pureza, contenido de humedad, número de semillas por kg y eficiencia en el uso de agua. Se usó un diseño experimental completamente al azar (Tukey, 0.05). No se observaron diferencias (p> 0.05) en índice de altura de planta, área foliar, pureza, humedad, peso hectolítrico y peso de mil semillas. La producción de semilla fue similar (p> 0.05, kg ha-1) con uso de biofertilizantes y fertilizantes (micorriza INIFAP=2 221; micorriza INIFAP + 60-30-00= 1 811, micorriza Azo-Fer = 1 783; micorriza Azo-Fer + 60-30-00 = 1 754) y nutrición mineral (2 685); sin embargo, diferentes al testigo (p≤ 0.05; 1 631). En composición morfológica tanto en antesis como estado lechoso-masoso, no hubo diferencia en biomasa de tallos entre las fuentes de nutrición (p≤ 0.05) y fueron diferentes al testigo.

In the present investigation was proposed that the real consumer price of the main meats consumed in Mexico (beef, pork and chicken) are interwoven with the displacement demand factors such as the price of their respective substitutes and income; thus price was taken as the dependent variable in function of the quantity demanded, which allowed to estimate simultaneously the functional relationships of each of the meats, modeling joint endogeneity. According to this, the proposed model is estimated through least squares in three-stages for the period 1961-2010; the effects on the price in open economy were quantified by a sensitivity analysis for the period 1994-2010. The results indicated that there is a substitution effect between pork and beef, being the price of pork more sensitive to changes in the price of its substitute. Pork and chicken are substitutes for each other, being these goods cheaper compared to beef; with a greater effect on the price of chicken meat to changes in consumer prices of pork. No substitution between beef and chicken was found. The trade liberalization policy had a negative effect on the average level of consumer prices of pork and chicken, while for beef the same effect was positive.

En la presente investigación se planteó que el precio real al consumidor de las principales carnes consumidas en México (bovino, cerdo y pollo) están interrelacionadas con los factores desplazadores de la demanda, tales como el precio de sus respectivos sustitutos y el ingreso; de esta forma se tomó al precio como variable dependiente en función de la cantidad demandada, lo que permitió estimar de manera simultánea las relaciones funcionales de cada una de las carnes, modelando la endógeneidad conjunta. Acorde a esto, el modelo propuesto se estimó mediante mínimos cuadrados en tres etapas para el periodo 1961-2010; los efectos en el precio en economía abierta se cuantificaron mediante un análisis de sensibilidad para el periodo 1994-2010. Los resultados indicaron que existe un efecto sustitución entre la carne de cerdo y res, siendo el precio de carne de porcino más sensible ante los cambios en el precio de su sustituto. La carne de cerdo y pollo se sustituyen entre sí, siendo estos bienes los más baratos con respecto a la carne de res; con un efecto mayor sobre el precio de la carne de pollo ante cambios en los precios al consumidor de la carne de cerdo. No se encontró sustitución entre carne de bovino y pollo. La política de apertura comercial tuvo un efecto negativo en el nivel promedio de los precios al consumidor de la carne de cerdo y pollo, mientras que para la carne de bovino este mismo efecto resultó positivo.
