Avaliou-se o efeito das propriedades de barreira de materiais de embalagem e das condições do enchimento em equipamento flow pack vertical (com e sem injeção de nitrogênio), sobre a vida-útil de café torrado e moído. Avaliou-se três tipos de materiais de embalagem de estrutura composta de um laminado de poliéster metalizado (PETmet) e polietileno de baixa densidade linear (PEBDL) que diferiam na camada de metalização (TPO2 de 0,5; 2,9 e 5,5cm³(CNTP)/m²/dia a 25ºC, a seco e 1atm). Após formação, enchimento e termossoldagem das embalagens, as amostras foram estocadas a 25±2ºC /65±3%UR. Durante a estocagem observou-se redução na concentração de oxigênio residual do espaço-livre das embalagens devido ao consumo em reações de oxidação, o que causou alterações sensoriais no produto e limitou sua vida-útil. Os resultados obtidos sugerem vida-útil para o café de, no mínimo, 6 meses a 25ºC/65%UR em embalagens inertizadas (2 a 3% de O2 residual em um espaço-livre de, em média, 680mL a 25ºC e 0,92atm), enquanto no sistema sem injeção de nitrogênio a vida-útil foi de 3 meses. Também verificou-se que materiais de embalagem com taxas de permeabilidade ao oxigênio próximas aos dos materiais avaliados não diferem no nível de proteção oferecida a café torrado e moído até 6 meses de estocagem em embalagem inertizada.

In this paper it was evaluated the effect of the barrier properties of packaging materials and filling conditions in vertical flow pack equipment (without and with nitrogen injection), on the shelf-life of roasted and ground coffee. Three types of packaging materials made by s laminate of metallized polyester (PETmet) and linear low density polyethylene (LLDPE), that had a different metallization layer (OTR of 0.5; 2.9 and 5.5 cm³(STP)/m²/day at 25ºC, 1 atm in dry conditions) were evaluated. After formation, filling and heatsealing of the packages, the samples were stored at 25±2ºC/65±3%RH. A decrease of the residual oxygen concentration of the headspace was observed during the storage, probably caused by consumption of that gas in oxidation reactions. It caused sensorial changes in the product and limited its shelf-life. The results indicated that the shelf-life to the coffee was at least 6 months at 25ºC/65%RH in nitrogen gas flushing packages (2 to 3% of residual oxygen in a headspace average of 680mL at 25ºC and 0.92atm), while in the system without nitrogen injection the shelf-life was 3 months. It was observed that packaging materials with oxygen transmission rates closer to the tested ones offer the same protection to roasted and ground coffee until 6 months of storage in nitrogen gas flushing packages.

O objetivo deste trabalho foi estimar a vida útil de café solúvel em novas opções de potes plásticos através de modelo matemático, que relaciona o aumento de umidade do produto, com a barreira à umidade da embalagem. Os potes plásticos foram caracterizados quanto às dimensões, à capacidade volumétrica, à taxa de permeabilidade ao vapor d'água (TPVA) e ao torque de abertura. Caracterizou-se os dois tipos de café solúvel (aglomerado e em pó) quanto à umidade inicial e crítica e à isoterma de sorção de umidade. Os potes plásticos de poliéster (PET) mostraram-se cerca de dez vezes mais permeáveis que os de polipropileno (PP). Observou-se aglomeração nos produtos com 7,0% b.s. de umidade a 30ºC, mas a umidade crítica foi considerada como sendo de 5,0% b.s., que é o teor fixado pela legislação. Os resultados indicaram que, nos potes de PP, os períodos de vida útil dos cafés solúveis aglomerado e em pó foram superiores a 1,8 anos e 2,5 anos, respectivamente, a 30ºC/80%UR. Entretanto, o uso de potes de poliéster (PET) não se mostrou viável devido aos baixos períodos de vida útil estimados a 30ºC/80%UR (inferiores a 4 meses).

The objective of this paper was to estimate the instant coffee shelf life in new options of plastic pots through a mathematic model, which relates the product moisture increase with the moisture barrier of the packaging. The plastic pots were characterized by the dimensions, the volumetric capacity, the water vapor transmission rate (WTVR) and the removal torque. The two differents types of instant coffee (aglomerated and powder) were characterized by the initial moisture and by the moisture sorption isotherm. The results presented that the plastic pots of polyester (PP) are about ten times more permeated than the polypropylene (PP) ones. The aglomeration was observed in the products with the moisture value of 7% (d.b.), but the critic moisture value was considerated 5% (d.b.), that is the tenor fixed by the legislation. The results showed that in the polypropylene (PP) pots the shelf life periods for aglomerated instant coffee and powder instant coffee was higher than 1,8 and 2,5 years, respectively, at 30ºC/80%RH. However, the use of the polyester (PET) pots didn't show to be viable because of the lower shelf life periods estimated at 30ºC/80%RH (lower than 4 months).
