Resumen Se evalúo el efecto de la inclusión de aceite de maíz (AM) en la dieta de ovejas Pelibuey en un protocolo de transferencia de embriones. Veinticuatro ovejas donadoras fueron asignadas al azar a cada uno de dos grupos (G), G1: doce ovejas alimentadas con una dieta base (DB) con AM y, G2: doce ovejas alimentadas con DB sin AM. Los embriones fueron obtenidos 6.5 días después del estro y transferidos a ovejas receptoras formando cuatro tratamientos: T1: receptoras alimentadas con dieta base con AM (DB+AM) transferidas con embriones de una donadora del G1 (n=23), T2: receptoras alimentadas con DB sin AM (DB-AM) transferidas con embriones de una donadora del G1 (n=18), T3: receptoras alimentadas con DB+AM transferidas con embriones de una donadora del G2 (n=9) y T4: receptoras alimentadas con DB-AM transferidas con embriones de una donadora del G2 (n=11). La inclusión de AM en la dieta incrementó (P<0.05) la tasa ovulatoria (10.5 ± 2.07 vs 6.3±2.07 cuerpos lúteos), el número de embriones transferibles (5.5 ± 1.4 vs 2.8 ± 1.4), embriones calidad 1 (4.41 ± 1.1 vs 2.08 ± 1.1) y la cantidad de estructuras totales (5.9 ± 1.5 vs 3.1 ± 2.7) por oveja donadora, y no se encontraron diferencias (P>0.05) en el porcentaje de gestación (43.4, 55.5, 55.5 y 36.3 %) en las receptoras para ninguno de los tratamientos. La inclusión de AM en la dieta de ovejas Pelibuey incrementa la respuesta superovulatoria en un protocolo de transferencia de embriones.

Abstract The effect of including corn oil (CO) in the diet of Pelibuey ewes in an embryo transfer protocol was evaluated. Twenty-four (24) donor ewes were randomly assigned to each of two groups (G), G1: twelve ewes fed a base diet (BD) with CO, and G2: twelve ewes fed BD without CO. Embryos were obtained 6.5 d after estrus and transferred to recipient ewes, forming four treatments: T1: recipient ewes fed a base diet with CO (BD+CO), transferred with embryos from a G1 donor (n=23), T2: recipient ewes fed BD without CO (BD-CO), transferred with embryos from a G1 donor (n=18), T3: recipient ewes fed BD+CO, transferred with embryos from a G2 donor (n=9), and T4: recipient ewes fed BD-CO, transferred with embryos from a G2 donor (n=11). The inclusion of CO in the diet increased (P<0.05) the ovulatory rate (10.5 ± 2.07 vs. 6.3 ± 2.07 corpora lutea), the number of transferable embryos (5.5 ± 1.4 vs 2.8 ± 1.4), quality 1 embryos (4.41 ± 1.1 vs 2.08 ± 1.1), and the number of total structures (5.9 ± 1.5 vs 3.1 ± 2.7) per donor ewe, and no differences (P>0.05) were found in the percentage of gestation (43.4, 55.5, 55.5, and 36.3 %) in the recipient ewes for any of the treatments. Including CO in the diet of Pelibuey ewes increases the superovulatory response in an embryo transfer protocol.

Resumen El objetivo fue llevar a cabo un proceso participativo de rescate y conservación de caprinos criollos en los sistemas silvoagropecuarios, para incorporarlos a una estrategia de desarrollo de la región indígena y marginada de la Montaña de Guerrero(MG), México. El agroecosistema caprino se estudió para describir la dinámica de desarrollo, identi ficación de las zonas caprinas en 13 municipios y la caracterización zoométrica de 680 cabras. Se encuestó a 110 productores para evaluar la percepción de la producción de cabras, 57 productores fueron formados en manejo holístico y cuatro productores para la crianza de 300 cabras en rebaños sobresalientes. Los datos se analizaron utilizando redes sociales, componentes principales y correspondencia. Se identificaron dos agroecosistemas caprinos: 1) Agrosilvopastoralismo, con proceso de hibridación alta de las poblaciones de cabras y 2) el tradicional, de pastoreo en vegetación nativa con cabra criolla. Se caracteri zaron tres tipos de cabras: 1) mosaico mixteco (61%), 2) cabras pastoreñas (31,8%) y 3) cruzas (7,2%), discriminadas por el diámetro bicostal, profundidad de pecho, longitud del cuerpo, perímetro torácico, alzada a la cruz, distancia entre encuentros y peso vivo. Los productores de caprinos de la MG prefieren las cabras criollas porque son más productivas y mejor adaptadas a las condiciones ambientales.

Abstract The objective was to implement a participatory process involving rescue and conservation of Creole goats in agro-silvopastoral systems, as a development strategy for the indigenous and marginalized region of the Mountains of Guerrero (MG), Mexico. The study focused on the caprine agroecosystem, documenting aspects of goat development and identifying caprine areas in 13 municipalities, zoometrically characterizing 680 goats. One hundred and ten goat producers were interviewed for evaluating farmer perception of goat production. Fifty-seven producers were trained in holistic management, and four producers raised 300 goats in outstanding herds. Data were analyzed using social networks, principal component analysis and correspondence analysis. Two goat agroecosystems were identified: 1) agro-silvopastoralism, with crossbreeding of goat populations and, 2) traditional systems, involving grazing of Creole goats on native vegetation. We identified three types of goats: 1) Mixteco mosaic (61%), 2), Pastoreña (31.8%), and 3) Crossbreeds (7.2%), based on bicoastal diameter, chest depth, body length, thoracic perimeter, height at withers, shoulder point width and liveweight. Smallholder goat farmers in the MG preferred Creole goats for their greater productivity and better environmental adaptation.

Resumen La producción de leche en pastoreo es utilizada en las regiones intertropicales de climas cálidos debido a su bajo costo. La raza bovina criolla Lechero Tropical (LT) se caracteriza por su adaptación a esta zona, su alta calidad de leche y su buen rendimiento quesero. Aunque la suplementación en pastoreo puede incrementar la producción de leche, también puede comprometer su calidad. Este estudio evaluó el efecto de la suplementación con concentrado comercial en vacas LT respecto a la cantidad y las características fisicoquímicas de la leche por lactancia. Los tratamientos utilizados fueron alimentación exclusiva a base de pasto pará (Brachiaria mutica) y pasto con suplementación de 1 kg de concentrado comercial con 20 % de proteína por cada 5 kg de leche producida al día. La producción diaria de leche se incrementó de 5,82 ± 0,18 kg a 7,10 ± 0,18 kg con suplementación. El consumo de materia seca fue similar en ambos tratamientos. La grasa, la proteína, la lactosa y los sólidos no grasos y totales no sufrieron ninguna modificación (p> 0,05), pero la producción diaria de cada componente por vaca se incrementó en animales suplementados debido al efecto multiplicativo de la cantidad de leche. El número de parto afectó la producción de leche, grasa, nitrógeno ureico en leche y conteo de células somáticas (p ≤ 0,05). Se concluye que la suplementación utilizada en este estudio es suficiente para incrementar la producción de leche en un 22 % sin afectar su composición química.

Abstract Milk production under grazing conditions is carried out in the intertropical region of hot climates due to its low production cost. The Tropical Milking criollo breed (LT) is characterized by its hardiness in this region, and its high milk quality and cheese yield. Grazing supplementation can increase milk production; however, it can also change its chemical composition. The effect of supplementation with commercial feed in LT cows was evaluated concerning the quantity and physicochemical traits of their milk by lactation. The treatments used were feeding based only on grazing para grass (Brachiaria mutica) and grazing plus 1 kg supplementation with 20 % protein commercial feed for every 5 kg of milk produced daily. The daily milk production per cow increased from 5.82 ± 0.18 to 7.10 ± 0.18 kg due to supplementation. Dry matter intake was similar in both treatments. The concentration of fat, protein, lactose, non-fat, and total solids did not suffer modifications (p > 0.05), but the daily production of each component per cow increased in animals supplemented due to the multiplicative effect of the amount of milk. The number of calvings affected milk production, fat, and ureic nitrogen in milk, and somatic cell count (p ≤ 0.05). It can be concluded that the supplementation used in this study was enough to increase milk production by 22 %, without modifying its chemical composition.

RESUMEN El objetivo fue determinar la respuesta parasitológica e inmune en caballos reinfectados naturalmente con nematodos gastrointestinales (NGI) posterior a la desparasitación en el trópico húmedo de México. El estudio se realizó en Tenosique, Tabasco, México. Se utilizaron 30 caballos muestreados mensualmente durante nueve meses. Se determinó el número de huevos por gramo de heces (HPG). Se realizaron coprocultivos para obtener e identificar larvas infectivas (L3). Se obtuvieron muestras de sangre para determinar el volumen celular aglomerado (VCA), proteína plasmática (PPT) y el conteo diferencial de leucocitos (CDL). Se realizaron ensayos de inmuno absorción enzimática (ELISA) en suero para determinar los niveles de IgA contra antígenos de Ciatostómidos y de Strongylus. Los análisis consideraron la edad y el género, también se estudió la época (fría, lluviosa y seca). El número de HPG y PPT fueron más altos en las hembras (1224 ± 1269 y 7.6 ± 0.6 gdL-1, respectivamente) que en los machos (623 ± 671 y 7.4 ± 0.5 gdL-1, respectivamente), y no se observaron diferencias con la edad del animal (p > 0.05). El número de HPG aumentó en la temporada de lluvias. Los principales nematodos fueron de la subfamilia Cyathostominae (97.4%) y en menor grado las especies Strongylus equinus, S. edentatus, S. vulgaris, y Oxyuris equii. La época afectó el conteo de leucocitos, neutrófilos y linfocitos, pero no eosinófilos. Las variables como el género, edad animal y las condiciones ambientales son elementos a considerar para un diagnóstico de NGI y la aplicación de tratamientos para su control.

ABSTRACT The objective of the study was to determine the parasitological and immune response in horses naturally re-infected with gastrointestinal nematodes (GIN) after anthelmintic treatment in the humid tropic of Mexico. The study was conducted in Tenosique, Tabasco, Mexico. A total of 30 horses were sampled monthly for nine months. Fecal samples were obtained to determine the number of nematode eggs per gram (EPG) of feces. Stool cultures were performed to obtain and identify infective larvae (L3) genera. Blood samples were also obtained to determine the packed cell volume (PCV), the total plasma protein (TPP), and the differential leukocyte count (DLC). Serum enzyme-linked immunosorbent assays (ELISA) were performed to determine IgA levels against adult cyathostomins and Strongylus nematode antigen. The analyses considered the age and gender of the horses, and the season (Cold, rainy and dry). The number of EPG and TPP were higher in females (1224 ± 1269 and 7.6 ± 0.6 gdL-1, respectively) than males (623 ± 671 and 7.4 ± 0.5 gdL-1, respectively), and no differences were observed with animal age (p > 0.05). The number of EPG increased in the rainy season. The main nematodes involved were of the subfamily Cyathostominae (97.4%) and to a lesser degree of species Strongylus equinus, S. edentatus, S. vulgaris, and Oxyuris equii. The season affected the leukocytes, neutrophils, and lymphocytes counts but not eosinophils. Variables such as gender, animal age, and environmental conditions are important elements for a diagnosis of GIN and the application of treatments for its control.

In the present study, we evaluated the morphostructural variability of the Pastoreña goat (PG) in Mixteca region of Oaxaca, Mexico. This study was carried out to evaluate five qualitative ranges and thirteen morphometric characteristics of 249 animals (185 females and 64 males) from 2 to 5 years old. Descriptive statistics analysis was performed on the qualitative (QV) morphometric (MV) variables, and variance analysis and Tukey test by sex. The Pearson correlations were calculated for MV, determining the morphostructural harmonic model. The canonical discriminant analysis and analysis of principal coordinates were made for QV and principal component analysis for MV. The results of QV indicated some features in the racial profile of the PG. MV showed sexual dimorphism (p<0.05). The coefficient of variation indicated morphostructural homogeneity. The correlations in MV suggest harmonic-morphostructural and harmonic-median models for females and males, respectively. The multivariate analysis showed similarities in the sampled localities. In conclusion, the qualitative and quantitative variables demonstrated in the PG characterize as a unique goat breed in the Mixteca of México and justify further conservation efforts.

En el presente estudio, evaluamos la variabilidad morfoestructural de la cabra Pastoreña (CP), en la región de la Mixteca, Oaxaca, México. El estudio se realizó para evaluar cinco rangos cualitativos y trece características morfológicas de 249 animales (185 hembras y 64 machos) de 2 a 5 años de edad. Se realizó un análisis estadístico descriptivo de las variables cualitativas (VQ) y morfométricas (VM), análisis de varianza y la prueba de Tukey por sexo. Las correlaciones de Pearson se calcularon para VM, determinando el modelo armónico morfoestructural. El análisis canónico discriminante y el análisis de las coordenadas principales se realizaron para QV y análisis de componentes principales para VM. Los resultados de las VQ indicaron algunas características en el perfil racial de la CP y las VM mostraron dimorfismo sexual (p <0,05). El coeficiente de variación indicó homogeneidad morfoestructural. Las correlaciones en VM sugieren modelos armónicos-morfoestructurales y armónicos-medianos para las hembras y machos, respectivamente. El análisis multivariado mostró similitudes en las localidades muestreadas. Como conclusión, las variables cualitativas y cuantitativas demostradas en la CP se caracterizan como una raza única de cabra en la Mixteca de México y justifican mayores esfuerzos de conservación.

Abstract: The objective of this study was to compare two segregation methods to select resistant and susceptible female Pelibuey lambs infected naturally with gastrointestinal nematodes (GINs) in relation to their haematological and immunological response. For 6 months, faeces and blood samples were taken fortnightly from 40 grazing 5-month-old female lambs. The lambs were classified according to two methods using faecal egg count (FEC) as a phenotypical trait. In the first (reference) method (M3SE, n = 22), resistant (RES) lambs had FEC lower than the mean - 3 standard errors, the susceptible (SUS) lambs levels higher than + 3 standard errors (n = 10) and the intermediate (INT) lambs (n = 8) were categorised by having FECs between the two values. The second method (QUM) divided the population, using quartiles, into resistant (RES; 25%), intermediate (INT; 50%), and susceptible (SUS; 25%) lambs. The agreement between both methods was estimated using the Kappa index. The packed cell volume (PCV), total plasma protein (TPP) and peripheral eosinophils (EOS) were determined for each group. Serum was used to evaluate the IgA levels. PCV and TPP values were higher (P<0.01) in the RES lambs (31.5 ± 3.4 and 6.16 ± 0.5 g/dL by QUM, respectively, and 31.5 ± 3.9 and 6.24 ± 0.49 g/dL by M3SE, respectively) than the SUS lambs (28.1 ± 4.7 and 5.94 ± 0.5 g/d, respectively, by both methods). The EOS and IgA values increased with age. M3SE and QUM were in moderate agreement (Kappa = 0.43). We concluded that the two segregation methods allowed for the identification of the same female SUS lambs, but a greater number of animals were categorised phenotypically as resistant using the M3SE method. PCV and TPP can help to identify phenotypically resistant animals.

The aim of this study was to evaluate the influence of Pelibuey ewe body weight at lambing on pre-weaning performance of their lambs in hot and humid conditions. The study was retrospective and was carried out with productive information on two sheep farms. In total, 242 records of lambs from farm 1 and 66 from farm 2 were analysed for birth weight, pre-weaning body weight gain and weaning weight adjusted to 61 days. The information was obtained from 147 ewes on the farm 1 and 42 on the farm 2. The statistical model included, in both farms, the fixed effects of ewe body weight at lambing (below and above the average), parity number (primiparous, multiparous), sex of the lamb (female and male) and type of birth (single and multiple). The body weight at lambing and type of lambing affected (p<0.05) all the dependent variables on both farms. The sex of the lamb only affected (p<0.05) the weaning weight in farm 1. Parity number influenced birth and weaning weight in farm 1 (p<0.01) and birth weight in farm 2 (p<0.05). In conclusion, the ewe body weight at lambing affected the pre-weaning performance of lambs in both farms. Lambs of ewes with a body weight al lambing above average were heavier at birth and at weaning than sheep from ewes with body weight al lambing below average. It is confirmed that male lambs, single lambs and from multiparous sheep they better preweaning performance with respect to female, multiple lambs and those of primiparous sheep, respectively.

El objetivo de este estudio fue evaluar la influencia del peso al parto de la oveja Pelibuey sobre características de crecimiento predestete de sus corderos en condiciones de clima cálido y húmedo. El estudio fue de tipo retrospectivo y se realizó con información productiva de dos fincas ovinas. Se analizaron 242 observaciones de corderos en la finca 1 y 66 en la finca 2 correspondientes a los pesos al nacer, ganancia de peso predestete y peso de destete ajustado a 61 días. La información se obtuvo de 147 ovejas en la finca 1 y 42 en la finca 2. El modelo estadístico incluyó, en ambas fincas, los efectos fijos de peso de la oveja al parto (por abajo y por encima del promedio), número de parto (primíparas, multíparas), sexo del cordero (hembra y macho) y tipo de nacimiento (simple y múltiple). El peso al parto y el tipo de nacimiento afectaron (p<0.05) todas las variables dependientes en ambas fincas. El sexo del cordero (p<0.05) influyó sobre el peso de destete en la finca 1. El número de parto afectó el peso al nacer y de destete en la finca 1 (p<0.01) y peso al nacer en la finca 2 (p<0.05). En conclusión, el peso al parto afectó el comportamiento predestete de los corderos en ambas fincas. Los corderos de ovejas con un peso al parto por encima del promedio fueron más pesados al nacimiento y al destete que los corderos de ovejas con un peso al parto por debajo del promedio. Se confirma que los corderos machos, únicos y provenientes de ovejas multíparas tienen mejor comportamiento predestete con respecto a corderos hembras, múltiples y los de ovejas primíparas, respectivamente.

Abstract Cattle husbandry in Mexico is highly important in the country’s economy. In the tropic, one of the main health problems that affect production is internal parasites, which can cause economic losses due to the reduction in the weight gain of the animals. The presence of trematodes, such as Fasciola hepatica causes the confiscation of livers in slaughterhouses; while paramphistomids affect the optimum animal development. The objective of the study was to establish the relation between the hematological values and the presence of trematodes in cattle, in a warm humid climate of Mexico. For such purpose, feces samples were taken from 194 bovines (cows and bulls), from which a feces analysis was made. The study was conducted between October and December, 2018. From the visits to 10 production farms located in the region of the Tabasco and Chiapas states, the data with which the statistical analyses were made to determine frequency and prevalence, were obtained. As a result, the general prevalence of trematodes was 40,2 %, which corresponded to 78 infected animals from a total of 194. The presence of trematodes did not affect the hematological composition of the sampled cattle. It is concluded that, in spite of the high prevalence of trematodes in the region, the hematological values were among the normal ones indicated for cattle from tropical zones.

Resumen La ganadería bovina en México tiene gran importancia en la economía del país. En el trópico, uno de los principales problemas sanitarios que afectan la producción son los parásitos internos, los cuales pueden causar pérdidas económicas por la reducción en la ganancia de peso de los animales. La presencia de trematodos como Fasciola hepatica es causante del decomiso de hígados en los mataderos; mientras que los paramphistomidos afectan el óptimo desarrollo de los animales. El objetivo del estudio fue establecer la relación entre los valores hematológicos y la presencia de trematodos en ganado bovino, en un clima cálido húmedo de México. Para ello se tomaron muestras de heces de 194 bovinos (vacas y toros), a partir de las cuales se realizó un análisis coprológico. El estudio se realizó entre los meses de octubre y diciembre del 2018. A partir de las visitas a 10 unidades de producción ubicadas en la región de los estados de Tabasco y Chiapas, se obtuvieron los datos con los que se realizaron los análisis estadísticos para determinar la frecuencia y la prevalencia. Como resultado, la prevalencia general de trematodos fue de 40,2 %, lo que correspondió a 78 animales infectados de un total de 194. La presencia de trematodos no afectó la composición hematológica de los bovinos muestreados. Se concluye que, a pesar de la alta prevalencia de trematodos en la región, los valores hematológicos se encontraron entre los normales indicados para los bovinos de las zonas tropicales.

Abstract: The objective of this study was to compare the productive performance of finishing lambs using an integral diet under a restricted-feeding program. Ten Dorper lambs were assigned to two homogenous groups according to live weight and age under a complete randomised block design. Group 1 was fed a traditional diet commonly used by the producer and group 2 was fed an integral feed restricted to 75% of dry matter requirement of lambs. The evaluated variables were: dry matter intake, initial and final live weight, daily weight gain, feed efficiency and body growth expressed in height, body length, thoracic diameter, cane length and cane width. A partial cost analysis was carried out to evaluate the economic viability. Lambs fed with the integral feed had better feed efficiency, higher dry matter intake, daily weight gain, height, body length and thoracic diameter when compared with the lambs fed the traditional diet. The use of an integral feed under a restricted-feeding program reduced the cost of finishing lambs by 2.46 dollars per head and finishing length by 120 days. Overall, providing an integral feed under a restricted-feeding program is a viable alternative for improving finishing lambs under intensive conditions in the Northern Mexico.

Abstract In México, there is scarce information about sheep production in zones of temperate climate, despite representing an important means of livelihood for the rural population. This study had the objective of analyzing the structure of the production systems and to typify the sheep production units of the temperate region of the states of Puebla and Tlaxcala. The data were collected through interviews and direct observation, recording in a questionnaire the social and technical-economic variables from a statistical sample of 221 sheep producers. The structure of the production system was determined with factorial analysis. The typologies of the sheep production units were grouped with cluster analysis. The factorial analysis identified the size of the flock, the production of lambs, and the purchase and production of grains and fodders as the variables that explained the highest variance in the production units. Three types of production units groups were identified: family subsistence (60.6 %), sheep-cereal association (32.1 %) and mountainous extensive (7.3 %). In the study region, the production of sheep depends on the size of the flock, the production and availability of native fodder, and the availability of workforce to generate economic income.

Resumen En México existe escasa información de la producción de ovinos en zonas de clima templado, a pesar de representar un importante medio de vida para la población rural. Este estudio tuvo como objetivo analizar la estructura de los sistemas de producción y tipificar las unidades de producción ovinas de la región templada de los estados de Puebla y Tlaxcala. Los datos fueron colectados por entrevistas y observación directa, registrando en un cuestionario variables sociales y técnicas-económicas en una muestra estadística de 221 productores de ovinos. La estructura del sistema de producción se determinó con análisis factorial. Las tipologías de las unidades de producción ovinas se agruparon con análisis cluster. El análisis factorial identificó al tamaño del rebaño, la producción de corderos, y la compra y producción de granos y forrajes como las variables que explicaron la mayor varianza de las unidades de producción. Se identificaron tres tipos de agrupaciones de unidades de producción: familiares de subsistencia (60.6 %), asociación ovino-cereales (32.1 %) y extensivas de montaña (7.3 %). En la región de estudio la producción de ovinos depende del tamaño del rebaño, producción y disponibilidad de forraje nativo y de la disponibilidad de mano de obra para generar ingresos económicos.

Abstract Goat production for meat is part of the lifestyle of the families in the Mountain of Guerrero since Colonial times. With the objective of analyzing the ways of producing, managing and commercializing goats among producers, a direct survey was applied to 112 goat owners. The following variables about the family were recorded: use of land, management practices, and access to the market. Three typologies of goat producers were identified: a) goat-targeted (9.8 %); b) agricultural and livestock (25.9 %); and c) subsistence (64.3 %). The producers aimed at goats had the most experience in goats (31.8 years), labor (2 workdays), size of the flock (90 goats), and total earnings ($19 645.5); they use small-scale lands that they own and rent, shrub vegetation (40 %), goats crossbred with improved varieties, and flock health is the main problem. The agricultural and livestock producers have more land (4.1 ha) and handling pens (230.9 m2). They select goats because of their height and adaptation to the environment, and they sell goats at the level of corral and in school festivities. Subsistence producers are users of ejido and communal lands, use forest zones (83.3 %), and select goats for their production. The goat meat producers in the Mountain of Guerrero have broad knowledge of the management of Creole goats and of the plants that fatten them and give the goat meat flavor, which can be the basis for the development of local producers with quality of origin.

Resumen La producción de cabras para carne es parte del modo de vida de las familias en la Montaña de Guerrero desde la época colonial. Con el objetivo de analizar las formas de producir, manejar y comercializar las cabras entre productores se aplicó una encuesta directa a 112 propietarios de caprinos. Se registraron variables de la familia, uso de la tierra, prácticas de manejo y acceso al mercado. Se identificaron tres tipologías de productores de cabras: a) orientados a caprinos (9.8 %); b) agropecuarios (25.9 %); y c) subsistencia (64.3 %). Los productores orientados a caprinos tuvieron más experiencia en caprinos (31.8 años), mano de obra (2 jornales), tamaño de rebaño (90 caprinos) e ingresos totales ($19 645.5); usan tierras de pequeña propiedad y en renta, vegetación arbustiva (40 %), cabras cruzadas con mejoradas y la sanidad del rebaño es el principal problema. Los productores agropecuarios tienen más tierra (4.1 ha) y corrales de manejo (230.9 m2). Seleccionan cabras por su altura y adaptación al ambiente, y venden caprinos a pie de corral y en festividades escolares. Los productores de subsistencia son usuarios de tierras ejidales y comunales, usan zonas de bosque (83.3 %) y seleccionan cabras por su producción. Los productores de caprinos para carne en la Montaña de Guerrero tienen un amplio conocimiento del manejo de la cabra criolla y de las plantas que engordan y le dan sabor a la carne de cabra, lo cual puede ser la base para el desarrollo de productos locales con calidad de origen.

Abstract The mountainous central region of the state of Veracruz, Mexico, is recognized for its tradition in the production of aged artisan cheeses made from goats’ milk. Local markets demand this product, but it does not have a commercial brand name and its typical characteristics are unknown. The objective of this study was to type the aged artisan cheeses of this region by concatenating the influence of agroecological factors, production system and milk quality in the color, texture and sensorial properties of the cheeses and consumer preference. The hypothesis was that agroecological conditions, goat handling and “know-how” and “knowing how to produce” generate artisan cheeses with their peculiar characteristics. The cheeses evaluated were artisan goat milk cheeses aged for seven weeks. The variables were microbiological, color, texture, sensorial and preference of 76 consumers. Two completely randomized designs were used with a factorial arrangement of two or three factors. The results were subjected to the PLS-path modeling technique and multiple factorial analysis. The cheeses were safe for consumers. Differences (p≤0.05) were found in color, texture, sensorial variables and consumer preference. PLS-path modeling confirmed the hypothesis and gave evidence that the diversified feed of the semi-intensive systems generates the diversity of odors and aromas typical of artisan cheeses and contributed to explaining 55.3 % of consumer preference. Management and feeding of the goats influenced the physical, chemical and sensorial characteristics and the preference of consumers of artisan cheeses. The artisan cheeses of the study showed similarities to others with collective mark, and thus, could be protected with a quality seal.

Resumen La región montañosa central del estado de Veracruz, México, se reconoce por su tradición en la producción de quesos artesanales madurados y elaborados con leche de cabra. Los mercados locales demandan este producto, pero no tiene marca comercial y se desconocen sus características típicas. El objetivo de este estudio fue tipificar los quesos artesanales madurados de esa región, mediante la concatenación e influencia de los factores agroecológicos, sistema de producción y calidad de la leche en las propiedades de color, textura, sensoriales de los quesos y preferencia de los consumidores. La hipótesis fue que las condiciones agroecológicas, el manejo caprino, el “saber hacer” y el “saber producir”, generan quesos artesanales con características propias. Los quesos evaluados fueron artesanales elaborados con leche de cabra y con siete semanas de maduración. Las variables fueron microbiológicas, color, textura, sensoriales y de preferencia de 76 consumidores. Dos diseños completamente aleatorizados se usaron con arreglo factorial de dos y tres factores; la técnica de regresión de mínimos cuadrados parciales (PLS-path modeling) y análisis factorial múltiple se aplicaron a los resultados. Los quesos son inocuos para los consumidores. Las diferencias (p≤0.05) se presentaron en color, textura, variables sensoriales y preferencia de los consumidores. La modelación PLS-path confirmó la hipótesis y evidenció que la alimentación diversificada de los sistemas semi-intensivos genera la diversidad de olores y aromas típicos de los quesos artesanales, lo cual contribuyó a la preferencia de 55.3 % de los consumidores. El manejo y alimentación de las cabras influyeron en las características físicas, químicas y sensoriales y en la preferencia de los consumidores de los quesos artesanales. Los quesos artesanales del estudio mostraron similitudes con otros con distintivo legal, por lo que podrían protegerse con un sello de calidad.

Abstract: Introduction: In Mexico, there is an unmet demand for sheep meat. To remedy this, it is necessary to study production systems and determine the factors affecting them. The objectives of this study were 1) to evaluate the effect of birth year (BY), type of birth (TB), lambing season (LS), lamb sex (LSX) and parity number (PN) on growth characteristics of pre-and postweaning of Pelibuey lambs and 2) to estimate the relationship among pre and postweaning growth characteristics. Method: The study was retrospective observational with productive data of a sheep farm located in Tabasco, Mexico. The dataset include records from 389 Pelibuey ewes corresponding 941 lambs and 629 lambing. The statistical model included fixed effects of BY (2005 to 2008), TB (single and multiple), LS (dry, rainy and windy), LSX (female and male), PN (primiparous and multiparous), and as well as random effects dam within BY and experimental error. Partial correlation coefficients of Pearson for all response variables were analized. The pre-weaning dependent variables were: weight at birth (BW), average daily gain of adjusted pre-weaning weight to 60 (ADG1) and adjusted weight at weaning to 60 d of age (WWa). Postweaning dependent variables were: average daily gain of adjusted postweaning weight (ADG2) and adjusted final weight to 106 d (FWa). The final weight corresponds to the last weight recorded in productive records, taken at an average age of 165±49 d. Results: With exception of TB and LS on ADG2 and FWa, all independent variables affected (P≤0.05) the preweaning dependent variables. TB and LS affected the preweaning lamb performance (P<0.01). Single lambs had higher BW, ADG1 and WWa (P < 0.01) compared with multiple lambs. The lambs born in rainy and windy had higher BW (P≤0. 05), born in dry and rains had greater ADG1 and those born in dry showed greater WWa (P < 0.01) with respect to other LS. Male lambs had higher BW, WWa, ADG1, FWa and ADG2 than females (P≤0.05). Lambs from multiparous ewes had better growth performance than lambs from primiparous ewes (P<0.01) with exception of ADG2 (P>0.05). The correlation coefficients more high (P < 0.01) were observed between ADG1 with WWa and ADG2 with FWa. The correlation coefficients ranged from 0.27 to 0.88 between the dependent variables studied (P < 0.01). Conclusion: The YB affected all preweaning and postweaning variables. However, was not detected a year where all pre and postweaning variables were higher or lower than other BY. The single lambs had better preweaning performance than the multiple. In the dry season the BW of the lambs was lower with respect to other LS. In windy, the lambs had less ADG1 and WWa compared to other LS. Male lambs were higher in their preweaning performance with respect to females. Lambs from multiparous ewes had greater pre-weaning performance. In postweaning performance, ADW2 and FWa were not affected by the TB and LS. ADG2 was affected by PN. The BW, ADG1, WWa and ADG2 had a positive relationship with FWa.

Resumen: Introducción: En México, existe una demanda insatisfecha de carne de ovino, para subsanarla, es necesario estudiar los sistemas de producción y determinar los factores que los afectan. Los objetivos de este estudio fueron evaluar el efecto año de nacimiento (AN), tipo de nacimiento (TN), época de nacimiento (EN), sexo del cordero (SX) y número de parto (NP) sobre características de crecimiento pre y posdestete de corderos Pelibuey y 2) estimar la relación entre las características de crecimiento pre y posdestete. Método: El estudio fue retrospectivo observacional con información productiva de una finca ovina localizada en el estado de Tabasco, México. El conjunto de datos provino de los registros productivos de 389 ovejas Pelibuey, correspondientes a 941 corderos de 629 partos. El modelo estadístico incluyó los efectos fijos de AN (2005 a 2008), TN (únicos y múltiples), EN (sequía, lluvias y nortes), NP (primíparas y multíparas) y SX (hembra y macho), y como efectos aleatorios madre dentro de AN y el error experimental. Se calcularon los coeficientes parciales de correlación de Pearson para todas las variables de respuesta. Las variables dependientes predestete fueron: peso al nacimiento (Pn), ganancia diaria de peso predestete ajustada a 60 d (Gan1) y peso al destete ajustado a 60 d de edad (Pda). Las variables dependientes posdestete fueron: ganancia diaria de peso posdestete ajustada (Gan2) y peso final ajustado a 106 d (Pfa). El peso final corresponde al último peso registrado en los registros productivos, tomado a una edad promedio de 165±49 d. Resultados: Con excepción de TN y EN sobre ganancia diaria de peso posdestete ajustada a 106 d (Gan2) y peso final ajustado a 106 d posdestete (Pfa), todas las variables explicativas afectaron (P≤0.05) las variables de respuesta predestete. El TN y EN afectaron el comportamiento predestete de los corderos (P<0.01). Los corderos de nacimiento único presentaron mayores Pn, Gan1 y Pda (P<0.01) comparado con corderos de nacimiento múltiple. Los corderos nacidos en lluvias y nortes tuvieron el mayor Pn (P≤0.05), los nacidos en sequía y lluvias tuvieron mayor Gan1 y los nacidos en sequía mayor Pda (P<0.01) con respecto a las otras EN. Los corderos machos mostraron mayor Pn, Pda, Gan1, Pfa y Gan2 respecto a las hembras (P≤0.05). Corderos de madres multíparas tuvieron mejor comportamiento de crecimiento en todas las variables estudiadas respecto a los de primíparas (P<0.01) con excepción de Gan2 (P>0.05). Los coeficientes de correlación más altos (P<0.01) fueron observados entre Gan1 con Pda y Gan2 con Pfa. Los coeficientes de correlación variaron de 0.27 a 0.88 entre las variables dependientes estudiadas (P<0.01). Conclusión: El AN afectó todas las variables predestete y posdestete. Sin embargo, no se detectó un año en donde todas las variables pre o posdestete fueran superiores o inferiores a la de otros AN. Los corderos únicos tuvieron mejor comportamiento productivo predestete que los múltiples. En la época de sequía el Pn de los corderos fue menor con respecto a las otras épocas. En nortes, los corderos tuvieron menor Gan1 y Pda comparado con las otras épocas. Los corderos machos fueron superiores en su comportamiento productivo predestete con respecto a las hembras. Los corderos provenientes de ovejas multíparas presentaron mejor eficiencia productiva predestete. En el comportamiento posdestete, Gan2 y Pfa no fueron afectados por el TN y EN. Gan2 fue afectada por NP. El Pn, Gan1 y Pda tuvieron una relación positiva con el Pfa.

Abstract The aim of this study was to evaluate the influence of type of birth (TB) of lambs and number of parity (NP) of ewes on preweaning growth, carcass yield (CY), body composition of lambs and the productive performance of the ewes. Twenty five Blackbelly x Pelibuey ewes and their lambs were studied, in a factorial design; the factors were TB (single and multiple) and NP (primiparous and multiparous). The lambs were slaughtered at 56 d of age. The variables evaluated were: body weight at birth (BWB) and weaning (BWW), average daily wight gain (ADG), carcass weight and CY and weight and yield of the primal cuts. In ewes, body weight at lambing and at the end of lactation, change of body weight (CHBW), litter weight at birth (LWB) and at weaning (LWW) were evaluated. TB affected (p < 0.05) ADG, BWW, carcass weight and CY of the lambs. In ewes, type of lambing (TL) and NP influenced (p < 0.05) CHBW. TL affected (p < 0.05) LWB and LWW. TB affected the pre-weaning growth, CY and body composition of the lambs, with the single lambs presenting higher ADG, carcass weight and CY, while multiparous ewes and ewes with multiple lambing had the largest negative CHBW. However, ewes with multiple lambing had greater productive performance.

Resumen El objetivo del presente estudio fue evaluar la influencia del tipo de nacimiento (TN) de los corderos y el número de parto (NP) de las ovejas sobre el crecimiento predestete, rendimiento de la canal (RC), composición corporal de los corderos y el comportamiento productivo de las ovejas. Se estudiaron 25 ovejas Blackbelly x Pelibuey y sus corderos, bajo un diseño factorial, los factores fueron TN (sencillo y múltiple) y NP (primípara y multípara). Los corderos se sacrificaron a los 56 d de edad. Las variables evaluadas fueron: peso vivo al nacimiento (PN) y al destete (PD), ganancia diaria de peso (GDP), peso de la canal y RC, peso y rendimiento de los cortes primarios. En las ovejas, se evaluó el peso al parto y al finalizar la lactancia, cambio de peso (CP), peso de la camada al nacimiento (PCN) y al destete (PCD). El TN afectó (p < 0.05) la GDP, PD, peso y RC de los corderos. En las ovejas, el tipo de parto (TP) y NP influyeron (p < 0.05) sobre el CP. El TP afectó (p < 0.05) el PCN y PCD. El TN afectó el crecimiento predestete, RC y composición corporal de los corderos, siendo los de nacimiento sencillo los que tuvieron mayor GDP, peso y RC. Mientras que las ovejas multíparas y ovejas con parto múltiple experimentaron el mayor CP negativo. En tanto que las ovejas con parto múltiple mostraron la mayor eficiencia productiva.

In order to evaluate the effect of the number of parturitions on the weight at birth of the lambs and on the parturition-pregnancy interval of Pelibuey (PBE) and crossbred Pelibuey ewes (CPB), under production conditions, a retrospective study was conducted of the Genetic Center of Pelibuey Sheep belonging to the Livestock Production Enterprise Matanzas, Cuba. The animals grazed in 3 ha of natural pastures and were supplemented with king grass forage, sugarcane, grass hay, commercial concentrate feed, mineral salts, as well as corn distillery residues (Northgold) according to the availability of this feedstuff. There were significant differences (p< 0,05) in favor of the live weight at birth in the lambs (2,77 vs. 2,69 kg for PBE and CPB, respectively). In turn, significant differences (p < 0,05) were found in the weight in favor of male lambs, with the highest values in PBE (2,83 vs. 2,72 kg, for PBE and CPB, respectively). The weight at birth of the lambs in PBE and CPB differed (p < 0,05) with regards to the number of parturitions and it was higher in PBE; the best values were obtained from the second parturition in PBE (3,01 kg) and in the fourth parturition in CPB (2,93 kg). The increase of the number of parturitions in the ewes affected (p < 0,05) the parturition-pregnancy interval in PBE and CPB. It is concluded that the number of parturitions in Pelibuey and crossbred Pelibuey ewes under commercial production conditions had a marked effect on the weight at birth of the lambs and on the parturition-pregnancy interval, with the best results from the second parturition; in turn, the weight at birth of the lambs was affected by the breed.

Con el objetivo de evaluar el efecto del número de partos en el peso al nacer de las crías y en el intervalo parto-gestación de ovejas Pelibuey (OPB) y mestizo de Pelibuey (MPB), en condiciones de producción, se realizó un estudio retrospectivo del Centro Genético de Ovinos Pelibuey perteneciente a la Empresa Genética Matanzas, Cuba. Los animales pastaron en 3 ha de pastos naturales y se suplementaron con forraje de king grass, caña de azúcar, heno de gramíneas, concentrado comercial, sales minerales, así como residuos de destilería del maíz (Northgold) según la disponibilidad de este alimento. Hubo diferencias significativas (p< 0,05) a favor del peso vivo al nacimiento en las crías (2,77 vs. 2,69 kg para OPB y MPB, respectivamente). A su vez, se hallaron diferencias significativas (p < 0,05) en el peso a favor de las crías machos, con los mayores valores en OPB (2,83 vs. 2,72 kg, para OPB y MPB, respectivamente). El peso al nacer de las crías en OPB y MPB difirió (p < 0.05) en relación con el número de partos y fue mayor en OPB; los mejores valores se obtuvieron a partir del segundo parto en OPB (3,01 kg) y en el cuarto parto en MPB (2,93 kg). El incremento del número de partos en las reproductoras afectó (p < 0,05) el intervalo parto-gestación en OPB y MPB. Se concluye que el número de partos de ovejas Pelibuey y mestizo de Pelibuey en condiciones comerciales de producción tuvo un marcado efecto en el peso al nacer de las crías y en el intervalo parto-gestación, con los mejores resultados a partir del segundo parto; a su vez, el peso al nacer de las crías ovinas se afectó por la raza.
