Resumo Embalagens inteligentes são aquelas que possuem maior aprimoramento em relação à comunicação e ao consumidor, uma vez que fornecem uma informação dinâmica sobre a qualidade real do produto. A presente revisão tem como objetivo analisar o conceito de embalagens inteligentes que utilizam como base polímeros incorporados com antocianinas para alteração colorimétrica, discutindo aspectos do desenvolvimento científico. Foi realizada uma análise crítica da produção científica que trata dos processos utilizados para o desenvolvimento dessas embalagens. O processo de produção está estruturado e controlado com base na demanda atual dos consumidores, uma vez que eles estão cada vez mais alertas em relação à segurança e à qualidade dos alimentos disponibilizados para consumo. Nesse sentido, o desenvolvimento de novas embalagens inteligentes com indicadores ou sensores colorimétricos está diretamente relacionado com a forma de produção, requerendo uma padronização de sua produção e parâmetros, fornecendo uma visão de diversos profissionais, que acabam por desenvolver novas tecnologias promissoras.

Abstract Intelligent packages are those that have significant improvement with respect to communication and to the consumer, since they provide dynamic feedback about the actual quality of the product.The present review aimed to analyze the concept of intelligent packaging that uses polymers incorporated with anthocyanins as a base for colorimetric alteration, as well as discussing aspects of scientific development. A critical analysis of the scientific production that deals with the processes used for the development of such packaging was performed. The production process is structured and controlled based on the current consumer demand, as they are increasingly alert to the safety and quality of the food available for consumption. In this sense, the development of new intelligent packaging with colorimetric indicators or sensors is directly related to the form of production, requiring a standardization of its production and parameters, thus providing insight from various professionals, who end up developing promising new technologies.

Abstract Active food packaging aims to interact with food in order to improve nutritional, sensory, physicochemical or microbiological properties of the food products. The aim of this work was to development and characterization of active film with omega-3 and flavored with oregano essential oil for butter. It was produced three films: control (T1), active films added with 25% of ω-3 fatty acid and 5% of oregano essential oil (T2) and active film added with 40% fatty acid ω-3 and 5% essential oil of oregano (T3). Physical, mechanical and structural films properties were evaluated. The addition of fish oils and essential oregano did not change neither films color nor thickness in relation of control film. However, it reduced energy at break (J) and maximum compressive strength (MPa) of the active films. On the other hand, it increased elongation at break (mm) of active films compared to control. WVP of control film was higher (p < 0.05) to active films. In structural characterization, active films presented difference between the size of the oil droplets. It has been observed that the films produced have good mechanical, physical and structural properties. Further studies should be conducted for sensory evaluation, nutritional aspects and storage stability.

RESUMO. Objetivou-se com este trabalho modelar a cinética de sorção de água pelo café torrado e moído. Foram utilizados grãos de café arábica com teor de água inicial de 0,1234 kga kgms -1, torrados no ponto de torra médio (SCCA # 55), tendo sido estabelecido três níveis granulométricos: grossa (1,19 mm), média (0,84 mm) e fina (0,59 mm). Para a obtenção das isotermas de sorção da água e do calor isostérico, foram analisadas diferentes condições de temperatura e umidade relativa: usando o método dinâmico, 25ºC (0,50; 0,60; 0,70 e 0,80 de UR) e 30°C (0,30; 0,40; 0,50; 0,60; 0,70 e 0,80 de UR); e o método estático, 25ºC (0,332 e 0,438 de UR). Os dados de teor de água no equilíbrio foram correlacionados com modelos matemáticos. O modelo de GAB foi o que melhor representou o equilíbrio higroscópico para a sorção do café torrado nos diferentes níveis granulométricos. O calor isostérico de sorção na granulometria fina aumentou com a elevação do teor de água de equilíbrio indicando forte grau de ligação entre as moléculas de água e o produto. A energia livre de Gibbs diminuiu com o aumento do teor de água de equilíbrio e com a temperatura.

ABSTRACT. The objective of this study was to model the kinetics of water sorption in roasted and ground coffee. Crude Arabica coffee beans with an initial moisture content of 0.1234 kgwkgdm -1 were used. These beans were roasted to a medium roast level (SCCA # 55) and ground at three particle sizes: coarse (1.19 mm), medium (0.84 mm) and fine (0.59 mm). To obtain the water sorption isotherms and the isosteric heat, different conditions of temperature and relative humidity were analyzed using the dynamic method at 25ºC (0.50, 0.60, 0.70, and 0.80 of RH) and 30°C (0.30, 0.40, 0.50, 0.60, 0.70, and 0.80 of RH) and using the static method at 25ºC (0.332 and 0.438 of RH). The GAB model best represented the hygroscopic equilibrium of roasted coffee at every particle size. Isosteric heat of sorption for the fine particle size increased with increments of equilibrium moisture content, indicating a strong bond energy between water molecules and the product components. The Gibbs free energy decreased with the increase in equilibrium moisture content and with temperature.

Estudou-se o efeito da temperatura de armazenamento e do processamento mínimo sobre a atividade da fenilalanina amônia-liase (PAL), peroxidase (POD) e polifenol oxidase (PPO), em folhas de couve (Brassica oleracea var. acephala) por 15 e 9 dias, nas condições de 5 ± 1ºC e de 10 ± 1ºC, respectivamente. O amarelecimento e a perda de turgescência foram as principais causas para a redução da qualidade visual das folhas inteiras, enquanto nas folhas minimamente processadas apresentaram também, escurecimento, que coincidiu com o aumento na atividade da POD e PPO nas duas temperaturas estudadas. A atividade da PAL em folhas minimamente processadas mantidas a 5ºC mais que dobrou até o segundo dia de conservação em relação às conservadas a 10ºC. O processamento mínimo influenciou a atividade da PAL, POD e PPO. Todas as enzimas avaliadas, aumentaram a atividade durante a conservação, seja no início, no caso da PAL, ou no final, para a PPO e POD, indicando que as mudanças no metabolismo fenólico desempenha um papel importante no declínio da qualidade de couve. A conservação a 5ºC retardou as alterações no metabolismo fenólico, embora nessa temperatura, a atividade da PAL foi maior, em grandeza numérica, em relação às folhas armazenadas à 10ºC.

We studied the effects of storage temperature on the activities of phenylalanine ammonia-lyase (PAL), peroxidase (POD) and polyphenol oxidase (PPO) in minimally processed kale (Brassica oleracea var. acephala) that was stored for 15 and 9 days at 5 ± 1ºC and 10 ± 1ºC, respectively. The main visual evidence for quality loss in whole leaves was yellowing and loss of turgescence. Minimally processed leaves presented significant browning, indicating increased POD and PPO activities. The PAL activity in minimally processed leaves stored at 5ºC was fourfold higher than that of whole leaves after two days of storage. We showed that minimal processing influenced PAL, POD and PPO activities. The activity of all enzymes studied increased during storage, indicating that changes in phenolic metabolism play an important role in the decline of kale quality. PAL activity increased rapidly at the beginning of storage and exhibited a reduced rate of increase over time, while the PPO and POD activities increased continuously over time. The storage at 5 ° C was a great ally in delaying changes in phenolic metabolism; however, the absolute PAL activity was higher at 5 than at 10ºC.

O objetivo deste trabalho foi desenvolver um revestimento comestível incorporado com óleo essencial de hortelã, bem como avaliar sua eficiência antimicrobiana in vitro e em abacaxi minimamente processado. Revestimentos contendo óleo essencial de hortelã mostraram eficiência antimicrobiana in vitro contra Escherichia coli e Salmonella Enteritidis. O pH, a acidez titulável e a textura não foram afetadas (P>0.05) pelos tratamentos durante o armazenamento. A perda de massa dos abacaxis de todos os tratamentos não ultrapassou 1.0% após 6 dias de armazenamento. O tempo e os diferentes revestimentos não afetaram (P>0,05) o teor de sólidos solúveis totais dos abacaxis. Revestimentos contendo óleo essencial de hortelã foram capazes de inibir o crescimento de fungos e leveduras em abacaxi minimamente processado, quando comparado aos frutos sem revestimento e com revestimento controle. Frutos com revestimento contendo óleo essencial de hortelã apresentaram menor contagem de psicrotróficos no final do armazenamento. A contagem de coliformes termotolerantes foi menor que 3.0NMP·g-1 para todos os tratamentos e não foi detectada presença de Salmonella sp. durante o período de armazenamento. A presença de óleo essencial de hortelã conferiu forte sabor aos abacaxis.

The present research aimed to develop an edible coating incorporated with mint essential oil, evaluate its effectiveness in inhibiting in vitro microbial development, and improve both quality and shelf-life of fresh-cut pineapple. Mint essential oil-containing edible coatings showed in vitro antimicrobial efficiency against Escherichia coli and Salmonella Enteritidis. Titratable acidity, pH, and texture were not affected (P>0.05) by coating or storage time. Mass loss was not higher than 1.0% after the 6th day of storage. No effect of storage time and coating on total soluble solids was observed. Mint essential oil-containing coatings inhibited the growth of yeasts and molds in fresh-cut pineapple. Compared to uncoated and control-coated samples, mint essential oil-containing coatings lessened psychrotrophic bacteria counts throughout storage. Counts of thermotolerant coliforms were not higher than 3.0MPN·g-1 in all treatments, whereas no Salmonella sp. was detected during the 6-day storage. Mint essential oil provided a strong flavor to the fruit, as shown by sensory evaluations.

Filmes antimicrobianos foram desenvolvidos com a incorporação de aldeído cinâmico nas concentrações de 5%, 10% e 20% v/p. Suas atividades de inibição do crescimento foram avaliadas para as bactérias Staphylococcus aureus, Listeria monocytogenes e Escherichia coli e para os fungos Fusarium oxysporum e Aspergillus flavus. As propriedades mecânicas dos filmes também foram avaliadas. Para as bactérias, à exceção de E. coli, foram observados halos de inibição que aumentaram proporcionalmente ao aumento da concentração de aldeído cinâmico no filme. A espessura média dos filmes utilizados, independentemente da concentração, foi de 32,47 µm e a média de deformação relativa na carga máxima dos filmes foi de 2,05% a 8 ºC e 1,73% a 25 ºC. O filme contendo 10% de aldeído cinâmico apresentou carga máxima de deformação de 108,27 N (Newton), significativamente menor (p<0,05) que os filmes com 0% e 5%. Os resultados mostraram que o uso de filmes incorporados com aldeído cinâmico é uma alternativa como embalagem ativa para o controle do crescimento de micro-organismos em produtos alimentícios.

Antimicrobial films were developed with the incorporation of cinnamaldehyde at 5, 10 and 20% v/w. The growth inhibition activities of the films were evaluated for the bacteria Staphylococcus aureus, Listeria monocytogenes and Escherichia coli and for the fungi Fusarium oxysporum and Aspergillus flavus. Their mechanical properties were also evaluated. For the bacteria, with the exception of E. coli, the inhibition zones increased with the increase in concentration of cinnamaldehyde in the film. Regardless of the cinnamaldehyde concentration the average film thickness was 32.47 µm and the mean relative deformation at maximum film load was 2.05% at 8 ºC and 1.72% at 25 ºC. The film containing 10% of cinnamaldehyde showed a maximum load of 108.26 N, significantly lower (p<0.05) than the films with 0% and 5%.The results showed the potential of the films with cinnamaldehyde incorporated as alternative active packaging for the control of the growth of microorganisms in foods.

Listeria monocytogenes é um agente patogênico veiculado por alimentos, capaz de sobreviver e proliferar em temperaturas de refrigeração. Como resultado, os produtos cárneos, prontos para consumo, têm sido associados a graves surtos mortais. A elaboração de produtos cárneos envolve tratamentos letais de conservação, como o tratamento térmico. Entretanto, a contaminação por Listeria pode ser causada quando o produto é fatiado e embalado em estabelecimentos de varejo ou em operações de delicatessen. No Brasil, a comercialização de mortadela fatiada é muito popular. Entretanto, a vida de prateleira da mortadela, após ser fatiada no mercado varejista, é curta. Este trabalho objetivou o estudo do efeito da incorporação de pediocina na carga na ruptura e na permeabilidade ao vapor de água, e da estrutura, por análise microscópica, das embalagens celulósicas antimicrobianas. Também foi estudada a aplicação potencial das embalagens desenvolvidas na preservação de mortadela e a inibição de biofilmes de Listeria. Os filmes celulósicos foram produzidos com acetato de celulose e acetona. A pediocina foi usada na forma do concentrado comercialmente disponível ALTA TM 2341, incorporado a 30, 40 e 50 % p/p. Foi estudada a carga na ruptura dos filmes usando a Máquina Universal de Ensaio de Materiais (Instron) a 10 °C e 25 °C, e a permeabilidade ao vapor de água (PVA), determinada pelo método gravimétrico. Para estudar a estrutura dos filmes desenvolvidos, foi usado o microscópio eletrônico de varredura. A atividade antimicrobiana dos filmes contra Listeria innocua e Listeria monocytogenes foi testada por análise in vitro e em mortadela, respectivamente. Os resultados mostraram que a carga na ruptura diminuiu com altas concentrações de pediocina a 10 °C e 25 °C. Com relação à PVA, só o filme controle e o filme com 50 % de pediocina apresentaram diferença estatística, sendo mais permeável o filme com 50 % de pediocina. Os testes in vitro mostraram a atividade antimicrobiana contra L. innocua. Os filmes celulósicos com 50 % de pediocina reduziram o crescimento de L. monocytogenes na mortadela fatiada em 1,2 ciclo log após nove dias, evitando a formação de biofilmes na superfície da embalagem e da mortadela. Portanto, os filmes celulósicos ativos com 50 % pediocina, na forma do concentrado comercial ALTA™ 2341, têm potencial para serem usados em um sistema de tecnologia de barreiras como um obstáculo final para o controle de L. monocytogenes, na conservação de mortadela.

Listeria monocytogenes is a foodborne pathogen, able to survive and proliferate at refrigeration temperatures. As a result, ready-to-eat meat products have been associated with major outbreaks. Producing meat products involves lethal preservation treatments, e.g. thermal treatments. Listeria contamination, however, may be introduced when products are sliced and packaged at retail businesses or delicatessens. In Brazil, sliced bologna is very popular at retail markets. After slicing, however, bologna has a short shelf-life. The aim of this work was to study the effects of pediocin incorporation on the load at break, water vapor permeability rate and structure, by microscopic analysis, of antimicrobial cellulosic packaging. The potential application of the developed packaging for the preservation of bologna and inhibition of Listeria biofilm formation was also studied. Cellulosic antimicrobial packaging films were produced with cellulose acetate and acetone. Pediocin (commercially available concentrate ALTA TM 2341) was incorporated at 30, 40 and 50 % w/w. The load at break of films was studied using the Universal Testing Machine (Instron) at 10 °C and 25 °C. The water vapor permeability was determined by gravimetric method. A scanning electron microscope was used to study the developed packaging structure. Antimicrobial activity of films against Listeria innoucua and L. monocytogenes was tested both in vitro and in bologna samples. Results showed that values of load at break decreased with increasing concentrations of pediocin at 10 °C and 25 °C. Regarding water vapor permeability, only the control and 50 % pediocin films presented statistical difference, with the 50 % pediocin film being more permeable. In vitro tests showed antimicrobial activity against L. innocua. Cellulosic film with 50 % pediocin reduced L. monocytogenes growth on sliced bologna by 1.2 log cycles after 9 days and prevented biofilm formation on packaging and bologna surfaces. Hence, active cellulosic films made with 50 % pediocin in the form of commercially available concentrated ALTA™ 2341 have the potential of being used in a system of hurdle technologies as a final obstacle for L. monocytogenes control in bologna preservation.

Podridão e danos pós-colheita causados por fungos fitopatogênicos afetam a qualidade das frutas. Óleos essenciais (OE) têm sido considerados como uma alternativa ao uso de fungicidas. Uma alternativa para o controle de doenças pós-colheita dos frutos é a técnica de ensacamento. Portanto, baseado nas propriedades benéficas dos OE e no conceito de ensacamento, este trabalho teve como objetivo desenvolver sachês incorporados com OE para serem usados como parte de um sistema de embalagem antimicrobiana. A atividade dos OE de orégano, canela e de capim-limão foi avaliada. Os sachês foram testados in vitro contra espécies de fungos fitopatogênicos de Alternaria alternata, Fusarium semitectum, Lasiodiplodia theobromae e Rhizopus stolonifer. Além disso, foram avaliados os efeitos dos sachês quanto aos parametros microbiológicos e físico-químicos de mamão na pós-colheita. Os OE puros ou incorporados em sachê apresentaram atividade antifúngica in vitro contra todos os fungos testados. No acondicionamento de mamão, os sachês com canela, orégano e capim-limão mostraram uma redução significativa do crescimento de mesófilos aeróbicos e de bolores e leveduras, sendo o sachê com canela o de maior atividade na redução destes microrganismos após o tempo de estocagem. Os parâmetros físico-químicos de qualidade do mamão, como perda de peso, cor da casca, firmeza, relação sólidos solúveis totais/acidez titulável e pH não foram alterados significativamente pela presença dos sachês com OE, não afetando o processo natural de amadurecimento do mamão.

Rot and damage caused by post-harvest phytopathogenic fungi affect fruit quality. Essential oils (EO) are considered as an alternative to fungicides. Postharvest diseases of fruits may also be controlled by the bagging approach and the use of antimicrobial packaging. Based on the beneficial properties of EO and the concepts of bagging and antimicrobial packaging, this study aimed to develop sachets containing EO to be used as part of an antimicrobial packaging system. The activities of oregano, cinnamon and lemon grass EO were evaluated testing the sachets in vitro against the phytopathogenic fungi Alternaria alternata, Fusarium semitectum, Lasiodiplodia theobromae and Rhizopus stolonifer. The effects of the sachets on the microbiological and physicochemical parameters of post-harvest papaya were also evaluated. Both pure and sachet-incorporated EO showed antifungal activity in vitro against all tested fungi. For papaya, sachets containing cinnamon, oregano and lemon grass showed a significant reduction in the growth of mesophilic aerobic bacteria, yeasts and mould, with the cinnamon sachet causing the greatest reduction in microorganisms at the end of the storage time. Physicochemical parameters of papaya, such as weight loss, colour, firmness, total soluble solids/titratable acidity ratio and pH were not significantly altered by the presence of EO sachets, thus not affecting the natural ripening process of the papaya.

Objetivou-se desenvolver um revestimento comestível antimicrobiano e avaliar sua eficiência na conservação de goiaba. Os frutos foram submetidos a cinco tratamentos: sem revestimento, revestimento de amido de mandioca, revestimento de amido de mandioca com ácido acético e revestimento de amido de mandioca com 1,0% e 1,5% de quitosana. As análises realizadas foram: cor da polpa e casca, firmeza, perda de massa, sólidos solúveis e contagem de fungos filamentosos e leveduras. A coloração verde da casca dos frutos tratados com revestimentos contendo 1,0% e 1,5% de quitosana foi mantida, e a coloração da polpa de todos os tratamentos mudou de rósea para vermelho intenso durante o armazenamento. Os frutos tratados com revestimento contendo quitosana apresentaram menor perda de massa quando comparados aos frutos-controle. Houve redução no teor de sólidos solúveis para os frutos-controle durante o armazenamento, enquanto nos outros tratamentos, o teor de açúcar foi mantido até o 8º dia. Os revestimentos antimicrobianos apresentaram menores contagens de fungos filamentosos e leveduras quando comparados ao controle. O uso de revestimentos comestíveis antimicrobianos contribui na conservação de goiaba, aumentando a vida útil pós-colheita.

This study aimed to develop an antimicrobial edible coating and to evaluate its efficiency in preserving guava. Guava samples were submitted to five treatments: without coating, coating of cassava starch, coating of cassava starch added with acetic acid, coating of cassava starch added with 1.0% and 1.5% chitosan. The following characteristics were analyzed: color of pulp and peel, texture, mass loss, total soluble solids, filamentous fungi and yeast counting. Peel green color of the fruits treated with antimicrobial coatings was preserved and the pulp color of all treatments changed from pink to intense red during the storage. Fruits treated with antimicrobial coatings presented lower mass loss, when compared with the control fruits. There was a decrease in the total soluble solid values of the control group during storage, whereas in the other treatments, the sugar content was preserved until the 8th day. Fruits treated with 1.0% and 1.5% of chitosan showed the lower filamentous fungi and yeast counting when compared with the control. The use of antimicrobial edible coatings contributes to the preservation of guava, reducing microbial growth and increasing its post-harvest life.

Objetivou-se com este trabalho desenvolver sachês incorporados com óleos essenciais avaliando as propriedades físico-químicas e microbiológicas de mangas armazenadas em saco de papel contendo estes sachês em seu interior. Os óleos essenciais de orégano (Origanum vulgaris) e capim-limão (Cymbopogon citratus) foram incorporados em saches, e sua atividade antimicrobiana foi testada nos fungos Colletotrichum gloeosporides, Lasiodiplodia theobromae, Xanthomonas campestris pv. mangiferae indica, Alternaria alternata. Frutos de manga 'Tommy Atkins' foram acondicionados individualmente em sacos de papel contendo em seu interior um sachê antimicrobiano e mantidos a 25 °C ± 2 °C e UR 80% ± 5% por nove dias. Os parâmetros cor da epiderme, firmeza de polpa, sólidos solúveis, acidez titulável e pH sofreram pouca influência dos óleos essenciais de orégano e capim limão, indicando que a presença do óleo essencial não altera as características físico-químicas da polpa de manga. Os sachês ativos incorporados com óleos essenciais de orégano e capim limão apresentaram controle no crescimento dos microrganismos testados, sendo o capim-limão mais eficiente, reduzindo em aproximadamente 2 ciclos Log a contagem de mesófilos aeróbios e fungos filamentosos e leveduras em relação ao tratamento controle empregado.

The present work aimed to develop sachets incorporated with essential oils to be stored with mangoes inside paper bags, as well as to assess both its antimicrobial and physicochemical properties. Oregano (Origanum vulgaris) and lemongrass (Cymbopogon citratus) essential oils were incorporated into sachets and their antimicrobial activity was tested for the fungi Colletotrichum gloeosporides, Lasiodiplodia theobromae, Xanthomonas campestris pv. mangiferae indica, and Alternaria alternate. Tommy Atkins mangoes were individually wrapped in paper bags containing antimicrobial sachets and maintained at 25 °C ± 2 °C e RH 80% ± 5%, for nine days. Both oregano and lemongrass essential oils were found to have little effect on mango skin color, firmness, soluble solids, titratable acidity and pH, indicating that their presence does not alter the physicochemical characteristics of mango pulp. Active sachets incorporated with either oregano or lemongrass essential oils showed efficiency, reducing the growth of the tested fungi, whereas lemongrass was found to be more efficient by decreasing about 2 log cycles both the mesophilic aerobes and molds and yeasts counts, when compared to the control treatment.

A indústria de alimentos, buscando atender à crescente demanda dos consumidores, vem desenvolvendo embalagens ativas para proporcionar qualidade e segurança aos produtos acondicionados. Este trabalho objetivou desenvolver e avaliar a aplicação de filmes ativos aromatizados em contato com a massa de pastel. Os filmes foram preparados pelo método casting, adicionados de ácido sórbico e aroma de pizza e avaliados in vitro frente ao microrganismo Penicillium sp. Também foram estudadas suas propriedades mecânicas, migração de ácido sórbico, avaliação sensorial do produto e análise microbiológica in vivo. Os filmes ativos apresentaram atividade antimicrobiana tanto in vitro como no alimento. A caracterização mecânica mostrou que os filmes ativos aromatizados apresentaram valores de carga máxima na ruptura, inferiores ao filme controle e, durante a migração, a adição de aroma contribuiu para uma maior liberação do ácido sórbico. Além disso, as massas de pastel em contato com os filmes ativos aromatizados apresentaram melhores resultados sensoriais.

The food industry, trying to meet growing consumer demand, is developing active packaging to provide quality and safety for packed food. This research aimed to develop and evaluate the implementation of active flavored films in contact with pastry dough. The active films were evaluated for in vitro antimicrobial activity against Penicillium sp. The mechanical properties of the films, the sorbic acid migration, sensory and in vivo microbiological analyses were also tested. The active films showed better results for in vitro and in vivo microbiological analyses when compared with the film with the sorbic acid incorporated directly on the pastry dough. The incorporation of sorbic acid and flavor affected the mechanical properties of the active films compared to the control film. The flavor addition provided a larger migration of sorbic acid from the film to the pastry dough. Besides the pastry dough packed in the active films showed better sensory results.

A pera é uma das frutas de clima temperado mais consumidas no Brasil, no entanto sua conservação é limitada devido ao seu escurecimento quando sofre danos ou tratamentos físicos. Os revestimentos comestíveis interagem favoravelmente com o alimento, aumentando sua vida de prateleira. Este trabalho objetivou avaliar a ação de revestimento de amido adicionado de lactato de cálcio e L-cisteína na inibição do escurecimento enzimático, na redução do crescimento de psicrotrófilos e enterobactérias e na manutenção da textura. As peras fatiadas foram cobertas com revestimentos comestíveis à base de amido incorporados com cisteína e lactato de cálcio, exceto o controle - sem revestimento (C). Os tratamentos foram: apenas revestimento (T1); 2,0% lactato de cálcio e 1,0% L-cisteína (T2) e 2,0% lactato de cálcio e 1,5% L-cisteína (T3). As amostragens foram feitas nos tempos zero, dois, quatro e seis dias. As amostras foram mantidas sob refrigeração (7°C±2°C). As peras submetidas aos tratamentos T2 e T3 apresentaram-se significativamente mais firmes (P<0,05) que as dos tratamentos C e T1. A ação da cisteína sobre a inibição do escurecimento enzimático foi observada nos tratamentos T2 e T3, que não apresentaram diferença significativa (P≥0,05) entre si para os valores de ∆E, no entanto esses valores foram significativamente menores em relação ao controle. No tempo 6, a redução decimal na contagem de psicrotrófilos chegou a 3,03 e 2,43 para T3 e T2, em comparação com o controle. A contagem de enterobactérias apresentou comportamento semelhante, sendo o valor da redução de 3,16 e 3,05 para T2 e T3 em relação ao controle. Verificou-se que a vida de prateleira de pera minimamente processada pode ser mantida por mais tempo com o uso desse revestimento.

Pear is one of the most consumed temperate fruits in Brazil; however their conservation is limited due to browning when it suffers injuries or physical treatments. The edibles coating interact with the food positively extending its shelf life. This research aimed to evaluate the action of starch edible coating incorporated with calcium lactate and L-cysteine on enzymatic browning inhibition, on psychrotrophs and enterobacteriaceae growing reduction and on firmness maintenance. The sliced pears were coated with starch edible coating incorporated with L-cysteine and calcium lactate, except control, without coating (C). The treatment were: only coating (T1); 2,0% calcium lactate and 1,0% L-cysteine (T2); 2,0% calcium lactate and 1,5% L-cysteine (T3). The samples were taken at 0, 2, 4 and 6 days. Pears were keeped under refrigeration (7°C±2°C). Pears submitted to treatments T2 and T3 show significantly more firms (P<0,05) compared to treatments C and T1. Cysteine action over enzymatic browning inhibition was observed in treatments T2 and T3 which do not differed significantly each other (P≥0,05) to ∆E values however these were significantly lower than control (C). At time 6, decimal reduction on psychrotrophs counting reached 3,03 and 2,43 to T3 e T2 compared to control. Enterobacteriaceae counting showed similar behavior where the reduction values were 3,16 and 3,05 to T2 e T3 compared to control. It was verified that using the studied edible coating on fresh cut pear can extend its shelf life.

There is an increasing tendency to add natural antimicrobials of plant origin into food. The objective of this work was to develop a microbial sachet incorporated with allyl isothiocyanate (AIT), a volatile compound of plant origin, and to test its efficiency against growth of yeasts and molds, Staphylococcus sp. and psychrotrophic bacteria on sliced mozzarella cheese. Another objective was to quantify the concentration of AIT in the headspace of cheese packaging. A reduction of 3.6 log cycles was observed in yeasts and molds counts in the mozzarella packed with the antimicrobial sachet over 15-day storage time. The sachet also showed an antibacterial effect on Staphylococcus sp., reducing 2.4 log cycles after 12-day storage. Psychrotrophic bacteria species were the most resistant to the antimicrobial action. The highest concentration of AIT (0.08µg.mL-1) inside the active packaging system was observed at the 6-day of storage at 12 ºC ± 2 ºC. At the end of the storage time, AIT concentration decreased to only 10% of the initial concentration. Active packaging containing antimicrobial sachet has a potential use for sliced mozzarella, with molds and yeasts being the most sensitive to the antimicrobial effects.

O uso de absorvedores de oxigênio em embalagens de produtos alimentícios acondicionados tem apresentado uma demanda crescente. Assim, o conhecimento da eficiência desses absorvedores em diferentes condições de umidade relativa e temperaturas definidas, são de fundamental importância. Portanto, foram determinadas equações para predizer o volume absorvido de oxigênio para as temperaturas de 10±2 ºC e 25±2 ºC, dependendo da umidade relativa na faixa de 75% a 85% e da taxa de permeabilidade a oxigênio da embalagem. Para a temperatura de 25±2ºC a equação é: V = -32,770+10,440*UR-104,385*ln(TPO2), com um R² = 0,9151. Para a temperatura de 10±2ºC a equação é: V=107,321+6,221*UR-105,166 ln(TPO2) com um R² = 0,8729. Dessa forma, o tempo de atividade do sachê pode ser determinado pela equação T = (V-Vi) / (TPO2*A). Utilizando essas equações e, considerando uma embalagem de área 0,05m² por face, com uma permeabilidade de 8,63 cm3.m-2.dia-1, uma umidade relativa de 80% e o volume de oxigênio inicial dentro da embalagem de 2,5 mL, após o envase, o tempo de atividade do sachê quando armazenado a 10±2ºC foi de 435 dias e a 25±2ºC de 666 dias.

Oxygen absorbers have been presenting a growing demand for application in food packaging. Thus, it is important to know the efficiency of those absorbers in different relative humidity and temperatures. Therefore, equations were developed to predict the volume of absorbed oxygen at 10±2 ºC and 25±2 ºC, according as the relative humidity ranging from 75% to 85% and the oxygen transmission rate through the package. At 25±2ºC the equation was V = -32,770+10,440*RH-104,385*ln(O2 TR), with R² = 0,9151. At 10±2ºC, V=107,321+6,221*RH-105,166 ln(O2 TR) with R² = 0,8729. As a consequence, activity time for the oxygen absorbers can be calculated with the following equation: T = (V-Vi) / (ln(O2 TR*A). Using these equations and considering a packaging area of 0,05m² for each face, oxygen transmission rate of 8,63 cm³.m-².dia-1, relative humidity of 80% and an initial oxygen volume inside the package of 2,5 mL, absorber activity times when stored at 10±2ºC and 25±2ºC were 435 and 666 days, respectively.

O objetivo principal deste trabalho foi avaliar a eficiência de sachês absorvedores de oxigênio a 75%, 80% e 85% de umidade relativa e diferentes temperaturas, 10±2 ºC e 25±2 ºC. O experimento consiste em determinar a absorção de O2 sob essas condições. Um sachê foi colocado dentro de um dessecador contendo um sistema de homogeneização do ar interno. Alíquotas de ar são retiradas dos dessecadores em intervalos de tempos pré-estabelecido e seu conteúdo de oxigênio analisado. Os resultados mostraram que a absorção de oxigênio pelos saches aumentaram com o aumento da temperatura para ambas as temperaturas. No entanto, os sachês mostraram uma maior eficiência para 85% de umidade relativa e 25±2ºC de temperatura. Na condição ambiente (25±2ºC/75%RH), a taxa de absorção dos sachês foi de 50 mL/dia e 18,5 mL/dia para 10±2ºC. O experimento foi conduzido com delineamento experimental inteiramente casualizado, com três repetições.

The main objective of this work was to evaluate the efficiency of oxygen - absorbing sachets at relative humidity of 75%, 80% and 85% and different temperatures, 10±2 ºC and 25±2 ºC. The experiment consisted in determining the O2 absorption under these conditions. A sachet was placed in desiccators with an internal air homogenization system. Aliquots of air were removed at pre-established time intervals and analyzed for oxygen content. The results showed that oxygen absorption by the sachet increased as the relative humidity increased for both temperature. Therefore the oxygen - absorbing sachets were most active under 25±2ºC and 85% relative humidity. At ambient condition (25±2ºC/75%RH) the rate of oxygen absorbed was 50 mL/day and 18,5 mL/day for 10±2ºC. It was used a totally casualized design with three replicates.
