RESUMO: O objetivo desse estudo foi investigar a influência do tipo muscular na oxidação proteica, perfil de textura (dureza, elasticidade, coesividade e mastigabilidade) e composição centesimal da carne de bovinos Bos indicus (Nelore) terminados com grãos no Brasil. Os músculos longissimus lumborum (LL) e psoas major (PM) foram obtidos 24 horas post mortem de oito (n=8) carcaças de touros Nelore, cortados em cinco bifes (1,5 cm), e dispostos em condições aeróbicas por nove dias a 4 °C. Composição centesimal e perfil de textura foram analisados no dia 0, enquanto que a oxidação proteica foi analisada durante 9 dias de estocagem. Os bifes LL demonstraram maior (P<0.05) concentração de proteína em relação aos bifes PM, enquanto que PM apresentou maior (P<0.05) conteúdo de lipídeos e cinzas que LL. Além disso, os bifes LL exibiram maior (P<0,05) dureza, elasticidade, coesividade e mastigabilidade em relação aos bifes PM. Em contraste, a oxidação proteica foi maior (P<0,05) nos bifes PM do que nos bifes LL em todos os dias de estocagem. Os resultados sugerem que as diferenças no metabolismo e na composição muscular contribuíram para a variação nos atributos bioquímicos e perfil de textura entre os bifes LL e PM. Estratégias músculo-específicas são indicadas a fim de promover a estabilidade de cor nos bifes PM oriundos de bovinos Bos indicus terminados com grãos.

ABSTRACT: The aim of this research was to investigate the influence of muscle type on protein oxidation, texture profile (hardness, springiness, cohesiveness and chewiness) and proximate composition of beef from grain-finished Bos indicus (Nellore) cattle in Brazil. The muscles longissimus lumborum (LL) and psoas major (PM) were collected 24 h post mortem from eight (n=8) Nellore bull carcasses, fabricated into five steaks (1.5-cm) and displayed under aerobic conditions for nine days at 4 °C. Proximate composition and texture profile were analyzed on day 0, whereas protein oxidation was analyzed during 9 days of storage. LL exhibited greater (P<0.05) protein concentration than PM steaks, whereas PM demonstrated greater (P<0.05) lipid and ash content than their correlative LL. In addition, LL steaks exhibited greater (P<0.05) hardness, springiness, cohesiveness and chewiness than PM steaks. In contrast, protein oxidation was greater (P<0.05) in PM than in LL steaks throughout the storage. The results suggest that the differences of muscle metabolism and composition contributed to the variation on biochemical attributes and texture profile of LL and PM steaks. Muscle-specific strategies are indicated to improve the color stability of PM steaks from grain-finished Bos indicus cattle.

Objetivou-se, neste estudo, avaliar a validade comercial de quatro formulações de linguiça toscana (Controle - sem adição de aditivo, F1 - adicionada de 3% de lactato de sódio, F2 - adicionada de 0,5% de nisina e F3 - adicionada de 3% de lactato de sódio e 0,5% de nisina). As amostras foram distribuídas em sacos de polietileno contendo 200 gramas para cada formulação e dia de estocagem, para posteriores análises bacteriológicas e físico-químicas. Todas as formulações foram embaladas a vácuo e mantidas sob refrigeração a temperatura de 4°C. Em relação à validade comercial, as amostras foram submetidas às seguintes análises bacteriológicas: contagem de bactérias heterotróficas aeróbias mesófilas e psicrotróficas; contagem de bactérias ácido-láticas e contagem de enterobactérias. As análises fisico-químicas realizadas foram: pH, atividade de água e teor de substância reativa ao ácido tiobarbitúrico. Interpretando-se os resultados obtidos no experimento, concluiu-se que a utilização da combinação de 3% de lactato de sódio e 0,5% de nisina, aumentou a validade das amostras, quando comparada às demais.

The aim of this study was to evaluate the shelf life of four commercial formulations pork sausage (Control - no added additive, F1 - added 3% sodium lactate, F2 - added 0.5% nisin and F3 - added 3 % sodium lactate and 0.5% nisin). The samples were distributed into polyethylene bags containing 200 grams for each day of storage and formulation for subsequent bacteriological and physicochemical analysis. All formulations were vacuum packed and stored at 4°C. Regarding the shelf life samples were submitted to the following bacteriological counts of heterotrophic bacteria aerobic mesophilic and psychrotrophic; count of lactic acid bacteria count and Enterobacteriaceae. The analyzes were carried out physico-chemical: pH, water activity and the content of thiobarbituric acid reactive substance. Interpreting the results obtained in the experiment it was concluded that the use of a combination of 3% sodium lactate and 0.5% nisin increased the shelf life compared to other samples. Estudaram-se os efeitos da recuperação da condição corporal (CC), da estimulação elétrica (EE), da maturação (M 7-14 dias) e da infusão de CaCl2 sobre as características da carne de ovelhas Santa Inês (cerca de 5 anos de idade), abatidas ao desmame ou após o período de recuperação pós-desmame. Avaliaram-se a temperatura e o pH de carcaça, e a força de cisalhamento (FC); a perda por cocção (PC); a cor (L*, a* e b*), e a maciez da carne. Utilizou-se delineamento inteiramente casualizado, em esquema fatorial 2 × 2 × 2 × 3 (CC × EE × CaCl2 × M); para a análise dos dados sensoriais de maciez, utilizou-se a tabela de Número Mínimo de Respostas Corretas para o teste Duo-Trio. A recuperação da condição corporal diminui a força de cisalhamento (8%), aumentando a sua maciez. A estimulação elétrica diminuiu a força de cisalhamento (24%) e não alterou os demais parâmetros avaliados. A maturação (7 ou 14 dias) diminuiu a força de cisalhamento (18-26%), efeito acentuado pela estimulação elétrica, e escureceu a carne, diminuindo a luminosidade (L*) e acentuando b* (amarelo). O tratamento com infusão de CaCl2 foi mais efetivo no amaciamento da carne, reduzindo a força de cisalhamento (35%), aumentando a perda por cocção (4,5%) e os valores L* e b*, clareando a carne. A avaliação sensorial da maciez corroborou a avaliação instrumental referente ao efeito do CaCl2 na melhoria da qualidade da carne. Conclui-se que os tratamentos melhoram as características da carne, com melhores resultados quando aplicados conjuntamente.

The effects of body condition recovery (BC), carcass electrical stimulation (ES), aging time (AT 7 - 14 days), and calcium chloride injection on the meat characteristics of Santa Inês ewes (±5 years old) slaughtered immediately after weaning or after the body condition recovery period were studied. The carcass temperature, pH, shear force (SF), cooking loss (CL), meat color (L*, a*, b*), and meat tenderness were evaluated. A completely randomized design in a 2 × 2 × 2 × 3 (BC × ES × CaCl2 × AT) factorial arrangement was used, and the sensory tenderness data were analyzed using the table of Minimum Number of Correct Answers for the Duo-Trio test. The body condition recovery reduces the shear force in 8%, increasing their tenderness. Electrical stimulation reduced the shear force (24%) and did not change the other parameters. The aging time (7 or 14 days) decreased the shear force (18-26%), effect that was enhanced by electrical stimulation, and it darkened the meat reducing lightness (L*) and increasing yellowness (b*). The treatment with CaCl2 was the most effective in tenderizing meat by reducing the shear force ( 35%); increasing the cooking loss (4.5%); and increasing L* and b* lightening the meat. The sensory evaluation of tenderness corroborates the findings of the experimental evaluation regarding the effect of the treatment with CaCl2 on the meat quality improvement. It was concluded that the treatments improve meat characteristics achieving better results when applied together.

Esse experimento foi elaborado em parceria com o CENAQUA (Centro Nacional de Quelônios do Amazonas) e a Pró-Fauna (localizada em Iguape - SP) objetivando o estudo da validade comercial e a aceitabilidade da carne de tartaruga-da-amazônia criada em cativeiro. Foi avaliado o efeito do tempo de estocagem de amostras de carne de 14 tartarugas (7 fêmeas e 7 machos) nos dias 01, 30, 60 e 120, estocadas a -10 ºC, nos valores de pH e de Bases Voláteis Totais (BVT), cor, textura, odor e prova de cocção. Observou-se diferença significativa entre os valores de pH em relação ao tempo de estocagem nos dias 01 (5,81 e 5,81), 30 (6,04 e 6,05), 60 (6,22 e 6,23) e 120 (6,30 e 6,30), respectivamente para a carne das fêmeas e machos. Entre os sexos não houve diferença significativa. Quanto a BVT o tempo de estocagem influenciou significativamente entre os dias 01 (11,34 e 11,74 g/100g), 30 (13,92 e 13,90 g/100g) e 120 (17,62 e 17,82 g/100g); entre os dias 30 (13,92 e 13,90 g/100g) e 60 (14,02 e 14,06 g/100g) não observou-se diferença significativa, respectivamente para a carne de fêmeas e machos. Entre os sexos não ocorreu diferenças significativas. A cor, textura, odor e a prova de cocção não apresentaram alteração ao longo do tempo de estocagem. A carne de tartaruga obteve media de aceitabilidade global de 7,04. De acordo com os resultados obtidos concluímos que, pelas provas de pH e BVT, a carne de tartaruga pode ter uma validade comercial de 120 dias, quando embaladas a vácuo e estocadas a -10 ºC, e que a os provadores gostaram muito desse tipo de carne.

This research was developed in partnership with CENAQUA and Pró-Fauna with the objective of studying commercial validity and acceptance of the meat of Amazon-turtle that was bred in captivity. The effect of the storage period was evaluated on meat samples of fourteen turtles (7 female and 7 male ) stored in a period of 1, 30, 60, and 120 days at a temperature of -100Celsius, concerning to values of pH, total volatile bases, color, scent, and cooking test. Significant difference was observed in relation to pH values and the period of storage as follow: in the period of 1 (5.81 and 5.81), 30 (6.04 and 6.05), 60 (6.22 and 6.23), and 120 (6.30 and 6.30) days, respectively either for the meat of female turtle or male. There was not significant difference concerning to sex. As for total volatile bases (TVB), the period of storage has influenced significantly: in the period of 1 (11.34 and 11.74 g/100g), 30 (13.92 and 13.90 g/100g), and 120 (17.62 and 17.82 g/100g); in the period of 30 (13.92 and 13.90g/100g) and 60 (14.02 and 14.06g/100g) days, significant difference was not observed, respectively for female and male meat. Not significant difference occurred in relation to sex. The result for color, texture, scent, and cooking test did not present any alteration along the period of storage. The meat of turtle obtained a 7.04 average of general acceptability that shows the acceptance of the tasters for this sort of meat. According to the results for pH and TVB, we have concluded that this meat of turtle may have 120 days of commercial validity once it is vacuum-packed and stored at -100Celsius, and that it presents good acceptance for the tasters.

Esta pesquisa utilizou 12 eqüinos de diferentes idades, abatidos em um matadouro-frigorífico (SIF 1803) em Araguari-MG, e estudou a temperatura, pH, comprimento de sarcômero em diferentes intervalos de tempo após abate (1h, 5h, 8h, 10h, 12h, 15h e 24h) e força de cisalhamento (maciez) dos músculos Longissimus dorsi e Semitendinosus, com intuito de caracterizar o desenvolvimento do processo de rigor mortis de eqüídeos durante o processamento industrial. A temperatura da câmara fria variou de 10,2°C a 4,0°C e a temperatura média inicial das carcaças foi de 35,32°C e a final de 4,15°C. O pH inicial médio do músculo Longissimus dorsi foi 6,49 e o final 5,63, e para o músculo Semitendinosus o pH inicial médio foi 6,44 e o final 5,70. A menor medida de sarcômero observada em ambos os músculos foi na 15ª hora após abate, ou seja, 1,44µm e 1,41µm, respectivamente. A carne dos eqüídeos adultos foi mais dura (p<0,05) do que a dos jovens, bem como do músculo Semitendinosus quando comparado com o Longissimus dorsi.

This work studied 12 horses at different ages butchered in a slaughterhouse in Minas Gerais State, Brazil (SIF 1803) and evaluated temperature, pH, sarcomere length in different periods after slaughter (1h, 5h, 8h, 10h, 12h, 15h, and 24 hours) as well as the shear force (meat tenderness) of the Longissimus dorsi and Semitendinosus muscles, aiming at characterizing the rigor mortis onset in the meat during industrial processing. The chilly room temperature varied from 10.2°C to 4.0°C, and the mean initial carcass temperature was 35.32°C and the final one was 4.15°C. The mean initial pH of Longissimus dorsi was 6.49 and the final one was 5.63; the mean initial pH of Semitendinosus was 6.44 and the final one was 5.70. The smallest sarcomere size obtained in both muscles occurred at 15 hours postmortem, and the sarcomere lengths were 1.44 µm and 1.41 µm, respectively. The meat from adult horses was tougher than that from young ones (p<0.05), and the Semitendinosus muscle was tougher than Longissimus dorsi muscle.
