Diabetes melittus, uma desordem endócrina, é a maior causa de morbidade em países em desenvolvimento e é considerada a quarta causa de mortes no mundo. A terapia convencional para diabetes é o tratamento com insulina. A casca do maracujá é um material rico em fibras, e impede a absorção de carboidratos, podendo, dessa forma, controlar e reduzir a taxa de açúcar no sangue. O objetivo deste estudo foi analisar o efeito dessa farinha na glicemia de ratos diabéticos, bem como estudar os prováveis mecanismos de ação. Foram empregados ratos Wistar, aos quais foram oferecidas dietas balanceadas contendo farinhas da casca de maracujá em três concentrações, 5, 10 e 15%, e tendo como controle uma dieta com caseína. A dieta que mostrou maior efeito significativo sobre o controle do diabetes foi a de 5%, proporcionando uma redução de cerca de 60% da glicemia dos animais desse grupo e um aumento de 71% do glicogênio hepático. A conversão de glicose sanguínea em glicogênio hepático foi considerada um dos prováveis mecanismos de ação envolvidos.

Diabetes mellitus, an endocrine disorder, is the major cause of morbidity in developing countries, and it is considered the fourth leading cause of death worldwide. The conventional therapy for diabetes is insulin treatment. The peel of the Passion fruit is rich in fiber and prevents the absorption of carbohydrates, and thus can control and reduce the blood sugar rate. The objective of this study was to analyze the effect of the passion fruit peel flour on the glicemia of diabetic rats, as well as to study the probable action mechanisms. Wistar rats were used in the experiment and were offered the flours of the passion fruit peel in three concentrations: 5, 10, and 15%, and a casein diet as control. The most significant effect on the reduction of the glicemic rate was obtained with the 5% diet. The best values of hepatic glycogen were found in the 5 and 10% diets. The results of this study suggest that the 5% passion fruit flour diet was the one that provided the best reduction of blood glucose levels (59%) and the higher increase of the hepatic glycogen level (71%). The conversion of blood glucose into hepatic glycogen was considered the probable action mechanism involved.

As doenças cardiovasculares são responsáveis pela alta taxa de mortalidade nos países desenvolvidos e em desenvolvimento, assim, têm sido alvo de vários estudos. O objetivo deste trabalho foi avaliar as concentrações de colesterol e suas frações, triglicérides e pressão arterial em humanos. O estudo foi dividido em três tratamentos - dieta (placebo), estatina e ácidos graxos ômega-3 com dieta de 1200 kcal por dia para todos os grupos com oito pacientes cada, e vários parâmetros foram avaliados no tempo zero e 30 dias. Conclui-se que para o tratamento dieta houve diminuição de peso, colesterol total, HDL-c, triglicérides, Pressão arterial sistólica (PAS), Pressão arterial diastólica (PAD) e aumento no LDL-c. No tratamento estatina, houve redução de peso, colesterol total, LDL-c, triglicérides, PAS, PAD e aumento do HDL-c. Já no tratamento com ômega-3, constatou-se a diminuição de peso, colesterol total, LDL-c, triglicérides; aumento de PAS e PAD e níveis de HDL-c iguais.

Cardiovascular diseases are responsible for the high mortality rate in many countries, therefore, they have been widely studied recently. The objective of this research was to evaluate the concentration of cholesterol and its fractions, triglycerides and blood pressure in humans. This study was divided into three treatments (placebo, statin, and ômega-3) with a 1200 calorie diet per day for all groups of eight patients. The following parameters were evaluated on day 0 and day 30: anthropometry (weight); clinical assessment (arterial pressure), and biochemistry (total cholesterol, HDL-cholesterol, LDL-cholesterol and triglycerides). The findings show that in the diet treatment there was weight loss, decrease of total cholesterol, HDL-cholesterol, triglycerides, SAP, and DAP, and increase of LDL-cholesterol. In the statin treatment there was weight loss, decrease of total cholesterol, LDL-cholesterol, triglycerides, SAP, and DA, and increase of HDL-cholesterol. In the ômega-3 treatment it was verified weight loss, total cholesterol, LDL-cholesterol, and triglycerides; increase of values of SAP and DAP, and the levels of HDL-cholesterol remained constant.

Os fitonutrientes podem ser encontrados em muitas frutas, sendo o abacate o mais rico em beta-sitosterol (fitoesterol) e glutationa. O fitoesterol é uma substância de origem vegetal cuja estrutura é muito similar a do colesterol e seu mecanismo de ação envolve a inibição intestinal de absorção do colesterol e diminuição da síntese de colesterol hepático. O efeito é exercido sobre os valores de colesterol plasmático total e LDL, sem afetar os níveis de HDL e triglicérides sanguíneos. O presente trabalho teve como objetivo analisar a influência do consumo de farinha de abacate variedade Hass nos níveis séricos de colesterol total, HDL, LDL, triglicérides, colesterol hepático e excretado. Estes parâmetros foram investigados em ratos Wistar hipercolesterolêmicos durante 30 e 60 dias de experimento. Ao final de 30 dias, a dieta com 15% de abacate mostrou ser mais efetiva para reduzir os níveis de colesterol total e LDL e aumentar o HDL em comparação ao controle. Foi observado que para o teor de colesterol excretado a melhor dieta foi a de 25% de abacate, pois quanto maior a concentração de abacate, maior a excreção de colesterol. A dieta com 15% e 25% de abacate, foram as que mais influenciaram nos níveis de colesterol hepático.

Phytonutrients can be found in fruits, and the avocado contains four times more beta-sitosterol (phytosterol) and it is one of the best glutathione sources. The phytosterol is a vegetable substance whose structure is very similar to the cholesterol one and its action mechanism involves the intestinal inhibition of cholesterol absorption and the synthesis of hepatic cholesterol. The effect has an influence on the values of total plasmatic cholesterol and LDL without affecting the levels of HDL and triglycerides. The present work had the objective to analyze the influence of the consumption of the Hass avocado on the levels of total cholesterol, HDL, LDL, triglycerides, and hepatic and excreted cholesterol. These parameters were investigated in hipercholesterolemic Wistar rats during 30 and 60 days of experiment. At the end of 30 days, the 15% avocado diet reduced the levels of total cholesterol and LDL in comparison to the control. It was observed that for the excreted cholesterol, the best diet was the 25% of avocado since the cholesterol excretion increased with the increase of the avocado concentration. The 15% avocado diet also influenced the levels of hepatic cholesterol.

Hábitos de vida saudáveis e uma dieta balanceada aliados ao alto consumo de frutas e vegetais estão associados à redução do risco de doenças e à manutenção da saúde. O óleo de abacate possui em sua composição substâncias bioativas capazes de prevenir e controlar as dislipidemias. Como existem poucas pesquisas científicas avaliando o potencial deste óleo para o consumo humano, o presente trabalho estudou os processos de extração e refino do óleo de abacate. Para tanto, procedeu-se à separação da polpa das outras partes da fruta. A polpa fresca foi seca em estufa, e posteriormente moída para a obtenção de um farelo. O óleo obtido do farelo foi extraído e caracterizado. Os resultados mostraram que os processos de extração e refino do óleo a partir da variedade Margarida são tecnicamente viáveis, o que o torna excelente matéria-prima para a indústria alimentícia. Além disso, possui um perfil de ácidos graxos e esteróis muito semelhante ao perfil do azeite de oliva, podendo desta forma, substituir o óleo de soja e ser utilizado juntamente com o azeite de oliva nos óleos mistos, oferecendo ao consumidor brasileiro um produto de qualidade superior e com menor custo.

Healthy life habits and an adequate diet, together with a high intake of fruits and vegetables, are associated with reducing the risk of diseases and maintaining health. The avocado oil has bioactive substances that can prevent and control the hyperlipidemia. Since there is little scientific research evaluating the oil potential for human consumption, the present work studied the extraction and refining process of the avocado oil. Firstly, the pulp was extracted from the fruit. The fresh pulp was dried in a stove and then grounded for obtaining the bran. The oil obtained from de bran was extracted and characterized. The results showed that the extraction and refining process of the Margarida avocado variety is technically feasible, and it is an excellent raw material for the food industry. Besides, the fatty acid composition and the sterols presents in the avocado oil are similar to the olive oil. Thus, the avocado oil can substitute the soybean oil, or it can be mixed with the olive oil offering the Brazilian consumers a product of high quality and low cost.

Um estilo de vida saudável e uma dieta balanceada, associados com uma alta ingestão de frutas e vegetais estão ligados também à boa saúde e a prevenção de doenças. Maçãs contêm compostos bioativos que ajudam à prevenção e controle da hiperlipidemia. Uma das preocupações da Saúde Pública no Brasil é reduzir as doenças cardiovasculares. Assim, o objetivo deste trabalho foi analisar a composição química da maçã Gala e estudar o efeito do seu consumo no ganho de peso, comida ingerida, níveis sanguíneos de colesterol total, HDL-C, LDL-C, triglicérides, colesterol hepático e colesterol fecal em ratos albinos Wistar, alimentados com uma dieta hipercolesterolêmica. Foram utilizados seis animais para cada tratamento (controle, 5, 15, e 25% dieta de maçã), durante 30 e 60 dias. Este estudo mostrou que uma maçã (200 g) pode contribuir com 14,5% do total de fibras e 55% da vitamina C recomendados, além de suprir consideráveis quantidades de produtos fenólicos (0,38 g .100 g-1) e taninos (0,16 g .100 g-1). Todos os animais mostraram uma redução não significativa no ganho de peso e ingestão de comida com o aumento na quantidade de maçã na sua dieta. Ao final de 30 dias, todas as dietas resultaram em uma redução significativa de triglicérides comparados ao grupo controle. As dietas de 15 e 25% mostraram redução significativa nos níveis séricos de colesterol total e LDL-C e um aumento nos níveis fecais de colesterol em relação ao grupo controle. A dieta de 25% de maçã resultou em uma significativa redução dos níveis de colesterol hepático comparados com o grupo controle. Depois de 60 dias, os níveis séricos de colesterol total, LDL-C, HDL-C e triglicérides em ratos alimentados com 5, 15 e 25% de dieta de maçã eram similares ao grupo controle. Isto, provavelmente foi devido a uma reversão do processo. Estes resultados mostram a importância da maçã Gala no controle da hiperlipidemia em ratos. A dieta rica em vegetais e frutas, incluindo maçãs, e associada a um estilo de vida saudável, com o tempo pode prevenir e reduzir o risco de doenças cardíacas.

A healthy life style and a balanced diet, associated with a high fruit and vegetable intake, are linked to good health and the prevention of diseases. Apples contain bioactive compounds that help in the prevention and control of hyperlipidemia. One of the Public Health concerns in Brazil is to reduce cardiovascular diseases. Therefore, the objective of this work was to analyze the chemical composition of Gala apples and to study the effect of their consumption on weight gain, food intake, serum levels of total cholesterol, HDL-C, LDL-C, triglycerides, hepatic cholesterol and fecal cholesterol in male albino Wistar rats fed a hypercholesterolemic diet. Six animals were utilized for each treatment (control, 5, 15 and 25% apple diet), during 30 and 60 days. This study showed that one apple (200 g) can provide 14.5% of recommended total fiber and 55% of recommended vitamin C, besides supplying considerable quantities of phenolic compounds (0.38 g.100 g-1) and tannins (0.16 g.100 g-1). All animals showed a non-significant reduction in their weight gain and food intake with an increase in the concentration of apple in the diets. At the end of 30 days, all of the diets provided a significant reduction in the levels of triglycerides compared to the control group. The 15 and 25% apple diets showed significant reductions in the serum levels of total cholesterol and LDL-C and an increase in the level of fecal cholesterol in relation to the control group. The 25% apple diet provided a significant reduction in the hepatic cholesterol levels compared to the control group. After 60 days, the serum levels of total cholesterol, LDL-C, HDL-C and triglycerides in rats fed with 5, 15 and 25% apple diets were similar to the control group. This probably happened due to a revertion of the process. These results show the importance of Gala apples in the control of hyperlipidemia in rats. A diet rich in vegetables and fruits, including apples, associated to a healthy life style, over time, could prevent or reduce the risk of heart disease.

O presente trabalho objetivou a determinação do perfil lipídico de ovos integrais desidratados, bem como de gemas desidratadas, a fim de enfatizar seu conteúdo de ácidos graxos de configuração trans. A fração lipídica das amostras foi extraída com hexano/isopropanol e, a seguir, metilada. Os ácidos graxos foram identificados via cromatografia gasosa. Constatou-se que a natureza lipídica dos ovos tem caráter predominantemente insaturado: 63,65% dos lipídios totais nos ovos integrais e 62,63% nas gemas. Além disso, foram identificados apenas traços de gorduras trans (0,24% nos ovos integrais e 0,27% nas gemas).

The objective of this work was to determine fatty acids composition in dehydrated eggs and egg yolks emphasizing its contents of trans fatty acids. The fatty acids fraction of the samples was extracted with hexane/isopropanol (3:2) and then methylated. The profile of the fatty acids was identified by gas chromatography with predominant evidence of insaturated character: 63.65 and 62.63% of the lipids were unsatureted in the eggs and in the egg yolks, respectively. Traces of trans fatty were also identified (0.24% in the hole eggs and 0.27% in the egg yolks).

O presente trabalho teve como objetivo avaliar a aceitabilidade de amostras de maionese obtidas em laboratório com diferentes tipos de óleos e aromatizadas com ervas. O método de ordenação foi utilizado na avaliação da preferência das amostras produzidas em laboratório e o teste de diferença-do-controle foi aplicado com o intuito de saber se existiam diferenças significativas entre estas. Verificou-se também o nível de aceitação das amostras por escala hedônica de 9 pontos, no qual 28 julgadores avaliaram as amostras pelos atributos qualidade geral do produto, sabor e consistência. De acordo com os resultados obtidos no teste de ordenação, verificou-se uma diferença significativa (p > 0,05) quanto à preferência das amostras contendo óleo de gergelim e azeite de oliva e, pelo teste de diferença-do-controle, concluiu-se que as amostras de maionese com os óleos de gergelim, coco e azeite de oliva são diferentes ao nível de significância de 5%, em relação à maionese com óleo de soja (padrão). Na avaliação da aceitação por atributos, verificou-se que não houve diferença significativa de preferência entre as amostras aromatizadas.

The aim of the present work was to evaluate the acceptance of mayonnaise samples produced in the laboratory containing different oils and aromatized with herbs. The ranking test was used for preference evaluation of the laboratory samples and the difference from the control test was applied with the purpose of finding out if there were significant differences between the samples. The acceptance level of samples by the acceptance test using a hedonic scale of 9 points was also observed, where 28 panelists evaluated the samples by considering their general acceptation, taste and consistency. According to results of the ranking test, a significant difference (p > 0.05) was observed regarding the sample's preference containing sesame and olive oil and the difference from the control test can conclude that the mayonnaise samples with sesame, coconut and olive oils are different in the significance level of 5% with regards to soybean oil mayonnaise. In the attribute test, there was no significant difference of preference between the aromatized samples.

As aflatoxinas são metabólitos hepatotóxicos produzidos por algumas linhagens de Aspergillus flavus, A. parasiticus e, eventualmente, por A. nomius sobre grande número de produtos agrícolas. Esta pesquisa foi conduzida para avaliar a capacidade de Saccharomyces cerevisiae, nas formas termolisada e desidratada viva, em reduzir os danos causados por aflatoxinas. Para tal, foi preparada uma dieta básica e desta se obtiveram quatro formulações: uma como controle; as demais contaminadas com aflatoxinas na concentração de 400 mig kg-1, sendo duas com posterior adição de 1% de leveduras, uma na forma termolisada e outra como desidratada viva. Um bioensaio com duração de 28 dias foi efetuado com ratos Wistar. Foram realizados os estudos do peso relativo de órgãos internos e a análise do tecido hepático dos animais. Os pesos relativos de órgãos internos de animais submetidos aos diferentes tratamentos não diferiram estatísticamente entre si; o tecido do fígado dos animais submetidos à dieta livre de aflatoxinas foi adotado como padrão de isento de toxidez; o tecido hepático dos animais que receberam dieta controle com aflatoxinas apresentaram sinais claros de toxicidade; os animais que receberam dieta com aflatoxinas + 1% de levedura termolisada apresentaram sinais de toxicidade semelhantes ao controle com aflatoxinas; o tecido hepático dos animais que receberam dieta com aflatoxinas + 1% de levedura viva apresentaram sinais de toxicidade menores do que os animais que receberam a dieta controle com aflatoxinas. As leveduras termolisadas não foram capazes de suprimir os efeitos das aflatoxinas; as leveduras vivas apresentaram habilidade de reduzir os efeitos promovidos por aflatoxinas.

Aflatoxins are hepatotoxic metabolites produced by Aspergillus flavus and A. parasiticus on a number of agricultural commodities. This research was carried out to evaluate the ability of thermolysed and active Saccharomyces cerevisiae to attenuate liver damage caused by aflatoxin. Diets were prepared containing 0 aflatoxin; 400 mug kg-1 aflatoxin; 400 mug kg-1 aflatoxin plus 1% of dehydrated active yeast, and 400 mug kg-1 aflatoxin plus 1% of thermolysed yeast. A bioassay with Wistar rats was conducted for 28 days, and body organs were weighted and analyses of the liver tissue of the animals were performed. The relative weight of heart, kidneys and liver from animals submitted to the different treatments did not show any difference, and liver tissue of animals feeding on the aflatoxin-free diet was adopted as a toxicity-free pattern. Hepatic tissue of animals feeding on diets containing 400 mug kg-1 aflatoxin or the diet supplemented with 1% thermolysed yeast showed clear signs of toxicity and damage. Hepatic tissue of animals feeding on the diet containing 1% of dehydrated active yeast showed less toxicity signs and damage than those receiving the diet containing 400 mug kg-1 aflatoxin. Active, dehydrated yeast had the ability to reduce toxic effects caused by aflatoxin, but thermolysed yeast was not able to alleviate the effects of aflatoxin toxicity.

Foram produzidos macarrões tipo "padre nosso" utilizando farinha de trigo complementada com farinha de feijão-guandu nas proporções de 5, 10 e 15%. Os macarrões obtidos nos ensaios foram submetidos à avaliação através das determinações de umidade, acidez, teste de cozimento e análise sensorial. Foram desenvolvidos ensaios biológicos com ratos albinos para a avaliação da qualidade protéica das misturas empregadas na formulação do macarrão. Os valores encontrados, para os diferentes macarrões, para a umidade e acidez podem ser considerados normais e dentro da faixa de aceitação. Os dados obtidos nos testes de cozimento indicam que os macarrões testados são de qualidade média baixa. A análise biológica revelou que a melhor suplementação de aminoácidos ocorreu com a mistura contendo 5% farinha de feijão-guandu.

Elbow type macaroni was produced with wheat flour and supplemented with pigeon pea bean flour in the ratios of 5, 10, and 15%. The macaroni obtained was evaluated through humidity and acidity determinations, cooking test and sensorial analysis. Biological assays with albino rats were developed to evaluate the protein quality of the mixtures used in the macaroni formulation. The values found for different macaroni as to humidity and acidity can be considered normal and within an acceptable range. The data found in the cooking test indicated that the tested macaroni had regular-low quality. The biological analysis revealed that the mixture containing 5% of pigeon pea flour was the best amino acid supplement.
