Resumo: O artigo tem como propósito refletir sobre o acesso da população local à educação superior por meio da existência de uma instituição no local e essa com Ações Afirmativas, a luz do desenvolvimento humano de Amartya Sen. De maneira específica, a implantação do Campus Litoral da Universidade Federal do Paraná (UFPR) em 2005, no município de Matinhos, e as políticas internas da UFPR e da Lei de Cotas do Governo Federal. A principal fonte de informação utilizada foram os dados socioeducacional das inscrições ao vestibular e das matrículas disponibilizados pelo Núcleo de Concursos da UFPR. A UFPR no Litoral do Paraná alteraram o leque de oportunidades de acesso à educação superior para a população local, possibilitando a ampliação das liberdades instrumentais desta população, e possivelmente por meio da educação superior, as liberdades substantivas.

Abstract: The article aims to reflect on the access of the local population to higher education through the existence of an on-site institution and this one with Affirmative Actions, in light of Amartya Sen's human development. Specifically, the implementation of the Federal University of Paraná (UFPR), implemented in 2005 in the city of Matinhos, and the internal policies of UFPR and the Federal Government Quota Law. The main source of information used was the socio-educational data from the entrance exams and the enrollment made available by the UFPR Competition Center. The UFPR in the Paraná Coast changed the range of opportunities for access to higher education for the local population, enabling the expansion of the instrumental freedoms of this population, and possibly through higher education, the substantive freedoms.

RESUMO Objetivo: investigar o desenvolvimento neuropsicomotor, bem como aspectos nutricionais e cognitivos/emocionais de crianças de 0 a 5 anos de centros de educação infantil, visando a prevenção e identificação precoce de riscos e atrasos no desenvolvimento infantil. Métodos: a população estudada foi composta por 85 crianças frequentadoras de dois centros de educação infantil. A abordagem do desenvolvimento infantil foi contextual, por meio da avaliação fisioterapêutica lúdica com escala DENVER II; também foram realizadas avaliações complementares do estado nutricional a partir das medidas antropométricas de peso e altura, e dos aspectos do desenvolvimento cognitivo/emocional a partir do Desenho Livre e Desenho da Figura Humana. Resultados: o desenvolvimento neuropsicomotor encontrou-se dentro dos parâmetros de normalidade em 69,41% e questionável em 30,58% das crianças. Constatou-se que a variável significante sobre o resultado foi a turma em que algumas crianças se encontravam. Na escala utilizada, a área de melhor desempenho foi a motora-grosseira (7,69%) e a mais questionável foi da linguagem (58,85%). Quanto aos dados nutricionais foi acurado que 27,06% das crianças apresentaram algum risco nutricional, sendo que 22,35% tiveram risco à obesidade e 4,71% risco à desnutrição. Na análise cognitiva/emocional o resultado apontou que 34,37% das crianças avaliadas apresentaram indicações de dificuldades em relação à adaptação e socialização ou auto-estima. Conclusões: na presente pesquisa, cerca de um terço das crianças participantes apresentaram desenvolvimento neuropsicomotor questionável, especialmente na área da linguagem, sendo que a turma em que a criança está inserida pode configurar uma barreira ao desenvolvimento. Essas crianças apresentaram riscos nutricionais, com tendência à obesidade, bem como indicações de dificuldades em relação à adaptação e socialização ou auto-estima.

ABSTRACT Purpose: to investigate the neuropsychomotor development, as well as nutritional and cognitive/emotional aspects of children aged 0 to 5, attending early childhood education centers, aiming at early identification and prevention of risks and delays in children’s development. Methods: the population studied was composed of 85 children attending two early childhood education centers. The children’s development approach was contextual, by means of ludic physical therapy assessment, by using the DENVER II scale; complementary assessments of their nutritional status were also performed, based on anthropometric measurements of weight and height, as well as evaluations of the cognitive/emotional development aspects through the Free Hand Drawing and Human Figure Drawing Tests. Results: neuropsychomotor development was found to be within normal range in 69.41% of the children and questionable in 30.58% of them. The significant variable affecting the result was found to be the class in which some children were inserted. In the scale utilized, the best performance was considered to be the gross motor skills (7.69%) and the most questionable performance occurred in the language skills (58.85%). As for nutritional data, it was discovered that 27.06% of the children had some nutritional risk, 22.35% had obesity risk and 4.71%, malnutrition risk. In the cognitive/emotional analysis, the result was that 34.37% of the children presented signs of difficulties related to adaptation and socialization or self-esteem. Conclusion: in the present study, about one-third of the children participating presented questionable neuropsychomotor development, especially in the field of language; in this regard, the class to which the children belong may constitute a barrier to their development. These children presented nutritional risks, with a tendency towards obesity, as well as the possible difficulties regarding adaptation and socialization or self-esteem.

O presente trabalho teve como objetivo avaliar a qualidade pós-colheita de frutos de tomate de mesa de diferentes sistemas de cultivos. As amostras de tomate convencional, cv. Raísa (LV), e orgânico, cv. Santa Clara, foram mantidas a uma temperatura de 23,5 ± 2 ºC, com UR de 74% ± 5 e submetidas a análise da massa, peso específico, cinzas, sólidos totais, sólidos solúveis totais, acidez titulável total, relação sólidos solúveis totais/acidez titulável total, pH, vitamina C, Salmonella spp., coliformes totais, coliformes fecais, bolores e leveduras e análise sensorial, que foi realizada pela Análise Descritiva Quantitativa - ADQ. O tempo de armazenagem foi de 13 e 14 dias para o tomate de mesa cultivado nos sistemas convencional e orgânico, respectivamente. The objective of this work was to evaluate the postharvest quality of fruits grown using different systems. Conventional (CS) tomatoes of the variety Raisa and Organic (OS), variety Santa Clara rustic, were stored at 23.5 ± 2 ºC, RH 74% ± 5 and analyzed for mass, specific weight, ash, total solids, total soluble solids, total titrable acidity, total soluble solids/total titrable acidity ratio, pH, vitamin C, Salmonella spp., total coliforms, faecal coliforms, molds and yeasts, and sensory analysis (using Quantitative Descriptive Analyses - QDA). The time of storage was of 13 days for the conventional tomatoes and 14 days for the organic tomatoes. Weight loss (3,74%) was lower for the conventional tomatoes. Both fruits were similar in the physical, chemical, sensory and microbiological analysis in the different maturity stages

A presença dos produtos orgânicos nas gôndolas das grandes redes de supermercados indica que existe um potencial de mercado para esses produtos, no entanto poucas são as informações técnico-científicas sobre eles. Em razão disso, o presente trabalho teve como objetivo determinar a qualidade do tomate de mesa cultivado nos sistemas convencional (SC) e orgânico (SO) comercializado na Região Metropolitana de Curitiba. As amostras foram avaliadas pela massa, peso específico, cinzas, sólidos totais, sólidos solúveis totais, acidez titulável total, relação sólidos solúveis totais/acidez titulável total, pH, vitamina C, nitratos, nitritos, multirresíduos, benzimidazóis e ditiocarbamatos. Os resultados da análise físico-química mostraram que somente na umidade os tomates não apresentaram diferença significativa ao nível de 5% quando comparados pelo Teste de Tukey. Em relação à análise toxicológica, não foram detectados multirresíduos e benzimidazóis até os limites de 0,04 mg.kg-1 e 0,1 mg.kg-1 de carbendazim, respectivamente. Nos resíduos de pesticidas do grupo químico ditiocarbamatos, foi identificado 0,01 mg.kg-1 (CS2) nas amostras de SC3 e SC4 do tomate de mesa cultivado no sistema convencional, abaixo do limite máximo recomendado (LMR) de 2,0 mg.kg-1 (CS2) de mancozebe.

The presence of organic products in the aisles of big supermarket chains indicates a market potential for these products. However, there is little technical and scientific information. Thus, the objective of this work was to determine the quality of tomatoes grown under conventional (CS) and organic (OS) systems, on sale in the metropolitan area of Curitiba, Brazil. Samples were evaluated in terms of mass, specific weight, ash, total solids, total soluble solids, total titratable acidity, total soluble solids/total titratable acidity ratio, pH, vitamin C, nitrates, nitrites, multiresidues. There were no significant differences between conventional and organic tomatoes, except in a 5 per cent difference in humidity, according to the Tukey test. Regarding the toxicological analyses, multiresidues and benzimidazole were not detected up to the limit of 0.04 mg.kg-1 and likewise carbendazim up to 0.1 mg.kg-1. Pesticide residues belonging to the dithiocarbamate chemical group were identified at levels of 0.01 mg.kg-1 in two samples of conventionally cultivated tomatoes. These levels are below the recommended upper limit for mancozebe fungicide (2.0 mg.kg-1 CS2).

A batata é considerada um dos poucos alimentos capazes de nutrir a crescente população mundial por ser fonte de energia e conter elevado teor de proteínas, vitaminas e minerais. Porém os teores desses compostos sofrem influência de diversos fatores como: cultivar utilizada, condições edafoclimáticas, safra, colheita e armazenamento. Assim, o presente trabalho teve como objetivo determinar a composição química de batatas (cvs. Atlantic, Asterix, Innovator e Shepody), cultivadas em quatro doses (0, 120, 360 e 1080 kg K2O.ha-1) e duas fontes de potássio (KCl e K2SO4). As amostras foram provenientes do município de Fazenda Rio Grande/PR, cultivadas na safra das águas. Foram realizadas as seguintes determinações: vitamina C, umidade, proteínas, lipídios, cinzas, carboidratos, energia, amido e potássio. A cv. Atlantic apresentou os maiores teores médios de cinzas (0,93%) e potássio (528,80 mg.100 g-1); a cv. Asterix, a maior umidade (81,47%); a cv. Innovator, os maiores teores de proteínas (2,25%), lipídios (0,06%), carboidratos (17,72%), energia (80,40 kcal.100 g-1) e amido (16,45%); e a cv. Shepody obteve a maior quantidade de vitamina C (31,01 mg.100 g-1). Pode-se concluir que a composição química das batatas é dependente da cultivar e da adubação potássica (dose e fonte) empregada.

Potato is considered one of the few foods able to nourish the growing world population for being a source of energy and containing high levels of proteins, vitamins, and minerals. However, these compounds suffer influence of several factors such as the use of cultivars, soil and climate characteristics, crop, harvest, and storage. Hence, the present paper aims to determine the potato chemical composition (cvs. Atlantic, Asterix, Innovator and Shepody), grown under four different levels (0, 120, 360 and 1080 kg K2O.ha-1) and two different sources of potassium (KCl e K2SO4). Samples of crop water production were collected from a farm in the city of Fazenda Rio Grande/PR, Brazil. The following criteria were determined: vitamin C, moisture, proteins, fat, ashes, carbohydrates, energy, starch content, and potassium. The Atlantic cultivar presented the highest average ashes content (0.93%) and potassium (528.80 kcal.100 g-1); Asterix presented the highest moisture content (81.47%); Innovator presented the highest proteins (2.25%), fat (0.06%), carbohydrates (17.72%), energy (80.40 kcal.100 g-1) and starch content (16.45%); and the Shepody presented the highest vitamin C amount (31.01 mg.100 g-1). It can be concluded that the potato chemical composition depends on the potassium fertilization (level and source).

A fase inicial do processo de fermentação natural de fécula de mandioca apresenta a ocorrência de fermentação vigorosa em apenas 24 h, mesmo com o meio tendo uma relação carbono/nitrogênio muito alta. Assim, o nitrogênio necessário à formação da biomassa nos primeiros estágios da fermentação seria originário de fora do sistema via fixação biológica de N2 atmosférico, já que o teor protéico disponível na fécula de mandioca é muito baixo. Para verificar tal hipótese, foram feitos dois experimentos fundamentados no balanço de nitrogênio na suspensão com grânulos de fécula durante as primeiras 120 h do processo fermentativo, conduzido sob temperatura ambiente e sob temperatura controlada a 28 °C. Não foram detectados aumentos de nitrogênio na fase estudada, o que sugere a não existência do processo de fixação biológica de N2 atmosférico. Os resultados sugerem que a origem do nitrogênio para o processo fermentativo é a própria fécula, que, quando na forma de polvilho apresenta alta relação C/N, porém, quando em suspensão essa relação abaixa propiciando uma fermentação vigorosa em apenas 24 h.

The initial phase of natural fermentation of cassava starch presents vigorous fermentation within the first 24 h and is characterized by a high ration of carbon/nitrogen. Consequently, the necessary nitrogen to the formation of biomass would be originated from outside of the system because the available protein content from cassava starch is very low and depending on biological fixation of atmospheric N2. To verify that hypothesis two essays were conducted with the nitrogen balance in the starch granule suspension during the initial 120 h of the fermentation process. The essays were set at room temperature and at the controlled temperature of 28 °C. No increase in the nitrogen content was detected suggesting that no involvement of atmospheric N2. Results suggest that the origin of the nitrogen to the fermentation process is the cassava starch itself. The cassava starch in the flour form possesses high C/N ratio whereas in the aqueous suspension the C/N ratio is lowered propitiating vigorous fermentation.

O trabalho teve como objetivo realizar a classificação dos tomates de mesa (Licopersicon esculentum Mill.) convencional e orgânico comercializados na Região Metropolitana de Curitiba. Foram avaliadas seis amostras de tomates do sistema convencional e três de tomates do sistema orgânico. Os frutos foram classificados em: grupos, oblongo e redondo; subgrupos: verde maduro, pintado, rosado, vermelho e vermelho maduro e classes: gigante, grande, médio e pequeno. De acordo com a ocorrência de defeitos graves e leves nos frutos, os tomates foram classificados também em tipos: extra, especial ou selecionado e comercial. As amostras cultivadas no sistema convencional foram classificadas como do grupo redondo e plurilocular, enquanto que as do sistema orgânico do grupo oblongo e bilocular. Na classe houve um predomínio de frutos médios e nos subgrupos de frutos rosado e vermelho. Em relação ao tipo, todas as amostras foram classificadas como fora do padrão ou do tipo.

The objective of this work was the classification of the tomato (Lycopersicon esculentum Mill.) cultivated in the organic and conventional cropping systems and commercialized in the Metropolitan Area of Curitiba. Six samples of conventionally grown tomatoes and three samples of organic tomatoes were evaluated. The fruits were classified in groups (oblong and round), subgroups (mature green, breaker, pink, red and mature red), and classes (giant, big, medium and small). According to the occurrence of serious damage and small defects on the fruits, they were classified in types, which can be extra, special or selected and commercial. The samples of conventional systems were classified as round and with than two locules, while of organic systems was classified as oblong and with two locules. Concerning the classes, the medium fruits predominated in the pink and red subgroups. All the samples were classified as out of standard or type due to the occurrence of defects.
