RESUMO: Varronia curassavica DC. é uma espécie medicinal nativa do Brasil. Dentre os pontos críticos que influenciam a qualidade fitoquímica dos compostos bioativos destacam-se o espaçamento entre plantas, a colheita e a pós-colheita. Este trabalho teve como objetivo avaliar a influência do espaçamento entre plantas, da época de colheita e da temperatura de secagem das folhas na produtividade e na qualidade fitoquímica do óleo essencial de V. curassavica. O cultivo orgânico foi realizado em 2018/2019 utilizando-se os seguintes espaçamentos entre plantas: 0.6 x 1.0; 0.8 x 1.0; 1.0 x 1.0; 1.0 x 1.6 m. Os teores de macro e micronutrientes das folhas foram avaliados e não se observou alterações consideráveis. Em 2018, as colheitas foram realizadas no verão, outono e inverno, sendo as folhas colhidas imediatamente submetidas ao processo de secagem a 40 °C. Em 2019, a colheita foi realizada no inverno, sendo as folhas submetidas ao processo de secagem a 40, 50 e 60 °C. O óleo essencial foi extraído por hidrodestilação e os constituintes químicos identificados CG-MS. A produção de óleo essencial foi significativamente maior no inverno e nos espaçamentos de 0,8 x 1,0 m e 1,0 x 1,0 m entre plantas. O teor de alfa-humuleno manteve-se dentro dos padrões recomendados em todas as temperaturas analisadas. Embora as temperaturas de secagem testadas não tenham comprometido o teor de alfa-humuleno, o aumento da temperatura ocasionou redução no rendimento do óleo essencial. Assim, recomenda-se o cultivo orgânico de V. currassavica no espaçamento entre 0,8 x 1,0 m e 1,0 m x 1,0 m, e a secagem de suas folhas entre 40 e 50 °C visando obter o maior rendimento e melhor qualidade fitoquímica de óleo essencial.

ABSTRACT: Varroniacurassavica is a Brazilian native medicinal species. Among the critical points influencing the phytochemical quality of bioactive compounds is the spacing between plants, harvest and post-harvest. This research aimed evaluated the influence of plant distance, harvest season, and leaves drying temperature on the yield and phytochemical quality of V. curassavica essential oil. The organic cultivation was carried out in 2018/2019 using 0.6 x 1.0; 0.8 x 1.0; 1.0 x 1.0; 1.0 x 1.6 m spacing between plants. The macro and micronutrient contents of the leaves were evaluated and no considerable changes were observed. In 2018 the harvest was performed in summer, autumn, and winter, and the harvested leaves were immediately submitted to the drying process at 40 °C. In 2019 the harvest was performed in winter, and the leaves were submitted to the drying process at 40, 50, and 60 °C. The essential oil was extracted by hydrodistillation and the chemical constituents were evaluated using CG-MS. The essential oil yield was significantly higher in winter and used 0.8 x 1.0 m and 1.0 x 1.0 m spacing between plants. The alpha-humulene content remained within the recommended standards at all analyzed temperatures. Although, the drying temperatures tested did not compromise the alpha-humulene content, the increasing temperature caused a reduction in the essential oil yield. Thus, it is recommended for the organic cultivation of V. currassavica the spacing of 0.8 x 1.0 m and 1.0 m x 1.0 m, and the drying of its leaves between 40 and 50 °C to earn the highest essential oil yield and phytochemical quality.

A produção de queijo minas frescal em agroindústrias familiares é amplamente difundida no Estado de Minas Gerais (MG) associada à tradição cultural, à demanda do consumidor e ao rendimento do produto. Os objetivos deste estudo foram avaliar aspectos socioeconômicos da produção de queijos minas frescal fabricados em agroindústrias familiares no município de Viçosa-MG e caracterizar as principais dificuldades do setor. Os dados foram levantados pelo método de entrevista in loco em 12 agroindústrias, seis inspecionadas e seis não inspecionadas A renda do produtor familiar proveniente da produção do queijo minas frescal variou de 10 a 85% do total da renda familiar, com maiores percentuais para as agroindústrias inspecionadas. Em 83% das agroindústrias inspecionadas, a renda total era vinculada principalmente à produção do queijo. Os entraves na produção formal incluíram a competição com produtos informais, o baixo preço e a dificuldade de acesso a linhas de crédito e, para os produtores informais, incluíram escassez de matéria-prima e de mão de obra, variação sazonal da produção e ausência de infraestrutura adequada para produção. A produção de queijo minas frescal é uma atividade relevante na composição da renda familiar das agroindústrias, entretanto há necessidade de implementação de políticas públicas locais para melhor estruturação do setor, o que contribuirá para a sustentabilidade da produção familiar.

The production of minas frescal cheese in familiar agribusiness is widely diffused in Minas Gerais State, associated to cultural tradition, consumer demand and product yield. The objectives of this study were to evaluate socioeconomic aspects on the production of minas frescal cheese produced in familiar agroindustries in the city of Viçosa-MG, Brazil and to characterize the main difficulties in this sector. Data were collected by the in loco interview method in 12 agribussiness, six of them inspected and six not inspected. The familiar producer income obtained from the production of minas frescal cheese varied from 10% to 85% of the total familiar income, with higher percentages for the inspected agribusiness. In 83% of the inspected agroindustries, the total income was linked to the production of the cheese. The obstacles in the formal production included the competition with informal products, low price and difficulty of access to credit lines, and, for informal producers, included also lack of raw material and manpower, seasonal variation of production and the absence of adequate production infrastructure. The production of minas frescal cheese is a relevant activity on the composition of agribusiness familyincome, however, there is a need to implement local public policies to better structuring of the sector, which will contribute for sustainability of the familiar production.

O objetivo deste trabalho foi estabelecer uma proposta para o processamento do queijo Coalho regional seguindo-se os procedimentos adequados para a obtenção de um produto final de qualidade. Empregou-se leite de vaca padronizado e pasteurizado e culturas láticas endógenas. Foram isoladas, identificadas e caracterizadas culturas láticas endógenas de leite de vaca cru e de queijos Coalho artesanais. Algumas culturas foram avaliadas para a fabricação do queijo Coalho, seguindo-se o fluxograma de fabricação estabelecido neste estudo. O produto final foi submetido a análises físico-químicas, teste de aceitação e teste de fritura. Os resultados obtidos mostraram que é viável a padronização do produto tradicional, proporcionando redução de custos, qualidade microbiológica e a manutenção das características sensoriais do queijo Coalho regional, com o uso de culturas láticas nacionais.

The main objective of this work is to propose a manufacturing procedure to make a safe artisan Coalho type cheese. Pasteurized and standardized cow´s milk added with endogenous lactic acid culture was used in the procedure. Endogenous lactic cultures were identified and characterized after being isolated from raw cow´s milk and artisan cheeses. The selected cultures were used in the manufacturing procedure designed for Coalho type cheese. Cheese made with added endogenous lactic acid culture underwent physic-chemical analysis, sensory acceptance and fritter tests. Results showed that it is feasible to make such cheese in a standardized process, with improved microbiological quality, keeping sensory properties of traditional cheese made with raw milk and a reduced cost using suppression on imports of starter cultures.

A estocagem do leite cru refrigerado na fonte de produção reduz perdas econômicas por atividade acidificante de bactérias mesofílicas, mas permite a seleção de bactérias psicrotróficas relacionadas a problemas tecnológicos e econômicos na indústria de laticínios. Com o objetivo de avaliar a qualidade microbiológica de leite cru, foram analisadas amostras provenientes de tanques de refrigeração individual, coletivos e do silo de uma indústria processadora de leite. Além disso, bactérias psicrotróficas proteolíticas foram isoladas do leite cru refrigerado e caracterizadas quanto à reação ao Gram e fermentação de glicose. O leite cru refrigerado mantido no silo industrial não atendeu ao padrão microbiológico legal e apresentou contagens microbianas significativamente superiores às do leite mantido em tanques individuais ou coletivos. Diferença significativa na contaminação por mesófilos e psicrotrófilos proteolíticos e não proteolíticos e por Pseudomonas foi observada entre as amostras coletadas nos tanques de refrigeração e no silo industrial. A microbiota Gram-negativa foi isolada com maior freqüência, especialmente bactérias Gram-negativas não fermentadoras de glicose.

Storing refrigerated raw milk in the source of production reduces economic losses which occur due to the acidifying activity of mesophilic bacteria. Nevertheless, this process selects psychrotrophic bacteria that cause technological and economic problems to the dairy industry. Samples of individual and collective refrigerated tanks and samples from an industrial silo in a dairy industry were collected and analyzed to evaluate the microbiological quality of raw milk. Furthermore, proteolytic psychrotrophic bacteria were isolated from refrigerated raw milk and characterized according to the Gram reaction and glucose fermentation. The refrigerated raw milk from the industrial silo was not compatible with legal microbiological standards, and its microbial count was significantly higher than milk from individual and collective tanks. A significant difference of contamination by mesophiles, proteolytic and non-proteolytic psychrotrophs, and Pseudomonas was observed in samples collected from refrigeration tanks compared to samples collected from the industrial silo. The Gram-negative microbiota was isolated more often, especially the glucose non-fermentative Gram-negative bacteria.
