This study was carried out as a preliminary mapping of Maillard reaction (MR) compounds in doce de leite (DL), as possible indicators for the intermediate stage and chemical pathways in industrial processing. For that, the objective of the manuscript was to developed and validated an analytical method to simultaneously analyze four furfural compounds in DL: 5-hydroxymethylfurfural, 2-furaldehyde (F), 2-furyl-methyl ketone (FMC) and 5-methyl-2-furaldehyde (MF) by high performance liquid chromatography-photodiode-array detector (HPLC-PDA). The method fulfilled the acceptance criteria: selectivity, linearity (0.16-5 μg mL-1 for HMF, and 0.06-2 μg mL-1 for F, FMC and MF, R2 > 0.9974), precision (CV = 1.33 to 2.12% for HMF; 1.57 to 4.34% for F; 0.84 to 1.40% for FMC and 1.40 to 4.18% for MF), accuracy (94.40 to 102.25% for HMF; 92.91 to 108.15% for F; 90.13 to 108.48% for FMC and 93.31 to 107.70% for MF), limit of detection of 0.041 μg mL-1 for HMF; 0.030 μg mL-1 for F; 0.042 μg mL-1 for FMC and MF, and limit of quantification of 0.125 μg mL-1 for HMF and F, 0.066 μg mL-1 for FMC and 0.1280 μg mL-1 for MF. Thus, it was concluded that an analytical method was developed and validated for quantifying HMF, F, FMC and MF in DL. Besides increasing shelf life of fluid milk, milk powder has physical and functional properties that allow it to be used as ingredient. The rehydration process is complex and happens in four steps: wettability, sinkability, dispersibility and solubility. Works have been conducted aiming at the development of an easier, more convenient and reproducible method to evaluate the dissolution properties of dairy powders. Therefore, the aim of this work was to evaluate dispersibility and solubility through particle size distribution in order to establish a new rehydration index for whole milk powder. The particle size distribution and morphological characteristics of seven samples of milk powder (from A to G) were analyzed. Samples F and C differed from the others which formed a similar group. Principal component analysis divided the samples into three different groups, allowing the indication of an efficient rehydration index to determine the powders dispersability.

Resumo O primeiro alimento do bebê é o leite materno, que deve, entre outras funções, atender, principalmente, às necessidades nutricionais e fornecer proteção imunológica. Em alguns casos, mães impossibilitadas de amamentar necessitam de substitutos. Nos dias de hoje, os substitutos que melhor mimetizam o leite humano são as fórmulas infantis. Diferentes rotas tecnológicas podem ser projetadas para produzir fórmulas infantis apresentando o grande desafio: o compromisso entre alimentos seguros e os danos causados pelo tratamento térmico. Este artigo foi elaborado com o objetivo de revisar o conhecimento científico atual sobre como o tratamento térmico afeta os macro e micronutrientes do leite, extrapolando os efeitos esperados para as fórmulas infantis. Os tópicos abordados são: definição e composição das fórmulas infantis, métodos industriais para produção de fórmulas infantis, efeito do tratamento térmico sobre macronutrientes e micronutrientes do leite.

Abstract Breast milk as the children’s primary source of nutrition fulfills the babies’ needs and can also provide immune protection. In some cases, when mothers are not able to breastfeed, an equivalent substitute is required. Nowadays, the best substitutes of the human breast milk are infant formulas. Different technological routes may be designed to produce infant formulas according to the main challenges: the compromise between food safety and heat treatment damage. This article aimed to review the current scientific knowledge about how heat treatment affects the macro and micronutrients of milk, extrapolating the expected effects on infant formulas. The covered topics were: The definition and composition of infant formulas, industrial methods of infant formulas production, the effects of heat treatment on milk macro and micronutrients.

Abstract Nutritionally, cheese and other dairy products have been highlighted especially as a calcium source. Access to minerals is dependent on variables related to diet, lifestyle, and also the health status. This study aimed to evaluate the bioaccessibility and calcium partition in Minas Padrão cheese over its ripening period for experimentally obtained samples. The cheese of the study has been manufactured using two different technologies (A and B). Also to evaluate the evolution of pH over cheese ripening and the influence of calcium partitions in its bioaccessibility along the cheese ripening period. The mean values found for total calcium content were (549 mg⋅100 g-1 – A and 644 mg⋅100 g-1 – B). For calcium in the aqueous phase on average 460 mg⋅100 g-1 – A and 404 mg⋅100 g-1 – B. These and other changes found are possibly due to physicochemical and biochemical changes, especially with respect to pH variations. Calcium bioaccessibility decreased in the beginning and then incresed in the end of the ripening period. The results obtained in this work hopefully may allow further studies and the development of products in which calcium bioaccessibility might be indicated on the product`s label accordingly to its ripening time.

Abstract Dulce de leche is an evaporated dairy product that can be manufactured in different types of pots or pans. The manufacturing endpoint for dulce de leche can be determined by measuring the soluble solids content. We investigated the evaporation rates and the evaporative capacity of atmospheric pressure evaporators (pans) during the manufacture of dulce de leche. During manufacturing, four different formulations were subjected to soluble solids content determination by refractometry. In addition, the mass balance was used to determine the yield and evaporation rate. A low coefficient of variation and amplitude was found for soluble solids content, indicating standardization and uniformity during fabrication. We also observed a gradual increase in the latter throughout manufacture, without significant differences between the times. The evaporated water mass rate and its respective equation allow to reproduce the same characteristics of the experimental product in experimental and industrial production of dulce de leche.

Abstract An analysis of nine sweetened condensed milk brands allowed for the identification of statistically significant difference in moisture, water activity (aw), soluble solids, percentage of protein, lactose crystals size, viscosity and in sensorial attributes of texture, characteristic flavor and flour texture. Relevant correlations between the composition and sensorial attributes were determined. Eighty percent of the samples presented of yeast from <0.6 logCFU.g-1 to 4.7 logCFU.g-1 and seventy percent presented of coagulase-negative staphylococcus from <3.1 log CFU.g-1 to 5.7 log CFU.g-1. These results attest the demand for more controls and investments to provide the market with a safe and standardized product.

Abstract This study was aimed at optimizing the ultrasound-assisted extraction (UAE) of phenolic compounds from jussara and blueberry fruits using the response surface methodology (RSM). UAE was found to be more efficient to extract phenolic compounds from both fruits than the conventional extraction. The optimum extraction conditions for the jussara fruits were: extraction time between 30 and 62 min for total anthocyanins and total phenolics, fruit:solvent ratio of 10% and 6% (w/v) for total anthocyanins and total phenolics, respectively. The ethanol concentration was non-significant (p> 0.05). Acidified water was found to be an extracting solvent as efficient as ethanol in the extraction of phenolic compounds from jussara fruits. The optimum extraction conditions for blueberry anthocyanins were: ethanol concentration between 20-70% vol, and fruit: solvent ratio greater than 20% (w/v) within the range studied. The extraction time was not significant (p> 0.05). For total phenolic content: the concentration of ethanol was between 40-80%, and fruit: solvent ratio greater than 20% (w/v) and extraction time over 50 minutes. It was possible to adjust the mathematical model for the coordinates a* (verde vs vermelho) and C* (color saturation) of the jussara extracts.

RESUMO Produzido e comercializado na América Latina, o doce de leite é muito apreciado por seus consumidores, com grande importância para o mercado brasileiro. A padronização das características desse produto, assim como sua adequação ao que é preconizado pelo Regulamento Técnico de Identidade e Qualidade, é dificultada pela grande diversidade cultural e variações tecnológicas da sua produção. Por essa razão, o estudo das características físico-químicas e reológicas do doce de leite torna-se de grande importância para se alcançar uniformidade, principalmente pela escassez de literatura técnica e científica sobre este produto. Neste trabalho, objetivou-se avaliar e relacionar os atributos físico-químicos e de textura. Foram analisadas doze marcas de doce de leite quanto aos teores de umidade, atividade de água e análise de textura, com posterior análise estatística dos dados. A análise estatística descritiva para os atributos de textura mostrou elevada variação entre as amostras. Quanto ao teor de umidade, 51,11% das amostras tiveram resultados em desacordo com os padrões legais vigentes. As análises realizadas apresentaram resultados de HMF livre e total elevados. Pela Análise de Componentes Principais (PCA), verificou-se que a principal fonte de variação e de contribuição para agrupamento das marcas avaliadas está relacionada com os elementos que compõem as características reológicas do produto. Os resultados mostraram elevada correlação entre atividade de água, umidade e atributos reológicos. A combinação dos atributos físico-químicos e reológicos mostra-se útil para caracterização e avaliação da qualidade do doce de leite. Os resultados obtidos neste trabalho contribuem para ampliar os conhecimentos científicos e podem servir de subsídios para as indústrias de laticínios e a comunidade.

ABSTRACT The Dulce de Leche, a product which is marketed and produced in Latin America, is much appreciated by consumers, with great importance for the Brazilian market. The standardization of the characteristics of this product as well as the suitability for recommendations of the Technical Identity and Quality Regulation becomes difficult due to the large cultural diversity and technological changes. In this context, the study of physical-chemical and rheological characteristics the Dulce de Leche becomes of great importance to achieve such uniformity, mainly by the lack of technical and scientific literature about this product. This work aimed to evaluate and relate the physical-chemical and texture attributes. Twelve Dulce de Leche brands were analyzed to moisture, water activity and texture analysis with statistical analysis of the data. Descriptive statistical analysis for texture attributes showed high variability between samples. As for the moisture content, 51.11% of the samples were outside the statutory standards. The analysis had results of free HMF and elevated totals. Through the Principal Component Analysis (PCA) it was found that the main source of variation and contribution to group of the appraised brands is related to the elements that make up the rheological characteristics of the product. The results showed high correlation between water activity, moisture and rheological attributes. The combination of physical, chemical and rheological attributes were shown to be useful for characterization and evaluation of Dulce de Leche quality. These results expand scientific knowledge about Dulce de leche favoring the dairy industry and the scientific community.

A Ilha de Marajó possui o maior rebanho bubalino do Brasil, sendo a Microrregião de Arari a principal produtora de leite e queijo de búfala. O objetivo do presente estudo foi caracterizar, por meio de análises físico-químicas e microbiológicas, o Queijo do Marajó tipo manteiga e verificar se há diferenças de suas características entre as estações do ano, chuvosa e seca. A acidez, pH e a porcentagem de gordura no extrato seco foram atributos de composição centesimal que apresentaram diferença significativa (P<0,05) pelo teste Tukey, entre as duas estações do ano. Os demais componentes (umidade, gordura, proteína total, cinza, EST e sal) desse queijo não variaram em função da época do ano. Quanto às características microbiológicas, as contagens foram maiores na estação chuvosa, exceto para as de Escherichia coli, que mantiveram-se constantes e adequadas à legislação. As contagens de Staphylococcus aureus foram altas e fora dos padrões da norma vigente. A contagem de aeróbios mesófilos foi maior na época das chuvas. Não foi detectada a presença dos patógenos Listeria monocytogenes e Salmonella sp. Apesar dos queijos analisados se enquadrarem nas legislações estadual e nacional, no tocante à composição química, os resultados indicam contagem S. aureus muito elevadas, o que enfatiza a necessidade da implementação imediata de Boas Práticas de Fabricação para a inocuidade dos produtos, a fim de atingir consonância com as contagens microbiológicas da legislação vigente

Marajó Island has the biggest water buffalo herd in Brazil, and the Microregion of Arari is the main water buffalo's milk and cheese producer. This study aimed to characterize physicochemical and microbiological composition of Marajó's butter-type cheese and to verify differences in its characteristics between rainy and dry seasons of the year. Acidity, pH and percentage of fat in dry matter (% FDM) were attributes that showed significant difference (P<0.05) by Tukey test between the two seasons. The remaining Marajó's butter-type cheese components (moisture, fat, total protein, ash, salt and total dry matter) did not vary along the year. Regarding to microbiological characteristics, in general, the count was higher in the rainy season, except for Escherichia Coli, wich remained constant. Values found for total coliforms were medium to low. For E. coli values meet legal requirements (less than 101CFU g-1) and, therefore, were satisfactory. Counts of Staphylococcus aureus were high, with 0% of samples within the standards of the norm in the rainy season and 9.1% in the dry season. The aerobic mesophilic count was different between the periods of the year and was higher in the rainy season. Presence of the pathogens Listeria monocytogenes and Salmonella sp. was not detected. Despite the cheeses analyzed are in accordance with national legislation regarding chemical composition, the results indicate counts of S. aureus very high, emphasizing the need for immediate implementation of Good Manufacturing Practices so the safety of products will be in agreement with actual legislation
