ABSTRACT Microalgal lipids exhibit physical-chemical characteristics similar to vegetable oils, representing alternative sources of long-chain fatty acids for food supplements. However, separating intracellular lipids from microalgae biomass is still challenging due to downstream processing technology limitations that depend on the particular microalgal species and its cultivation conditions. Thus, this work evaluated a multistep process for lipid extraction from Tetradesmus obliquus biomass instead of conventional single extraction methods to improve the lipid yield. The wet biomass was freeze-dried, the cells of the dried biomass were disrupted in a ball mill, and the milled biomass was suspended in water to obtain solid contents of 5 % and 10 % w v–1. Lipids were extracted from the aqueous suspension using the ethanol polar solvent and the hexane apolar solvent with ethanol:hexane ratios of 1:1, 1:2, and 3:5 v v–1. Tests were also carried out on the deproteinized biomass to evaluate the effect of proteins on emulsion formation since deproteinization can avoid emulsion formation. Thus, lipid downstream processing could be designed without an emulsion removal stage. The biomass was deproteinized before lipid extraction with NaOH at pH 10. The highest lipid content was verified for the 1:2 ethanol:hexane ratio, in which up to 42 % of the total lipids were extracted from the biomass. With the 3:5 ratio, the organic and aqueous phases emulsified due to the presence of lipoproteins, which hindered the lipid extraction process. RESUMO Soluções salinas saturadas produzem ambientes com umidades relativas específicas utilizadas em diversas aplicações, como na determinação de isotermas de sorção de água de alimentos. No entanto, a preparação de soluções saturadas requer conhecimento de dados de solubilidade. Assim, o objetivo deste trabalho foi determinar a solubilidade de 14 sais: brometo de lítio (LiBr), cloreto de lítio (LiCl), iodeto de lítio (LiI), cloreto de magnésio (MgCl2), iodeto de sódio (NaI), carbonato de potássio (K2CO3), nitrato de magnésio (Mg(NO3)2), brometo de sódio (NaBr), iodeto de potássio (KI), cloreto de sódio (NaCl), sulfato de amônio ((NH4)2SO4), cloreto de potássio (KCl), nitrato de potássio (KNO3) e sulfato de potássio (K2SO4) na faixa de temperatura de 275,15 a 363,15 K a 101,3 kPa. ABSTRACT Saturated salt solutions produce environments with specific relative humidities used in several applications, such as determining water sorption isotherms of foods. However, the preparation of saturated solutions requires knowledge of solubility data. Thus, the objective of this work was to determine the solubility of 14 salts: lithium bromide (LiBr), lithium chloride (LiCl), lithium iodide (LiI), magnesium chloride (MgCl2), sodium iodide (NaI), potassium carbonate (K2CO3), magnesium nitrate (Mg(NO3)2), sodium bromide (NaBr), potassium iodide (KI), sodium chloride (NaCl), ammonium sulfate ((NH4)2SO4), potassium chloride (KCl), potassium nitrate (KNO3), and potassium sulfate (K2SO4) in the temperature range of 275.15 to 363.15 K at 101.3 kPa. The apparatus for the solubility determination consists of a jacketed glass cell and a magnetic stirrer. Furthermore, polynomial and exponential empirical models were fitted to the observed data to determine salt solubilities. Salt solubilities ranged from 7.39 to 80.41 g of salt·(100 g of solution)-1. RESUMO: O objetivo deste trabalho foi avaliar a influência do tipo de cultivo (ambiente seco e alagado) sobre o teor de vitamina C, β-caroteno e minerais (cálcio, magnésio, enxofre, zinco, ferro, manganês, cobre, boro, nitrogênio, fósforo e potássio) de camu-camu. As vitaminas citadas foram determinadas por cromatografia líquida de alta eficiência, enquanto que os minerais cálcio, magnésio, zinco, cobre, manganês e ferro por espectrometria de absorção atômica, o potássio por fotometria de chama e o fósforo, boro e enxofre por espectrofotometria, nos comprimentos de onda 725 e 420nm, respectivamente. O fruto cultivado em ambiente seco apresentou maior (P<0,05) teor de vitamina C (13.756,79mg 100g1/peso seco) e da maioria dos minerais investigados (cálcio, magnésio, enxofre, ferro, cobre, nitrogênio, fósforo e potássio). Os teores de β-caroteno não variaram (P>0,05) em função dos diferentes ambientes.

ABSTRACT: The aim of this study was to evaluate the influence of crop type (dry and flooded environment) on vitamin C, β-carotene and minerals (calcium, magnesium, sulfur, zinc, iron, manganese, copper, boron, nitrogen, phosphorus and potassium), of camu-camu content. Vitamins were determined by high performance liquid chromatography, calcium, magnesium, zinc, copper, manganese and iron by atomic absorption spectrometry, potassium by flame photometry and phosphorous, boron and sulfur by spectrophotometry in wave lengths 725 and 420nm, respectively. Fruit grown in a dry environment showed higher (P<0.05) vitamin C content (13756.79mg 100g-1/dry weight) and generally higher mineral content (calcium, magnesium, sulfur, iron, copper, nitrogen, phosphorus and potassium). β-carotene content was not influenced (P>0.05) by different environments.

Doce de leite é uma sobremesa láctea concentrada (cerca de 70% de sólidos) muito apreciada no Brasil. Propriedades termofísicas e reológicas de duas formulações de doce de leite brasileiro (puro e adicionado de coco ralado a 1,5% em massa) foram determinadas a temperaturas compreendidas entre 28,4 e 76,4 °C. No geral, a presença de flocos de coco não acarretou diferenças significativas (p < 0,05) nestas propriedades das duas formulações. A capacidade calorífica variou entre (2633,2 e 3101,8) J/kg.°C; a condutividade térmica entre (0,383 e 0,452) W/m°C; a massa específica entre (1350,7 e 1310,7) kg/m³; e enfim, a difusividade térmica entre (1,082 × 10-7 e 1,130 × 10-7) m²/s. O modelo de Bingham descreveu adequadamente o comportamento não Newtoniano dos dois produtos, com tensão crítica de escoamento variando entre (27,3 e 17,6) Pa e a viscosidade plástica de (19,9 a 5,9) Pa.s.

Dulce de leche (DL), a dairy dessert highly appreciated in Brazil, is a concentrated product containing about 70% m/m of total solids. Thermophysical and rheological properties of two industrial Brazilian Dulce de leche formulations (classic Dulce de leche and Dulce de leche added with coconut flakes 1.5% m/m) were determined at temperatures comprised between 28.4 and 76.4 °C. In general, no significant differences (p < 0.05) were observed in the presence of coconut flakes in the two formulations. Heat capacity varied from 2633.2 to 3101.8 J/kg.°C; thermal conductivity from 0.383 to 0.452 W/m.°C; specific mass from 1350.7 to 1310.7 kg/m³; and, thermal diffusivity from (1.082 × 10-7 to 1.130 × 10-7) m²/s. The Bingham model was used to properly describe the non-Newtonian behavior of both formulations, with yielding stress values varying from 27.3 to 17.6 Pa and plastic viscosity from 19.9 to 5.9 Pa.s.
