RESUMO A capacidade de compostos antioxidantes presentes em hortaliças prevenir doenças é importante para as indústrias farmacêutica e alimentícia. Somado a isso, o estresse hídrico pode aumentar a capacidade antioxidante já existente em plantas. Baseado nisso, um experimento foi conduzido com o objetivo de avaliar o efeito de diferentes lâminas de irrigação em função da aplicação de selênio, nas características pós-colheita da couve-flor. O delineamento experimental utilizado foi de blocos ao acaso, em esquema fatorial 3 x 2, com quatro repetições. O primeiro fator foi constituído por três manejos da irrigação com déficit hídrico regulado (déficit hídrico regulado severo (50% da ETc), déficit hídrico regulado moderado (75% da ETc) e irrigação completa (100% da ETc), aplicados após o início da formação das inflorescências) e o segundo pela aplicação foliar de selênio (com aplicação e sem aplicação do elemento). A aplicação foliar de selênio proporcionou aumento de produtividade das plantas sob condição de déficit hídrico regulado moderado (75% da ETc) e sem déficit hídrico (100% da ETc). O cultivo sob déficit hídrico regulado moderado (75% da ETc) foi mais adequada por manter a produtividade e elevar a capacidade antioxidante e do teor de compostos fenólicos. A aplicação foliar de selênio aumentou o teor de polifenóis totais sob condição de estresse hídrico. A aplicação de estresse hídrico regulado severo (50% da ETc) proporcionou maior vida de prateleira aos floretes de couve-flor.

ABSTRACT The ability of antioxidant compounds in vegetables to prevent disease is important for the pharmaceutical and food industries. In addition, water stress can enhance the existing antioxidant capacity of plants. As such, this study aimed to assess the effect of different irrigation depths and selenium application on the postharvest characteristics of cauliflower. A randomized block design was used in a 3 x 2 factorial scheme, with four repetitions. The first factor consisted of three irrigation depths with regulated deficit irrigation (RDI): severe (50% ETc) and moderate RDI (75% ETc) and complete irrigation (100% ETc), performed after inflorescence initiation, and the second of foliar spraying of selenium (with and without the element). Selenium application increased cauliflower yield under moderate RDI and no water/drought stress. Moderate RDI was the most effective strategy for maintaining yield and increasing the antioxidant capacity and phenolic compound content of cauliflower. Foliar spraying of selenium raised total polyphenol content under drought stress. Severe RDI extended the shelf life of cauliflower florets.

Four lactating Holstein cows were assigned to a 4 × 4 Latin square design to determine the effects of feeding sticky coffee hull (SCH) as a source of antioxidants on dairy cows fed with high PUFA diets. The treatments (on DM basis) were control diet, diet with 30 g/kg of soybean oil, diet with 30 g/kg of soybean oil and 100 g/kg of SCH, and diet with 30 g/kg of soybean oil and 150 g/kg of SCH. Inclusion of 150 g/kg of SCH decreased the crude protein digestibility. Lower values of NDF digestibility were also observed when cows were fed with 100 g/kg and 150g/kg of SCH. The digestibility of NDT was lower in the control and 150 g/kg of SCH diets. Milk production and composition did not differ among the treatments. Inclusion of SCH increased the total polyphenols and flavonoids in the milk and reducing power as well. Soybean oil and SCH supplementation increased the LDL and total cholesterol concentration in the plasma. Milk fatty acid profile was barely altered by the treatments. In conclusion, the results confirmed that SCH added up to 15% in the diet did not alter milk production, improved its stability, and incorporated antioxidants substances in the milk, improving its quality for human health.

Neste trabalho foi desenvolvido queijo tipo petit suisse de soja, utilizando soja comum e soja livre de lipoxigenase, enriquecido com cálcio e polpa de morango. As formulações foram caracterizadas quanto à composição química e centesimal (pH, acidez, umidade, cinzas, proteína, teor de cálcio, composição e identificação dos ácidos graxos) e avaliação sensorial. Os resultados obtidos mostraram diferença na composição centesimal, disponibilidade de cálcio e atributos sensoriais para os petit suisse produzidos a partir dos diferentes cultivares. As melhores características nutricionais e a maior aceitação foram verificadas para a formulação elaborada com soja livre de lipoxigenase.

A soy petit suisse cheese was elaborated using ordinary soybean and lipoxygenase-free soybean and enriched with calcium and strawberry pulp. The formulations were characterized in terms of chemical composition and centesimal composition (pH, acidity, moisture, ash, protein, calcium content, composition, and identification of fatty acids), and sensory evaluation. The results showed differences in the centesimal composition, calcium availability, and sensory attributes for the petit suisse cheese produced from the different cultivars. The best nutritional characteristics and greater acceptance were reported for the formulation prepared with soy-free lipoxygenase.

Plantas de trigo (Triticum aestivum cv. Atlas 66) foram cultivadas em solução nutritiva utilizando 10 valores de adição relativa de nutrientes (ARN) (0,00; 0,06; 0,09; 0,12; 0,15; 0,18; 0,21; 0,24; 0,27 e 0,30 dia-1) com uma solução de base de 50 µmol.L-1 de nitrogênio (N) e demais nutrientes em quantidades e proporções relativas ao N. O crescimento relativo das plantas (CRP) de trigo, durante 19 dias, apresentou correspondência positiva com os valores de ARN de 0,06 a 0,21 dia-1, com valor de coeficiente angular de 0,56 e coeficiente linear de 0,085 dia-1. Os valores de condutividade elétrica (CE) das soluções de cultivo não apresentaram grandes variações durante o período experimental. Os efeitos da variação dos nutrientes na solução de base de cultivo sobre o crescimento exponencial das plantas de trigo foram avaliados considerando um valor de ARN de 0,20 dia-1. Os valores determinados de massa seca das plantas de trigo foram superiores aos teóricos, quando na solução de base se utilizaram 50 µmol.L-1 de N. Quando, porem, não se adicionaram nutrientes na solução de base de cultivo, os valores de massa seca determinados corresponderam aos valores teóricos (considerando um crescimento relativo de 0,20 g.g-1.dia-1). Constataram-se variações mínimas nos valores de CE das soluções durante o período experimental. Com o uso da técnica da ARN, foi possível cultivar as plantas de trigo em soluções com valor de CE baixo, simulando as condições das soluções dos solos.

We conducted experiments designed to assess whether plants can be grown under conditions of low ionic strength simulating natural soil conditions. Wheat (Triticum aestivum, cv. Atlas 66) plants were grown using ten different relative nutrient addition rates (RAR) of nutrients (0.00, 0.06, 0.09, 0.12, 0.15, 0.18, 0.21, 0.24, 0.27, and 0.30 day-1) with a background solution containing 50 µmol.L-1 N and all other essential nutrients in optimal proportions relative to N. The relative growth rate (RGR) of plants over a 19-day experimental period responded directly to RAR (from 0.06 to 0.21 day-1) with a linear slope of 0.56 and an intercept of 0.085 day-1. Solution electrical conductivity (EC) values remained relatively stable over the experimental period. We examined the effect of varying nutrient concentrations in background solutions on growth of wheat plants at a RAR of 0.20 day-1. Plant dry mass production in the 50 µmol.L-1 N background solution was higher than the theoretical regression. On the other hand, plant dry mass production in the 0 µmol.L-1 N background solution was close to theoretical regression (considering a relative growth rate of 0.20 g.g-1.day-1) throughout most of the experimental period. Minimal fluctuations in solution EC values were observed over the experimental period. With the use of the computer-controlled nutrient delivery system and the RAR technique, it was possible to grow plants under conditions of low electrical conductivity simulating natural soil conditions.
