Abstract This study investigated the effects of low concentrations of sericin (≤ 1.5 wt%) in starch- poly(butylene-adipate-co-terephthalate) (PBAT) films. The films were produced by blown extrusion and mechanical, barrier and structural properties were determined. Films containing 1.0 and 1.5 wt% sericin showed higher tensile strength (6.41 and 6.59 MPa) and Young's modulus (90.88 and 132.71 MPa) compared with film without sericin (4.76 MPa and 18.64 MPa). When 0.5 wt% of sericin was used, the elongation was reduced by 62%. The addition of sericin in a concentration of 1.5% (w/w) decreased the water vapor permeability of films from 7.55 to 5.94 g (m s Pa)-1, likely due to the formation of a more homogeneous and compact matrix. Based on these results, a mechanism of action is proposed, whereby sericin acts at the interface of the polymers (starch and PBAT), reducing the interfacial tension and enhancing compatibility.

Abstract The aim of this work was to study the relationship of chain size of partially hydrolyzed PVA blended with starch in properties of biodegradable sheets produced by thermoplastic extrusion. It was also studied the effect of extrusion temperature profile to determine the better PVA chain size and temperature profile to produce biodegradable sheets through a factorial design. The processability and the mechanical, thermal, optical, and microstructural properties of the biodegradable sheets were adequate, indicating that PVA/cassava starch blends have potential to replace conventional non-biodegradable polymers. Tensile strength and Young’s modulus ranges from 1.0 to 2.6 and 3.0 to 6.9 MPa respectively, the elongation at break ranges from 42 to 421%. It was not possible to state a conclusive relationship between PVA molecular weight and the materials properties, but in general, PVA with medium molecular weight and high extrusion temperature profile promote an increase of mechanical properties of the sheets.

Abstract Blends of poly(lactic acid) (PLA) and thermoplastic starch (TPS) plasticized with adipate esters (diisodecyl adipate and diethyl adipate) having different molecular weight were used to produce sheets. The calendering-extrusion process at a pilot scale was used, and the mechanical, barrier, and morphological characterization of the obtained materials were performed. The increase in the TPS content affected the mechanical properties of the sheets by increasing the elongation and decreasing the rigidity. TPS conferred a more hydrophilic character to the sheets, as observed from the water vapor permeability results. The sheets plasticized with diisodecyl adipate (DIA), having a higher molecular weight, had better mechanical and barrier properties than diethyl adipate (DEA) plasticized sheets, indicating that DIA was more effective as plasticizer. Micrographs obtained by confocal laser microscopy and scanning electron microscopy showed different morphologies when different proportions of PLA and TPS were used (dispersed or co-continuous structures), which were strongly associated with the mechanical and barrier properties.

<title>Resumo</title><p>Foram produzidos 12 laminados com diferentes proporções de amido de mandioca, poli(vinil álcool) (PVA) e glicerol por extrusão usando um planejamento de mistura. A opacidade dos materiais variou entre 31 e 56%, e a concentração de PVA e a interação entre as concentrações de amido e PVA foram os principais responsáveis pelo aumento da opacidade. A diferença de cor (ΔE*) variou entre 20-30, sendo a concentração de amido o principal responsável pelo aumento da diferença de cor, por promover uma coloração mais amarelada nos laminados.</p>

<title>Abstract</title><p>Twelve sheets were produced by extrusion with different proportions of cassava starch, poly (vinyl alcohol) (PVA) and glycerol using a mixture design. The opacity of the materials ranged from 31 to 56%, and the concentration of PVA and the interaction between starch and PVA concentrations the mainly responsible for increasing opacity. The color difference (ΔE*) ranged from 20 to 30, the concentration of starch being primarily responsible for increasing in color difference by promoting a more yellowish color in sheets.</p>

Na produção da fécula de mandioca (Manihot esculenta Crantz), é gerado o bagaço de mandioca, que é o resíduo fibroso da raiz. Frente à importância econômica, físico-química, tecnológica e nutricional deste resíduo, objetivou-se desenvolver uma farinha, a partir do bagaço de mandioca, avaliar suas propriedades e compará-las com as da fécula, a fim de fomentar o seu uso e fornecer informações, tanto para as indústrias produtoras quanto aos consumidores. Foram realizadas análises de composição centesimal, valor energético total, granulometria, atividade de água, cor, microscopia e índice de absorção de água (IAA), solubilidade em água (ISA) e absorção de óleo (IAO). Em relação à fécula de mandioca, a farinha de bagaço apresentou teores muito mais elevados de fibra alimentar total [63,95 g (100g)-1], solúvel [3,51 g (100 g)-1] e insolúvel [56,84 g (100 g)-1], bem como valores de proteínas [1,97 g (100 g)-1], teor de cinzas [1,81 g (100 g)-1] e lipídios [2,35 g (100 g)-1]. A farinha de bagaço de mandioca apresenta baixo custo e propriedades tecnológicas desejáveis, como IAA [6,73 g de gel (g de matéria seca)-1] e ISA (1,23%), sendo, também, uma matéria-prima alternativa, com características tecnológicas diferenciadas. Sugere-se sua aplicação em mingaus, cremes, alimentos infantis e, principalmente, em alimentos diet ou light.

The production of cassava (Manihot esculenta Crantz) starch generates cassava bagasse, which is the fibrous residue from the root. Due to its economic, physical, chemical, nutritional and technological importance, this study aimed at developing a flour from cassava bagasse, evaluating its properties and comparing them with those of cassava starch, in order to promote its use and provide information for industry processors and consumers. Analysis of proximate composition, total energy value, particle size, water activity, color, microscopy, water absorption index (WAI), water solubility index (WSI) and oil absorption index (OAI) were carried out. In relation to cassava starch, the bagasse flour showed much higher contents of total [63.95 g (100 g) -1], soluble [3.51 g (100 g) -1] and insoluble [56.84 g (100 g)-1] dietary fiber, as well as proteins [1.97 g (100 g) -1], ashes [1.81 g (100 g)-1] and lipids [2.35 g (100 g)-1]. The cassava bagasse flour presents low cost and desirable technological properties, such as WAI [6.73 g of gel (g dry mass)-1] and WSI (1.23%), being also an alternative raw material, with differentiated technological characteristics. It can possibly be used in paps, puddings, baby food and especially in diet or light food.

The aim of this study was to investigate the effect of thickness (between 80 and 120 µm) on apparent opacity, water vapor permeability and mechanical properties (tensile and puncture) of oat starch films plasticized with glycerol, sorbitol, glycerol:sorbitol mixture, urea and sucrose. Films were stored under 11, 57, 76 and 90% relative humidity (RH) to study the mechanical properties. It was observed that the higher the thickness, the higher was the opacity values. Films without the plasticizer were more opaque in comparison with the plasticized ones. Glycerol:sorbitol films presented increased elongation with increasing thickness at all RH. Puncture force showed a strong dependence on the film thickness, except for the films plasticized with sucrose. In general, thickness did not affect the water permeability.

The aim of this work was to manufacture the biodegradable nanocomposite films by extrusion from different combinations of cassava starch, xanthan gum and nanoclays (sodium montmorillonite - MMT- Na) and to characterize them according to their microstructure, optical, mechanical and barrier properties. Films were manufactured from nine starch/xanthan/nanoclay combinations, containing glycerol as plasticizer. Scanning electron microscopy (SEM) of the starch-xanthan extruded films showed reticulated surface and smooth interior, indicating that the gum was mostly concentrated on the surface of the films, while starch/xanthan/nanoclays films showed a more homogeneous surface, suggesting that the introduction of nanoclays provided a better biopolymeric interaction. In general, nanoclays addition (2.5 - 5.0, w%) generated more transparent and resistant films, with lower water vapor permeabilities and lower water sorption capacities and xanthan gum addition improved the elongation ofa starch films.

Biodegradable foams made from cassava starch, polyvinyl alcohol (PVA), sugarcane bagasse fibers and chitosan were obtained by extrusion. The composites were prepared with formulations determined by a constrained ternary mixtures experimental design, using as variables: (X1) starch / PVA (100 - 70%), (X2) chitosan (0 - 2%) and (X3) fibers from sugar cane (0 - 28%). The effects of varying proportions of these three components on foam properties were studied, as well the relationship between their properties and foam microstructure. The addition of starch/PVA in high proportions increased the expansion index and mechanical resistance of studied foams. Fibers addition improved the expansion and mechanical properties of the foams. There was a trend of red and yellow colors when the composites were produced with the highest proportions of fibers and chitosan, respectively. All the formulations were resistant to moisture content increase until 75% relative humidity of storage.

Citric acid was used as a compatibilizer in the production of starch and PBAT films plasticized with glycerol and processed by blow extrusion. Films produced were characterized by WVP, mechanical properties, FT-IR-ATR and SEM. WPV ranged from 3.71 to 12.73×10-11 g m-1 s-1 Pa-1, while tensile strength and elongation at break ranged from 1.81 to 7.15 MPa and from 8.61 to 23.63%, respectively. Increasing the citric acid concentration improved WVP and slightly decreased film resistance and elongation. The films micrographs revealed a more homogeneous material with the addition of citric acid. However, the infrared spectra revealed little about cross-linking esterification reaction

A crescente demanda por alimentos ricos em ingredientes funcionais é um incentivo ao desenvolvimento e industrialização desses produtos. O objetivo deste trabalho foi desenvolver formulação de biscoito com potenciais propriedades hipocolesterolêmicas, pela combinação de diferentes teores de Farinha Desengordurada de Soja (FDS) e de Farelo de Aveia (FA), em substituição parcial à farinha de trigo. Além desses dois ingredientes, também foi estudado o efeito de maltodextrina, como possível melhorador de textura. Para a realização do experimento, foi empregado planejamento de misturas com três componentes, com restrições para os níveis mínimo e máximo. As três variáveis afetaram significativamente a dureza e o diâmetro dos biscoitos, que aumentaram com teores maiores de maltodextrina. As massas que continham maiores teores de FDS apresentaram-se mais secas e duras, o que pode ter afetado a expansão. Na análise descritiva de perfil livre, comparando-se três amostras com diferentes durezas, verificou-se que aquela com maior teor de FDS diferenciou-se daquelas com maior teor de FA e com teores iguais de FDS e FA, sendo caracterizada como mais dura, de cor mais escura e apresentando sabor mais característico de biscoito integral/cereal. No entanto, não se observou diferença na aceitação entre as três amostras. Foi possível substituir 70,7% da farinha de trigo de uma formulação original, por misturas de FA e FDS, obtendo-se produtos com boa aceitação

The increasing demand for foods containing functional ingredients promotes the development and industrialization of these products. The objective of this work was to develop biscuits with potential hypocholesterolemic properties by combining Defatted Soy Flour (DSF) and Oat Bran (OB) as partial substitution of wheat flour. The action of maltodextrins as potential texture improver was also studied, and the mixture design was employed to conduct the experiment. Biscuits hardness and diameter were significantly affected by the three studied variables, increasing with higher levels of maltodextrins. The dough with higher levels of DSF seems to be harder and dry which might have affected the spread. Comparing three samples with different hardness in the descriptive analysis of free choice profile, it was observed that those with higher level of DSF proved different from those with higher level of OB or with similar levels of the two ingredients. Therefore, it was characterized as the hardest darkest, and having the most typical flavor of whole grain biscuit/cereal. However, the three samples did not differ in acceptability. It was possible to substitute 70.7% of wheat flour of an original formulation for blends of DSF and OB obtaining products with good acceptability

A preocupação com o volume de lixo tem gerado interesse no desenvolvimento de embalagens biodegradáveis capazes de substituir, ao menos em parte, os plásticos convencionais sintéticos, como é o caso das embalagens de poliestireno expandido (Isopor). Ojvetivou-se,neste trabalho caracterizar, quanto ao índice de expansão (IE), densidade, índice de absorção em água (IAA), índice de solubilidade em água (ISA) e cor (coordenadas L*, a* e b*), compósitos biodegradáveis expandidos produzidos via extrusão, a partir da mistura de amido de mandioca, glicerol (plastificante) e dois tipos de fibras vegetais. Os compósitos foram preparados em extrusora mono-rosca, com três diferentes teores de fibras de aveia ou de cana-de-açúcar (0, 5 e 10 g/100 g amido), dois teores de umidade (18 e 26%) e teor fixo de glicerol (20g/100 g sólidos). A adição das fibras não afetou significativamente o IE, a densidade e o IAA, porém diminuiu o ISA dos materiais, o que é uma vantagem, favorecendo a utilização das fibras no reforço dos compósitos. A adição de fibras levou ao escurecimento das amostras, com decréscimo da luminosidade (L*) e, ainda, ao aumento nos valores dos parâmetros de cor a* e b*. Este estudo é passo fundamental para produção em escala industrial dos compósitos, que necessitam de condições de processo que forneçam resultados reprodutíveis de expansão e capacidade de absorção e solubilidade em água, propriedades de grande importância nesses produtos.

The concern with the volume of waste has generated interest in the development of biodegradable packaging able to replace, at least in part, the conventional synthetic plastics, such as packs of expanded polystyrene (Isopor). This study aimed to characterize the expansion index, density, the water absorption index (WAI), water solubility index (WSI) and color (coordinates L*, a* and b*) of expanded biodegradable composites produced by extrusion, from the mixture cassava starch, glycerol (plasticizer) and two different types of vegetable fibres. The composites were prepared in a single screw extruder, with three different levels of oat or sugar cane fibres (0, 5 and 10 g /100 g starch), two levels of humidity (18 and 26%) and a fixed level of glycerol (20 g/100 g solds). The addition of fibres did not affect significantly the expansion index, density and WAI of materials, and reduced WSI of products, which is an advantage and promotes the use of these fibres in the reinforcement of composites. The addition of fibers led to the darkening of the samples, with decrease in lightness (L*) and increase in the values of the color parameters a* and b*. This study is a key step for a future industrial scale production of these composites, which requires process conditions that provide reproducible results of expansion and absorption capacity and solubility in water, properties of great importance in these products.

Este estudo caracterizou o amido de aveia da variedade IAC-7 quanto às suas características químicas, reológicas, funcionais e térmicas. O amido de aveia apresentou 1,36% de lipídios, 32,23% de amilose e baixa capacidade retrogradante (9,19% após 30 dias de armazenagem). Embora o amido de aveia tenha apresentado alto teor de amilose, sua baixa retrogradação pode ser devida à presença dos lipídios que, por impedimento estérico, dificultariam a reaproximação das cadeias poliméricas. O comportamento reológico das pastas de amido de aveia foi caracterizado como sendo pseudoplático. A baixa temperatura de gelatinização (64,71 °C) do amido de aveia também pode estar relacionada ao maior teor de lipídio deste amido.

This study characterized the chemical, rheological, functional and thermal properties of oat starch of IAC-7 variety. The oat starch showed 1.36% of lipids, 32.23% of amylose and low retrogradation capacity (9.19% after 30 days of storage). Although the oat starch has presented high amylose content, its low retrogradation may be due to the presence of lipids that by steric impediment could make it difficult for the polymeric chains to approach. The rheological behavior of oat starch was characterized as pseudoplastic. The low gelatinization temperature (64.71 °C) of the starch may be related to its higher lipid content.

Estudou-se o efeito da adição de monoglicerídeo nas propriedades microestruturais, mecânicas e de barreira de filmes de amido de inhame, em diferentes umidades relativas (UR), comparando-as com as de filmes de amido- glicerol. Uma extrusora mono-rosca foi usado para produzir o complexo amido-monoglicerídeo, antes de produzir o filme, e o processo foi efetivo para inibir a separação de fases que geralmente ocorre nesse tipo de filmes. A adição de monoglicerídeo, que é um composto hidrofóbico, reduziu a hidrofilicidade, a transparência e a permeabilidade ao vapor de água dos filmes. O valor desta, para os filmes de amido-glicerol (1,7 x 10-10 g Pa-1 s-1 m-1) foi maior que para os de amido (1,2 x 10-10 g Pa-1 s-1 m-1) e para os de amido-monoglicerídeo (1,0 x 10-10 g Pa-1 s-1 m-1). Os filmes com glicerol tiveram maior cristalinidade relativa (B e V H), com um ligeiro aumento em altas UR, enquanto que nos filmes com monoglicerídeo a cristalinidade foi constante. Os filmes de amido-monoglicerídeo apresentaram piores propriedades mecânicas que os filmes de amido-glicerol, mas foram mais estáveis sob diferentes umidades relativas.

The effect of monoglyceride on microstructural, barrier and mechanical properties of casted yam starch films were investigated in different relative humidities (RH) and compared with glycerol-starch films. A single screw extruder was used to produce the starch - monoglyceride complex before film production and this process was effective to inhibit the phase separation in films. The addition of the hydrophobic compound reduced hydrophobicity, transparency and water vapor permeability of films. This later value for starch-glycerol film (1.7 x 10-10 g Pa-1 s-1 m-1) was higher than starch (1.2 x 10-10 g Pa-1 s-1 m-1) and monoglyceride-starch films (1.0 x 10-10 g Pa-1 s-1 m-1). Films containing glycerol had higher relative crystallinity (B and V H) with a slight increase at higher RH values, while for monoglyceride films, the crystallinity was constant. Monoglyceride-starch films presented poor mechanical properties when compared to glycerol- starch ones but they presented a stable behavior under different relative humidities.

Biscoitos cookies foram preparados com 20% da farinha de trigo substituída por casca de aveia tratada química (peróxido de hidrogênio alcalino) e fisicamente (extrusão), com o objetivo de investigar a possibilidade de aproveitamento desta matéria-prima modificada. Biscoitos elaborados com o mesmo teor de casca de aveia nativa foram usados como controle. Os biscoitos foram avaliados quanto as suas características físicas (expansão, volume específico e cor) e sensoriais, sendo que não foi detectada diferença (p<0,05) em relação às propriedades físicas. O teste triangular, usado para verificar diferença significativa (p<0,05), em nível global, entre as amostras tratada e nativa, confirmou a eficiência do tratamento em nível sensorial. O grau de aceitação dos biscoitos com fibra tratada foi avaliado por consumidores potenciais do produto, obtendo-se aceitação de 91%. Os biscoitos apresentaram 10,6 g de fibra alimentar por 100 g de produto.

Cookies were prepared with the replacement of 20% of wheat flour by chemically (alkaline hydrogen peroxide) and physically (extrusion) treated oat hulls, with the objective to investigate the possibility of use of this modified material. Cookies elaborated with the untreated hulls were used as control. Cookies were evaluated for their physical (spread ratio, specific volume and color) and sensory characteristics, and no difference was detected (p<0.05) among the cookies in relation to the physical properties. Triangule test, used to verify difference (p<0.05) among treated and untreated cookies, confirmed the efficiency of the treatment in sensory level. The acceptance level of cookies with treated fiber was evaluated by potential consumers of the product, obtaining 91% acceptance. The cookies presented 10.6 g of dietary fiber per 100 g of product.

Um delineamento fatorial incompleto 3³ foi utilizado para estudar o efeito do tratamento com peróxido de hidrogênio alcalino associado à extrusão sobre algumas propriedades funcionais da fibra da casca de aveia. As variáveis do tratamento avaliadas incluíram teor de peróxido de hidrogênio (%), umidade da amostra (%) e temperatura de extrusão (ºC). A análise de variância (ANOVA) mostrou que a temperatura foi a variável mais importante para as propriedades de hidratação. Os maiores valores de capacidade de retenção de água (CRA) e volume de intumescimento foram obtidos na condição de 7% de peróxido de hidrogênio, 32% de umidade e 90ºC de temperatura, obtendo um incremento de 70% na CRA e 55% no volume de intumescimento. A medida instrumental de cor foi usada para analisar as modificações ocorridas neste parâmetro. O mais alto valor de luminosidade foi alcançado com maior nível de peróxido de hidrogênio (7%), obtendo-se, nessa condição, produtos mais claros. Ensaios realizados para controle mostraram que tanto a extrusão quanto o tratamento químico tiveram efeito nas propriedades avaliadas, e que o efeito conjunto foi superior ao de cada um isoladamente. As modificações ocorridas nas fibras foram acompanhadas indiretamente, através das propriedades de hidratação.

An incomplete factorial design with three independent variables at three levels of variation was used to evaluate the effect of the treatment with alkaline hydrogen peroxide concomitant with extrusion on some properties of oat hulls. The independent variables were hydrogen peroxide level, feed moisture and extrusion temperature. The dependent variables were water retention capacity (WRC), swollen volume (SV) and color. The analysis of variance showed that temperature was the most important variable for the hydration properties. The highest values of WRC and SV were obtained when oat hulls were processed in the condition of 7% hydrogen peroxide, 32% feed moisture and 90ºC extrusion temperature. Modified hulls had a WRC 70% higher and SV 55% higher than the untreated material. The instrumental measure of color was conducted to analyze the modifications promoted due to the treatment in this parameter. The highest value of brightness was obtained with 7% hydrogen peroxide. The modifications in the fibers were accompanied indirectly through hydration properties.
