Pequi peel comprises 76% of the whole fruit and it is discarded during consumption. Thus, pequi peel has been considered a solid residue, although it has potential for use in various applications. Limitations in the use of this material are mainly due to the lack of information of its nutritional composition, especially about the toxic or antinutritional factors. Soaking is often used to prepare complementary foods and has been reported to be beneficial for enhancing nutritive value. The effect of soaking on the nutritional quality of pequi peel flour was determined by measuring changes in chemical composition, antinutritional factors, total phenols and in vitro protein and starch digestibility. The results showed that 24 h of maceration increases the content of lipids (200%), protein (28.3%) and dietary fibber (31%), while carbohydrate and ash content decreases. There were no haemagglutination activity or α-amylase inhibitors, but it was detected the presence of phytic acid (0.4 g 100 g-1). The soaking reduced 8.5% phenols and 19.0% tannins, 6.2% protein digestibility, and was also effective to eliminate trypsin inhibitors, and increase starch digestibility (24.2%). Soaking was efficient to improve nutritional characteristics of the pequi peel flour, opening up possibilities for its use in food formulations.

Foi desenvolvido um biossensor espectrofotométrico para a determinação da concentração de glicose em amostras reais de suco de laranja, energéticos e bebidas esportivas. O biossensor consistiu de glicose oxidase (GOX) e peroxidase (HRP) imobilizadas em polianilina ativada com glutaraldeído (PANIG). Os parâmetros de imobilização foram otimizados para a GOX e o rendimento máximo de imobilização obtido foi de 16% para 5 mg de PANIG e 8,9 Unidades de Enzima (UE) preparadas em tampão fosfato 0,1 mol.L-1 (pH 7,0) com tempo de reação de 60 minutos a 4 °C, com agitação leve. Utilizando os parâmetros otimizados, encontrou-se uma faixa linear para a determinação de glicose entre 0,05 e 6,0 mg.mL-1, com boa reprodutibilidade de resposta. Os resultados obtidos foram comparados com resultados de enzimas livres (kits comerciais), sendo validados através de análise estatística pelo teste de Tukey (95% de significância).

A biosensor was developed for spectrophotometric determination of glucose concentrations in real samples of orange juice energetic drinks, and sport drinks. The biosensor consisted of glucose oxidase (GOD) and horseradish peroxidase (HRP) immobilized onto polyaniline activated with glutaraldehyde (PANIG). Immobilization parameters were optimized for GOD, and maximum immobilization yield was 16% when 5.0 mg of PANIG and 8.9 U prepared in 0.1 mol.L-1 sodium phosphate buffer (pH 7.0) reacted for 60 minutes at 4 °C with gentle stirring. The linear operational range for glucose determination using optimized operational parameters was between 0.05 and 6.0 mg.mL-1 with a very good reproducibility of response. The results obtained in the biosensor were compared with those obtained using free enzymes (commercial kits) and then validated through statistical analysis using the Tukey test (95% confidence interval).

OBJETIVO: Analisar os componentes químicos e antinutrientes antes e após torrefação da amêndoa de chichá da espécie Sterculia striata A. St. Hill & Naudin, oriunda de Corrente, Piauí. MÉTODOS: Foram realizadas análises: centesimal, perfil de ácidos graxos, antinutrientes (taninos, inibidor de tripsina, inibidor de amilase, lectina, fitatos), compostos fenólicos e atividade de peroxidase e polifenoloxidase. RESULTADOS: Os resultados da análise centesimal da amêndoa crua e torrada foram: lipídeos de 25,1% e 26,2%, carboidratos de 44,4% e 45,6%, proteína de 20,8% e 22,1%, cinzas de 3,7% e 4,0%, fibra alimentar total de 12,3% e 10,4%, respectivamente. Nas amêndoas cruas e torradas não foram encontradas lectinas, taninos, inibidores de tripsina e alfa-amilase. Verificou-se a ausência de peroxidase e polifenoloxidase e conteúdo de compostos fenólicos de 107,7mg/100g e 108,9mg/100g para amêndoas cruas e torradas, respectivamente. CONCLUSÃO: A torrefação realizada a 205°C por 11 minutos diminuiu o teor de fitatos de 10,6mg/g para 5,5mg/g. Por fim, as amêndoas de chichá, cruas e torradas, apresentam alto teor de proteínas, fibras, ácidos graxos monoinsaturados e saturados.

OBJECTIVE: This study analyzed the chemical components and antinutrients present in raw and roasted chichá almonds from the species Sterculia striata A. St. Hill & Naudin harvested in Corrente, Piauí. METHODS: The following were determined: percent composition, fatty acid profile, antinutrients (tannins, trypsin inhibitor, amylase inhibitor, lectin, phytates), phenolic compounds and peroxidase and polyphenol oxidase activities. RESULTS: The percentage composition of the raw and lipid almonds were respectively: 25.1% and 26.2% fats, 44.4% and 45.6% carbohydrates, 20.8% and 22.1% protein, 3.7% and 4.0% ashes, and 12.3% and 10.4% total fiber. Neither raw nor roasted almonds contained lectins, tannins, trypsin inhibitors, alpha-amylase, peroxidase and polyphenol oxidase. Contents of phenolic compounds were 107.7mg/100g and 108.9mg/100 for the raw and roasted almonds, respectively. CONCLUSION: Roasting at 205°C for 11 minutes reduced phytate content from 10.6mg/g to 5.5mg/g. Raw and roasted chichá almonds have a high content of proteins, fibers and monounsaturated and saturated fatty acids.

Este trabalho objetivou identificar padrões de identidade e qualidade de vinagres e quantificar a presença de compostos fenólicos totais em vinagres produzidos a partir de frutas e vegetais. Analisaram-se, em triplicata, vinagres de cana-de-açúcar, cana-de-açúcar com milho, kiwi, laranja, laranja com mel, maçã, arroz, manga, maracujá, milho, tangerina, tangerina com milho, vinagre de vinho tinto e vinagre de vinho branco. Foram realizadas análises de extrato seco, densidade, acidez volátil, pH, cinzas, grau alcoólico, açúcares redutores e polifenóis totais. Os resultados foram submetidos à ANOVA e as médias destes ao teste de Tukey ao nível de 5%. Houve correlação estatística entre extrato seco e densidade. Todas as amostras apresentaram valores de 0% de álcool. A presença do mel na formulação do vinagre de laranja com mel (43,27 mg EAG 100.mL-1) contribuiu para o aumento do conteúdo de polifenóis totais em relação ao de laranja (28,83 mg EAG.100 mL-1) em 50%. O fermentado de laranja com mel apresentou teor de polifenóis totais (43,27 mg EAG.100 mL-1) maior que o vinagre de vinho tinto (31,86 mg EAG.100 mL-1), assim como os de laranja e tangerina (34,36 mg EAG.100 mL-1). Conclui-se que houve diferenças entre as amostras para os parâmetros analisados e que os fermentados acéticos de laranja com mel, laranja e tangerina apresentam maior conteúdo de polifenóis totais que o de vinho tinto.

This work aimed to identify the patterns of identity and quality of vinegars and quantify the presence of total phenolics compounds in fruit and vegetable vinegars, Vinegars made from sugar cane, sugar cane and corn, kiwi, orange, orange and honey, apple, rice, mango, passion fruit, corn, tangerine, tangerine and corn, red wine, and white wine were analyzed in triplicates. Analyses of dry extract, density, volatile acidity, pH, ashes, alcoholic content, reducing sugars, and total polyphenols were performed. The results were submitted to ANOVA followed by the Tukey's test at 5% significance. There was a statistical correlation between the dry extract and density. All samples presented values of 0% of alcohol. The presence of honey in the vinegar formulation made from orange and honey (43.27 mg EAG.100 mL-1) contributed to the increase of total polyphenols content by 50% in relation to the vinegar made from orange (28.83 mg EAG.100 mL-1). The orange and honey vinegar presented total polyphenols content (43.27 mg EAG.100 mL-1) higher than that of the red wine vinegar (31.86 mg EAG.100 mL-1), the orange vinegar, and the tangerine vinegar (34.36 mg EAG.100 mL-1). It can be concluded that there were differences among the samples and the analyzed parameters, and that the vinegars made from orange and honey, orange, and tangerine presented higher total polyphenols contents than those of the red wine vinegar.

O Cerrado é constituído por inúmeras espécies vegetais com potencial econômico, as quais são utilizadas para os mais variados fins, como medicinal e nutricional. O objetivo deste trabalho foi analisar e quantificar a presença de atividade enzimática de peroxidases e proteases e fatores antinutricionais, como lectinas e inibidores de proteases, além de polifenóis e taninos em algumas espécies nativas do Cerrado. O material vegetal utilizado foram sementes de Annona crassiflora Mart. (araticum), Hymenaea courbaril L. var. courbaril (jatobá), Plathymenia reticulata Benth. (vinhático), Zanthoxylum rhoifolium Lam. (maminha de porca), Apeiba tibourbou Aubl. (pau jangada), Salacia crassiflora (Mart.) G. Don. (bacupari) e Sclerolobium paniculatum Vog. (carvoeiro), coletadas na cidade de Goiânia e municípios de Jataí e Caldas Novas, estado de Goiás. O uso potencial destas plantas e suas enzimas na indústria de alimentos, poderia resultar em aplicações ao aparecimento de novos produtos a partir das matérias-primas tradicionais, além do uso de novas fontes de alimentos.

The aim of this work was to analyze and quantify the presence of antinutritional compounds such as lectins and trypsin-like inhibitors, polyphenols and tannins, and enzymatic activity of peroxidases and proteases in the seeds of Annona crassiflora Mart. (araticum), Hymenaea courbaril L. var. courbaril (jatobá), Plathymenia reticulata Benth. (vinhático), Zanthoxylum rhoifolium Lam. (maminha de porca), Apeiba tibourbou Aubl. (pau jangada), Salacia crassiflora Mart G. Don. (bacupari), and Sclerolobium paniculatum Vog. (carvoeiro). The results suggested that these plants could be used as new source of food.
