Abstract The objective of this study was to determine the influence of production volume, collection interval and time of year on the composition and quality of refrigerated raw milk in the region of Lavras, MG. This study collected information from milk quality monitoring performed by dairies as required by the Federal Inspection Service (SIF). For this study, the farms were classified by milk production per farm (G): 0-200 L/day, 201-500 L/day, 501-1000 L/day, 1001-2000 L/day, and greater than 2000 L/day. The collection intervals were 24 and 48 hours (C), and seasonality (S) was treated as a function of the months of the year (November 2020 to October 2021). The following milk characteristics parameters were analyzed: fat, protein, lactose, total solids (TS), defatted dry extract (DDE), somatic cell count (SCC), urea nitrogen content (UNC), standard plate count (SPC), fat/protein ratio (F/P) and cryoscopic index. There was a seasonality influence for all the parameters studied except for UNC. The production volume per group influenced UNC, TS and SPC. Differences in UNC, protein, lactose, TS, DDE and SPC were associated with the collection interval. There was an interaction effect between seasonality and production volume (SxG) for the parameters SCC, fat and F/P. The findings of this study revealed that the supplier production volume, collection interval, and time of year contribute to variations in chemical composition and milk quality parameters. Resumo O objetivo desse estudo foi verificar a influência do volume de produção, intervalo entre coletas e época do ano em relação a composição e qualidade do leite cru refrigerado na região de Lavras-MG. O estudo foi conduzido através de coleta de informações a partir do monitoramento da qualidade de leite que é realizada por um laticínio sob inspeção federal - SIF. Para o estudo as fazendas foram classificadas de acordo com as seguintes escalas de produção de leite por propriedade (G): até 200 L/dia, 201-500 L/dia, 501-1000 L/dia, 1001-2.000 L/dia e acima de 2.000 L/dia e; intervalo de coleta de 24h e 48h (C) e a sazonalidade (S) foi considerada em função dos meses do ano (novembro de 2020 a outubro de 2021). Os parâmetros analisados no leite foram: Teor de Gordura, Proteína, Lactose, Sólidos Totais (ST), Extrato Seco Desengordurado (ESD), Contagem de Célula Somática (CCS), Teor de Nitrogênio Ureico (NU), Contagem Padrão em Placa (CPP), Relação Gordura/Proteína (G/P) e Índice Crioscópico. Houve influência da Sazonalidade para todos os parâmetros pesquisados, exceto NU. Quanto ao volume captado por grupo, houve efeito sobre o NU, ST e para CPP. Para intervalo de coleta, houve diferença nos parâmetros de NU, Proteína, Lactose, ST, ESD e CPP. Houve interação entre a sazonalidade e volume de produção (SxG) para os parâmetros de CCS, gordura e G/P. O presente estudo revelou que o volume de produção dos fornecedores, intervalo de coleta na propriedade e época do ano contribui para ocorrência de variação nos parâmetros da composição química e qualidade do leite. RESUMO: Este estudo foi conduzido com o objetivo de avaliar os efeitos da suplementação dietética com selênio e cromo biocomplexados sobre o perfil de ácidos graxos do peito e da coxa de frangos de corte machos e fêmeas da linhagem Label Rouge. O delineamento experimental foi inteiramente casualizado em esquema fatorial 3 x 2 correspondendo a três dietas (controle; 0,40 ppm de cromo; 0,50 ppm de selênio) e dois sexos. Cada tratamento foi composto por três parcelas de cinco frangos de corte. O perfil de ácidos graxos foi avaliado nas amostras de peito e coxa. A adição de selênio biocomplexado na dieta de frangos de corte aumentou o teor de ácidos graxos de cadeia longa das séries ômega 3 e 6 (ácido docosahexaenóico - DHA e araquidônico, respectivamente), o total de ômega 6 e o conteúdo de ácido esteárico no peito (músculo pectoralis major). Além disso, a suplementação com selênio causou redução no teor de ácido oleico e no total de monoinsaturados no mesmo músculo. Os machos apresentaram maiores teores dos ácidos linoléico e linolênico e total de poliinsaturados; e menor conteúdo de ácido oleico, total de monoinsaturados e saturados na coxa. Os frangos suplementados com selênio biocomplexado e os machos apresentaram melhor qualidade lipídica no músculo do peito e coxa, respectivamente.

ABSTRACT: This study was conducted to evaluate the effects of dietary supplementation with biocomplexed selenium and chromium on the fatty acid profile of the breast and thigh of males and females broilers of the Label Rouge lineage. The experimental design was completely randomized arranged in a 3 x 2 factorial scheme corresponding to three diets (control; 0.40 ppm of chromium; 0.50 ppm of selenium) and two sexes. Each treatment consisted of three plots of five broilers. The fatty acid profile was evaluated in the breast and thigh samples. The addition of biocomplexed selenium in the broilers diets increased the content of long chain fatty acid of the omega 3 and 6 series (docosahexaenoic - DHA and arachidonic acids, respectively), the total of omega 6 and the stearic acid content on the breast (pectoralis major muscle). In addition, selenium supplementation caused a reduction in oleic acid content and in total of monounsaturated in the same muscle. Males had higher contents of linoleic and linolenic acids, and total of polyunsaturated; and lower content of oleic acid, total of monounsaturated and saturated in the thigh. The broilers supplemented with biocomplexed selenium and males presented better lipid quality in the muscle by breast and thigh, respectively.

Resumo O objetivo deste trabalho foi determinar o perfil de ácidos graxos em queijos minas artesanais provenientes de sete regiões certificadas no estado de Minas Gerais, Brasil. Um total de 78 amostras foram coletadas em regiões com produtores cadastrados pelo Instituto Mineiro de Agropecuária. Para determinar a composição lipídica, foram analisadas diferentes variedades de queijo das seguintes regiões: Canastra, Serro, Araxá, Serra do Salitre, Triângulo Mineiro, Campo das Vertentes e Cerrado. A composição lipídica dos queijos da Serra do Salitre e de Araxá foi similar em ácido caproico (C6:0), total de ácidos graxos poli-insaturados e razão entre ácidos poli-insaturados e saturados. Nas outras regiões, a composição lipídica diferiu devido a associações com ácidos graxos específicos, como as dos queijos das regiões do Triangulo Mineiro com C20:5n3, do Cerrado com C20:4n6, da Serra da Canastra com C8:0, do Serro com C22:2 e C22:6n3 e de Campo das Vertentes com C17:0, C18:0 e C20:0. O perfil de ácidos graxos e os índices nutricionais relacionados ao perfil lipídico dos queijos minas artesanais diferem de acordo com a região de origem. Abstract The objective of this work was to determine the fatty acid profile of artisanal Minas cheese from seven certified regions in the state of Minas Gerais, Brazil. A total of 78 samples were collected in regions where the producers were registered by Instituto Mineiro de Agropecuária. For lipid profile determination, different cheese varieties from the following regions were analyzed: Canastra, Serro, Araxá, Serra do Salitre, Triângulo Mineiro, Campo das Vertentes, and Cerrado. The lipid profile of Serra do Salitre and Araxá cheeses was similar in caproic acid (C6:0), total polyunsaturated fatty acids, and ratio of polyunsaturated and saturated fatty acids. In the other regions, lipid profile differed due to associations with specific fatty acids, such as those of the cheeses from Triângulo Mineiro with C20:5n3, of Cerrado with C20:4n6, of Canastra with C8:0, of Serro with C22:2 and C22:6n3, and of Campo das Vertentes with C17:0, C18:0, and C20:0. The fatty acid profile and nutritional indices related to the lipid profile of artisanal Minas cheeses differ according to the region of origin. RESUMO: O estudo foi realizado com o objetivo de avaliar fatores associados ao manejo pré-abate de suínos em um abatedouro comercial localizado em Minas Gerais e sua influência sobre o pH inicial e temperatura das carcaças. Ao todo, foram avaliadas 4449 carcaças. Os fatores considerados na avaliação foram: distância de transporte, tempo de transporte, densidade da carga, tempo de jejum, tempo de descanso, peso médio dos animais, temperatura média na área de descanso e temperatura máxima na área de descanso. Para avaliar os efeitos desses fatores foram mensurados a temperatura e o pH inicial aos 45 minutos (pH45). Os valores de pH45 foram considerados para determinar o índice de predisposição para ocorrência de PSE já que as carcaças foram classificadas como PSE quando apresentaram valor de pH45 < 5,90. Os resultados encontrados mostraram que os animais com tempo de jejum acima de 24 horas, apresentaram maior probabilidade para ocorrência de carne PSE (1,41 vezes), assim como, aqueles que foram expostos a temperatura média acima de 24 °C na área de descanso com probabilidade de 1,52 vezes. ABSTRACT: This study evaluated factors associated with the pre-slaughter handling of pigs in a commercial slaughterhouse located in Minas Gerais and evaluated the influence of these factors on the initial pH and temperature of the carcasses. In all, 4449 carcasses were evaluated. The factors evaluated were transport distance, transport duration, loading density, fasting duration, resting duration, average weight of the animals, average temperature in the resting area, and maximum temperature in the resting area. The effects of these factors on the initial (i.e., at 45 minutes after slaughter) temperature and pH (pH45) were measured. The pH45 values were used to determine the occurrence of PSE; the carcasses were classified as PSE when they presented a pH45 < 5.90. Results showed that animals fasted for more than 24 hours were more likely to result in PSE meat (1.41 times more likely), as did animals that were exposed to an average temperature above 24 °C (1.52 times more likely). Except for the average weight of the animals, which did not affect the initial temperature values, all other pre-slaughter factors have influenced both pH45 and the initial temperature values, and the difference of fasting duration and the temperature in the resting area increase the incidence of PSE meat. RESUMO Objetivou-se com este estudo avaliar a associação do polimorfismo dos genes da Diacilglicerol Aciltransferase ( DGAT) e Leptina – (L EP ) em relação ao desempenho, características de carcaça, qualidade de carne e perfil lipídico de bovinos Nelore. Para o estudo, foram utilizados um total de 100 bovinos nelores machos inteiros e avaliado os parâmetros de desempenho, composição da carcaça, composição físico-química, centesimal e perfil lipídico da carne. Para identificação dos polimorfismos foi utilizada a técnica de PCR-SSCP a partir da extração do DNA genômico do tecido muscular. A técnica de SSCP revelou a presença de quatro padrões de banda para o gene DGAT (AC, AD, AE e BB) com cinco alelos (A, B, C, D e E) e, para o gene LEP foram verificados cinco padrões de bandas (AA, AB, AC, BB e BC) com três alelos (A, B e C). Para o gene LEP, o genótipo AB foi associado a maior espessura de gordura subcutânea e peso do corte ponta de agulha, enquanto o genótipo BB foi associado a menor rendimento do corte ponta de agulha; maior rendimento do corte traseiro foi associado aos genótipos AC e BB. ABSTRACT The objective of this study was to evaluate the association of polymorphisms in the diacylglycerol acyltransferase ( DGAT ) and leptin ( LEP ) genes with the performance, carcass characteristics, meat quality, and lipid profile of Nellore cattle. A total of 100 intact male Nelore cattle were used to analyze the performance, carcass, physicochemical and centesimal composition, and fatty acid profile of beef. To identify the polymorphisms, the PCR–single-strand conformation polymorphism (SSCP) technique was applied to genomic DNA extracted from muscle tissue. The SSCP technique revealed the presence of four band patterns for the DGAT gene (AC, AD, AE and BB) with five alleles (A, B, C, D and E). For the LEP gene, five band patterns (AA, AB, AC, BB and BC) with three alleles (A, B and C) were observed. For the LEP gene, the AB genotype was associated with higher backfat thickness and ribs weight, while the BB genotype was associated with lower ribs yield; higher hindquarter yield was associated with AC and BB genotypes. Higher contents of C17:0, C18:0 and lower contents of C18:2ω6C, total polyunsaturated fatty acids, total ω6 and ratio of polyunsaturated and saturated fatty acids (PUFA/SFA) were verified for the AC genotype of the LEP gene. The AC and AA genotypes of the LEP gene were associated with higher means of C15:0 and C18:1ω9t. RESUMO: O objetivo deste estudo foi avaliar os parâmetros de desempenho e as características de carcaça e qualidade da carne de frangos Label Rouge criados em sistema alternativo em função do aumento da idade de abate. O delineamento foi inteiramente casualizado (DIC) disposto em esquema fatorial (2x5), sendo dois sexos (macho e fêmea) e cinco idades de abate (70, 90, 120, 150 e 180 dias). Foram utilizadas 240 aves (Pescoço Pelado), sendo 120 fêmeas e 120 machos, sendo avaliados os parâmetros de desempenho, carcaça, físico-químicos, composição centesimal e fibra muscular. Com o aumento no tempo de produção houve efeitos dos períodos de produção e sexo em relação a variáveis de desempenho, com melhores resultados para os machos. Para os parâmetros de carcaça e físico-químicos, houve interação entre sexo e idade de abate, revelando comportamento diferenciado para machos e fêmeas com aumento da idade de abate. Para a composição centesimal e análise das fibras musculares, somente para extrato etéreo no peito foi verificado interação entre os fatores estudados. O aumento da idade proporcionou a obtenção de frangos com maiores pesos vivos e de carcaça ao abate com consequente redução dos índices de desempenho, além de menor rendimento de carcaça e maior deposição de gordura abdominal nas fêmeas. As fêmeas apresentam menor maciez na coxa e os machos no peito com aumento da idade de abate e, em ambos os cortes, ocorreu maior intensificação da cor, índice de vermelho e redução do brilho a partir de 90 dias ou em maiores idades de abate.

ABSTRACT: This study evaluated the performance parameters, carcass characteristics, and meat quality of Label Rouge chickens raised under an alternative system as a function of age at slaughter. The design was completely randomized with a 5×2 factorial arrangement, with slaughtering at five ages (70, 90, 120, 150, and 180 days) and two sexes. A total of 240 birds (Pescoço Pelado strain) were used, including 120 females and 120 males. Performance, carcass, physicochemical, proximate composition, and muscle fiber traits were evaluated. Rearing time and sex had significant effects on performance-related traits, with better results for males. The interaction between slaughter age and sex had a significant effect on the carcass and physicochemical parameters, which cause different responses in males and females with increasing slaughter age. For the proximate composition and muscle fiber analysis, the interaction between the parameters studied only had a significant effect on ether extract in the breast. The increase in age resulted in chickens with higher live and carcass weight at slaughter but lower performance indices. Females had lower carcass yield and greater deposition of abdominal fat. Females had lower tenderness in the drumstick and males in the breast with increasing slaughter age, and both cuts had more intense color and redness and reduced lightness starting at the slaughter age of 90 days.

Abstract An experiment was conducted to evaluate the effects of increasing concentrations of crude glycerin, with or without ractopamine, in the diet of finishing barrows on carcass characteristics and pork quality. The experimental design was a randomized complete block, in a 4 x 2 factorial scheme, with four concentrations of crude glycerin (0, 100, 150, or 200 g/kg) and two concentrations of ractopamine (0 or 10 mg/kg). There was no interaction between the crude glycerin concentrations and the ractopamine use as well as there was no isolated effect of the dietary crude glycerin concentration for all the evaluated traits. However, the dietary ractopamine increased the hot (p = 0.021) and cold (p=0.020) carcass weight, the hot carcass yield (p = 0.038), the shear force (p = < 0.0001), lightness (L* index) (p = 0.043), hue angle (h*) (p = 0.026), and C16:1 (p = 0.023) concentration in the loin. Moreover, the dietary ractopamine decreased the red content (a* value) (p = 0.043), the activity of C16-C18 elongase (p = 0.037) and the C18:0 (p = 0.021) concentration in the loin. The inclusion of up to 200 g/kg crude glycerin in the diet of finishing pigs may be used as a partial substitute for dietary corn, combined or not with 10 mg/kg ractopamine, without impair the evaluated carcass characteristics and the quality of the loin.

RESUMO: Objetivou-se com este estudo avaliar os fatores relacionados a maciez da carne de frangos criados em sistema alternativo. Para o experimento foi avaliado a força de cisalhamento, diâmetro das fibras musculares do peito e da coxa, conteúdo de tecido conjuntivo através de histologia e teor de colágeno solúvel e total. O experimento foi executado em delineamento inteiramente casualizado (DIC) com uso de duas linhagens (Pescoço Pelado e Paraíso Pedrês) de ambos os sexos (macho e fêmea) e abatidos em quatro idades (65, 75, 85 e 95 dias), criados em sistema alternativo, sendo utilizado um total de 192 aves. Para força de cisalhamento (FC), ocorreu aumento nos valores em ambos os cortes em função da idade de abate e houve interação entre linhagem e sexo, com as maiores médias para os machos da linhagem Pescoço Pelado e diferença entre sexo para Paraíso Pedrês. A idade de abate influenciou o diâmetro das fibras musculares e o conteúdo de tecido conjuntivo do peito e da coxa, havendo aumento linear destes parâmetros em função da idade ao abate. O sexo não afetou o diâmetro das fibras musculares da coxa, enquanto na linhagem Paraíso Pedrês foram verificadas maiores médias em relação à Pescoço Pelado. A análise de componentes principais demonstrou a relação entre a força de cisalhamento e as demais variáveis analisadas. Assim, o aumento do diâmetro das fibras musculares do peito e da coxa também está relacionado à redução da maciez da carne de frangos caipiras, conjuntamente com o aumento da quantidade de tecido conjuntivo, teor de colágeno total e redução de sua solubilidade.

ABSTRACT: This study assessed whether the meat tenderness of broilers raised in a free-range system varies by sex, lineage, and age at the time of slaughter. Physicochemical parameters were measured to adequately assess breast and thigh muscle morphometry, including shear force (SF), muscle fibre diameter (MD), histological connective tissue (HCT) content, and total and soluble collagen contents (TCC and SCC, respectively). The experiment was conducted with a completely randomized design using two lineages (Pescoço Pelado and Paraíso Pedrês), with specimens of both sexes raised in a free-range system. Randomly selected broilers were slaughtered at 65, 75, 85, and 95 days old. A total of 192 birds were analysed. SF values correlated positively with age. The highest SF values were measured in thighs of the Pescoço Pelado lineage. Age also showed a positive correlation with MD and HCT content of the breast regardless of lineage. Gender did not have any significant correlation with physical parameters; although, higher values were measured in thighs of the Paraíso Pedrês than in those of the Pescoço Pelado lineage. There were no significant differences among treatments regarding the SCC and TCC of thighs and breasts. Principal component analysis (PCA) revealed relationships between SF and the rest of the measured attributes. PCA showed that age was positively correlated with the SF, MD, and HCT content of thighs and breasts. In contrast, SCC and TCC had negative correlations. The greatest breast and thigh MD values were associated with the least tender meat. Thus, age at the time of slaughter proved to be the most significant parameter impacting the physical characteristics of muscle morphometry and meat tenderness of breasts and thighs of broilers raised in a free-range system.

Abstract This research study aimed to evaluate the influence of sexual maturity on meat quality parameters in chickens raised in a free-range system. The fully randomized design (FRD) used a (2x2) factorial scheme, with two sexes (male and female) and two categories of sexual maturity (immature and mature). Ninety birds (45 females and 45 males) belonging to the Label Rouge (Pescoço Pelado) strain were slaughtered at five different ages (70, 90, 120, 150, and 180 days). The physicochemical parameters, centesimal composition and shelf life of the meat were assessed. In both breast and leg cuts, sexual maturity promoted an increase in shear force and affected the meat color by increasing its redness (a*). Moisture was higher in leg meat after sexual maturity. In both breast and leg cuts, ether extract was higher in sexually mature females. Sexual maturity also caused a decrease in tenderness and shorter shelf life of the meat.

RESUMO: Objetivou-se neste trabalho avaliar o perfil de ácido graxo e a qualidade físico-química do óleo de buriti em condições de armazenamento. O óleo foi analisado durante 70 dias avaliando as características físico-química índice de acidez, índice de refração, densidade aparente, viscosidade absoluta, índice de peróxidos, oxidação lipídica pelo método de TBARS, parâmetros de cor (L*, a*, b*, C* e h*) e carotenoides (α-caroteno e β-caroteno) a cada 10 dias de armazenamento, além do sistema β-caroteno/ácido linoléico e perfil de ácidos graxos. As variáveis se mantiveram estáveis durante os períodos de análises e os carotenoides totais variaram entre 836,91 a 1036,96 µg/g. O ácido graxo com maior teor foi o ácido oleico com valor de 78,06 g/100 g de ácidos graxos e relação ω6/ω3 de 1,95. O óleo de buriti apresenta qualidade nutricional que justifica o estímulo ao consumo devido aos ácidos graxos que apresenta, necessitando dos órgãos reguladores a elaboração de um protocolo de extração do óleo da polpa do fruto.

ABSTRACT: The objective of this research was to evaluate the fatty acid profile and physicochemical properties of buriti oil under storage conditions. The oil was analyzed for 70 days by evaluating the physicochemical characteristics of acidity index, refractive index, bulk density, absolute viscosity, peroxide index, lipid oxidation by TBARS method, color parameters (L *, a *, b *, C * e h *) and carotenoid profile (α-carotene and β-carotene) for every 10 days of storage, in addition to the β-carotene/linoleic acid system and fatty acid profile. Variables remained stable over the analysis periods and the total carotenoids ranged from 836.91 to 1036.96 µg/g. Oleic acid accounted for the highest content among fatty acids, with a value of 78.06 g/100 g of fatty acids and a ω6/ω3 ratio of 1.95. Buriti oil has a nutritional quality and a fatty acid profile that justifies recommendations for its consumption, suggesting the need for regulatory bodies to draw up a standardized protocol for extracting oil from the fruit pulp.

ABSTRACT We intended to evaluate the influence of supplementation with biocomplexed minerals on the performance and carcass characteristics of Label Rouge broilers of both sexes, as well as on the feed efficiency and feed costs. The experimental design was completely randomized arranged in factorial scheme (3×2) – three experimental diets (control, 0.50 ppm of selenium, and 0.40 ppm of chromium) and two sexes (male and female). Each treatment was composted of three plots, each one represented by 21 birds. The average weight (g/bird), weight gain (g/bird), feed intake (g/bird), and feed conversion in periods of 1 to 7, 1 to 21, 1 to 35, 1 to 49, 1 to 63, and 1 to 90 days were calculated. Weight and yield of carcass and cuts were determined. Both average feed cost (AFC, R$/bird) and cost per kg of weight gain (CWG, R$/kg weight gain) as well as economic efficiency index (EEI) were estimated. There was no influence of the diet on performance, carcass characteristics, and feed costs of the birds. The males presented higher means of average weight (3819.2 g/bird), weight gain (3780.9 g/bird), feed intake (11030.2 g/bird), and better feed conversion index (2.9) in the period of 1 to 90 days, besides presenting higher values of live weight at slaughter (3740.2 g), carcass weight (3117.5 g) and carcass yield (83.4%), breast weight (832.4 g), thigh weight (432.5 g), and thigh yield (13.9%); the females presented higher breast yield values (28.1%). The males presented higher AFC and lower CWG. The addition of minerals in the diet does not change performance, carcass characteristics and feed costs. The males present better performance and better carcass characteristics, in addition to being economically more viable.

Abstract This study aimed evaluate the effects of the associated supplementation of: chromium more iron (CrFe), magnesium more selenium (MgSe) and the four minerals (CrFeMgSe) on the parameters related to the pork quality. Supplementation with MgSe reduced the ether extract of the meat and changed the fatty acids profile, increasing the poly-unsaturated, n-3, n-6, the polyunsaturated: saturated rate and the activity of the enzyme Thioesterase index, besides reducing the total number of saturated fatty acids and the Atherogenicity index. It promoted a reduction in a*, b* and C* indices and increased h* of the chilled meat stored. Over the storage days under refrigeration, there was linear drop for L* and a* and an increase to C*. The associated use of magnesium and selenium promotes changes in lipid profile without changing the meat quality, and they may be used in order to obtain meat with more appropriate nutritional aspects.

RESUMO O objetivo com este estudo foi avaliar as características de desempenho, carcaça, qualidade de carne, perfil de ácidos graxos e alterações hepáticas de bovinos suplementados com caroço de algodão (CA) em terminação. Utilizou-se 100 animais da raça Nelore, sendo divido em dois grupos de 50 animais, sendo para o grupo 1 foi incluído CA na forma de grão inteiro na dieta (15% de inclusão) e para o grupo 2, foi fornecido uma dieta controle. Os animais permaneceram em confinamento durante 88 dias e as dietas fornecidas foram isoproteícas e isoenergéticas, na proporção de Concentrado: Volumoso de 60:40. Ao final do período experimental, os animais foram encaminhados para abate sendo coletadas amostras de fígado para análise histológica. Após resfriamento de 24 horas a ± 1°C, foram realizadas avaliações de carcaça e de cortes principais, pH e coleta de amostras do músculo Longissimus para realização das análises físico- química, de composição centesimal, perfil de ácidos graxos e índice de oxidação. A inclusão do CA na dieta proporcionou animais com maior peso ao abate, ganho de peso diário, rendimento de dianteiro. Porém, os animais apresentaram reduzidos rendimentos de carcaça, peso de traseiro e costelas, sem alterar os parâmetros como área de olho de lombo e cobertura de gordura subcutânea. Houve aumento dos valores de amarelo (b*) e umidade, com redução de pH final com uso do CA. Não houve influência do uso de CA em relação aos parâmetros histológicos avaliados no fígado. A inclusão de 15% de CA promoveu melhoria no desempenho dos bovinos em confinamento, com redução do peso do traseiro e adequados aspectos de qualidade de carne, perfil de ácidos graxos e conservação.

SUMMARY The objective of this study was to evaluate the performance, carcass, meat quality, fatty acid profile and liver alterations of cattle supplemented with cottonseed feedlot. It used 100 Nelore cattle, being divided into two groups of 50 animals, which received a cottonseed (CS) in grain form by the diet in the proportion of 15% and the other group was provided with control diet without CS in the feedlot for 88 days. The diets were isoprotein and isoenergetic and concentrate:roughage ratio of 60:40. The animals were slaughter in the end of experimental time and the collection of liver samples for histological analysis. After cooling 24 hours at ± 1°C were conducted evaluation of carcass and major cuts, final pH and collected muscle samples longissimus to carry out the physicochemical analyzes (Color, Cooking Loss, Pigments and Shear Force), chemical composition, fatty acid profile and oxidation. The inclusion of CS in the diet provided animals with higher slaughter weight, daily weight gain, Hindquarter, however, the animals showed reduced carcass yield, forequarter weight and Thin flank, without changing the parameters as rib-eye area and backfat thickness. There was an increase of the yellow values (b*) and moisture with the final pH reduction. There was no influence of the use of cottonseed in relation to histological parameters evaluated in the liver. The cottonseed in the feeding feedlot cattle promoted improvement in animal performance, despite the reduction of the forequarter weight, with appropriate aspects of meat quality, fatty acid profile and conservation.

Resumo Objetivou-se caracterizar a qualidade da carne de aves da raça Rodhe Island Red em função da diferença do tipo de corte e sexo. Foram utilizadas 30 aves em delineamento inteiramente casualizado em esquema fatorial (2 x 2), sendo dois cortes (peito e coxa) e dois sexos, com cinco repetições por tratamento. As aves foram abatidas aos 105 dias para realização das análises físico-químicas, composição centesimal e perfil lipídico do peito e coxa. A coxa apresentou maior média de pH final, teor de vermelho (a*) e força de cisalhamento (FC). Para luminosidade (L*), o peito obteve a maior média e as fêmeas maior média de FC. A coxa apresentou maior teor de extrato etéreo (EE) e umidade. O peito apresentou maior média de ácidos graxos saturados. As fêmeas obtiveram maior quantidade de ω3 e menor relação ω6/ω3. Foi observado maior índice de trombogenicidade no peito. A coxa mostrou menor conteúdo de ácidos graxos saturados e menor índice de trombogenicidade. As fêmeas apresentaram maior teor de ω3. O tipo de corte demonstrou maior influência que o sexo sobre os parâmetros estudados e a coxa apresentou melhores aspectos físico-químicos e de perfil lipídico para carne de aves neste sistema de produção relacionados à qualidade de carne desejável pelos consumidores.

Abstract This study aimed to characterize the quality of the meat from Rodhe Island Red poultry, considering the type of cut and sex. We used 30 birds in a completely randomized design in a factorial arrangement (2 x 2), two cuts (breast and thigh) and both sexes, with five replicates per treatment. The birds were slaughtered at 105 days to carry out the physical and chemical analysis, chemical composition and lipid profile of breast and thigh. The thigh showed the highest mean final pH, redness (a*) and shear force (SF). For brightness (L*), the breast had the highest average as well as females presented the highest SF average. The thigh presented the highest amount of ether extract (EE) and humidity. The breast presented the highest amount of saturated fatty acids. Females showed the highest amount of ω3 and the lowest ω6 / ω3 relation. There was a higher thrombogenicity index in breast meat. The thigh showed the lowest content of saturated fatty acids and a lower thrombogenicity index. Females had higher content of ω3. The cut showed greater influence then sex on the studied parameters and the thigh showed better physical and chemical aspects and lipid profile for poultry meat in such production system regarding the meat quality as desirable by the consumers.

Avaliou-se o efeito de diferentes formas de processamento da casca de mandioca na alimentação sobre o desempenho e as características de carcaça, a morfologia ruminal e a viabilidade técnico-econômica da criação de ovinos. Foram utilizados 20 ovinos machos da raça Santa Inês, desmamados, com peso inicial de 19,02±0,21 kg e 90 dias de vida. O delineamento experimental foi inteiramente casualizado com cinco repetições por dieta. Durante o período experimental de 84 dias, incluindo 14 dias de adaptação, os animais foram mantidos em sistema de semiconfinamento em pastagem de Brachiaria decumbens. Foram avaliadas quatro formas de processamento da casca de mandioca: desidratada triturada em peneira de 12 ou de 5 mm; úmida triturada e ensilada; e úmida triturada e hidrolisada com 0,5% de cal virgem (óxido de cálcio - CaO). O peso médio ao abate foi 30,72±1,46 kg. Não houve influência do tipo de processamento da casca sobre as características de desempenho analisadas, as características quantitativas de carcaça e a morfologia ruminal, sendo influenciado somente o rendimento de paleta. A casca de mandioca hidrolisada foi a que promoveu melhor eficiência econômica. Os tipos de processamento da casca de mandioca não alteram o desempenho, as características de carcaça, os rendimentos de corte e a morfologia ruminal dos ovinos Santa Inês.

The objective of this trial was to evaluate the effect of different forms of processing of cassava peel in sheep feeding on performance traits, carcass, morphology and rumen and economic technical feasibility. Twenty non-castrated male Santa Ines lambs of 19.02±0.21 kg of initial body weight and 90 days of age at the beginning of the study were used in this trial. The design was completely randomized design with five replications per treatment. During the experimental period of 84 days, including 14 days of adaptation, animals were kept in semi-confinement on Brachiaria decumbens. Four forms of cassava peel processing were evaluated: dried cassava peel ground through 12-mm sieve; dried cassava peel ground through 5-mm sieve; ground and ensiled cassava peel, and wet, ground hydrolyzed with 0.5% lime (calcium oxide - CaO). The average weight at slaughter was 30.72±1.46 kg. There was no influence of the type of processing on the performance variables analyzed, quantitative carcass characteristics or ruminal morphology; only the values of width and leg yield palette were influenced. Hydrolyzed cassava peel showed the best economic efficiency between treatments. The different methods of processing cassava peel do not affect performance, carcass characteristics, yield cuts or rumen morphology of Santa Ines sheep.
