ABSTRACT: The Campanha Gaúcha region has recently (2020) received an Indication of Provenance (‘IP Campanha Gaúcha’) for wines and sparkling wines. Scientific data and research developed during the last decades could provide the necessary information for this first characterization of the area. Nevertheless, there is a lack of detailed data about the composition of Campanha Gaúcha wines. In this study, five Campanha Gaúcha white wines of different grape varieties (Riesling, Gewürztraminer, Semillon, Sauvignon Blanc and Chardonnay) produced in the 2018 vintage were collected directly from the winery and followed analyses of several volatile and phenolic compounds. The 2018 vintage was rated among the best of the 3 preceding decades for this region. The results, originated from this excellent vintage, demonstrate the qualitative potential of the region for the wines elaborated with the grape varieties covered by this study. They are important records for the construction and enlargement of databases for future research and can also provide further scientific basis for more detailed definition of intra-regional and inter-regional differences and similarities regarding the characteristics of Campanha Gaúcha wines. RESUMO: A região da Campanha Gaúcha recebeu recentemente, em 2020, a Indicação de Procedência ‘IP Campanha Gaúcha’ para vinhos e espumantes. Dados científicos e pesquisas desenvolvidas nas últimas décadas puderam fornecer as informações necessárias para esta primeira caracterização da área. No entanto, faltam dados detalhados sobre a composição dos vinhos da Campanha Gaúcha. Neste estudo, vinhos de cinco variedades de uva branca (Riesling, Gewürztraminer, Semillon, Sauvignon Blanc e Chardonnay), produzidos na Campanha Gaúcha na safra 2018, foram coletados diretamente da vinícola e encaminhados para análises de vários compostos voláteis e fenólicos. Essa safra foi classificada entre as melhores das três décadas anteriores para esta região. Os resultados, oriundos dessa excelente safra, demonstram o potencial qualitativo da região para as castas abrangidas por este estudo. ABSTRACT El Niño-Southern Oscillation (ENSO) is an important source of year–to–year fluctuations in the whole global climate system and in the southern Brazilian climate. El Niño events affect this region, imposing unfavorable weather conditions (rainy/humid/overcast) during critical grapevine phenological stages, compromising yields in the current and following crop seasons. The analysis of 29 crop cycles revealed patterns about grape yield oscillations in Santana do Livramento, Campanha Gaúcha, RS, Brazil. Yield deviations showed correlations with the Oceanic Niño Index (ONI) 3 months running means centered in November. La Niña events correlate with yield oscillations close to or above the tendency line. El Niño events are linked to various results, including the lowest and the highest yields. The four largest crop failures happened in El Niño events, while the three most severe of them happened in cases of early El Niño consolidation. The seven lowest yields were linked to El Niño, or low or descending yields in the previous year (s), or all these factors combined. Simple criteria allowing early warning of crop failure conditions were defined: ONI (or the monthly Niño - 3.4 Index) ≥ +0.5 °C in July (or earlier); and low or descending yields in the previous year (s). Resumo O objetivo deste trabalho foi avaliar a composição físico-química de sucos de uvas 'Bordô' e 'BRS Cora' cultivadas em sistema de produção orgânico na região da Serra do Sudeste, no sul do Brasil, bem como comparar os resultados das cultivares com dados de outras regiões produtoras e com as exigências das leis brasileiras para suco de uva integral. As uvas utilizadas provieram de um vinhedo comercial, especificamente dos ciclos produtivos de 2016-2017, 2017-2018 e 2018-2019. Os sucos foram elaborados pelo método de arraste de vapor e avaliados quanto à sua composição físico-química. Os frutos mostraram níveis adequados dos parâmetros necessários para a produção de sucos. Em geral, os sucos apresentaram teores de compostos bioativos semelhantes aos encontrados em outras regiões produtoras. Os sucos de 'Bordô' das três safras avaliadas apresentaram diferenças significativas em vários dos parâmetros, as quais foram atribuídas à influência do clima sobre a maturação das uvas. Os sucos de 'BRS Cora' apresentaram resultados qualitativos de alta consistência, mesmo sob as tão distintas condições meteorológicas dos três ciclos produtivos. Os sucos atendem às regulações brasileiras vigentes para o suco de uva integral, exceto quanto aos valores de sólidos solúveis, que são severamente reduzidos pela técnica de extração utilizada.

Abstract The objective of this work was to evaluate the physicochemical composition of juices from the 'Bordô' and 'BRS Cora' grapes grown in an organic production system in the Serra do Sudeste region, in Southern Brazil, as well as to compare the cultivar results with data from other producing regions and with the requirements of the Brazilian regulation for whole grape juice. The used grapes came from a commercial vineyard, especifically from the 2016-2017, 2017-2018, and 2018-2019 production cycles. The juices were prepared by the steam drag method and evaluated for their physicochemical composition. The fruit showed suitable values for the parameters necessary for grape juice production. In general, the juices showed bioactive compounds contents similar to those obtained in other regions. The 'Bordô' juices evaluated in the three production cycles showed significant differences for several variables, which were attributed to the influence of weather on grape maturity. The juices of 'BRS Cora' showed high-consistency qualitative results even under the very distinct meteorological conditions of the three production cycles. The juices comply with the current Brazilian regulation for whole grape juice, except for soluble solids, which are severely lowered by the used extraction technique.

RESUMO: Durante a fermentação alcoólica as leveduras produzem compostos que influenciam a qualidade sensorial dos vinhos. O objetivo do trabalho foi avaliar as propriedades físico-químicas, aromáticas e sensoriais do vinho branco da variedade Riesling Italico elaborado a partir de leveduras Saccharomyces e “não-Saccharomyces”. Foram inoculadas separadamente no mosto as leveduras S. cerevisiae, S. cerevisiae cerevisiae, S. bayanus, Torulaspora delbrueckii e Metschnikowia pulcherrima. A fermentação alcoólica ocorreu em garrafões com 7 L de mosto, em triplicata, por 10 dias a 15 ºC. Foram realizadas análises físico-químicas padrão e de identificação da qualidade dos vinhos, além das análises de compostos voláteis e sensorial descritiva quantitativa. Todas as leveduras produziram vinhos com teores de álcool, acidez volátil e açúcar residual de acordo com a legislação. A levedura T. delbrueckii produz vinhos com concentrações elevadas de acetato de feniletila, acetato de isoamila e decanoato de etila, resultando em boa qualidade olfativa e avaliação sensorial.

ABSTRACT: The sensory quality of wines is affected by the compounds produced by the action of the yeasts used in alcoholic fermentation. This work aimed at assessing the physicochemical, aromatic and sensory properties of the ‘Riesling Italico’ white wines produced by using the Saccharomyces and non-Saccharomyces yeasts. The yeasts S. cerevisiae, S. cerevisiae cerevisiae, S. bayanus, Torulaspora delbrueckii and Metschnikowia pulcherrima were inoculated individually into the must. For 10 days, the alcohol was left to ferment in 7 L carboys in triplicate, at 15º C temperature. The standard physicochemical analyses were done and the quality of the wines was determined. The volatile compounds were identified and quantitative descriptive sensory analyses were performed. All the yeasts produced wines with the characteristic alcohol, volatile acidity and residual sugar content as stipulated by the Brazilian legislation. The T. delbrueckii yeast produced high-content phenylethyl acetate, isoamyl acetate and ethyl decanoate wines, of superior olfactory quality and sensory rating.

Resumo O maior volume de suco de uva produzido no Brasil é da cultivar Isabel. No entanto, é necessário que se façam cortes com outras cultivares para melhorar a qualidade do suco, o que eleva a demanda por outras cultivares, especialmente Bordô. Sendo assim, o objetivo deste estudo foi avaliar a influência das cultivares BRS Rúbea, BRS Cora, BRS Violeta, BRS Carmem, BRS Magna e Bordô em cortes com Isabel quanto às características físico-químicas, colorimétricas e sensoriais de sucos produzidos na Região do Vale do Rio do Peixe - SC. Os sucos foram elaborados na Epagri - Estação Experimental de Videira - SC, sendo: (ISA) 100% Isabel; (ISA+RUB) 70% Isabel + 30% Rúbea: (ISA+COR) 70% Isabel + 30% Cora; (ISA+VIO) 70% Isabel + 30% Violeta; (ISA+CAR) 70% Isabel + 30% Carmem; (ISA+MAG) 70% Isabel + 30% Magna; (ISA+BOR) 70% Isabel + 30% Bordô, e avaliados quanto à composição físico-química, colorimétrica e perfil sensorial. A maior acidez titulável foi verificada em ISA+MAG, seguida de ISA+BOR. Os sucos ISA+VIO obtiveram a maior média para o teor de sólidos solúveis, não diferindo apenas de ISA+CAR, que também apresentou a menor acidez dentre os tratamentos. Os sucos ISA+VIO e ISA+CAR apresentaram maior teor de sólidos solúveis em relação ao suco de Isabel 100%. A menor luminosidade foi observada nos sucos do ISA+VIO, seguida por ISA+CAR. Quanto aos atributos sensoriais foram observadas diferenças significativas apenas para cor e acidez. Os sucos ISA+VIO, ISA+CAR e ISA+BOR receberam as maiores notas para o atributo cor. Todas as cultivares testadas influenciaram as características colorimétricas do suco, mostrando-se alternativas para a melhoria da cor de sucos de Isabel. Sensorialmente, apenas a cor e a acidez foram influenciadas pelos diferentes cortes.

Abstract The highest volume of grape juices from Brazil is produced from Isabel cultivar. However, t cuts from other cultivars are essential for improving quality, which increases the demand for other cultivars, especially the ‘Bordô’. The objective of this study was to evaluate the influence of the BRS Rúbea, BRS Cora, BRS Violeta, BRS Carmem, BRS Magna and Bordô cultivars in cuts with ‘Isabel’, in terms of the physicochemical, colorimetric and sensorial characteristics of juices produced at the Vale do Rio do Peixe-SC region-Brazil. The juices were elaborated at the Epagri- Experimental Station of Videira-SC, from: (ISA) 100% Isabel; (ISA + RUB) 70% Isabel + 30% Rúbea: (ISA + COR) 70% Isabel + 30% Cora; (ISA + VIO) 70% Isabel + 30% Violet; (ISA + CAR) 70% Isabel + 30% Carmem; (ISA + MAG) 70% Isabel + 30% Magna; (ISA + BOR) 70% Isabel + 30% Bordô. It was evaluated their physicochemical, colorimetric and sensorial profiles. The highest titratable acidity was verified in ISA + MAG juice, followed by ISA + BOR. The ISA + VIO juice obtained the highest average for the soluble solids content, which did not differ only from ISA + CAR and also presented the lowest acidity among the treatments. The ISA + VIO and ISA + CAR juices presented an increase in the soluble solids content in relation to the 100% Isabel juice. The lowest luminosity was observed in the ISA + VIO juice, followed by ISA + CAR. For the sensorial attributes, significant differences in the different cuts were only observed for color and acidity. The ISA + VIO, ISA + CAR and ISA + BOR juices received the highest scores for the color attribute. All cultivars tested influenced the colorimetric characteristics of the juice, showing alternatives to improve the color of ‘Isabel’ juices.

O experimento foi implantado no Pomar Didático do Centro Agropecuário da Palma, da Faculdade de Agronomia Eliseu Maciel, Universidade Federal de Pelotas, com o objetivo de avaliar o efeito de diferentes manejos da cobertura vegetal de aveia preta sobre a porcentagem de água, temperatura, conteúdo de matéria orgânica e resistência à penetração do solo e ao grau de infestação de plantas daninhas em pomar. Os tratamentos constaram de diferentes técnicas de manejo da cobertura vegetal de solo com aveia preta: incorporação da aveia ao solo; dessecação com herbicida; acamamento com rolo faca; roçada a 5 cm e uma testemunha (solo descoberto). A semeadura da aveia foi realizada em abril de 2002 e a aplicação dos tratamentos, no fim do mês de agosto do mesmo ano. O experimento foi desenvolvido em blocos casualizados, com três blocos, cinco tratamentos e uma repetição. Os dados foram submetidos à analise da variância através do teste F e as médias comparadas pelo teste de Duncan. Nos tratamentos em que houve manutenção da cobertura vegetal no pomar, observaram-se redução da temperatura, aumento da umidade do solo e da resistência à penetração. O revolvimento do solo aumentou a diversidade de plantas daninhas. A incorporação da aveia preta, após 60 dias, teve o mesmo comportamento que o solo descoberto, quanto à umidade e temperatura do solo.

The experiment was managed in the Didactic Orchard of the Agricultural Center of Palma, which belongs to the Federal University of Pelotas (UFPel). The treatments consisted of 5 different managements of black oat crop cover: incorporation of black oat to soil; chemical management with herbicide; lodging; mowing at 5 cm and control (uncovered soil). The sowing of the oat was accomplished by April of 2002 and the installation of the experiment, by the end of August of the same year. The analyzed variables were percentage of soil moisture at a depth of 15 cm, temperature of the soil at a depth of 5 cm, percentage of organic matter of the soil, soil resistance to the penetration and identification and degree of infestation by weeds. The experiment was managed in randomized blocks, with 3 blocks, 5 treatments and one repetition. The data were submitted to analysis of the variance through F test and the averages compared by Duncan Test. Maintenance of crop covering in orchard propitiated smaller temperature and larger soil moisture; the soil turn-over increased the diversity of weeds and the incorporation of black oat, after 60 days, had the same behavior as the uncovered soil.
