O gérmen com pericarpo, subproduto do processamento do grão de milho, possui alto valor nutricional, porém é pouco aproveitado na alimentação humana. Os objetivos deste estudo foram caracterizar quimicamente o gérmen com pericarpo de milho desengordurado (GMD), desenvolver formulações, avaliar a aceitabilidade e analisar a composição centesimal de biscoitos tipo cookie contendo GMD. Foi determinada a composição centesimal do GMD e dos biscoitos, e analisados o conteúdo de minerais e o escore de aminoácidos essenciais (EAE) do GMD, conforme metodologias padronizadas na literatura. Foram formulados biscoitos com 0% (biscoito controle), 50% (B50) e 100% (B100) de substituição de farelo de aveia por GMD. Para a análise sensorial, utilizou-se escala hedônica de nove pontos. O GMD é fonte de proteínas (11,7g 100g-1), que contêm ótimo perfil de aminoácidos (EAE=1,26) e é rico em fibra alimentar (28,9g 100g-1), ferro e zinco (5mg 100g-1). Todos os biscoitos foram aceitos sensorialmente (aceitação global e aparência), sendo o biscoito B50 mais aceito que o B100. Os biscoitos com GMD são fonte de proteínas (12,5g 100g-1) e contêm alto teor de fibras alimentares (10,0g 100g-1). O emprego do GMD na formulação de alimentos à base de cereais elevou o valor nutricional desses produtos, podendo agregar valor a este subproduto da indústria de milho.

The germ with pericarp, byproduct of corn grain processing, has a high nutritional value, but is little used in food. Our objectives were to analyze the chemical composition of the defatted corn germ with pericarp (DCG) and to develop formulations, to evaluate the acceptability and to analyze the chemical composition of cookies with DCG. The proximal composition of DCG and of cookies was determined, and the mineral content and the essential amino acid score (EAE) were analyzed in DCG, according to standard methods of the literature. cookies with 0% (control), 50% (B50) and 100% (B100) of replacement of oat bran for DCG were formulated. The sensory analysis was performed by using hedonic scale of nine points. The DCG is source of protein (11.7g 100g-1) with optimal amino acid profile (EAE=1.26), and it is rich in dietary fiber (28.9g 100g-1), iron and zinc (5mg 100g-1). All cookies were sensorially accepted (overall acceptance and appearance), and the cookie B50 was more accepted than the B100. The cookies with DCG are source of proteins (12.5g 100g-1) and contain high levels of dietary fiber (10.0g 100g-1). The use of DCG in the formulation of the based-cereal foods increased the nutritional value of these products and can to add value to this byproduct of the corn grain processing.

A fração gérmen com pericarpo de milho (GPM), obtida por meio da degerminação deste cereal, possui alta densidade de nutrientes, contudo, ainda é subutilizada na alimentação humana. Portanto, este trabalho teve como objetivos desenvolver biscoitos tipo cookie, enriquecidos com GPM, avaliar a aceitabilidade e determinar sua composição centesimal. A fração GPM foi acrescentada às formulações, na proporção de 40% e 50%, em substituição à farinha de trigo e fécula de mandioca. Foram realizadas análises de composição centesimal da fração GPM e dos biscoitos. Todos os biscoitos foram aceitos, em relação à aceitação global, porém, apenas o biscoito com 40% de substituição de farinha de trigo e fécula de mandioca por GPM foi aceito, em relação à aparência. Na fração GPM, constataram-se altos teores de lipídios (18%) e de fibra alimentar total (29%), e conteúdo considerável de proteína (12%). Foram observadas diferenças significativas no teor de proteínas do biscoito com 50% de substituição de farinha de trigo e fécula de mandioca por GPM (7,76 g 100g-1, em relação ao controle e àquele com 40% de substituição (6,76 g 100g-1e 6,88 g 100g-1 respectivamente). A fração GPM aumentou o teor de fibra alimentar, não interferiu na concentração de lipídios e reduziu o valor energético dos biscoitos. O emprego da fração gérmen com pericarpo de milho, em produtos alimentícios, possibilita aumento do teor de fibra alimentar e redução do valor energético dos produtos.

The germ fraction with maize pericarp (GMP), obtained from the degermination of this cereal, presents a high nutrient density, however, it is underused as food. Therefore, the objective of this study was to develop cookies enriched with GMP, in order to evaluate their acceptability and determine their centesimal composition. The GMP fraction was added to the formulations, in the proportion of 40% and 50%, in replacement of wheat flour and cassava starch. Centesimal composition analyses were performed for both the GMP fraction and cookies. All cookies were accepted, in relation to global acceptance, however, only the cookie with 40% replacement of wheat flour and cassava starch by GMP was accepted, concerning appearance. The GMP fraction showed high levels of lipids (18%) and total dietary fiber (29%), and considerable protein content (12%). Significant differences were observed in the protein content of the cookie with 50% replacement of wheat flour and cassava starch by GMP (7.76 g 100g-1, in relation to the control and the cookie with 40% replacement (6.76 g 100g-1and 6.88 g 100g-1 respectively). The GMP fraction increased the dietary fiber content, did not change the lipids concentration, and reduced the energy value of cookies. The use of germ fraction with maize pericarp in food products allows the increase of their dietary fiber content and the decrease of their energy value.

A fração gérmen com pericarpo (farelo) é produzida no processamento do grão de milho, sendo usada para extração de óleo e alimentação animal. O estudo avaliou a qualidade nutricional e proteica desta fração em relação ao milho. Foi determinada a composição centesimal, conteúdo em minerais e perfil de aminoácidos da fração gérmen com pericarpo e do milho. Foi conduzido um experimento (4 semanas) com 36 ratos Wistar machos recém-desmamados, e foram formuladas três dietas contendo 10% de proteína (referência, gérmen com 15% de lipídios e caseína com 15% de lipídios), duas dietas com 6% de proteína (milho e caseína), e uma dieta aproteica. Foram constatados maiores teores de proteínas, lipídios, fibra alimentar (27,8 g.100g-1), cinzas, minerais (Fe e Zn - aproximadamente 5 mg. 100g-1) e lisina (57,2 mg.g-1 proteína) no gérmen em relação ao milho. O gérmen apresentou proteína de boa qualidade (Relative Protein Efficiency Ratio-RPER = 80%; Protein Digestibility-Corrected Amino Acid Score-PDCAAS = 86%), superior à do milho (RPER = 49%; PDCAAS = 60%). A fração gérmen com pericarpo é rica em fibra alimentar e é fonte de proteína de boa qualidade e de ferro e zinco, sendo indicado seu uso como matéria-prima nutritiva em produtos alimentícios para consumo humano.

The germ fraction with pericarp (bran) is generated in the industrial processing of corn kernel, and it is used for oil extraction and animal feed. This study evaluated the nutritional and protein quality of this fraction in relation to whole corn. The proximate composition, mineral contents, and amino acid profile of the germ fraction with pericarp and of whole corn were determined. A 4-week experiment was conducted using 36 weanling male Wistar rats, and three 10%-protein diets (reference, germ with 15% lipids and casein with 15% lipids), two 6%-protein diets (whole corn and casein), and a protein-free diet were prepared. The germ showed higher contents of proteins, lipids, dietary fiber (27.8 g.100 g-1), ash, minerals (Fe and Zn- approximately 5 mg.100 g-1), and lysine (57.2 mg.g-1 protein) than those of corn. The germ presented good quality protein (Relative Protein Efficiency Ratio-RPER = 80%; Protein Digestibility-Corrected Amino Acid Score-PDCAAS = 86%), higher than that of corn (RPER = 49%; PDCAAS = 60%). The corn germ fraction with pericarp is rich in dietary fiber, and it is a source of good quality protein as well as of iron and zinc, and its use as nutritive raw material is indicated in food products for human consumption.

O arroz é o segundo cereal de maior consumo no mundo, sendo a produção mundial estimada em 661,3 milhões de toneladas, em 2008. O farelo, resultante do beneficiamento do grão, para obtenção do arroz polido ou parboilizado polido, possui quantidades significativas de carboidratos, proteínas, lipídios, fibras insolúveis, vitaminas e minerais. Este trabalho teve por objetivo avaliar algumas características físico-químicas e microbiológicas do farelo de arroz cru (FAC), do farelo cru submetido à extrusão (FAE) e do obtido após o processo de parboilização do arroz (FAP). Todas as análises foram realizadas conforme métodos recomendados pela Agência Nacional de Vigilância Sanitária Brasileira e International Association of Official Analytical Chemists. O FAP apresentou maior teor de proteínas (17,17 g 100 g-1), lipídios (36,03 g 100 g-1), fibra alimentar (34,06 g 100 g-1), cálcio (99,45 mg 100 g-1), zinco (15,58 mg 100 g-1), cobre (1,45 g 100 g-1) e manganês (17,81 g 100 g-1) e menor teor de carboidratos (5,73 g 100 g-1), cinzas (7,01 g 100 g-1), potássio (507,55 mg 100 g-1) e ferro (6,83 mg 100 g-1). Em todos os farelos, foi detectada presença de Aspergillus sp., sendo que o FAE apresentou o menor número de colônias. Todos os farelos apresentaram padrões microbiológicos aceitáveis, para coliformes a 45ºC e Bacillus cereus, e ausência de Salmonela sp., conforme legislação brasileira. FAC, FAE e FAP possuem alto valor nutritivo, sendo fontes de proteínas, lipídios, fibra alimentar e minerais.

Rice is the second most consumed cereal in the world, having reached a global production of 661.3 millions of tons, in 2008. Rice bran, resulted from grain milling to obtain white rice or polished parboiled rice, has significant amounts of carbohydrates, proteins, lipids, soluble fiber, vitamins, and minerals. This study had the objective of evaluating some physicochemical and microbiological characteristics of raw rice bran (RRB), extruded rice bran (ERB), and parboiled rice bran (PRB). All the analyses were done according to standardized methods recommended by the Brazilian National Health Vigilance and International Association of Official Analytical Chemists. The PRB presented the highest contents of protein (17.17 g 100 g-1), lipids (36.03 g 100 g-1), dietary fiber (34.06 g 100 g-1), calcium (99.45 mg 100 g-1), zinc (15.58 mg 100 g-1), cupper (1.45 g 100 g-1), and manganese (17.81 g 100 g-1), and the lowest levels of carbohydrate (5.73 g 100 g-1), ash (7.01 g 100 g-1), potassium (507.55 mg 100 g-1), and iron (6.83 mg 100 g-1). All the rice bran samples showed Aspergillus sp. contamination, but ERB had the lowest colonies counting. All samples showed acceptable microbiological patterns for coliforms at 45ºC and Bacillus cereus, and Salmonella sp. absence, according to the Brazilian legislation. The RRB, ERB, and PRB have high nutritive value, being considered good sources of proteins, lipids, dietary fiber, and minerals.
