Abstract Iron and zinc are essential micronutrients for the organism functioning and their lack can result in prejudices to human health. The information about the presence of minerals in the diet are normally referred to its total concentrations, however these values do not reproduce the fraction that might be bioaccessible for the human body. The objective of this study was to evaluate if the promoters increase the iron and zinc bioaccessibility in a rice-and-bean mix. For this, four treatments were elaborated, all containing rice and bean and varied between each other regarding the promoters added to this mix. Ascorbic acid and cysteine were the promoters chosen to evaluate the influence in the iron and zinc absorption. For this purpose, the tomato was chosen to act as ascorbic acid source and garlic and onion were chosen to act as cysteine source. The treatments with tomato presented a higher rate of iron, significantly differing from those without tomato in their composition. Treatment 4 was the one which provided the highest bioaccessibility for iron and was the only one that differed from the others. About zinc, there was no significant difference between the treatments regarding the total rate as well as the bioaccessibility.

Resumo O feijão (Phaseolus vulgaris L.) é uma leguminosa que, além de ser fonte de nutrientes, possui compostos fenólicos que atuam como antioxidantes. O presente estudo teve por objetivo a determinação de compostos fenólicos e taninos de duas cultivares de feijão (Phaseolus vulgaris L.): carioca biofortificado (Pontal) e comum (comercial). Averiguou-se ainda a atividade antioxidante dos compostos fenólicos e de suas frações, por meio dos métodos DPPH e ABTS. O tratamento térmico diminuiu os teores de compostos fenólicos, taninos e a atividade antioxidante dos feijões. A cultivar Pontal apresentou maiores teores de compostos fenólicos, mesmo após a cocção. Para as amostras de feijão cozido, observou-se maior atividade antioxidante para o feijão comercial pelo método DPPH. Quanto às frações fenólicas, observou-se decréscimo nos valores de atividade antioxidante por DPPH após o cozimento dos feijões, exceto para a fração 6 da cultivar Pontal e para fração 3 do feijão comercial. Para a fração 4, em ambas cultivares não foram observadas diferenças significativas na atividade antioxidante pelo método ABTS após tratamento térmico.

Abstract The common bean (Phaseolus vulgaris L.) is a source of nutrients and contains phenolic compounds that act as antioxidants. The aim of the present study was to determine the phenolic compounds and tannins in two bean cultivars (Phaseolus vulgaris L.): the biofortified carioca bean (Pontal) and the common bean (commercial). The antioxidant activity of the phenolic compounds and their fractions was also measured using 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) methods. The thermal processing decreased the phenolic compounds, tannins and the antioxidant activity of beans. The Pontal cultivar exhibited higher levels of phenolic compounds even after cooking. For cooked beans, higher antioxidant activity was observed in the commercial beans by the DPPH method. Regarding to the fractions, in general, lower values of antioxidant activity by DPPH were observed for beans after cooking, except for fraction 6 of the Pontal bean and fraction 3 of the commercial bean. For fraction 4 no significant differences were observed by the ABTS method for both cultivars after thermal processing.

ABSTRACT Carotenoids are incorporated into the diet of laying hens in order to modify the yolk color. A natural source of carotenoids in tropical countries is annatto, which could be used in the diets of hens. This study aimed to evaluate the addition of natural (annatto) and synthetic carotenoids to the diet of laying hens (commercial and alternative) and their effects on yolk color and consumer sensory perception of fresh and stored eggs obtained from two different preparations (boiled and fried). Physicochemical analysis of proximate composition, thiobarbituric acid reactive substances (TBARS), emulsion activity and instrumental color were performed. Cooking caused significant alterations to the moisture in the preparations and this may have directly affected the color intensity, influencing factors related to egg appearance. In this study, 85 % of the panelists indicated that yolk color is an important attribute of the product’s quality. There was no antioxidant effect of the carotenoids in raw eggs. Synthetic additives should be better dosed to obtain the desired effect. Storage did not alter the proximate composition of the eggs.

Ingestion of vegetables containing heavy metals is one of the main ways in which these elements enter the human body. Once entered, heavy metals are deposited in bone and fat tissues, overlapping noble minerals. Slowly released into the body, heavy metals can cause an array of diseases. This study aimed to investigate the concentrations of cadmium, nickel, lead, cobalt and chromium in the most frequently consumed foodstuff in the São Paulo State, Brazil and to compare the heavy metal contents with the permissible limits established by the Brazilian legislation. A value of intake of heavy metals in human diets was also calculated to estimate the risk to human health. Vegetable samples were collected at the São Paulo General Warehousing and Centers Company, and the heavy metal content was determined by atomic absorption spectrophotometry. All sampled vegetables presented average concentrations of Cd and Ni lower than the permissible limits established by the Brazilian legislation. Pb and Cr exceeded the limits in 44 % of the analyzed samples. The Brazilian legislation does not establish a permissible limit for Co contents. Regarding the consumption habit of the population in the São Paulo State, the daily ingestion of heavy metals was below the oral dose of reference, therefore, consumption of these vegetables can be considered safe and without risk to human health.

Os produtos de frutas cítricas são de grande importância para as exportações do Brasil in natura, polpa congelada e ainda na forma de suco. São fonte de ácido ascórbico, potente antioxidante, e pectina, que é utilizada na indústria e também é importante fibra alimentar. A pesquisa teve como objetivo quantificar o ácido ascórbico em frutas cítricas, laranjas e tangerinas comerciais, comparando tamanhos e variedades. O teor de ácido ascórbico foi medido no suco comparando os tamanhos, variedades e condições de estocagem, usando método de titulação com 2,6-diclorobenzenoindofenol. A pectina total e solúvel foi quantificada em partes da fruta (casca, albedo, polpa e suco), sendo usado como padrão o ácido poligalacturônico. Foram encontradas diferenças entre tamanhos. As maiores quantidades de vitamina C foram encontradas nas laranjas (variedade Bahia). Comparando as temperaturas de estocagem, a maior perda ocorreu à temperatura ambiente. O albedo apresentou a maior quantidade de pectina em todos os frutos. No suco, o total de pectina solúvel e insolúvel aumentou com a diminuição do tamanho dos frutos. Citric fruits - in natura, as frozen pulp or even as juice - are one of the most important Brazilian exportation products. They are a source of ascorbic acid - a potent antioxidant, and pectin, which is used in the food industry and is an important dietary fiber. This project aims to quantify ascorbic acid and pectin contents in citric fruits, commercial oranges and tangerines, comparing them in sizes and varieties. Ascorbic acid amount was measured in juice comparing sizes, varieties and storage conditions, using a tritimetric method with 2.6-dichlorobenzenoindophenol indicator. Total and soluble pectin in each part of the fruits (peel, albedo, pulp and juice) were quantified using the polygalacturonic acid as a standard. Differences were found between the sizes. The highest content of vitamin C was found in the oranges (Bahia variety). Comparing the storage temperatures, the biggest loss was at room temperature. Albedo presented the highest content of pectin in all fruits. In juice, the total and soluble pectin contents increased as fruits size decreased. O objetivo da pesquisa foi determinar a disponibilidade de ferro proveniente de alimentos e de medicamentos e sua combinação. Foi determinada a disponibilidade de ferro na presença de vitamina A em alimentos - feijão comum (B), fígado bovino (Li) e cenoura (C) - e em medicamentos - Fer-In-Sol® (Fer) (Mead Johnson), Arovit® (A) (Roche) e Neutrofer® (N) (Sigma Pharma) - bem como na combinação de ambos. β-caroteno, vitamina A, ferro total, ferro heme e não heme, porcentagem teor e diálise de ferro foram determinados. A vitamina A e β-caroteno têm efeito positivo na porcentagem de diálise de ferro. A cenoura e o fígado têm melhor disponibilidade de ferro que os medicamentos em concentrações similares. Portanto, conclui-se que existe a influência de vitamina A sobre a diálise de ferro, sendo as misturas que contêm fígado as que apresentaram as maiores concentrações de diálise de ferro, e que, de acordo com as quantidades de ferro necessárias diariamente recomendadas para consumo, elas são recomendadas.

The objective of this work was to verify the availability of iron in the presence of vitamin A as components of foods and in combinations with medicines. The iron available was measured in the presence of vitamin A in foods - common bean (B), beef liver (Li) and carrot (C) - and medicines - Fer-In-Sol® (Fer) (Mead Johnson), Arovit® (A) (Roche) and Neutrofer® (N) (Sigma Pharma) - as well as in combinations of both. β-carotene, vitamin A, total iron, heme and non heme iron, percentage of dialyzable iron and amount of dialyzable iron was determined. Vitamin A and β-carotene had a positive effect on the percentage of iron dialysis. Carrot and liver had a better percentage of dialyzable iron than their respective medicine at similar concentrations. Therefore, we can conclude that there has been an influence of vitamin A over the dialysis of iron, being the mixtures containing liver the ones which achieved the highest concentrations of dialyzable iron, and also that, according to the amounts needed to obtain the daily recommended intake of iron, they are good for consumption.

A disponibilidade de ferro na dieta é importante porque a deficiência de ferro atinge grande número de pessoas no mundo. A matrix em que o ferro está tem influência na disponibilidade. A presença de β-caroteno altera a disponibilidade do ferro. Essa pesquisa teve por objetivo avaliar a disponibilidade de ferro na presença de β-caroteno nas misturas: M1 = ovo e abóbora; M2 = espinafre e abóbora; M3 = espinafre e couve; M4 = ovo e couve; M5 = espinafre e cenoura; M6 = ovo e cenoura; M7 = feijão e cenoura; M8 = feijão e abóbora; e M9 = feijão e couve. Após cocção, foram determinadas a composição centesimal, taninos, ácido fítico, ácido oxálico, ferro, β-caroteno e disponibilidade de ferro in vitro e foi utilizado teste de Tukey (5%). O teor de ácido oxálico não apresentou diferença estatística significativa. Para taninos, o maior resultado foi para M2 e M5 (espinafre), e, para ácido fítico, misturas com feijão (M7, M8 e M9) e M2 com espinafre. M5 e M7 (cenoura) apresentaram mais β-caroteno que as outras. M6 apresentou o melhor resultado para disponibilidade. Correlação positiva foi verificada entre proteína e diálise de ferro e, entre lipídios e diálise de ferro. A fibra alimentar foi fator de inibição da disponibilidade. Misturas com presença de ovo apresentaram maior disponibilidade de ferro

Iron availability in the diet is very important because iron deficiency affects a large population in the world. The matrix where iron is present has an influence in its availability. The presence of β-carotene is a factor that alters the availability of iron. This research aims to estimate the iron availability in the presence of β-carotene in food mixtures: M1 = egg and pumpkin; M2 = spinach and pumpkin; M3 = spinach and cabbage; M4 = egg and cabbage; M5 = spinach and carrot; M6 = egg and carrot; M7 = bean and carrot; M8 = bean and pumpkin and M9 = bean and cabbage. After cooking, the following figures were determined: proximate composition, oxalic acid, phytic acid, tannin, iron, iron availability in vitro and β-carotene. The data were analyzed by Tukey test (5%). There were no significant statistical differences for oxalic acid. Tannin presented greater results in mixtures with spinach (M2 and M5); phytic acid was greater in bean samples (M7, M8 and M9) and with spinach (M2). Mixtures M5 e M7, with carrot, presented more β-carotene than the others. The best result for iron availability appeared in mixture (M6). A positive correlation was verified between protein and iron dialysis, and between lipids and iron dialysis. Dietetic fiber was an inhibitor to iron availability. Mixtures with egg showed greater iron availability

O objetivo geral deste trabalho foi elaborar formulados alternativos à base de mistura de alimentos convencionais provenientes da cesta básica distribuída por entidades do município de Piracicaba-SP, entre outros alimentos, com o intuito de suplementar a alimentação enteral de idosos. Os alimentos utilizados para elaboração dos formulados foram fubá, óleo de soja, arroz, feijão, macarrão, sardinha, leite em pó, amido de milho, ovos, proteína texturizada de soja, couve-manteiga e cenoura. Foram realizadas análises químicas: composição centesimal, digestibilidade de proteína, determinação do mineral ferro, diálise de ferro in vitro, determinação de β-caroteno e fatores antinutricionais, assim como fenólicos totais e ácido fítico; e análise de custos dos formulados. Os resultados obtidos foram submetidos às análises estatísticas empregando o teste de Tukey e análises de regressão. Concluiu-se com este estudo que os formulados líquidos apresentaram os melhores resultados nutricionais e viabilidade econômica. Dentre estes, podem-se eleger duas alternativas. O formulado F3 se destacou na disponibilidade de ferro, quantidades de β-caroteno e digestibilidade. O formulado F4 se destacou na distribuição do valor calórico total de macronutrientes. Os formulados contribuem com percentual médio de 20% de adequação para idosos, quando ingeridas duas porções de 250 mL/dia de formulados líquidos ou em pó.

The aim of this study was to develop alternative formulas for elderly enteral feeding using conventional foods from food staples distributed in the city of Piracicaba-SP. The foods used in the formulas were: corn meal, soybean oil, rice, beans, pasta, sardine, powder milk, corn starch, eggs, textured soy protein, cabbage, and carrot. Chemical analyses (centesimal composition, protein digestibility, iron determination, iron dialyses in vitro, β-carotene determination, anti-nutritional factors - tannins, and phytate) and cost analyses were carried out. The results were analyzed statistically using the Tukey test and regression. Liquid formulas presented better nutritional and economical viability. According to the elderly clinical needs, two alternatives are suggested among the liquid formulas tested. Formula F3 for its iron availability, quantity of β-carotene, and digestibility and formula F4 for is for the total calorie distribution of macronutrients as well as for having a higher number of calories. The formulas achieved 20% adequacy when two servings of 250 mL/day (powder or liquid) were ingested.

A irradiação gama é eficiente para eliminar a contaminação fúngica em grãos de amendoim. Este apresenta proteínas de alto valor biológico, minerais, vitaminas E, complexo B e alta concentração de lipídios. Este trabalho teve como objetivo avaliar o efeito da aplicação de radiações gama na cor, fenólicos totais, atividade antioxidante e perfil de ácidos graxos em amendoim (Arachis hypogaea L.). Os cultivares IAC-Tatu ST e IAC-Runner 886 foram submetidos a radiações gama com doses de 5,0; 7,5; 10,0; e 15,0 kGy e armazenados em temperatura ambiente. Não foram verificadas diferenças significativas na cor dos amendoins IAC-Tatu ST. Diferenças significativas foram detectadas para a luminosidade e o Croma do IAC-Runner 886. Os fenólicos totais diferiram significativamente entre o controle com 33,27 mg.g-1 e o tratamento com 10,0 kGy com 58,60 mg.g-1 no IAC-Tatu ST, neste parâmetro não foram observadas diferenças significativas no IAC-Runner 886, cujo controle foi 51,59 mg.g-1. Para atividade antioxidante não foi verificada diferença significativa com a dose de 10,0 kGy, recomendada para eliminação fúngica de amendoim. Na dose de 10,0 kGy, verificou-se a diminuição de ácidos graxos saturados, o aumento dos insaturados e o aumento de ácido linoleico. A relação oleico/linoleico diminuiu, justificando novos estudos correlacionando armazenamento e estabilidade oxidativa.

Irradiation is efficient at extincting fungi contamination in peanuts. Peanuts have high biologic value protein, minerals, vitamin E, complex B, and high concentration of lipids. The objective of this research is to evaluate the gamma irradiation effect on color, total phenolic, antioxidant activity, and fatty acid profile in peanuts (Arachis hypogaea L.). Cultivars IAC-Tatu ST and IAC-Runner 886 were submitted to gamma radiation with doses of 5.0; 7.5; 10.0, and 15.0 kGy and storage at room temperature. There was no significant difference in the color of IAC-Tatu ST. However, significant difference was found in the luminosity and Chroma in IAC-Runner 886. Total fenolics differed from the control with 33.27 mg.g-1 and treatment dose of 10.0 kGy with 58.60 mg.g-1 in IAC-Tatu ST. This parameter not had significant difference in IAC-Runner 886 and the control with 51.59 mg.g-1. The antioxidant activity did not present significant difference with a dose of 10.0 kGy, recommended for the elimination of fungi in peanuts. The dose of 10.0 kGy showed a decrease in saturated fatty acids, increase in unsaturated fatty acids, and an increase in linolleic acid. The oleic/linoleic relation decreased justifying further research correlating storage and oxidative stability.

O leite bovino é um alimento de grande importância com fonte de cálcio e proteínas. O objetivo deste trabalho foi o de avaliar os efeitos da radiação gama proveniente do 60Co sobre a disponibilidade de cálcio e o aspecto sensorial. O leite utilizado foi embalado em sacos para leite conforme o encontrado no comércio. As amostras foram submetidas à radiação gama nas doses 0,1, 0,5, 1,0, 2,0 e 3,0 kGy e ficaram armazenadas a 4 °C, e suas avaliações ocorreram nos 1º, 4º, 7º e 10º dias de armazenamento. Foi avaliado o teor de cálcio e a composição centesimal do leite logo após sua obtenção. A diálise de cálcio in vitro foi realizada nos diferentes tempos de armazenamento. Nas duas doses, com pH mais estável na menor dose de radiação e uma dose abaixo, 0,5 e 1,0 kGy, foi realizada análise sensorial. A análise dos dados foi feita empregando teste de Tukey (5%). Quanto à análise físico-química, as amostras irradiadas melhoraram a disponibilidade do cálcio sendo a dose mais adequada a de 1 kGy devido a sua maior estabilidade do pH no período de 10 dias, porém sensorialmente as amostras não foram bem aceitas.

Milk is an important food because it is rich in calcium and proteins. The objective of this research was to evaluate the effect of gamma radiation from 60Co on the calcium availability and sensorial aspects. The milk samples were packed in bags similar to those used for commercial products. The samples were submitted to gamma radiation at doses of 0.1, 0.5, 1.0, 2.0 and 3.0 kGy and stored at 4 °C with evaluations on the 1st, 4th, 7th, and 10th days of storage. The calcium amount and centesimal composition were evaluated at the beginning of the study. Calcium dialyzis in vitro was performed at different times of storage. Sensorial analysis was conducted on two doses with amore stable pH under the lowest radiation dose and the second lowest radiation dose, 0.5 and 1.0 kGy, respectively. Data analysis was conducted using the Tukey test (5%). Physicochemical analysis showed an increase in calcium availability, and the most adequate dose found was 1 kGy due to its highest pH stability in the period of 10 days, but the sensorial analysis showed that the samples were not well accepted by the testers.

O feijão é um alimento de importância na dieta dos brasileiros, sendo consumido com frequência. Além de sua importância proteica e de carboidratos contém também compostos bioativos que são essenciais para a manutenção da saúde dos indivíduos. Esses compostos podem se alterar com a estocagem e com a cocção, resultando em modificações de suas propriedades de ligação. A pesquisa teve por objetivos medir a capacidade de hidratação e o tempo de cocção antes e após o armazenamento e avaliar os teores de taninos em feijão comum, cultivar Pérola e a interferência desses compostos na digestibilidade de proteínas, estes parâmetros foram avaliados em feijões recém-colhidos e armazenados durante 3 e 6 meses, antes e após cocção. Para tanto, foram avaliados absorção de água, tempo de cocção em grãos de feijão antes e após armazenamento e composição centesimal dos grãos antes e após cocção. O teor de taninos diminuiu com a cocção e com o tempo de armazenamento; a digestibilidade aumentou com o tempo de armazenamento; a absorção de água diminuiu com o tempo de armazenamento; o tempo de cocção aumentou; e a composição centesimal apresentou diferença em relação à umidade e ao teor de fibra alimentar. Portanto foram obtidas alterações significativas para os parâmetros avaliados tanto para a cocção como para o tempo de armazenamento dos grãos de feijão comum, cultivar Pérola.

Bean is one of the most important components of the Brazilian diet, and it is consumed frequently. It has been proven to be source of protein and carbohydrates and contains bioactive compounds that are essential for people´s heath. These compounds can undergo changes as a result of storage and cooking leading to modifications in their bonding properties. The objectives of this research are to determine the common bean cultivar Perola's water absorption capacity and its cooking time before and after storage and to evaluate its content of tannin. The effect of these compounds on the protein digestibility of post-harvested beans and beans stored for 3 and 6 months at room temperature before and after cooking was also investigated. The water absorption capacity and cooking time were determined before and after storage of 3 and 6 months; the proximal composition of the grains was determined before and after cooking. The content of tannin decreased after cooking and with storage. The protein digestibility increased with storage. The water absorption capacity decreased with storage; the cooking time increased and the proximal composition of the grains presented difference in terms of moisture and content of alimentary fiber before and after cooking. Therefore, it can be said that significant changes in terms of cooking and storage occurred in the parameters of the common bean cultivar Perola grains evaluated.

A pesquisa teve por objetivo avaliar a variação do teor de vitamina C em diferentes variedades de laranjas e tangerinas de significado comercial no Brasil, como também medir a capacidade antioxidante destes citros. Foram realizadas análises para avaliação do índice de maturação no suco dos citros, como pH, sólidos solúveis totais e acidez total titulável, e foram determinados os teores de vitamina C e capacidade antioxidante, sendo os dados comparados para verificar as diferenças pelo teste de Tukey (p < 0,05). As tangerinas apresentaram teores de vitamina C e capacidade antioxidante menores que as laranjas. Os teores de vitamina C variaram entre 21,47 e 84,03 mg ácido ascórbico.100 mL-1 de suco, apresentados, respectivamente, pela tangerina-murcote e laranja-natal. A tangerina-murcote também apresentou a menor capacidade antioxidante (12,78%) e a maior capacidade antioxidante foi da laranja-lima (66,24%). Conclui-se que as diferentes variedades de laranjas e tangerinas possuem variação significativa nas variáveis analisadas, sendo que as laranjas apresentaram os maiores teores de vitamina C e capacidade antioxidante.

The objective of this research was to evaluate the variation of vitamin C in different commercial varieties of oranges and tangerines in Brazil and to measure the antioxidant capacity of these citrus. The analyses done for the evaluation of the maturity index of the citrus juices were pH, total soluble solids,and total tritimetric acidity. The antioxidant capacity of vitamin C was also quantified. The data obtained was submitted to statistical analysis using the Tukey test (p < 0.05). The tangerines presented lower levels of vitamin C and lower antioxidant capacity than the oranges. The vitamin C content of the the Murcot tangerine and Natal orange varied between 21.47 and 84.03 mg ascorbic acid .100 mL-1 juice, respectively. The Murcot tangerine exhibited the smallest antioxidant capacity (12.78%), and the sweet orange exhibited the largest antioxidant capacity (66.24%). The conclusion was that the different varieties of oranges and tangerines had a significant variation in the variables analyzed, and that the oranges presented the largest levels of vitamin C and the largest antioxidant capacity.

O crescimento nacional da produção de carne de coelhos necessita de maior conhecimento sobre características da carne, bem como o efeito de um processo que permita sua maior conservação. Os cortes congelados da carne de coelho: coxa, pernil e lombo, tratados com dois tipos de antibióticos, norfloxacina e ciprofloxacina, foram irradiados nas doses de 0, 3 e 6 kGy e determinados os teores de ferro heme e não heme dos cortes. As doses de irradiação empregadas foram influentes nos teores de ferro heme e não heme, sendo que a dose de 3 kGy foi a que apresentou os maiores valores, independente do tipo de antibiótico utilizado. Para o ferro heme o antibiótico norfloxacina apresentou os maiores valores e para o ferro não heme os maiores valores foram notados para o antibiótico ciprofloxacina.

The growth in national production of rabbit meat demands greater knowledge of the characteristics of the meat, as well as the effects of a process that allows greater conservation of the meat. Frozen cuts of rabbit meat: thigh, ham and loin, treated with two types of antibiotics (norfloxacyn and ciprofloxacin), were irradiated in doses of 0, 3 and 6 kGy, and the levels of heme and nonheme iron in the cuts were determined. The irradiation doses employed were influential on the levels of heme and nonheme iron, and the dose of 3 kGy was the one that presented the largest values, independent of the type of antibiotic used. For heme iron, the antibiotic norfloxacyn presented the largest values and for nonheme iron the largest values were noted for the antibiotic ciprofloxacyn.

O processo de irradiação é um método eficiente de conservação de alimentos, pois reduz o número de microrganismos patogênicos e deteriorantes. Com doses baixas, as características organolépticas e nutricionais do alimento não são alteradas significativamente, principalmente quando são controlados outros fatores como, por exemplo, a embalagem. Os objetivos deste trabalho foram avaliar a cor, capacidade de retenção de água (CRA) e formação de bases voláteis na carne de cordeiros Santa Inês tratados com diferentes dietas e doses de radiação. Amostras de carne de cordeiro tratados com diferentes dietas - controle, TAC1, TAC2 (taninos altamente condensados) e sorgo - foram embaladas a vácuo e, excetuando-se a controle (sem irradiação), irradiadas nas doses 2 e 4 kGy e armazenadas por 15 dias à temperatura de 4 °C. As medidas de a* (redness) e b* (yelowness) não sofreram influência das diferentes dietas e doses empregadas no experimento. Os valores de L* (lightness) se mostraram diferentes para dietas no controle (sem irradiação) e na dose 2 kGy, mas, quando comparados os efeitos das doses em cada dieta, estas não apresentaram diferenças. Os valores de H e C calculados não mostraram diferenças estatísticas. O tempo de armazenamento influenciou as medidas de a*, b* , L, H e C. A irradiação diminuiu os teores de bases voláteis e CRA, porém o tempo de estocagem aumentou-os.

The irradiation process is an effective method for food preservation because it reduces the pathogenic and/or the number of deteriorating microorganisms. The use of low doses did not alter the organoleptic and sensorial food characteristics significantly, especially when other factors such as packaging are considered. The objective of this work is to evaluate the color, water holding capacity (WHC), and formation of volatile bases in the meat of Santa Ines lambs treated with different diets and radiation doses. Lamb samples treated with different diets: control, TAC1, TAC2 (tannins highly condensed), and sorghum were vacuum wrapped, irradiated in the doses 2 and 4 kGy and control (without irradiation), and stored under 4 °C for 15 days. The values of a* (redness) and b * (yellowness) were not influenced by the different diets and doses used in the experiment. The values of L* (lightness) differed statistically for the control diets (without irradiation) and for 2 kGy dose diet. However, the effects of the doses in each diet were not different. The values of H and C values obtained did not show statistical differences. The storage time influenced the measures of a*, b*, L, H, and C. The irradiation reduced the levels of the volatile bases and water holding capacity (WHC) although these parameters were increased due to the storage time.

O ovo é o produto de eficiente transformação biológica feita pela galinha (Gallus gallus) de postura, com alta qualidade nutricional para o consumo humano. Na gema do ovo encontra-se a proteína denominada fosvitina, que atua como carreadora do ferro se ligando a ele. A deficiência de ferro ocorre normalmente devido ao consumo insuficiente de alimentos fontes de ferro ou à baixa biodisponibilidade. O objetivo da pesquisa foi verificar a concentração de proteínas, em especial a fosvitina/lipovitelina presente em gemas de ovos crus e cozidos nos diferentes ciclos de postura (inicial, intermediário e final) e avaliar a interferência desta proteína na disponibilidade do micronutriente ferro. Os tratamentos foram realizados em diferentes períodos e utilizaram ovos crus e cozidos, sendo gemas cruas de poedeiras em início, meio e fim de postura e gemas cozidas nos três ciclos de postura. Foram realizadas as análises de composição centesimal, concentração de ferro total e dialisável, concentração de proteínas em gemas e eletroforese em gel de poliacrilamida (SDS-PAGE). Houve diferença na concentração de proteínas e diferentes níveis de ferro dialisável nos três ciclos de postura, porém em gemas cruas e cozidas. Com o passar dos ciclos (inicial, intermediário e final), as poedeiras mais velhas, apresentaram ovos (gemas) com um teor mais elevado de ferro disponível, porém uma quantidade inferior de proteínas em especial a fosvitina/lipovitelina, comparando-se com os ciclos inicial e intermediário. A disponibilidade de ferro foi mais elevada em gemas que passaram pelo processo de cocção, porém em poedeiras de postura final.

The egg is the product of efficient biological transformation made by a laying hen. It has high nutritional value for human consumption. Most of the iron in egg yolk is bound by phosvitin, a major protein present in the egg yolk. Iron deficiency normally occurs due to insufficient intake of dietary iron or its low the bioavailability. The objective of this research was to verify the protein concentration, specially the phosvitin/lipovitelin in egg yolks of raw and cooked eggs in different posture cycles (initial, intermediate, final), and to evaluate the interference of this protein in the availability of the iron micronutrient. The treatments were carried in different periods using raw and cooked eggs. The yolks of raw eggs of laying hens were used in the initial, intermediate and final phases of posture and yolks of cooked eggs in the three posture cycles. Analyses of proximal composition, concentration of total and available iron, protein concentration in egg yolks, and eletrophoresis in poliacrilamida (SDS-PAGE) were performed. There was difference in the protein concentration and in the levels of iron availability in the three posture cycles. After running through the cycle (initial, intermediate, and final), the eggs yolks of the older hens presented an increased amount of available iron and lower amount of proteins, specially the fosvitin/lipovitelin, if compared to the initial and intermediate cycles. The highest iron availability content was found in cooked egg yolks and in hens in the final posture cycle.
