Abstract The aim of this study was to evaluate the effect of combining grape (Vitis vinifera L.) peel flour (GPF) and the colored sorghum BR305 (brown) flour (CSF) by extrusion and the consequent impact on antioxidants in the final product. The physical properties and bioactive compounds of both raw GPF and blended GPF/CSF extruded materials were investigated. The results before extrusion of raw materials, the antioxidants by ORAC the CSF was 89.111 ± 0.25; GPF before drying 321.033 ± 0.21; GPF flour after drying was 311.022 ± 0.30 µmol Trolox.g−1, respectively. Considering the different treatments (10, 15 and 20% of GPF), the highest values of the compounds obtained: Antioxidant activity, ORAC, was 37.889 ± 0.32 (µmol Trolox.g−1); with 15% of GPF, at 120 °C and 17% moisture processing. ABTS, 12.222 ± 0.14 (µmol Trolox.g−1); with 20% GPF at 140 °C and 19% moisture processing as best processing conditions. Anthocyanins 138.31 ± 0.11 (mg cyanidin-3-glucoside 100 g−1); Total phenolic 307.95 ± 0.11 (mg catechin.100 g−1). The water absorption index was 38.99 ± 0.19, g of gel.(g dry matter)−1 perhaps are sufficient for the preparation of beverages for breakfast or in porridge in order to contribute to the health of the consumer.

RESUMO A jabuticaba é uma fruta com alto potencial nutricional com efeitos benéficos para a saúde. No presente trabalho se estudou a otimização da extração de compostos fenólicos (PhC) da casca de jabuticaba liofilizada (FJP) em função do tempo de agitação (ST) e volume de solvente (SV), e se estudou o efeito edáfico na composição físico-química da FJP provenientes de cinco pomares. No primeiro estágio se aplicou um desenho central composto de 2 fatores e 2 níveis, combinado com a Metodologia de Superfície de Resposta e função desejabilidade. No segundo estágio se aplicou análise de variância para investigar o efeito edáfico nas respostas. Foram analisados os fenóis totais (Tph), taninos (Ta), antocianinas monoméricas totais (TMA), índice de cor (CI) e tonalidade (Ton). Um modelo polinomial de segunda ordem foi utilizado para prever os dados do primeiro estágio. Os dados do segundo experimento foram avaliados por meio de análise de variância, teste de Tukey e teste t. As condições ótimas para a extração de PhC foram 64 mL e 75 min. Nestas condições, as respostas preditas corresponderam a 33,5, 7,91 e 5,57 mg g-1 e 0,893 u.a. e 0,833 de Tph, Ta, TMA, CI e Ton, respectivamente. De acordo com o tipo de solo, diferentes valores de PhC foram encontrados nos extratos de FJP. Em solos pobres em nutrientes foram encontrados níveis elevados de PhC, alto CI e baixa Ton.

ABSTRACT Jaboticaba is a fruit with high nutritional potential with beneficial effects for health. The aims of this work were the optimization of the extraction of phenolic compounds (PhC) from freeze-dried jaboticaba peel (FJP) as a function of the stirring time (ST) and solvent volume (SV) and to study the edaphic effect on the physical-chemical composition of FJP from five orchards. In the first stage, a 2-factor, 2-level central composite designs combined with the Response Surface Methodology and desirability function was used. In the second stage, a one-way analysis of variance was used to investigate the edaphic effect on the responses. Total phenols (Tph), tannins (Ta), total monomeric anthocyanins (TMA), color index (CI) and tone responses (Ton) were analyzed. A second-order polynomial model was used for predicting of the first stage dates. The data from the second experiment were evaluated using analysis of variance, Tukey’s test, and t-test. The optimal conditions for the PhC were 64 mL and 75 min. Under the optimum conditions, the corresponding predicted response values for PhC were 33.5, 7.91, and 5.57 mg g-1 and 0.893 u.a. and 0.833 for Tph, Ta, TMA, CI, and Ton, respectively. According to the type of soil, different PhC values were found in FJP extracts. In nutrient-poor soils, highest levels of PhC, high CI and low tone were found.

RESUMO: O ultrassom é considerado uma tecnologia limpa, por possibilitar menor gasto de energia, de substâncias químicas e menor geração de efluentes. Além disso, proporciona menor tempo de processamento e reduz a necessidade de aplicação de calor em vários processos. Por isso, tem sido alvo de pesquisa e desenvolvimento na indústria de alimentos, tanto para substituir, quanto para aperfeiçoar ou acelerar técnicas convencionais de processamento. Dentre as diferentes possibilidades de utilização na indústria de alimentos, o ultrassom pode ser considerado uma alternativa para substituir ou reduzir a utilização de substâncias químicas em processos de extração ou modificação de amidos. Quando utilizado na extração, possibilita maior pureza do amido obtido. Já na modificação, algumas alterações nos grânulos de amido podem ser provocadas pelo ultrassom, mas dependem da origem botânica, da composição do amido, dos parâmetros do equipamento e das condições de processamento.

ABSTRACT: Ultrasound is considered a clean technology, because it allows lower energy and chemicals compounds consumption as well as lower generation of waste. Furthermore, it provides shorter processing time and reduces the need for heat application in various processes. Therefore, this technology has been studied in the food industry to replace, improve or accelerate conventional processing techniques. Among the different possibilities of use in the food industry, ultrasound might be considered as an alternative to replace or reduce the use of chemicals during the extraction processes or modification of starches. When used in the starch extraction allows a greater purity of the final product. Towards the modification some changes in the starch granules can be caused by ultrasound, but it depends on the botanical source and starch composition, equipment's parameters and processing conditions.

Filmes provenientes de biopolímeros (polissacarídeos e proteínas) apresentam-se como alternativa ao uso de derivados petroquímicos, possibilitando a formação de matrizes contínuas, e a otimização de parâmetros como pH e tipo de plastificante pode resultar em materiais com propriedades melhoradas. Neste estudo, filmes de amido de mandioca produzidos por casting foram avaliados quanto a adição de extrato proteico de soja (EPS), glicerol e pH do meio. O aumento da concentração de EPS levou ao escurecimento dos filmes, ao aumento da solubilidade e aumentou o pH. O maior teor de plastificante e o menor pH elevaram a permeabilidade ao vapor de água (PVA). A menor PVA (0,057 g mm h-1 m-2 kPa-1) foi obtida com máximo teor de EPS (47%) e 13% de glicerol em pH 12. A força de perfuração variou de 0,08 a 2,78 N, sendo os maiores valores com adição de EPS e glicerol em nível intermediário (30%) em pH neutro. A maior deformação na perfuração (31,9%) ocorreu no teor de EPS mais baixo (13%) e de glicerol mais alto (47%). Considerando-se os fatores desejáveis: baixa PVA, baixa solubilidade e boa resistência mecânica, os filmes produzidos com 15,2% de EPS, 29,2% de glicerol em pH 6,1 foram os que mais bem atenderam a estas características.

Films from biopolymers (polysaccharides, proteins) are an alternative to the use of petrochemical derivatives, with possible formation of continuous matrices. Upon optimizing parameters such as pH and type of plasticizer, one may obtain materials with improved properties. In this study, cassava starch films produced by casting were evaluated concerning soybean protein extract (SPE) content, glycerol and varied pH conditions. Upon increasing the concentration of SPE, the films became darker, more soluble and the pH increased. The higher plasticizer content and the lower pH increased the water vapor permeability (WVP). The lowest WVP (0.057 mm g mm h-1 m-2 kPa-1) was obtained at the maximum content of SPE (47%) and 13% glycerol at pH 12. The puncture force ranged from 0.08 to 2.78 N and the highest values were obtained with intermediate level of SPE and glycerol (30%) at neutral pH. The highest puncture deformation value (31.9%) occurred at the lowest SPW content (13%) and highest glycerol content (47%). Considering as the desirable factors: low WVP, low solubility and good mechanical strength, one concludes that the films produced from cassava starch with 15.2% of EPS, 29.2% of glycerol at pH 6.1 exhibited the best performance.

Edibles films are an alternative to synthetic materials used for packing food products. Barbados cherry is rich in vitamin C and carotenoids. The aim of this study was to characterize and develop films by casting from cassava starch, lyophilized Barbados cherry pulp and glycerol. The films were characterized with respect to thickness, water vapor permeability (WVP), water solubility, vitamin C, carotene and mechanical properties. The interaction of pulp and glycerol reduced film thickness. An increase in pulp concentration up to 60% increased WVP but beyond this concentration reduced both WVP and solubility leading to an increased level of vitamin C and β carotene in the films.

Determinaram-se as propriedades termodinâmicas (entalpia diferencial, entropia diferencial, entalpia integral e entropia integral) do amido de rizomas do lírio-do-brejo (Hedychium coronarium) por meio de isotermas de adsorção de água. As isotermas foram determinadas em atividades de água no intervalo de 0,11 a 0,84, sob temperaturas que variaram de 30 a 50 °C. A Equação de GAB, que se ajustou bem às isotermas experimentais, foi utilizada para estimar as propriedades termodinâmicas de adsorção. As isotermas apresentaram ligeira inversão, indicando a precença de amido danificado. A entalpia diferencial e a entropia diferencial aumentaram com a diminuição da umidade de equilíbrio e correlacionaram entre si confirmando a compensação química linear. Um modelo exponencial do tipo Y = b.e(a/Xe) descreveu adequadamente a dependência destas propriedades diferenciais ao teor de umidade de equilíbrio. A entalpia integral e a entropia integral aumentaram continuamente com o teor de umidade de equilíbrio, porém com valores negativos para a entropia integral. Estas propriedades termodinâmicas de adsorção de água demonstraram que o amido extraído dos rizomas do lírio-do-brejo possui baixa higrocopicidade apesar da ocorrência de grânulos de amido danificados.

Thermodynamic properties where determined (differential enthalpy, of differential entropy, integral enthalpy, and integral entropy) of the starch of rhizomes of swamp lily through water adsorption isotherms. The isotherms were determined in water activities in the range of 0.11 to 0.84, in temperatures ranging from 30 to 50 °C. The GAB equation which fits well to the experimental isotherms was used to estimate the properties of thermodynamic adsorption. The slight reversal of the isotherms indicates damaged starch. The enthalpy and entropy differential gap increased with the decrease in moisture and correlated to each other confirming the chemical linear compensation. An exponential model type Y = b.e(a/Xe) described adequately the dependence of these properties differential on the moisture content of balance. The integral enthalpy and entropy increased continuously with the moisture content of balance but presented negative values for the integral entropy. These thermodynamic properties of water adsorption showed that the starch extracted from the rhizomes of swamp lily has low hygroscopicity despite the occurrence of damaged starch granules.

A mistura de trigo e soja representa uma importante fonte calórico-protéica com proteínas de boa qualidade. Apesar disso, a utilização da soja como ingrediente tem sido limitada pelo seu sabor de feijão cru (beany flavor), o qual é melhorado pelo processo de extrusão. Foram estudados os efeitos de umidade da mistura, Temperatura de Barril (TB) e Velocidade de Rotação de Parafuso (VRP, Nº 5) do extrusor no Índice de Expansão (IE), no Índice de Solubilidade em Água (ISA) e nas características sensoriais de pellets produzidos com mistura de trigo e soja (90:10), objetivando a otimização deste processo para a obtenção de pellets fritos com melhores qualidades sensoriais. A farinha mista crua foi extrusada em 2 umidades (32 e 35%), 4 TB (60 a 90 °C) e 4 VRP (60 a 150 rpm), totalizando 32 tratamentos. O pellet frito, preparado com a farinha mista com 32% de umidade e extrusada em 60 rpm a 80 °C, apresentou o maior IE e as melhores qualidades sensoriais (aparência, sabor e textura), sendo preferido pela equipe de provadores não treinados, tanto com sabor de bacon como com sabor de queijo.

The mixture of wheat with soybean represents an important calorie-protein source with good protein quality. In spite of this, the use of soybeans as an ingredient has been limited by their beany flavor, which is improved by the extrusion process. Effects of mixture moisture, Barrel Temperature (BT) and Screw-Speed (SS, Nº 5) on Expansion Index (EI), Water Solubility Index (WSI) and sensory characteristics of pellets produced with a wheat-soybean (90:10) mixture were studied, in order to optimize this process for obtaining fried pellets with better sensory qualities. Raw mixed flour was extruded at two moisture contents (32 and 35%), four BT (60 to 90 °C) and four SS (60 to 150 rpm), totalizing 32 treatments. The fried pellets, prepared with the mixed flour with 32% moisture and extruded at 60 rpm and 80 °C, presented the greatest EI and the best sensory qualities (appearance, flavor and texture), being the most preferred by the untrained consumer-type panelists, both with bacon flavor, as with cheese flavor.

Com o objetivo de obter uma farinha pré-cozida de trigo e soja (90:10) com boas características tecnológicas para uso em croquete de carne, foram estudados efeitos de parâmetros da extrusão na capacidade emulsificante (CE) e na estabilidade de emulsão (EE) das farinhas obtidas, e nas características sensoriais do produto elaborado. A mistura foi extrusada em diferentes umidades (23, 26 e 29%), temperaturas de barril (TB: 100, 110, 120 e 130 °C) e velocidades de rotação de parafuso (VRP: nº 4; 120, 150, 180 e 210 rpm). Os resultados indicam que o aumento de VRP e TB aumentou CE e EE até certo ponto, que, ao ser ultrapassado, as fez diminuir. O croquete de carne elaborado com farinha mista com 26% de umidade e extrusada em 150 rpm a 130 °C mostrou melhores sabor e textura, sendo o preferido pela equipe massal de provadores não treinados ao compará-lo com aqueles da farinha de trigo crua e da farinha mista crua. As características sensoriais dos croquetes estudados foram relacionadas com CE e EE das farinhas usadas, sendo que a EE mostrou um efeito mais acentuado do que a CE.

To obtain precooked wheat-soybean flour (90:10 ratio) with good technological characteristics for use in beef croquettes, a study was made of the effects of extrusion parameters on the product’s emulsifying capacity (EC), emulsion stability (ES), and sensory characteristics. The mixture was extruded with different moisture contents (23, 26 and 29%), barrel temperatures (BT) (100, 110, 120 and 130 °C) and rotation screw speeds (SS) (Nº 4; 120, 150, 180 and 210 rpm). The results indicate that the increase of SS and BT increased the EC and ES up to certain point, after which the EC and ES declined. Beef croquettes made of the mixed flour containing 26% of moisture and extruded at 150 rpm and 130 °C showed the best sensory characteristics (flavor and texture), and were preferred by the untrained tasters when compared with croquettes made of raw wheat flour and raw mixed flour. The sensory characteristics of the croquettes were related to the EC and ES of the flours, with ES showing a stronger effect than EC.

Estudaram-se as características de farinha de bagaço de jabuticaba fermentado e algumas propriedades funcionais (índice de expansão e índice de solubilidade) dos extrusados elaborados a partir deste bagaço e arroz, em proporções que variaram de 11,59 a 25% (bagaço/arroz). A farinha de bagaço de jabuticaba fermentado foi avaliada quanto à distribuição do tamanho de partícula, cor, sabor e aroma, composição centesimal, minerais e fibras. Algumas das características desta farinha foram comparadas com as das farinhas de bagaço de jabuticaba doce (sem fermentar) e arroz polido. O extrusor utilizado para obtenção das farinhas pré-gelatinizadas constituiu-se em um único parafuso com taxa de compressão de 1:3, com rotação variável (65,90 a 234,10 rpm). Usou-se uma matriz circular de 3 mm e uma taxa de alimentação de 5 kg/h. As temperaturas da 1ª e 2ª zonas de aquecimento do extrusor foram mantidas fixas (50 e 100 °C, respectivamente) e a 3ª zona variou entre 99,54 e 200,46 °C. A Metodologia de Superfície de Resposta foi usada para avaliar a tendência das propriedades funcionais frente às variações de bagaço na formulação e dos parâmetros do processo (temperatura e rotação do parafuso). Os resultados mostraram que a farinha de bagaço de jabuticaba fermentado é uma boa fonte de fibras, de proteínas e de minerais, constituída de partículas finas com aroma característico do fruto e de sabor azedo-adstringente e ligeiramente salgado. A expansão dos extrusados aumentou com o aumento da rotação do parafuso e diminuiu com o aumento da adição de farinha de bagaço de jabuticaba, apresentando um comportamento quadrático com o aumento da temperatura. O índice de solubilidade aumentou com o aumento da rotação do parafuso e com a diminuição da temperatura. Maiores índices de expansão (3,26) e de solubilidade (17,55%) foram alcançados numa formulação contendo aproximadamente 10% de bagaço de jabuticaba fermentado a 240 rpm e temperaturas de 130 e 100 °C, respectivamente. A farinha de bagaço de jabuticaba fermentado misturada com farinha de arroz polido poderá ser usada como matéria-prima para a produção de farinhas pré-gelatinizadas, se as circunstâncias operacionais apropriadas forem aplicadas.

The physical properties of fermented Jaboticaba bagasse flour and some functional properties (expansion index and water solubility index) of the extrudates obtained from mixtures of rice and Jaboticaba bagasse flour were studied, which varied from 11.59 to 25.00% (bagasse/rice). The fermented Jaboticaba bagasse flour analyzed the particle size distribution, color, flavor and chemical composition. Some of these properties were compared with the non-fermented Jaboticaba bagasse and white rice. A single screw extruder with a compression rate of 1:3 fitted with a round die of 3 mm diameter was used at a variable screw speed (65.9 to 234.1 rpm) and feed rate at 5 kg/h. The temperature of the extruder heating zones 1 and 2 were kept constant at 50 and 100 °C, respectively and zone 3 varied from 99.54 to 200.46 °C. Surface response methodology was used to show the effect of bagasse concentration and the parameters (temperature and screw speed). The results showed that fermented jaboticaba bagasse is a good source of fiber, proteins and minerals and is made up of fine particles with the aroma of the fruit and slight salty bitter taste. Radial expansion increased as the screw speed increased and decreased as the jaboticaba bagasse flour increased showing a quadratic effect as the temperature increased. Water solubility index increased as the screw speed increased and reduced as the temperature decreased. High expansion index (3.26) and water solubility (17.55%) were reached for the formulation with 10% fermented jaboticaba bagasse at 240 rpm screw speed and at 130 and 100 °C temperatures, respectively. Fermented jaboticaba bagasse flour can be incorporated into rice flour to produce pre-gelatinized flour if appropriate operational conditions are used.

A mistura de trigo e soja representa uma importante fonte calórico-protéica com proteínas de boa qualidade. O objetivo do presente trabalho foi avaliar as propriedades de pasta e absorção de água das farinhas de trigo e soja (90:10), pré-cozidas por extrusão em diferentes umidades (23%, 26% e 29%) e temperaturas de barril (60°C, 70°C, 80°C, 90°C), para uso em massa de pizza semi-pronta com características sensoriais desejáveis. Usou-se extrusor Brabender, de rosca única, com velocidade de alimentação constante de 3,6 kg h-1, velocidade de rotação de parafuso de 90 rpm e matriz de lâmina com 1 mm de espessura. As propriedades de pasta das farinhas mistas pré-cozidas aumentaram com o incremento da temperatura de barril; os maiores valores foram obtidos em 26% de umidade. A absorção de água aumentou à medida que se aumentava a umidade. A pizza preparada com a farinha mista extrusada em 23% de umidade e 80°C de temperatura de barril, apresentou as melhores características sensoriais.

Mixture of wheat with soybean represents an important calorie-protein source with good protein quality. The objective of this work was to evaluate pasting properties and water absorption of pre-cooked wheat-soybean (90:10) flours, which were extruded in different moistures (23%, 26% and 29%) and barrel temperatures (60ºC, 70ºC, 80ºC and 90ºC), for pizza dough ready for use with desirable sensory characteristics. The experiment used a Brabender single screw extruder with constant feeding rates of 3.6 kg h-1, constant screw-speed of 90 rpm and a laminar shape die of 1 mm. Pasting properties of pre-cooked mixed flours and barrel temperature increased simultaneously, presenting higher values at 26% moisture. Also water absorption increased together with moisture and barrel temperature. Pizza with the extruded mixed flour, prepared at 23% moisture and 80°C barrel temperature, presented the best sensory characteristics.

O objetivo deste trabalho foi avaliar os efeitos da temperatura de barril (TB) do extrusor e o nível de umidade da mistura de trigo e soja na qualidade de cozimento de massas pré-cozidas por extrusão. Usou-se extrusor Brabender de rosca única com velocidade de alimentação constante de 3,6 kg/h, velocidade da rotação de parafuso de 90 rpm e uma matriz de lâmina com 1 mm de espessura. Os resultados mostraram que, com as crescentes proporções de soja (10% a 40%), houve aumento das perdas de sólidos solúveis no tempo ótimo de cozimento. As perdas diminuíram com a elevação da TB até um mínimo, além do qual, aumentaram. O aumento de umidade diminuiu as perdas nas TB mais baixas, porém aumentou as perdas nas TB mais altas, as quais foram afetadas pela proporção de soja. A elevação da TB causou uma diminuição no aumento de peso e de volume até um mínimo, além do qual, houve aumento. Houve redução no aumento de peso e de volume no tempo ótimo de cozimento com o aumento de umidade e da proporção de soja.

The objective of this work was to evaluate effects of barrel temperature (BT) of extruder and moisture levels of wheat and soybean mixture on cooking quality of pre-cooked pastas by extrusion-cooking. The experiment was carried out, using Brabender single screw extruder with a constant feeding rate of 3.6 kg/h, a constant screw-speed of 90 rpm and a laminar shape die of 1 mm. Results showed that the soluble solid losses at an optimum cooking time increased with increasing soybean proportions (10% to 40%). The losses decreased with increasing BT up to a minimum, beyond which they increased. The moisture increase caused decreased losses at lower BT, however, an increase occurred at higher BT, which was affected by soybean proportions. Increasing BT caused a decrease in increased cooked weight and cooked volume up to a minimum, beyond which it increased. A reduction in increased cooked weight and cooked volume at optimum cooking time with the moisture increase and soybean proportion increase was verified.

O objetivo deste trabalho foi estudar o efeito da temperatura de barril (TB) do extrusor no índice de expansão (IE) e no índice de solubilidade em água (ISA) dos produtos extrusados expandidos de misturas de canjiquinha e soja (80:20 e 70:30), e verificar suas características sensoriais, quando aromatizado para uso como petiscos. Foi usado o extrusor Brabender de dupla-rosca, com velocidade de alimentação constante de 20,8 kg/h, velocidade da rotação de parafuso de 100 rpm e diâmetro de matriz de 5 mm. As temperaturas de barril do extrusor foram constantes na zona 1 (60ºC) e na zona 2 (90ºC) e variáveis na zona 3 (90, 110, 130 e 150ºC) e na zona 4 (110, 130 e 150ºC). O IE e o ISA dos produtos extrusados expandidos aumentaram com o aumento da TB na zona 3 até 110ºC; acima desta temperatura, observou-se diminuição desses índices. O aumento da TB na zona 4 resultou em aumento no IE e ISA, exceto quando os produtos haviam sido submetidos a 130 e 150ºC na zona 3. O produto extrusado expandido contendo 80% de canjiquinha e 20% de soja, submetido às temperaturas de barril de 60, 90, 110 e 150ºC e aromatizado com cebola, apresentou melhor aparência, textura e sabor, e foi preferido pelos consumidores. Não houve atividade do inibidor de tripsina nos produtos estudados.

The objective of this work was to study the effect of barrel temperature (BT) on expansion ratio (ER) and on water solubility index (WSI) of puffed extruded corn-grits and soybean mixtures (80:20 and 70:30) and to verify their sensory characteristics, while flavored for snack use. Brabender twin-screw extruder with a constant feed rate of 20.8 kg/h, a constant screw speed of 100 rpm at an extruder exit through 5 mm die was used. The extruder barrel temperatures were zone 1 (60ºC) and zone 2 (90ºC) and they were variable in zone 3 (90, 110, 130 and 150ºC) and zone 4 (110, 130 and 150ºC). An increase up to 110ºC in BT at zone 3 caused an increase in ER and WSI of puffed extruded products and above 110ºC caused a reduction in these indexes. An increase in BT at zone 4 resulted in an increase in ER and WSI, except for puffed extruded products submitted to 130 and 150ºC in zone 3. Puffed extruded product with 80% corn-grits and 20% soybean, submitted to BT at 60, 90, 110 and 150ºC and flavored with onion, presented better appearance, texture and flavor, being the preferred by consumers. No trypsin inhibitor activity was detected in the products.
