ABSTRACT. The goal of this study was to determine the essential fatty acids of the total lipids of the fillet, head and orbital cavity tissue from farmed tambaqui (Colossoma macropomum) fish from a Brazilian Amazon area. The tambaqui were acquired from different fish farms in the Roraima state, located at Western Brazilian Amazon. The meat, the head and the fatty tissue from orbital cavity were dissected for lipid extraction and analysis of fatty acids by gas chromatography. The fatty acids were quantified in mg g-1 of total lipids using C23:0 as an internal standard. The nutritional quality of the lipids was determined by using the atherogenicity and thrombogenicity indices, and also by the ratio between hypocholesterolemic / hypercholesterolemic fatty acids. The orbital cavity tissue had the higher concentration amount of linoleic and α-linolenic acid, whereas the fillet had higher docosahexaenoic acid (DHA). The eicosapentaenoic acid (EPA) concentration was: 1.28, 0.97, 1.71 mg g-1 of total lipids, in the filet, in head, and in orbital cavity tissue, respectively. All essential fatty acids were detected in the three parts analyzed. The nutritional quality of the total lipids from the head and from the orbital cavity tissue was similar to the fillet.

RESUMO. O objetivo deste estudo foi determinar a composição dos ácidos graxos e os índices de qualidade nutricional dos lipídios totais no tecido adiposo da tilápia do Nilo da aquicultura continental do Estado da Paraíba, Brasil. As tilápias foram capturadas em seis pisciculturas. Após o abate e sangria, o tecido adiposo da cavidade ocular foi reservado, congelado e liofilizado para análise da composição de ácidos graxos por cromatografia gasosa. Os ácidos graxos majoritários detectados em ordem decrescente foram: ácido oleico, ácido palmítico, ácido linoleico, ácido esteárico e ácido palmitoleico. O grupo mais abundante no tecido adiposo da cavidade ocular foi o dos ácidos graxos monoinsaturados, enquanto que na ração o grupo mais abundante foi o grupo dos ácidos graxos poli-insaturados, com percentual do ácido linolênico variando entre 32,99 e 37,57%. Os índices de qualidade nutricional dos lipídios variaram de 0,491 a 0,575 para o Índice de Aterogenicidade, 0,543 a 0,741 para o Índice de Trombogenicidade; e 1,918 até 2,176 para a razão entre hipocolesterolêmicos / hipercolesterolêmicos. De acordo com a composição dos ácidos graxos e a qualidade nutricional dos lipídios totais, é possível recomendar o uso deste subproduto para o consumo humano ou elaborar produtos para consumo animal.

ABSTRACT. This study aimed to determine the fatty acid composition and nutritional quality indexes of total lipids in adipose tissue from the orbital cavity of Nile tilapia from continental aquaculture in Paraiba State, Brazil. The tilapias were captured in six fish farms, and after slaughtering and bleeding, the adipose tissue from the orbital cavity was reserved, frozen and lyophilized for analysis of fatty acid composition by gas chromatography. By decreasing order, oleic, palmitic, linoleic, stearic, and palmitoleic acids were the most abundant ones. Monounsaturated fatty acids were the most prominent group in orbital cavity adipose tissue, where as polyunsaturated fatty acids were most abundant in the diet, with a percentage of linolenic acid ranging from 32.99 to 37.57%. Nutritional quality indexes of lipids varied from 0.491 to 0.575 for Atherogenicity Index, 0.543 to 0.741 for Thrombogenicity Index, and from 1.918 to 2.176 regarding the ratio of hypocholesterolemic/hypercholesterolemic. According to the composition of fatty acids and the nutritional quality of total lipids, the use of this byproduct can be recommended for human consumption or to elaborate products for animal intake.

Este estudo apresenta a avaliação da qualidade de tambaqui (Colossoma macropomum) conservado em gelo. Foi determinado o tempo de vida útil por meio de avaliações sensoriais e análises de pH e bases voláteis totais (N-BVT) no músculo. A avaliação sensorial mostrou que os exemplares permaneceram com qualidade especial (Classe A) durante o período de 22 dias e com boa qualidade (Classe B) até 40 dias. A prova de degustação do peixe cozido mostrou que os exemplares permaneceram com qualidade especial (Classe A) durante o período de 31 dias, mantendo-se na Classe B por até 40 dias. O pH e o N-BVT do músculo aumentaram regularmente com o tempo de estocagem, mostrando-se como índices adequados para determinar a qualidade do pescado. O extenso período em condições de consumo, 43 dias, permite que a espécie seja comercializada, entre camadas de gelo, no mercado nacional e internacional.

This study evaluates the quality of an Amazonian fish tambaqui (Colossoma macropomum), when stored in ice. Its shelf life was determined using sensory evaluations, pH and Total Volatile Bases (N-TVB) analysis of the muscle. The sensory evaluation showed that the samples retained special quality (Class A) for 22 days and good quality (Class B) for up to 40 days. The tasting session of cooked fish showed that the samples retained special quality (Class A) for 31 days and the Class B lasted for 40 days. The pH and N-TVB of the muscle increased regularly throughout the storage time, showing their suitability to determine the quality of the fishing. The long storage time, 43 days, allows the fish to be commercialized on ice on the national and international market.

Este trabalho teve como objetivo determinar o teor de tocoferois no músculo e cavidade ocular do matrinxã (Brycon cephalus), capturados na Amazônia Central - Brasil, no período da cheia e seca. A coleta dos peixes foi realizada em diferentes épocas sazonais, constituindo-se de três lotes com cinco exemplares. As análises seguiram a metodologia da AOCS Ce 8-89 (1996) em cromatógrafo HPLC PERKIN ELMER - Bomba isocrática LC 250 acoplado a detector de fluorescência (SHIMADZU - RF-10AxL). O a-tocoferol foi predominante nas diferentes sazonalidades. No músculo do peixe capturado na época da cheia e seca, o teor de tocoferois variou de 0,04 a 0,43mg 100g-1 e 0,06 a 8,23mg 100g-1, respectivamente. O teor de tocoferois na cavidade ocular, na época da cheia e seca, variou de 0,02 a 0,09mg 100g-1 e 0,03 a 0,42mg 100g-1, respectivamente.

This research aimed to determine the content of different tocopherol levels in muscle and ocular cavity of matrinxã fishes captured in the Central Amazon Region - Brazil. For the antioxidants determination, three batches, each consisting of 5 fish, during two different seasons. The analyses were performed according to the AOCS Ce 8-89 (1993) methodology in chromatography HPLC PERKIN ELMER - Isocratic LC 250 pump couple to fluorescence detector (SHIMADZU - RF - 10AxL). The a-tocopherol was predominant in the different seasons. The tocopherol content ranged from 0.43 to 0.04mg 100-1 and from 8.2 to 0.06mg 100g-1 in the muscle of matrinxã captured in the flood ad dry season, respectively. The tocopherol content in the adipose tissue of the orbital cavity of matrinxã captured in the flood ad dry season showed ranged from 0.09 a 0.02mg 100g-1 and from 0.42 to 0.03mg 100g-1, respectively.

Este trabalho teve a finalidade de determinar o índice de rigor-mortis e sua relação com a taxa de degradação dos nucleotídeos do tambaqui (Colossoma macropomum) cultivado e conservado em gelo. O início da rigidez (IR) muscular para o pescado ocorreu 20 minutos (IR=80,1%) após a morte por asfixia entre camadas de gelo. A contração total ocorreu aos 30 minutos (IR=99,4%) e a resolução total do rigor cerca de 360 horas (15 dias). A concentração de ATP diminuiu cerca de 50% aos 20 minutos. Aos 30 minutos após a morte, ainda restavam aproximadamente 30% da quantidade inicial de ATP. Somente após duas horas, o teor de ATP se aproximou de zero, indicando que os exemplares submetidos ao resfriamento com gelo apresentaram o fenômeno de "cold shock " e não rigor-mortis. O valor k mostrou pequenas variações até cerca de 2 horas após a morte e, em seguida, um aumento progressivo, variando de 0,7%, a 11,5% no 9º dia de estocagem.

This study examined the rigor index and its relation with rate decrease nucleotides of a cultivated Amazonian fish, Colossoma macropomum, stored in ice. The rigor index was detected 20 minutes (IR=80.1%) after death in ice. Total muscle contraction occurred after 30 minutes (IR=99.4%) and total resolution of rigor after 15 days in ice. ATP concentrations decreased after 20 min to about half, 50%; after 30 minutes residual ATP was 30% and after 2 hours practically disappeared. This suggests that the C. macropomum specimens stored in ice presented the cold shock phenomenon rather than rigor-mortis. The K value varied little up to 2 hours after death and then increased progressively up to 11.5% on the 9th day of storage.
