ABSTRACT The large scale of mango production allows for the application of immediate technologies to minimize post-harvest losses and add even more value to the fruit chain. As a consequence of feasible applications, the production of alcoholic beverages through fermentation and distillation has been elaborated, resulting in a supply of products with different characteristics. This study aimed to monitor the development of a distilled mango beverage and its profile for consumption. The mangoes were selected, pulped and subjected to physicochemical characterization and, subsequently, to fermentation and distillation processes where the kinetics were monitored, and the beverage obtained was compared to similar products found in the literature. During column distillation, the relationship between the temperature profile and the alcohol content was observed, allowing for careful selection of each fraction of the distillate and the establishment of a standard for future distillations. As regards the fraction of interest, good results were obtained in terms of composition with compounds such as methanol and acetaldehyde in minimal quantities, indicating a product that can be consumed without health risks. The small amount of studies following the same line of research confirms the potential mango pulp named Tommy Atkins for the formulation of alcoholic products.

ABSTRACT: Companies develop strategies to describe where they want to go and how they will reach their destination. Business strategies are useful but may not be sufficiently detailed for areas of high importance, such as technology and innovation. In this paper we examined the effort of building a technology roadmap with an early growth stage company located in the state of São Paulo, Brazil. Roadmaps are easy to design yet flexible tools that can allow decision makers to explore a myriad of possible strategies. However, the challenges ahead for new companies facing uncertain growth scenarios demand that framework conditions be adequately addressed, and that innovation culture and technology management tools are integrated with the technology roadmapping strategy. Based on the empirical evidence collected from the startup studied, along with the literature and interviews with key stakeholders, this paper developed a pathway to support technology and innovation plans for startups going through similar growth stages and provides directions for future research in the area, given the scarcity of evidence available of new high-tech companies' efforts in planning and developing new products

Resumo A produção de bebidas destiladas de qualidade envolve um período de envelhecimento em barris de madeira, durante o qual diversas reações físico-químicas ocorrem entre a madeira e o destilado. O carvalho é a principal madeira empregada mundialmente no processo de envelhecimento de bebidas alcoólicas. Entretanto, no Brasil, o uso de espécies de madeiras tropicais pode ser uma opção viável por permitir inovação nas características de destilados. O objetivo deste estudo foi determinar o perfil aromático de compostos de aromas em aguardente de cana (cachaça) envelhecida por 12 meses em barris novos de 225 L, com e sem tosta, construídos com espécies de madeiras tropicais: cerejeira [Amburana cearensis (Fr. Allem.) A.C. Smith], castanheira (Bertholletia excelsa Humboldt & Bonpland) e cabreúva (Myrocarpus frondosus Allemão). A caracterização química foi realizada por meio de cromatografia gasosa/espectrometria de massas, no modo scan, visando identificar compostos de aromas (ésteres, álcoois, ácidos orgânicos, compostos fenólicos e terpenos). Tanto os barris tostados quanto os sem tosta aumentaram a concentração de compostos fenólicos nas cachaças. Os destilados envelhecidos em cerejeira apresentaram maior complexidade aromática, principalmente devido aos ácidos orgânicos e aos compostos fenólicos. Os barris de cabreúva forneceram maiores teores de terpenos aromáticos aos destilados. Esta pesquisa apresenta um novo enfoque no perfil aromático de compostos de aroma em cachaça envelhecida em barris de madeiras tropicais.

Abstract The production of high quality spirits implies an aging period in wooden barrels, resulting in numerous physicochemical reactions between the wood and the beverage. Oak is the main wood used in the aging process of alcoholic beverages worldwide. However, in Brazil, the use of tropical wood species can be a viable option, allowing for innovation in the characteristics of spirits. This study aimed to determine the aromatic profiling of flavor active compounds in Brazilian sugarcane spirit (cachaça) after a 12-month aging period in new 225-L toasted and non-toasted barrels made from the tropical wood species cerejeira [Amburana cearensis (Fr. Allem.) A.C. Smith], castanheira (Bertholletia excelsa Humboldt & Bonpland), and cabreúva (Myrocarpus frondosus Allemão). The chemical characterization was carried out using the Gas-Chromatography/Mass Spectroscopy (GC/MS) scan mode, and the identification targeted on flavor active compounds (esters, alcohols, organic acids, phenolic compounds, and terpenes). Toasted and non-toasted cerejeira barrels intensified the contents of phenolic compounds in cachaça. The samples aged in cerejeira barrels exhibited the most complex profile, mainly related to organic acids and phenolic compounds. However, cabreúva barrels transferred significant aromatic terpenes to cachaça. This research presented a novel focus on the aromatic profiling of flavor active compounds in cachaça aged in barrels made from tropical wood species.

Abstract Cachaça is a highly consumed Brazilian spirit, which still needs studies on its agroindustrial processing. We can highlight the effects of infestation of pest insects in the sugarcane, and the chemical-physically characteristics of the drink. So, the aim of the study was to evaluate the consequences of the infestation of the sugarcane borer (Diatrea saccharalis) on the quality of the cachaça. The borer infestation results in less stalks productivity per hectare, and higher rates of acidity and phenol in juice and must. However, the borer did not affect the Brix, Purity, Total Reducing Sugars and pH of raw material. The cellular viability of infested stalks is less than of not infested stalks. The chemical-physical characteristics of the cachaça for both treatments meet the Brazilian legislation. However, the acetic acid is higher for infested stalks.

Resumo O presente estudo teve por objetivo determinar a influência de métodos de destilação (simples, dupla e redestilação) na composição química de aguardentes de cana, mediante análises de componentes voláteis (aldeídos, ésteres, metanol, álcoois superiores, ácido acético e furfural) e contaminantes (álcoois n-butílico e sec-butílico, cobre e carbamato de etila). A aguardente monodestilada e os destilados alcoólicos das aguardentes bidestilada e redestiladas apresentaram composição química de compostos voláteis e de contaminantes dentro das especificações da legislação brasileira. A aguardente monodestilada apresentou maiores concentrações de ácido acético, aldeído acético, acetato de etila, álcool propílico, álcoois superiores, furfural e coeficiente de congêneres. A aguardente monodestilada também apresentou concentrações mais elevadas dos contaminantes metanol, sec-butanol, cobre e carbamato de etila. Em relação à monodestilação, as metodologias de bidestilação e de redestilação proporcionaram redução da concentração de congêneres voláteis das aguardentes (ácido acético, aldeído acético, acetato de etila, álcool propílico e furfural) e de compostos considerados contaminantes (metanol, sec-butanol, cobre e carbamato de etila).

Abstract This study aimed to determine the influence of distillation methods (single, double and redistillation) on the chemical composition of sugar cane spirits. Analysis of volatile compounds (aldehydes, esters, methanol, higher alcohols, acetic acid and furfural) and contaminants (n-butyl and sec-butyl alcohols, copper and ethyl carbamate) were carried out. All the distilled spirits presented chemical composition of volatiles and contaminants within Brazilian legal specifications. The single distilled sugar cane spirit presented higher concentrations of acetic acid, acetaldehyde, ethyl acetate, propyl alcohol, higher alcohols, furfural, and coefficient of congeners. The single distilled sugar cane spirit also presented higher concentrations of contaminants (methanol, sec-butyl alcohol, copper and ethyl carbamate). The methodologies of double distillation and redistillation provided a reduction in the concentration of volatile congeners (acetic acid, acetaldehyde, ethyl acetate, propyl alcohol, and furfural) and contaminants (methanol, sec-butyl alcohol, copper and ethyl carbamate) of the sugar cane spirits.

ABSTRACT: Cachaça poses many quality (appearance, taste, consumer acceptability) and safety hazards (chemical, metal, and microbiological contaminations during the process). In this work, an effort is made for the quality and safety analysis of cachaça, by describing and outlining the potential hazards in every step of the process. This study revealed that the critical control points (CCPs) involved in Good Manufacturing Practices (GMP) to prevent cachaça safety hazards are the stages of sugarcane growing, sugarcane harvesting, fermentation, distillation, and aging process. The most significant factors for both CCPs and critical points (CPs) that should be controlled are determined. The implementation of the Hazard Analysis and Critical Control Point (HACCP) system in small distilleries of cachaça has been very helpful to provide the required safety for domestic consumers and boost cachaça exportations. Therefore, the main objective of the cachaça industry is to achieve production consistency.

Resumo A introdução de diferentes linhagens de microrganismos nas fermentações destinadas à produção de cachaça, decorrente das alimentações sucessivas de caldo, pode contribuir com o desenvolvimento de diferentes classes de microrganismos, comprometendo a atividade metabólica das leveduras e a condução do processo fermentativo. Assim, o objetivo do presente estudo foi avaliar a influência do tratamento térmico do caldo de cana nas características tecnológicas e microbiológicas do substrato, e os seus reflexos na condução do processo fermentativo e na qualidade química da cachaça. Para tanto, o caldo foi submetido a tratamento térmico à temperatura de 90°C por 5 minutos, para então serem quantificadas as concentrações de bactérias láticas, leveduras totais e leveduras não Saccharomyces . As fermentações foram conduzidas em cinco ciclos fermentativos, utilizando-se mosto de caldo de cana tratado e não tratado termicamente. O processo foi monitorado por meio das análises de viabilidade celular e de brotos, e do índice de brotamento, enquanto as populações de leveduras totais e não Saccharomyces foram quantificadas no fermento reciclado. Ao término das fermentações, foram determinados o pH, a acidez total titulável, o teor alcoólico e os açúcares redutores residuais totais dos vinhos, sendo estes destilados em alambique de cobre para a quantificação da composição química da cachaça. O tratamento térmico possibilitou a inativação dos microrganismos do caldo, sem comprometer as suas características físico-químicas. A viabilidade celular foi reduzida para as fermentações conduzidas com caldo não tratado termicamente, porém as características físico-químicas dos vinhos não foram afetadas. Os destilados provenientes de fermentações conduzidas com caldo não tratado apresentaram maiores níveis de acidez volátil e ésteres, ao final do quinto ciclo. As concentrações de álcoois superiores e furfural foram elevadas para ambos os tratamentos no primeiro e quinto ciclo, respectivamente.

Abstract The introduction of different strains of microorganism in the fermentations destined for the production of cane spirit, due to successive broth feeds, may contribute to the development of different classes of microorganism, compromising the metabolic activity of the yeasts and hence the direction of the fermentative process. Thus the present study aimed to evaluate the influence of the heat treatment of the sugarcane juice on the technological and microbiological characteristics of the substrate and their effects on the direction of the fermentative process and the chemical quality of the cane spirit. The juice was treated at 90 °C for 5 minutes and the concentrations of lactic bacteria, total yeasts and non-Saccharomyces yeasts then quantified. Five fermentative cycles were carried out using heat treated and untreated sugarcane juice musts. The process was monitored via cell viability and bud production and determination of the budding index, and the total and non-Saccharomyces yeast populations quantified in the recycled yeast. At the end of the fermentations, the pH, total titratable acidity, alcohol content by volume and total residual reducing sugars of the wines were determined, these being distilled in a copper still for quantification of the chemical composition of the cane spirit. The heat treatment allowed for inactivation of the microorganisms in the juice without compromising their physicochemical characteristics. The cell viability was reduced when the fermentations were carried out with untreated juice, although the physicochemical characteristics of the wines were not affected. The distillates from fermentations carried out with untreated juice showed higher levels of volatile acidity and esters at the end of the 5th cycle. The concentrations of higher alcohols and furfural were elevated for both treatments in the 1st and 5th cycles, respectively.

Resumo Esta pesquisa teve como objetivos avaliar as características tecnológicas e microbiológicas do caldo de cana colhida e armazenada, assim como seus reflexos na condução dos processos fermentativos e formação dos compostos secundários e contaminantes da cachaça. Depois da colheita da cana-de-açúcar, os colmos foram armazenados à temperatura ambiente (20-32 °C) por períodos de 0, 24, 48, 72 e 96 horas, sendo o mosto preparado logo após a extração do caldo. As fermentações foram conduzidas em processo de batelada, por cinco ciclos fermentativos, com destilação dos vinhos em alambique de cobre. Foram analisadas as características tecnológicas e microbiológicas do caldo e do processo fermentativo. O armazenamento dos colmos de cana causou significantes perdas na qualidade tecnológica do caldo, influenciando negativamente o processo fermentativo, com decréscimo na viabilidade de células e brotos de leveduras. A utilização de matéria-prima armazenada por períodos superiores a 48 horas contribuiu para a redução do pH e aumento da acidez total e açúcares redutores residuais dos vinhos, refletindo em menor produção de álcool. Os níveis de acidez volátil, acetato de etila, acetaldeído, cobre, metanol e carbamato de etila das cachaças ficaram dentro do estabelecido pela Legislação Brasileira, enquanto o conteúdo de álcoois superiores e furfural apresentaram-se elevados nos destilados de cana colhida e armazenada.

Summary This research aimed to evaluate the technological and microbiological characteristics of the juice produced from harvested and stored sugarcane, and the reflections on the fermentative processes and formation of secondary compounds and contaminants in the production of cane spirit. After harvesting, the sugarcane stalks were stored at environmental temperature (20-32 °C) for 0, 24, 48, 72, and 96 hours, the must being prepared soon after juice extraction. The fermentations were carried out using a batch process with five fermentative cycles, distilling the wine in a copper still. The technological and microbiological characteristics of the juice and the fermentation process were analysed. Storage of the cane stalks caused significant losses in the technological quality of the juice, negatively influencing the fermentative process, and decreasing the viability of the yeast cells and shoots. The use of raw material stored for periods longer than 48 hours contributed to a reduction in pH, increase in total acidity and increase in residual reducing sugars in the wines, reflecting in reduced alcohol production. The levels of volatile acidity, ethyl acetate, acetaldehyde, copper, methanol and ethyl carbamate in the cane spirits were within the limits established by Brazilian law, whilst the higher alcohols and furfural contents were high in the distillates produced from harvested and stored sugarcane.

The aim of this study was to evaluate the chemical composition of sugar cane spirits, fermented by different commercial Saccharomyces cerevisiae yeast strains and double distilled by pot still. Sugar cane juices were separately fermented by yeasts CA-11, Y-904, BG-1, PE-2, SA-1 and CAT-1 and distilled by pot still according to the methodology used for whisky production. The alcoholic liquids from first and second distillations were analyzed for concentrations of ethanol, volatile acidity, aldehydes, esters, furfural, higher alcohols and methanol. The sugar cane spirits derived from fermentation by the different yeast strains presented distinct chemical compositions.

O objetivo deste trabalho foi determinar o perfil físico-químico da aguardente de cana-de-açúcar produzida por diferentes metodologias de dupla destilação em alambique retificador. Mosto fermentado de caldo de cana-de-açúcar foi destilado seguindo três metodologias de dupla destilação: a empregada para a produção de cognac, a empregada na produção de whisky e a metodologia da proporção porcentual 10-80-10, referente aos volumes das frações cabeça, coração e cauda do destilado. Para comparação, também foi produzida uma aguardente monodestilada. Os destilados foram analisados quimicamente quanto às concentrações de etanol, cobre, acidez volátil, furfural e hidroximetilfurfural, aldeídos, ésteres, metanol e álcoois superiores. As aguardentes foram também avaliadas sensorialmente quanto aos atributos de aroma, sabor e preferência. Comparada com a monodestilação, a dupla destilação melhorou a qualidade química das aguardentes, pois proporcionou redução das concentrações de ácidos, de aldeídos, de ésteres, de metanol, de álcoois superiores e, consequentemente, do coeficiente de congêneres das aguardentes. Independentemente da metodologia empregada, as aguardentes produzidas por dupla destilação obtiveram maior aceitação sensorial que a aguardente monodestilada. Dentre as aguardentes duplamente destiladas, a produzida segundo a metodologia do uísque obteve as maiores notas dos provadores quanto aos parâmetros de aroma e sabor e também foi a preferida.

The objective of this study was to determine the chemical profile of sugarcane spirits produced by different double distillation methodologies in rectifying still. Fermented sugarcane juice was distilled in rectifying still according to three double distillation methodologies: the methodology used for cognac production; the methodology used for whisky production; and the 10-80-10 percentage composition methodology, referring to the volumes of head, heart and tail of the distillate fractions from the second distillation. For comparison purposes, a simple distilled spirit was also produced. The distillates were analyzed for concentrations of ethanol, copper, volatile acidity, furfural and hydroxymethylfurfural, aldehydes, esters, methanol and higher alcohols. The spirits were also evaluated on the sensory attributes of aroma, taste and preference. Compared to simple distillation, double distillation improved the chemical quality of the spirits, since it has reduced the concentrations of acids, aldehydes, esters, methanol, higher alcohols and, consequently, their coefficient of congeners. Regardless of the methodology employed, the double distillation improved the sensory quality of the spirits since they obtained higher sensory acceptance in relation to spirits produced by simple distillation. Among double distilled spirits, the one produced according to whisky methodology obtained the best scores from appraisers on the aroma and flavor parameters and it was also the most preferred.

Este trabalho determinou aspectos da composição química e aceitação sensorial da aguardente de cana-de-açúcar envelhecida por 3 anos em tonéis de diferentes madeiras (amendoim, araruva, cabreúva, carvalho, cerejeira, grápia, ipê-roxo, jequitibá e pereira). O destilado alcoólico simples que originou a aguardente foi produzido na Destilaria Piloto da ESALQ/USP. Após envelhecimento, as aguardentes foram avaliadas quanto ao grau alcoólico, acidez volátil, furfural, aldeídos, ésteres, álcoois superiores, álcool metílico, cobre, compostos fenólicos totais, cor e aceitação sensorial. Independentemente da madeira com que o tonel foi construído, a aguardente envelhecida apresentou coloração mais escura e maior concentração de acidez volátil, de furfural, de ésteres, de álcoois superiores, de congêneres e de compostos fenólicos totais que o destilado alcoólico simples. Por outro lado, a aguardente envelhecida apresentou menor concentração de aldeídos, de metanol e de cobre que o destilado alcoólico simples. A análise estatística geral, considerando a composição físico-química global das aguardentes envelhecidas nos tonéis das diferentes madeiras indicou similaridades entre as aguardentes envelhecidas nos tonéis de amendoim, araruva e jequitibá; entre as aguardentes envelhecidas nos tonéis de cabreúva e pereira; e entre as aguardentes envelhecidas nos tonéis de carvalho, cerejeira, grápia e ipê-roxo. A aguardente envelhecida nos tonéis das diferentes madeiras manteve-se dentro de todos os padrões de qualidade estabelecidos pela legislação nacional em vigor. A aguardente envelhecida na madeira carvalho foi a que apresentou a melhor aceitação sensorial. Dentre as madeiras nacionais, ipê-roxo, amendoim, cabreúva, cerejeira e pereira foram aquelas que propiciaram as melhores qualidades sensoriais à aguardente.

This study evaluated some aspects of the chemical composition and sensorial acceptance of sugar cane spirit aged for 3 years in casks of different types of wood (peanut wood, araruva or striped wood, red cabreuva, oak, cherrywood, Brazilian gold wood, purple tabebuia, cariniana legalis, and pear tree). The simple alcoholic distillate which originated the sugar cane spirit was produced at the Distillery of ESALQ/USP. After aging, the sugar cane spirits were analyzed in terms of ethanol concentrations o, volatile acidity, furfural, aldehydes, esters, higher alcohols, methanol, copper, total phenolic compounds, color, and sensorial acceptance. Regardless the type of wood the casks were made of, the aged sugar cane spirits became darker and presented higher concentrations of volatile acidity, furfural, esters, higher alcohols, congeners, and total phenolic compounds than the simple alcoholic distillate. On the other hand, the aged sugar cane spirits presented lower concentrations of aldehydes, methanol, and copper than the simple alcoholic distillate. The statistical analysis, considering the global physicochemical composition of the sugar cane spirits aged in the casks made of different types of wood, showed similarities among the sugar cane spirits aged in the casks of peanut wood, araruva or striped wood, and cariniana legalis. It also indicates similarities among the sugar cane spirits aged in the casks of red cabreuva and pear tree and among the sugar cane spirits aged in the casks of oak, cherrywood, Brazilian gold wood, and purple tabebuia. The sugar cane spirits aged in the casks of the different types of wood were in accordance with the composition and quality standards established by the Brazilian laws. The sugar cane spirit aged in oak presented the best sensorial acceptance. Among the Brazilian woods, purple tabebuia, peanut wood, red cabreuva, cherrywood and pear tree were those that produced sugar cane spirits with better sensorial qualities.

A variação qualitativa dos componentes secundários é função chave no aroma e sabor da aguardente de cana-de-açúcar. Avaliou-se a cinética de volatilização de componentes secundários da aguardente de cana-de-açúcar ao longo do processo de dupla destilação em alambique retificador para verificar tempo de corte em etanol entre a fração cabeça e calda. Mosto fermentado de caldo de cana-de-açúcar foi destilado em alambique retificador seguindo a metodologia utilizada para a produção de whisky. Os destilados, tanto da primeira como da segunda destilação, foram recolhidos em frações de 500 mL e analisados quimicamente quanto às concentrações de etanol, cobre, acidez volátil, furfural e hidroximetilfurfural, aldeídos, ésteres, metanol e álcoois superiores. Na primeira destilação, os aldeídos e os ésteres foram arrastados no início da destilação, enquanto que o ácido acético se destilou no final da destilação. O destilado apresentou concentração de metanol até praticamente metade da primeira destilação. Os álcoois superiores se destilaram durante toda a primeira destilação, porém com maior concentração até a graduação alcoólica de 40% v v-1 no destilado. Durante a segunda destilação os aldeídos, os ésteres e o metanol se destilaram nas primeiras frações do destilado, sendo recolhidos principalmente em concentrações alcoólicas acima de 80% v v-1. O ácido acético se destilou nas frações finais do destilado, tendo se concentrado em teores alcoólicos abaixo de 20% v v-1. Os álcoois superiores apresentaram a cinética de destilação semelhante à do etanol, sendo recolhidos principalmente em concentrações alcoólicas superiores a 60% v v-1 do destilado. Não foi detectada presença de cobre, de furfural e hidroximetilfurfural nos destilados da primeira e da segunda destilação.

The qualitative variation of secondary components plays a key role in the aroma and taste of the sugarcane spirit. The objective of this work was to study the volatilization kinetics of secondary components of sugarcane spirits during double distillation process in a rectifying still to verify the cutoff point in ethanol between "head" and "tail" fractions. Fermented sugarcane juice was distilled in rectifying still according to the methodology used for whisky production. Both distillates from first and second distillations were collected in fractions of 500 mL and analyzed for the concentrations of ethanol, copper, volatile acidity, furfural and hydroxymethylfurfural, aldehydes, esters, methanol and higher alcohols. In the first distillation, aldehydes and esters were distilled at the beginning of the distillation, while acetic acid was distilled at the end of the distillation. Methanol was found in the fractions up to almost half of the first distillation. Higher alcohols were distilled during the whole first distillation, but with greater intensity up to the alcoholic degree of 40% v v-1 of the distillate. During the second distillation, aldehydes, esters and methanol were distilled in the first distillate fractions, being collected mainly at alcohol concentrations above 80% v v-1. Acetic acid was distilled in the final distillate fractions, with concentrations in alcohol content below 20% v v-1. Higher alcohols followed a distillation kinetics pattern similar to ethanol, being collected mainly at alcoholic concentrations above 60% v v-1 of the distillate. The presence of copper, furfural and hydroxymethylfurfural was not detected in any fraction of the distillates of the first and second distillation.

Avaliou-se por um período de 390 dias o perfil da composição química da aguardente sob envelhecimento em tonéis de carvalho de 20 L. O envelhecimento da aguardente em tonéis de madeira melhora a qualidade sensorial do destilado. As aguardentes envelhecidas foram analisadas aos 0, 76, 147, 228, 314 e 390 dias de armazenamento quanto às concentrações de etanol, acidez volátil, ésteres, aldeídos, furfural, álcoois superiores (n-propílico, isobutílico e isoamílicos), metanol, cobre, extrato seco, taninos e cor. Após os 390 dias de armazenamento, a aguardente apresentou maiores concentrações de acidez volátil, ésteres, aldeídos, furfural, álcoois superiores, congêneres, extrato seco e tanino. Sua coloração tornou-se amarelada. As concentrações de etanol e de metanol não se alteraram, e o teor de cobre apresentou ligeiro declínio. O envelhecimento da aguardente por 390 dias em tonéis de carvalho alterou a sua composição química, porém ela se manteve dentro de todos os padrões de qualidade estabelecidos pela legislação nacional em vigor.

The chemical composition of aguardente - Brazilian sugar cane alcoholic drink - under aging during in 20 L oak casks was evaluated for 390 days. Aging sugar cane aguardente in wood casks improves the sensorial quality of the distillate. The concentrations of ethanol, volatile acidity, esters, aldehydes, furfural, higher alcohols (n-propylic, isobutylic and isoamylics), methanol, copper, dry extract, tannins, and color of the aged sugar cane aguardente were analysed at 0, 76, 147, 228, 314, and 390 days of storage. After 390 days of aging the sugar cane aguardente presented higher concentrations of volatile acidity, esters, aldehydes, furfural, higher alcohols, congeners, dry extract, and tannin. Its color became golden. The concentrations of ethanol and methanol did not change and the copper content decreased slightly. The aging of the sugar cane aguardente in oak casks for 390 days changed the chemical composition of the distillate. However, the aged sugar cane aguardente met the quality standards established by Brazilian laws.

Neste trabalho elaborou-se um levantamento de marcas comerciais de cachaça e aguardente quanto à conformidade com os padrões de identidade e qualidade previstos pela legislação vigente. Atualmente, o consumo da aguardente de cana vem crescendo em todas as classes da sociedade nacional, tornando-se também uma bebida fina no mercado externo. Mas isso gera também dificuldades aos fabricantes de aguardente e cachaça, que muitas vezes enfrentam barreiras para entrar no mercado externo, principalmente devido à qualidade e à falta de padronização da bebida. Aguardentes de cana e cachaça foram analisadas mediante métodos físico-químicos e cromatográficos quanto aos seus padrões de qualidade. Observou-se grande variação na concentração dos componentes secundários destas bebidas. Os teores de álcoois superiores, acidez e ésteres foram os que mais oscilaram, indicando que a aguardente brasileira apresenta grande variabilidade de compostos químicos entre as marcas estudadas. Das 94 marcas analisadas, 48% delas se encontraram em não conformidade com a legislação nacional em pelo menos um dos componentes analisados.

A study was made of the chemical quality of commercial sugarcane spirits, based on the quality parameters established by Brazilian laws. The consumption of sugarcane spirits in Brazil has shown a steady upward trend in every income bracket. Today it is also recognized as a fine beverage on the international market. However, producers of sugarcane spirits usually face difficulties in gaining a foothold on the international market, mainly due to the product's low quality and lack of standardization. Commercial sugarcane spirits were analyzed by physicochemical and chromatographic methods to evaluate them based on the quality standards established by Brazilian laws. The concentrations of the chemical compounds in the various commercial brands analyzed here were found to vary greatly. The highest variations were in the content of high alcohols, esters and acidity; hence, the chemical composition of the commercial brands varied widely. Of the 94 brands analyzed, 48% failed to meet at least one of the required standards.

O objetivo deste trabalho foi estudar a influência de bactérias dos gêneros Bacillus e Lactobacillus, bem como de seus produtos metabólicos, na redução da viabilidade celular de leveduras Saccharomyces cerevisiae. As bactérias Bacillus subtilis, Bacillus coagulans, Bacillus stearothermophilus, Lactobacillus fermentum e Lactobacillus plantarum foram cultivadas em associação com a levedura S. cerevisiae (cepa Y-904) por 72 horas a 32 °C, sob agitação. A viabilidade celular, a taxa de brotamento e a população de células de S. cerevisiae e a acidez total, a acidez volátil e o pH dos meios de cultivos foram determinados às 0, 24, 48 e 72 horas do cultivo misto. As culturas de bactérias foram tratadas através do calor, de agente antimicrobiano e de irradiação. Os resultados mostraram que apenas os meios de cultivo mais acidificados, contaminados com as bactérias ativas L. fermentum e B. subtilis, provocaram redução na viabilidade celular de S. cerevisiae. Excetuando a bactéria B. subtilis tratada com radiação gama, as demais bactérias tratadas pelos diferentes processos (calor, irradiação e antimicrobiano) não causaram diminuição da viabilidade celular e da população de S. cerevisiae, indicando que a presença isolada dos metabólitos celulares dessas bactérias não foi suficiente para reduzir a porcentagem de células vivas de S. cerevisiae.

The aim of this project was to study the influence of the bacteria Bacillus and Lactobacillus, as well as their metabolic products to decrease the cellular viability of the yeast Saccharomyces cerevisiae. The bacteria Bacillus subtilis, Bacillus coagulans, Bacillus stearothermophilus, Lactobacillus fermentum and Lactobacillus plantarum were cultivated in association with yeast S. cerevisiae (strain Y-904) for 72 hours at 32 ºC under agitation. The cellular viability, budding rate and population of S. Cerevisiae and the total acidity, volatile acidity and pH of culture medium were determined at 0, 24, 48 and 72 hours of incubation of the mixed culture. The bacteria cultures were treated by heat sterilization, antibacterial agent and irradiation. The results showed that only the more acidified culture medium, contaminated with active bacteria L. fermentum and B. subtilis, caused a reduction in the yeast cellular viability. Except for the bacteria B. subtilis treated for radiation, the other bacteria treated by the different procedures (heat, radiation and antibacterial) did not cause a reduction in the cellular viability of S. cerevisiae, indicating that the isolated presence of the cellular metabolic of these bacteria was not enough to reduce the percentage of the living yeast cells.
