Neste trabalho foi estudado o efeito das condições de secagem sobre a contração de frutos de café (Coffea arabica L.), cultivar Catuaí Vermelho. Um modelo exponencial derivado do modelo cinético foi utilizado para descrever a cinética da contração. Ademais, uma equação foi proposta para descrever a relação entre a área superficial e a massa dos frutos de café. Frutos de café foram secos às temperaturas de (T) de 35, 45, 55 e 65ºC, juntamente com umidades relativas (φ) de 25, 35, 45 e 55%, totalizando 16 condições diferentes, com um teor de água inicial de 2,27 base seca (b.s.), secos até 0,11 b.s. As alterações nas dimensões do produto foram mensuradas continuamente durante a secagem. Os valores de relação superfície-volume aumentaram com a diminuição do teor de água. O modelo foi adequado para representar a cinética da contração, bem como a equação empírica para predição da área superficial. A temperatura teve maior influência sobre a taxa constante de mudança da dimensão (k) que φ. Energias de ativação foram obtidas, com magnitudes de 39,31; 37,32; 36,28 e 36,22 kJ mol-1 para umidades relativas de 25, 35, 45 e 55%, respectivamente.

The effects of drying conditions on the shrinkage of Coffea arabica L., cultivar Catuaí Vermelho, were studied. An exponential model derived from the kinetic model was used to describe the shrinkage kinetics. In addition, an equation was proposed to describe the relationship between the superficial areas and weights of the coffee berries. Coffee berries were dried at temperatures (T) of 35, 45, 55 and 65ºC and at relative humidities (φ) of 25, 35, 45 and 55%, forming 16 different sets of conditions, with an initial moisture content for all conditions of 2.27 dry basis (d.b.), dried until 0.11 d.b. Changes in the product dimensions were measured continuously during drying. Surface area-to-volume ratio values increased with moisture content decrease. The model was suitable for representing the shrinkage kinetics, as well the empirical equation for predicting surface area. Temperature had a greater influence over the constant rate of change of the characteristic dimension (k values) than φ. Activation energies were also determined to have magnitudes of 39.31, 37.32, 36.28 and 36.22 kJ mol-1 for relative humidities of 25, 35, 45 and 55%, respectively.

Avaliar a qualidade do café conilon (Coffea Canephora Pierre) depois da secagem em terreiro híbrido e de concreto, processado por via seca para as condições climáticas do Estado de Rondônia, foi o principal objetivo deste trabalho. O café foi colhido, manualmente, pelo sistema de derriça no pano, com teor de água de aproximadamente 50% (b.u.), separado por diferença de massa específica em três grupos: cerejas, boia e café mistura. Posteriormente, cada um dos grupos foi dividido em dois lotes e submetidos à secagem em terreiro híbrido e terreiro de concreto. A análise sensorial foi realizada pela degustação por especialista e a qualidade química do produto foi avaliada por meio das análises da acidez titulável, sólidos solúveis totais e condutividade elétrica. Conclui-se que o tempo necessário para que os cafés boia, mistura e cereja atingissem o teor de água de 9,5 ± 0,5 (%b.u.) foi de 168 horas no terreiro de concreto e no terreiro híbrido foi de 48, 54 e 60 horas, respectivamente. O café submetido à secagem em terreiro de concreto obteve melhor qualidade em comparação ao café secado em terreiro híbrido, decorrente da taxa de remoção de água mais lenta, em média 3,1 vezes menor que no terreiro híbrido, e em função das condições climáticas favoráveis à secagem em terreiro de concreto.

The main objective of this work was to analyze the conilon (Coffea Canephora Pierre) coffee berry quality after drying in hybrid terrace and concrete yard processed by dry and drying under the climatic conditions of the state of Rondônia. The coffee berries were manually harvested on the cloth, at moisture content of approximately 50% (w.b.), separated by differences of bulk density in three types: cherries, float and coffee mixture. Thereafter, each group was divided into two lots and subjected to drying in hybrid terrace and concrete yard. The sensory analysis was carried out by specialist tasting and the chemical quality was assessed by analysis of acidity, soluble solids and electrical conductivity. The results showed that the drying time needed for all the types to reach the moisture content of 9.5 ± 0.5 (% w.b.) was 168 hours in the concrete yard, and for hybrid terrace was 48, 54 e 60 hours respectively. The coffee berry drying in concrete yard obtained better quality compared to the hybrid terrace, mainly due to smaller rate of removal of water in drying system, on average three times lower than in the concrete yard and according to the fortunate climatic conditions in the drying concrete yard.

Este trabalho foi desenvolvido com o objetivo de determinar a influência do período de armazenagem e do tipo de pré-processamento empregado no preparo do café (Coffea arabica L.), na coloração dos grãos beneficiados. O ensaio foi conduzido no delineamento inteiramente casualizado, com os tratamentos arranjados em um esquema fatorial com quatro períodos de armazenamento (0, 4, 8 e 12 meses) e dois tipos de pré-processamento (via seca e via úmida), com duas repetições. A determinação da cor dos grãos de café foi realizada pela leitura direta de reflectância das coordenadas L, a e b em colorímetro tristímulo, empregando o sistema Hunter de cor. Concluiu-se que a armazenagem do café, em condições ambiente, afetou a coloração dos grãos de café, reduzindo, principalmente, a intensidade da cores verde e azul com o aumento do tempo de armazenamento, independentemente do tipo de pré-processamento empregado e que o sistema de pré-processamento por via úmida do café foi o que apresentou menor efeito na coloração dos grãos durante os oito primeiros meses de armazenamento.

The main objective of this work was to determine the influence of the storage period and the type of pre-processing on the color of green coffee (Coffea arabica L.). The assay design was entirely randomized, with treatments arranged in a factorial scheme with four storage periods (0, 4, 8 and 12 months) and two types of pre-processing (natural and washed coffee), with two repetitions. The color of the coffee grains was determined by direct reading of reflectance of coordinates L, a and b in a tristimulus colorimeter, with the Hunter color system. It was concluded that the storage process, in atmosphere conditions, reduced the intensity of the green and blue colors of the coffee grains, with the increase of storage time, independently of the type of pre-processing employed and that the washing pre-processing presented the smaller effect on the color loss during the first eight months of storage.

RESUMO Para fornecer informações sobre o processo de secagem de sementes de feijão, este trabalho foi desenvolvido objetivando-se determinar as curvas de secagem em camada fina, para quatro níveis de temperatura do ar de secagem (35, 40, 45 e 50 ºC) e três níveis de teor de umidade inicial (0,206; 0,373 e 0,596 b.s.). Os testes de secagem foram realizados com três repetições, utilizando-se um secador experimental com fluxo de ar aproximadamente constante, de 10 m3 min-1 m-2 e os resultados da secagem foram avaliados ajustando-se os seguintes modelos matemáticos: Thompson, Exponencial, Page e Difusão. Os resultados obtidos, neste trabalho, permitiram concluir que a equação proposta por Page é a que melhor representa os dados experimentais.

ABSTRACT To provide information about the drying process of bean seeds, this study was conducted with the objective of determining the thin-layer drying curves, for four levels of temperature of drying air (35, 40, 45 and 50 ºC) and three levels of initial moisture content (0.206, 0.373 and 0.596 d.b.). The drying tests were accomplished with three replications, using an experimental dryer with a constant air flow of approximately 10 m3 min-1 m-2. The results of the drying were adjusted to the following mathematical models: Thompson, Exponential, Page and Diffusion. The results obtained in this study lead to the conclusion that the equation proposed by Page best represented the experimental data.
