Abstract An evaluation was done of the nutritional, functional and antioxidant properties of fiber residues from Mucuna pruriens bean. Nutritional value was quantified in terms of proximate composition, total dietary fiber (TDF), insoluble dietary fiber (IDF), soluble dietary fiber (SDF) and the Van Soest fiber components. Functional value was assayed by measuring water holding capacity (WHC), oil holding capacity (OHC), water absorption capacity (WAbC), water adsorption capacity (WAdC) and organic molecule absorption capacity (OMAC). Emulsifying capacity was also studied. Biological potential was identified by measuring antioxidant properties, as well as phenols and flavonoids content. Nutritionally, M. pruriens fiber registered 26% of raw fiber, 77.65% TDF, 69.40% IDF and 8.25% SDF. Van Soest fiber components were 61.35% acid detergent fiber (ADF), 66.86% neutral detergent fiber (NDF) and 13.62% acid detergent lignin (ADL). Cellulose and hemicellulose content were 47.73 and 5.51%, respectively. Fiber functional potential values were 3.24 g/g sample for WHC, 1.65 for OHC, 3.61 for WAbC, 0.24 for WAdC and 1.19 for OMAC. The highest emulsifying capacity was registered at pH 4. Antioxidant activity was observed in assays as reducing power, DPPH and ABTS•+, being possibly attributed to components as phenols (2624.80 μg of gallic acid equivalents/mg), and flavonoids (232.71 μg catechin equivalents/mg), quantified at 20mg/mL.

Abstract Introduction: medicinal plants have demonstrated therapeutic applications for treating different diseases, including chronic and degenerative diseases associated with metabolic syndrome. Objectives: to assess the weight control and the antihypertensive, antihyperglycemic and antioxidant effects of aqueous and ethanolic extracts of Stevia rebaudiana (creole variety INIFAP C01) leaves and stems cultivated in the Muna and Mocochá municipalities (Yucatán, México). Methods: aqueous and ethanolic extracts of leaves (HAMU and HEMU, respectively) and stems (TAMU and TEMU, respectively) from Muna, and aqueous and ethanolic extracts of leaves (HAMO and HEMO, respectively) and stems (TAMO and TEMO, respectively) from Mocochá were orally administered to Wistar male rats induced to metabolic syndrome. Weight, blood pressure, blood sugar levels, malondialdehyde (MDA) levels, and superoxide dismutase (SOD) levels in blood plasma were measured. Results: TAMU and HAMO samples reduced weight by 1.91 % and 1.57 %, respectively. On the other hand, HEMU and HAMU samples reduced systolic (PAS) and diastolic (PAD) blood pressure levels by 29.31-30.47 % and 36.69-36.98 %. In the glucose tolerance test (GTT) HEMU showed a reduction in blood sugar levels of 10.94 % on the first day, and of 14.83 % on day 30. TEMO and TAMO samples showed lower malondialdehyde (MDA) concentrations of 7.0 and 7.3 μM, respectively. HEMU and TEMU showed a higher superoxide dismutase (SOD) concentration of 1.29 and 1.12 U/mL, respectively. Conclusions: extracts of S. rebaudiana can help to control weight gain, to decrease blood pressure and the incidence of diabetes, and to reduce oxidative damage.

Resumen Introducción: las plantas medicinales han mostrado tener aplicaciones terapéuticas en el tratamiento de diferentes enfermedades, entre ellas las enfermedades crónicas degenerativas presentes en el síndrome metabólico (SM). Objetivos: evaluar el efecto en el control del peso, así como el efecto antihipertensivo, antihiperglucémico y antioxidante, de extractos acuosos y etanólicos de hojas y tallos de Stevia rebaudiana, variedad criolla INIFAP C01, producidas en los municipios de Muna y Mocochá (Yucatán, México). Métodos: se administraron por vía oral extractos acuosos y etanólicos de hojas (HAMU y HEMU, respectivamente) y tallos procedentes de Muna (TAMU y TEMU, respectivamente), así como extractos acuosos y etanólicos de hojas (HAMO y HEMO, respectivamente) y tallos de Mocochá (TAMO y TEMO, respectivamente), a ratas Wistar macho en las que se indujo un SM. Se registraron los pesos y se midieron los niveles de presión arterial (PA) y glucosa en sangre, así como los niveles de malondialdehído (MDA) y superóxido-dismutasa (SOD) en plasma sanguíneo. Resultados: TAMU y HAMO mostraron porcentajes de reducción del peso del 1,91 % y 1,57 %, respectivamente. HEMU y HAMU mostraron porcentajes de reducción de la presión arterial sistólica (PAS) y diastólica (PAD) del 30,47-29,31 % y 36,98-36,69 %, respectivamente. En el test de tolerancia oral a la glucosa (TTOG), HEMU mostró porcentajes de reducción de la glucosa sanguínea del 10,94 % en el día uno y del 14,83 % en el día 30. TEMO y TAMO mostraron una menor concentración de MDA, de 7,0 y 7,3 μM, respectivamente, y HEMU y TEMU mostraron una mayor concentración de SOD, de 1,29 y 1,12 U/mL, respectivamente. Conclusiones: los extractos de S. rebaudiana pueden ayudar a controlar el aumento de peso, disminuir las cifras de presión arterial y la incidencia de diabetes, y reducir el daño oxidativo.

Abstract The objective was to isolate and characterize the proteins of chia seeds cultivated in the Mexican southeast. The main protein fraction was glutelins (42.94%) that had the highest Water Absorption Capacity (WAbC). Prolamins had the highest Water Adsorption Capacity (WAdC) (1.83 g/g). Glutelins registered the highest Water Holding Capacity (WHC). A higher Oil Holding Capacity (OHC) of chia protein fractions was registered in globulins and a higher Organic Molecule Absorption Capacity (OMAbC) was registered in albumin fractions (5.5 g/g of sample). At pH 2, 4 and 6, the glutelins registered a higher Emulsifying Capacity (EC) while, at pH 8 and 10, the prolamins recorded a higher EC percentage. Chia fractions registered the highest Foam Capacity (FC) values at pH 8 for globulins and pH 2 for albumins, prolamins and glutelins. Foaming and emulsifying stability (FS and ES) was greatly influenced by pH.

Abstract Introduction: noncommunicable diseases (NCDs) are the main cause of death worldwide. Secondary metabolites from plant sources such as Cnidoscolus aconitifolius may be used as adjuvants in the prevention of diseases related to oxidative stress and inflammation such as NCDs. Objective: the in vitro antioxidant and anti-inflammatory activities associated with biologically active compounds in C. aconitifolius extracts were evaluated. Methods: the contents of phenols, flavonoids, flavonones and hydroflavonoles were determined. The potential antioxidant activity was determined with 1,1-Diphenyl-2-picrylhydrazyl (DPPH) and 2,2’-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) assays, and angiotensin-converting enzyme (ACE) activity. For anti-inflammatory activity quantitative PCR and enzyme-linked immunosorbent assay (ELISA) tests were used in macrophages derived from THP-1 monocytes and stimulated with LPS. Results: the aqueous extract recorded the highest phenolic content (70.61 ± 0.07 g/100 g of extract), and the ethanolic extract registered the highest content in flavonoids (47.76 ± 4.84 g/100 g of extract), flavonones and dihydroflavonoles (70.10 ± 7.29 g/100 g of extract). The acetone extract obtained the highest DPPH inhibition (49.85 ± 5.30 %), while the ethanolic extract showed the highest ABTS inhibition (41.01 ± 3.81 %). The etanolic and aqueous extracts had the highest ACE inhibition. The ethanolic extract had the highest anti-inflammatory activity, decreasing gene expression for TNF-α by 39.78 % and for IL-6 by 97.81 %, and their production by 46 % and 48.38 %, respectively, in macrophages stimulated with LPS. Conclusions: these extracts demonstrated in vitro their antioxidant and anti-inflammatory potential due to their content of bioactive compounds.

Resumen Introducción: las enfermedades crónicas no transmisibles (ECNT) son la principal causa de muerte en todo el mundo. Los metabolitos secundarios provenientes de fuentes vegetales como Cnidoscolus aconitifolius pueden usarse como coadyuvante en la prevención de las enfermedades relacionadas con el estrés oxidativo y la inflamación, tales como las ECNT. Objetivo: se evaluó la actividad antioxidante y antiinflamatoria in vitro de los compuestos biológicamente activos de extractos de C. aconitifolius. Métodos: se determinó el contenido de fenoles, flavonoides, flavanonas e hidroflavonoles. El potencial antioxidante se determinó con los ensayos de 1,1-difenil-2-picrilhidrazilo (DPPH), ácido 2,2’-azinobis (3-etilbenzotiazolina-6-sulfónico) (ABTS) y la actividad inhibitoria de la enzima convertidora de la angiotensina (ACE). Para la actividad antiinflamatoria se utilizaron la reacción en cadena de la polimerasa (PCR) cuantitativa en tiempo real y el ensayo por inmunoabsorción ligado a enzimas (ELISA) en macrófagos diferenciados de monocitos THP-1 y estimulados con lipopolisacárido (LPS). Resultados: el extracto acuoso registró el mayor contenido de fenoles (70,61 ± 0,07 g/100 g de extracto) y el extracto etanólico registró el mayor contenido de flavonoides (47,76 ± 4,84 g/100 g de extracto), flavanonas y dihidroflavonoles (70,10 ± 7,29 g/100 g de extracto). El extracto acetónico registró la mayor inhibición del radical DPPH (49,85 ± 5,30 %) mientras que el etanólico presentó la mayor inhibición del radical ABTS (41,01 ± 3,81 %). Los extractos etanólico y acuoso inhibieron la ECA. El extracto etanólico tuvo la mayor actividad antiinflamatoria al reducir la expresión génica de TNF-α en un 39,78 % y la de IL-6 en un 97,81 %, y su producción en un 46 % y un 48,38 %, respectivamente. Conclusiones: los extractos mostraron in vitro su potencial antioxidante y antiinflamatorio por su contenido en compuestos bioactivos.

ABSTRACT. Apis mellifera propolis has been used in ethnobotany and its compounds and therapeutic properties have been evaluated in various studies. Propolis from Maxcanú, Tizimín and Huhí, Yucatán, México were analyzed, determining the bioactive compounds (BC) of ethanolic extracts (PEE) and their potential use in the control of blood pressure, diabetes, and their antioxidant capacity. PEE was prepared by mixing 6 g of propolis with 20 mL of 95% ethanol, stirring daily for 28 days. BC were identified using HPLC and in vitro assays were performed on their antioxidant activity, ACE-I inhibition, and antidiabetic properties. Total phenols and flavonoids were between 1.27 ± 0.02 and 25.95 ± 0.99 mg GAE g-1 and 65.06 ± 3.48 and 85.64 ± 4.09 mg CE g-1 dry extract. The results of the in vitro assays were positive and a close relationship with the total content of flavonoids was detected, with epicatechin and p-coumaric being the main components identified. According to the results, the Huhí PEE had the highest values in all the assays, as well as the BC content. This study demonstrates that PEE can be used as a potential alternative in the treatment of certain diseases due to the therapeutic properties that exhibits.

RESUMEN. El propóleo de Apis mellifera ha sido utilizado tradicionalmente en la etnobotánica y en diversos estudios se han evaluado sus compuestos y propiedades terapéuticas. En este estudio se analizaron propóleos provenientes de las localidades de Maxcanú, Tizimín y Huhí, en Yucatán, México, determinando los compuestos bioactivos (CB) de extractos etanólicos (EEP) y su uso potencial en el control de la presión arterial, diabetes y su capacidad antioxidante. El EEP se preparó a partir de 6 g de propóleo mezclados con 20 mL de etanol al 95%, con agitación diaria durante 28 días. Los CB se identificaron usando HPLC y se realizaron ensayos in vitro sobre su actividad antioxidante, inhibición de la ECA-I y propiedades antidiabéticas. Los fenoles y flavonoides totales estuvieron entre 1.27 ± 0.02 y 25.95 ± 0.99 mg EAG g-1 y 65.06 ± 3.48 y 85.64 ± 4.09 mg EC g-1 extracto seco. Los resultados de los ensayos in vitro fueron positivos y se encontró una estrecha relación entre ellos y el contenido total de flavonoides, siendo epicatequina y p-cumarico los principales componentes identificados. De acuerdo con los resultados, el EEP de Huhí fue el que presentó los valores más altos en todos los ensayos, así como en el contenido de CB. Este estudio pone en evidencia que el EEP podría usarse potencialmente como alternativa en el tratamiento de ciertas enfermedades debido a las propiedades terapéuticas in vitro que se encontraron.

Abstract Introduction: Stevia rebaudiana extracts can be used as a sweetener due to their glycoside content: specifically stevioside and rebaudioside. Both compounds have adequate pharmacological characteristics for human consumption. Objective: the aim of this study was to standardize the formulation of marmalades using nopal-pineapple-stevia aqueous extract ratios. Methods: the products were evaluated to determine their physicochemical properties, in vitro inhibition of α-amylase and glycemia in healthy volunteers. Storage study was conducted for 20 days at room temperature 23-30 °C and relative humidity 80-85%. Results: incorporation of stevia significantly modified physicochemical properties like °Brix, color and flow index. After storage, the presence of molds and bacteria were not detected. Sensory evaluation indicated that marmalade with 50% stevia replacement was equally accepted as marmalade with sucrose. Marmalade with 50 and 100% of stevia inhibited 35.89 and 38.50% of the α-amylase activity. After an intake of 30 g, it seems that marmalades with stevia had a significant effect on the glycemia of the volunteers. Conclusions: however, further studies with larger doses of nopal-pineapple-stevia marmalade and consumed for longer in both healthy volunteers and patients with diabetes are needed to achieve results that are more precise.

Resumen Introducción: los extractos de Stevia rebaudiana pueden ser utilizados como edulcorante debido a su contenido de glucósidos: específicamente esteviósido y rebaudiósido. Ambos compuestos presentan características farmacológicas adecuadas para el consumo humano. Objetivos: el objetivo del presente trabajo fue estandarizar formulaciones de mermeladas con diferentes proporciones de nopal-piña-extracto acuoso de stevia. Métodos: se estudiaron las propiedades fisicoquímicas de las mermeladas, su capacidad de inhibir in vitro a la enzima α-amilasa y la glicemia en voluntarios sanos. Los estudios de vida de anaquel se efectuaron durante 20 días a temperatura ambiente 23-30 °C y humedad relativa 80-85%. Resultados: la incorporación de estevia modificó significativamente los grados Brix, el color y el índice de flujo de las mermeladas. Concluido el estudio de anaquel, no se observó la presencia de hongos o bacterias. La evaluación sensorial indicó que la mermelada con 50% de estevia fue aceptada con el mismo nivel de agrado que la mermelada con sacarosa. Las mermeladas con 50 y 100% de estevia inhibieron la actividad de la α-amilasa con valores de 35.89% y 38.50%, respectivamente. Posterior a una ingesta de 30 g de mermelada se observó un efecto significativo en la glicemia de voluntarios sanos. Conclusiones: deberán efectuarse estudios de consumo prolongado y de mayores cantidades de mermelada tanto en voluntarios sanos como con diabetes para obtener resultados más precisos.

The present article provides a literature review about the biological potential of Melipona beecheii. The objective is to project some tendecies in research about nutraceutical aspects related to the bioactive compounds presents in the honey of this stingless bee species, known for its medicinal properties traditional, in the Yucatan Peninsula. Currently, there is strong evidence that M. beecheii honey has bioactive compounds such as proteins, flavonoids and polyphenols with high antioxidant activity. The scientific evidence allows to propose to the honey of stingless bee species as a potential alternative for the obtention of bioactive compounds with antioxidant activity in the Yucatan Peninsula and natural food being proposed to reduce some diseases associated with stress oxidative physiological human cells. However, there is still information that explains such antioxidant activity, therefore, according to the literature reviewed, sees the need to address nutraceuticals and functional aspects correlated with the bioactive compounds present in this honey bee.

El presente artículo provee una revisión de literatura sobre el potencial biológico de la miel de Melipona beecheii. El objetivo es proyectar algunas tendencias en investigación sobre los aspectos nutracéuticos relacionados con los compuestos bioactivos presentes en la miel de esta especie de abeja sin aguijón, reconocida por sus características medicinales tradicionales, en la Península de Yucatán. Actualmente existe una evidencia sólida que demuestra que la miel de M. beecheii posee compuestos bioactivos tales como proteínas, flavonoides y polifenoles, con alta actividad antioxidante. La evidencia científica obtenida permite proponer a la miel de esta especie de abeja sin aguijón como alternativa para la obtención de compuestos bioactivos con actividad antioxidante en la Península de Yucatán, y ser propuesto como alimento natural para reducir algunos tipos de cáncer asociados al estrés oxidativo de las células fisiológicas del ser humano. Sin embargo, aún falta información que explique dicha actividad antioxidante; por lo tanto, de acuerdo con la literatura revisada, se ve la necesidad de abordar aspectos nutracéuticos y funcionales en correlación con los compuestos bioactivos presentes en esta miel de abeja.

Introduction: the change in lifestyle and nutrition has led to growing obesity; in Mexico there has been significant increase in its prevalence. The problem was thought limited to adult population, but it also affects children, adolescents and young adults. Obesity at an early stage of life, subsequently leads to obesity in adult life. Apparently few attempts with College students have being reported. Objetives: relate the effect of anthropometry and physical condition with dietary habits, physical activity and smoking addiction in students of a public university of Mexico, in order to establish a diagnosis of their nutritional status. Methods: one hundred and seventy eight students, were measured obtaining: body weight, height, waist and hip circumference, body composition and blood pressure. A questionnaire to determine their physical activity was applied, a dietary assessment was also collected and socioeconomic status was established. Data were analyzed statistically by the method of least squares. Results and Discussion: individuals classified as over-weighted, with obesity class 1 and class 2, accounted for 48.87% of the total population; more overweight and obesity was found in men compared with women, affecting negatively the value of blood pressure. This deteriorating health was attributable to poor eating habits: skipping breakfast and consumption of fast food. Smoking was revealed as a major risk factor since it adversely affected nutritional status.

Introducción: el cambio en el estilo de vida y la nutrición ha dado lugar a una creciente obesidad; en México se ha registrado un notable incremento en su prevalencia. El problema se creía limitado a la población adulta, pero también está presente en niños, adolescentes y en adultosjóvenes. La obesidad en una etapa inicial de la vida adulta, conlleva a su desarrollo posteriormente. Se han llevado a cabo pocos estudios con estudiantes universitarios. Objetivos: relacionar el efecto de la antropometría y de la condición física con los hábitos alimentarios, la actividad física y el tabaquismo de estudiantes de una universidad pública de México con la finalidad de establecer un diagnóstico del estado nutricional. Métodos: ciento setenta y ocho estudiantes participaron, obteniéndose su peso, altura, circunferencia de la cintura y cadera, composición corporal y presión arterial. Se aplicó un cuestionario para conocer su actividad física, se realizó una evaluación dietética y se estableció su nivel socioeconómico. Los datos se analizaron estadísticamente mediante el método de mínimos cuadrados. Resultados y Discusión: los individuos que se clasificaron en sobrepeso, obesidad clase 1 y obesidad clase 2, representaron el 48.87% del total, observándose más sobrepeso y obesidad en los hombres en comparación con las mujeres, reflejándose en un elevado valor de la presión arterial. Este deterioro en la salud se pudo atribuir a malos hábitos alimentarios como el hecho de no realizar el desayuno, así como dedicarle poco tiempo al consumo de alimentos, adquiriendo comida rápida. El tabaquismo se reveló como un factor de riesgo importante, ya que afectó negativamente al estado nutricional.

The recent introduction of the cultivation of Stevia rebaudiana Bertoni in Mexico has gained interest for its potential use as a non-caloric sweetener, but some other properties of this plant require studies. Extracts from two varieties of S. rebaudiana Bertoni adapted to cultivation in Mexico were screened for their content of some phytochemicals and antioxidant properties. Total pigments, total phenolic and flavonoids contents of the extracts ranged between 17.7-24.3 mg/g, 28.7-28.4 mg/g, and 39.3-36.7 mg/g, respectively. The variety "Criolla" exhibited higher contents of pigments and flavonoids. Trolox equivalent antioxidant capacity ranged between 618.5-623.7 mM/mg and DPPH decolorization assay ranged between 86.4-84.3%, no significant differences were observed between varieties. Inhibition of â-carotene bleaching ranged between 62.3-77.9%, with higher activity in the variety "Criolla". Reducing power ranged between 85.2-86% and the chelating activity ranged between 57.3-59.4% for Cu2+ and between 52.2-54.4% for Fe2+, no significant differences were observed between varieties. In conclusion, the results of this study showed that polar compounds obtained during the extraction like chlorophylls, carotenoids, phenolic compounds and flavonoids contribute to the antioxidative activity measured. The leaves of S. rebaudiana Bertoni could be used not only as a source of non-caloric sweeteners but also naturally occurring antioxidants.

La reciente introduccion del cultivo de Stevia rebaudiana Bertoni en Mexico ha ganado interes debido a su potencial uso como fuente de edulcorantes no caloricos, pero otras propiedades de esta planta aun requieren de estudios. Extractos de hojas de dos variedades de S. rebaudiana Bertoni adaptadas al cultivo en Mexico fueron evaluados en cuanto a su contenido de algunos fitoquimicos y sus propiedades antioxidantes. El contenido de pigmentos, fenoles totales y flavonoides en los extractos, oscilo entre 17.7-24.3 mg/g, 28.7-28.4 mg/g, y 39.3-36.7 mg/g, respectivamente. La variedad �"Criolla�" exhibio los mayores contenidos de pigmentos y flavonoides. La capacidad antioxidante equivalente de Trolox oscilo entre 618.5-623.7 mM/mg y el ensayo de decoloracion del radical DPPH oscilo entre 86.4-84.3%, no observandose diferencias significativas entre ambas variedades. La inhibicion de la decoloracion del β-caroteno oscilo entre 62.3-77.9%, siendo mayor en la variedad �"Criolla�". El poder reductor oscilo entre 85.2-86%, las capacidades quelantes de cobre y hierro oscilaron entre 57.3-59.4% y 52.2-54.4%, respectivamente, no observandose diferencias significativas entre ambas variedades. En conclusion, los resultados de este estudio demuestran que los compuestos de naturaleza polar obtenidos durante la extraccion, tales como pigmentos clorofilicos, carotenoides, compuestos fenolicos y flavonoides contribuyen a la actividad antioxidante. Las hojas de S. rebaudiana Bertoni podrian ser empleadas no solo como fuente de edulcorantes no caloricos, sino tambien como fuente de antioxidantes de origen natural.

Phaseolus lunatus protein concentrates and the proteases Alcalase(R) and Pepsin-Pancreatin were used for the production of protein hydrolysates that inhibit angiotensin-I converting enzyme (ACE). Protein concentrate obtained from germinated and ungerminated seeds flour was hydrolyzed with Alcalase(R) at enzyme/substrate ratio (E/S) 1/10 and during 0.5 and 2.0 h, respectively. On the other hand, protein concentrate obtained from ungerminated (E/S: 1/10) and germinated (E/S: 1/50) seeds flour was sequentially hydrolyzed with Pepsin-Pancreatin during 1.0 and 3.0 h, respectively. Peptide fractions with ACE inhibitory activity in a range of 0.9 to 3.8 µg/mL were obtained by G-50 gel filtration chromatography and high- performance liquid chromatography C18 reverse phase chromatography. The observed amino acid composition suggests a substantial contribution of hydrophobic residues to the peptides’ inhibitory potency, which potentially acts via blocking of angiotensin II production. These results show that P. lunatus seed proteins are a potential source of ACE inhibitory peptides when hydrolyzed with Alcalase(R) and Pepsin-Pancreatin.

Unsaturated fatty acids are of current interest for their potential to reduce cardiovascular disease, the first cause of death worldwide. By its content of essential fatty acids, fish is one of the food products most in demand among the population. One of the most popular processes for fish consumption in Yucatan Peninsula, Mexico is frying. However, studies show that frying food causes changes in the composition generating trans fatty acids. The objective of this study was to evaluate the fatty acid profile of Mero (Epinephelus morio) crude and processed with different types of commercial oil. The results showed a fat content in raw E. morio of 1.68%. The percentage of oil extracted and absorbed by the product to be fried with corn oil, sunflower/canola, soybean and safflower was found in a range of 2.3-3.93 and 26.95-57.25%, respectively. The lipid profile obtained by GC-MS suggested the formation of trans fatty acids by isomerization and effect of temperature frying. However essential fatty acids such as oleic and linoleic acids were absorbed by E. morio being fried in sunflower oil and safflower/ canola, respectively.

Los ácidos grasos insaturados son de interés en la actualidad por su potencial para reducir enfermedades cardiovasculares, primera causa de muerte en el mundo. Por su contenido de ácidos grasos esenciales, el pescado es uno de los productos alimenticios de mayor demanda entre la población. Uno de los procesos más populares para el consumo de pescado en la Península de Yucatán, México es la fritura. Sin embargo, estudios demuestran que la fritura de alimentos genera cambios en la composición de lípidos generando ácidos grasos trans. El objetivo del presente estudio fue evaluar el perfil de ácidos grasos del Mero (Epinephelus morio) crudo y procesado con diferentes tipos de aceite comercial. Los resultados mostraron un contenido graso en E. morio crudo de 1.68%. El porcentaje de aceite extraído y absorbido por el producto al ser frito con aceite de maíz, girasol/canola, soya y cártamo se encontró en un rango de 2.3-3.93 y 26.9557.25%, respectivamente. El perfil lipídico obtenido por CG-MS sugirió la formación de ácidos grasos trans por isomerización y efecto de la temperatura de freído. Sin embargo ácidos grasos esenciales como el oleico y linoleico fueron absorbidos por E. morio al ser frito con aceite de cártamo y girasol/canola, respectivamente.

The consumption of gummy candy is widespread among people of different ages but mainly by children. The formulation of this product requires sugar that contributes to their flavor and consistency, but with the undesirable effect of increase its glycemic index and its calories from simple sugars; it is known that consumption of products with these last two characteristics are related to childhood obesity, which is a worldwide growing disease. Stevia rebaudiana is a plant that naturally contains glycosides with high sweetening power and it is considered safe for consumption. Therefore the aim of this work was to develop a gummy candy reduced in calories by replacing sugar with Stevia rebaudiana B., and analyzes its texture and acceptability. Gummy candy were prepared with different percentage of sugar reduction (-20, -40, -60, -80 and -100%) and a product control (100% sugar); gummy elasticity was assess by displacement and maximum deformation, whereas resistance was evaluated by breaking strength; those gummies with better elasticity and resistance parameters underwent proximate analysis and sensory evaluations with a unstructured scale applied to 90 school children aged between 6 and 10 years old. A gummy candy reduced in calories with 60% sugar substitution with S. rebaudiana was developed; the level of satisfaction in school children was statistically the same respect to the gummy made of 100% sugar (p <0.05).

Las gomitas son golosinas de consumo difundido entre personas de diferentes edades aunque principalmente por los niños. La formulación de este producto requiere azúcar que contribuye a su sabor y consistencia, aunque con el efecto indeseable de incrementar su índice glicémico y calorías provenientes de azúcares simples; se sabe que el consumo de productos con estas dos últimas características están relacionados con la obesidad infantil, la cual es una enfermedad en crecimiento a nivel mundial. La Stevia rebaudiana es una planta que naturalmente contiene glucósidos con alto poder endulzante y que se considera segura para su consumo. El objetivo de este trabajo fue desarrollar una golosina tipo "gomita" reducida en calorías mediante la sustitución de azúcares con Stevia rebaudiana B. y analizar su textura y grado de aceptación. Se elaboraron gomitas con diferente porcentaje de reducción de azúcar (-20, -40, -60, -80 y -100%) y un producto control (100% azúcar), a las cuales se evaluó su desplazamiento y deformación máxima para evaluar la elasticidad, así como la fuerza de ruptura para determinar la resistencia; aquellas gomitas con mejores parámetros de elasticidad y resistencia se les realizaron el análisis proximal y el análisis sensorial con una escala no estructurada aplicada a 90 niños escolares con edades comprendidas entre 6 y 10 años. Se desarrolló una golosina tipo "gomita" reducida en calorías con un porcentaje de sustitución de azúcar de hasta 60% con S. rebaudiana, cuyo nivel de agrado en niños escolares fue estadísticamente igual comparado con la gomita realizada con 100% de azúcar (p<0.05).

The objective of this study was to characterize the chemical and functional properties of Mexican chia (Salvia hispanica) gums extracted from defatted whole and crushed nutlets using the Soxhlet and SFE-CO2 methods. Chia gums have interesting chemical and functional properties for the food industry. The oil and gum yields were in the range of 1.98-16.42% and 5.81-12.60%, respectively. The defatting procedure did not affect significantly the oil and gum extraction; the nutlet type (whole or crushed) was the only parameter influencing the yield. The proximate composition and the protein and fiber contents of chia gum were evaluated. Low contents of protein and fiber and high NFE levels were found in whole nutlet gums. The functional properties of chia gum extracted from whole and crushed nutlets with the Soxhlet and SFE-COs methods showed the following ranges of water absorption capacity of 62.64 to 143.66 g/g, water adsorption capacity of 0.69 to 1.35 g/g, and water and oil holding capacity of 100 to 149.28 g/g and19.5 to 40.4 g/g, respectively. The rheological behavior exhibited by the gums was pseudoplastic or shear thinning. From a functional perspective, chia gum is an important food component due its emulsifier and stabilizer potentials.

Stevia rebaudiana leaves and their glycosides have been recently and significantly used so important as sweeteners. However, it has been reported an anti-hyperglycemic effect of the extract and a glycoside. The aim of this study was to quantify S. rebaudiana glycosides, assess cytotoxicity of the extract and its acute and chronic effect on blood glucose in animal models and in human. The glycosides of the Morita II and Criolla extract were quantified by HPLC, using a C18 column (250 mm x 4.6 mm and particle size of 5 uM) with UV detection at 210 nm, mobile phase of acetonitrile/sodium phosphate buffer 10 mmol/L, pH 2.6 (32:68 v/v). Cytotoxicity study was performed in Vero cells, whereas an intraperitoneal glucose tolerance test (IPGTT) and a chronic consumption assay (4 weeks) were executed in an animal model of diabetes; finally the glycemic index (G.I.) was determined in healthy individuals. The glycoside content is higher in the Morita variety II although both had a CC50 >300 μg/mL. The areas under the curve of the IPGTT and fasting glucose of the animals were not significantly different (p> 0.05) and the I.G. extract was 11.11 %, which classifies the extract as low I.G. The extract of S. rebaudiana Morita II has a low glycemic index and, in the doses tested, is not cytotoxic nor has acute or chronic effect on blood sugar, which makes it a safe sweetener.

Las hojas de Stevia rebaudiana y sus glucósidos recientemente se han comenzado a utilizar de manera importante como edulcorantes. Sin embargo, existen reportes acerca del efecto antihiperglucemiante de extractos y un componente glucósido. El objetivo de este trabajo fue cuantificar los glucósidos de S. rebaudiana, evaluar la citotoxicidad y el efecto de la administración aguda y crónica del extracto sobre la glucemia en modelos animales como en humanos. Los glucósidos de los extracto de las variedades Morita II y Criolla se cuantificaron por HPLC, empleando una columna C18 (250 mm x 4.6 mm y tamaño de partícula de 5μm), con detector UV a 210 nm, fase móvil de acetonitrilo/amortiguador fosfato de sodio 10 mmol/L, pH 2.6 (32:68 v/v). Se realizó un estudio de citotoxicidad en células Vero, una prueba de tolerancia a la glucosa intraperitoneal y ensayo de consumo crónico (4 semanas) en un modelo animal de diabetes y finalmente, se determinó el índice glicémico (I.G) en individuos sanos. El contenido de glucósidos fue mayor en la variedad Morita II aunque la CC50 en ambas es >300 μg/mL. Las áreas bajo la curva de la IPGTT así como la glucosa en ayuno de los animales no fueron significativamente diferentes (p>0.05) y el I.G. del extracto fue 11.11%, lo cual lo clasifica como I.G. bajo. El extracto de S. rebaudiana Morita II es de bajo índice glicémico y, en las dosis evaluadas, no es citotóxico ni posee efecto agudo o crónico sobre la glucemia, lo cual lo hace un edulcorante inocuo.

As the last century saw a decline in the burden of nutritional deficiency and infectious disease, the global burden of chronic disease, cardiovascular disease (CVD) in particular, is increasing. CVD is the leading cause of death in the developed countries. Significant research efforts on the prevention and treatment of this disease have identified elevated plasma cholesterol as a primary risk factor for CVD. Although CVD progresses with hypercholesterolemia, it seems possibility to delay and prevent its development through improvement of diet. Recent findings demonstrate that protein concentrates, protein hydrolysates, and peptides derived from vegetables may promote a significant decrease in blood cholesterol concentration. This reduction in cholesterol and lipid levels by protein, protein hydrolysates, and peptides can be the result of dietary changes, reduced cholesterol biosynthesis, changes in bile acid synthesis, and reduced absorption of lipid cholesterol and bile acid. Combination drug/diet therapies may reduce the number of drug prescriptions, the progressive rise in "optimal" drug dosage and costs associated with pharmaceutical management of disease. These bioactive vegetable proteins, hydrolysates and peptides may be used in formulation of functional foods, nutraceuticals, and natural drugs because of their health benefit effects suggesting their use as an alternative in treatment of various dyslipidemias, and a potential agent for reducing cardiovascular diseases risk factors.

En el siglo pasado se observó un decaimiento tanto de la deficiencia nutricional como de las enfermedades infecciosas. Por el contrario se incrementó la mortalidad asociada a enfermedades crónicas, particularmente las enfermedades cardiovasculares. La investigación enfocada a la prevención y tratamiento de estas enfermedades ha identificado a la elevación del colesterol en plasma como un factor primario de riesgo para el desarrollo de enfermedades cardiovasculares. Sin embargo el desarrollo de las enfermedades cardiovasculares asociadas a la hipercolesterolemia puede retrasarse o prevenirse mediante mejoras en la dieta. Descubrimientos recientes han demostrado que la ingesta de concentrados proteínicos, hidrolizados proteínicos y péptidos de origen vegetal puede reducir la concentración de colesterol en sangre. La reducción de los niveles de lípidos y colesterol causada por proteínas, hidrolizados y péptidos podría deberse a la modificación en sí de la dieta, a la reducción de la síntesis de colesterol, a cambios en la síntesis de ácidos biliares o a la reducción de la absorción de colesterol y ácidos biliares. Las terapias que combinan fármacos con modificaciones de la dieta, pueden reducir significativamente la dosis de los fármacos ingeridos, el aumento progresivo de dicha dosis y los costos asociados al tratamiento de la enfermedad. Las proteínas, hidrolizados y péptidos de origen vegetal podrían ser utilizados como nutracéuticos, como parte de la formulación de alimentos funcionales o el diseño de medicamentos de origen natural, debido a sus efectos benéficos sobre la salud. Potenciado de esta forma su empleo en el tratamiento de dislipidemias y de patologías relacionadas.
