RESUMO: Revestimentos comestíveis à base de polissacarídeos têm sido aplicados em pedaços de frutas e vegetais antes da secagem devido ao seu potencial de melhorar as características físicas e nutricionais de alimentos vegetais desidratados. No presente estudo, foram determinadas as propriedades físicas e térmicas de filmes à base de pectina, com e sem a incorporação de subprodutos obtidos do processamento da goiaba vermelha. Essas propriedades permitem prever o provável comportamento desses filmes quando usados como cobertura comestível em pedaços de goiaba, durante e após a sua desidratação. Assim, foram determinadas as características estruturais e morfológicas e as propriedades físicas, térmicas e de sorção dos filmes e da polpa do fruto, utilizando microscopia eletrônica de varredura (MEV), calorimetria exploratória diferencial (DSC), difração de raios X (DRX) e método gravimétrico estático para determinação das curvas de sorção de água. A adição de subprodutos proporcionou cristalinidade ao filme de pectina, atribuída ao seu teor de celulose, e dificilmente alterou a capacidade de retenção de água dos filmes de pectina. No entanto, a pectina contribuiu para apresentar uma umidade de sorção ligeiramente superior no equilíbrio, quando comparada à polpa de goiaba. As temperaturas de transição vítrea encontradas em teores de umidade extremamente baixos, tanto na polpa quanto nos filmes com subprodutos adicionados, indicaram que em teores de umidade intermediários, o conjunto fruta / filme estava no estado borracha em temperatura ambiente, proporcionando maciez ao produto desidratado. As imagens mostraram boa integração dos filmes comestíveis com a superfície dos pedaços de goiaba.

ABSTRACT: Edible coatings based on polysaccharides have been applied on pieces of fruits and vegetables before drying because of their potential to improve physical and nutritional characteristics of dehydrated plant foods. In the present study, physical and thermal properties of pectin-based films, with and without the incorporation of by-products obtained from the processing of red guava, were determined. These properties allow one to predict the likely behaviour of these films when used as edible coatings on guava pieces, during and after their dehydration. Thus the structural and morphological characteristics and the physical, thermal and sorption properties of the films and of the fruit pulp were determined, using scanning electronic microscopy (SEM), differential scanning calorimetry (DSC), X-ray diffraction (XRD) and the static gravimetric method to determine the water-sorption curves. The addition of by-products provided crystallinity to the pectin film, attributed to their cellulose content, and hardly altered the water retention capacity of the pectin films. However, the pectin contributed to presenting a slightly higher sorption moisture at equilibrium, as compared to the guava pulp. The glass transition temperatures reported at extremely low moisture contents, both in the pulp and in the films with added by-products, indicated that at intermediate moisture contents, the fruit/film ensemble was in the rubbery state at room temperatures, providing softness to the dehydrated product. The images showed good integration of the edible films with the surface of the guava pieces.

RESUMO: O objetivo desse trabalho foi avaliar a influência do branqueamento na desidratação osmótica de mamão Formosa em soluções de sacarose. A caracterização da invertase presente nos frutos também foi realizada. O branqueamento possivelmente danificou a estrutura celular do vegetal resultando em maior perda de água, ganho de açúcar e, consequentemente, maior coeficiente de difusão do que os mamões frescos após a desidratação osmótica. A invertase extraída da polpa do mamão apresentou temperatura ótima de 45 °C e pH ótimo de 4.8. Considerando o baixo custo de produção do mamão e as características da invertase, essa fruta apresenta-se como potencial fonte de extração da enzima.

ABSTRACT: This research evaluated the influence of blanching on osmotic dehydration in sucrose solutions of papaya of Formosa cultivar. The characterization of invertase present in the fruits was also done. Blanching possibly caused damages to the cellular structure resulting in higher water loss, sugar gain and, thus, effective diffusion coefficients than fresh papayas during osmotic dehydration. The invertase extracted from papaya pulp presented optimum temperature of 45 °C and optimum pH of 4.8. Considering the low production cost of papaya and the invertase characteristics, the fruit shows to be a potential source for the referred enzyme extraction.

Isotermas de sorção de umidade de abóboras frescas e branqueadas termicamente foram determinadas em três temperaturas (30, 50 e 70 °C), utilizando o método estático gravimétrico padrão. Os modelos de GAB, Oswin, BET, Halsey e Henderson foram testados e, com exceção do modelo de Henderson, mostraram ajuste satisfatório aos dados experimentais. O modelo de GAB foi usado para analisar a habilidade do ajuste na descrição do tipo de isoterma. A forma das isotermas de dessorção de abóbora fresca e branqueada determinadas a 30 e 50 °C foi intermediária aos tipos II e III e a 70 °C foi do tipo II para abóbora branqueada e próxima ao tipo II para abóbora fresca. A influência do branqueamento sobre a redução da umidade de equilíbrio das amostras foi muito pequena em comparação com amostras frescas e foi relacionada à perda de sólidos solúveis durante o pré-tratamento. Os valores de calor isostérico de sorção para tecido de abóbora indicaram que maior calor foi requerido para remover água das amostras frescas do que das amostras branqueadas.

Moisture desorption isotherms of fresh and heat blanched pumpkins (Cucurbita moschata) were determined at three temperatures (30, 50 and 70 °C), using the standard, static-gravimetric method. The GAB, Oswin, BET, Halsey, and Henderson models were tested and, with the exception of the Henderson model, showed satisfactory fits to the experimental data. The GAB model was used to analyze the fitting ability to describe the isotherm type. The shape of the desorption isotherms of fresh and blanched pumpkin at 30 and 50 °C was intermediate to types II and III, and at 70 °C it was of type II for the blanched pumpkin and close to type II for the fresh sample. The influence of blanching on the decrease in equilibrium moisture was very small compared to the fresh samples and it was related to the loss of soluble solids during the pre-treatment. The isosteric heat of sorption measures indicated that a larger amount of heat was required to remove the water from the fresh samples than from the blanched ones.

O objetivo deste trabalho foi avaliar os efeitos de pré-tratamentos osmóticos sobre a cinética de secagem de fatias de abóbora (Cucurbita moschata) e sobre características sensoriais do produto seco, utilizando sacarose e NaCl como solutos. Condições de pré-tratamento foram selecionadas com base na relação perda de água/ganho de solutos e na limitação de conteúdo de sal no produto final. Amostras tratadas nas condições selecionadas (50% de sacarose; 47% de sacarose e 3% de NaCl; 40% de sacarose; 37% de sacarose e 3% de NaCl, p/p, 1 hora) e amostras não tratadas foram secas com ar aquecido a 70 °C, 2 m/s. A cinética de secagem foi descrita pela Segunda Lei de Fick. Coeficientes de difusão efetivos de água foram determinados considerando-se a espessura inicial e a espessura média das fatias durante a secagem. As difusividades determinadas em amostras tratadas e não tratadas resultaram próximas quando a espessura média foi utilizada. Amostras tratadas apresentaram taxas de secagem maiores que amostras sem tratamento, mostrando que os pré-tratamentos melhoraram a eficiência do processo. Os tratamentos também melhoram a cor e a aparência geral das fatias secas, em relação às amostras sem tratamento.

The objective of this work was to evaluate the effects of osmotic pre-treatments on the air-drying kinetics of sliced pumpkin (Cucurbita moschata) and on the sensory quality of the dried pumpkin, using sucrose and NaCl as solutes. Pre-treatment conditions in osmotic solutions were selected based on the water loss/solute gain ratio and on the final salt content. Pre-treated samples in the selected conditions (50% sucrose; 47% sucrose and 3% NaCl; 40% sucrose; 37% sucrose and 3% NaCl, w/w, 1 hour) and non-treated samples were dried at 70 °C, 2 m/s. The drying kinetics was described according to Fick's Second Law. Effective diffusion coefficients were determined considering the initial thickness and the average thickness of the slices during air-drying. The effective water diffusivities of pre-treated and non-treated samples were similar when average thickness was used. Drying rates of the treated samples were higher than those of the non-treated samples, showing that the pre-treatments enhanced the efficiency of convective drying. The color and the general appearance of the dried pumpkin were improved by the previous treatments in comparison to the non-treated samples.

A desidratação osmótica (DO) de fatias de carambola (Averrhoa carambola L.) em solução de sacarose foi estudada, com o objetivo de otimizar o processo. Num primeiro conjunto de experimentos, aplicou-se revestimento de coberturas comestíveis (pectina ou pectina+amido) sobre as fatias, seguido de DO em solução aquosa de sacarose (50%, p/p, 27°C). Num segundo conjunto, foi realizada secagem parcial da cobertura, em estufa, antes da DO. Num terceiro conjunto de experimentos testou-se a adição de CaCl2 na solução osmótica. A aplicação dos revestimentos antes da DO não melhorou a eficiência (máxima perda água/ganho soluto) devido à grande retenção de umidade e à fácil impregnação de sacarose nos mesmos, enquanto que o tecido vegetal sem revestimento restringiu mais o ganho de soluto e propiciou maior saída de água. A utilização de CaCl2 a 0,04M, na própria solução osmótica de sacarose, melhorou ligeiramente a eficiência do processo, em relação à solução sem o sal. A DO em solução de sacarose, sem e com a adição de CaCl2, geraram resultados positivos na qualidade sensorial da carambola em fatias, desidratadas em secador (60 e 70°C), em comparação com a fruta não tratada, sendo que a melhor temperatura de secagem foi 60°C.

Osmotic dehydration (OD) of star fruit (Averrhoa carambola L.) in sucrose solution was studied, aiming at optimizing the process. At a first set of trials, edible coating (pectin or pectin+starch) was applied on the slices followed by OD (50%, w/w, 27°C). On a second set of trials, the coatings partial drying in the oven, before OD, was also assessed. At a third set of trials, the addition of the CaCl2 in the osmotic solution itself was tested. The pectin based and pectin+starch based coatings, moist or oven-dried before the osmotic dehydration, were not viable on the process efficiency improvement (maximum water loss/solute gain) due to the high moisture retention and the easy sucrose impregnation of them. The vegetal tissue, uncoated, restrained more of the solute transfer and allowed a higher water output. The use of 0.04M CaCl2 concentration in the sucrose osmotic solution itself improved the process efficiency slightly in relation to the solution without salt. These pre-treatments also yielded positive results on the sensorial evaluation of the air-dried (60 and 70°C) star fruit slices, in comparison with the non-treated fruit, and the best temperature was 60°C
