Abstract This study describes the use of bentonite in suspension for the caffeine adsorption (pollutant of emerging concern) by taking different conditions of the pH, adsorbent mass, adsorbent calcination temperature and interferents into account. The results were compared with those obtained using bentonite immobilized in alginate beads. The acid medium has a greater efficiency for the caffeine adsorption and the adsorbent calcination temperature exerts, due to structural changes. Caffeine removal higher than 90% was obtained at optimized conditions. The Langmuir model indicated a better fit of the data and the adsorption capacity of caffeine onto bentonite. The bentonite immobilized led to a slower adsorption process in relation to the suspended.

The utilization of atomic absorption spectrometer for metformin (MET) and ranitidine (RAN) chlorohydrates determination in medicines is proposed. The spectral lines of nickel and aluminum at 232.0 and 308.2 nm were selected for MET and RAN absorbance monitoring, respectively. The results were compared to those obtained by molecular absorption spectrometry at ultraviolet range (spectrophotometry) and condutometric titration. The figures of merit obtained were adequate for MET and RAN determination in medicines. The limit of detection (LOD) of 0.01 mg L-1 obtained for MET and RAN, were similar and even lowers than those obtained by spectrophotometry and comparable with those found in the literature. The precision evaluated by relative standard deviation (RSD) was lower than 6%. The analytical application shows that in the analyzed samples the MET and RAN concentrations were in agreement with specified value in the label and the limits required by Brazilian legislation.

Resumo O objetivo do trabalho foi determinar os teores de sódio (Na) e potássio (K) em refeições servidas em um restaurante universitário da região sul do Brasil, utilizando espectrometria de emissão atômica como método analítico. Foram coletadas 30 amostras de refeições do almoço e do jantar de um restaurante universitário, referentes a 131 diferentes cardápios no período de um semestre (4 meses), levando-se em conta o consumo de todos os alimentos oferecidos no cardápio, inclusive o suco e a salada temperada. Os resultados indicaram que o teor médio de Na em uma refeição ultrapassou o limite diário recomendado pela Organização Mundial da Saúde (OMS) em 25 das 30 amostras analisadas. Observaram-se teores maiores em refeições compostas por algum tipo de alimento industrializado, como linguiças e batata palha, ou com pratos tradicionalmente temperados, como barreado. Os menores teores de Na estavam presentes em cardápios nos quais havia batata frita ou ovo. Os teores de K encontrados em 19 refeições poderiam ser considerados satisfatórios segundo a recomendação da OMS, no entanto, levando-se em conta que o consumo de K deve ser 1,75 vezes maior que o de Na em uma mesma refeição, a oferta de K foi baixa em todas as amostras analisadas.

Abstract The objective of this study was to determine the levels of sodium (Na) and potassium (K) in meals served in a university restaurant in the southern region of Brazil, using atomic emission spectrometry as the analytical method. Thirty samples of lunch and dinner meals were collected from a university restaurant, referring to 131 different menus in a single semester (four months), taking into account the consumption of all food offered on the menu, including the juice and seasoned salad. The results showed that the average Na content in a meal exceeded the daily limit recommended by the Word Health Organization (WHO) in 25 of the 30 samples analysed. Higher levels were observed in meals including some kind of processed food, such as sausages and potato sticks, or traditionally spiced dishes such as one known as ‘barreado’. The lowest Na levels were found in menus including fried potato or egg. The K levels found in 19 meals could be considered satisfactory according to the WHO recommendations, but taking into account that the consumption of K should be 1.75 times greater than that of Na in the same meal, the supply of potassium was low in all the samples analysed.

Nos últimos anos o consumo de achocolatados tem aumentado, principalmente pelo público infantil. Dessa maneira o controle de qualidade do produto em relação a sua composição, principalmente quanto à concentração dos minerais, torna-se importante para facilitar a escolha do produto pelo consumidor. Um método simples e rápido para a determinação de Fe, K e Na em amostras de achocolatado utilizando extração assistida por ultrassom foi proposto. As análises foram realizadas por fotometria de chama e espectrometria de absorção atômica com atomização em chama (FAAS). O método proposto mostrou-se simples, rápido e preciso, apresentando limites de detecção (LOD) para o método de 10 mg.100g-1 para K e Na e 0,2 mg.100g-1 para Fe, e valores de RSD menores que 13%. Foram analisadas 10 amostras de achocolatado em pó de diferentes marcas e as concentrações obtidas comparadas aos valores estabelecidos pela Tabela Brasileira de Composição de Alimentos (TACO) e aos valores informados nos rótulos dos produtos. Os resultados obtidos, para a maioria das amostras, não estavam de acordo com os valores estabelecidos na tabela TACO e com os valores informados nos rótulos.

In recent years the consumption of chocolate powder has been increasing, mainly by kids, and for this reason quality control of the product in relation to its composition, especially regarding the mineral concentrations, is important to facilitate the choice of product by the consumers. A simple and quick method for the determination of Fe, K and Na in chocolate powder samples using ultrasound assisted extraction was proposed. The measurements were carried out using photometric detection and atomic absorption spectrophotometry with flame atomization (FAAS). The method was shown to be simple and accurate, with detection limits (LOD) of 10 mg.100g-1 for K and Na and 0,2 mg.100g-1 for Fe, and RSD values below 13%. To check the efficiency of the method, the results were compared with acid digestion. Ten chocolate powder samples of different brands were analyzed, and the concentrations obtained compared with those found in the Brazilian Table of Food Composition (TACO) and also with the values informed on the product labels. For the majority of samples the results obtained were not in accordance with the values established by the TACO tables or with those printed on the labels.

As antocianinas, pigmentos responsáveis pela cor vermelha das uvas, são facilmente degradadas por vários mecanismos de reação, através da ação do oxigênio, enzimas, pH e temperatura, entre outras variáveis. Neste trabalho, um sistema modelo de geleia foi desenvolvido utilizando extrato de uva das variedades Bordô e Merlot e polissacarídeos (gomas xantana e locusta) em diferentes temperaturas (45, 55 e 65 °C). A estabilidade dos pigmentos antociânicos e o comportamento reológico foram estudados. Para a determinação da estabilidade, calculou-se o tempo de meia-vida (t½) e a constante velocidade de reação (primeira ordem) (k). Para o comportamento reológico, as constantes foram determinadas utilizando-se o modelo matemático Power law. O sistema modelo desenvolvido que utiliza a temperatura de 45 °C mostrou os melhores resultados para o t½ das antocianinas. Os valores de k para os tratamentos 45, 55 e 65 °C não foram significativos (p > 0,05). Observou-se que com o aumento da temperatura de desenvolvimento do sistema modelo de geleia houve um aumento no índice da consistência.

Anthocyanins are the pigments responsible for the color of most red grapes and are easily degraded following various reaction mechanisms affected by oxygen, enzymes, pH, and temperature among other variables. In this study, a jam model system was developed using Merlot and Bordô grape extracts and polysaccharides (xanthan and locust bean gums) and different temperatures (45, 55 and 65 °C). The stability of the anthocyanin pigments and the rheological behavior of the jam model system were studied. For the determination of the stability, the half-life time and first-order reaction rate constants for the anthocyanin pigments were calculated. The rheological behavior was determined through the Power law model. The jam model system produced using a temperature of 45 °C showed the best results for the anthocyanin half-life time. The first-order reaction rate constants for the 45, 55, and 65 °C treatments were not significantly different among each other (p > 0.05). It was observed that with an increase in the jam model system temperature there was an increase in the index of consistency.

Physalis peruviana é uma fruta exótica pertencente à família Solanaceae com produção recente no Brasil, principalmente na região Sul. Como há poucos dados em relação à sua composição química, este trabalho apresenta a composição centesimal e mineral e o perfil de ácidos graxos da fração lipídica da Physalis peruviana. Em relação à composição centesimal, a physalis apresentou alto conteúdo de cinzas e de lipídios totais, 0,8 e 3,16 g.100 g-1, respectivamente. Em sua composição mineral, o K, Mg, Ca e Fe foram os principais elementos, estando o ferro presente em concentrações superiores em relação a fontes conhecidas como o feijão. A fração lipídica apresenta predominância de ácido linoleico (72,42%) em sua composição.

Physalis peruviana is an exotic fruit that belongs to the Solanaceae family and which has recently started to be produced in Brazil, mainly in the Southern region. Once there is few data regarding its chemical composition, this work presents the centesimal and mineral composition and the fatty acid profile of the lipidic fraction of Physalis peruviana. Concerning the centesimal composition, Physalis presented high contents of ashes and total lipids, 0.8 and 3.16 g.100 g-1, respectively. In its mineral composition, K, Mg, Ca and Fe were the main elements, and Fe is present in concentrations higher than those in the common sources such as beans. The lipidic fraction presented predominance of the linoleic acid (72,42%) in its composition.

Um método para determinação de Na e K em biodiesel proveniente de diferentes óleos vegetais é proposto. São combinadas as vantagens da FAES com a simplicidade da preparação da amostra por microemulsão e calibração usando padrões aquosos. As microemulsões foram preparadas pela mistura de biodiesel, n-propanol e solução aquosa ácida, permitindo o uso de padrões inorgânicos para a calibração. Foram comparadas a introdução discreta (DA) e aspiração contínua (CA) da amostra apresentando LODs semelhantes, na ordem de 0,1 µg g-1 para ambos analitos, que são adequados para a determinação dos mesmos, conforme os limites estabelecidos na legislação brasileira. A exatidão do método foi avaliada por testes de recuperação, com resultados entre 83% e 120% e, por meio da comparação dos resultados obtidos por ICP OES.

A method for the determination of Na and K in biodiesel, from different vegetable oils, is proposed. The advantages of the FAES were combined with the simplicity of microemulsion preparation and calibration using aqueous standards. Microemulsions were prepared by mixing biodiesel samples with n-propanol and aqueous acid solution, which allowed the use of inorganic aqueous standards for the calibration. Sample introduction through discrete aspiration (DA) or by continuous aspiration (CA) were compared, presenting similar LODs, in the order of 0.1 µg g-1 for both analytes, adequate to the established limits in the Brazilian legislation. The accuracy of the method was checked through recovery tests, with results between 83% and 120%, and through the comparison of the results with those obtained by ICP OES.

Antocianinas são pigmentos fenólicos com potencial para substituição dos corantes artificiais vermelhos; porém, estes se apresentam instáveis frente ao processamento de alimentos, sendo a temperatura um dos principais fatores envolvidos na degradação da cor destes pigmentos. O objetivo deste trabalho foi avaliar a concentração de compostos fenólicos e a capacidade antioxidante de um sistema modelo de geléia de uvas (SMG) Isabel (Vitis labrusca) e Refosco (Vitis vinifera L.) elaborado a 45 °C, utilizando como agente espessante uma mistura de gomas xantana e locusta. Nos SMGs elaborados, avaliou-se a estabilidade dos pigmentos antociânicos e determinou-se polifenóis totais (IPT), antocianinas totais (AT). A atividade antioxidante foi medida utilizando os métodos de captura de radicais estáveis como o radical DPPH (2,2-difenil-1-picril-hidrazila) e o radical ABTS (2,2’-azino-bis-(3-etilbenzotiazolina-6-ácido sulfônico)). Avaliou-se também a concentração de AT nos extratos de uvas utilizados na elaboração do SMG. Um alto coeficiente de correlação foi encontrado entre AT e IPT dos SMGs e a atividade antioxidante. Os melhores resultados quanto à concentração de IPT, AT e em relação à atividade antioxidante foram obtidos para o SMG elaborado com uva Refosco. O método utilizado para a elaboração dos SMGs foi efetivo na preservação da cor antocianinas e das propriedades antioxidantes dos compostos fenólicos totais avaliados.

Anthocyanins are phenolic pigments with a potential for replacing synthetic red dyes. However, their stability is affected by food processing, and temperature is one of the main factors involved in these pigments’ color degradation. The aim of this work was to evaluate the concentration of phenolic compounds and the antioxidant capacity of a grape jelly model system (JMS). The grape varieties used here were Isabel (Vitis labrusca) and Refosco (Vitis vinifera L.) and the jelly was cooked at 45 °C, using a mixture of xanthan gum and locust bean gum as the thickening agent. Two JMSs were prepared and analyzed to determine their anthocyanin stability, total polyphenol index (TPI) and total anthocyanin content (TA). The antioxidant activity was measured by the DPPH and ABTS radical-scavenging methods. The TA concentration was also determined in the grape extracts used in the preparation of the JMSs. The best results in terms of TPI, TA and antioxidant activity were obtained for the JMS produced with Refosco grapes. A high correlation coefficient was found between the TA and TPI in the JMSs and the antioxidant activity. The method used in the production of the JMSs was effective in preserving the color of anthocyanins and the antioxidant properties of the total phenolic compounds evaluated here.
