Abstract Cold mash is an innovative and promising brewing technique for obtaining free-alcohol and low-alcohol beers, with a sensory profile similar to traditional beers. While traditional mashing is carried out at high temperatures, between 50 and 75 oC, this technique uses low temperatures, around 10 oC, but with a longer time. This allows more intense extraction of flavors and color from the malt while keeping the concentration of fermentable sugars low, as the enzymatic starch hydrolysis does not occur at its maximum efficiency. A study was performed on the mashing stage of the brewing process using the cold mash technique, with subsequent physicochemical characterization, to evaluate possible changes in these parameters. To obtain beer worts with low concentrations of fermentable sugars, modifications were made to mashing temperature and time, and a two-level factorial design was applied to evaluate the influence of these variables, demonstrating that the main factor mashing time was of great importance in the response. The extract content, related to the concentration of carbohydrates, presented results around 6 oBx, while the traditional wort has between 11 and 12 oBx, and the protein content was 0.12 to 0.13%, being below than reported in the literature. For pH, the results were around 6.0, which is above the recommended for brewer's wort, demonstrating that the mashing technique employed promoted changes in this parameter, possibly due to the limited action of the phosphatase enzyme, responsible for lowering the pH through the production of phosphoric acid.

Resumo Cold mash (brassagem a frio) é uma técnica cervejeira inovadora e que vem se mostrando promissora para a obtenção de cervejas sem álcool e de baixo teor alcoólico, com perfil sensorial semelhante ao de cervejas tradicionais. Enquanto a brassagem tradicional é realizada em temperaturas elevadas, entre 50 e 75 oC, nessa técnica se utilizam baixas temperaturas, em torno de 10 oC, porém com um tempo maior. Isso possibilita uma extração de sabores e coloração do malte com mais intensidade, ao mesmo tempo em que a concentração de açúcares fermentáveis se mantém baixa, pois a etapa de hidrólise enzimática do amido não ocorre em seu máximo de eficiência. Dessa forma, realizou-se um estudo da etapa de brassagem do processo de produção cervejeira empregando a técnica de cold mash, com posterior caracterização físico-química, a fim de se avaliarem possíveis mudanças nesses parâmetros. Para se obterem mostos cervejeiros com baixa concentração de açúcares fermentáveis, realizaram-se modificações em relação a temperatura e tempo de brassagem, e aplicou-se um planejamento fatorial em dois níveis a fim de se avaliar a influência dessas variáveis, demonstrando que o fator principal tempo de brassagem teve grande importância na resposta. O parâmetro teor de sólidos solúveis, relacionado à concentração de carboidratos, apresentou valores em torno de 6 oBx, enquanto o mosto tradicional possui entre 11 e 12 oBx, e o teor de proteínas situou-se entre 0,12 e 0,13%, estando abaixo do reportado pela literatura. Já para o pH, os resultados se situaram em torno de 6,0, estando acima do recomendado para o mosto cervejeiro, demonstrando que a técnica de brassagem empregada promoveu modificações neste parâmetro, possivelmente pela atuação limitada da enzima fosfatase, responsável pelo abaixamento do pH por meio da produção de ácido fosfórico.

Abstract The bearded fireworm Hermodice carunculata is widely distributed across tropical and subtropical Atlantic and Mediterranean Oceans and was previously considered to be mostly associated with shallow reefs. We provide here data on the distribution, abundance and habitat use of H. carunculata across a euphotic-mesophotic gradient (0-90 m) in the Saint Peter and Saint Paul’s Archipelago (SPSPA, Mid Atlantic Ridge, Brazil). Samples were obtained using SCUBA and a Remote Operated Vehicle (ROV). A total of 189 individuals were observed and a sharp increase in abundance with depth was recorded, particularly from 50 m depth onwards. In the mesophotic zone (50-90 m) individuals were closely associated with branching black-corals (Tanacetipathes spp.) and predation over black-corals and the scleractinian Madracis decactis was commonly sighted. A Boosted Regression Tree model indicated black-coral abundance as the main driver of H. carunculata abundance, suggesting that preference for optimal habitats to hide/forage is more important than depth per se on the bathymetric distribution of the fireworm. The high abundances of H. carunculata in the mesophotic zone, and its predation on keystone benthic cnidarians, suggests that this species play important roles in the dynamics of deep reefs.

RESUMO Este artigo é uma genealogia da crítica que consagrou Alfredo Volpi. O foco da análise recai sobre a década de 1940, quando Mário de Andrade estabeleceu as principais diretrizes para pensar a “Família Artística Paulista”. Nesse momento, eclipsou-se a nacionalidade italiana do artista, bem como as referências estrangeiras em sua pintura. Surgiu então a mitologia do pintor como operário e artesão, que permanece ativa ainda na contemporaneidade.

ABSTRACT This paper is a genealogy of the arts critic which consecrated Brazilian artist Alfredo Volpi. The focus is in the 1940’s, when critic Mário de Andrade set the guidelines of the “Paulista Artistic Family”. By then, the Italian origin of Volpi, as other foreign influences in his art, were eclipsed. The myth of the painter who was a worker and an artisan was set, remaining alive until this date.

Resumo Objetivo: Pesquisas recentes sustentam a hipótese de que um desequilíbrio entre fatores angiogênicos desempenhe um papel fundamental na patogênese da pré-eclâmpsia e seja responsável pelas manifestações clínicas da doença. O objetivo do presente estudo foi avaliar a sensibilidade, a especificidade e o nível de melhor acurácia do Fator semelhante a tirosina quinase 1 (sFlt-1), Fator de crescimento placentário (PlGF), e relação sFlt-1/PlGF no soro materno e relação proteína/creatinina em amostra de urina e definir o melhor ponto de corte desses testes para distinguir pacientes com hipertensão gestacional daquelas com pré-eclâmpsia, a fim de avaliar a possibilidade de utilizá-los como métodos diagnósticos. Métodos: Foi realizado um estudo prospectivo longitudinal e foram coletadas amostras de sangue de 95 gestantes com hipertensão arterial para dosar as concentrações séricas dos biomarcadores sFlt-1 e PlGF. Amostras de urina foram coletadas para pesquisa de proteinúria. Foram consideradas significativas as diferenças com p < 0,05. Resultados: A relação sFlt-1/PlGF demonstrou sensibilidade de 57,5% e especificidade de 60% utilizando 50,4 como ponto de corte. O teste que apresentou a melhor acurácia no diagnóstico de pré-eclâmpsia foi a relação proteína/creatinina, com sensibilidade de 78,9% e especificidade de 70%, utilizando 0,4 como ponto de corte e demostrando uma área sob a curva receiver operating characteristic (ROC, na sigla em inglês) de 0,80 (p < 0,001). Conclusão: Nenhum método de rastreamento isolado se mostrou com boa acurácia para o diagnóstico de pré-eclâmpsia, exceto a relação proteína/creatinina. As evidências são insuficientes para recomendar os biomarcadores sFlt-1 e PlGF como diagnóstico de pré-eclâmpsia.

Abstract Objective: Recent observations support the hypothesis that an imbalance between angiogenic factors has a fundamental role in the pathogenesis of pre-eclampsia and is responsible for the clinical manifestations of the disease. The goal of the present study was to evaluate the sensitivity, specificity, and the best accuracy level of Soluble fms-like tyrosine kinase-1 (sFlt-1), placental growth factor (PlGF), and sFlt-1/PlGF ratio in maternal serum and protein/creatinine ratio in urine sample to define the best cutoff point of these tests to discriminate between the patients with gestational hypertension and the patients with pre-eclampsia, to evaluate the possibility of using them as diagnostic methods. Methods: A prospective longitudinal study was performed, and blood samples were collected from 95 pregnant patients with hypertension to measure serum concentrations of biomarkers sFlt-1 and PlGF. Urine samples were collected for protein screening. Significance was set as p < 0.05. Results: The sFlt-1/PlGF ratio demonstrated a sensitivity of 57.5% and a specificity of 60% using 50.4 as a cutoff point. The test that showed the best accuracy in the diagnosis of pre-eclampsia was protein/creatinine ratio, with a sensitivity of 78.9% and a specificity of 70% using 0.4 as a cutoff point and showing an area under the receiver operating characteristic curve of 0.80 (p < 0.001). Conclusion: No studied laboratory test proved to be fairly accurate for the diagnosis of pre-eclampsia, except for the protein/creatinine ratio. The evidence is insufficient to recommend biomarkers sFlt-1 and PlGF to be used for the diagnosis of pre-eclampsia.

Resumo Mário Pedrosa, na década de 1950, reivindicou Alfredo Volpi como o maior pintor nacional e como o mestre que deveria ser seguido pelos artistas mais novos. Esse foi um processo conflituoso, que colocou em xeque os antigos cânones do modernismo brasileiro e a forma como se narrava a história da arte nacional. Acompanhar esse processo é deparar-se com o mecanismo que agenciava a presença de pessoas, a persistência de valores nacionalistas e a relevância de cidades no campo artístico brasileiro.

Abstract In the 1950s, Mário Pedro claimed Alfredo Volpi to be the greatest national painter and a master to be followed by younger artists. This was a conflict-ridden process, which put at stake the old canons of Brazilian modernism and also the way in which the history of national art was written. Following this process, we also come face-to-face with the mechanism responsible for mobilizing the presence of people, the persistence of national values and the importance of cities in the Brazilian artistic field.

RESUMO Stenostomum são pequenos vermes que vivem em água doce e normalmente se reproduzem assexualmente por paratomia. Eles estão na base da filogenia dos platelmintes. Por mais de um século, espécies desse gênero, especialmente S. leucops, vêm sendo empregadas em estudos biológicos, principalmente sobre regeneração. Entretanto, alguns aspectos básicos da biologia destes vermes são ainda pobremente conhecidos. Neste estudo, caracterizamos uma linhagem que vem sendo mantida no laboratório por cinco anos. O tempo necessário para reprodução assexuada e completa formação de zoóides, a 28°C, é de aproximadamente 42,5 horas. O número de células nos zoóides, logo após a paratomia, é de aproximadamente 2.500. O número de zoóides presentes nos vermes é uma característica variável e depende das condições de cultivo. Em alguns procedimentos de cultivo de S. leucops, apenas cadeias com dois zoóides são formadas. No entanto, em outras condições de cultivo, cadeias de até cinco zoóides podem ser observadas. Análise filogenética empregando sequência do gene de Citocromo C Oxidase (COI) mostrou que S. leucops e S. grande constituem um complexo de espécies cujas linhagens mostram altas divergências intraespecíficas.

ABSTRACT Species of Stenostomum are small flatworms that live in freshwater and normally reproduce asexually by paratomy. They are basal in the phylogeny of Platyhelminthes. For more than a century, species of this genus, especially S. leucops, have been used in regeneration and other biological studies. However, some basic aspects of their biology are poorly known. Here, we characterized a strain of S. leucops that has been maintained in the laboratory for five years and a recent strain of S. grande. The time required for complete formation of zooids of S. leucops by asexual reproduction is approximately 42.5 hours at 28°C. The number of cells in the zooids, soon after paratomy, is approximately 2,500. The number of zooids formed in the chain is a plastic characteristic and is dependent on the conditions for cultivation. In some cultivation conditions of S. leucops, only worms with two zooids are formed. However, in other conditions, worms with up to five zooids are observed. Phylogenetic analyses of a fragment of the Cytochrome C Oxidase I (COI) sequence showed S. leucops and S. grande species constitute a species complex, the lineages of which having high intraspecific divergences.

A pesca de pequena escala tem uma grande importância socioeconômica no Brasil. Diferenças regionais ao longo da costa, relacionadas principalmente aos locais de desembarque, artes de pesca e espécies- alvo tornam a sua avaliação e monitoramento difíceis. O objetivo do presente estudo foi apresentar uma lista das espécies de peixes ósseos capturadas pela pesca artesanal na costa de São Paulo, sudeste do Brasil, com comentários sobre a sua abundância relativa e estado de conservação. Foram monitorados 315 desembarques da frota pesqueira, registrando 106 espécies, distribuídas em 38 famílias. As famílias Sciaenidae e Carangidae foram as mais representativas em número de espécies. A pescada amarela, Macrodon atricauda, foi a espécie mais abundante, correspondendo a 28,03% do número total de peixes capturados. Onze das espécies mais abundantes são classificadas como Sobre-explotadas no país ou Próximo de Ameaça de Extinção no estado de São Paulo. Esses resultados reforçam a relevância de avaliar e manejar as pescarias artesanais.

Small-scale fisheries have a great socioeconomic importance in Brazil. Different regional characteristics along the coast, mostly related to landing sites, equipment used, and targeted species, renders its assessment and monitoring difficult. The aim of this paper is to present a list of species of bony fishes (Teleostei) caught by artisanal fisheries along the São Paulo coast, southeastern Brazil and to provide comments on the relative abundance and conservation status of those species. A total of 315 fishing fleet landings were surveyed, and 106 species distributed among 38 families were recorded. Sciaenidae and Carangidae were the most frequent families in species number. The southern king weakfish, Macrodon atricauda, was the most abundant species, representing 28.03% of the total number of specimens caught. Eleven of the most abundant species are classified as Overexploited in the country or as Near Threatened in the state of São Paulo. These findings reinforce the relevance of assessing and managing artisanal fisheries.

Propolis is mostly used as hydroalcoholic extract. Recently there has been a growing number of patents dealing with new solvents for preparing propolis extracts. This study aimed to prepare edible oil propolis extracts and compare their chemical composition and biological activity with ethanolic propolis extracts. ESI-MS and spectrophotometric methods were used for qualitative and quantitative analyses, respectively. Antibacterial activity was evaluated by diffusion in agar. Cytotoxicity was tested by MTT assay using tumor cell lines. The oil is able to extract bioactive compounds from propolis. Further studies are needed to improve extraction efficiency and to characterize the active components.
